WOODINVILLE

SWEET SPOT By Dan O'Boyle

Everyone has one. That perfect combination of place and play that makes for an unforgettable experience: the sweet spot. They’re often found in big cities, where food and drink combine with shopping, sports, and entertainment. Woodinville is the delicious exception, offering the cosmopolitan tastes of a major international city with the small-town charms of a friendly community framed in a scenic agricultural valley. People are drawn here from all corners of the Northwest and the world by one of the finest wine-tasting experiences anywhere. With more than 100 wineries and tasting rooms plus a thriving community of chefs, microbrewers, distillers, and artisans, this is a food and drink Mecca like no other. But that’s merely the first course, because if you’re not enjoying the full menu of activities that complement all this abundance, you’re missing half the meal. The confluence of flavor and fun is Woodinville’s true sweet spot—the essence of our lifestyle. It’s where beer meets bike ride, where Cabernet meets concert, or where a trip to the farmers market meets the perfect meal. 6

THE

Experiences flow from the Sammamish River Valley like a recreational torrent. Many are fed by one of the finest bike and pedestrian paths in the country. From Woodinville, you can pedal south to Redmond and Marymoor Park, or northwest to the Burke-Gilman trail along the west side of Lake Washington all the way to Seattle. For cyclists, joggers, strollers, dog walkers, and horseback riders, this scenic trail offers car-free immersion into the valley’s greenbelt. It’s a nature hike with a uniquely Woodinville twist, because around the next bend you’re likely to find a park, ball field, brewery, or winery. The potential for play, picnics, and refreshment is perilously high. Pack a meal and find the perfect spot to spread out, or better yet, hopscotch your way between food and drink stops. For those who prefer venturing off the beaten bike path, don’t worry. You can get your nature fix in a hundred other ways, because weather permitting, just about everything that happens here happens al fresco. Take music. Chateau Ste. Michelle’s renowned summer concert series takes place out on the expansive grounds of this gorgeous winery. There’s something about fine wine and a verdant valley that gives a performance by Paul Simon or Bonnie Raitt a little extra resonance— again, that sweet spot. On a weekly basis, Willows Lodge, Village Wines, Hollywood Tavern, and dozens of boutique wineries and breweries showcase talented local acts on patios and in tasting rooms throughout the valley. Families, friends, and visitors gather for the Celebrate Woodinville concerts and festival to listen to live music along the picturesque Sammamish River, while sipping wine, beer, and cider, and enjoying tasty bites from local food trucks.

The Woodinville Sweet Spot (cont'd) Even the shopping in Woodinville is uncommonly green. This is, after all, home to the promised land for every Northwest gardener: Molbak’s garden+home. The year-round attraction of this flora feast is so compelling that many plant lovers enter Molbak’s and are never seen again. And that fragrance wafting on the wind? Follow your nose to a sea of purple known as Woodinville Lavender, a sensory-packed farm with a picnic area, event space, and farm store overflowing with lavender products for every bath, body, and bouquet. Bringing farm to market, 21 Acres and the Woodinville Farmers Market offer up all the freshest Sammamish Valley pickings, from fruits and vegetables to flowers and honey. That freshness is what makes shopping here such a year-round feast. As the seasons change, market shelves change right along with them, serving up a new harvest of colors, tastes, and aromas to fill your senses and basket. Exceptional wines are not created by accident. Romantically, the making of wine is the result of an artistic, artisanal skill. Practically, winemaking is a challenging craft that takes years to develop and requires knowledge of both viticulture (the science of grapes and their production) and enology (the science of wine and winemaking), as well as a solid palate for tasting good, balanced wines. In other words, the making of wine is both a science and an art—and although both are complex, they are not unknowably mysterious.

WINE SCIENCE 101: 12

PASSPORT TO WOODINVILLE

Where Science Meets the Senses By Jacqueline Pruner Photos by Richard Duval

As the industry matures, it finds many grape varieties that thrive throughout Washington’s micro-climates. Ongoing research and grower/winemaker partnerships are key to improving grape growing and wine production.

VITICULTURE:

The Science of Grapes Viticulture and enology research began in Washington State in 1937, when Dr. Walter Clore was appointed assistant horticulturist at WSU’s Irrigated and Agriculture Research Extension Center in Prosser. Clore, who is recognized as the “father” of Washington’s wine industry, initiated research through trials of American, European. and French hybrid grape varieties throughout the state. Significant investment in wine research began in the early 1980s, when legislation appropriated funding to WSU for research programs in viticulture, enology, and agricultural economics. Washington’s wine industry took a major step with the creation of the $23 million Washington State University Ste. Michelle Wine Estates Wine Science Center in Richland. Located in the heart of the state’s eastern wine region, it represents the industry’s focus on its future. This world class teaching and research facility uses the most advanced technologies and equipment to provide students and scientists with the tools needed to solve viticulture and enology challenges specific to Washington growing conditions. Grapes need the right climate and soil condition—which Washington State has in relative abundance. Currently, more than 18,850 vineyard acres of white varieties and nearly 25,000 vineyard acres of red varieties exist statewide. According to the Washington State Wine Commission, Washington produces more than 40 wine grape varieties—a ratio of about 49% white and 51% red. The most common are Riesling, Chardonnay, Pinot Gris, Sauvignon Blanc, Cabernet Sauvignon, Merlot, and Syrah.

ENOLOGY:

Both a Science and an Art

“Fermentation is the conversion of sugar to alcohol, a chemical process. It’s a science,” states Hillary Sjolund, who has a degree in fermentation science and is consulting winemaker at Wine Boss, a selfproclaimed ’incubator of small wineries.’ “You have a lot of aromatic and flavor compounds that are created during the chemical process. The artistic side of it is that we all have a palate. We go and taste the grapes in the vineyard. It’s very romantic. The sun is shining, it’s quiet. Then we taste the juice. It’s about both sensory and science.” Simply put, wine fermentation is a metabolic process in which yeast converts grape sugar into ethanol alcohol and carbon dioxide gas. Note, however, that wine would not spontaneously result in nature; proper human intervention is needed in winemaking, else the “wine” becomes vinegar. PASSPORT TO WOODINVILLE

13

Wine Science 101 (cont'd) “Before people started to understand chemistry and microbiology, ancient winemakers recognized that wines tasted better when the wine was stored in a cool place, when exposure to oxygen was minimized, or when elemental sulfur was burned in an empty wood cask before being filled with the freshly crushed grapes,” offers winemaking consultant Erica Orr, who has worked in the wine industry since 1998. Although this all sounds simple enough, many factors exist in the actual creation of wine, both scientific and artistic/artisanal. This includes both the characteristics of the individual grape varietals and the biochemistry of the grape’s growth and development. The science of viticulture, as mentioned above, includes the key elements of soil, climate and sound agricultural practices, as well as appellation and weather conditions in a given growing year. The timing of the grape harvest is another factor: the winemaker’s decision during 14

PASSPORT TO WOODINVILLE

an ideal year, Mother Nature’s choice at other times, given weather events like hail storms, ongoing heavy rains, and early freezes. There is also the winemaker’s selection of the vessel in which the wine is fermented (which may include stainless steel, oak barrels or both), as well as the length of time for the fermentation process. All of this is needed to create the desired sensory experience, the desired wine. By the end of the grape fermentation process—which can include both primary yeast fermentation and secondary malolactic fermentation (found more often in the making of red than white wines)—literally tens of thousands of chemical compounds may be in the end product, some in as small amounts to be described in terms of parts per billion. This complex molecular mixture affects the color, nose/scent, taste, and mouthfeel of wine, and produces a rainbow of hues—from nearly crystal clear to almost inky black, with plenty of yellow, green, orange, pink, and purple hues in-between.

Fruit. Nuts. Florals. Herbs. Spices. Chocolate. Vanilla. Velvet. Acerbic. Astringent. Creamy. Clean. Silky. Crisp. Buttery. Umami. “I know that multiple people can make wine from the same vineyard and they do things slightly differently and the wine comes out substantially different,” observes enologist and viticulturist Linn Scott, head winemaker at Sparkman Cellars. “Or you can have several wines with exactly the same chemistry … and you still haven’t learned anything about the wine so you have to apply your sense organs to it.” Bob Bertheau has been making wine at Chateau Ste. Michelle (which has its own in-house wine lab) since 2003, when he began as the winemaker responsible for white wines; by 2004, he was promoted to head winemaker. Bertheau agrees that winemaking is both a science and an art: “This is an axiom that truly holds to form. One really needs both to craft great wines. Science is needed from a purity standpoint and art is needed to make wines with personality and soul. You want to strike the right balance. If you are a scientist making wines just by numbers, the wines can be boring or rigid. If you are an artist mostly ignoring the science aspect, you can run into wines that might be good, but have the potential to develop flaws.” The result of all this science-meetingthe-senses? Perhaps an extra-dry Riesling that’s nearly the color of water. Or a straw yellow Sauvignon Blanc that tastes of citrus fruit and fresh spring grass. Or a Cabernet Sauvignon that’s deep red in color with flavors of black cherry, black currant, black pepper, and tobacco.

WHY TEST WINE? Since the creation of wine is a chemical process, it is tested to ensure proper grape development and wine stability throughout the winemaking process. “It’s a good thing that wine scientists are studying what makes wine distinctive, although much remains to be discovered,” states Orr. “This scientific understanding can guide vineyard practices and techniques in the winery with the goal of making wines that are consistently delicious. The smell and flavor of wine depends on super-small concentrations of molecules to which human beings are very sensitive. So from a chemical standpoint, it is not only the amount of these compounds we care about, it is also the human perception threshold and the super-complicated ways these molecules interact to influence the smell and taste of wine.”

Wine is put through it's paces as it is swirled, sniffed, sipped, swished, and spit.

In other words, a carefully crafted wine that is pleasing to the palate, fragrant to the nose, and visually appealing. PASSPORT TO WOODINVILLE

15

Wine Science 101 (cont’d from page 15) Lab analysis and testing can occur from vine to wine— grapes on the vine and at the moment of harvest, the juice, and as the wine ferments. This analytical data is then used to determine such factors as when to pick the grapes, how long to allow the fermentation process to occur, and how to keep sugar, acid, sulfur dioxide, and alcohol levels in check. “The frequency of testing is determined by the winery— typically, we are analyzing grapes on the vine before harvest to help determine pick decisions and then, after the fruit is picked and crushed at the winery, we generate the “juice panel” data—that snapshot of the chemistry before fermentation,” Orr adds. “We are also always tasting the grapes and the wine as it is maturing. The best winemakers trust their palates and understand the value of the chemical data in complementation and combination.”

Does Wine Science Guarantee a Delicious Wine? Wine scientists and winemakers can correct a chemically imbalanced wine and thus deliver an unflawed wine to market—but they can’t guarantee a delicious wine, since a scientifically unflawed wine does not guarantee a superb sipper. Once again, this is where the artisanal craft of the winemakers come in—skilled palates, exacting eyes, interpretation of sensory profiles, and the knowledge of how those wines will develop in the future. Sjolund sums it up nicely this way: “As a chemist, I can fix chemistry—I can manipulate the chemistry to do what I need it to do. But I cannot manipulate flavor.” Luckily, the wines of Woodinville are crafted so that they are not only scientifically sound and chemically balanced, but deliciously flavorful, too—making for the perfect wine tasting experience. New Tasting Areas of Woodinville By: Jacqueline Pruner

Woodinville Wine Country is growing, and quickly—with more than 100

wineries and tasting rooms from A to

Z—or, in this case, from Adams Bench Winery to the Zerba Cellars Tasting Room. It’s absolutely time to check out this charming wine region and experience everything from start-up boutique wineries to the Grande Dame

of Washington, Chateau Ste. Michelle.

A mere 30 minutes from Seattle, Woodinville showcases world-class wines made from grapes grown in eastern Washington, many of which are crafted right here. Plenty of options await all of you wine tasters, whether novice or connoisseur. So many different

wines—with charming stories to go along with them to both savor and share.

Woodinville has four well-known, winecentric districts: Warehouse, Downtown,

Hollywood, and West Valley. But, did

you know that within these districts there are several exceptional tasting

enclaves worth special attention all on their own? They are: Apple Farm Village,

Artisan Hill, The Junction at 144th, and the wineries of Hampton Inn & Suites.

Artisan Hill: Incubators and Seasoned Veterans in the Warehouse District Artisan Hill is a perfect example of an urban winery area—lines of seemingly sterile, industrial buildings very much in the “Warehouse District” style. This enclave houses some true gems in the form of artisan, boutique wineries, distilleries, and a brewery that are filled with character and are oh-so worth exploring. From the relative newcomers on the Woodinville scene to seasoned veterans, there are so many unique experiences and excellent beverages to discover. The wineries located within this area are: Aspenwood Cellars, Avennia, Chatter Creek Winery, Convergence Zone, Covington Cellars, DiStefano Winery, Kaella Winery, Stevens Winery, and Three of Cups. Des Voigne Cellars has been around Woodinville for more than a decade, and now they’re also making beer in their new Artisan Hill location, under the label B-Side Brewing. This is Washington’s first full-production winery and microbrewery operating under one roof. Don’t miss a visit to J.P. Trodden Distillery, with its celebrated artisan bourbon, and Pacific Distillery, crafting its very own award-winning absinthe and dry gin.

Expect uniquely enjoyable sipping experiences as you explore Artisan Hill. Intimate wine tastings + industrial setting = cutting edge.

The Junction at 144th There is a lovely and oh-so convenient area known as The Junction at 144th at the entrance to the Warehouse District. It’s an adorably modern strip of businesses where wine-seekers can get their hands on some great wine, and nice beer, cider, and spirits too. PASSPORT TO WOODINVILLE

19

New Tasting Areas (cont’d from page 19) One Junction winery is Armstrong Family Winery—a small, Bordeauxfocused winery that put its tasting room and winery in the same space, providing a true barrel-to-bottle-toglass experience. Why The Junction? Jennifer Armstrong, owner of the winery that bears her family name, has this to say: “We wanted to be in the Warehouse District because we make our wine right here on-site—we have some good, open warehouse space. We love The Junction because it’s very accessible for people to visit, with parking right here. We have a brewery, cidery, distillery, and four wineries as neighbors. So, it’s just a great experience for people to come and really taste what’s going on in Woodinville. It’s kind of a little microcosm.” The Junction brewery, Dirty Bucket Brewing Co., recently acquired an additional 1,800 square feet of new brewing, fermentation, and taproom space within The Junction. Under this expansion, which is currently underway, the original brew space and taproom will become the lab and cask program brewhouse. The Junction cidery is Locust Cider, which offers up hard apple cider made from fresh-pressed apples grown in Washington and Oregon. The company remains small, and everyone who works in the tap room also has a hand in making cider. The Junction distillery goes by the name Schnapsleiche Spirits. “Schnapsleiche” is German for “fine hand-crafted distilled beverages,” and they make several, from aquavit to gin to grappa to schnaps to vodka—as well as a bierschnaps made with IPA from their brewery neighbor. The other four wineries in The Junction are: Beaumont Cellars, Five Star Cellars, Gård Vintners, and Sol Stone Winery. The AVA’s represented in this great line-up of wines include Columbia Valley, Yakima Valley, Walla Walla Valley, and the Wahluke Slope. “We love the idea of having our winery adjacent to our tasting room,” Armstrong shares with a smile. 20

You can come in and taste our current releases and see the wine that’s aging—or sometimes we’re doing work on the wine. It’s a little bit of a show,” she adds with a soft chuckle.

Gateway District Tasting Rooms at Hampton Inn & Suites A 102-room Hampton Inn & Suites by Hilton Seattle/ Woodinville is in the works and expected to open in October/November of 2016, just north of the Warehouse District. A new tasting enclave, it will provide some 4,000 square feet of winery retail space, and will feature Tertulia Cellars of Walla Walla, Tsillan Cellars of Lake Chelan, Skylight Cellars, and Avennia. Plans for the “perfect mix lobby” are also in the works. This concept is designed to be an extension of the individual guest rooms, with a variety of seating and lighting options for both leisure and business travelers. Very exciting times in Woodinville, so stay tuned! And, in the meantime, get on out and enjoy the exceptional enclaves—true wine microcosms within wonderful Woodinville! FARM CHARM

South 47 Farm and Trellis at the Heathman Hotel

BY JAMIE PEHA

Agricultural roots woven into the fabric of the Sammamish Valley

The term “early adopter” typically applies to technology users, but it aptly pertains to Brian Scheehser as well. A modern-day renaissance man, Scheehser is both the chef at Trellis Restaurant in Kirkland’s Heathman Hotel, and a farmer at South 47 Farm in the Redmond Valley, just outside of Woodinville. Scheehser prefers to live in sync with the land, using only what he needs and sharing the rest. He learned about South 47—a farm co-op—from fellow farmers and The Herbfarm Restaurant owners, Ron Zimmerman and Carrie Van Dyck, 18 years ago and decided to lease just one acre. Photo by Jamie Peha

Today, Scheehser stewards more than 18 acres of farmland, strategically planting select crops in just the right balance. His harvest then makes its way onto Trellis’ seasonal menu. As one row of gourmet lettuce heads is picked, another nears peak freshness. Working the land involves leaving some land unseeded (fallow fields) in a rotation period of up to three years. Rotating crops allows time for the soil to sanitize itself of one crop while growing a different crop not susceptible to the pathogens of the previous crop. Plants with healthy roots are also more efficient in the uptake of mineral nutrients. (photo by Jamie Peha)

If there is an overabundance of produce, Scheehser cans, bottles, freezes, or pickles for use in the restaurant, staying true to his restaurant’s farm-to-table approach year-round. A look into his storage pantry reveals a winter’s supply of tomato sauce, fresh berry jams, vegetable relishes, and more. Any excess product is generously donated to Hopelink, a non-profit social services agency which, along with other services, provides food bank assistance to areas of King County, making this a zero waste farm. Fresh produce is picked and delivered to the restaurant each morning—or within hours of use. Such is the case with Trellis’ two-hour salad: True to its name, the greens are picked within two hours of arriving on the table. When a crop is in season, you will see it used in many ways throughout the menu, both savory and sweet, as well as in specialty cocktail offerings. This is the ultimate definition of seasonal farm-to-table food.

Trellis 2-hour salad greens just picked. Photo courtesy of Trellis Restaurant

Everything is planted from seed in the farm’s start house. The warmer temperature herb house is nearby, where the air is filled with aromas of lemon verbena, chocolate mint, purple basil, and pineapple sage. Scheehser grows approximately 17 varieties of heirloom tomatoes in greenhouse tents accounting for more than 2,500 individual plants at the height of the season. Other crops include eggplant, artichokes, field tomatoes, garlic, radishes, carrots, blueberries, blackberries, raspberries, apple and pear trees, kale, chard, squash blossoms, onions, fennel, beats, peppers, beans, and lavender. Keeping the farm healthy requires bees. With Epi-pen and beekeeper suit always at hand (he is highly allergic), Scheehser also tends the two beehives and their resident 400,000-plus bees. South 47 Farm is located at the corner of 124th and 153rd in Redmond. It is part of Farmland Trust whose mission is to protect farmland, promote sound farming practices, and keep farmers on the land. Amidst the million dollar estates and sprawling development happening in and around the valley, South 47 Farm is one of a number of urbanelyintegrated farms that is setting the standard for preserving our agricultural land and influencing the farm-to-table lifestyle.

Farm Charm (cont’d from page 23)

Minea Farms and the Vintners Door Venue Minea Farms is hidden behind a cluster of trees, just past the DeLille Cellars Chateau and across from K&L Nursery. The farmland and storefront were recently purchased by Greg and Pamela Goff, who also own and live in the stunning brick Tudor estate next door, which is perched on a sprawling four acres just above the beautiful Sammamish Valley. As you wind up the driveway and pass the barn building, you arrive at the Vintner’s Door, an environmentallysensitive, refurbished event venue focused on sourcing everything locally and boasting an amazing view of the valley. The space can hold up to 200 people reception style, and includes an expansive patio, lawn, and circular fire pit surrounded by a dozen wooden Adirondackstyle chairs. The Goffs are also owners of the highly-regarded Alleromb Winery in Walla Walla, offering high-end wines made by partner and winemaker Aryn Morrell. These wines are made available to guests who gather in this unique event space. Pamela Goff is the visionary behind the farm and events space. A proponent of incorporating natural environments into urban living, she felt the time was right to blend their successful hospitality and wine business with the cider-making and farming enterprises of Minea Farms. The family team includes Goff’s son Jordan, daughter Rozlyn, and son-in-law Kevin. Just behind the farm store front and adjacent original kitchen (plans to further build out the kitchen are in the works now) is the enormous 100-year-old cider press. The press mechanics are fairly simple and it still works like a charm to produce the family cider, which is currently for sale only in the store.

You can stop by the old-world farm store for fresh pressed apple cider, unpasteurized and pasteurized from organic and nonorganic apples. The store also sells aged vinegars, raw honey, organic cheese, eggs, yogurt, fine chocolates, syrup, kefir, fruit leathers and dried fruits, jams, spiced fruit spreads, and gifts. Look soon for natural products formulated by wellknown French chef and researcher of Imagine Foods, Maxime Bilet. Pamela’s vision is to continue to plant and grow more vegetables and offer healthy products for better living. The store is open to the public on Fridays from 3:30 pm –6:30 pm, Saturdays from 10 am–5 pm, Sundays from noon–5 pm, and by appointment.

WOODINVILLE

WOMEN IN WINE “The women in this community

are amazing. I can’t even count the number of times I have sought help or advice from them and they go above and beyond to help out. We all know that we are, more or less, making a similar product in the same way, sometimes even with the same grapes. We are all in this together and we all have the attitude that “your success is my success.”

Throughout this urban wine town you will find women winemakers, enologists, marketing professionals, winery owners, sales executives, multi-facility directors, general managers, top executives, and more. What drives these women to pursue their passions in wine? What fuels them on a daily basis? What do they say to themselves to keep moving forward? We asked and they shared their inspirations with us.

“AN IDEA, a creative spark, a mental picture—these are the ingredients of a daydream. The moment in time when you get lost and your imagination runs wild. It feels so good, so pure. Hold on to that warm fuzzy feeling and make your dream come true. It won’t be easy, but it will be worth it! Winemaking is a constant learning process; no vintage is the same. I embrace the challenge each vintage brings (except the ever-increasing number of grey hairs on my head!) Don’t be intimidated by what you don’t know. That can be your greatest strength and ensure you do things differently from everyone else, and find yourself in places no one has ever been before. This is the recipe for a successful business. So, don’t quit your daydream. Go and do it!” Kasia Kim, Owner/Winemaker, Kasia Winery, LLC

Casey Cobble, Winemaker Robert Ramsay Cellars Stacy Lill (r) and Pamala Towers (l) enjoy a glass

“One of the things I enjoy most about our local wine industry is that it’s such a mixed group of individuals who all share a love for great wine and an enthusiasm for supporting and promoting Washington as a growing region. Our backgrounds are quite diverse—men and women, engineers and technicians, 40-year veterans and recent graduates—and yet, there is that common interest that binds us together. For me, this industry is not so much about who you are, but about your passion for Washington wine and what you can bring to the collaborative effort.” Jess Zander, General Manager, Fidelitas

30

PASSPORT TO WOODINVILLE

“I’ve loved being part of the Washington wine industry as it has grown over the years in visibility, quality, and an opportunity for women to shine. It has been such a joy for me to be able to combine two of my passions: wine and philanthropy. By providing educational scholarships through the O Wines brand, almost 60 young women have received college scholarships. Doing good while drinking wine is a true win.” Stacy Lill, Principal/Owner, Cashmere Consulting

“The most knowledgeable people in the wine industry are the least afraid to share with others what they know. They are also the most humble in understanding how much they still need to learn. Wine = Happiness.” Shelly Fitzgerald, CS, CSW Wine Education Specialist, Columbia Winery

INSPIRATIONS “One of the best decisions I’ve ever made was to study wine. I now consider it far more than a beverage. It is the link that connects me to people I would never have otherwise met. It is a driving force to explore different regions to see where and how wine is produced. It is also a reminder to slow down, share a meal with friends around the table, and savor what’s in the glass.” Nancy Croisier Marketing Manager, EFESTĒ

“BEING A WINEMAKER rings of something glamorous, but it’s actually a messy process and requires grit, passion, and the vision to do something distinctive. It’s also the only business where you can let your frustrations out by stomping around and actually benefit the process. Let inspiration fuel your passions and surround yourself

with like-minded people that lift you up and make you laugh.” Lisa Warr-King, Owner/Winemaker Warr-King Wines Kasia Kim is all smiles in the vineyard.

“In Woodinville, we talk about our award-winning wines. I think what’s more impressive is our award-winning women. Every week I work with women who win my prize for inspiration, smarts, energy, and determination. What I’m always impressed with and grateful for is the way these women help each another. There’s a great sense of “we’re all in this together.” That selflessness can make such a difference when you’re having a long, frustrating day with way too much to accomplish.” Sandra Lee, Executive Director Woodinville Wine Country

“Favorite winemaking tools: my steel-toed boots, the forklift, and a good water-proof mascara. Now let’s make some juice!” Mari Womack, Owner/Winemaker Damsel Cellars

WE ARE. Uniquely Pacific Northwest

The Pacific Northwest. It’s one of the most beautiful places in the world. From epic mountains to glistening lakes, we seem to see in full high definition here. We love our home in the Evergreen State. Fresh air, friendly communities, and humbling natural beauty. We are Marketplace Sotheby’s International Realty and we are proud to be Uniquely Pacific Northwest.

You’ll know when you’ve hit the heart of the Warehouse because you’ll feel the buzz. With winemakers packed tooth-to-jowl, there’s an energy here that fuels both creative competition and friendly cooperation. So much so, that you’ll often see wineries borrowing and lending equipment, expertise, and manpower to one another— especially during crush season. This is where the person pouring your wine is often the one who made it, and the personalities you’ll meet and the philosophies they share make the perfect pairing to any glass.

hockablock taste. That’s what makes this unassuming hillside above Woodinville so popular. The Warehouse District is home to dozens upon dozens of boutique Washington wineries, each with its own distinctive take on our state’s grapes. This is a smaller, more personal, no-frills style of winemaking, and the results offer an almost endless treat for any beverage enthusiast. In less than a square mile, you’ll find more wineries than anywhere else in the world, plus a creative contingent of nanobrewers, cideries, distillers, and eateries. What are the odds you’ll taste something you love here? 34

PASSPORT TO WOODINVILLE

Perhaps the most intriguing thing about the Warehouse experience is that you don’t just taste the wine, you surround yourself with it. This is total immersion—the ultimate insider experience. Each tasting room is a unique expression of the winery and winemaker, and most sit right beside the fermenting and barrel rooms, so as you’re enjoying this year’s vintage in the glass, you’re sharing space with the barrels, tanks, and processes that are shaping next year’s wine. It’s these all-in-one artisanal workshops that make for such a wonderfully entertaining and educational atmosphere where you can fully appreciate the time, work, and talent that come to life on your palate. Add a variety of options for live music, patio seating, and tasty bites from food trucks or Chef Anne Marie (located in Davenport Cellars), and every visit to the Warehouse District becomes a new experience. Visit often!

For those of you just beginning to discover Washington State as a wine growing region and wine tasting destination hot spot—or if you’re new to wine in general—prepare yourself to be hooked on Washington wine! In fact, you can taste all of Washington right here in this microcosm known as Woodinville Wine Country, just 30 minutes from Seattle.

Setting the Stage for a Burgeoning Wine Industry In the early 1990s Washington emerged as one of the great growing regions for Cabernet Sauvignon and Merlot. This was in large contrast to just a few years earlier when most Washington growers were focused on Gewürztraminer, Chardonnay, and other white varietals. With the overwhelming success of Cabernet Sauvignon and Merlot, referred to as noble grape varietals, a foundation was laid for two more grape varietals to make a splash: Syrah and Riesling. More than 40 varieties are now grown in Washington, which creates a rich and diverse experience for wine lovers. By the late 2000s, Washington established itself with a reputation for premium wine at affordable prices. Strong quality and fair prices opened the doors for more people to experience and try the wines of Washington, without the inhibitions of breaking the bank. The Cascade Mountain range separates the eastern and western portion of the state and creates a rain shadow effect that holds the rain on the west side, dropping a mere 6-10 inches on the eastern portion and creating a continental climate. Together, the limited rainfall, Basalt Volcanic bedrock, and nutrient poor top soil created a region meant for grape growing. It’s an area that is often described as having new world fruit with old world acidity and structure.

Enter Woodinville Wine Country Although the vineyards are situated in eastern Washington, the majority of the population is located in western Washington, creating a need for a destination area to showcase these wines. This selected destination took form in the town of Woodinville, Washington, a 30 minute drive from the heart of Seattle. It all started when Chateau Ste. Michelle decided to locate here in 1976, and it’s now home to more than 100 working wineries and tasting rooms. One question I am often asked is: “what are the steps for wine tasting?” It seems simple, but there really is something to this question. We all know how to drink, but tasting is something different altogether. Here’s a quick how-to guide to help get you started.

Shelly's Tips for Tasting Like a Pro: There are four simple guidelines to help you become a better wine taster:

Visually look for clues in the wine, such as determining a wine’s age. White wine gets darker with age, while reds lighten and become brickish or orange. As red wine ages, it drops tannin which can also cause a loss of color. The growing climate of the grapes also makes an impact on color. Cooler climates produce lighter colored wines, while warmer climates give more color extraction, creating darker wines. The type of grape variety will also determine how much color can be extracted from its skins. Another component of sight is viscosity, which is the wine’s liquid consistency. Thin legs typically mean low alcohol and little or no residual sugar. Thick and slow legs typically mean higher alcohol or residual sugar. So raise your glass to the light and take a look!

Your nose detects thousands of smells, but putting them to common language is tough and takes practice. Start by swirling the wine. This aerates and releases the aromas in the wine. Geek Speak: “Volatizing the esters so that the aromas can be detected by the olfactory bulb.” Next put your nose in the glass and sniff. You’ll pick up many different aromas of fruit, earth, flowers, spice, oak etc. Get comfortable talking out loud about the smells you detect. Be brave! What you smell is what you smell. Most smells are related to our memories, and you’ll be amazed at the aromas you recognize.

Take a sip of the wine and if you’re courageous, aerate the wine by pulling in air through your mouth. This definitely takes some practice to achieve without dribbling. Getting the wine to cover your entire palate is key. We are able to detect certain tastes in wine naturally: Sweet (residual sugar), sour (acidity), bitter (tannin), Umami (savory). Once you swallow (or spit the wine out, if you are tasting many wines and need to pace yourself), think about what’s happening in your mouth: Is your mouth watering? For how long? Did the flavor linger or dissipate quickly? What other flavors did you come up with?

After you finish tasting, it’s time to reflect on your impression of the wine. At this point you become the expert because no matter what conclusion you arrive at, it’s dependent on whether you would purchase, cellar or drink this wine again. Wine education is a lifelong journey and an enjoyable one for sure. With every bottle you open you can improve your tasting skills and train your palate. Keep exploring and continue to experience the unique flavors of Woodinville Wine Country. Shelly Fitzgerald, CS, CSW | Wine Education Specialist, Columbia Winery PASSPORT TO WOODINVILLE

Gorman Winery’s unique Woodinville locations keep this wine hub rocking. By Shannon Borg • Photos by Richard Duval

ver the past 15 years, Woodinville has come of age, with more than 100 wineries and tasting rooms where you can enjoy some of the best wines in the state, the country, and the world. Several pioneering wineries have been a driving force to push Woodinville Wine Country forward—from a small, country village, to a growing collection of tasting rooms, to the serious hub of winemaking and wine tourism west of the Cascades. Winemaker Chris Gorman has two very different tasting rooms that trace the journey of this transformation—one in the Warehouse District, where a few rogue winemakers started making wine on their own terms in the early 2000s. The other is in the heart of Woodinville’s Hollywood District, just down the road from Chateau Ste. Michelle, the grand dame of Washington wine that launched a thousand ships—or at least a few dozen winemakers—who went on to start their own wineries and mentor others who set up shop nearby.

Gorman and several other young winemakers founded the Warehouse District, an incubator where they began to collaborate and mentor each other early on. The Warehouse District became (and still is) a destination, not just for weekend wine tasting, but for music, food, and community. The look and feel is just that—a warehouse with an urban sensibility—a working winery with concrete floors, soaring ceilings, stacks of barrels—and in Gorman’s case, a collection of colorful and beautiful guitars from some of his favorite musicians, and vintage rock concert posters, circa early 1990s onward. It’s a hip place to see and be seen, and to find community through his Friend of Gorman (F.O.G.) and The Gorman Army wine clubs.

Of Warehouses and Wineworks Chris Gorman was present at the origin of Woodinville’s changes, opening his winery in 2002 in the Warehouse District, after an early career in wine sales which gave him the chance to taste and appreciate world-class wines. The wines he proceeded to make were as ambitious as those he’d been tasting—robust and bold, with seductive complexity and room to age. 68

At the Corner of Hollywood and Wine The Gorman Winery tasting room in the Hollywood District is right on the area’s roundabout, with dozens of wineries clustered around this hub. The Station is not just a strip of businesses, but a perfect winetasting destination. A beautiful stone water fountain is surrounded by three businesses, with Vivi Pizzeria flanked by two tasting rooms: Patterson Cellars and Gorman Winery. Several of the original warehouse crew also have Hollywood District tasting rooms—a bit of city mouse and country mouse situation, but the warehouse in the “country” is the most urban feeling area of this unique wine country.

The Usual Suspects Every Gorman vintage is a delight. Start off with a sip of The Big Sissy Chardonnay, a lush, voluptuous white wine from Conner Lee Vineyard (82%) with a bit of coolerclimate fruit from Celilo Vineyard (14%), and a touch of fruit from vines planted in 1972 from Kestrel Vineyard. Then, delve into Gorman’s panoply of robust reds, including Zachary’s Ladder, a Syrah/Cabernet Sauvignon/Petit Verdot blend aged in neutral barrels to highlight the Red Mountain fruit, with intense dark color, blackberry, and black pepper notes.

I like to end a Gorman tasting session with the palate-refreshing 42-39-56 Rosé, a cool, zesty, earthy rosé with some serious measurements, blended from Cabernet Sauvignon and Syrah from Columbia Valley.

Relaxing at the Roundabout An hour at this cool tasting room feels almost like you are in downtown Sonoma, with a classy, breezy, country feeling, coupled with plenty of great music to enjoy, and plenty to look at on the walls. This includes more than a dozen signed guitars from rock artists from AC/DC, The Posies, Queensrÿche, Van Halen, Cheap Trick, and others. If tasting world-class wines is your goal, Gorman’s Hollywood District tasting room is a great place to end up after an afternoon around Woodinville. The whole complex is paved in stone and covered with wooden pergolas, flowers and vines, the perfect spot to taste through the wines, then get a pizza from Vivi, a glass of wine, and sit out on the patio and watch the wine world go by.

The Devil You Don’t Know (a Syrah/ Grenache/ Mourvedre blend) is aged in 100% New American Oak, while its evil twin, The Devil You Know, is a Bordeaux blend that changes from year to year, aged in used French oak. These are very different wines that are fun to compare, glass to glass. The actual 2012 The Evil Twin is a silky, opulent blend of Syrah (75 percent) and Cabernet Sauvignon (25 percent) that again shows Red Mountain fruit at its best, with scores from Wine Enthusiast (93) and Wine Advocate (92) to match.
