Benvenuti a bordo! Ora che siete comodamente seduti e pronti per il viaggio, vorrei ringraziarvi per aver scelto Blue Air. In questa primavera le nostre nove basi - Torino, Alghero, Bucarest, Bacovia, Costanza, Cluj-Napoca, Iasi, Liverpool e Larnaca, si apprestano a intraprendere una fervente attività. Negli ultimi 13 anni ci siamo concentrati sullo sviluppo della nostra compagnia, abbiamo incrementato lo staff ed ampiamente investito nella nostra flotta. Blue Air è la più importante compagnia aerea rumena e questo, oltre ad essere motivo di grande orgoglio, comporta una costante responsabilità nei confronti dei passeggeri. Il nostro intento è quello di offrirvi un’esperienza di viaggio gradevole a bordo dei nostri 28 Boeing 737, qualsiasi sia la destinazione da voi prescelta. Aveva ragione Leopardi, se per il villaggio il sabato è più affascinante di quanto non lo sia in effetti la domenica, aprile e maggio sono i due mesi più belli dell’anno. Sono i due mesi in cui ci lasciamo alle spalle l’inverno e i suoi famigerati colpi di coda, in cui il bel tempo, il sole, i colori e i profumi della primavera finalmente entrano nelle nostre vite. E cosa c’è di meglio per festeggiare la rinascita della Natura di un bel viaggio nella coloratissima Spagna o nella città del romanticismo, tra i musei e le mostre di Parigi? Ma non è male neanche un tour tra le città europee più bike friendly da scoprire una pedalata dopo l’altra! Sfogliando questo numero del nostro magazine, troverete anche delle interviste da non perdere: abbiamo incontrato Valeria Solarino, Elio e le Storie Tese e lo chef Esposito, che ci ha raccontato i segreti della sua cucina semplice e legata alla tradizione. Insomma, ce n’è per tutti i gusti... Pubblicità Tesori che la terra e il caso restituiscono alla nostra epoca e fanno riemergere echi di un passato straordinario di cui l’Italia, e Roma soprattutto, sono autentici scrigni Un ritrovamento straordinario è emerso durante gli scavi della Metro C della stazione Amba Aradam, a 12 metri di profondità. Si tratta della Casa del Comandante, collegata al dormitorio della caserma romana emersa nella primavera del 2016. Dalle immagini traspare il fascino assoluto di questa scoperta, che rivela i mosaici, i pavimenti e gli intonaci ben conservati di una domus composta da 14 ambienti disposti attorno a un cortile centrale. Le recenti scoperte integrano la cintura di edifici militari rinvenuta tra Laterano e Celio, un vero e proprio quartiere militare edificato soprattutto nell’età traianea, agli inizi del II secolo d.C.

Meravigliosi i mosaici ritrovati a 12 metri di profondità durante gli scavi della Metro C della stazione Amba Aradam, con antiche figure di lottatori, alberi e pitture. Unearthed treasures discovered by accident give light to an extraordinary era whose ruins are housed in Italy and especially in Rome. An extraordinary find has been unearthed during the excavation works for the C Metro line at the Amba Aradam station at the depths of 12 meters. The Casa del Comandante (the commander’s house), connected to the dormitory of the Roman barracks was unearthed in Spring 2016. The images convey the absolute fascination of such discovery, unveiling well-preserved mosaics, floors and plasters of a house made up of 14 rooms located around a courtyard. The recent discoveries complete the series of military buildings found between Laterano and Celio, a true military district built mainly in the Trajan age in the early 2nd century A.D. aprile-maggio 2018 _ 11

L’uso dell’acquaponica permette di far crescere le piante grazie alla simbiosi tra coltivazioni, microrganismi e pesci, riducendo così l’uso di acqua ed eliminando quello di pesticidi e fertilizzanti. It might be for that sincere smile that opens the world. It might be because she says what she thinks and truly loves her work. From April 5th she is Anna in Quanto Basta, a social worker who takes care of a group of adolescents with Asperger’s syndrome. Among them is Guido (Luigi Fedele) who has lost his parents, lives with his grandparents and has a great passion for cooking. When the chef Arturo (Vinicio Marchioni) has to serve his sentence to social services by teaching them cooking, for Guido this opens new possibilities. A bit Rain Man, a bit Italian comedy with good emotions, Quanto Basta is interpreted and characterized very well. Valeria explains: «I fell in love with the story, regardless of my character. Cosa sapevi della sindrome di Asperger prima di lavorare al film? «Che si tratta una forma di autismo in una forma molto lieve, ho imparato tanto da un ragazzo che mi accompagna durante tutta la lavorazione e soprattutto stando con loro. Hanno una sensibilità molto accentuata, non hanno quei filtri che si apprendono con l’esperienza, è come se non riuscissero a corazzarsi mai e ciò può creare tanti problemi perché nel mondo in cui viviamo non c’è questa purezza». Tra l’altro Luigi Fedele è bravissimo nei panni di Guido, un’altra sorpresa dopo la sua partecipazione a Piuma. «È stato una sorpresa anche per me. Già dalle prime letture era im-

Quanto Basta is the relationship that intertwines among the three characters, especially between Guido and Arturo. My Anna is a bridge between the two, she is the psychologist of the center that takes at heart the boy’s situation because he doesn’t have parents, and we know that for those affected by these problems the figures of the father and mother are essential. She tries to introduce him into society and make him as independent as possible because she knows that grandparents will not be there forever and he will then be alone in the world. I liked the relationship among these apparently different people but in reality with a very strong sensitivity that is the main distinguishing trait that I found by hanging out these guys. All the guys in the film are really suffering from Asperger’s Syndrome, apart from Guido, the protagonist». How did you choose to recount your Anna? «I did not want to show a problematic woman, who certainly has had a particular past, but a woman who is dedicated to others, a dedication that has nothing of mystical. CHECK-IN working in the fields with the boys, she is not a therapist who does reports, she works with them, gets her hands dirty, she follows them in all the main activities». What did you know about Asperger’s syndrome before working on the film? «That it is a very mild form of autism, I learned a lot from a guy who accompanies me throughout the making of the movie and especially by being with them. They have a very strong sensitivity, they do not have those filters that are learned with life experience, it’s as if they can’t ever armor themselves and this can create so many problems as in the world we live in today this pureness doesn’t exist». Moreover, Luigi Fedele is very good as Guido, another surprise after his participation in Piuma. «It was a surprise for me too. From the first readings it was impressive to see how he identified with the character, for a moment I thought he really had Asperger’s syndrome. Even during breaks he was always focused on the character, he mastered the expression, the way to turn his head to look, to move and gesticulate. Between one take and the other he always kept that attitude, that posture». You’re back from a huge success with the public A Casa Tutti Bene by Muccino. How do you explain the constant success of this often

In estate sarai al Festival del Teatro Greco di Siracusa con il bellissimo progetto scritto e diretto da Baricco: Palamede – l’eroe cancellato, dove sei protagonista nel ruolo del guerriero acheo. Come è questa esperienza? «È uno spettacolo nato tra anni fa per l’Olimpico di Vicenza, è uno spettacolo di Baricco e, in quanto tale, è un testo particolare, un evento, un avvenimento. Baricco ha questo modo di dialogare con il pubblico che è suo e unico, introduce il personaggio di Palamele, ne racconta la storia, poi entro in scena io che interpreto proprio Palamede. Sono coinvolta in qualcosa di speciale, ho un monologo di mezz’ora, è molto suggestivo». Cinema, teatro, i tuoi ruoli nella fiction televisiva, cosa ti è rimasto da sognare? «Continuare a fare sempre delle cose in cui credo. A volte, puoi essere costretta ad accettare ruoli perché questo mestiere è una droga, ti manca. Vorrei scegliere sempre le cose e farle amandole profondamente, senza smettere mai di imparare».

How is this experience? «It is a show born three years ago for the Olimpico in Vicenza, it is a show created by Baricco and, as such, it features a particular text, it is an event, a happening. Baricco has this way of communicating with the public that is his and unique, he introduces the character of Palamele, tells his story, then I go on stage and play Palamede. I’m involved in something special, I have a half-hour monologue, it’s very suggestive». Cinema, theater, your roles in TV drama, have you got any other dream to fulfill? «To keep doing things that I always believe in. Maiorca, invece, offre ben 550 km di costa e il 40% del suo territorio è spazio protetto. Il capoluogo, Palma di Maiorca, conserva un elegante centro storico, da ammirare e da vivere. Bisogna assolutamente fare una sosta ai Bagni Arabi, tra le poche testimonianze della cultura moresca risparmiate dalla Reconquista, situati nel centro storico. One of these is the Fiesta de San Juan. The Spanish folk culture celebrates the summer solstice (two days later) in the night between June 23rd and 24th. At the Balearic Islands, nature gives indulging looks to athletes with wonderful itineraries and activities to do throughout the year: from cycling to climbing, through hiking, golf and water sports. Ibiza is certainly the hot spot for young people who have in mind a holiday full of fun and clubbing. We mustn’t forget, though, that the White Island is a paradise to be lived above all in daytime, with light of the sun. With its 210 km of coastline and thanks to its cultural richness and biodiversity it has been declared a UNESCO World Heritage Site. The activities that can be done outdoor in the midst of nature, besides enjoying the wonderful beaches, are many. ROMANIA PROJECT “RAGAZZI IN GAMBA” A solidarity initiative to improve the living conditions of young Romanians who have had their limbs amputated The main goal of the Romania Project “Ragazzi in Gamba” is to operate young Romanians that have had one or more limbs amputated so as to improve their living conditions, of course physical but also psychological. This project has social-health purposes, is promoted by the AUCI-ong (University Association for International Cooperation), by the A. Gemelli University Polyclinic Foundation in Rome, by the Romanian Orthodox Diocese of Italy and by Blue Air airline which is one of the main partners. People with disabilities, aged between 20 and 45, who, in addition to the physical disadvantage are burdened by unstable economic conditions will benefit from this project. Riding a bicycle is becoming ever more popular in Berlin: the city counts one million cars and three million bikes for 3.5 million inhabitants. In fact 9 thousand out of 11 thousand roads feature a space dedicated to the cycle paths…

Is there anything better than riding across almost 1000-km cycle path to get to know the city of Helsinki? The city is aiming at increasing the bicycle transfers from 10% to 15% within 2020, improving the cycle connections especially in the city center. The project is as challenging as that involving a disused railway now turned into a 1.5-km bike lane called Baana, which guarantees fast and safe connections.

Nantes Con ben 545 km di corsie e piste ciclabili destinati a diventare 700 da qui al 2020, Nantes è decisamente una tra le città europee più bike friendly. Ci sono dunque diversi motivi per visitare Nantes in bicicletta: la buona rete ciclabile, le 6mila rastrelliere, i parcheggi all’interno dei parchi e la presenza del servizio di bike-sharing Bicloo con oltre 100 stazioni. Ferrara

Chiamata la “città delle biciclette” per le sue strade a misura di ciclista e l’alto numero di veicoli a due ruote, Ferrara è la città italiana dove l’utilizzo dei pedali è tra i più alti in Europa: già nel 1991 la percentuale era del 30,7% contro il 30% di Copenaghen o il 27,8% dell’Olanda. Un’attenzione, quella della città per le due ruote, che affonda le sue radici molto lontano: la prima ciclabile risale al 1908. Chiusa la bella esperienza della trilogia di Smetto Quando Voglio, a metà marzo il panorama abbastanza asfittico del genere è stato investito da una ventata di aria fresca grazie a Metti la nonna in freezer del duo di registi Fontana e Stasi che hanno saputo guidare Fabio De Luigi e Miriam Leone in una black comedy ispirata e inusuale per il cinema italiano. Il 12 aprile torna Daniele Luchetti, regista che ha sempre avuto qualcosa da dire che evita i soliti percorsi rassicuranti del genere nostrano. Il suo Io sono Tempesta

rientra in pieno nel suo stile, far ridere attaccando i luoghi comuni, far riflettere divertendo amaro. Numa Tempesta (Marco Giallini) è un finanziere che gestisce un fondo da un miliardo e mezzo di euro, condannato per evasione fiscale a scontare un anno di pena ai servizi sociali in un centro di accoglienza. Lì incontrerà delle povere anime che cercano rifugio nei servizi sociali. Tra di essi c’è Bruno (Elio Germano) che, insieme a suo figlio Nicola, cerca rifugio dai morsi della vita. Non è una commedia dei buoni sentimenti, non ci sono passaggi scontati, ma Io sono Tempesta fa ridere e molto, anche

grazie alla bella alchimia sul set. Germano ha lavorato con Luchetti già in diverse occasioni, vincendo in due occasioni anche un David di Donatello, il premio cinematografico più importante del nostro Paese. (Mio fratello è figlio unico e La nostra vita). «Con Daniele abbiamo un rapporto che va al di là di quello lavorativo, abbiamo lavorato spesso insieme e non cerchiamo di ripetere ciò che ha funzionato, ci piace metterci ogni volta a fare un percorso diverso. Per Io sono Tempesta, abbiamo chiacchierato tanto di quello che doveva essere il personaggio; in seguito mi sono recato in più di un centro poveri per studiare e avere un’idea più precisa».

Something is moving around in the Italian comedy. His Io sono Tempesta bears his signature, making people laugh by attacking clichés, making people reflect while having a bitter taste. Numa Tempesta (Marco Giallini) is a financier who manages a fund of a billion and a half euros, sentenced for tax evasion to serve a year of social services in a homeless shelter. There he will meet poor souls who seek refuge in social services. Among them there is Bruno (Elio Germano) who, together with his son Nicola, seeks refuge from the bites of life. It is not a comedy of happy emotions, there are no obvious passages, but “Io sono Tempesta” makes you laugh a lot, also thanks to the beautiful alchemy on the set. Germano has worked alongside Luchetti on several occasions, winning on two occasions also a David di Donatello, the most important film award in our country. Elio racconta il suo “ultimo viaggio” live al fianco delle Storie Tese con un Tour d’Addio che li vedrà protagonisti da aprile a maggio. Il futuro? «Solo idee rivoluzionarie e studieremo per diventare influencer e youtuber» di Dario Morciano

on inganni il titolo del brano presentato a Sanremo che dà anche il nome al loro ultimo progetto discografico, Arrivedorci. A sentire Elio e le Storie Tese non ci sarà nessun ripensamento. Dopo 38 anni di successi e hit provocatorie, la storica band milanese appende gli strumenti al chiodo e lo farà con un Tour d’Addio per salutare tutti i fan che non sono riusciti a partecipare alla festa al Mediolanum Forum di dicembre. «Un tour» – ci tiene a sottolineare Elio – «che affronteremo come gruppo già sciolto!». A dicembre doveva essere il vostro ultimo concerto… poi Sanremo, un disco e ora un tour. Siete proprio sicuri di dire basta? «Quello è stato effettivamente tale. È lì che noi ci siamo sciolti, poi però è stata talmente tale l’ondata di affetto che ci siamo accorti in quell’occasione della quantità di persone che volevano darci “l’estremo saluto” per cui ci hanno organizzato anche un tour che è quello che inizierà il 20 aprile e che servirà per andare a salutare le persone in tutta Italia. Ma noi siamo già sciolti, siamo l’unico gruppo al mondo a fare un tour dopo essersi sciolti. Quindi è un motivo in più per venire a vederci».

Girando l’Italia per la promozione del disco, come la stanno prendendo i vostri fan? «Sono tristi, ma si rendono conto che stiamo facendo ancora una volta un’impresa alla Elio e le Storie Tese. In genere chi dà l’addio è a fine carriera per età o perché i membri si sciolgono. Noi, invece, siamo in ottimi rapporti e al massimo della forma sul palco. Quindi c’è un po’ di sgomento». È forse l’aver abituato il vostro pubblico alla sorpresa che ancora molti non ci credono… «Questa è una sorpresa tale che supera tutte le altre». In un’intervista ho letto che è bastata una telefonata di Baglioni per farvi cambiare idea e partecipare a Sanremo. Cosa può farvi rimandare ancora l’addio dalle scene? «La telefonata, in realtà, non è mai avvenuta. Baglioni ci ha mandato un messaggio scritto in cui ci chiedeva di salutare tutto il pubblico dal palco del Festival. Il messaggio era talmente accorato e mandato da una persona che noi ammiriamo tantissimo che non ce la siamo sentiti di rifiutare. Poi però ci siamo accorti che aveva mandato messaggi a tanta altra gente. Ci eravamo ilaprile-maggio 2018 _ 49

Sarà il vostro ultimo tour insieme, che spettacolo sarà? «Anche se ci siamo sciolti, questo tour sarà come il live del Forum con qualche variazione nella scaletta e la presenza di ospiti che non sono venuti a Milano». Sfogliando l’album della vostra carriera, qual è il momento più bello e quale quello più “triste”? «Un momento allegro è senz’altro il film che abbiamo fatto con Rocco Siffredi. Certamente uno degli obiettivi dello scioglimento è quello di ripartire con idee ancora più esplosive e rivoluzionarie. E non metto tra queste idee la partecipazione a Sanremo come hanno fatto i Pooh perché non mi sembra così rivoluzionario». E cosa sarebbe rivoluzionario? «Non lo sappiamo bene neanche noi, buttarci a corpo morto nei social perché ci siamo accorti che se abbiamo

While speaking to Elio e the Storie Tese it’s understood there will be no second thoughts. After 38 years of success and provocative hits, the historic Milanese band is going to rest aside the instruments and will do so with the Tour d’Addio to greet all the fans who weren’t able to attend the party at the Mediolanum Forum in December. «A tour» - Elio underlines - «that we will face as a group that has already split up». December, was supposed to be your last concert... then Sanremo, an album and now a tour. Are you really sure it’s over? «That was indeed such. It was there that we

split up, but then there was such a wave of affection that we realized at that moment the amount of people who wanted to give us “their last good-bye” so a tour was organized. It will begin on April 20 and will be on the road to greet people throughout Italy. But we have already split up, we are the only group in the world to do a tour after splitting up. So that’s one more reason to come and see us». Traveling throughout Italy to promote the album, how are your fans taking it? «They are sad, but they realize that again we are doing this in the “Elio e le Storie Tese style”. In general, those who say goodbye are at the end of their careers due to age or because the members are in contrast. We, on the other hand, are getting along very well and are doing really well on the stage. So there is a bit of dismay». Maybe it’s because your fans are used to you surprising them, that many still don’t believe… «This is such a surprise that it goes beyond all the others». In an interview I read that a phone call from Baglioni made you change your mind and convinced to take part in the Sanremo Festival. What else could make you postpone your farewell? «Actually, Baglioni never called us, he sent us a text message asking us to greet our audience from the stage of the Festival. The message was so heartfelt and sent by someone we admire so much that we didn’t feel like declining it. But then we realized that he had sent messages to so many others. We thought we were the only ones (laughs, ed.)». And would a referendum make you change your mind? «To bring us back together, it would have to be a national referendum. There would have be so many people interested in showing us that they want to see us united again, there’s no way we could say no. Strange, though, it’s more likely that the referendum would have the opposite result». Sure you won’t show up on stage next year at the Ariston, like the Pooh did this year? «I don’t think so, the Pooh are unreachable. For sure one of the main goals of the breakup is to start over with more explosive and revolutionary ideas. And going back to Sanremo, as Pooh did, doesn’t seem like aprile-maggio 2018 _ 51

And what do you think would be innovative? «We don’t really know, probably to dive into the socials, we realized that we made a mistake by neglecting these means of communication. We have to study, we’re looking into university courses for influencers and youtubers, that seems to be a good idea for us. While we were at Sanremo, it hit us that we could offer our services to Rai, as organizers for one of the upcoming Sanremo. It’s clear that the song competition is at the end of the rope, that’s why we thought of a Festival without songs, but only with presenters and guests».

So this will be your last tour together, is it going to be a special show ? «Even though we have split up, this tour will be similar to the live concert we held at the Forum, the playlist will have some changes and some featured guests who didn’t come to Milan will show up».

Flipping through your career album, tell us your best and your “saddest” moment. «Without doubt, we had a lot of fun making the movie with Rocco Siffredi. The saddest? The death of our mate Feiez. This year, among other things, marks the twentieth anniversary of his death. The tour comes at perfect timing, it’ll be a way to remember him».

Arrivedorci is Elio e le Storie Tese’s last album which includes the Sanremo hit bearing the same name as the album, a brand new hit, Il Circo Discutibile, and the recording of their greatest hits played during their farewell live concert in Milan.

Rimpianti? «Come si dice nei film, rifaremmo tutto».

Any regrets? «As said in the movies, we’ll do it all over again».

Questo vostro addio è perché non vi riconoscete più nella discografia italiana? «Nella discografia non ci siamo riconosciuti mai. Ci ritiriamo perché ci siamo resi conto di essere un prodotto di un altro tempo. È come se un cantante di operetta cercasse oggi di affermarsi con quel genere».

This is your goodbye, does that mean you don’t recognize yourselves in Italian discography anymore? «Well, we really never did recognized ourselves in the discography. We’re rolling out because we realized we’re a product way ahead of time. It’s like an operetta singer trying to succeed with that genre today».

Nessuno sarà il nuovo Elio e le Storie Tese, ma oggi vedete qualcuno in grado di avere il vostro stesso impatto nel panorama musicale italiano? «Esattamente come noi nessuno, ma molti punti di contatto li rivediamo nei The Kolors. Tra dieci anni, aprendo il dizionario della musica italiana sotto la voce “Elio e le Storie Tese” cosa vorreste leggere? «Fra dieci anni mi sa che non scriveranno niente. Forse tra 50. Porto sempre l’esempio di Mia Martini che oggi viene trattata come se non fosse mai stata una persona vissuta ma fosse invece una santa immateriale, ma io ero vivo quando lei era viva e dire che fosse maltrattata è dire poco. Si diceva che portasse male, che fosse una iettatrice e c’era quel gioco orribile

Come ha capito che la cucina sarebbe stata la sua professione? «Ho cominciato a lavorare presto per avere un po’ più di indipendenza… Ai miei tempi i genitori ti mettevano in condizione di essere utile e andare a lavorare lo vivevi come un gioco. Non posso dire di aver completamente scelto quello che volevo fare, però la combinazione ha voluto che cominciassi in

pasticceria e da lì mi sono trovato in una cucina: è un lavoro che mi è piaciuto e mi sono fatto piacere, scegliere era un lusso…». Qual è l’insegnamento che più le ha cambiato la vita? «Ci sono tante forme di insegnamento che ho avuto la fortuna di ricevere, cominciando dal fatto che in famiglia c’era tanto più rispetto per il cibo e per tutto quello che veniva dalla terra e costava tantissima fatica… questa sensazione di sacralità del cibo si è un po’ persa… Entrando in cucina ho anche imparato quello che non devi fare… tipo vendere un prodotto per un altro, un prodotto congelato per uno fresco… l’importante è il senso etico del nostro lavoro che secondo me deve essere sempre un’esperienza alta». aprile-maggio 2018 _ 59

E cosa insegna oggi a chi lavora con lei? «Pretendo questo tipo di rispetto e l’educazione… da quello non si deve mai prescindere». Rigore, disciplina e creatività: è possibile tenerle insieme? «Oggi l’idea del cuoco è quella dell’artista, ma non è una conseguenza naturale. Quando vai a mangiare al ristorante sembra sempre che tu debba sottoporti all’ennesimo esercizio creativo dello chef di turno. È diventato anche difficile mangiar bene delle cose fatte con saggezza, con la giusta esperienza, essere custodi e diffondere la tradizione che secondo me ha molti momenti più difficili della creatività». Nei panni di “giudice” come va? «Junior Masterchef e Cuochi d’Italia sono due situazioni molto diverse, con dei concorrenti molto diversi (per età e per i tratti caratte60 _ aprile-maggio 2018

ristici del programma). Soprattutto nell’ultima versione sulle cucine di tutta Italia, così diverse tra loro e così bene raccontate dagli chef, oltre a essere un giudice, il vero privilegio è che ti passa davanti l’Italia delle differenze, dei territori, dei prodotti e delle sapienze. Un bellissimo punto di vista». Nel 2001 la prima stella, nel 2008 la seconda e poi altri riconoscimenti importanti. È cambiata la sua idea di cucina? «Faccio la cucina che so fare, che sento mia, confesso che non ho avuto grandi cambiamenti. I piatti sono molto evoluti, arricchiti di spunti o di tecnica, però la filosofia di base è rimasta. Già nel ’92, anno di apertura del ristorante (La Torre del Saracino, ndi), sono sempre stato uno chef che cercava di valorizzare e attualizzare alcuni prodotti del territorio in una chiave più contem-

How did you understand that cooking would have been your profession? «I started working young so as to be a little more independent... back in my time, parents would push you to be useful and going to work was like playing a game. I can’t really say to have chosen what I wanted to do, it was just a coincidence that I started in pastry and from there I found myself in the kitchen: it’s a job that I liked

C’è un piatto della tradizione che ha rivisitato? «Più di uno, perché la tradizione è una cucina alla quale sono molto affezionato e ripropongo con molto piacere. All’interno del menù mi piace dare sia la visione tradizionale di alcune ricette sia quella creativa. Ho comunque piatti assolutamente originali e inediti… Mi piace ritrovare il gusto della zuppa di pesce, i sapori intensi, antichi, importanti. Piatti dove le verdure sono trattate per diventare protagoniste, come la parmigiana di melanzane che è un piatto di unione. Sono molto affezionato all’olio extravergine di qualità...». Qual è il messaggio che “Festa Vico” porta con sé? «È nata per essere una festa per gli chef, ma è diventa anche un momento di incontro della nostra categoria e di riflessione. Aiutare chi è meno fortunato di noi e uno degli obiettivi di “Festa Vico”. Quest’anno sarà legata anche agli artigiani dell’agroalimentare che sono una risorsa importantissima per chi, come noi, vuole fare qualità». Lo chef e il viaggio, che rapporto ha? «Non avrei mai pensato che questo lavoro mi potesse far viaggiare così tanto. È un aspetto inaspettato ma piacevolissimo. Adoro viaggiare, vedere cose e persone di altri luoghi, sono sempre curioso di assaggiare le cucine dei vari posti perché penso che ci sia un filo rosso che unisce tutte le cucine del mondo… Andare in un posto e assaggiare la cucina ha in sé una serie di spunti antropologici che non puoi non cogliere». All’estero cosa le manca di più? «Un buon caffè, una pasta al pomodoro giusta, quei sapori quotidiani semplici che ti hanno ac-

How is the role of “judge” coming along? «Junior Masterchef and Chefs of Italy are two very different events, with very different competitors (for age and for the programs’ characteristic traits). Especially in the latest version of the cuisines throughout Italy, so different from one another and so well recounted by their chefs, in addition to being a judge, the real privilege is that you get to know the Italy of differences, territories, products and wisdom. A beautiful point of view».

And your cuisine? «My cuisine is fresh, made of products that sit in the refrigerator as little as possible, I like to be able to give the prime taste of things, the natural one, to make nice pairings between them, put the chef’s imagination to work so that the dish can be a complete experience... I use many local products, it helps me to be unique and tied to my territory, but when I think about the dishes, I think of making one that keeps my diner amused».

In 2001 the first Michelin star, in 2008 the second and then other important awards. Has your idea of cooking changed? «I do the cooking that I know how to do, that I feel mine, I confess that I have not had big changes. The dishes are very evolved, enriched with ideas or techniques, but the basic philosophy has stayed. Already from ’92, the opening year of the restaurant (La Torre del Saracino, edn), I have always been a chef who

rienza completa... Utilizzo molti prodotti autoctoni, mi aiuta a essere più unico e legato al mio territorio, però quando penso ai piatti, penso a farne uno che diverta molto il mio commensale».

Al di là del carattere, è possibile raggiungere grandi traguardi e rimanere se stessi? «Vengo da una famiglia molto umile e il mio lavoro mi ha dato una grande dignità e la possibilità non solo di viaggiare, ma di trovarmi in situazioni impensabili. Devo molto al mio lavoro. La cucina è un universo rispetto al quale ti senti sempre tanto piccolo, hai tanto da imparare e non mi passa neanche per la testa di assumere atteggiamenti di superiorità di qualsiasi genere. È un lavoro che ti chiede tanto in termini di sacrifici, però ti restituisce in tantissimi modi tutto quello che gli hai dato e questa chiave di lettura, unita alla mia origine – sono nato a Vico Equense (Napoli, ndi)

–, fa sì che non ho bisogno di sbattere i pugni sul tavolo per dire che cosa penso e neanche sentirmi migliore degli altri… Sono una persona normalissima». Un sogno ancora nel cassetto? «Sarebbe bello riuscire a prendere la terza Stella Michelin e condividerla con tutti quelli che da tanto tempo lavorano con me e che spingono verso la qualità». Glielo auguriamo! E quando non è ai fornelli? «Il mio passatempo preferito è “torturare” i miei bambini. Con loro cerco di passare tanto tempo perché mi diverto moltissimo e imparo tantissime regole di vita: non c’è nessun insegnante più divertente e più pieno di spunti dei bambini». Fatica nel farli mangiare? «Adorano il cibo e sono sempre curiosi di assaggiare tutto, quindi, non so da chi hanno preso…».

Is there a traditional dish that you have revisited? «More than one, because tradition is a cuisine which I am very fond of and propose over and over with great pleasure. Within the menu I like to give both the traditional view of some recipes and the creative one. However I have absolutely original and innovative dishes ... I like to rediscover the taste of the fish soup, the intense, ancient and important flavors. Dishes where vegetables become protagonists, like the aubergine parmigiana which is a dish of union. I am very fond of quality extra virgin olive oil...». What is the message that “Festa Vico” brings? «It was conceived as a party for chefs, but it also became a get-together for the category and a moment of reflection. We have been doing this event for 16 years and from 10th we have been able to reconcile a social, charitable concept for projects, hospitals, non-profit organizations that focus mainly on research. To help those less fortunate than us is one of the objectives of “Festa Vico”. This year it will also be linked to the agro-food artisans who are a very important resource for those who, like us, want to make quality». The chef and traveling, what is your relationship? «I never thought this job could make me travel so much. It’s an unexpected but very pleasant aspect. I love traveling, seeing things and people from other regions, I am always curious to taste the cuisines from the various places because I think there is a fil rouge that unites all the cuisines of the world ... VIAGGI NEL GUSTO When abroad, what do you miss most? «A good coffee, pasta with just right tomato sauce, those simple everyday flavors that have accompanied me all my life ... but I never go randomly, I am always “guided” in these trips».

Per il pesce bandiera fritto: 250 gr olio per frittura 200 gr filetto di pesce bandiera tagliato a pezzi 100 gr farina bianca 50 gr Parmigiano Reggiano 2 uova sale e pepe q.b. 2 rametti prezzemolo ½ limone il succo sale e pepe q.b. PREPARAZIONE: Per l’acqua di pomodoro: Frullare le due tipologie di pomodori e poi filtrare con un colino in tessuto. Per il pesto alle noci: Frullare i pinoli, le noci e i pistacchi. Aggiungere il pane raffermo e l’olio a filo. Continuando a frullare, aggiungere gli ultimi ingredienti. Aggiustare di sale e mettere da parte. Per il pesce bandiera fritto: Sbattere le uova con il Parmigiano, un pizzico di sale e il pepe. Infarinare il pesce bandiera, ripassare nell’uovo e friggere in olio ben caldo. Scolare e riporre su carta assorbente. Per gli spaghetti: In una ciotola, aggiungere l’acqua di pomodoro, la colatura di alici, il finocchietto tritato, il prezzemolo tritato, 20 gr di pesto di noci, il succo di mezzo limone, i tre cucchiai di olio evo e i tre cucchiai di aglio tritato. Cuocere gli spaghetti in abbondante acqua salata, scolare e versare nella ciotola. Amalgamare bene gli spaghetti lontano dal fuoco. Comporre il piatto avvolgendo gli spaghetti e servendoli al centro del piatto, aggiungere una quenelle di pesto di noci e in ultimo il pesce bandiera fritto.

l recente Salone di Ginevra ha confermato che il mercato dell’auto è in grande fermento con tanti modelli per attrarre il pubblico e spingerlo ad acquistare. Come sempre il settore dei SUV resta quello più interessante per le Case auto ma al salone svizzero non sono mancate anche station wagon e berline di grande classe. L’altro aspetto cardine è la tecnologia di cui oggi le vetture dispongono, come la grande crescita delle auto con alimentazione ibrida o elettrica. Quello che colpisce è il livello stilistico con una carrozzeria bassa e compatta e un design decisamente moderno.
