Quella del 2017 per Blue Air è un’estate di crescita e grandi passi avanti, con investimenti importanti per migliorare giorno dopo giorno il servizio offerto ai nostri clienti. In quest’ottica, sono lieto di annunciare ai lettori del nostro magazine che la Compagnia ha ordinato sei nuovi 737 MAX 8 alla Boeing, la casa che rappresenta l’eccellenza assoluta nel mondo del trasporto aereo e che garantisce affidabilità e sicurezza. E non finisce qui: ci siamo aggiudicati anche due opzioni di acquisto e abbiamo noleggiato altri dodici Boeing che vanno ad arricchire la nostra flotta di aerei moderni, efficienti e confortevoli. Questo è il prossimo futuro di Blue Air, che quest’anno compie 13 anni e ormai si può definire con orgoglio operatore pan-europeo. Ma c’è anche il presente, di cui siamo orgogliosi. Un presente che ci vede la prima Compagnia aerea rumena, con più di cento destinazioni in sedici Paesi, tra cui ovviamente l’Italia, che per noi rappresenta un mercato di grande importanza e di sicuro sviluppo. Dalla base operativa di Torino sono oggi previsti venti collegamenti diretti, ma presto ci auguriamo di arricchire la nostra offerta. Buon viaggio e buone vacanze a chi vola con Blue Air!

To this end I’m delighted to announce to our magazine readers that the Company has ordered six new 737 MAX 8 planes from Boeing, a brand which represents absolute excellence in the air transport industry and that guarantees reliability and safety. And it doesn’t end there: we’ve also secured two purchase options and leased another twelve Boeings which will enrich our fleet of modern, efficient, and comfortable aircraft. This is the short term future for Blue Air, which this year turns 13 and can now proudly be defined as a panEuropean operator. But we’re also proud of the present, a present which sees the leading Romanian airline with more than one hundred destinations in sixteen countries, including Italy, which for us represents a market of huge importance and secure development. There are currently twenty direct links from our operating base in Turin, but we’re hoping to ramp up that offer very soon. “Non c’è che una stagione: l’estate. Tanto bella che le altre le girano attorno”, parola di Ennio Flaiano. Con questo numero di “BeBlueAir” l’estate vogliamo festeggiarla come si deve, augurando buone vacanze a tutti i nostri lettori che hanno chiuso con il lavoro e facendo sognare quelli ancora in viaggio con la ventiquattrore tra un meeting e l’altro nelle città infuocate, in attesa che arrivi Ferragosto o, perché no, settembre, un mese meraviglioso per godersi le ferie. Sfogliando le pagine del nostro magazine, vi scorrerà sotto gli occhi mezza Europa, da Lisbona alla Romania, passando per le spiagge incantevoli della Sardegna, e magari ascolterete i nostri consigli per scegliere la meta del prossimo viaggio. Vi porteremo poi alla scoperta dell’aeroporto di Trapani, e vi terremo aggiornati su tutte le ultime novità dal mondo delle auto, della moda, del design, dell’editoria (con i libri da leggere sotto l’ombrellone e non solo) e della musica e del cinema. Già, la musica e il cinema: abbiamo intervistato per voi il mitico Zucchero, uno dei più amati cantautori italiani, e vi condurremo al Festival di Venezia, l’appuntamento che tutti i cinefili aspettano con ansia da un settembre all’altro. Insomma, come sempre il menù è molto ricco... Tutto questo e molto altro è “BeBlueAir”!

And with any luck you’ll take on board our tips for your next holiday destination. Speaking of music and cinema, we interviewed the legendary Zucchero, one of Italy’s best-loved singer-songwriters, and we’ll be taking you to the Venice Film Festival, the most eagerly awaited event of the year for cinema lovers. I tetti di Milano e di molte altre città europee sono sempre più green. Non solo piante ornamentali ma anche da frutto ed erbe aromatiche, che permettono a ristoranti e cittadini di creare la propria dieta a KM0. L’ultimo tetto green arrivato a Milano è opera dello studio di architettura Piuarch, in via Palermo 1, composto da un sistema modulare di pallet che, tra i benefici, registra un miglioramento della qualità dell’ambiente di lavoro dal punto di vista climatico, energetico, economico e sociale.

However it’s not wealthy Londoner Phileas Fogg and his French maid Passepartout doing the travelling, as per Jules Verne’s famous novel “Around the World in 80 Days”, but Italy’s most famous bluesman, Zucchero and his trusted “band” of 13 musicians. Seven months on the road from one world stage to the next, playing and singing his best-known hits to different audiences and cultures. It’s a record. 16 concerts sold out at the Verona Arena, soon to become 22 with the six additional fixtures between 20 to 25 September. It’s Zucchero’s birthday on the 25th and he’s promising a special surprise. The world tour is clocking up one success after another. How’s it going “on the road”? «I really like playing live. For quite a few years now every new record has been followed by a one or two year tour». Between America, Canada, Japan, Europe, Australia, New Zealand and the other countries the tour has touched down in, which place has given you the biggest welcome? And the most unexpected? «I’m always blown away by the audience reception abroad. With this last tour we went to New Zealand and Japan for the first time and I was surprised by the fact that the audience sang my songs along with me». A live world tour alongside a trusted group of friends. «I’m fortunate to have landed a group of 13 very talented musician-friends, who I also like being around. We’ve created the

E quale quella più inaspettata? «Sono sempre stupito dall’accoglienza del pubblico estero, con questo ultimo tour siamo stati per la prima volta in Nuova Zelanda e in Giappone e sono rimasto sorpreso dal fatto che il pubblico cantasse con me le mie canzoni». Un viaggio live ricco di soddisfazioni in giro per il mondo al fianco di un gruppo fidato di amici. «Ho la fortuna di aver messo su un gruppo di 13 musicisti-amici, bravissimi dal punto di vista lavorativo, ma con cui ho piacere anche di andare in giro. Si è creata la giusta vibrazione e ci divertiamo. Diciamo che è il motore che stimola. Così come è uno stimolo portare in giro per il mondo la mia musica cantata in italiano. Canto solo un paio di brani in inglese perché penso che sia importante suonare l’originale». La scelta di cantare in italiano sta ripagando le attese? E come sta reagendo il pubbli-

Which songs are enjoying the biggest success? «The best-known songs are definitely “Senza una donna”and “Miserere”, but even abroad now I have a really loyal audience that knows all the songs». Zucchero’s musical “entourage” also stopped off in Verona. By now the city is your HQ, with 11 live dates in 2016, five in May and another six in September. What’s so special about the Arena? «It’s the ideal place to listen to and see a concert. You get to enjoy the show from all sides, and the acoustics are great». Have you come up with any

particular surprises for the six planned dates in Verona from 20 to 25 September? «At the moment I’m focusing on the current tour, but definitely, at least on my birthday (September 25, Ed), there’ll be a few surprises». Nowadays, stadiums are very much in fashion. Given your number of live dates have you ever thought about a solely stadium tour? «In the past I did a lot of stadium concerts, but I now prefer places with more history, where I have more contact with the audience». Back to the here and now, as well as taking masses of flights for this mammoth world tour you also opted to travel on sleeper buses. What was that like? «It’s a bit like getting back to basics. In 2014 we did a two-month tour of the United States and we decided to move between fixtures on sleeper buses. I noticed that it made the band even more close-knit and the trip more interesting, so I decided to do it again». There’s been a wealth of anecdotes over the years about what happens on sleeper buses. Can you tell us one about this tour? What’s the most

Su ciò che succede sugli sleeping bus sono state raccontate tante storie. Ci dica anche lei un aneddoto legato a questo tour. Qual è la cosa più bizzarra successa a bordo? «Ciò che succede negli sleeping bus rimane negli sleeping bus». Qual è stata sinora la parte più faticosa di questo tour e quale, invece, la parte più divertente?

«La parte più faticosa è sicuramente la parte degli spostamenti tra una città e l’altra mentre la parte più divertente è il concerto».

Questo significa che presto sentiremo ancora parlare di lei o si prenderà una pausa? «Ho sempre vissuto di musica e continuerò a farlo. Non riesco a stare fermo più di tanto tempo, dopo un po’ che sono a casa in qualche modo devo ripartire».

You won’t be back in Italy for another few months. What do you miss most about the country? «Obviously, family, and dinners with friends». Over the past months you’ve played in different places and met different people and cultures. Will you be bringing any interesting titbits for new songs home in your suitcase? «Of course, as usual I’m filling up with sentiments and images that will come out at the right time». Does this mean we’ll be hearing from you again soon, or will you be taking a break? «I’ve always lived and breathed music and will carry on doing just that. I can’t stay still for a long time. el 1932 il settimanale “Italia letteraria” organizza una crociera in Sardegna invitando scrittori e artisti a visitare l’isola. A bordo della nave c’è anche un 24enne Elio Vittorini che vincerà il premio letterario istituito per l’occasione, ex aequo con Virginio Lilli. shades of ocher, bathed by a blue-green sea. Slightly up, on the northwestern side of Sardinia in front of Asinara, one beach stands out right from its name: La Pelosa, in Stintino. It would seem that it’s called this because of the tower on the islet in front, although popular argument has it that the name of the place - which has nothing to envy tropical beaches - is due to the strange vegetation, in the form of long and thin tufts. But Northern Sardinia is full of stop-inyour-tracks sensational beaches, like at Cala Spinosa and Rena Bianca in Santa Teresa Gallura, or the bone-white sand and turquoise waters of Cala Brandinchi in San Teodoro (north-east, not far from Olbia). Setting out from Palau you reach the archipelago of La Maddalena, with its boundlessly valuable natural treasures verging on works of art, such as the pink beach in Budelli (where Michelangelo Antonioni shot a scene from his first color film, Red desert). Meanwhile on Caprera - the island where Giuseppe Garibaldi settled - Cala Coticcio is a must, surrounded by turquoise sea and exquisite rocks. Lina Wertmuller, another great Italian director, chose a beach in Eastern Sardinia to shoot the final scene of her cult movie, “Swept Away”: the red-rock bay in Arbatax with “those” granite monuments that give the place such a unique and alluring edge. The Rocce Rosse Blues Festival runs in Arbatax until August 6, with Vinicio Capossela, Stefano Bollani and Chiara Civello just a few of the guests at the 25-year-old show. Not far north of Arbatax in the commune of Baunei, two more authentic jewels are tucked-away: Cala Mariolu and Cala Goloritzè. Cala Mariolu, with its shallow waters, is one of the pearls of the Orosei Gulf, taking its name from the monk seal - more unique than rare - which has found one of its last places of refuge in the area. Cala Goloritzè was created by a landslide and is so uncontaminated and wild that it has been declared a National Italian Monument. Punta Molentis in Villasimius, south-east Sardinia on the other hand takes its name from the donkeys (called “su molenti” in Sardinian), which were used to extract the abundant granite in the area. But it is the bright white beach and sensational sea with Nuraghe remains behind, which dominates the scene today. Fine white sand and shallow waters characterize Su Giudeu, in Chia, southern Sardinia. The water is crystal clear and at low tide you can easily walk to the islet, a hundred meters from the shore. con quei “monumenti” di granito che conferiscono un aspetto unico ed estremamente affascinante a questo posto. Fino al 6 agosto si terrà qui il Rocce Rosse Blues Festival. Vinicio Capossela, Stefano Bollani e Chiara Civello sono solo alcuni degli ospiti della rassegna. Poco a nord di Arbatax, nel territorio comunale di Baunei, si nascondono altri due autentici gioielli: Cala Mariolu e Cala Goloritzè. La prima, dal fondale basso, è una delle perle del golfo di Orosei e prende il nome dalla foca monaca, animale più unico che raro, che ha trovato in queste zone uno dei suoi ultimi rifugi; la seconda è nata da una frana ed è incontaminata e selvaggia, tanto da essere dichiarata Monumento Nazionale Italiano. Sono invece gli asini (“su molenti” in sardo) a dare il toponimo a Punta Molentis, Villasimius, Sardegna sudorientale. Gli asini erano utilizzati per estrarre il granito, abbondante in queste zone. Oggi a dominare la scena è invece una spiaggia candida e un mare notevole con resti di nuraghe alle spalle.

Sardegna meridionale Sabbia bianca e fine e un fondale bassissimo caratterizzano Su Giudeu, a Chia. L’acqua è cristallina e con la bassa marea si può raggiungere facilmente a piedi anche l’isolotto, distante un centinaio di metri dalla riva. Pochi km più a ovest ecco la spiaggia di Tuerredda, nel territorio di Teulada, un’insenatura che è un vero paradiso tra Capo Malfatano e Capo Spartivento e con un isolotto facilmente raggiungibile a nuoto. Sardegna occidentale Tornando sulla costa Ovest, non si può non fermarsi ad ammirare le falesie bianche di Cala Domestica, a Buggerru. Qui siamo in un’ex zona mineraria e attraverso gallerie molto coreografiche si può accedere a tratti di spiaggia anche più riparati e intimi. E scoprire ancora di più il lato selvaggio di un’isola che - come scriveva David Herbert Lawrence, autore di L’amante di Lady Chatterley – “è fuori dal tempo e dalla storia”.

A few miles further west, Tuerredda beach in the Teulada region is a veritable paradise of a cove between Capo Malfatano and Capo Spartivento, with an islet that you can easily swim to. In this former mining area you can access beaches that are even more intimate and sheltered, via a series of tunnels. Eppure, nessuno riesce a resistere al fascino del celebre tram 28, che si inerpica sulle strade in salita svelando la città poco alla volta. Da Martim Moniz il tram si dirige verso il Monastero di São Vicente de Fora, proseguendo in direzione dell’antico quartiere dell’Alfama, ricco di influenze moresche. Il 28 attraversa strade e piazze pittoresche, passa accanto alla Cattedrale e arriva alla Baixa Pombalina, il quartiere progettato dal marchese di Pombal dopo il terremoto del 1755, che distrusse quasi totalmente la città. E poi l’eleganza del Chiado, con una fermata di fronte al caffè A Brasileira, dove si trova la statua del poeta Fernando Pessoa. mentre sulle rive del Tago ecco emergere quasi dall’acqua il nuovo MAAT, Museum of Art, Architecture and Technology, aperto lo scorso ottobre, il nuovo polo culturale di Lisbona dove si concentrano molti degli eventi che fino al 31 dicembre 2017 festeggeranno la cultura iberoamericana.

There are various ways to see Lisbon: by following its many literary tracks, including Fernando Pessoa’s verses and Antonio Tabucchi’s prose (although anyone looking for Café Orquidea might be disappointed), or via one of the many mirador – panoramic terraces overlooking the city rooftops from the top of the hills. However, no one can withstand the lure of the famous 28 tram, which climbs the city’s uphill roads, revealing the city below. From Martim Moniz the tram heads to the Monastery of São Vicente de Fora and then on to the ancient Alfama district, brimming with Moorish influences. The 28 then crosses streets and picturesque squares, passes by the Cathedral and arrives at Baixa Pombalina, the neighborhood designed by the Marquis of Pombal after the 1755 earthquake which almost completely destroyed the city. From there it’s on to stylish Chiado and a stop in front of the café bar A Brasileira, where a statue of poet Fernando Pessoa can be found. A dive into traditional Lisbon – on the hunt for coffee and glimpses of character - doesn’t exclude a visit to the face of a new and unexpectedly modern city. Some tourists will cross the Bridge 25 de Abril only to find themselves thinking they’re at the Golden Gate in San Francisco, while on the banks of the Tagus the new MAAT - Museum of Art, Architecture and Technology (opened last October) emerges almost from the water. Lisbon’s newest cultural center is jam-packed with many of the events running until 31 December 2017 celebrating IberoAmerican culture.

Vis - Croazia

TORNA IL GRANDE CINEMA A VENEZIA Sulla Laguna prende il via la Mostra Internazionale d’Arte Cinematografica che apre i battenti il 30 agosto e chiude il 9 settembre di Stefano Cocci

a 73esima edizione della Mostra Internazionale d’Arte Cinematografica di Venezia si è conclusa con il Leone d’oro consegnato a The Woman Who Left di Lav Diaz, regista filippino che ha raccontato la storia di una donna imprigionata ingiustamente per trent’anni. L’edizione numero 74 prende il via il prossimo 30 agosto e il 9 settembre scopriremo il successore di Diaz, il nome nuovo che sarà iscritto nell’albo d’oro di quello che è il più antico festival cinematografico del mondo. Per l’edizione 2017 la giuria sarà presieduta dall’attrice statunitense Annette Bening. Il Palazzo fu ingrandito nel 1952 con l’aggiunta di un avancorpo. Per entrare al Palazzo del Cinema si passa dal celebre tappeto rosso, luogo dove hanno sfilato le più grandi personalità del cinema italiano e internazionale. Built in record time according to the modernist trends of the time it was inaugurated on August 10, 1937 for the fifth edition of the Festival. The Palace was enlarged in 1952 with the addition of an avantcorps. A few years later, Federico Fellini said that for a director to “enter the Venice Palace of Cinema is like passing a final exam”. You get into the Palace of Cinema via the famous red carpet, a path trodden by some of the greatest personalities of Italian and international cinema. The Film Festival is open to the public, with tickets for screenings available to buy on the Festival website, or at ticket offices during the festival, on Venice Lido. What is a fundamental story in the international film scene has continued like this, between highs and low. In 1932, the year of the first Venice Festival, the event was called the International Exhibition of Cinematographic Art and took place in August on the terrace of the Hotel Excelsior. Non-competitive in nature it was limited to showing films. The first ever film in the Festival’s history – Rouben Mamoulian’s “Dr. Jekyll and Mr. Hyde” – was screened on the evening of 6 August 1932. The festival was a success thanks to the weighty titles and directors and actors present, including Frank Capra’s “Forbidden”, Edmund Goulding’s “Grand Hotel”, King Vidor’s “The Champ”, James Whale’s “Frankenstein” and Mario Camerini’s “What Scoundrels Men Are!” Works by Walsh, Lubitsch, Hawks and Litvak were also shown. Initially the festival followed the cadence of the Biennale, and as such in 1934 when the second edition was held, it had a competitive formula: the “Mussolini Cup” was the award for Best Film. The festival became an annual fixture the following year, with the Volpi Cup introduced for Best Actor, the International Jury in 1936, and the inauguration of the Palace of Cinema in 1937. Global conflict meant the forties were tough. At the end of the decade the Neorealism phenomenon exploded and international guests returned, among them, Orson Welles and Fritz Lang. In 1949 the San Marco Lion Prize was created for Best Film, today known as the Golden Lion. The 1950s were marked by advances in Japanese cinema: Kurosawa won in 1951 with “Rashomon”, while Inagaki triumphed in 1958 with “Rickshaw Man”. Another step forward came with the directorship of “Battle of Algiers” director Gillo Pontecorvo, who brought Hollywood back to Venice with the arrival of huge Hollywood stars, the emergence of important personalities such as Peter Jackson (Silver Lion in 1994 for “Heavenly Creatures”) and Takeshi Kitano (Golden Lion in 1997 with Hana-bi - Fire Flowers). 1999 saw the posthumous screening of the great Stanley Kubrick’s last ever work, “Eyes Wide Shut”, with Tom Cruise and Nicole Kidman in attendance. In the 21st century new kinds of cinema have come to the fore, such as Chinese, Korean and Iranian (Zhang Yimou, Lee Chang-dong and Jafar Panahi). Marco Mueller’s appointment as Director – a great connoisseur of Asian cinema - was emblematic of this. On August 30, 2017 the Festival resumes with a “godfather” – Italian actor Alessandro Borghi who’s set to open and close the show. On the subject of the Golden Lion, last year’s jury – headed up by director Sam Mendes awarded the Silver Lion Grand Jury Prize to Tom Ford for the gorgeous “Nocturnal Animals”; Best Director saw a tie between Amat Escalante for “La Región Salvaje” and Andrey Konchalovsky for “Paradise”; Oscar Martinez clinched Best Actor for “El Ciudadano Ilustre”, by Mariano Cohn and Gastón Duprat, and Emma Stone took Best Actress for Damien Chazelle’s “La La Land”. Meanwhile Noah Oppenheim picked up Best Screenplay for Pablo Larrain’s “Jackie”.

Il fantasty-western-horror di Stephen King diventa finalmente un film. La Torre Nera promette di essere una delle saghe (sono ben otto libri) irrinunciabili dei prossimi anni. Dopo essere stato in lizza per la regia, Ron Howard produce, Nikolaj Arcel dirige. Nel cast Idris Elba (Luther in tv) e il premio Oscar Matthew McConaughey. Dal 10 agosto.

Uno degli snodi fondamentali della Seconda guerra mondiale, l’evacuazione di Dunkerque, raccontata da uno dei più importanti registi contemporanei. Christopher Nolan racconta un’epopea umana tra aria, acqua e fuoco. Il film arriva da noi il 31 agosto, in gran parte del mondo è uscito il 21 luglio, le prime reazioni sono entusiastiche.

n buon tortellino in brodo di Cappone», così si rappresenta Bruno Barbieri, lo chef errante e instancabile, senza valigia ma pronto a cogliere le occasioni che il viaggio della vita gli riserva, senza rinunciare alla sua amata terra, e consapevole che determinazione, talento e un pizzico di fortuna facciano la differenza. I primi passi in cucina? «Ho cucinato sempre anche quando ero un bambino, mi divertivo, cucinavo sotto le direttive della vera chef di casa: mia nonna! E cucinavo per mia sorella, mia madre, aiutavo in famiglia e mi piaceva da matti». Come ha capito che questa sarebbe stata la sua strada? «Non avrei potuto fare nient’altro, era il mestiere che mia nonna amava e di conseguenza volevo diventare come lei! Lei ha viaggiato tanto: qual è il ricordo più bello che custodisce gelosamente? «Quando a 18 anni me ne andai a vivere in America, a lavorare sulle navi, una grande scuola di vita. Stava partendo il mio sogno di uomo, ma anche di chef. Ho ricordi bellissimi. Lì ho imparato le tecniche e il rigore francese, la creatività italiana e il business americano. Erano gli anni della formazione: crescevo, imparavo e mi divertivo». Cosa ha imparato e cosa insegna? «Ho imparato che nessuno ti regala nulla e se hai un sogno e lo vuoi realizzare alla fine è possibi-

Nei suoi piatti cosa mette: più Bologna, Italia, Mondo o…? «Per prima cosa metto il mio io! Racconto la mia storia, le mie emozioni, i miei sentimenti, chiaramente la mia è una cucina contemporanea che però guarda al passato e con un occhio al futuro. Direi che le basi sono molto bolognesi, ma amo mixare regionalità e creatività e quello che di buono c’è in giro per il mondo. La parola ricerca per me è fondamentale». La sua terra è ricca di tanti prodotti, a quale non potrebbe rinunciare nella sua cucina? «Alla pasta, in particolare quella ripiena. Poi ci sono tante buo-

Tanti prodotti raccontano la mia Emilia Romagna».

E per sé? Qual è il piatto che adora mangiare? «Un buon piatto di tortellini in brodo, ma anche ripassati in una buona fonduta di Parmigiano, sono il massimo».

And when did you realize you’d become Bruno Barbieri? «I’ve always been an ambitious person and a good listener. I’ve always known that one day I’d have my chance. And I was very lucky too, I met great chefs who I grasped a lot of good, positive aspects from, as well as a bit of talent, I think. I was determined not to give up and that spurred me on and made me improve. Now at 55 I feel the same inspiration I felt when I was 20».

Per l’estate cosa consiglierebbe ai nostri lettori? Un piatto “al volo”… «Strichetti con acciughe di Cetara, due pomodori passiti al basilico e pepe nero, una bella spolverata di pancotto con profumo di origano selvatico, un po’ di aglio e un filo di olio extravergine umbro, quello delle Terre Francescane». Da diversi anni veste i panni di giudice, oltre a scrivere libri e avere diversi impegni professionali: è cambiato qualcosa nel suo modo di fare lo chef? 66 _ agosto-settembre 2017

«Non solo il mio, è cambiato il modo di essere chef in generale! Oggi gli chef sono manager di se stessi. Ho fatto le valigie a 18 anni, ho lasciato casa e a 55 devo ancora tornarci. Ho sempre pensato che per diventare bravi fosse necessario viaggiare, conoscere, sperimentare, scoprire quanto di bello c’è in giro. Aveva ragione il grande Elio Fiorucci, la “saggezza” sta nelle piazze e nelle strade in giro per il mondo!». Una rinuncia legata al suo mestiere. «Non avere avuto una famiglia, dei figli, forse la mia vera famiglia è proprio il mondo. Adoro sapere che non sei mai solo ovunque vai! Ma ho ancora un po’ di tempo, non tutto è perduto!». La cosa che più la diverte del suo lavoro e quella che ancora oggi trova più difficile. «Nel mio lavoro, è viverlo come lo vivevo a 20 anni, spensierato,

formative years: I was growing, learning and having fun». What did you learn and what do you teach? «I learnt that nobody gives you anything for free. If you have a dream and want to make it come true, then it’s possible in the end. Perseverance and pride led me to where I am, but you need to be aware of your value and your limits too. Always believe, even in the darkest moments». What’s in your dishes: Bologna, Italy, the world or…? «First of all I put myself! I tell my story, my emotions, my feelings. Obviously mine is a contemporary cuisine, but with one eye on the past and one on the future. I’d say that the fundamentals come from Bologna, but I love combining regional traditions and creativity and what’s good around the world. My key word is “research”». Your region is filled with countless products, what could you never do without in your cuisine? «I’d never do without pasta, especially the

And there are other excellent ingredients too: white truffle from the Apennines, extra vecchio balsamic vinegar (aged for at least 25 years ), saba, Parmesan Cheese, Mortadella, Rossa reggiana, Savor, Fossa cheese, lupini from the Cattolica sea (a kind of clam), tagliatelle, pork chops and all the Italian cured meats. So many products speak of my Emilia Romagna». And what’s your favorite dish? «A nice plate of tortellini in broth. Or they’re superb sautéed in a Parmesan cheese fondue too». Speaking of your dishes, what are your “must” ingredients of summer? «It’s important to follow the season. In summertime I love eating brightly-coloured produce: the bright green of the vegetables, the shaded red of radishes, the yellow of apricots, through to the shade of peaches…».

What dish “makes you think of summer”? «A plate of cold spaghetti alla chitarra with sea truffles and crispy vegetables with shallot oil: a fresh, easy to cook dish, it’s tasty and you can eat it on the beach too».

Mi piace sentire la storia nei piatti, conoscerli e magari anche assaggiarli nelle loro evoluzioni creative. Posto che vai tradizione che trovi». E al rientro in Italia, con quale si dà il ben tornato? «La prima cosa è un buon piatto di pasta oppure una pizza!». C’è qualcosa di lei che ancora non ci ha raccontato? «Certamente! Ho passato anni e

anni dentro le cucine, poi compiuti i 50 mi sono reso conto che fuori dalla vita gastronomica esiste un mondo. Mi sono preso delle pause e ho ricominciato a viaggiare come facevo una volta, senza la valigia… Con amici mi sono occupato anche di creare nuove cose, disegnare capsule nel campo dell’abbigliamento. Mi sto divertendo ancora come un ragazzino grazie a continui stimoli». Il futuro cosa le riserva? «Il futuro… Non amo pensare a domani, cerco di vivere giorno dopo giorno, pensando che vivo nel Paese più bello del mondo. Vorrei vivere fino a 150 anni in modo sano, vedere come il nostro pianeta cambia, si trasforma, senza guerre, senza problematiche… ma forse sto pensando a un paradiso terrestre che non esiste! Avere dei sogni comunque ti fa stare bene e ti aiuta... Stai senza pensieri».

What would you suggest to our readers for summer? A quick dish… «Strichetti with Cetrara anchovies, a few basil-flavored sun-dried tomatoes and black pepper, a light coating of wildoregano-flavored pancotto, a bit of garlic and a touch of extra virgin oil from Umbria, the one by the Terre Francescane». You’ve been a MasterChef Italia judge for few years, besides writing books and being committed to various professional engagements. Has anything changed in your way of being a chef? «Not just mine, being a chef has changed in general! Today chefs are their own managers. I packed my bags at 18 and left home, and now at 55 I still have to come back. I’ve always thought that to be a good chef you have to travel, learn, experiment, discover the beauty of the world. The great Elio Fiorucci was right, “wisdom” lies in the squares and in the streets around the world!». il mattarello in una sfoglia sottile. Fare asciugare la sfoglia cosparsa di farina per 30 minuti rigirandola spesso, poi avvolgerla su se stessa e con un coltello affilato tagliare tante strisce uguali dando la larghezza delle tagliatelle.

Ragù di rigaglie: 400 g di rigaglie di pollo pulite (fegatelli, stomaco, cuore e creste) 100 g di petto di pollo 50 g di lardo di montagna (tipo Colonnata) 50 g di prosciutto crudo 1 litro di brodo di pollo 50 ml di vino bianco 200 ml di fondo di volatile 1 scalogno 2 spicchi d’aglio olio extravergine d’oliva alloro sale

Ragù di rigaglie: In una casseruola soffriggere lo scalogno mondato e affettato con 2-3 cucchiai di olio, l’aglio tritato, una foglia di alloro, il lardo e il prosciutto tagliati a dadini, dopo qualche minuto unirvi il petto di pollo tagliato a pezzettini e le rigaglie tagliate a pezzi. Far dorare il tutto, bagnare con il vino e il brodo, regolare di sale e cuocere a fuoco dolce per circa un’ora. A metà cottura unire il fondo di volatile. Quest’ultimo si prepara facendo bollire delle carcasse di pollo con vino e brodo, filtrando il tutto.

Salsa di zenzero: Emulsionare a freddo 4 cucchiai di aceto balsamico con lo scalogno tritato e lo zenzero a fettine, quindi filtrare il tutto. Guarnizione: Cuocere le uova embrionali per 3 minuti in acqua bollente. Presentazione: Un quarto d’ora prima di assemblare il piatto, lessare le tagliatelle e condirle con il ragù di rigaglie completando anche con una noce di burro e un’abbondante grattata di Parmigiano Reggiano. Poi suddividere in 4 forme da timballo imburrate e cosparse di Parmigiano grattugiato e far riposare per 5 minuti. Sformare ogni timballino su un tegame monoporzione e passare in forno a gratinare, poi nappare con un po’ di salsa al balsamico e le uova embrionali.

After a few minutes add the chicken breast cut into small pieces and the giblets chopped into pieces. Cook until golden, add wine and broth, season with salt and cook on a gentle flame for around an hour. Halfway through cooking add the bone broth. Prepare the broth by boiling chicken carcasses with wine and broth, and then sieving. Ginger sauce: Cold mix 4 tablespoons balsamic vinegar with the chopped scallion and sliced ginger. Sieve. Garnish: Cook balot eggs for 3 minutes in boiling water. Presentation: A quarter of an hour before putting the dish together, bake the tagliatelle and mix with the giblet ragu, finishing off with a knob of butter and a large grating of Parmigiano Reggiano. Next divide into 4 buttered moulds, sprinkle with grated Parmesan cheese and allow to rest for 5 minutes. Turn out each moulds into an individual bun tray and bake in the oven au gratin. Drizzle with balsamic sauce and garnish with the balot eggs.

I like to feel the history in the dishes, to get to know them and, hopefully, sample their creative evolution. Every country has its own traditions». And when you come back to Italy, what’s your “welcome-back” dish? «First off, a nice plate of pasta or a pizza!». Is there anything about yourself you haven’t told us yet? «Of course! I spent years in kitchens, then when I was 50 I realized that a world exists outside of culinary life. I took a few breaks and I started travelling again like I used to, no luggage… I also tried creating something new with my friends: designing clothing capsules. I’m still having fun like a kid, thanks to continuous impetus». What does the future have in store? «The future… I don’t like thinking about tomorrow, I try to live day by day, thinking that I live in the most beautiful country in the world. I’d like to live to 150 in a healthy way, to see our planet changing, transforming, without war, or problems… but perhaps I’m thinking of a paradise on earth that doesn’t exist! Sono i suv e i crossover con dimensioni inferiori ai 4,5 metri, perfetti per la città viste le dimensioni contenute, ma che conferiscono ugualmente al guidatore una sensazione di sicurezza propria dei modelli più grandi e in alcuni casi sono validi anche off road. Opel Grandland X Con questo modello la casa tedesca rafforza la presenza nel settore crossover; lungo 4,48 metri dispone inizialmente di due motorizzazioni, un 1.2 a benzina da 130 Cv e un 1.6 diesel da 120 CV. Kia Stonic The new crossover from the Korean manufacturer - set for launch with two 100 and 120 hp petrol engines and a 110hp 1.6 diesel engine - will also be available in a novice-driver version with a 1.2-liter 84hp engine.
