e le sentez-vous pas ? Si souvent taxés de pessimisme, les Français semblent cette année vouloir conjurer les sempiternels reproches qui leur sont faits de n’être ni ouverts au monde, ni entrepreneurs dans l’âme. Pourtant, s’il est un domaine où la France a su imposer sa culture et son image, c’est bien celui de l’hôtellerie et du tourisme.

A Vatel, nous l'avons bien compris : après avoir créé en 1981 la première école, nous avons tout naturellement reproduit son modèle, d’abord dans d’autres villes françaises puis dans une vingtaine de pays et notamment des pays émergeants. Nous avons su exporter notre savoir-faire autant que notre savoir-être.

Pendant des décennies, il a été impensable que des études hôtelières de haut niveau soient accessibles ailleurs qu’en Europe occidentale et aux USA. L’innovation dont je suis le plus fier a été de lancer la démarche inverse.

Plutôt que de contraindre les étudiants à venir en France, Vatel est allé vers eux, où qu’ils soient. Nous avons démocratisé l’enseignement du management de l'hôtellerie internationale dans des pays à fort potentiel de développement touristique. Nous avons accompagné les grands groupes de l'hôtellerie internationale dans leur développement et nos campus ont permis à de nombreux jeunes de se former localement, avec la même qualité d’enseignement sans toutefois à avoir à traverser la planète. La plupart ne serait jamais venue si nous n’avions fait le choix d’aller vers eux.

Nos diplômés eux-mêmes, les "Vatéliens" comme nous les appelons, l’expriment simplement : “Je voulais travailler dans le tourisme et l’hôtellerie internationale”, explique Jenna Li, jeune Mauricienne. “J’ai donc commencé à me renseigner sur les formations existantes dans le monde et j’ai découvert Vatel. En creusant un peu plus, je me suis aperçue qu’une école Vatel venait d’ouvrir chez moi à Maurice. Avec la solide réputation de l’hôtellerie mauricienne, le grand nombre de chaînes d’hôtels parmi les plus luxueuses sur place ainsi que l’accessibilité d’une école mondialement connue sur l’île Maurice, le choix était évident.” Jenna a obtenu son diplôme en 2013 et la voici déjà Meetings & Special Events Executive à l’hôtel Ritz-Carlton Dubaï. Exemple parmi tant d'autres, elle appartient désormais au réseau de 25 000 Vatéliens qui exercent à travers le monde.

A l’heure où les grandes chaînes hôtelières se sont mondialisées mais s’attachent aussi à "penser local", notre présence internationale suscite leur confiance. Bien des écoles de management nous envient ce modèle pédagogique, indissolublement lié aux valeurs attachées aux métiers de l’hospitalité, qui placent l’accueil, le service et la proximité au-dessus de tout. Et la France les incarne, quoi qu’en disent les grincheux.

D

o you find this surprising? Often considered as eternal pessimists, this year, French people seem to want to prove that they are often falsely accused of not being open to the world, nor having an entrepreneurial spirit. However, if we could only choose one field in which France has imposed its culture and image, hospitality and tourism would certainly be it.

This is something Vatel has well understood. After we founded our first School in 1981, we reproduced its model quite logically, first of all in other French cities; then in roughly twenty countries, in particular in emerging economies. We thus export not only our know-how, but also our professional and people-oriented skills. For decades, graduate level hospitality studies were unthinkable in countries other than in Western Europe or the United States. The innovation that I’m the proudest of is having launched the opposite approach.

Rather than forcing students to come to France, Vatel comes to students, wherever they may be. We have democratized international hotel management courses in countries with high levels of touristic development.

We have accompanied large international hotel groups in their expansion and our Campuses have allowed a great number of students to be trained locally, with the same high level curriculum, without being forced to go to the other side of the planet. Most of them never would have come, had we not chosen to go towards them.

Our alumni themselves, our Vateliens, as we call them, testify to this fact. “I wanted to work in tourism and international hospitality,” explained Jenna Li, a young Mauritian. “So I started to look at what was offered in that field throughout the world and I discovered Vatel. And when digging a little deeper, I saw that a Vatel School had just opened in Mauritius. Hotels in Mauritius are renowned throughout the world as being some of the most luxurious ones that exist and having a school with a global reputation right on my doorstep made this an obvious choice for me.” Jenna graduated in 2013 and she is already the Meetings & Special Events Executive in the Ritz-Carlton Dubai Hotel. Just one example among so many other students, and she is now a part of the network of 25,000 Vateliens who work all over the world.

At this time when so many large hotel chains have gone global, though they strive to keep their local roots, our international presence is a sign they can trust Vatel. Many management schools envy our educational model, which is inextricably linked to hospitality related values, which place welcome, service and a closeness to guests above all. And France embodies all of these values, whatever some unrepentant moaners might say.

vant, mais c’était avant, les études en management hôtelier de haut niveau ne pouvaient être suivies qu’en Europe occidentale et aux USA. La plus formidable innovation de Vatel a été de démultiplier, dès l'année 2000, son école à travers des campus répartis dans de nombreux pays à fort potentiel touristique, permettant aux jeunes de se former localement, dans d'aussi bonnes conditions que s’ils avaient eu à traverser la planète et, avec surtout, la même qualité d’enseignement. Cette offre de formation de cadres internationaux, dans les pays en développement touristique, s’est fondée sur la qualité du projet pédagogique, sans lequel aucune universalité n’aurait été possible.

Pendant les dix premières années, les fondateurs de Vatel se sont attachés à créer des implantations sur le territoire français, à Paris (1981), Lyon (1984) et Nîmes (1989), véritables laboratoires où se sont affermies les convictions pédagogiques.

Au cours de la décennie 1990, l’école a commencé à dupliquer son modèle en s'appuyant sur des hommes et des femmes qui partagent la même vision : préparer les jeunes générations à construire leur avenir tout en accompagnant la croissance de l'industrie touristique et hôtelière dans le monde. D’abord en France, avec l’ouverture de Vatel Bordeaux en 1994, puis dans le monde à Bangkok, Mexico et Tunis.

Alain Sebban, Président fondateur, décrit ce grand mouvement : "La mondialisation était en marche. Pour autant nous savions que de nombreux jeunes, dans le monde, n’ont ni la possibilité financière, ni même l’intention, de venir étudier en France ou en Europe. L’heure était venue de susciter un encadrement local, de contribuer au développement économique des continents émergents à travers la formation des jeunes."

La décennie suivante confirme la force de ce projet. Les nouvelles implantations se succèdent. En 2011, Vatel célèbre ses 30 ans en

efore was before, when high-level hotel management studies were only available in Western Europe or in the USA. Vatel’s most powerful innovation, beginning in 2000, was to open Schools throughout the world, with Campuses located in many highpotential tourist countries, allowing students to be trained locally, in the same conditions as if they had to travel half way around the world for this, and above all, with the same high quality of classes.

This educational program for international executives and managers, in countries ramping up their hospitality industry, is founded on the quality of our educational project, without which our global offer would not have been conceivable. For the first ten years, Vatel founders focused on creating Campuses in France, in Paris (1981), Lyon (1984) and Nimes (1989) which could be considered as laboratories where our educational convictions were tried and tested.

In the 1990s, our School began to duplicate its model by building on the men and women who share the same vision: preparing the young generations to ensure their futures while supporting the growth of the global hospitality and tourism fields. First in France, when Vatel Bordeaux opened in 1994, and then globally with Bangkok, Mexico and Tunis Alain Sebban, the CEO and founder, describes this movement: “Globalization was taking place. Nevertheless, we were aware that many young people throughout the world did not have the financial means, or even the intention, of coming to France or to Europe to study. Time had come to roll out a local framework, to contribute to the economic development of emerging continents by training their youth.” The next decade confirmed the strength of this project.

New Schools continued to open. In 2011, Vatel celebrated its 30th anniversary, with nearly as many Schools in so many years! During this time, Vatel has trained 25,000 alumni, in all departments related to hotel management as well as in all types of activities related to

Partout, les étudiants sont responsabilisés et mis en situation de management réel, les aînés encadrant les plus jeunes. Tous ont accès aux mêmes outils pédagogiques, comme par exemple le Vatel International Business Game ou la bibliothèque virtuelle Cyberlibris. Tous ont la possibilité d'intégrer le programme Marco Polo qui permet d’effectuer une année sur un autre campus Vatel. Tous construisent progressivement leur projet professionnel.

At this time where large hotel chains have gone global, though they are striving to also keep their “local roots,” Vatel has done exactly the same thing. Curriculum content and quality are the same in all Vatel Campuses throughout the world. Each School has the same curriculum, applies the same rules and shares the same values.

Students, wherever they may be, are empowered and do real managerial tasks, with more advanced students managing younger ones. They all can access the same educations tools, such as the Vatel International Business Game or Cyberlibris, our virtual library.

They all have the same chance to take part in the Marco Polo program which allows them to do an academic year on another Vatel campus. Step by step, they all build their professional projects. C'est dans l'Histoire que l'hospitalité puise ses origines. Déjà au Moyen-âge les jeunes gentilshommes avides de parcourir le monde, les émissaires diplomatiques, les princes logeaient en chemin dans la meilleure demeure du voisinage, les notables des lieux traversés se disputant l'honneur de les recevoir.

Hospitality goes way back in our French history. As of the Middle Ages, young gentlemen roamed around the world, diplomatic emissaries and princes were lodged during their trips in the finest houses in the region; hosting them was considered a high honor, disputed by regional personalities.

Se sont alors profondément ancrées au fil des siècles les valeurs que le monde entier reconnait à l'art de recevoir à la française. Il s'organise autour de trois grands principes : • accueillir dans un décor à la fois prestigieux et confortable, • offrir les mets les plus délicats associés aux meilleurs vins, • assurer un service totalement irréprochable.

Thus as time went by, these values recognized throughout the world, have become deeply rooted into our French Art of Hospitality. This complies with three key principles: • hosting guests in a decor that is both prestigious and comfortable, • offering fine food and serving the best wines to enhance its taste, • making sure that service is completely above reproach.

These are the human values for which we have earned our reputation for excellence. The French Art of Hospitality is mainly founded on satisfying every need of our guests. Wearing a uniform, though it is quite rare in France, is, however, more common in Anglo-Saxon countries. Un nouveau campus

entre Orient et Occident A new Campus between the East and the West L’essor du tourisme en Turquie a convaincu le groupe Vatel d’implanter un campus à Istanbul. A l’image de la mégalopole de 15 millions d’habitants, Vatel Istanbul affirme un caractère résolument international.

“L

a Turquie comptait 13 millions de visiteurs en 2002, 33 millions en 2012 : cette multiplication - presque par trois en dix ans - montre l’énorme potentiel de croissance du tourisme dans notre pays. Il nous manquait un campus Vatel, c’est clair." Elève en Turquie, son pays d’origine, étudiant en France puis aux USA, Ali Doğan Çamak a renoué avec ses racines tout en restant ouvert à la culture internationale. Il a choisi Istanbul pour tenter l’aventure entrepreneuriale.

Ayant convaincu le groupe Vatel de s’engager dans l'installation de ce nouveau campus, Ali Doğan en a ouvert les portes en novembre 2013. Vatel Istanbul prépare au Bachelor's Degree en trois ans. Déjà, le dirigeant nourrit le projet de lancer une "prépa master", dès la rentrée prochaine si possible. "En attendant, la première promotion lancée en 2013 compte des étudiants de différentes nationalités : Turcs, Egyptiens, Bulgares, Saoudiens, Syriens, Belge qui misent sur les opportunités futures de notre pays", explique le Directeur Général.

Les enseignants aussi sont à l’image de cette diversité : Turcs et Grec, Français, Suisses et Américains, intervenant dans différentes Business Schools internationales ou professionnels de l’hôtellerie.

Ali Doğan Çamak a noué un partenariat avec la Chambre de commerce française qui héberge Vatel, ainsi qu’avec des établissements prestigieux, comme Pera Palace, ancien Orient Express, et le Four Seasons, pour l'application pratique. Pour trouver des stages à ses étudiants, le directeur mise sur les liens noués avec les autres campus Vatel et avec les grands groupes comme Accor, Club Med... "Mais Vatel reste à ce jour inconnu ici : il faut faire nos preuves", assuret-il avec humilité. Le bouche-à-oreille, il l’assure en priorité via les réseaux sociaux, les Relations Presse et la publicité en ligne. Mais pas seulement : "Les plus efficaces pour imposer notre marque en Turquie sont nos étudiants eux-mêmes", assure le directeur, en harmonie avec les valeurs du groupe. France, Suisse, Maurice, Israël...

Tous les campus Vatel se sont mobilisés et l’ont aidé à se lancer dans l’aventure. "Oui, Vatel est vraiment une grande famille", conclut, admiratif, Ali Doğan Çamak.

n 2002, Turkey had 13 million visitors; this amount soared to 33 million in 2012. This multiplication, almost a ten-fold increase in ten years, shows the enormous potential that tourism has in our country. All we needed was a Vatel Campus, that’s for sure.”

Raised in Turkey, where he was born, studying in France and then in the USA, Ali Dogan Camak went back to his native country, while remaining open to international cultures. He decided upon Istanbul for his entrepreneurial adventure.

Having convinced Vatel Group to open this new Campus, Ali Dogan opened his School in November, 2013. Vatel Istanbul prepares a threeyear Bachelor’s Degree. This School Director is already thinking about launching a “Master’s Foundation Year” for the next academic year, if possible. “In the meanwhile, the first class of 2013 has students of many different nationalities: Turkish, Egyptian, Bulgarian, Saudi Arabian, Syrian, and Belgian who are convinced of the future opportunities in our country,” explained the School Director. Faculty members also mirror this diversity: Turkish and Greek, Swiss and American, all from different international Business Schools or professionals in hotels and restaurants. Ali Dogan Camak signed a partnership agreement with the French Chamber of Commerce where Vatel Istanbul is located, as well as with prestigious hotel partners such as Pera Palace, formerly the Orient Express, and the Four Seasons, for practical application courses. Vatel à Tel Aviv s’est installée dans de nouveaux locaux pour accueillir, dès sa deuxième année, 130 étudiants. "Nous sommes situés au 5 boulevard Rothschild, à quelques pas de l’Institut Français, dans l’une des plus belles tours de Tel Aviv avec vue sur la mer. La Tour Psagot est au cœur de la ville, proche de nombreux hôtels et dans un quartier prestigieux", se félicite Lionel Bobot, Directeur de l'implantation israélienne.

Vatel Tel Aviv grandit non seulement en espace mais aussi en effectif. De 50 étudiants l’année dernière, ils sont 130 en 2013 à préparer le double diplôme : le Bachelor's Degree in International Hotel Management, titre certifié RNCP par l'état français et la Certification Professionnelle en Hotel Management du Ministère du Tourisme israélien. Equipés de matériels multimédias dernière génération, ces nouveaux locaux pourront accueillir de 250 à 300 étudiants.

Un tout nouvel hôtel 4 étoiles s'ouvrira en 2015 dans un monument emblématique et historique, l'Ancien Couvent de la Visitation à Fourvière, au cœur même de la ville de Lyon. C'est une chance extraordinaire qui est donnée aux étudiants de 4e année de Vatel Lyon : l'équipe professionnelle à l'origine du projet a décidé, en accord avec la direction des études de l'école, de les associer à la création d'un nouvel établissement. Elle leur a confié deux tâches : définir le Mix Marketing de ce nouvel hôtel puis déterminer sa politique de fidélisation. C'est dans un cadre très strict, défini au préalable, que les étudiants travaillent. Organisés par groupe de 6, ils ont à présenter et défendre leurs projets au cours du premier trimestre 2014. Ils poursuivront ensuite leur réflexion sur le projet accepté et l'accompagneront tout au long de leur 5e année d'études. A brand new four-star hotel will be opening in 2015 in a historical and iconic monument, the former Convent de la Visitation in Fourviere, right in the heart of Lyon. This is an extraordinary opportunity for fourth year Vatel students: the professional team at the origin of this project decided, approved by the School’s Head of Studies, to include students in creating a new hotel. Students had two missions: defining the Marketing Mix in this new hotel and its customer loyalty strategy.

Students work in a very strict framework, with a predefined organization. In groups of six, they will be presenting and defending their projects in the first trimester of 2014.

They will then continue to work on the project that was validated and support it during their fifth year of studies. Vatel Planet Mag’ is looking forward to telling you about this next year in this full-scale case study.

Vatel in Tel Aviv has moved to a new facility to host, as of its second year, 130 students. “We are located at 5 Boulevard Rothschild, just a few steps away from the French Institute, in one of the most beautiful towers in Tel Aviv, with a view of the seaside. Psagot Tower is located right in the heart of the city, near many hotels and in one of the most prestigious neighborhoods”, said Lionel Bobot, the Israeli School Director, proudly.

Vatel Tel Aviv has not only increased its space, but also its workforce. Fifty students in 2012, in 2013 they were 130 to prepare the double degree: a Bachelor's Degree in International Hotel Management certified by the French State and the Professional Certification in Hotel Management by the Israeli Minister of Tourism.

Elle parle couramment anglais, allemand, malais, japonais, mandarin et plusieurs dialectes chinois et un peu de français ! Elle est actuellement Directrice de Koessler Consulting, cabinet spécialisé dans le marketing international et le management interculturel. Vatel Buenos Aires students appreciate her courses, as she teaches them how to analyze, assess and develop their potential by using human marketing methods. She teaches them to use their emotional intelligence to tap into all the behavior related skills and qualities that they will need down the road when they become senior executives and lead their teams. Il a également travaillé plusieurs années dans l’hôtellerie de Luxe en France, aux États-Unis et au Canada. A Vatel Québec, il a su développer et maintenir un réseau précieux de partenaires pour les apprentissages pratiques en milieu professionnel ainsi que pour les stages de longue durée. Son bilinguisme, son enthousiasme et la rigueur avec laquelle il applique les règles du savoir-être Vatel en font un exemple pour les étudiants. Toutes ces qualités lui ont valu d’être lauréat lors des Grands Prix 2012 du tourisme Québécois dans la catégorie « Ressources humaines : superviseur touristique».

Diplômée d’un Doctorat en Sciences de Gestion, Rania Labaki est Maître de Conférences à l’Université de Bordeaux. Elle intervient depuis 5 ans à Vatel Bordeaux en tant que coordinatrice et enseignante de la composante Management Financier auprès des étudiants de 5e année. Elle est l’auteur de nombreuses publications académiques et professionnelles qui gravitent autour des thèmes des émotions dans la prise de décision financière, des performances et de la gouvernance des entreprises familiales. Ses travaux lui ont permis de remporter plus d’une dizaine de distinctions en France comme à l’international, dont le prestigieux prix du meilleur papier de recherche décerné par The Family Firm Institute en 2012 en Belgique et le prix du meilleur papier de recherche de l’International Family Enterprise Research Academy en 2011 en Colombie.

De nationalité française, Marc Schaub a orienté sa carrière dans des fonctions rattachées au service restauration d’établissements hôteliers au Royaume Uni, Indonésie, Chine, Bangladesh, Philippines, à Hong-Kong et en Corée du Sud. Riche de ces expériences multiculturelles, il s’est ensuite installé en Thaïlande où il a ouvert le premier hôtel Pullman pour Accor, puis est devenu Directeur Général du 4 étoiles Château de Bangkok, Il a rejoint ensuite Best Western International en tant que Directeur des Opérations Asie et Moyen Orient puis comme Directeur du développement. En cours de pratique professionnelle au restaurant de Vatel Bangkok, les étudiants aiment à écouter ses récits de voyages et expériences professionnelles. Et Marc Schaub lui, se régale à imaginer que plus tard, ce sont ces mêmes étudiants qui raconteront leurs métiers et les différents pays dans lesquels ils auront exercé.

With a Ph.D in Management Sciences, Rania Labaki is a Lecturer at the University of Bordeaux. She has worked for the past five years at Vatel Bordeaux as a coordinator and professor in Financial Management for M5 students. She is the author of many academic and professional publications targeting emotions generated when making financial, performance-related and governance decisions in family owned companies. Her work has allowed her to win several French and international awards, including the prestigious award for the best research paper given by “The Family Firm Institute” in 2012 in Belgium and best research paper given by “The International Family Enterprise Research Academy” in 2011 in Colombia.

Marc Schaub, born in France, has worked during his career in functions related to catering and restaurants in hotels in the United Kingdom, Indonesia, China, Bangladesh, the Philippines, Hong-Kong and in South Korea. With such a wealth of multi-cultural experiences, he then decided to settle in Thailand, where he opened the first Pullman Hotel for Accor, before become the General Manager of the four-star Chateau de Bangkok Hotel. He then started to work with Best Western International as the Asia and Middle East Operations Manager and then as the Development Manager. In professional application courses in the Vatel Bangkok Restaurant, students, love to hear him speak about his trips and professional experiences.

And Marc Schaub loves to think that later on, these very same students will tell stories about the work they have done and the different countries they have also visited.

Yannick Lavaud has been teaching at Vatel Quebec since the Campus opened in 2006.

He formerly worked as the Assistant Elysee Palace Housekeeper as well as the Seminar and Banquet Manager at the Meridien Versailles Montreal. He has an MBA in Hospitality Management. He also worked for several years in the Luxury Hotel sector in France, the United States, and in Canada.

In Vatel Quebec, he has developed and maintained a priceless network of partners for practical application work in hotels as well as for longer internships. Fluent in French and English, his enthusiasm and the way he actually applies all the Vatel know-how and people-oriented skills make him an example students want to follow. All of these qualities were the reason he won the first prize in the 2012 Quebec Tourism Contest in the “Human Resources: Tourism Supervision” category.

Is sont déjà dix fin 2013 ! Dans le précédent numéro de Vatel Planet, nous avions découvert l’association Vatel Alumni et les Vatel Alumni Clubs, structurant un réseau de diplômés en nombre croissant à travers le monde, en leur proposant des moments de convivialité, le plus souvent en soirée.

Il en existe à Paris, Lyon, Nîmes et Bordeaux pour la France, Bruxelles, Londres et Martigny en Europe, Los Angeles aux USA, Shanghai en Chine, Maurice...

Elodie Veilleux, Chargée des Relations avec les diplômés du groupe Vatel, se félicite de voir s’ouvrir des clubs dans des villes où l’activité économique est fortement développée et les diplômés Vatel nombreux, sans forcément que soit implanté un campus Vatel.

C’est par exemple le cas de Shanghai ou encore Londres et New York (prévision d’ouverture en 2014).

“Les diplômés en ressentent le besoin, témoigne Elodie Veilleux ; J'en veux pour exemple ce Parisien qui a pris un poste à Hong Kong et s’est spontanément proposé de créer un Vatel Alumni Club dans cette grande ville en 2014 ! En plus d’agir comme un levier de réseau, les clubs Vatel contribuent à créer une émulation entre expatriés”.

Quelles sont les règles du jeu ? Lorsqu’un club se crée, la soirée de lancement est soutenue par le groupe Vatel. Charge ensuite aux animateurs d’organiser la vie du club de la manière qui convient aux adhérents. A la tête du club, un membre est élu "ambassadeur" par ses pairs.

A Bordeaux, le club a rassemblé 65 diplômés dès la première soirée. Lyon a déjà organisé cinq manifestations en à peine un an. A Maurice, les membres du club se trouvaient aux premières loges de l’inauguration du nouveau campus en octobre 2013 (voir p.16).

Au-delà de la convivialité, le réseau offre aux Vatéliens l’opportunité de faire connaître leur situation, par exemple s’ils se trouvent en recherche de nouvelles opportunités professionnelles. “Même un diplômé qui a quitté le secteur de l’hôtellerie sera le bienvenu, explique Elodie Veilleux ; c’est tout l’intérêt d’un réseau et encore plus d’une "grande famille" puisque tel est bien l’état d’esprit qui caractérise Vatel. J’invite chaque Vatélien à rejoindre le club le plus proche de sa région”.

here were already ten of them at the end of 2013! In our last editions of Vatel Planet, we gave an overview of the Vatel Alumni Association and the Vatel Alumni Clubs, structuring a growing network of alumni throughout the world, and offering them friendly evenings to get together and catch up. Clubs are already open in Paris, Lyon, Nimes and Bordeaux for France, in Brussels, London and Martigny in Europe, Los Angeles in the USA , Shanghai in China, and Mauritius. Elodie Veilleux, in charge of Alumni Relationships for Vatel Group, is pleased to see Clubs opening up in cities with a high economic development where many Vatel alumni work, even when a Vatel Campus isn’t present in that city. This, for example, is the case in Shanghai, London and New York, where a new Club will be opening in 2014.

“Our alumni need this contact”, said Elodie Veilleux. “For example, I have a Parisian alumnus who works in Hong-Kong and who spontaneously proposed to open a Vatel Alumni Club in this huge city in 2014! Not only boost our network and its advantages,Vatel Alumni Clubs contribute to creating emulation between expats.”

What are the rules of the game? When a Club is created, Vatel Group supports the launch evening and event. Then it’s up to the Club Managers to organize their Club in the way the suits their own members. An “Ambassador” is elected by Club members to head the Club. In Bordeaux, this Club already had 65 members on its very first meeting. Lyon has already organized five events in just a year. In Mauritius, Club members will find themselves sitting in the front rows of the unveiling of the new Campus in October, 2013 (see p. 16).

Outside of conviviality, this network gives Vateliens the opportunity of making their situation known to others, for example if they are looking for a job or another professional opportunity. “Even an alumnus who doesn’t work in the Hospitality sector any more will be welcome”, explained Elodie Veilleux. “This is the interest of networking and having a ‘large family circle’ as that’s how Vatel alumni see themselves. I’d like to invite each Vatelien to join the Club in his or her region.”

ous voici au cœur de Westbay, centre de Doha, capitale du Qatar. Dans cet emplacement idéal, le Four Seasons Hotel offre toutes les commodités d’un resort : plage privée, 5 piscines, 232 chambres et leur vue imprenable sur le Golf Arabe, spa et salle de sport dernier cri. Le plus grand des six restaurants, le Nusantao, est dirigé par un Vatélien, Guillaume Crépet, formé à Vatel Lyon et diplômé en 2007. Le restaurant propose une grande diversité de cuisines asiatiques : thaïlandaise, chinoise, japonaise, indienne, indonésienne et orientale, soit un menu composé de 95 plats différents. Une expérience gustative qui dépasse les frontières : tout ce qu’aime Guillaume !

"Nous ne sommes pas moins de 35 nationalités différentes dans l’hôtel et nous recevons des clients du monde entier", explique ce fils d’expatriés, dont les études secondaires se sont déroulées à Maurice. "A la fin de mon cycle secondaire, j’ai cherché un établissement qui puisse m’enseigner les bases de la gestion du tourisme et de l’hôtellerie. Je me suis renseigné sur l’ensemble des écoles et Vatel m’a séduit par son alternance entre théorie et pratique. Avec le recul, je pense que la théorie

reste bien sûr primordiale pour comprendre la base de la gestion d’un établissement et ses enjeux financiers, mais cette base théorique sera mieux appliquée par les étudiants qui souhaitent privilégier des carrières dans la gestion, le marketing ou le revenu management. Pour les futurs cadres opérationnels, la pratique et l’expérience sur le terrain, offrent de mon point de vue le meilleur moyen d'approcher la réalité d’un métier de service où l’on doit développer son sens de l’intuition, son adaptabilité culturelle, avoir l’intelligence des situations pour comprendre une clientèle en attente d'un service discret, personnalisé et de reconnaissance. Chaque groupe hôtelier possède aussi ses propres standards opérationnels qui diffèrent souvent de la théorie et ne peuvent être appris que sur le terrain."

Relever le défi du tsunami Guillaume garde un souvenir marquant de son deuxième stage, qui l’a mis en contact avec le groupe Four Seasons qu’il n’a finalement plus quitté depuis. "Je suis arrivé aux Maldives, au Four Seasons Hotel Kuda Huraa, juste pour sa réouverture après le tsunami de 2004. La plage et le reste de l’île

étaient en ruines, encore jonchés de débris. La reconstruction était loin d’être achevée. La date officielle d’ouverture était prévue deux mois après mon arrivée, ce qui me paraissait être un objectif irréalisable. Et pourtant, nous avons été au rendez-vous ! Les premiers clients sont arrivés sans pouvoir imaginer ce à quoi l'île ressemblait 15 jours auparavant !

Cette expérience m'a appris l'importance du travail d’équipe, de l’organisation et l’attention portée au moindre détail."

Repéré par le groupe, Guillaume effectue un MIT (Manager In Training) au Four Seasons Beverly Wilshire à Los Angeles, en réception et housekeeping. Il est ensuite confirmé au Four Seasons Hotel Doha, en restauration, et promu Directeur du Nusantao fin 2012.

S’il avait un conseil à donner aux étudiants Vatel, c’est de bien choisir leur stage. Quand un employeur recrute un manager ou un assistant, les candidats les plus jeunes seront jugés à partir de ces premières expériences pratiques.

La notoriété des enseignes, la diversité géographique et culturelle, prouveront que tout au long de ses stages, le Vatélien s’est construit une réelle compétence malgré sa jeunesse.

In this idyllic location, the Four Seasons Hotel has all the facilities you would expect in a resort: a private beach, five swimming pools, 232 rooms each with a breathtaking view on the Arabian Golf as well as a state-of-the-art fitness room. The largest of the six restaurants, the Nusantao, is managed by a Vatelien, Guillaume Crepet, a Vatel Lyon 2007 alumnus. This restaurant offers a host of Asian types of cuisine: Thai, Chinese, Japanese, Indian, Indonesian and Middle Eastern food, with a menu composed of 95 different dishes. A tasty gourmet experience that spans borders: just what Guillaume loves!

“Not less than 35 different nationalities work in the hotel and our clients come from the entire world,” explained Guillaume, whose parents were also expats and who studied in high school in Mauritius. “After I finished high school, I started to look for a school where I would be able to learn the basics in tourism and hotel management. I looked into all the different schools in this field, and Vatel, with its mixture of theoretical courses and practical applications, really caught my eye. With hindsight, I think that theoretical aspects of course remain essential to understand how to manage a company and the financial stakes, but these theoretical aspects will be better applied by students who want to work later on in management, marketing or revenue management. For

Sophie Roskam future operation managers, in my opinion, a hands-on approach and experience are the best ways to understand what really goes on in a service-related job where we always have to hone our sense of intuition, cultural adaptability, understand complex situations to understand what guest expect by discreet, personalized service and recognition. Each hotel group has its own operational standards that are often different from theoretical aspects, and they can only be learned by doing.”

Meeting the tsunami challenge Guillaume was really impacted by his second internship, where he was in contact with the Four Seasons group, which he has never left since then. “I arrived in the Maldives, at the Four Seasons Kuda Huraa Hotel to help in its reopening after the 2004 Tsunami. The beach and the rest of the island were devastated, still full of tree trunks and waste.

Construction work was far from being finished. The official date for its reopening was set at two months after my arrival, and I thought this would be impossible.

But we did it! The first guests to arrive couldn’t even image what the island looked like just two weeks before! This experience taught me the importance of teamwork, organization and paying attention to details.”

The group noticed Guillaume and offered him a Manager in Training program (MIT) at the Beverly Wilshire Four Seasons Hotel in Los Angeles, at the Front Desk and in Housekeeping. He then continued at the Doha Four Seasons Hotel in catering and was promoted as the Nusantao General Manager at the end of 2012.

If he had some advice to give to Vatel students, it would be to choose a good internship. When employers recruit managers or assistants, the youngest candidates will be judged according to their first practical experiences. The reputation of hotel brands, geographical and cultural diversity speak for themselves in proving that this Vatelien, in spite of his young age, has built himself a complete skill set.

omment devient-on Directeur général ? C’est, disent ceux qui le sont devenus, l’une des questions qui revient le plus fréquemment dans la bouche des étudiants. Sophie Roskam, Vatélienne et Directrice Générale des chaînes hôtelières Lodges & Moutain Hotels et Hotels & Altitude, peut en témoigner. "J’ai intégré Vatel Paris après un DEUG de langues étrangères appliquées, attirée par les deux "R" attachés à l’école : Réputation et Rigueur. J’ai été marquée par le juste équilibre entre 50% de théorie et 50% de pratique.

Pratique indispensable dans nos métiers si l’on veut être capable un jour de diriger une équipe."

Elle passe d’abord deux ans au sein du Groupe Hilton à Londres, comme Responsable réservations de l’Hôtel Hilton à l’aéroport de Gatwick. Pas vraiment la montagne, mais celle-ci pointe le bout de ses sommets dès 2001 : "J’ai commencé ma carrière à 1 850 mètres au-dessus du niveau de la mer à Courchevel. Je suis devenue Responsable commerciale et service réservations de l’Hôtel 5* Le Lana. J’ai ensuite obtenu mon premier poste de Directrice d’hôtel du New Solarium appartenant au Groupe Lodges & Mountain Hotels. Je l’ai dirigé pendant 4 ans avant de devenir la Directrice commerciale et marketing du groupe."

En 2012, elle gravit une marche supplémentaire en accédant à la direction générale de ces deux enseignes qui rassemblent 380 salariés dans 8 hôtels 3 à 4* en montagne, répartis dans 7 stations des Alpes françaises et autrichiennes.

H

ow do you become a General Manager? This is one of the questions that Vatel students ask the most to those who have become one. Sophie Roskam, a Vatelien and the Lodges & Mountain Hotels and Hotels & Altitude General Manager, can answer this question. “I enrolled in Vatel Paris after a two-year degree in applied foreign languages, because of their “R & D”: Reputation and Discipline. I was attracted by the right balance of 50% of theory and 50% of practical work. And we need those practical applications in our field if we want to manage a team one day.”

She started off with two years in the Hilton Group in London as the Reservations Manager at the Hilton Hotel at the Gatwick Airport. Not really in the mountains, thought she could see the peaks as of 2001: “I started my career at 1,850 meters above sea level, in Courchevel. I was the Sales and Reservations Manager of the five-star hotel, Le Lana.

Then I got my first job as a Hotel Manager at the New Solarium Hotel which is a part of the Lodges & Mountain Hotels Group. I managed it for four years before being appointed Sales and Marketing Manager for the group.” In 2012, she climbed another step by becoming the General Manager of these two brands which include a workforce of 380 in eight different 3 and 4 star hotels in the French and Austrian Alps in seven ski resorts.

“At Vatel, we were a tight-knit group and that is still true today,” insists Andres Tobon Lascano.

l n’a que 30 ans, mais son parcours lui a déjà fait accomplir le tour du monde.

Andrés Tobón Lascano, né à Medellin en Colombie, a obtenu son Master's Degree Vatel Buenos Aires en 2009. Des stages à Berlin, Genève, Bahrein, Beijing en année olympique...

S’il est aujourd’hui devenu Directeur de la Restauration et des Evènements à l’Hôtel Hilton de Mexico City Reforma, c’est au terme d’un périple effectué en Amérique Latine, son continent, sous la houlette du groupe hôtelier leader mondial.

L’itinéraire d’Andrés est étroitement associé à la prestigieuse marque hôtelière.

L’un de ses cadres enseignait à Vatel Buenos Aires. Il attire le jeune homme vers un programme de recrutement et de formation interne au groupe.

Six candidats seulement sont retenus pour l’Amérique Latine, sur 850. Andrés est l’un d’eux !

"Vatel a fait toute la différence avec son enseignement tourné vers les méthodes modernes de travail et sa grande proximité envers les étudiants, comme avec une direction et des professeurs attentifs à nos besoins." Le groupe l’envoie ensuite à Costa Rica, dans le cadre de son Training Graduate Program. Au port d’attache suivant, Trinité-et-Tobago, il se confronte à la négociation avec les représentants du personnel. Après un bref retour au Costa Rica, il rejoint le Mexique, dépêché pour la préouverture du Hampton Inn Ciudad del Carmen. Il gagne ensuite le Hilton Mexico City Reforma. Quelques mois plus tard, le voilà promu au poste de Directeur de la Restauration et évènements. Cet hôtel compte 456 chambres et un immense centre de conventions. C’est le plus grand hôtel Hilton de la capitale mexicaine.

Andres’ career is closely associated with this benchmark hotel group. One of its executives taught at Vatel Buenos Aires. He told this young man about a group recruitment and internal training program. Only six candidates were selected for Latin America, out of a total of

900. And Andres was one of them! “Vatel was the reason why,” the young professional thinks today. “Because of its curriculum based on modern ways of working and its very close relationships with students; both with School staff members and professors who always made sure we received everything we needed.” The Hilton Group then sent him to Costa Rica, in its Graduate Training Program. At his next home away from home, in Trinidad and Tobago, he had to deal with negotiations with employee union representatives.

After coming back to Costa Rica for a short time, off he went to Mexico. He assisted the Manager of a new hotel, before starting to work in his current job. The Mexico City Reforma Hilton Hotel has 456 rooms and a huge convention center. It’s the largest Hilton Hotel in the capital city of Mexico.

’est une étudiante résolument tournée sur le monde qui a posé ses valises en 2012 au Furama Resort de Da Nang, au Vietnam.

Alejandra Otero a d’abord étudié le commerce au Mexique, son pays d’origine, puis le management hôtelier à Vatel Nîmes en France, avec des expériences à Barcelone et à New York, avant le grand saut vers l’Asie. Trois continents, un parcours prometteur !

Alejandra nous accueille au Furama Resort Danang 5*. Elle en est la Responsable Relations Clients et Assistante du Responsable Front Office. Elle aime évoquer ses stages dans différents grands hôtels d’Europe, Annecy ou Menton en France, Barcelone en Espagne pour un stage de fin d’études au service Relations Clients – déjà ! - de l’Hôtel Rey Juan Carlos 5* de Barcelone. Son Master’s Degree Vatel en poche, cet hôtel lui propose d’intégrer l’équipe du Front Office comme "Night Auditor Supervisor”. « Une très belle opportunité qui me permettait de développer mes connaissances opérationnelles et de continuer à appliquer tout ce que j’avais appris à Vatel, note Alejandra. J’ai ensuite eu l’opportunité d’aller à New York en 2012 pour travailler au service clients du mythique Waldorf Astoria 4*, une expérience incroyable ! J’ai travaillé aux côtés des meilleurs experts de l’industrie hôtelière qui m’ont transmis un nombre incalculable de connaissances et de valeurs. Ils m’ont définitivement convaincue que ce métier était une vraie passion et le plus beau du monde. » Puis le Vietnam. Un pays en développement, une autre culture qui lui impose une attention particulière : « Les interactions sociales sont totalement différentes, certains gestes, postures, mimiques ne veulent absolument pas dire la même chose qu’en Europe ou aux Amériques. » Plus exigeant, le management se fait aussi plus subtil et la réussite du travail en équipe n’en acquiert que plus de prix : « J’apprends beaucoup des personnes qui m’entourent au quotidien. Ils sont très assidus, leur service et hospitalité sont authentiques et nous recherchons tous une relation gagnant-gagnant. Ils ne renoncent jamais et m’ont toujours soutenue dans les moments difficiles du choc culturel. » Le Furama Resort Danang a été le premier hôtel 5 étoiles à s’implanter sur cette ville de la côte Est du Vietnam, devenue touristique. Depuis septembre 2012, la jeune femme veille à la qualité du séjour des clients.

Sa mission consiste à s’assurer que tous les services proposés par l’hôtel soient opérationnels et que les clients soient satisfaits. « Nous recevons des présidents, des rois, des célébrités qui attendent de nous un service 5 étoiles », résume-t-elle.

Promue également Assistante du Responsable Front Office, elle supervise en outre la formation et les horaires du personnel, gère les paies, le contrôle des coûts, revenus, budgets, etc.

Avec cette nouvelle fonction, la voilà engagée pour un nouveau bail. « Je souhaite continuer à faire mes armes sur le terrain pour ensuite peut-être accéder à des postes de directions régionales. Mais il y a encore du chemin à parcourir… », confie la jeune responsable.

his student, with her staunch global approach, finally put her suitcases down in 2012 at the Danang Furama Resort in Vietnam.

Alejandra Otero started off by studying at a business school in Mexico, where she was born, then continued with hotel management at Vatel Nimes, in France, with experiences in Barcelona and New York, before the great leap towards Asia. Three continents for promising career!

Alejandra welcomes us at the five-star Furama Resort Danang. She is the Guest Relations Officer and Front Office Management Assistant.

She likes to talk about her various internships in European hotels, in Annecy or Menton in France, Barcelona in Spain, and her final internship in the Guest Relations department - already! - in the fivestar Hotel Rey Juan Carlos in Barcelona. With her Master’s Degree, the hotel gave her a job offer in the Front Office department as the “Night Auditor Supervisor.” “A great opportunity that allowed me to expand my operational knowledge and continue to apply everything that I had learned at Vatel,” said Alejandra. “In 2012 I seized the incredible opportunity to go to New York to work in Guest Relations in the mythical Waldorf Astoria four-star Hotel, an incredible experience! I worked with benchmark personalities in the hospitality industry who passed on a number you can’t even begin to measure of their skills and values. They succeeded in convincing me that this is a fantastic job and the greatest one anyone can have.”

Then came Vietnam. An emerging country, a different culture that requires specific attention: “Social interactions are completely different: some gestures, postures, and facial expressions mean something completely different in Europe or the Americas.” More demanding, management thus becomes more subtle and successful teamwork really deserves being considered as such: “I learn a lot from the people I work with on a daily basis. They’re hard-working and their hospitality and the way they like to serve others is authentic; we’re all looking to set up win-win relationships. I’ve got so much respect for my colleagues that you can say that they’re really a source of inspiration and energy for me. They never give up and they were always there for me when I was undergoing those hard cultural shock moments.”

The Furama Resort Danang was the first five-star hotel in this part of Vietnam, which has since become a tourist site. Since September 2012, this young lady has been in charge of the quality of her hotel guests. Her mission consists in making sure that all services the hotel offers are operational and that her guests are all satisfied. “Our guests include presidents, kings, celebrities who have every right to expect five-star services from us,” she said, in a nutshell. Also promoted as the Front Office Management Assistant, she is in charge of training and work schedules for personnel, payroll, cost-control, revenues, budgets, etc. And with this new function, she’s not ready to leave. “Today I’d like to continue progressing in this field to work perhaps later in a regional management position. But there’s still a way to go!” the young manager added.

Les Jeux Olympiques de Sotchi ont encore accéléré ce développement. Nos équipes, pour beaucoup, se sont formées sur le tas. C’est pourquoi je considère qu’avec leur formation reconnue, les étudiants de Vatel Moscou sont au début d’un long voyage professionnel. Nous les recevons dans le cadre de leur formation pratique, mais je dois dire pour trop peu de temps !

J’aimerais pouvoir les garder trois mois au minimum.

“Tourism has been booming in Moscow and Russia over the last ten years. The Olympic Games in Sochi are going to boost it even farther. Most of our teams were trained on the job. This is why I think that Vatel Moscow students are at the start of a long professional journey thanks to their professional education and training. We welcome them at the Hyatt Hotel for their practical training period, but I must admit, they don’t stay long enough, and I would like them to spend at least three months with us. Students who work here become aware that it is sometimes necessary to ‘roll up their sleeves’ in our sector. Field work is sometimes more important than pure management. Common sense, discipline and a responsible attitude are essential in our line of work. Depending on their personalities, students usually adapt rather easily. We help them grow up and become mature.”

A partner in the 12th Lyon Contemporary Art Biennial, Vatel proved the natural link that exists between contemporary arts, teaching and creativity.

C

’est une première qui ne pouvait passer inaperçue. Pour la première fois dans son histoire, Vatel s’est s’associé à la Biennale Internationale d’Art Contemporain qui s’est déroulée à Lyon du 12 septembre 2013 au 05 janvier 2014.

Fidèle à son concept d’enseignement fondé sur l’expérience, Vatel a voulu démontrer à ses étudiants du monde entier que les arts et l’hôtellerie sont étroitement liés, tout en s’impliquant dans la vie de la cité, à Lyon où se trouve le siège du groupe.

Art de recevoir et Art contemporain Pour Alain Sebban, Président-fondateur de Vatel, soutenir la Biennale est apparu comme une évidence : "Qu’il soit pictural, floral, figuratif, nouveau, déco, contemporain… l’art est présent dans l’hôtellerie sous toutes ses formes et tous ses styles. Par notre concours à exposer l'art contemporain, nous voulons développer la curiosité de nos étudiants, leur ouverture d'esprit, leur culture artistique, leur esprit d'analyse, leur multiculturalisme afin que, à leur tour, ils contribuent à faire rayonner l'art tout au long de leur carrière professionnelle et internationale. » Depuis la création de la Biennale en 1991, son Directeur artistique, Thierry Raspail propose aux commissaires qu’il invite, de réfléchir à un mot clé qui fait ensuite l’objet d’une interprétation artistique.

Après "Histoire" en 1991, "Global" en 1997 ou "Temporalité" en 2003, "Transmission" a été choisi comme fil conducteur de la Biennale 2013.

Un thème qui n’est pas sans rappeler la mission première de toute école : transmettre à ses étudiants savoirs, savoir-faire et savoir-être.

Une grande Biennale Internationale La Biennale d’Art Contemporain accueille des artistes venus du monde entier, s’adressant à un public tout aussi international et expert, qu’aux Lyonnais eux-mêmes. C’est encore une affinité avec Vatel qui fait rayonner "l'art de recevoir" au travers de ses campus présents sur quatre continents, et de son enseignement résolument tourné vers le monde.

his was a first that everyone could not help but notice. For the very first time in its history, Vatel entered into a partnership with the International Contemporary Art Biennial which took place in Lyon from September 12, 2013 to January 5, 2014.

Always drawing on its teaching concept based on experience, Vatel wanted to show its students from the entire world, that art and the world of hospitality are interrelated, while participating in the city of Lyon’s cultural demonstrations, as the Group’s Head Office is located here.

The Art of Hospitality and Contemporary Art Alain Sebban, Vatel Group’s President and Founder, believes supporting the Biennial was self-evident: “Whether it is pictorial, floral, figurative, new or contemporary... Art is present in hotels under many different forms and styles. With our assistance in exhibiting contemporary art, we wanted to develop the curiosity of our students, broaden their horizons, their artistic culture, their analytic spirit and their multiculturalism, so that, later on down the road, they also will contribute to the outreach of Art during their entire professional and international careers.”

Ever since the Biennial began in 1991, its Art Director, Thierry Raspail, proposes to the commissioners he invites, to think about a key word which he then turns in to the object of an artistic interpretation.

After “History” in 1991, “Global” in 1997, or “Temporalities” in 2003, “Transmission” was chosen as the main guiding theme of the 2013 Biennial. A theme that should remind everyone of the main mission that any school must have: conveying knowledge, know-how and proper conduct in all situations to students.

A great International Biennial The Contemporary Art Biennial hosts artists from the entire world while targeting an international and expert public, as well as the inhabitants of Lyon. Once again it is an affinity with Vatel that teaches the “Art of French Hospitality” in all of its Campuses on four different continents and its staunchly global philosophy and curriculum.

Chine The road to China

Vatel ouvrira prochainement trois campus en Chine. Fruit d'une longue analyse, le groupe veut implanter son savoir-faire dans l'Empire du milieu, où l'accueil et l'éducation sont deux valeurs ancestrales. Les besoins de compétences hôtelières sont à la hauteur du développement spectaculaire de l'activité touristique, dont profitent d'abord les Chinois eux-mêmes.

Vatel will soon open three Campuses in China. The result of a careful analysis, the Group wants to entrench its know-how in the Middle Kingdom, where hospitality and education are two ancestral values. Needs for hotel management skill sets are as high as the spectacular increase in tourism, and the first to take advantage of this boom are the Chinese themselves.

ue la Chine devienne le premier pays touristique au monde en chiffre d'affaires, apparaît presque aussi sûr que la Terre est ronde. Son gigantisme, son ouverture internationale et surtout son insatiable marché intérieur la placent hors de portée des leaders traditionnels, tels que France, Espagne et USA. L'immense Empire du Milieu a d'abord de quoi attirer les touristes du monde entier - en plus des hommes d'affaires : un passé culturel qui fait rêver, des paysages somptueux et encore méconnus, des mégalopoles devenues haut-lieu de l'économie et des technologies, sans oublier les plages ni même, désormais, les stations de sport d'hiver.

Mais l'essentiel est ailleurs. Attractive aux yeux du monde, la Chine va surtout bénéficier de son marché intérieur. C'est la clé. Des centaines de millions de Chinois, avides de voyages et de shopping, partent à la découverte de leur propre pays. Son indéniable intérêt, doublé de la difficulté à obtenir des visas de sortie du territoire, contribuera à maintenir ces touristes dans leur pays et dans leur culture, un espace domestique si diversifié qu'il offre à lui seul la pluralité d'un continent.

Cela n'empêche pas l'émergence d'une classe de voyageurs internationaux (lire notre encadré), mais dans des proportions qui n'ont rien de comparable.

ne thing that is about as sure as the fact that the Earth is round is that China will become the world’s largest tourist destination in terms of turnover. Its mere size, its international outlook and above all, its insatiable domestic market places it far above the traditional leaders such as France, Spain and the USA. The immense Middle Kingdom has something to attract tourists from all walks of life - and that’s without even counting on business tourism: a cultural history to dream about, sumptuous and still not very well known scenery, sprawling cities that have become hubs for the economy and technology, without of course forgetting its beaches and now its ski resorts.

This though, is not the main point. Attractive to the rest of the world, China will benefit above all, from its domestic market. This is the key.

Hundreds of millions of Chinese, who love to travel and shop, will leave to see areas in their own country. Its undeniable interest, plus the fact that visas to leave the country remain difficult to obtain, will contribute to keeping these tourists in their country and culture, a domestic area that is so very diversified, that it alone offers the plurality of a continent.

That will not hamper the emergence of an international class of travelers (read our sidebar), but in proportions that will not be comparable at all.

Les groupes français en Chine French groups in China Les leaders français du tourisme ont mis en place des stratégies volontaristes pour conquérir le vaste Empire du Milieu. Accor a inauguré son premier hôtel déposé sous la marque Mei jue, équivalent du Grand Mercure, en 2012 à Shanghaï, alors qu'il possédait déjà 114 hôtels en Chine. « Avec Meij jue, nous voulions nous positionner sur un segment haut de gamme, en raison de la forte demande qui s'exprime sur le marché chinois, mais il était avant tout question de conjuguer la demande identitaire locale avec les standards d'un groupe international », explique Frédéric Fontaine, Directeur Marketing monde de Mercure (JDN, 27 mars 2012). Le pays devrait compter 65 hôtels Mei jue en 2015.

De son côté le Club Med, associé à un partenaire local, le groupe Fosun, prévoit d'ouvrir cinq villages en Chine d'ici à 2015. Guo Guangchang, président de Fosun, juge « le modèle du Club Med, axé sur la famille, particulièrement approprié aux clients chinois » et se félicite réciproquement de voir cette nouvelle clientèle se déployer dans les Clubs Med du monde entier.

French tourism leaders have put in place pro-active strategies to conquer the vast Middle Kingdom. Accor opened its first hotel under the brand name “Mei jue,” which means Grand Mercury, in 2012 in Shanghai, though it already has 114 hotels in China. “With Mei jue, we wanted to be present on an up-market segment, because of the strong demand in the Chinese market, though first and foremost, we were striving to match the local identity demand with standards of an international group,” explained Frederic Fontain, the Mercure Global Marketing Manager (JDN, March 27, 2012). There will be 65 Mei jue Hotels in China by 2015.

Club Med, in a joint partnership with a local business partner, Fosun Group, is planning on opening five villages in China by 2015. Guo Guangchang, Fosun’s CEO, said that “the Club Med model, focusing on family vacations, matches the demand of Chinese customers”, and is also very pleased to see this new Club Med client base expand throughout the world.

2,5 millions de chambres d'hôtel, mais pas assez de personnel compétent

Two and a half million hotel rooms, but not enough qualified personnel

Près de 170 villes chinoises comptent plus d'un million d'habitants.

Le chiffre d'affaires total du tourisme devrait atteindre 300 millions de milliards d'euros en 2015. « La Chine compte entre 2 et 2,5 millions de chambres d’hôtel », précise Ki-Jung Hyun, Directrice de région Asie-Pacifique. Un parc hôtelier pléthorique a poussé de terre, comme champignons après la pluie. Certes surdimensionné à ce jour, il offre néanmoins des débouchés en nombre. Ce qui permet aux étudiants Vatel tentés de plonger dans le grand bain de l’interculturalité d'y effectuer des stages. Leur formation est d'autant plus appréciée que l'hôtellerie de luxe, en fort développement, manque cruellement de compétences. Celles des Français et des Européens en général sont hautement recherchées. « A ce jour, faute de personnel bien formé, les groupes hôteliers mettent en place leurs propres formations, de courte durée, sans diplôme officiel. Ils se heurtent ensuite à un turn over impressionnant », ajoute Ki-Jung.

Tourism related turnover is expected to reach 300 trillion euros in 2015.“China has between 2 and 2.5 million hotel rooms,” added Ki-Jung Hyan, Managing Director of Asia Pacific Region. A plethora of hotels sprung up from the ground just like mushrooms after a rainfall. Though oversized as to date, there are many jobs to be had here. That allows Vatel students who are tempted by an immersion in the great bath of multi-cultural relationships to do their internships. Their curriculum and training is more the all appreciated in the luxury hotel sector, growing by leaps and bounds, as qualified personnel are lacking. In general, French and Europeans are in high demand. “As of today, because of the lack of trained personnel hotel groups are forced to roll out their own training, which is generally short, without any type of diplomas.

They are faced with heavy staff turnover,” added Ki-Jung.

Le groupe Vatel, depuis longtemps déjà, prépare une stratégie à la hauteur des enjeux, tournée vers les Chinois eux-mêmes. « L’éducation en Chine est une priorité absolue, d'ailleurs les familles s’endettent parfois lourdement, jusqu’à vendre leur bien, pour financer des formations souvent coûteuses. Dans la Chine d’aujourd’hui, les jeunes sont encouragés à effectuer leur premier cycle d’études dans le pays, puis le deuxième cycle à l’étranger ou sinon, au sein d’une université qui propose un double diplôme international. Pour des raisons de coût, cette deuxième solution est de plus en plus recherchée » explique KiJung.

Cette nouvelle approche conduit Vatel à préparer une offre complète de formation en Chine, avec le projet d’ouvrir trois campus à la rentrée prochaine. Vatel est déjà fortement présente en Asie du Sud-Est (Philippines, Singapour, Thaïlande, Vietnam). La Chine, voire le Japon et la Corée, ouvrent de nouvelles perspectives en direction cette fois du Nord-Est.

Le Bachelor en quatre ans Les campus Vatel en Chine conduiront les étudiants au Bachelor's Degree en quatre ans, selon le système en vigueur dans le pays. La pédagogie sera conforme à toutes les écoles : une solide formation intellectuelle complétée par la pratique concrète des métiers de l’hôtellerie et du F&B dont les stages, les hôtels et restaurants d’application constituent le socle. Les cours seront donnés en chinois en première année, avec une proportion croissante d’anglais au cours des quatre ans.

Le français, fortement présent dans l’industrie du luxe, sera enseigné lui aussi. L'accueil, auquel la culture chinoise est profondément attentive, se placera au coeur de cette formation comme partout ailleurs à Vatel.

Vatel Group has not waited for this to implement its strategy which matches the stakes, targeting the Chinese themselves.“In China, education is the top priority. Families take out heavy loans and sometimes even sell their assets, to finance often very high-priced education. In today’s China, students are encouraged to do their undergraduate studies in China, and then their post-graduate studies abroad, or if that is not possible, in a university that gives a double international degree. Because of cost constraints, more and more families are choosing this second solution,” explained Ki-Jung.

This new approach has led Vatel to prepare a complete training offer in China, with the project of opening three Campuses for the next student intake. Vatel already has a dense coverage in South-Eastern Asia, with the Philippines, Singapore, Thailand and Vietnam. China or even Japan and South Korea, give us new perspectives, this time targeting the North-East.

A four-year Bachelor’s Degree The Vatel China Campuses will prepare students for their Bachelor's Degree in four years, in compliance with the system currently used in this country. Educational methods will be the same as in all Vatel Schools: excellent theoretical classes combined with hands-on practical application work in the hotel management and F&B areas, based on application hotels and restaurants. Courses will be given in Chinese in M1 year, with more and more English used in the following years. French, which is the main language used in the luxury goods industry, will also be offered.

Welcoming guests, something to which the Chinese culture is deeply attentive, will be in the very heart of this training, as it is elsewhere in Vatel.

Dès qu'il s'agit de compter la population chinoise, les zéros s'accumulent derrière les unités. Ainsi, le nombre des Chinois voyageant dans le monde devrait atteindre les 400 millions en 2018, selon les prévisions les plus fiables. Partir en quête d’Europe et d’Amérique, de Tour Eiffel et de Statue de la Liberté devant lesquelles poser, de vins fins et de spas à tester, attire de plus en plus de Chinois aisés. Contrairement aux touristes d'autres pays d'Asie, ils aiment voyager en couple et de moins en moins en groupe. Pour autant, il faut relativiser la part de l'Europe et des Amériques. Près de 9 sur 10 restent en Asie, et c'est la Thaïlande qui recueille leurs faveurs.

As soon as you start counting the Chinese population, there are all sorts of zeros behind the first figures. Thus, the number of Chinese people traveling throughout the world is expected to reach 400 million in 2018, according to reliable information. More and more well off Chinese people will be seen visiting Europe and the United States, posing in front of the Eiffel Tower and the Statue of Liberty, before trying vintage wines and relaxing at spas. Contrary to many other Asian tourists, they prefer to travel as a couple, rather than in a group. Nevertheless, the European and American hopes for this market must be put into perspective. Nearly nine out of ten Chinese visitors will remain in Asia, and Thailand will remain the most visited country.
