Arriva un’altra estate e beBlueair le dà il benvenuto con una cover story allegra e colorata sulle fantastiche spiagge della Sicilia, la meta ideale per chi vuole concedersi una vacanza al mare in un’isola che tra sole, bellezze naturali, capolavori dell’arte e buon cibo non si fa davvero mancare nulla. Ma anche Londra, vedrete, è una città da visitare a giugno e a luglio, il periodo dell’anno in cui la capitale inglese regala le sorprese più belle, a dispetto dello stereotipo di città da vivere con scarpe da pioggia e ombrello sotto il braccio. La Top 10 di questo numero del magazine è un vero e proprio inno alla bella stagione, un viaggio tra i parchi acquatici più belli (e più divertenti) d’Europa. Pagina dopo pagina, come sempre, non mancano le nostre solite rubriche, con i consigli per libri, ilm, musica, moda, hi-tech, locali e appuntamenti da non perdere. Ma un’attenzione particolare, mi raccomando, dedicatela alle nostre interviste in cui vi presentiamo lo chef Hero Shoda, secondo cui la cucina italiana e quella giapponese hanno tanti punti in comune, l’attore Francesco Montanari, protagonista della serie tv Romanzo Criminale e di molto altro ancora, e Maximiliano Bucci, uno dei fondatori di Rock in Roma che quest’anno compie 10 anni. Un viaggio storico e gastronomico per vivere la magia di essere a corte, come re e regine, sedendo a tavola nei castelli d’Europa. A giugno un posto al picnic reale di Postdam Si chiama “A Place at the Royal Table” il progetto che coinvolge i più bei palazzi reali del Vecchio Continente (tra cui Versailles, Rosenborg Castle, Schönbrunn Palace...) nell’Anno Europeo del Patrimonio Culturale. Il 23 giugno “Zu Tisch!” (A Tavola! Un posto alla tavola reale) vede protagonista Postdam con il Parco del castello di Sanssouci, accompagnato da musica barocca, su una tavola lunga 270 metri. Manzo arrosto, stufato irlandese alla nizzarda... il cibo siede al posto d’onore e, accanto, chi deciderà di far parte della compagnia, o meglio, della corte. www.spsg.de
Il castello di Sanssouci, a Postdam, è un gioiello di architettura barocca ed è coinvolto nel progetto “A Place at the Royal Table”. The Sanssouci castle, in Postdam, is a gem of Baroque architecture. It is included in the “A Place at the Royal Table” project.
A journey through history and cuisine to experience the magical atmosphere of a true royal court sitting at the table in the castles of Europe. In June book a place at the royal picnic in Postdam. Named “A Place at the Royal Table”, the project involves the most beautiful royal palaces of the Old Continent (including Versailles, Rosenborg Castle, Schönbrunn Palace...) in the European Year of Cultural Heritage. On June 23, Postdam is set to host “Zu Tisch!” (Time to eat! A place at the royal table) in the Sanssouci Park of the castle. An evocative royal picnic, accompanied by Baroque music. Guests will dine at a 270-meter long table: roast beef, Irish stew cooked in the Nice style... food will hold the place of honor, next to those who decide to be part of the company, or better, of the court. giugno-luglio 2018 _ 11

SICILIA COAST TO COAST Discovering the most beautiful beaches of the island and its archipelagos, between ancient legends and contemporary myths From ancient to modern literature up to great directors and contemporary artists, Sicily, with its enchanting locations, has fascinated and continues to fascinate. North-South-East-West and in the archipelagos that belong to it, the Italian main island is an ininite treasure of beauties that gleam even more in the summer. Like the wonderful sea stacks of Aci Trezza. Legend has it that they had been thrown in the middle of the Ionian by Polyphemus against Ulysses that was leeing after having blinded him. Castelli, palazzi e... Cluj è però famosa anche per la grande quantità di castelli e palazzi eretti nel corso dei secoli. Una tappa fondamentale è il Castello Bánfy di Bontida, simbolo del barocco transilvano, e conosciuto, per la grande ricchezza di elementi architettonici, come Versaille di Transilvania. Dello stesso stile è anche l’omonimo Palazzo Bánfy, situato in Piazza Unini, celebre per l’imponente facciata dove è rappresentato lo stemma della famiglia nobiliare, un grifone con spada e corona circondato da altri due grifoni. History and culture Founded by the Celts, who settled next to the Dacians in the third century, it was named Napoca before the Romans made it a colony of their Empire. With the decline of the Italian domination, (around 1167) the city changed its name to the current Cluj from the Latin Castrum Clus (small fortiied city). It is famous for its imposing façade that bears the family coat of arms: a griin with a sword and a crown surrounded by two other griins. Natural beauties
Those who love nature will be able to fulill the dream of a holiday immersed in nature by crossing both the Turda and the Tureni Gorges. They both ofer outstanding trails and landscapes and are the perfect destinations for those who love landscape photography. Very impressive is also the Rachitele waterfall better known as the Bridal Veil, this name was given to the three-level falls as when the water falls from a height of 30 meters it takes the shape of a nuptial veil. Those who prefer the lakes will enjoy the Lake Dragan and the pike ishing. You cannot leave Cluj without a visit to the Turda salt lats, a tourists’ favorite destination as well as one of the most charming and characteristic sites of the city.

Che emozione è trionfare in un palco importante come quello di Cannes in un festival nuovo che premia una forma di espressione che sta assumendo sempre maggior rilievo nei gusti degli spettatori di tutto il mondo? «Non me lo aspettavo, soprattutto in una gara così accesa, resa ancora più importante dalla decisione di premiare una sola interpretazione, indipendentemente dal genere, a diferenza di quanto avviene abitualmente agli Oscar, ai Golden Globe o ai David di Donatello. Sono felicissimo che il premio sia stato assegnato a una serie Rai, a un prodotto italiano, in 46 _ giugno-luglio 2018
una categoria che è diretta espressione del valore di tutto lo staf tecnico perché, da solo, nessun attore o attrice potrebbe mai ottenere un riconoscimento del genere senza essere sostenuto da tutti. Da una pay tv ce lo potremmo anche aspettare, ma dalla Rai è stata una sorpresa e un incentivo a fare cose sempre migliori e competitive a livello internazionale». Di solito associamo al servizio pubblico titoli come Don Matteo mentre Il Cacciatore ha un approccio completamente diferente. «Don Matteo è una iction che, a livello di traduzione letterale, signiica tutto ciò che è inzione nell’audiovisivo, per assurdo anche un ilm; nell’immaginario collettivo italiano la iction lavora per stereotipi, la serie tv per umanità. Non do giudizi di merito, sto annotando che si tratta di due prodotti diversi: nella iction il buono è buono, il cattivo è cattivo, invece la serie tv approfondisce l’umanità perché ognuno di noi non è semplicemente ciò che mostra di sé. Ne Il Cacciatore non tutti sono ciò che sembrano, hanno delle ombre ed è stato il primo tentativo della Rai di realizzare un certo prodotto culturale: Rai 2 vuole aprire a un pub-

l suo volto sta diventando sempre più familiare per il pubblico televisivo, cinematograico e anche teatrale. Lo scorso aprile, Francesco Montanari ha ottenuto il riconoscimento per la Migliore Interpretazione al Cannes International Series Festival, un nuovo festival dedicato alle serie tv. Il premio di Canneseries è arrivato per il ruolo da protagonista ne Il Cacciatore, serie Rai. Ci è voluto un po’ per riuscire a parlare con Francesco, il suo cane è stato poco bene. «Una vecchia frattura… per fortuna ora sta bene» spiega l’attore.

Francesco Montanari è nato a Roma il 4 ottobre 1984, si è diplomato all’Accademia d’Arte Drammatica Silvio D’Amico. Un anno dopo si è subito rivelato nella serie tv Sky Romanzo Criminale. Born in Rome on October 4 1984, Francesco Montanari graduated at the Silvio D’Amico Academy of Dramatic Art. One year after his graduation he debuted in the Sky TV series, Romanzo Criminale.

Last April, Francesco Montanari received the award for Best Performance at the Cannes International Series Festival, a new festival dedicated to TV series. The leading role in Il Cacciatore, a Rai series, got him the Canneseries award. It took a while to be able to talk to Francesco, his dog was not very well. «An old fracture... luckily now it’s ine» explains the actor. I speak with Wilson. What was the irst character you played at a school play? Mastro Titta in Rugantino, performance which at that time, in good or bad, made me decide to become an actor. This category is an expression of the valuable technical staf because no actor or actress could ever get such recognition without being supported by everyone. We could expect this from a pay TV, but from Rai it was a surprise and an incentive to improve our products and to be more competitive at an international level». Usually we associate the public TV with productions like Don Matteo while Il Cacciatore has a completely diferent approach. «Don Matteo is a iction series, being so it represents – alongside certain movies – a “iction” in the audiovisual world; in the Italian collective imagination, iction is based on stereotypes, whilst TV series on humanity. Honestly, I’m not judging, I am just saying that they are two diferent products: in iction the good is good, the bad is bad, but the TV series goes deeper into humanity for we are simply not what we show to be. In Il Cacciatore, this comes out, not all are what they seem, they have shadows and

blico più giovanile e produrre titoli che siano, per dirne uno, all’altezza de La Casa di Carta (serie Netlix di enorme gradimento tra il pubblico del canale streaming, ndi)». Un riconoscimento importante soprattutto per te, ma come scegli i copioni? «Leggo la storia e vedo se trovo delle cose che mi interessa raccontare, per approfondire il rapporto con me stesso, perché, in fondo, recitare permette proprio di intraprendere questo tipo di percorso, a ciò mi appello spesso nella mia scelta. Poi cerco di capire anche con chi andrò a lavorare perché anche col regista più bravo del mondo, se non ti ritrovi dal punto di vista artistico, si può fare più fatica». Io ti ho apprezzato particolarmente in Oggi Sposi e soprattutto in Sole Cuore Amore in cui sei stato incredibile. Secondo te, qual è il tuo ruolo più riuscito? «Forse devo ancora interpretarlo». Che rapporto hai, oggi, con
il personaggio che ti ha dato la notorietà, il Libanese di Romanzo Criminale? «Rimarrà per sempre nel mio cuore, tante emozioni, tanti ricordi, perché è stata la prima grande esperienza professionale in una produzione così importante. Avevo 23 anni, ero uscito da circa un anno dall’Accademia d’Arte Drammatica Silvio D’Amico, ho incontrato tanti amici, diventati fraterni. Sono passati dieci anni e, almeno in Italia, Romanzo Criminale è entrato nel mito. È un bellissimo ricordo. Fu lo spartiacque, il primo tentativo della pay tv di dire con una voce forte “noi facciamo questo tipo di prodotti”, poi è arrivato tutto il resto, ino a Gomorra».

Io ho 33 anni, sono in una condizione privilegiata, posso scegliere, sono sposato, voglio dei igli con mia moglie, diciamo che cerco la serenità».
I particularly appreciated you in Oggi Sposi and especially in the Sole Cuore Amore where your performance was amazing. In your opinion, what is your most successful role? «Maybe it is still to come».
An important recognition especially for you, but how do you choose the scripts? «I read the story and see if I ind anything interesting for me to tell, to deepen my inner-standing, because, after all, acting allows me to improve my self-awareness. This is what often determines my choice. Then I try to understand who I will be working with because if I have no artistic ainity with the director – should he/she be the best in the world – I could have trouble in playing my role».
What relationship do you have today, with the character that gave giugno-luglio 2018 _ 49
MOVIE you fame, Libanese in Romanzo Criminale? «It will always stay in my heart, so many emotions, so many memories, it was the irst great professional experience in an important production. I was 23, I had graduated a year earlier from the Silvio D’Amico Academy of Dramatic Arts. I met many friends on the set, who became really close. Ten years have passed and, at least in Italy, Romanzo Criminale has become a myth. I have a great memory. It was the irst attempt of the pay TV to claim loud and clear “these are the productions we make”, then everything else fell into place, up to Gomorra».
Una volta, intervistando tua moglie (Andrea Delogu, ndi), lei mi spiegò che aveva dovuto iscriverti a tutti i social media perché tu non eri capace. Come è oggi il tuo rapporto con questi strumenti? «È vero, adesso però sono indipendente, li so usare molto meglio. Penso siano una possibilità in più per far conoscere il tuo lavoro a quel collettivo di persone che ha iducia in te. Quindi è un mezzo di comunicazione importante e gratuito e non vedo perché non dovrei usarlo. Prima era più incuria che snobismo, non sono mai stato una persona “tecnologica”».
What is your ambition? «To get to a point in life where I stop being restless, I think it could also depend on age, as opposed to being mature. I am 33 years old, I am in a privileged position, I can choose, I am married, I want children with my wife, let’s say I am looking for serenity».
Che rapporto hai con l’aereo e il volo? «Mi rilassa molto, mi culla, leggo, riletto, dormo, è un luogo che amo come la sauna. Lì sto con me stesso, è un ritorno alla nostra animalità, ora certamente sull’aereo non si può stare nudi però mi fa quell’effetto lì, di pace con me stesso, dove mi lascio coccolare dal destino».
Once, interviewing your wife (Andrea Delogu, ed), she explained that she had to subscribe to all the social media because you weren’t able. How is your relationship with these tools today? «It’s true, but now I’m independent, I can use them much better. I think social media are an important and free means of communication to make your work known to those who trust you and I don’t see why I shouldn’t use them. I didn’t use them in the past because of my being careless rather than being snobbish, I’ve never been a “technological” person».

A line up that has grown and been renewed every year bringing on stage artists the likes of Bruce Springsteen, The Rolling Stones, David Gilmour, Radiohead, Duran Duran, Metallica, Linkin Park, Zucchero, Caparezza and many others. Rock in Rome celebrates its tenth anniversary and does so knowing that it has become one of the most anticipated musical events of the capital’s summer season and not only. Who takes credit for this? Surely its founders Maximiliano Bucci and Sergio Giuliani who in these 10 years have been able to create the right mix between sacred cows and emerging and most promising trends among in the Italian and international scene. Maximiliano Bucci, this is set to be a special edition for Rock in Rome that this year will blow out its first 10 candles. «In these years, besides having brought great world rock artists, we are the ones that have made greatest numbers. Thanks to our format that includes both Italian artists – which have always declaimed their absence in past years and this time will characterize the 2018 edition – together with those as sacred as Roger Waters. We are very satisfied with the work done this year». Thanks to Rock in Rome, the capital has become a reference for national and international artists. Do you feel greater satisfaction or responsibility? «These are two things that go together inversely proportional. Everyone would always like Metallica, Iron Maiden or Foo Fighters, but we try to have artists as homogeneous and complete as possible. We will always follow our path and despite invitations to export our brand we will always be Rock in Rome. We are already planning changes for the future, but giugno-luglio 2018 _ 53
IN NOTA «Sono due cose inversamente proporzionali. Tutti vorrebbero sempre i Metallica, gli Iron Maiden o i Foo Fighetrs, ma cerchiamo di avere un cast quanto più omogeneo e completo possibile. Andremo sempre avanti per la nostra strada e nonostante gli inviti a esportare il nostro marchio saremo sempre Rock in Roma. Abbiamo già in cantiere dei cambiamenti per il futuro, ma saranno delle sorprese che sveleremo anno dopo anno. Già in questa edizione ad esempio riproporremo il Circo Massimo, inseriremo un’altra location, uno spinof del Festival al Teatro Romano di Ostia Antica, lasciando Capannelle come nostro fulcro centrale. Ovvio che cerchiamo sempre di ascoltare le richieste del pubblico ma se ci chiedono i Guns N’ Roses e non abbiamo gli spazi giusti o il budget per ospitarli diventa tutto più diicile. Rock in Roma è l’unico in Italia a non appartenere a una multinazionale. Oggi c’è più competizione, ma se nel nostro Paese c’è fame di festival il merito è anche nostro». Sarebbe conveniente convergere tutte le forze in un unico Festival italiano che abbia un’eco internazionale? «Già quello che c’è è grandissimo. Il lavoro fatto dall’I-Days lo scorso anno e dal Rock in Firenze quest’anno è qualcosa di straordinario e non serve unire nulla. Semmai c’è bisogno di farci forza noi per cercare di organizzare due concerti al Circo Massimo. La cosa bella è che gli artisti guardano molto di più all’Italia rispetto al passato e questo grazie al lavoro di Rock in Roma e degli altri festival nel nostro Paese». E così che si convince un artista come Roger Waters a venire a Rock in Roma? «Certamente. Merito della forza di Roma e delle idee vincenti. Fino al 2013, il Circo Massimo non era mai stato utilizzato per degli eventi a pagamento e Rock in Roma ha avuto l’intuizione, l’esperienza e la tenacia per far sì che quel posto diventasse un posto sicuro per 70mila persone. In this edition, for example, we will re-propose the Circus Maximus, we will insert another location, a spin-of of the Festival at the Roman Theater of Ostia Antica, leaving Capannelle as our headquarters. Of course we always try to listen to what our public want but if we ask for the Guns & Roses and we do not have the right spaces or the budget to accommodate them everything becomes more diicult. Rock in Rome is the only one in Italy that doesn’t belong to a multinational company. Today there is more competition, but if in our country festivals are increasingly requested, the credit is ours too».
Caparezza Coez
Would it be convenient to converge all the energy into a single Italian festival that has an international echo? «The ones we have now are already great. The work done by I-Days last year and by Rock in Firenze this year is something extraordinary and doesn’t really need to be integrated with anything else. If anything, we need to put our forces together and try to organize two concerts at the Circus Maximus. The nice thing is that the artists look a lot more to Italy than in the past and this thanks to the work of Rock in Rome and of the other festivals in our country». And is this the strategy to convince an artist like Roger Waters to come to Rock in Rome? «Of course. The credit goes to the strength of Rome and to the winning ideas. Until 2013, the Circus Maximus had never been used for paid events and Rock in Rome had the intuition, the experience and the technique to make that place become a safe place for 70 thousand people. For artists like Gilmour or Bruce Springsteen I’m sure that those at Circus Maximus were among their most beautiful concerts».

The bill of this edition is closed. Which name on the bill are you mostly proud of? «Post Malone and Coez». Even great come backs like Caparezza... «Caparezza is one of the kings of Rock in Rome, one of the greatest guests of all time because every time he has released a new album he has never made a wrong choice and has always come to us (laughs, ed)». What picture is impressed in your mind of these 10 years?

La fotograia che conserva di questi 10 anni? «L’ingresso al Circo Massimo dei The Rolling Stones e di Bruce Springsteen. Ma c’è anche una fotograia di Capannelle dall’alto fatta con un drone in cui si vede un piccolo Ippodromo di periferia con tre mega-palchi: uno ospitava il giorno prima di Springsteen gli Arctic Monkeys, uno avrebbe ospitato i Ramstein e poi quello grandissimo allestito per il live del Boss. Questa foto racchiude l’essenza di quella che era l’idea che avevamo in mente 10 anni fa io e il mio socio (Sergio Giuliani, ndi)».

Qual è la diicolta maggiore nell’organizzare eventi di questo calibro? «Per fortuna nessuna e l’esperienza fa sì che comunque diventino ostacoli di routine. Le istituzioni hanno capito che serve supporto e comprensione. Senza ricevere inanziamenti statali o regionali c’è comunque bisogno di attenzione per quel che concerne l’organizzazione. Mettere in sicurezza il pubblico è una priorità». Il futuro? «Rock in Roma prosegue sempre verso la sua strada, cavalcando l’onda. Per questo ci sarà sempre più spazio per gli italiani e le nuove emergenze musicali».
Rimpianti? «Nessuno, forse i Foo Fighters ma c’è tempo».
Un sogno nel cassetto? «Fare una tre giorni di grande musica a Roma con 200mila persone».

Apart from Rock in Rome, what is the capital’s summer going to be like from a musical point of view? «In addition to Rock in Rome, the capital is gearing up to host Pearl Jam, Beyoncè, Negramaro, Roger Waters, Sting and the Rome Summer Fest live concerts at the Cavea, many of which I am also producer. It will be a hectic summer. I think we’ll turn out numbers higher than those of Milan. An impressive number of concerts that have few comparisons worldwide. This is why it is important to create partnerships with the most important Italian means of transport. We need to be able to get people from the outside, into the capital. Rome must also be a capital of music in Europe and worldwide». What is the biggest diiculty in organizing events of this caliber? «Luckily none and experience makes it so that obstacles become routine. The institutions have understood that we need support and understanding. Without receiving any state or regional funding, however, attention needs to be paid to the organization. To secure the public is a priority». The future? «Rock in Rome will always continue on its way, riding the wave. For this reason, there will always be more space for Italians and new up and coming musical artists». Do you have a dream? «Three days of great music in Rome with 200 thousand people». HIRO SHODA E L’OMOTENASHI La cultura dell’ospitalità giapponese trova nello chef un connubio perfetto: rispetto per il prossimo e per i prodotti usati in cucina di Silvia Doria
l legame con l’Italia lo ha tentano sin da giovanissimo ino a fargli decidere di trasferirsi. L’intesa nippo-italiana, oltre che nella vita privata, si coglie appieno nelle sue creazioni, nell’amore per le materie prime e l’accoglienza dei suoi commensali. E siamo sicuri che il sorriso e l’eleganza con la quale maneggia il cibo vi conquisterà.

Come si è appassionato alla cucina e a quella italiana in particolare? «Osservando mia madre che cucinava per me e per i miei fratelli. Mi ha trasmesso l’interesse, la cura e il rispetto degli alimenti. Negli anni ’80 la cultura italiana in Giappone era difusa, soprattutto la moda, la cucina, l’arte. Io ero e sono sempre stato molto curioso e un po’ ribelle, le novità mi
afascinavano e mi facevano sognare. A 19 anni ho cominciato a studiare tutta la cucina internazionale, da Oriente a Occidente, a partire da Jirō Ono, artista supremo della cucina giapponese, passando alla cucina rivoluzionaria di Gualtiero Marchesi, a quella classica ed eccellente di Paul Bocuse, padre della cucina francese, ino a quella più moderna e innovativa di Ferran Adrià e Joel Robuchon... La mia esperienza più signiicativa sia a livello professionale che personale è stata quella presso “Le Calandre” di Padova, uno dei più celebri ristoranti Tre Stelle Michelin in Italia. Questa opportunità di collaborazione con lo chef Massimiliano Alajmo ha determinato una scelta fondamentale nella mia vita: lasciare il Giappone e una carriera già congiugno-luglio 2018 _ 61
VIAGGI NEL GUSTO solidata per trasferirmi in Italia, un mondo così lontano, ma che da sempre ha inluenzato il mio percorso personale e professionale». Qual è il primo piatto che ha realizzato nella sua vita e per chi? «A 19 anni, quando studiavo all’Accademia di Cucina in Giappone, ricordo di aver preparato i classici spaghetti al pomodoro e basilico per i miei genitori; per una tradizionale famiglia giapponese il cibo italiano era una vera novità!». Cosa porta con sé della cucina giapponese? «Il Giappone è dentro di me nei valori, nel rispetto delle cose e delle persone, nell’etica, nell’estetica, nell’educazione, nel prendere seriamente il lavoro». Quando è in Giappone, cosa propone della cucina italiana? «Secca, fresca, ripiena… la pasta!».
Conciliare queste due culture in un piatto cosa signiica? «In fondo la cucina giapponese e quella italiana non sono così distanti, hanno tanti punti in comune: la varietà degli ingredienti, il piacere di ofrire e mangiare insieme i cibi a tavola, il rispetto per la tradizione, i rituali familiari, l’atto di cucinare come gesto d’amore e condivisione». A quale prodotto della cucina giapponese non rinuncia? «La cucina giapponese si fonda su cinque elementi principali: salsa di soia, sakè, mirin (sakè dolce), katsuobushi (iocchi di tonno essiccato) e alga kombu. Senza questi ingredienti non esiste la cucina giapponese. Dubitate dei ristoranti in cui non sono presenti questi prodotti». E in Italia, quale gusto l’ha conquistata tanto da non po-

The Japanese-Italian harmony, besides in his private life, also comes out in his creations, in the love for raw materials and the greetings for his guests. And we are sure that his smile and the elegance with which he treats food will also seduce you. How is it that you became enthusiastic about cooking and the Italian one in particular? «Well, by watching my mother cook for me and my brothers. She passed on interest, care and respect for food. In the ‘80s Italian culture in Japan was widespread, above all fashion, cooking, and art. I was and always have been very curious and a bit of a rebel, novelties fascinated me and they made me dream. At 19 I began to study all the international cuisines, from East to West, starting from Jirō Ono, supreme artist of Japanese cuisine, passing to the revolutionary cuisine of Gualtiero Marchesi, to the classic and excellence of Paul Bocuse, father of French cuisine, up to the most modern and innovative one of Ferran Adrià and Joel Robuchon ... My most signiicant experience both at a professional and personal level was at “Le Calandre” in Padua, one of the most famous Michelin-starred Restaurants in Italy. I coltelli hanno una grande importanza per uno chef e per le sue lavorazioni a crudo ancor di più, un consiglio per scegliere un must have per gli appassionati? «È un po’ più diicile da trovare o acquistare, ma consiglio un coltello giapponese artigianale, un po’ costoso, ma fatto a regola d’arte, dura tutta la vita». Veniamo ai suoi piatti, in estate qual è l’ingrediente che non può mancare? «In estate fatevi colpire dai colori dell’orto, della terra e del mare

What does it mean to join these two cultures in a dish? «After all, Japanese and Italian cuisine are not so distant, they have many things in common: the variety of ingredients, the pleasure of ofering and eating food together at the table, respect for tradition, family rituals, the act to cook as a gesture of love and sharing».

È una vita molto impegnativa perché si perde un po’ il contatto con la quotidianità, ma certamente non ci annoiamo mai! Per me è interessante poter visitare tante località italiane e conoscere da vicino tutti i vostri prodotti unici, sono davvero fortunato, sia come uomo che come chef. Nel privato, amo soprattutto esplorare posti nuovi, anche un po’ nascosti, poco turistici e immergermi nella natura, negli orti, andare a trovare coloro che rendono l’Italia un paese unico, dal contadino, al casaro, al pescatore, al norcino. Credo che l’Italia sia il posto giusto per vivere questo tipo di avventure!».
Which product of Japanese cuisine you just can’t do without? «Japanese cuisine is based on ive main elements: soy sauce, sake, mirin (sweet sake), katsuobushi (dried tuna lakes) and kombu seaweed. Without these ingredients there is no Japanese cuisine. Be suspicious of those restaurants where you don’t ind these products». And in Italy, what lavor has intrigued you so much so that you can’t give it up? «Cooking and living in Italy, the ingredient that I consider most precious, I would say fundamental, is extra-virgin olive oil. I love all the varieties, from the new, to the most intense or fruity, to be combined with different dishes and ingredients, from raw to cooked, in the most traditional dish to the most creative». Knives are of great importance to a chef and even more so for raw processing, what advice would you have to choose a must-have for aicionados?

VIAGGI NEL GUSTO «Cacio e pepe ricetta semplice e una fusion perfetta!» «Cacio e pepe, a simple recipe and a perfect blend!» La meta preferita per le sue vacanze? «Adoro il mare, ma ho scoperto da qualche anno la montagna, un paradiso reale, meraviglioso agli occhi, non facile da conquistare, che ti costringe ad andare avanti, passo dopo passo, ino alla vetta. Senza fatica non si raggiunge l’obiettivo, un grande insegnamento di vita». Una rinuncia e una soddisfazione del suo mestiere. «Fin da quando avevo 18 anni ho sacriicato quasi completamente il mio tempo libero per la cucina, ho dovuto rinunciare ad approfondire tante altre mie passioni come la musica, la ceramica, la pittura. Il mio lavoro però, sebbene molto duro, permette di ofrire alle persone un’esperienza speciale... Lasciare una bella memoria da con-
servare o tramandare è per me la più grande soddisfazione». Qual è il suo piatto italiano preferito? «Un omaggio a Roma dove vivo, la pasta Cacio e Pepe. Ricetta semplice con il cacio, alimento italiano d’eccellenza e il pepe, antica spezia orientale, una fusion perfetta!». E con quale piatto si dà il ben tornato in Giappone? «La cucina della mia mamma!». Progetti per il futuro? «Nel mese di giugno termineremo le riprese della nuova serie di “Ciao, sono Hiro” in onda su SKY 412, Gambero Rosso Channel, che andrà in onda durante tutta l’estate. Poi un progetto televisivo girato in Giappone e un nuovo libro di cucina che raccolga le ricette del Master Japan, il mio corso professionale sull’autentica cucina giapponese». Un termine giapponese che descriva lei, uno per la sua cucina e uno per l’amore/rispetto per il cibo… «Io penso che il termine Omotenashi possa rappresentare sia Hiro chef che Hiro uomo, signiica generosità e predisposizione all’accoglienza, il rispetto per il prossimo, la cultura dell’ospitalità sia in cucina che nella vita».

Let’s talk about your dishes, in summer what is the ingredient that can’t be missing? «In summer let yourself be struck by the colors of the vegetable garden, the land and the sea to create a fresh, fragrant recipe, with traditional Italian local ingredients to be combined with spices or aromatic herbs». What is the best and simple way to eat and prepare ish at home? «Besides using lame, I suggest alternative cooking techniques, especially the marinades based on oil, vinegar, lemon, soy sauce, salt, spices, herbs, aromatic herbs: ancient methods that enhance and improve the taste of ish and of many other ingredients, especially the Mediterranean ones». How do you relate to traveling? «I never stay still, my partner (and my Press Oicer!) Letizia and I, go all over Italy for cooking classes at the schools where I teach, for many events, dinners, show-cooking where I am a guest. It is a very busy life because we lose a little bit of contact with the daily life, but for sure we never get bored! It is interesting to visit many Italian locations and get to know all the unique products, I’m really lucky, both as a man and as a chef. In private, I especially love to explore new places, even a little hidden, not touristy and plunge into nature, in the vegetable gardens, visit those who make Italy a unique country, from the farmer, the cheese maker, the isherman, to the butcher. I think Italy is the right place to experience this kind of adventure!». Carpaccio di dentice: 160 g di iletto di dentice Sale 5g di succo di lime 20 g di olio evo 5 g di erba cipollina tagliata a julienne
Carpaccio di dentice: Pulire, silettare e spinare il dentice, condire e marinare con tutti gli ingredienti per 5 minuti. Tagliare a fette.
Gelatina di pomodori: 2 pomodori ramati 40 g di pomodorini datterini Sale Agar agar Finitura: 4 ricci di mare 10 g di caviale 10 g di uova di salmone Sale grosso
Gelatina di pomodori: Frullare i pomodori ramati e i datterini con il mixer. In una pentola, versare il composto, portare a bollore, cuocere per 3 minuti. Filtrare con lo chinois rivestito di garza. Aggiungere l’agar agar nel liquido trasparente di pomodoro, portare a bollore e cuocere per 2 minuti.Condire con il sale, iltrare con lo chinois, versare sulla placca, lasciar raffreddare in frigorifero. Finitura: Aprire i ricci di mare e ricavarne la polpa. Nel guscio, precedentemente lavato e asciugato, o in una coppetta, aggiungere il carpaccio di dentice, i ricci di mare, il caviale e le uova di salmone. Coprire con la gelatina di pomodoro e servire su un piatto da portata cosparso di sale grosso.

Carpaccio of red snapper: 160 g of red snapper illet salt 5g of lime juice 20 g of extra virgin olive oil 5 g of julienned chives
Red snapper carpaccio Clean, illet and debone the red snapper, season and marinate with all the ingredients for 5 minutes. Slice.
Tomato jelly: 2 copper tomatoes 40 g cherry tomatoes Salt Agar-agar Finishingy: 4 sea urchins 10 g caviar 10 g salmon roe Coarse salt
Tomato jelly: Blend copper tomatoes and cherry tomatoes with the mixer. In a saucepan, pour the mixture, bring to a boil, cook for 3 minutes. Filter with the gauze-coated chinois. Add the agar-agar in the transparent tomato liquid, bring to a boil and cook for 2 minutes. Season with salt, ilter with the chinois, pour on the plate, leave to cool in the refrigerator. Finish: Open the sea urchins and extract the pulp In the shell, previously washed and dried, or in a small bowl, add the red snapper carpaccio, the sea urchins pulp, the caviar and the salmon roe. Cover with the tomato jelly and serve on a platter sprinkled with coarse salt.

Sicuramente le auto che volano come immaginavano in certi ilm di fantascienza degli anni Ottanta non ci sono ancora, ma quello che è cambiato, o sta mutando più velocemente di quanto possiamo immaginare è il concetto di propulsione delle vetture. L’industria dell’auto, almeno in Europa, sta andando verso una drastica riduzione delle emissioni nocive e quindi la strada più semplice è stata quella di realizzare vetture con un motore elettrico, o comunque ibrido. Complici anche le scelte di alcune capitali che hanno decretato un blocco delle vetture inquinanti, principalmente diesel, ecco

che la scelta di molti costruttori è caduta su questa tipologia di propulsione. I motori ibridi che uniscono un propulsore termico a uno elettrico autoricaricante è stata la prima fase di questo mutamento per poi passare a motori interamente elettrici. Una tecnologia che ino a pochi anni fa però aveva forti limiti sull’autonomia delle vetture, che erano costrette ad avere enormi batterie per assicurare lunghe percorrenze. Questo costringeva le Case auto a immettere sul mercato principalmente delle city car, ovvero auto di piccole dimensioni adatte quasi esclusivamente a percorsi cittadini con un’autonomia di poco più di 200 chilometri. Surely cars that ly, as they imagined in some science iction movies in the eighties, well we’re not quite there yet, but what has changed, or is changing faster than we could have imagined is what makes our cars move. The automotive industry, at least in Europe, is pushing to reduce toxic emissions and so the easiest way considered has been to make cars with electric engines, or otherwise hybrid. Also the choice of some capitals to ban circulation of the more polluting cars, mainly diesel, has been a contributing factor, therefore many manufacturers questioned their choices and started rethinking and focusing on this type of engine.The irst idea of change was the

hybrid engine, a combination of thermal engine with an electrical self-charging one which then switched to all-electric engine. This technology up to a few years ago had severe limits and restraints on the car’s autonomy, which were forced to have huge batteries to ensure long journeys. The car companies couldn’t but put on the market mainly city cars, or small cars suitable almost only to urban driving with a range of just over 200 kilometers. Another draw-back was the battery recharging time, often very long for short distances. Furthermore, the infrastructures in Europe are so diverse, each country having developed diferently depending on the diferent states’ policies and incentives studied by the single government. Today, however, the situation has changed and thanks to the new high-density lithium batteries, electric mobility is no longer limited to city cars. The US company Tesla was the irst to focus on all-electric propulsion cars with its Model S and the recent Model T, albeit industrial events have giugno-luglio 2018 _ 71

La Casa statunitense Tesla per prima ha puntato su vetture a propulsione interamente elettrica con la sua Model S e la recente Model T, anche se con alterne vicende industriali. Ora anche le più blasonate Case auto sono arrivate sul mercato con vetture interamente a propulsione elettrica. Da luglio è in vendita la Jaguar i-Pace, un suv elettrico made in UK. Quindi anche le vetture elettriche seguono la tendenza del mercato dell’auto, ovvero dei suv. Infatti la Tesla più recente, la Model X, è un suv lungo 5,03 metri con un abitacolo che può ospitare sette persone su tre file di sedili, trazione integrale, un motore elettrico che gli permet72 _ giugno-luglio 2018
te di raggiungere i 100 km/h in 3”1 e un’autonomia di 565 km con un design particolare e le portiere posteriori ad ala di gabbiano. La Jaguar i-Pace invece ha linee che riprendono gli ultimi suv della Casa inglese e dispone di due motori elettrici, uno per asse, con una potenza di circa 400 cv che la spinge fino a 200 km/h con una autonomia di 480 km e la possibilità di ricaricarne l’80% delle sue batterie al litio ad alta densità in soli 40 minuti. Tanta anche la tecnologia a bordo della vettura con connessioni in remoto per l’aggiornamento del software di bordo o il sofisticato impianto frenante che fornisce energia rigenerativa alla batteria o la guida a un solo pedale che funge da freno e da acceleratore. Una curiosità; la Jaguar i-Pace ha anche una particolare attenzione verso i pedoni, visto la sua silenziosità nel muoversi quando viaggia sotto i 20 km/h principalmente nei centri abitati, emette un segnale acustico esterno per avvertire della sua presenza. La nuova era della mobilità è iniziata.

And technology on board is all the more innovative: remote connections for updating the on-board software, sophisticated braking system that supplies regenerative energy to the battery, one-pedal that acts as brake and accelerator. An oddity; the Jaguar i-Pace is particularly paying attention to the safety of the pedestrians, given how silent it is when moving under 20 km/h mainly in populated areas, pedestrians may not hear the car coming, so cars have been equipped with an external acoustic warning signal that emits a sound to advise you of its presence.
