Apriamo questo nuovo anno del nostro magazine con uno straordinario viaggio nella città più romantica (e forse più bella) d’Europa, Parigi. E se Parigi val bene una messa, per dirla con Enrico IV, anche le altre due mete che vi proponiamo per febbraio e marzo sono due città da visitare almeno una volta nella vita: Stoccolma, la capitale del nord con i suoi canali e le sue isole, e l’Abruzzo, regione ricca di meraviglie tutte da scoprire tra oasi verdi e magici castelli. La Top Ten di questo mese, una carrellata delle novità che sbarcheranno sul piccolo schermo nel 2018 con retroscena e anticipazioni, è pensata per tutti i patiti delle serie TV che tengono incollati al divano milioni di spettatori sera dopo sera, episodio dopo episodio. Condé Nest Traveller. Miracoli visivi nel sotterraneo, parte prima: sotto la collina di Brunkeberg corre il tunnel di Brunkeberg, lungo 231 metri. Serve per passare dalla parte centrale della penisola nord all’orientale Östermalm. L’efetto ottico è futuristico, nonostante il canale sia stato realizzato alla ine dell’Ottocento da Knut Lindmark. L’ingegnere si tolse la vita nel 1892, convinto di aver commesso errori nella progettazione, ma il tunnel esiste tutt’oggi e fa da tramite verso i luoghi di interesse della zona est di Stoccolma. Lo stesso Lindmark ha progettato anche l’ascensore di Katarina nel 1881. Oggi non è in funzione, ma si può accedere al punto di osservazione attraverso la scalinata. Ad un livello di altezza di 38 metri, il panorama sulla città è notevole. Even though the canal was built at the end of the nineteenth century by Knut Lindmark, the optical effect is futuristic . The engineer took his own life in 1892, convinced he had made mistakes in the design, but the tunnel is still functional today and serves as a gateway to places of interest in the East of Stockholm. Lindmark himself also designed the Katarina elevator in 1881. Today the elevator is not operational, but the vantage point can be accessed through the stairway. At a height of 38 meters, the panorama of the city is remarkable. Visual miracles underground, part two: the subway stations represent one of the “longest” examples of underground art in the world. 110 kilometers of network connect the various areas of the capital: each stop, from the Fifties to today, has been decorated with sculptures, mosaics, paintings and installations by over 150 artists, making the subway a real traveling museum. The City Hall Tower is part of one of Stockholm’s most iconic buildings and the top can be reached (106 meters high) by going up 365 steps. From here it is possible to see Lake Mälaren and the island of Riddarholmen, on which the church (with the same name) is located, the pantheon of the sovereigns of Sweden. If the tower is a magnificent vantage point, looking at it from the island gives the same effect. The building, located in Riddarfjärden, is one of the most beautiful postcards of a city full of hidden beauties worth photographing.

L’attesa per la seconda stagione di The Americans è inita. Ideata da Joe Weisberg, la serie è tra le migliori sorprese della passata stagione televisiva, un’ulteriore conferma di come in casa Fox si punti alla qualità. Ambientata negli anni ‘80, subito dopo l’elezione di Ronald Reagan, racconta le vicende di Phillip ed Elizabeth Jennings, interpretati rispettivamente da Matthew Rhys e Keri Russell, due spie del KGB che, sotto copertura, si ingono una qualunque coppia americana a Washington DC.

Westworld

4 Ancora non c’è una data certa per la messa in onda dell’attesissima seconda stagione di Westworld, la serie tv creata da Jonathan Nolan e Lisa Joy; quel che è sicuro è che entro la ine del 2018 potremo tornare a Westworld per scoprire se Ford/Hopkins, cofondatore del parco, è realmente morto e quali saranno le sorti di Dolores e dell’Uomo in Nero. Una lunga attesa che potrebbe essere spigata con l’introduzione di mondi tematici alternativi, quello romano e quello medievale, come nell’originale di Michael Crichton “Il mondo dei robot”. Broadcast date of the sought-after second season of Westworld, the TV series created by Jonathan Nolan and Lisa Joy, has not been ixed yet. Maniac, the new Netlix 10-episodes series (based on the 2014 Norwegian serial) tells the stories of two young people living imaginary adventures, who are actually the patients of a psychiatric institute. In addition to Stone and Hill, the cast features also Sally Field, Justin Theroux and Jemima Kirke.

The wait for the second season of The Americans is over. A Joe Weisberg’s brainchild, the series is one of the surprising successes of the latest TV season and it conirms how Fox is focusing on quality. na famiglia si riunisce in uno chalet in campagna per cercare di ritrovare coesione e gli afetti, ma quando improvvisamente va via la connessione internet tutti entrano nel panico. È la trama di Sconnessi che con un taglio intergenerazionale racconta il rapporto degli italiani con i social, gli smartphone e la tecnologia in genere. Nel cast Fabrizio Bentivoglio nei panni di Ettore, noto scrittore, guru dell’analogico e nemico pubblico di internet, Eugenio Franceschini e Lorenzo Zurzolo che interpretano i suoi igli e Carolina Crescentini, la seconda moglie. Al gruppo si unisce anche Tea interpretata da Giulia Elettra Gorietti che, a BeBlueAir, racconta come il suo personaggio sia lontano da lei. «Mi intrigava l’idea di interpretare un personaggio fuori dalle righe, un po’ hippie e contro la tecnologia. Invece, io sono molto diversa, ho imparato a usare molto i social e lo smartphone, è un modo per entrare in contatto anche con il pubblico. Fino a qualche anno fa ero come Tea, non avevo nemmeno lo smartphone. Poi cinque anni fa ho iniziato a usare il Blackberry e dopo sono passata all’iPhone. Ho iniziato utilizzando soprattutto le email, essenziali per il lavoro, in seguito con i social il mio rapporto si è fatto stretto. Mi piace il contatto con i miei fan. Ad esempio, su Instagram ero scetti-

It is the plot of Sconnessi that with an intergenerational cut tells what relationship Italians have with social networks, smartphones and technology in general. In the cast Fabrizio Bentivoglio in the role of Ettore, well-known writer, guru of the analogue and public enemy of the Internet, Eugenio Franceschini and Lorenzo Zurzolo play his sons and Carolina Crescentini, his second wife. Tea, also joins the group, interpreted by Giulia Elettra Gorietti, who tells BeBlueAir how her character is far from her own experience. “I was intrigued by the idea of playing a character outside of lines, a bit hippy and against technology. Instead, I’m very diferent, I learned to use the social media and smartphones a lot, it’s a way to keep in touch with the general public too. Up to a few years ago I was like Tea, I didn’t even have a smartphone. Then ive years ago I started using Blackberry and after I switched to iPhone. I started using mainly email, essential for work, later with social networks I got connected. I like the contact with my fans. BOTTA E RISPOSTA Qual è la sua peggiore abitudine? Sono polemica. Cosa sceglierebbe per il suo ultimo pasto? Mi fumo una sigaretta anche se ho smesso. Cosa ha in tasca in questo momento? Niente. Quando è stata la sua ultima notte scatenata? L’altro ieri, più che altro mi sono divertita, la più grande follia che oggi si può provare visto che oggi ci siamo scordati che cosa vuol dire. È invisibile: qual è la prima cosa che fa? Vado a spiare i politici. Cosa voleva diventare da grande a 5 anni? Un avvocato matrimonialista.

What is your worst habit? I’m controversial. What would you choose for your last meal? A cigarette, even though I quit. What do you have in your pocket right now? Nothing. When was the last time you partied? The day before yesterday, more than anything else, I had fun, the greatest madness that can be felt today, as today we have forgotten what it means. You’re invisible: what’s the first thing you would do? I’d go spy on the politicians. Who did you want to be when you were 5? A divorce lawyer.

What is your social nickname and, instead, what do your friends call you? «GiuliaElettraGo. Those who know me call me Giulia, but then there are the Elettra fans, but I feel a little more Giulia.». Why did you agree to shoot Sconnessi? «I enjoyed making a comedy as I came from making two very beautiful and intensive, but dramatic movies, I liked having a diferent choice. Secondly because the movie is aimed at an audience of diferent ages: it is the story of a large family, there are young people, then my character and her husband, we are about 25. Then there is the forty year old and so on. What’s more, within this family structure, the relationship that each generation has with technology is narrated and, in my opinion, this is an interesting aspect». What’s this character left in you? «I love freedom, of thought, of opinion, of choice, Tea has helped me to put this into practice, by giving me the freedom to act». Qual è il suo nickname social e, invece, come la chiamano gli amici? «GiuliaElettraGo. Chi mi conosce mi chiama Giulia, ma poi ci sono i patiti del nome Elettra, ma io mi sento un po’ più Giulia».

Lei ha esordito a 14 anni in Caterina va in città. Da allora come è cambiato il suo rapporto con il cinema? «Io praticavo la ginnastica ritmica, ma poi la recitazione è diventata la mia grande passione. Fino a 21 anni sono stata iscritta all’università, quando sono cresciuta come donna ho trovato il coraggio di sposare questo lavoro per la vita, accettando tutti i rischi. Ho aperto gli occhi sacriicando un po’ di ingenuità e ancora non ho capito se è stato un bene o un male, ma la persona che sono oggi lo devo soprattutto al mio lavoro».

Perchè ha accettato di girare Sconnessi? «Mi divertiva fare una commedia in quanto ero reduce da due ilm molto belli e impegnati, ma drammatici, mi piaceva una scelta diversa. In secondo luogo perché è un ilm che si rivolge a un pubblico di età diferenti: è la storia di una grande famiglia, ci sono ragazzi giovani, poi il mio personaggio e suo marito che siamo intorno ai 25, poi i quarantenni e così via. Inoltre, all’interno di questa struttura, è narrato il rapporto di ogni generazione con la tecnologia e, secondo me, questo è un aspetto interessante». Cosa le è rimasto del personaggio? «Io amo la libertà, quella di pensiero, di opinione, nello sceglie-

Del nuovo disco abbiamo provato circa sette pezzi. Il problema sarà dover eliminare e non aggiungere. Durante le prove mi sono sentito il Rubin della situazione. Lui ripeteva sempre che le cose che hanno meno suonano meglio. E dal vivo questo concetto è stato ancora più interessante. Con la band abbiamo capito subito che c’era qualcosa che non andava. Alcuni pezzi dovevano essere rivisti, quelli vecchi bisognava renderli più scarni, più rock’n’roll, più informali. Così per prima cosa ho iniziato a far togliere metà dei componenti della batteria. Ho cercato di asciugare il più possibile. Stiamo lavorando allo spirito dei concerti. Sarà uno spettacolo totale, immersivo, una goduria a 360° gradi. Prometto che faremo lo spettacolo migliore di sempre!».

Cosa le hanno dato la sua terra d’origine (la Puglia), l’America e Roma? «Della Puglia mi sono portata dietro i sapori decisi, il coraggio del sud e le spalle tanto grandi da poter sopportare tanto. Dal modo di pensare americano ho capito che tutto (o quasi) può essere possibile. Considero gli Stati Uniti parte di me e casa mia esattamente come l’Italia… Nel 2004 sono venuta a Roma. Volevo imparare a fare la miglior pasta fresca del mondo e rientrare ad Austin, ma le opportunità che mi si sono presentate erano da prendere al volo. Così eccomi qui da ormai 14 anni». Nella sua esperienza professionale, quale è stato il più grande ostacolo e come l’ha superato?

«Ho incontrato diicoltà esattamente come ogni altra professionista che ha invaso un campo in cui gli uomini dominano. Ci vuole tempo e pazienza perché ci si abitui all’idea che una donna possa svolgere una professione agli stessi livelli di un uomo, ma ci riusciremo! Io sono sempre stata convinta che un cuoco è un cuoco e la sua cucina è solo il risultato della propria esperienza e cultura. Nulla di più e nulla di meno». Una rinuncia, se c’è stata, e la soddisfazione più grande… «Non vivo la mia professione come un lavoro e dunque non la concepisco come una “sottrazione” alla mia vita. Mi realizza come persona e quindi le lunghe ore al lavoro, il tempo limitato con la mia famiglia, il poco tempo da dedicare a me stessa non li vivo come sacrificio. La soddisfazione più grande, aver seguito il mio cuore e avere sempre la forza di rischiare».

Alle giovani che si avvicinano a questo mestiere quale segreto si sente di svelare? «Suggerisco, indipendentemente dall’essere una donna o un uomo, disciplina, coraggio e capacità di osare senza perdere di vista la ricerca di un equilibrio. Rischiare sì, ma prima di tutto sentirsi lucidi. Credete nella vostra passione e lavorate duramente. Abbiate il coraggio di esprimere ad alta voce i vostri desideri e assicuratevi di sottolineare i vostri meriti». Quale insegnamento lascia a chi si forma con lei? «In questo mestiere tutto si può imparare. A essere ordinati e puliti, a organizzare il proprio lavoro in modo eicace e si apprendono tutte le tecniche di cucina. Persino l’umiltà si può imparare. Certo, quello che nessuno può insegnarti è la tenacia e la determinazione…». Ed è lo stesso che ha ricevu-

to lei? «Ho imparato che studiare è l’unico modo per conoscere nuove tecniche, per stimolare nuove sperimentazioni, per elaborare abbinamenti innovativi. Un piatto è fatto di diversi elementi, ognuno dei quali necessita di molta cura, dal food design ino al gioco delle consistenze, passando per odore e sapore. Un piatto riuscito in ognuno di questi aspetti nasce dopo tanto lavoro, tanti tentativi e moltissimo approfondimento. Ognuno poi trova e personalizza il proprio modo di lavorare, di creare». Quando da cuoca/o si diventa chef? «Nel momento in cui ho realizzato che cucinare poteva essere più del “semplice” spadellare, che era questione di cultura, tradizione, creatività, etc. ho capito che sarebbe diventata la mia professione. E di una cosa sono certa, non è possibile pensare di poter diventare chef senza aver prima

The path that led you to be a chef was rather unconventional: the legal internship, the US and then, the sparkle. What did you learn from your experience of those years? «I oicially went to the US to attend a master after my degree in law… in 2000 I decided to take a degree in Culinary Arts at the TCA… My cuisine is very much inluenced by the American spirit: thinking that everything is possible, without limiting the imagination, giving space to the creativity supported by knowledge, always following your path». Why did it take quite a long time for you to give way to your skills? «I’ve always nurtured a passion for cooking, since I was a kid. It took quite a lot to understand that I wanted to turn that passion into a job… Having little experience is an all Italian prejudice… the world is full with young chefs who manage very important restaurants. And there are people who started their career late and achieved great results». How did your homeland (Puglia), the US and Rome inluence your cuisine? «Puglia gave me its strong lavors, the courage typical of Southern people and the capability to cope with diicult situations. I learnt from the American attitude that everything (or almost everything) is possible. I think of the US as a part of me, it’s my home just like Italy… In 2004 I came to Rome. I wanted to learn how to prepare the best fresh homemade pasta in the world and then go back to Austin, but I was ofered some great opportunities I couldn’t but dicembre-gennaio febbraio-marzo 2018 _ 63

Running a risk is ok, but you have to be self-aware. Believe in your passion and work hard. Have the courage to give a voice to your dreams and make sure to stress your value». What is the concept you want to convey to your trainees? «In this job you can learn everything. You learn to be neat and clean, you learn how to organize your job in an efective way and you learn the various techniques. You can even learn how to be humble. Obviously what can’t be taught is how to be determined and perseverance…».

Is it what you have been taught too? «I learnt that the only way to get to know new techniques is by studying. You need to study to spur new experimentations, to create new innovative combinations. A dish is made of diferent elements, each of them needs a lot of attention, from the food design to playing with consistencies, passing through the aroma and the lavor. You need to work hard to obtain a dish that fulills every one of these aspects, you need to make lots of attempts and to study a lot. Then we all ind our personal way to work and to create».

Fare un buon piatto è molto più semplice che fare il piatto». Un piatto al quale non sa rinunciare? «La pasta e piselli che cucinava mia nonna. Quando la preparava e mi chiamava, ovunque fossi, lasciavo tutto e correvo da lei». E quello che la rappresenta di più? «Il mio panino alla liquirizia con foie, into ketchup di mango e maionese al passito. Messo in carta nel 2006 al Glass, ha tentato di rompere gli stereotipi del panino non servibile in un contesto come Glass, un ristorante che poi, pochi anni dopo, ha preso la Stella. Quando l’ho pensato, la moda dei panini non era neanche lontanamente in vista».

I’ve always thought that a chef is a chef and his/her cuisine is the result of his/her experience and culture. Nothing more, nothing less». Did you have to give up something? What was your greatest satisfaction? «I don’t conceive my work as a job, so I don’t see having to “give up” anything in my life. It fulills me and so the long working hours, the limited time for my family, the little time I can give to myself are not a sacriice. My greatest satisfaction is having followed my heart and having had the strength to risk». What is the secret you’d like to share with the young people who are approaching this career?

Romeo e Giulietta sono nomi di suoi importanti locali a Roma, come mai ha rievocato questa coppia? «Tutti i nostri ristoranti hanno avuto a che fare con le macchine. In via Silla [a Roma, ndi], l’ex sede del primo “Romeo” era un’oicina dell’Alfa Romeo. Poi ci siamo trasferiti in questa nuova sede (un ex concessionaria) per espandere la produzione del forno e dei nostri laboratori, e quindi è venuto naturale dare il nome di Giulietta alla nostra pizzeria. C’è un legame sia con le automobili, che con la città, ma anche con gli animali, “Romeo, il gatto più igo del Colosseo”, un protagonista del nostalgico Aristogatti». Il viaggio è una costante della sua vita, cosa porta con sé al suo ritorno? «Nuovi piatti per i ristoranti! Mi piace l’idea di servire le mie ricette in piatti provenienti da ogni

parte del mondo e raccontarlo ai miei clienti». E cosa le manca di più dell’Italia quando è all’estero? «Le persone a me care… Sono un po’ nomade di natura e my house is my heart is…» Quando non lavora, quale vacanza si concede? «Non stacco mai del tutto... con la mia famiglia andiamo spesso in Trentino e una, o due volte l’anno, mi concedo una mini vacanza con mia sorella in qualche parte nel mondo». Se fosse un piatto o un ingrediente o un sapore, quale sarebbe e perché? «Forse un peperone... nasce di un colore e muore di un altro, al primo boccone è savarin e poi diventa dolce. Solidamente proletario, ma non ha paura di confrontarsi con l’élite dei cibi ed è trasversale: piace a tutti, o quasi!»

How do you turn from cook to chef? «When I understood that cooking could be more than the “simple cook up”, and that it was a question of culture, tradition, creativity etc., I realized that that would be my career. And I am sure that you can’t be a chef without having experienced the most humble tasks. Training and study are essential». What changed in you when you won your Michelin star? «The impact was huge. A Michelin star gives you the conidence to continue your professional growth without having to struggle to ind an “audience». Where do you take your inspiration to create new dishes? «I take inspiration from everything, from my studies, from my journeys. I usually take three main seasonal and fresh ingredients, I combine them in a dish, I even just throw them together. I taste it and let others try it. In this way I immediately understand if there is something to work on or not. Preparing a good dish is easier than preparing the dish». What is a dish you can’t do without? «My grandmother’s pasta e piselli (pasta and peas). When she cooked it she used to febbraio-marzo 2018 _ 65

call me and wherever I was, I went running to her». What is the dish that represents you the most? «My liquorice sandwich with foie, fake mango ketchup and passito-lavored mayonnaise. I put it in the 2006 Glass menu, trying to break the stereotypes of the sandwich dificult to serve in such a context as the Glass, a restaurant that, a few years later, was awarded with the Michelin star. When I created it, “the sandwich trend” was not even in sight». Romeo and Giulietta are the names of your important restaurants in Rome. How come you evoked this couple? «All our restaurants had something to do with cars. In via Silla (in Rome, ed), the former location of the irst “Romeo” was a former Alfa Romeo repair shop. Then we moved in this new location (a former car dealer) to expand the production of bakery and of our workshops, so it was obvious to call our pizzeria “Giulietta”. There is a connection both with the cars and with the city, and with the animals too, “Io so’ Romeo, er mejo gatto der Corosseo” (I am Romeo, the coolest cat of the Colosseum), a character from the Aristocats, the nostalgic Disney’s animated movie».

Linguine cotte in acqua di peperone, alici del Cantabrico e bottarga all’Armagnac Ingredienti 340 gr di Linguine 8 peperoni rossi 5 cucchiai di olio 1 spicchio d’aglio 1 mazzetto di coriandolo fresco 20 alici del Cantabrico sott’olio Bottarga all’Armagnac

Ingredients 340 gr Linguine 8 red peppers 5 tablespoons of oil 1 clove of garlic 1 some fresh coriander 20 Cantabrico anchovies in oil Armagnac-lavored bottarga.

Preparazione Cospargete di olio 7 peperoni rossi e metteteli a cuocere in forno a 170 gradi circa. Metteteli a scolare e raccogliete il loro succo. Usate 6 peperoni per qualcos’altro e uno frullatelo (dopo averlo spelato ed eliminato i semi. Tutti!) con un po’ di olio e sale e passatelo al setaccio. Prendete l’ultimo peperone e dopo averlo arrostito su fuoco vivo, mettetelo a esiccare in forno ino a quando sarà completamente disidratato (circa 60 gradi per 7/8 ore) e frullatelo riducendolo in polvere. Cuocete le linguine Granoro per 4 minuti in acqua salata. In una padella fate rosolare 1 spicchio d’aglio in 4 cucchiai di olio, aggiungete l’acqua dei peperoni e fatela ridurre di un terzo. Aggiungete la pasta e initela di cuocere in padella (4 minuti circa) aggiungendo altro liquido se necessario. Aggiungete le alici e il coriandolo. In un piatto disponete il coulis di peperoni, la polvere di peperoni e la pasta inendo con una grattugiata di bottarga all’Armagnac. Servite.

Preparation Oil 7 red peppers and put them in the oven at around 170°. Drain them and collect their juice, put one pepper in the blender (after having peeled it and removed every single seed!) together with oil and salt then pass it through a sieve, something else can be done with the remaining 6 peppers. Take the last pepper and after having roasted it on the lame, put it to dry in the oven until it is completely dehydrated (about 60° for 7/8 hours) and blend it until it is powdered. Cook the Granoro linguine for 4 minutes in salted water. In a pan, brown 1 clove of garlic in 4 tablespoons of oil, add the peppers’ water and wait until it is reduced to a third. Finish cooking the pasta by putting it in the pan (around 4 minutes) adding further water if necessary. Add the anchovies and the coriander. In a dish set the pepper coulis, the pepper powder and the pasta adding on the top the grated Armagnaclavored bottarga. Serve.

Your life is made of journeys, what do you bring with you from your journeys? «New plates for the restaurants! I like the idea to serve my recipes in plates coming from any part of the world and to recount it to my customers». What is the thing you miss the most when you are abroad? «The people I love… I am a bit of a globe-trotter and my house is where my heart is…». In your free time, what kind of holiday do you do? «I never unplug completely… I usually go to Trentino with my family and once or twice a year I take a small holiday with my sister around the world». ome di consueto sono sette le auto inaliste del prestigioso premio Car of The Year 2018 tra cui, in occasione del Salone di Ginevra ai primi di marzo, verrà scelta la vincitrice assoluta. Il premio Car of The Year, il più prestigioso e storico del mondo dell’automotive, nasce nel 1964 ed è organizzato da sette testate europee e coinvolge nelle votazioni una giuria di oltre sessanta giornalisti esperti del settore delle auto di tutta Europa. Questo ampio numero di votanti assicura, rispetto ad altri premi, una giuria più completa e di valore, lontana quindi da qualsiasi singola preferenza o interferenza delle sette Case auto. I

giornalisti, infatti, rappresentano ben 23 nazioni europee; ogni giurato ha a disposizione 25 voti da assegnare ad almeno 5 vetture delle sette selezionate, con un massimo di 10 voti per una singola vettura. Inoltre i giurati hanno avuto diverse occasioni per testare realmente le vetture selezionate e successivamente guidare a lungo le sette inaliste. As usual, seven are the inalist cars of the prestigious 2018 Car of the Year award, among which, at the Geneva Motor Show in early March, the absolute winner will be chosen. The Car of The Year award, the most prestigious and historic in the automotive world, was founded in 1964 and is organized by seven European newspapers and involves a jury of over sixty experts in the car industry across Europe. This large number of voters ensures, compared to other awards, a more complete and valuable jury, thus assuring any single preference or interference from the seven car companies. In fact, journalists represent as many as 23 European nations; each juror has 25 votes to assign to at least ive of the seven cars selected, with a maximum of 10 votes for each single car. In addition, the jurors
