Woodinville’s Spirit World The spirit world was once a very exclusive club: Whiskey came from Tennessee or Kentucky, gin was made in Britain, vodka came from Northern Europe, and rum from the Caribbean. Luckily, somebody forgot to tell this new generation of distillers, because they’re kicking down those centuries-old traditions with loads of DIY originality and local ingredients. AND THE
WAREHOUSE Women drink more wine than men.
No surprise if you look around most tasting rooms or wine bars. The makeup of U.S. wine consumers is about 55% women and 45% men, though men have been slowly closing that gap over the last decade. Given this predominance of women wine drinkers, why are winemakers still mostly men? All issues of patriarchy, prejudice or tradition aside, it seems only natural that more women gravitate from enjoying wine to making it. And it’s no surprise that one of the best places to taste this turning of the gender tide is Woodinville’s Warehouse District. 12

As long as there’s been wine, there have been wine stereotypes: women prefer wine while men prefer beer; men drink more reds while women drink more whites; women prefer lighter, sweeter wines while men go for bigger, bolder ones. But if there’s one thing the explosion of wine popularity in the U.S. and Washington State has revealed, it’s that these generalizations could do with a major overhaul. Women and men are both drinking across the entire spectrum of wines (and beers), mainly because the availability and variety of high quality beverages have never been greater. And contributing to that delicious mix are a new generation of female winemakers who are busy crushing grapes and smashing stereotypes.
So what differences are these women bringing to the art and business of winemaking, and how do their tastes and experiences differ from those their male counterparts? For starters, Lisa Swei, co-owner of Three of Cups, thinks women winemakers are more likely to consider women’s palates. “In a way, maybe women winemakers are here to do what Coco Chanel did for women’s clothing: take us out of the restricting shapes that men design and like, and give us an enduring, sophisticated alternative we can make our own,” she asserts. Winemaker Casey Cobble of Robert Ramsey Cellars notes that women may bring a physiological edge to winemaking: “I’ve heard people (men and women) in the industry say, usually offhandedly, that women have better palates than men,” she recounts. “But there are some recent studies (PloS ONE and Yale University) suggesting that women are more sensitive to smell and taste.” Pam Adkins and Julie Bulrice, the duo behind Adrice Wines, put the differences in

approach this way:
“Male winemakers tend to THINK about how they’ll make their wines. Female winemakers tend to FEEL their way through the right blends—tannic vs. rounded or bold vs. subtle.” —Pam Adkins & Julie bulrice In addition to the cultural, emotional and perceptive qualities women bring to winemaking, you can add one more to the top of the list: perseverance. This is still a very challenging, largely male-dominated business, and success for women often takes extra grit and a thicker skin. Cobble recalls, “I’ve been told to my face that women ‘sell wine.’ I lift barrels, drive the forklift, and work 17-hour days during harvest just like anyone else, but people still do a double take when they find out I’m a winemaker. Every time I can represent a different picture of what a winemaker is to the public or to people within my industry, that bias gets torn down a little more.” Pam Adkins of Adrice Wines

You have to have an incredible drive, confidence in your direction, and the ability to keep pursuing your dream.” —lori larsen Overcoming these obstacles is a challenge for any winemaker, but Woodinville’s women have found that success comes easier when they join forces. Sisters of the

Vinifera Revolution is a circle of winemaking women that meets every month to share experiences, provide support and offer encouragement. “We share ideas, efforts, space and our support for each other because we believe that working together will take us further as female winemakers than working apart,” say Adkins and Bulrice. “Our goal is to help other women enter the winemaking world and support one another,” adds Packer. “We want to help lift other women up and make leaders out of existing women winemakers.” As they’ve grown and refined, the wineries of Warehouse District women are making an impression and building a loyal following, especially with fellow women. Mari Womack, the owner and winemaker behind Damsel Cellars, says, “The people who are joining my wine club are primarily women, and they seem genuinely interested in supporting women-owned businesses. However, they’re also very discerning and won’t simply buy anything just because it’s made by a woman.”

It’s a similar story at Packer’s Warr-King. “Women are buying more wine, visiting more tasting rooms and growing their knowledge of wine. They don’t want to be told what to drink but rather experience it and make their own decisions about what they like and don’t like,” she says. Adkins and Bulrice observe, “Women seem to prefer well-rounded wines and the stories behind either the wine or the labels. They love the wine-drinking experience and how it makes them feel.” The same can be said for the ladies behind the labels: they love the winemaking experience and the feeling of creating something that reflects their own personal taste, perspective and experience. The art of wine may be thousands of years old, but women winemakers are just starting to get the chance to show their stuff. It’s an exciting, delicious time both for them and all of us enthusiasts. Warr-King’s Lisa Packer puts it this way: “I always think of my wines as my kids. They sometimes drive you nuts and cause you to lose sleep, but in the end, they grow up to be pretty amazing and make you proud.”

Nature vs. Nurture With weather patterns changing, the nature part of this equation is beginning to be less predictable, meaning grapes can become either too ripe or not ripe enough, with too much sweetness and not enough acidity or too much tartness and not enough fruity sweetness. “In Washington, we’ve been blessed with a string of great vintages from 2012 through 2016,” says Gorski. And some would say most vintages in this state are blessed, getting better and better every year. But some years have been more difficult, as the cold fronts, rainstorms, late spring, and heat waves of 2011 proved. “In more challenging growing conditions, such as 2011,” Gorski adds, “nature offers more of a challenge, with grapes that can be out of balance.”

That’s where the man (or woman) part comes in. A winemaking team can make a huge difference in how the wine makes it across the finish line. “Provided the winemaking team is able to help the vineyard best express itself and bring the wines into balance,” says Gorski, “even lower quality vintages can produce wines of exceptional quality.” What can a winemaker do to help a less-than-perfect harvest along? Once the grape is safely in the tank or barrel, a cooler, longer fermentation, the use of tried-and-true yeasts and other factors can make or break a wine. “Exceptional red wines are truly made in the fermenters after being harvested from a great vintage,” says Foster. “Proper, full extraction without making the wines bitter is the basic recipe. Naturally, I also believe in aging those wines in oak barrels, but it isn’t necessary for the greatness of the wine vintage to shine.” 20

Wine and wineries go hand in hand, but some winemakers are busy expanding their creative juices beyond those of the grape. Here's just a sample of Woodinville wineries that are building on their wine success to explore new tastes and experiences.
Des Voigne Cellars & Brewing There’s an old saying that it takes a lot of great beer to make great wine, and the Des Voigne family knows this well. Formerly Des Voigne Cellars and B Side Brewing, Des Voigne Cellars and Brewing began its winemaking business in 2004. By 2015, owners Darren and Melissa Des Voigne moved to a new space on Artisan Hill (where they are now) in order to expand operations to include a brewery. Darren Des Voigne makes the wine and Bob Thorpe makes the beer. Melissa Des Voigne describes their beer and wine business model this way: “We saw a lot of couples like my husband and myself, where one loves beer and the other loves wine ... and we thought, 'Wouldn't it be great if we could create a space where they can enjoy both together?' So that's what we've done." Thus, the Des Voigne tasting room offers an uncommon selection of both exceptional wines and beers—something for every taste under a single roof.
Goose Ridge Estate Vineyard, Winery and Cidery “We really are a farming-first family,” says Tiffany Stetson, the General Manager over at Goose Ridge Winery, which has been around since the late 90s. “We have 2,200 acres of vineyards, but we also have a couple hundred acres of apple and cherry orchards,” she says, citing their ranching, agriculture and winemaking traditions. No surprise then that Goose Ridge has introduced their own cider into all four of their tasting rooms (Woodinville, Leavenworth, Richland, Walla Walla). “It’s been fabulous," she declares. “Get out there and taste. This is the best classroom ever!” 24

“The Matthews’ mission is really Bordeaux-inspired, Washington-crafted wines, so all of our wines are classic red blends and whites that are made with traditional varietals you’d find in Bordeaux—Cabernet Sauvignon, Merlot, Cabernet Franc, Petit Verdot, Malbec, and then Sauvignon Blanc and Semillon," says Bryan Otis, the son-of-all trades in this family business. The success of their blends doesn't have them resting on their laurels though as Otis explains the philosophy behind their alternative Tenor label: "Tenor's mission is producing and celebrating single-varietal soloists. It’s the only winery we know of that guarantees that each wine is 100% of the varietal on the label.” So far, most of the Tenor wines are being snatched up by wine club members as soon as they're released. Pairing a natural food component to their two styles of winemaking, Mathews Winery also nurtures its own working farm, allowing them to offer seasonal, farm-related experiences like produce stands and farm-to-table-dinners. Deeply Rooted, Growing with the Future For more than 20 years, the name has remained the same, but the story of Matthews Winery has been one of an evolution and of a family that is not content to rest on its laurels. Matthews Winery launched in 1992, focused from the beginning on crafting red blends with techniques inspired by Bordeaux. In 2008, the Otis Family relaunched the winery, sharpening the focus on making exceptional wines while also looking to future. That future started with some critical decisions. As part of the relaunch of Matthews Winery, Aryn Morell was brought in as head winemaker. Aryn cut his teeth on Napa Valley winemaking and brought with him the expertise needed to produce the best possible Bordeaux-style wines from Washington’s finest vineyards. Next, Matthews Winery had outgrown their Woodinville winemaking facilities and a new one had to be found. With the overarching goal to always make the best possible wines, Matthews moved to a new winery facility closer to the vineyards. The new, state-of-the-art facility in Walla Walla - designed by Aryn himself - set a new standard for the Matthews winemaking process. The work in the vineyards and new winemaking facility have produced the highest wine reviews and scores in the winery’s history.
With a little more elbow room at their Woodinville location, the Otis Family once again looked to the future by taking a cue from the land. The farming community has deep roots in the Sammamish Valley, so it only made sense to embrace that farming heritage. In 2015, Matthews Winery started Matthews Farm, an organic farm covering almost an acre adjacent to their tasting room. It’s the first commercial farm associated with a winery property in Woodinville. Matthews Winery has been able to share the bounty from the farm in a number of ways. For the past two years, they have offered a community supported agriculture (CSA) subscription program that is unique to Woodinville Wine Country. Starting in late-June and running through
early November, Matthews Farm’s CSA subscribers receive a weekly box of fresh vegetables, herbs, f lowers, bread, cheese, and of course, Matthews wine, including bottles of older- vintage library wines. The farm also provides produce to a growing roster of renowned Seattle-area restaurants and is the centerpiece of several unique farm-to-table dinners. The dinners are hosted through the spring, summer, and fall, and offer dozens of guests the unique pleasure of seeing firsthand where much of their seasonal meal was grown. The farm-to-table dinners are held in the newly renovated tasting room, substantially expanded thanks to the absence of the winemaking equipment. The spacious, light-filled building is reminiscent of a classic French farmhouse, complete with fresh local cheeses, charcuterie, spreads, olives and other deli spreads to accompany their wines. So while the name on the label reads as it did in the early 90s, very little has remained the same. A new version of Matthews Winery has earned impressive reviews from wine critics and a loyal following of consumers. Years of hard work by the Otis Family has paid off and yet that does not mean their vision is complete. It will be exciting to see - and taste - the next chapters of Matthews Winery.

The Paradise Valley Conservation is a hidden escape for families that want to experience a nature hike without the hassles of a long drive. There are plenty of child-friendly walking paths that are easily accessible and well-marked. Thanks to helpful signage along the 13 miles of trails, both kids and adults will see and learn something new with every visit. Of course busy kids are hungry kids, and Woodinville has oodles of choices for young appetites. The Commons Cafe serves up American classics that even finicky tots will appreciate, like grilled cheese, French toast, and giant cinnamon rolls that barely fit the plate. The nearby Hollywood Tavern is a former service station that dates back to 1923. Since reopening in 2013 as a modern diner, it's become one of the city’s hottest spots for adults and kids alike. Moms and dads enjoy the gourmet comfort food and a wide selection of adult beverages, while kids can indulge in a big plate of Beecher’s mac & cheese and homemade milkshakes.

Parents looking for more nutritional balance in their children's diet have come to the right town. What makes Washington wine unique? Here is a short primer on where our wines come from and the language that best describes them.
In the world of wine, Washington is considered a new wine
Woodinville is unique when compared to any other wine-growing
region with enormous capacity to prove itself more than
region in the world. Woodinville Wine Country is considered an

So, what’s the importance of an AVA? With over 850 wineries making wine from the 14 AVAs of Washington, an AVA becomes a wine consumer’s decoder ring to help make the best bottle purchase for your taste. It becomes a way to familiarize your palate with the particular grape varietal characteristics that come from each individual wine-growing region. For the most part, the wine label is the only hint there is to go on, unless you’re lucky enough to taste and experience exactly what’s in your bottle at the many tasting rooms throughout Woodinville, Seattle and Eastern Washington. An AVA is a designated wine grape-growing region in the United States distinguishable by geographic features, with boundaries defined by the Alcohol and Tobacco Tax and Trade Bureau (TTB) of the United States Department of Treasury. With the exception of the Puget Sound and the Columbia Gorge, the remaining 11 growing regions are contained within the borders of the larger Columbia Valley AVA, and are considered sub-appellations. The Columbia Valley AVA holds claim to 99% of all Washington State’s Vitis vinifera (premium wine grapes) acreage. 62

No other wine region has more winemakers sharing knowledge, yeast strands, forklifts and more than this special area.
Shelly's Tips for TaLKINg Like a Pro Here’s a chart of important wine lingo that will have you talking and sounding like the smartest wine drinker in your tasting group. Isn’t it time to bring out your inner wine geek?
Terroir "tare WAHr" A French term that doesn’t translate in any other language but expresses “a sense of place,” encompassing soil, climate, and the entire environment of where the grapes are grown.
Vitis Vinifera
Residual Sugar (RS)
Premium wine grapes. Countries where winemaking and vitis vinifera grapes first originated are considered “Old World.” Wines from countries where winemaking and vitis vinifera grapes were imported are considered “New World.”
Sugar that remains in a wine after fermentation, usually measured in grams per liter or percent. Most wine is fermented to dryness, but a popular varietal that does well with residual sugar is the cool climate grape varietal, Riesling. Not all Rieslings will be sweet and to help the consumer understand the level of sweetness, there’s typically a chart on the back of each wine label. Another trick to determine sweetness is to look at the percentage of alcohol. Sweeter wines typically have less alcohol by volume (ABV), unless it’s a fortified wine, which will then add alcohol to the wine. The amount of sugar remaining in a wine is the choice of the winemaker.
Malolactic Fermentation (MLF) Taking the harsh malic acid (tart apples) and converting it to the softer lactic acid (milk) by a bacterial conversion called malolactic fermentation. Most red wines undergo this process, but winemakers can either promote this biological process, creating rich buttery Chardonnays, or block the process with the goal of preserving a higher level of acidity in white wines, such as Sauvignon Blanc.
Tannin A phenolic compound found in grapes. Tannin comes from the grape’s skin, pips (seeds), and stems. It acts as a natural preservative while helping the development and balance in a wine. Tannin can also derive from oak barrels. For the most part, grape tannins make the side of your cheeks stick to your teeth, while wood tannin gives a drying sensation to the back of your tongue.

TCA tends to mute all fruit flavors, creating a sort of bland tasting wine.
