Blue Air went through the greatest year in its history in 2016, as the airline expanded massively in every single aspect. Blue Air invested significantly in its aircraft fleet, as this summer we will operate a total of 30 units, representing a huge increase considering that in 2015 we were operating 15 aircraft. We have big plans for 2017, the company estimates to transport a number of 5,000,000 passengers. Our passengers’ trust determined us to launch 30 new routes in 2016 and to announce a number of 33 more for 2017. Two operational bases will open this year in Liverpool and Constanta, Blue Air reaching a number of 8 operational bases overall. Our expansion continues since we want to make sure we respond to the needs of the market. In Italy, Blue Air has been present since 2004, while in November 2014 the airline decided to establish a base in Turin, positioning one aircraft there. This summer, we will reach five aircraft for our Turin base, offering new routes, flexible flight frequencies, an excellent on board experience, affordable and convenient prices for everyone. Blue Air is going to continue its expansion starting with this summer season, as the Piedmont Region will be linked to newly added Copenhagen, Malaga, Lisbon, Seville and Romanian cities Oradea and Iasi, thus reaching a total of 20 routes operated to and from Turin. These further developments highlight Blue Air’s commitment to offering a seamless and convenient travel to all passengers, who have recognized Blue Air’s high standards in terms of safety, security, punctuality and constant improvement. We are elated to be appreciated by the local community in Turin. On behalf of everyone at Blue Air, I would like to thank all passengers and welcome you on board our flights.

Il 2016 è stato l’anno più importante della storia di Blue Air: la compagnia si è ampliata in maniera sostanziale in ogni singolo settore. Blue Air ha investito in maniera significativa nella flotta aerea, infatti quest’estate saranno operativi 30 aerei, il che equivale ad un importante incremento considerando che nel 2015 la nostra operatività si limitava a 15 unità. Abbiamo grossi progetti per il 2017, la compagnia stima ospitare a bordo dei suoi aerei circa 5 milioni di passeggeri. La fiducia accordataci dai nostri passeggeri ci ha spinti ad inaugurare 30 nuove rotte nel 2016 e ad annunciarne altre 33 per il 2017. Quest’anno creeremo due nuove basi operative, a Liverpool e a Constanta, portando a otto il numero totale delle basi di Blue Air. Il nostro obiettivo è quello di riuscire a soddisfare le esigenze del mercato, per questo motivo la nostra compagnia continuerà il suo processo di ampliamento. In Italia, Blue Air è presente dal 2004, e nel novembre del 2014 la compagnia ha deciso di stabilire una base a Torino, posizionandovi un aeromobile. Quest’estate, la nostra base di Torino disporrà di cinque aerei, offrendo nuove rotte, frequenze di volo flessibili, un’eccellente esperienza a bordo e tariffe alla portata di tutti. Blue Air è intenzionata a continuare il processo di espansione a partire da questa stagione estiva: il Piemonte sarà collegato grazie alle nuove rotte con Copenaghen, Malaga, Lisbona, Siviglia e le città rumene di Oradea e Iasi. Questo incremento porterà a 20 le rotte operate da e per Torino. Questi nuovi sviluppi evidenziano l’impegno di Blue Air di offrire a tutti i passeggeri che hanno riconosciuto gli alti standard in termini di sicurezza, puntualità e costante miglioramento, la possibilità di viaggiare comodamente e senza interruzioni. Siamo felici di essere apprezzati dalla popolazione di Torino e dintorni. Our agenda is clear: we want to take you by the hand through the spirit of Blue Air and tell you what is happening in the world that you are you about to visit on our planes. Leafing through the pages of the magazine and scrolling through the extensive contentspage of this first issue, you’ll find plenty of news-items and important events. Check-in, our cover story, is the “calling card” we use to introduce ourselves to our readers. This month it is dedicated to one of the most beautiful and charming regions of Italy: Sicily, a perfect destination not only for your summer holidays but also for a Spring break. From Sicily we fly to two very different European cities: Copenhagen and Milan - the Danish capital city with its parks, buildings and the famous Little Mermaid, and the Lombard capital, which offers a wide variety of exhibitions for art lovers. Un programma, però, molto chiaro: vogliamo accompagnarvi per mano nello spirito di Blue Air e raccontarvi cosa accade nel mondo che visitate viaggiando con i nostri aerei. Global Reputation: Matera premiata con il nastro d’argento. Nella top 20 anche San Gimignano, Lecce, Sorrento e Lucca Ogni anno Trivago stila il suo Global Reputation Ranking dopo aver valutato 200 milioni di recensioni provenienti da più di 200 siti di prenotazione. Nella classifica 2017, prima della top ten è la cittadina turca di Göreme, famosa per le celebri conformazioni rocciose chiamate Camini delle Fate. Matera si riconferma seconda nella classifica, mentre San Gimignano si posiziona al 6° posto. Nella top 20 il Belpaese brilla con Lecce, 11esima, Sorrento e Lucca, rispettivamente in 13esima e 18esima posizione.

Matera has been awarded a silver ribbon. Bordeaux: 2016 da record

Sono stati presentati alla Stockholm Furniture & Light Fair lo scorso febbraio gli 11 elementi di arredo disegnati da 11 giovani designer dell’Università di Bergen, in Norvegia. La destinazione d’uso? Il carcere della città, dalle celle alle sale comuni. In più, gli elementi potranno essere realizzati direttamente dai detenuti con attrezzature e materiali messi loro a disposizione.

Nella cittadina francese la produzione vinicola del 2016 ha toccato i massimi livelli degli ultimi dieci anni. Si parla di 577,2 milioni di litri per 770 milioni di bottiglie con una resa di 52 ettolitri per ettaro. È la più alta dal 2004, annata passata alla storia come la migliore del secolo.

A primavera la Sicilia è una meravigliosa scoperta. Il caldo non è ancora quello asfissiante dei mesi estivi dalla vicina Africa, ma gradevole e permette di visitare in tutta tranquillità città e siti di rara bellezza dell’isola più grande del Mar Mediterraneo dove testimonianze di antiche grandi civiltà sono ancora ben visibili ai giorni nostri. Una volta sbarcati a Fontanarossa, si può fare subito rotta per il

Forget the beaches for a while, we’re on a land surrounded by sea, but Sicily doesn’t just live off that. Sicily is a delightful discovery in spring. The heat isn’t yet the suffocating kind of the summer months from nearby Africa, but a pleasant one, meaning you can visit in perfect tranquility cities and sites of rare beauty on the largest island in the Mediterranean Sea, where testimonies to great ancient civilizations are still visible to this day. After landing at Fontanarossa get straight en route to Catania and enjoy the historic center, where the old Baroque spirit blends with the gorgeous buildings of the town hall and the Palace of the Clerics. arrivare qui, ci sono altre due soste da fare. La prima, poco lontano da Trapani, sulla vetta di un monte isolato, dove sorge il borgo di Erice, che tra stradine strette e tortuose, archi tipicamente medioevali, cortili decorati e piccole botteghe mantiene immutato il suo antico fascino. Qui da assaggiare ci sono le cosiddette minne, dolci di mandorle e limone che nella forma ricordano i seni femminili. La seconda sosta è invece a a Monreale per ammirare il Duomo i cui interni sono decorati da mosaici bizantini del XII e XIII secolo. Da qui alla città capoluogo il passo è breve. Il tour inizia dalla Cattedrale, con un autentico intreccio di stili diversi a renderla unica. A Palermo si trova una delle fontane più belle del mondo, la Fontana Pretoria, monumenti più visitati dell’isola insieme a Palazzo Normanni e le

Not far from here we find the largest archaeological park in Europe, which contains the ruins and sculptures of Selinunte, a grand but shortlived city that existed between the seventh and fourth centuries BC. The Ephebe of Selinunte is the most important work, and is on display at the House of the Traveller. Many more are on display at the National Archaeological Museum in Palermo, an unmissable stop on any self-respecting tour of Sicily. But before you get there, there are two more stops to make. The first, a short distance from Trapani on the summit of an isolated mountain, is the village of Erice, where between narrow, winding streets, typically medieval arches, decorated courtyards and small shops, it maintains its old-world charm intact. Try out the so-called “minne” here, almond and lemon sweets whose form recall a female bust. The second stop is Monreale to admire the Cathedral, whose interior is decorated with Byzantine mosaics from the twelfth and thirteenth centuries. From here to the capital it’s a short hop. The tour starts from the Cathedral, with an authentic blend of different styles that render it unique. Palermo is home to one of the most beautiful fountains in the world - the Pretoria Fountain - one of the most visited monuments on the island along with the Norman Palace and its splendid rooms, seat of the Sicilian Regional Assembly. Another gem is the Teatro Massimo, while the Quattro Canti - an octagonal shaped square - represents the true center of Palermo. Take the opportunity to try an “arancina”. It has a round shape (while

sue splendide sale, sede dell’Assemblea Regionale Siciliana. Un altro gioiello è il Teatro Massimo, mentre i Quattro Canti, piazza a forma ottagonale, rappresentano il vero centro di Palermo. Approfittatene per assaggiare l’arancina, che ha una forma tonda (mentre l’arancino catanese è conico), richiama il frutto da cui prende il nome. Uno spettacolo, pur se macabro, attende i visitatori delle Catacombe dei Cappuccini, dove sono conservati i resti di persone vissute nei secoli scorsi, tra cui la “bella addormentata di Palermo”, una bimba di due anni morta nel 1920 e il cui corpicino, grazie a una particolare tecnica di imbalsamazione, si conserva in modo incredibile. Non può mancare una

visita al già citato Museo Nazionale Archeologico e ai mercati cittadini, la Vucciria su tutti, e una capatina alla vicina spiaggia di Mondello. Ultima tappa del tour prima di rientrare a Catania è lo splendido Teatro Greco di Taormina, realizzato in un punto panoramico meraviglioso da cui si possono osservare il Mar Jonio e la “regina” dell’isola, l’Etna (se non ci sono eruzioni e il tempo è clemente, val la pena avventurarsi in un’escursione con guide autorizzate). Il Teatro Greco fa da cornice a premi internazionali ed eventi importanti, tra cui il Taormina Film Fest, in programma a giugno. Un altro gioiello di una regione che sa stupire anche a primavera.

You can’t miss a visit to the aforementioned National Archaeological Museum and to the city markets - the Vucciria above all - as well as a trip to the nearby Mondello beach. Last stop on the tour before returning to Catania is the splendid Greek theater of Taormina, set on a wonderful vantage point from which to take in the Ionian Sea and the “queen” of the island, Etna (if there are no eruptions and the weather is mild, it’s worth venturing on a hike with authorized guides). The Greek Theatre is the divine setting for international awards and important events, including the Taormina Film Fest, scheduled for June. Another gem of a region that knows how to impress in the springtime too.

NORD-SUD-OVEST-EST dedicato alla sedia, perla della tradizione dei designer scandinavi. La bella Copenaghen è anche famosa per gli immensi e rigogliosi giardini. Dopo una sosta a Kongens Have, il Giardino del Re, ci si può recare al castello di Rosenborg per una visita a quella che un tempo era la residenza reale e oggi è sede del Museo delle Collezioni Reali Danesi, dove, tra le tante meraviglie, sono custoditi anche i preziosi gioielli della Corona. Per chi voglia sperimentare l’arte della riqualificazione intelligente, Superkilen, il parco urbano di Nørrebro, è un intervento di architettura del paesaggio ma anche di riqualificazione di una periferia, un vero esperimento (riuscito) artistico e sociale. E se Christiania – la città autogovernata ferma allo spirito hippie degli anni Settanta – e Tivoli – il coloratissimo parco divertimenti – non sono sufficienti per assaporare le anime contrastanti di Copenaghen, basta un tuffo nella realtà del social food tra i mercati coperti, come Torvehallerne o il nuovissimo West Market, per gustare il meglio di una scena culinaria in ascesa. La stagione per godere al massimo della capitale danese è iniziata: un ricco calendario di eventi si è appena aperto tra appuntamenti di arte, cultura e musica. Il 27 aprile parte il Copenhagen Architecture Festival, il più grande evento scandinavo del settore, e se avete bisogno di un pizzico di follia non perdete il Distortion Festival (dal 31 maggio al 4 giugno), un vero e proprio “party-tsunami”, tra i più travolgenti di tutta Europa. Il 24 giugno prende il via il Roskilde Festival, dal 1971 il più grande festival rock del vecchio continente, mentre dal 7 al 16 luglio si svolgerà l’annuale Jazz Festival. Il clima mite assieme alle lunghe pedalate vi hanno messo a dura prova? Recatevi al Carlsberg Visitor Center, l’antico birrificio cittadino, per un tour degustativo e dissetante con tanto di giro sugli antichi carri trainati da cavalli. Il tempo non è mai abbastanza per carpire le mille sfumature di Copenaghen, da scoprire e da vivere in ogni momento dell’anno. NORD-SUD-OVEST-EST Palazzo Reale, da febbraio a giugno, una mostra ripercorrerà l’intera vita artistica di Keith Haring con un’ampia selezione di opere provenienti da tutto il mondo. Al MUDEC, Museo delle Culture, da marzo a luglio si potranno ammirare i dipinti del periodo della formazione di Kandinskij accostate in alcuni casi ai modelli di cultura popolare cui l’artista si ispirò, fino al suo trasferimento in Germania nel 1921. Le tele provengono dai più importanti musei russi e molte non sono mai state viste in Italia. Mentre la Casa Museo Boschi Di Stefano da Aprile inaugura un palinsesto di piccole esposizioni di approfondimento a singole opere della collezione. I capolavori, provenienti dal Musée d’Orsay, testimoniano questa grande rincorsa verso la modernità. Sempre a

Chiudiamo con la doppia mostra sul Cenacolo in vista del V centenario dalla morte del suo autore, Leonardo Da Vinci: al Castello Sforzesco da marzo a giugno si indaga la fortuna iconografica dell’opera attraverso le copie create dopo la sua realizzazione e incrementate con tecniche di riproduzione seriale. Per i trent’anni dalla morte di Andy Warhol (1928-1987), durante la “Art week” milanese, il Museo del Novecento espone in collaborazione con la Gagosian Gallery uno dei capolavori dell’artista americano: la celeberrima interpretazione de L’Ultima Cena di Leonardo Da Vinci. L’opera si chiama Sixty Last Suppers ed è stata realizzata nel 1986.

Edouard Manet’s masterpieces, which relate to the changes in Paris between 1850 and 1880. In this period the French capital – which in those years hosted two Universal Exhibitions (1885 and 1867) – rapidly changed face and sharply increased its pace of life, gearing up to become the “capital of the capitals”. The masterpieces, which come from the Musée d’Orsay, are testament to this race towards modernity. Also at the Palazzo Reale, from February to June, an exhibit is set to retrace Keith Haring’s entire artistic life, featuring a wide selection of works of art from all over the world. At the MUDEC, the Museo delle Culture, from March to July visitors can admire paintings by Kandinskij painted in the period of his training. In some cases the paintings are flanked by models of popular culture that inspired the artist until he moved to Germany in 1921. The canvases come from the main Russian museums and many of them have never been displayed in Italy. Meanwhile, the Casa Museo Boschi Di Stefano is set to inaugurate a program of topical exhibitions relevant to single works of art from the collection. The first of these events regards La scuola dei gladiatori: il combattimento, the painting by Giorgio de Chirico purchased by the Boschi Di Stefanos in 1939 in Paris. For the occasion some graphics by de Chirico will also be displayed, which are thematically close to the great painting. Let’s close with the double exhibition on the Cenacolo in view of the fifth centenary of the death of the artist, Leonardo da Vinci: at the Castello Sforzesco from March to June the iconographic success of the work of art will be examined through the copies produced after its creation and incremented with serial reproduction techniques. For the thirtieth anniversary of Andy Warhol’s death (1928-1987), during Milanese “Art week” the Museo del Novecento is set to display, in collaboration with the Gagosian Gallery, one of the masterpieces by the American artist: his uber-famous interpretation of Leonardo Da Vinci’s Last Supper. IN NOTA LOVE ACCORDING TO SAMUEL The Subsonica front man has temporarily… left the group to pursue a solo career. The result is an album, “Il codice della bellezza” (The code of beauty), which “includes the music that I’ve never been able to play so far”

“In questo periodo della mia vita ho sentito il bisogno di assumermi completamente la responsabilità di quello che sto facendo” “In this period of my life I felt the need to take full responsibility for what I am doing’’

«This album contains my desire for music, the music I’ve never been able to play so far. I wanted to deal with the most popular topic in the world – love – to describe that feeling in all its facets and settings, to explore everything I know on this subject without leaving anything unattempted». And he chose to do it through a code. Not just any code, but the code of beauty. This simple idea gives life to his new artistic life. It is a Samuel no longer inextricably linked to Subsonica, the group that he helped to make the icon-band of Italian electronic rock, but a Samuel followed by “Romano”, his surname, in a 2.0 version of himself. A solo version of a man who, with a microphone in hand, has always artistically thought in the plural. To achieve his solo version, Samuel wanted to start exactly from the place it all began around twenty years ago with Subsonica: the stage of the Ariston theater. It was also a way of closing a circle he opened when he was a child and that has led him to be the man he is today. How was it starting again without being able to count on the band’s strength? «Band life is easier both from a professional point of view and in terms of motivation because you share the tasks, the success, but also the responsibilities. In this period of my life I felt the need to take full responsibility for what I was doing and this triggered a very powerful creative mechanism in me which led to “Il codice della bellezza”. Obviously, it is never easy to start again, but in these last few years I met people who inspired me, including Michele Canova, the album producer, who was one of the main drivers of this new path in my music». Speaking of albums, how and when you did you create “Il codice della bellezza”? «When two years ago I started to look around and ask who was the best Italian music producer, a chorus sang out in

Samuel Umberto Romano è nato a Torino il 7 marzo 1972, è voce e frontman dei Subsonica, gruppo che ha fondato nell’estate del 1996. Nel 2000 ha dato voce al collettivo Motel Connection e nel settembre 2016 ha annunciato il suo primo lavoro da solista (Il codice della bellezza) anticipato dal singolo “La risposta”. Samuel Umberto Romano was born in Turin on March 7 1972 and is the voice and frontman of Subsonica, the band that he founded in the summer of 1996. In 2000, he was the voice of the collective “Motel Connection”, and in September 2016 he announced his first solo work ( Il codice della bellezza) preceded by his single “La risposta”.

da questa semplice idea che nasce la sua nuova vita artistica. Un Samuel non più legato indissolubilmente ai Subsonica che lui stesso ha contribuito a far diventare il gruppo-icona del rock elettronico italiano, ma affiancato a Romano – suo cognome all’anagrafe – per un Samuel 2.0. Una versione “al singolare” di chi, con un microfono in mano, ha sempre pensato artisticamente al plurale. E per farlo Samuel è voluto ripartire esattamente da dove tutto era nato circa vent’anni prima con i Subsonica, ovvero dal palco dell’Ariston. Un modo anche per chiudere un cerchio aperto da bambino e che l’ha portato all’uomo di oggi. Come è stato ripartire senza poter contare sulla forza del gruppo? «La vita di gruppo è molto agevole sia dal punto di vista lavorativo sia delle motivazioni perché ti dividi i compiti, i successi, ma anche le responsabilità. E in questo periodo della mia vita ho sentito il bisogno di assumermi completamente la responsabilità di quello che sto facendo e questo ha fatto innescare in me un meccanismo creativo molto potente che ha portato a “Il codice della bellezza”. Certo, non è mai facile ricominciare, ma in questi ultimi anni ho incontrato persone che mi hanno ispirato. Tra questi Michele Canova, il produttore dell’album, che è stato uno dei

motori principali di questo nuovo corso della mia musica». A proposito di album. Come e quando nasce “Il codice della bellezza”? «Quando due anni fa ho iniziato a guardarmi intorno e a chiedere chi fosse il miglior produttore di musica italiana, un coro si sollevò all’unisono: Michele Canova! Ci siamo incontrati e ho realizzato subito che era la persona giusta. Era l’unico capace di spronarmi ad andare a rovistare in quello sgabuzzino per tirare fuori il meglio di me». Anche un certo Jovanotti ha svolto un ruolo quasi strategico… «La collaborazione con Lorenzo è nata in maniera amichevole e naturale. Lui aveva ascoltato alcune mie composizioni perché ci affidiamo allo stesso produttore artistico che è appunto Michele Canova. Jovanotti mi ha scritto

unison: Michele Canova! We met and I realized straight away he was the right person. He was the only one able to spur me to go “rummaging in my closet”, to pull out the best of me». A “certain” Jovanotti also played a quasi-strategic role… «The collaboration with Lorenzo started in a friendly and natural way. He had listened to some of my compositions because we share the same producer, Michele Canova. Jovanotti wrote to me to pay me his compliments and to give his stamp of approval for what I was doing. Band life has always protected me from certain mechanisms and I immediately thought he could act as my big musical brother, someone I could ask for advice on the sea of hidden dangers lurking behind the solo career. We had a enlightening discussion. I flew to New York to see him where we spent three incredible days making music and we wrote five songs. 14 tracks that includes “Vedrai”, the song you presented at Sanremo. Why did you choose this song and not another? «Because it features all the characterizing elements that can be understood by the Sanremo audience even if the song wasn’t written especially for the Festival, because the suggestion to take part in the show came when the album was already finished. And the text seemed perfect to me because it’s about love. A love lived in a difficult moment, and I liked the idea of analyzing such a common feeling, but under a different point of view: talking about love under the lens of crisis, arguments, and even anger». And how did you feel when you returned to the Sanremo stage? «It was very exciting for me because it is an important place for a singer. That stage has hosted the most important singers of our country. I started writing songs when I was six. I let my mother read them and she told me that if I wanted to sing and be a songwriter I absolutely had to watch Sanremo. I spent countless days with a 58 _ aprile-maggio 2017

per complimentarsi e per esprimere la sua approvazione per quello che stavo facendo. La vita di gruppo mi ha sempre protetto da determinati meccanismi e ho pensato subito che lui potesse essere il mio fratello maggiore musicale a cui chiedere consigli sul mare di insidie che si nasconde dietro a quello che può essere un percorso in solitaria. È stato un confronto formativo quello tra di noi. Sono volato a New York da lui, abbiamo passato tre giorni incredibili di musica e abbiamo scritto cinque canzoni. In una di queste c’è anche la sua voce ed è stato ovviamente un regalo per il mio album». “Il codice della bellezza” contiene 14 tracce e tra queste c’è “Vedrai” che ha presentato a Sanremo. Come è ricaduta la scelta su questo brano e non su un altro? «Perché ha tutti gli elementi caratterizzanti che possono essere capiti dal pubblico di Sanremo anche se non è una canzone scritta appositamente per il Festival, perché la proposta di partecipare è arrivata quando l’album era già finito. E poi anche il testo mi sembrava perfetto perché parla di amore. Un amore vissuto in un momento di difficoltà e mi piaceva l’idea di analizzare un sentimento così diffuso, ma seguendo un punto di vista differente: raccontare l’amore sotto la lente della crisi, del litigio e anche della rabbia». E come ha vissuto il ritorno sul palco di Sanremo?

Su quel palco sono passati gli artisti più importanti della storia del nostro Paese. Io ho iniziato a scrivere canzoni a sei anni, le feci leggere a mia madre, che mi disse che se avessi voluto fare l’autore e cantare avrei assolutamente dovuto vedere Sanremo. Ho passato tanti giorni con un taccuino in mano a segnare le frasi delle canzoni cantate su quel palco e quando mi è stato proposto di partecipare quest’anno non ho pensato all’album, ma all’immagine di quel bambino piccolo seduto davanti al televisore e mi è venuta voglia di tornare per vedere quel bambino dall’altra parte. Un modo per chiudere un cerchio iniziato tanti anni fa che mi ha portato a quello che sono oggi». Sanremo, album, ora il tour in “solitaria”? «Il tour era in programma ancora prima che esistesse l’album perché la mia musica è fondata sull’idea di dover salire sul palco. Le persone ascoltano l’album suonato dal vivo, lo metabolizzano e lo rigettano sul palco in forma diversa e da lì impari un disco nuovo ogni volta che sei sul palco. Per me il live è una condizione necessaria, il problema è che non mi sono ancora abituato all’idea di avere accanto un’altra band quindi ho scelto di portare sul palco degli strumenti che ho utilizzato per comporre l’album e che suonerò io. Sarò però coadiuvato da un amico batterista che è Christian Tozzo dei Linea 77».

It was a way to close a circle I started many years ago that led me to what I am now». Sanremo, the album, and now the solo tour? «The tour was decided even before the creation of the album, because my music is based on the idea of performing on stage. People listen to the album played live, they break it down and send it back onto the stage in a different form. Hence, you learn a new album every time you are on a stage. Live music is necessary to me, the problem is that I haven’t got used to the idea of having to perform with another band yet, so I chose to bring on stage the instruments that I used to create the album and that I will play myself. l tocco creativo e la maestria di Sal De Riso si confondono nella semplicità e nella passione con cui racconta la sua lunga esperienza nel mondo del dessert d’autore. Capolavori che regala anche ai nostri lettori in viaggio. Come ha capito che fare il pasticcere sarebbe stata la sua strada? Ho avuto una mamma molto brava in cucina che preparava dolci molto particolari. È stata lei a trasmettermi questa passione per la pasticceria. Anche mio padre, che aveva un piccolo bar tabacchi al centro di Minori (Salerno, ndi), d’estate preparava gelati e granite al limone… Ho sempre respirato profumi di limoni, di agrumi, di dolci (ride, ndi) e da qui la passione per questo lavoro. Dopo la scuola alberghiera, ho iniziato come cuoco e poi mi sono specializzato in pasticceria... Dopo sette anni di cucina ho aperto il mio primo laboratorio, a 21 anni... Da subito ho avuto delle intuizioni che mi hanno portato fortuna, come trasformare il profiterole al cioccolato in profiterole al limone: il primo dolce con liquore d’Amalfi che ho lanciato sul mercato. La gente veniva apposta per assaggiare questa novità e ho capito che era il momento di innovare, di dare una svolta alla pasticceria classica, che non deve mai morire. Nel Duemila, per esempio, ho realizzato il “Soffiato di pastiera”, e così ho ideato la pastiera al cucchiaio. L’ho fatto con tanti dolci che portano la mia

brought me good luck, like how to turn chocolate profiteroles into lemon ones: it was the first dessert with Amalfi liqueur that I launched onto the market. People came just to try that novelty, and I realized it was the time to innovate, to help turn around the classic pastry, which must never die. In 2000, for example, I made “Soffiato di pastiera” and that’s how I invented the (creamy) “pastiera al cucchiao”. I did it with lots of my desserts, such as the “Delizia al limone” and the “Torta Ricotta e pera”. Among other things, the idea of the single-portion can be attributed to you. Before, a slice of cake didn’t exist in pastry cuisine, while I started serving people – at the table and take away – with portions of ready-sliced desserts. On Sundays, instead of buying the usual pastries people bought slices of cake. The first “amateur” dessert you made, was actually a professional one... One of the first unforgettable amateur desserts that I made was my mother’s potato donut recipe. The first professional dessert that really gave me a lot of satisfaction is the lemon profiterole. Over the years I’ve created lots of specialties based on where I live...

How did you know that being a pastry chef would be your path in life? My mum was brilliant in the kitchen and made some really special desserts. It was her who transmitted this passion for pastry-making to me. Even my dad, who had a small tobacco bar in the center of Minori (Salerno, Ed), made ice creams and lemon granita in the summer... I’ve always breathed the aromas of lemon, citrus fruits, sweets (laughs, Ed), and from there the passion for this work. After hotel school, I started out as a chef and then specialized in pastries. Tra l’altro anche l’idea della monoporzione si può attribuire a lei. Prima la fetta di torta non esisteva in pasticceria, mentre io ho iniziato a servire alla gente, al tavolo e a portar via, le porzioni di dolci già tagliate. La gente, la domenica, anziché comprare le solite paste, comprava le fette di torta. Il primo dolce “amatoriale”

che ha realizzato e quello, invece, professionale… Uno dei primi dolci amatoriali indimenticabili che ho realizzato è stata la ciambella di patate della ricetta di mia madre. Il primo dolce professionale che mi ha dato veramente tante soddisfazioni è il profiterole al limone. Negli anni ho realizzato tantissime specialità tenendo conto del territorio in cui vivo… Cosa contraddistingue questo legame? Quando parlavo di territorio, di prodotti a Km 0, nel 1989-90 già raccontavo delle mele annurche, dei fichi bianchi del Cilento, dei limoni, delle noci di Sorrento, delle nocciole di Giffoni, delle albicocche del Vesuvio… Ai miei colleghi dico sempre che sono un “pasticcere ricco” perché sono circondato da ingredienti straordinari che mi offre la mia terra e questo mi ha aiutato molto a creare le specialità che faccio an-

What distinguishes this tie to the territory? When I talked about territory, of Km 0 produce, in 1989-90 I was already talking about annurche apples, white Cilento figs, lemons, Sorrento walnuts, Giffoni hazelnuts, Vesuvian apricots... I always tell my colleagues that I’m a “rich baker” because I’m surrounded by the extraordinary ingredients that my land offers and this has really helped in creating the specialties that I still make today. I made the “Dolce passione Cilento”, by using Paestum ricotta buffalo to maximum effect with a white fig jelly and hazelnut biscuit. These are the ingredients that give me the input to do new things. How does inspiration come? It starts from an ingredient, a meeting, a journey. It comes from ideas that I then turn into a design with the combination of flavors, of creams... Everything starts from there: the first tests in the lab that I do personally, the tasting sessions with all the staff, and once the product decoration and image is completed, it is put on sale in pastry shops in Minori. È la passione! Nella vita nulla è stato fatto senza passione, qualsiasi cosa si fa, qualsiasi lavoro, negli affetti, nello studio, nella ricerca, secondo me la cosa più importante è la passione. Tanta passione e golosità nel suo lavoro, ma qual è la parte più difficile? Ma guardi, noi facciamo un lavoro difficile perché dobbiamo preparare cose da mangiare per cercare di accontentare un po’ tutti i palati, le persone, quindi già questo è un la voro difficile.

There was also the Tirabaci this summer... Tirabaci, yes. This name, for example, came about one night when my wife was joking around with my son on the couch, telling him, “Look you’ve got a tirabaci!” And she kissed him because he had this little mole on his lip, slightly above the top of his mouth. Tirabaci (steal a kiss), tirabaci, tirabaci and out came a chocolate. They asked me to prepare a chocolate for the Giffoni Film Festival, so I worked on the IGP Giffoni Hazelnut, on the DOP extra virgin olive oil from the Salernitane Hills, and on the IGP Amalfi Lemons, all in one product two excellent IGPs and a DOP. Six thousand chocolates were presented to the press as “Tirabaci”. And in summer the ice cream stick with white Dulcey chocolate, biscuit and salt, dipped in four different types of chocolate: a ready-made stick where the customer chooses the chocolate and sprinkles… A key ingredient in your pastries? One ingredient that I really love is the vanilla bean. I use different types: the bourbon from Madagascar, Mexican

Mi chiesero di preparare un cioccolatino per il Festival del Cinema di Giffoni e così lavorai sulla Nocciola di Giffoni IGP, sull’olio extravergine DOP Colline Salernitane e sul Limone d’Amalfi IGP, in un solo prodotto, due IGP e una DOP eccellenti. Seimila cioccolatini presentati alla stampa come Tirabaci. E in estate il gelato stecco con cioccolato biondo Dulcey, biscotto e sale, immerso in quattro tipologie di cioccolati diversi: uno stecco già pronto dove il cliente sceglie il cioccolato e le granelle… Un ingrediente fondamentale nella sua pasticceria? Un ingrediente che amo moltissimo sono i baccelli di vaniglia. Uso diverse tipologie: la bourbon del Madagascar, la vaniglia messica-

E la soddisfazione più grande? La cosa più bella è guardare le facce della gente, quando gli arriva il dolce, se lo scambiano uno con l’altro. Cerco di carpire questi momenti bellissimi. Per me è importante fare emozionare il cliente con un dolce. Poi l’altra cosa fondamentale è l’accoglienza, una delle cose più importanti per chi fa questo mestiere. Lei i dolci li mangia o è più da salato? Ma no, io i dolci li mangio. Mangio più dolci che salato, sono un goloso… C’è un dolce di un suo collega che apprezza molto e magari compra? No, che compro no, magari me lo faccio regalare (ride, ndi). Un dolce del mio collega che apprezzo sempre è il panettone di Igino Massari. Oppure, se mi trovo a Padova da Biasetto (Luigi, ndi), vado a mangiare i suoi macarons. Quando è all’estero, c’è un dolce che le manca di più? Se vado all’estero sinceramente mi manca la sfogliatella calda la mattina a colazione (ride, ndi).

The best thing is seeing people’s faces when the dessert arrives, they share it amongst themselves. I try to soak up these wonderful moments. For me it’s important to thrill customers with a dessert. The other key thing is the reception, one of the most important aspects for anyone who does this job. Do you eat desserts or go more for savoury? No, I eat desserts. I eat more sweet than savoury, I’m greedy… Is there a dessert by any of your colleagues that you really like and might even buy? No, buy, no. I might get them to give it to me for free, (laughs, Ed.) One dessert by my colleague that I always rate is Igino Massari’s panettone. Or when I’m in Padova at Biasetto (Luigi, Ed), I eat his macaroons. When you’re abroad is there one dessert you miss the most? I miss the warm sfogliatella (a Neapolitan pastry) in the morning for breakfast (laughs, Ed.)

Pasteurize the yolks with the sugar and water to 80°c and beat until cool. Apart, semi-whip the cream. Whisk the ricotta with the sugar, wheat, candied orange, cinnamon and orange flower. Add the dissolved gelatin and add the semi-whipped cream. Emulsify with the whisked yolks and pour the cream into the molds, putting the ready-cooked pastry discs on the bottom. Place a disc of sponge cake in the middle and douse with the soaked orange liquid. Complete with cream to

l mercato europeo delle auto viaggia ancora con un segno decisamente positivo anche in questi primi mesi del 2017 dopo aver chiuso lo scorso anno con un complessivo +6,8% per un totale di 14.641.356 unità vendute. Il dato positivo è anche dovuto al lavoro delle Case auto che hanno investito molto sui nuovi modelli delle vetture e il recente Salone di Ginevra ha confermato questa tendenza. Tanti nuovi modelli studiati per un pubblico sempre più alla ricerca di tecnologia a bordo delle vetture, oggi secondo elemento di scelta dell’auto dopo il design. Ma guardando le novità presentate a Ginevra si ha ancora la conferma che il segmento più importante tra i privati è quello dei crossover e dei SUV. Piccoli, grandi, sportivi, ibridi ed elettrici, il mercato è loro e tutti i marchi si combattono in questo segmento. La regina della manifestazione è lei, la nuova Volvo XC60, un SUV compatto che riprende le linee stilistiche della versione più grande. Le potenze delle motorizzazioni sono molteplici, dai turbodiesel D4 da 190 cavalli e D5 da 235 cavalli, ai benzina T5 da 254 cavalli e T6 da 320. Ma c’è anche il T8 Twin Engine con powertrain plug-in hybrid da 407 cavalli, che rende la XC60 una sportiva capace di raggiungere i 100 km/h in 5,3 secondi con consumi ed emissioni decisamente bassi. The first months of 2017 have seen a trend in the European car market with a markedly positive slant after closing in 2016 with an overall increase of + 6.8% for a total of 14,641,356 units sold. This positive trend is also due to car makers who have invested heavily in new models of cars. The recent Geneva Motor Show – Europe’s most important car industry event – confirmed this trend. Countless new models have been designed for an audience increasingly in search of on-board technology, today the second element of choice in a car after the design. But looking at the innovations presented in Geneva by the various carmakers is confirmation once again that the most significant segment for private owners is that of the crossover and the SUV. Small, big, sports, hybrid and electric – this is the market, and this is the sector that all the brands are doing battle in. The queen of the event, the new Volvo XC60 is a compact SUV that picks up on the styling cues of the larger version. Engine power is varied, from the 190hp turbo diesel D4 and D5hp 235hp, to the petrol T5 254 hp and T6 320hp. But there is also the T8 Twin 407 hp engine with hybrid plug-in powertrain, which makes the XC60 a sports car capable of reaching 100 km/h in 5.3 seconds, with decidedly low fuel consumption and emissions. There is plenty of security technology on board. The XC60 in fact features an Oncoming Lane Mitigation system, able to provide steering-wheel assistance to mitigate the effect of a front-on collision, as well as the Blind Spot Indication System which assists steering use to reduce the risk of accidents while changing lanes. Among the optionals is Pilot Assist – an advanced semiautonomous driving assistance system. Jeep Compass also made its debut in Geneva with a decidedly authentic Jeep design with excellent performance thanks to the 4x4 off-road traction. 9-speed automatic transmission.
