I walked into the cellar the other day and a friend of mine was sporting a baseball hat that said, “Make Merlot Great Again.” How cool is that? I remember a time when we believed Merlot was going to be the king varietal here in Washington. All the journalists were raving about it. It seemed

to have more structure than many California Merlots, and Chateau Ste. Michelle was planting it like crazy. Napa was going to make Cabernets, Oregon would make Pinot Noir, and we would make that deliciously layered varietal called Merlot. All was right in the world.

merlot is back Despite this rosy forecast, Cabernet Sauvignon continued to dominate the red wine market. The movie Sideways didn’t help Merlot either. I told people that the character who refused to drink Merlot also drank from a spittoon later in the movie, and his favorite French wines, Petrus and Cheval Blanc, were Merlot dominant. Still, Merlot sales cooled while Syrah gained popularity and more and more outstanding Cabernets were being made here in the Northwest. Regardless of the trends, I’ve always loved making Merlot. It’s a varietal that always delivers a key trait in my winemaking criteria: deliciousness. Soft and accessible, Merlot is always a crowd pleaser. It delivers the whole gamut of fruits and spices, yet still rewards aging in the cellar. And it grows so well here in Washington.

From the Wahluke Valley to Walla Walla and everywhere in between, Merlot is the second most planted grape here after Cabernet Sauvignon.

According to the USDA National Agricultural Statistics Service, there were over 9,000 acres of Merlot planted in Washington as of 2017, a 54% increase from 2006. RICHARD DUVAL IMAGES

You can imagine how pleased I am to see that Merlot is back. At DeLille Cellars, we’re making more than ever. Our Merlot-dominant D2 is our most popular wine and is recognized around the country and in several international markets. There are well over 100 varietal Merlots produced in the state, not to mention all of Washington’s Bordeaux-style blends where Merlot is key. While much of the world still struggles with Merlot (name a famous Australian Merlot), ours only gets better. Finally, I noticed that the new generation of wine drinkers really loves Merlot. They’re not necessarily hanging around the local wine shop on a Saturday afternoon reading wine critics’ reviews and scores; they’re just looking for wines that deliver delicious pleasure to be shared with friends. While all varietals can be hedonistic, Merlot seems best suited to this aspect of wine drinking—it’s simply a delight to drink. And a big future. While I won’t try to predict just how big, one thing’s for sure: I’ve got to get one of those hats.

here are so many wonderful reasons to visit Woodinville, but the main attraction is undoubtedly the exceptional wine. Let’s face it, anyone can run to the store and grab a bottle of wine. If you want to enjoy true premium wines from the best vineyard sites in Washington in beautifully landscaped settings, however, you’ll have to make a trip out to Woodinville and, more specifically, Washington’s founding winery, Chateau Ste. Michelle. As the state’s oldest and largest winery, Chateau Ste. Michelle has over 50 years of winemaking history to draw upon and share with visitors. And while all that experience and tradition produce some of the finest wines in the world, they’ve also created a full menu of activities to complement them. There are few places where a great glass of wine can lead you in so many directions: from appreciation, to education, to entertainment, to sheer indulgence. Most noticeable upon arriving to the winery are the picturesque grounds. The winery sits on 105 scenic acres once home to the Stimson Family Estate. Public and private tours and tastings are available daily, or visitors can simply stroll and picnic at their leisure. Once inside the recently renovated Visitor Center, you can sample the daily Feature Flight, purchase a bottle, or simply relax with a glass or two of your choosing. From bold reds to crisp whites, there are wine options for everyone, including many wines sold exclusively in their wine shop. Tours and tastings are just the beginning of what Ste. Michelle offers. There’s also a daily food menu from their renowned culinary team. During the summer, the amphitheater on the grounds is home to a popular world-class outdoor concert series.

The options don’t stop there. The Chateau Visitor Center features the Col Solare Bottega, a beautiful homage to the partnership between Tuscany’s Antinori and Chateau Ste. Michelle. As part of last year’s remodel, they’ve added the Enoteca tasting salon and bottle shop which features wines from the entire Ste. Beyond Wine They don’t call this wine country for nothing. With over 120 Woodinville wineries and tasting rooms, locals and visitors can go tasting here almost every weekend of the year and never run out of new labels to enjoy. But while all that sniffing and sipping has been going on, something else has happened here that’s making it a much richer country. Over the last decade or two, craft brewers, distillers and cideries have been setting up shop, brewing up batches, and creating a completely different world of flavors and vibes.

Besides the alternative universe of award-winning flavors, Woodinville distilleries and breweries often offer more of a production floorshow than wineries can. “Coming to a distillery is a bit like experiencing the crush season every day,” observes Mark Nesheim, owner and distiller at J.P. Trodden Distillery. “Unlike the wineries, who have a real season of winemaking to observe, distilleries, breweries and cideries are producing product right in front of you almost every day of the year. It’s a different experience because often you can see the whole process. At our distillery, the still and all the fermenting equipment are right in the tasting room.” Having a front-row seat for the production action is also a big part of a visit to most craft brewers, with mills, tuns, kettles and tanks making themselves right at home in the tasting room, or within view of it. But that’s where the similarities with a distillery—or any other beverage producer—end. Independent brewers are just a different beverage-making animal with a more maverick, RICHARD DUVAL IMAGES

Winemaking is often described as a labor of love—a pursuit that can only be embraced by those who are passionate about the art and craft of creating wine. So we wondered: What lights that fire? Is there an “Aha!” moment when a burgeoning weekend winemaker decides to take the leap and zero in on this zeal full-time? We put that question to some of Woodinville’s winemakers and got an enlightening assortment of answers.

Brian Carter Cellars While I did make wine as a teenager, I did not have that “Aha!” moment about becoming a winemaker until my junior year of college in 1975. I was getting a degree in microbiology at Oregon State University when I decided to take a class in wine appreciation at their experimental college. The class took our group to several wineries in the Willamette Valley to meet the winemakers at each place. I was fortunate to meet David Lett (often considered the father of the Oregon wine industry) Vuylsteke at Oak Knoll. After talking to these winemakers, particularly David Lett, I remember thinking to myself that this is what I want to do. David also encouraged me to go to school at UC Davis, where I could learn about how grapes are grown and how wine is made. The rest is history. 20

Two Vintners and Covington Cellars I re-enrolled at Purdue University in 2003 after a 3-year hiatus. On my way to a hospitality management degree, I took a course entitled “Wine Appreciation.” It was taught by a wonderful man named Dr. Richard Vine. No kidding, Dr. Vine! After appreciating the hell out of that class, I decided THAT was what I wanted to do with my life. The birth of our first child, Stella Mae, in 2004 drove us to look at starting a family business so we could have more control over our lives and be parents who were present. Kelly’s dad suggested we consider opening a wine shop. After a year of had dinner with Charles Smith, who convinced me that a winery would be way cooler. He wrote down some hieroglyphics on a few cocktail napkins, and we’re still here 14 years later. It was a great decision.

Andrew Januik Wines Although winemaking has always been and still is a very fun activity for me, it has never been something that I did just as a hobby. Growing up in the industry, there were always real-world implications with winemaking even at a young age, because it was what my family has always depended on for our livelihood. That being said, I knew almost as a certainty that I would be going into the wine industry as a career by the time I was 19 or 20. I had spent so much of my life around wineries and people in the industry, and it was hard to believe there could be a more MIKE & ANDREW JANUIK

I wouldn’t say there was a particular moment that changed winemaking from an interest/hobby into a career. I worked in the restaurant industry for years and always had a passion for wine and food but didn’t really know that wine would become my career at the time. I started volunteering in tasting rooms in Woodinville to get some exposure to the wine business, and then when harvest rolled around I started to help with production. From that first afternoon helping with punchdowns and cleaning the press at Baer Winery, I knew that wine could be a very different career than I originally thought. I was introduced to Darby English of Darby Winery and worked my way to becoming his assistant winemaker, and during that process (over the course of four years), I put my head down and did the work. I feel like I simply kept showing up every day ready to learn and work.

Sightglass Cellars I first knew in 1991, when I was invited to work as a harvest intern in Australia with Penfolds winery. I had worked in retail, selling wine in California, but had never worked in a winery before. After about two weeks, I loved it so much that I knew I wanted to do this for a living. What I enjoyed the most was using my hands in many different ways and seeing the results. Each day is different. It continues today, especially since it’s just me working on the wines and helping people enjoy them.

Love That Red For us, I think it was more of a gradual thing over time versus an “Aha!” moment. In retrospect, two things stand out. The positive feedback and encouragement we received from our wine-loving friends and family certainly fueled our passion to share with others and a much larger audience. I’m a bit of a perfectionist, and the wines had to be great before we’d ever consider flipping the commercial switch. Secondly, I’d say the 2012 vintage year. I spent a ton of time exploring the vineyard side of the state that year and really grew to appreciate our geological wonders and vineyards. Later that season, Mother Nature delivered what I thought was the perfect ripening season. After all of that, we fell even more in love with winemaking and were pumped to start Love That Red Winery. 22

Despite his advanced level of wine knowledge, Joseph says it’s important for his guests to trust their own palate. “I tell people that whatever they’re tasting is correct, because telling someone what they’re smelling or tasting is like dancing to architecture,” he notes. “We in the industry don’t have better palates; we have more educated palates. We can educate someone as to what structure is, but we can’t tell them what they’re tasting.”

What makes Washington wine unique? Here is a short primer on where our wines come from and the language that best describes them.

It becomes a way to familiarize your palate with the particular grape varietal characteristics that come from each individual wine-growing region. For the most part, the wine label is the only hint there is to go on, unless you’re lucky enough to taste and experience exactly what’s in your bottle at the many tasting rooms throughout Woodinville, Seattle and Eastern Washington. An AVA is a designated wine grape-growing region in the United States distinguishable by geographic features, with boundaries defined by the Alcohol and Tobacco Tax and Trade Bureau (TTB) of the United States Department of Treasury. With the exception of the Puget Sound and the Columbia Gorge, the remaining 11 growing regions are contained within the borders of the larger Columbia Valley AVA, and are considered sub-appellations. The Columbia Valley AVA holds claim to 99% of all Washington State’s Vitis vinifera (premium wine grapes) acreage.

Shelly's Tips for smelling Like a Pro It can take a good bit of practice to train our nose to differentiate the thousands of possible aromas that are perceptible in wine. Add to that the task of putting those smells into descriptive words, and the thought of becoming an expert sniffer can seem fairly daunting.

Known officially as “olfaction,” smell is a very complex sense. It involves perceiving scents directly through our nose (direct olfaction), or indirectly through the nose and mouth together (retronasal olfaction). Though smell is the sharpest of our five senses, over time, we come to rely on it less and less. As we grow up and become exposed to a multitude of smells, familiar aromas are stored in our brain as memories. It’s that exposure to a full environment of scents that lays the foundation for our own personal Rolodex of distinguishable smells. Our sense of smell is responsible for roughly 80% of our wine enjoyment, so it’s worth investing some time and effort to improve it. And like anything else, our ability to smell gets better with practice. Here are a few tips and exercises to get your nose into shape so you can sniff and smell like a seasoned pro: Smell—and smell often! Head to your local farmer’s market and take the opportunity to smell the seasonal fruit, vegetables and flowers. Do the same at your local grocery store. Eventually, add dried samples of fruit, vegetables and flowers to your repertoire. You’ll soon begin to appreciate the aromatic difference between ultra-fresh, fresh and dried. Keep your mouth slightly open when sniffing your wine. This gives you the greatest opportunity to pick up the most from what you’re smelling. Take a sip of wine and hold it in your mouth. There are five distinguishable tastes (salt, sour, sweet, bitter and umami) that complement your sense of smell and work in conjunction to create the overall experience. Experiment with plugging your nose as you taste your wine. Since 80% of what you detect is the result of smell, you’ll notice that you’re unable to smell or taste very

much. The same is true when you’re stuffed up with a cold or allergy. Without a properly functioning nose, nothing seems to taste very good. Reset your nose when necessary. The task (and pleasure) of thoughtfully smelling can be a bit overwhelming. When your nose is fresh, you’ll discern smells quickly. But after a lot of sniffing, your nose can begin to dull and you may start to lose your ability to pick up distinct scents. To reset your nose, try sniffing the back of your hand or the crook of your elbow. Since our sense of smell is always habituating to the smell of our own skin, it provides a perfect olfactory baseline for detecting other scents. Break down scents into groups. Focus first on primary aromas. These are the aromas that come from the grape varietal itself and with the influence of the terroir where the grapes are grown. Examples are fruit notes like lemon, grapefruit, apple, pear, blackberry and cherry; or floral notes like rose, violet, acacia and honeysuckle. Next, try picking out the secondary aromas. These are the result of the winemaking process, namely the pre-fermentation, fermentation, malolactic conversion and oak influence. Examples include vanilla, cedar, mocha, butter and spice. Finally, put your nose to tertiary aromas, which come through once the wine has aged and the fruit has taken a back seat. Mushroom, earth, spices and barnyard are common tertiaries. As you strive to improve your sense of smell, keep in mind that wine writers have been doing this a long time and their vocabulary has strengthened to match their nose. If your wine descriptors don’t quite match theirs, don’t fret. Wine is a subjective and incredibly complex beverage that takes time to master. Enjoy the journey!
