If indeed the numbers and distances of the night sky are so large that they become nearly meaningless, then let us find the meaning under our feet.” — Paul Bogard, The End of Night: Searching for Natural Darkness in an Age of Artificial Light When was the last time you looked at the stars? I mean, really spent a significant amount of time just looking up a dark sky. Chances are…it has been a really long time. Further to that point, when was the last time you could actually see stars? That question is actually far more important. We rush about all day and then as night descends, we are quick to turn on the outdoor lights and flood the skies with illumination, thinking we are securing our families from the terrors of the dark. But, in reality, all this progress may be doing more harm than good. Until recently, I had no idea light pollution existed. I spent most of my childhood sleeping with the lamp on and to this day, I still need a nightlight. But what happens when we lose our connection to the heavens? Light pollution is defined as the “brightening of the night sky caused by street lights and other man-made sources, which has a disruptive effect on natural cycles and inhibits the observation of stars and planets.” With the current levels

of observed light pollution, an entire generation is growing up disconnected from the night sky. Our ancestors used the constellations to navigate, to hope and to ponder what lies beyond. As we light up the skies, are those desires being lost to the brightness of artificial light? The New World Atlas of Artificial Sky Brightness lists Central Florida as one of their red hot zones with little to no viewing capability of the Milky Way. In fact, according to the Washington Post “more than one-third of humanity can no longer see the Milky Way, even on the clearest night. Light pollution has reached such levels in some countries that people never experience a true night sky, because it is perpetually masked by the glow of an artificial twilight.” So in essence, as we lose the night sky, we lose yet another valuable connection. We know longer experience that feeling of true wonder as we gaze upwards into a galaxy of twinkling stars. We once were connected to the power of a dark sky, using this time as a way to understand our humanity and contemplate what might lie between us and another universe. This feeling of exploration and the unknown fueled science and innovation, but as we pollute the night sky, does this ultimately sever our connection to dream? Veterinarian of the Month “Doc” Mary McDaniel, Lake Alfred Animal Hospital, recently served as the chief veterinarian for the 2011 AKC/Eukanuba National Championship. Before becoming a 1998 University of Florida graduate, McDaniel worked as a veterinary pharmaceutical representative. Her love for dogs traces back to when she was young and showed them. She’s always been fascinated with breeding dogs and is the only veterinarian in Florida endorsed by the ICSB, an international organization known for its very stringent breeding procedures. My Super Summer Salad Everyone can agree that it has been H-O-T hot this summer! In the mornings, I start to walk my first dog by 7:30 am and by the time I get to my third four-legged baby, I’m dripping with sweat. It’s only 8:30 am and it feels like noontime! When the temperature feels this hot and heavy outside, it’s hard to also eat lots of heavy meals. In our household, the hotter it gets, the lighter the meals get. Plus, we prefer to grill as much food outside as possible so not to create a hot kitchen from using the stovetop and oven too much. The air-conditioners are already working hard enough to keep our homes cool, let’s help them out a little by creating our cooking heat outside rather than inside. This month we have created a lighter fare magazine feature that also focuses on salads; great for lunch and dinner. I wanted to share one of my favorite salad recipes. It’s so easy to make, it will keep you full but not over-stuffed and is high in protein, low carbs and lower in fat. The Buffalo Chicken Salad, which is made with a grilled ground chicken (or turkey) patty over a bed of lettuce. LET’S GO SHOPPING… FIRST THE MEAT: I buy either ground chicken or ground turkey – honestly whichever is the best price at the grocery store. I prefer the regular ground that has white and dark meat in it so the patty has a little more fat content to help keep it moist on the grill. The containers are either 16 oz. or 20 oz. THEN THE VEGGIES: Scallions, Shredded Carrots, Celery and Lettuce. Get whichever lettuce or lettuce blend you prefer. Remember that iceberg lettuce doesn’t have nutrients, so the greener the better for you. My personal favorites are romaine, spinach, and spring mix greens. The easiest is to grab a pre-washed bag of lettuce, if it’s on BOGO that’s even better! IMPORTANT COMPONENTS: Buy a really good Blue Cheese dressing. I personally buy mine from the produce section: Marie’s, Marzetti, and Boathouse. Higher quality, less ingredients, less sodium, less preservatives – these are items that I look for. Buy crumbled blue cheese. I buy mine from the cases around the deli not from the regular cheese aisle. Most important, Frank’s Red Hot Sauce – the best! Prep and season the meat: take a flexible plastic cutting board, open the meat container and place the meat on the board in one solid piece. Season one side generously with dried oregano, dried basil, dried parsley. Sprinkle meat with garlic powder, kosher salt and ground

pepper. Then take a kitchen knife and cut the meat in half for two perfect portions. Take each half of the meat, gently fold the ingredients into the meat but do not over mash it when forming into a ball. Create two equal balls. Place both balls of meat back onto the cutting board; gently press each into thin giant flat patties. Then pop the meat patties, while still on the board, into the freezer for about 15 minutes to harden. Don’t hard freeze. Just enough that the patties stay together. Pre-heat and clean your grill while the patties are in the freezer. GRILLING THE MEAT: make sure that you spray the grates before putting the meat onto the grill. Place the frozen patties onto the hot grill. Do Not flip them until the patty releases easily. Only turn once – do not be a meat flipper! This will cause the patty to over cook. Since the patties are thin, it will probably only take about 6-8 minutes per side. Do not over cook or they will be dry. If cooked correctly, patties are moist and tender. LET’S MAKE THE SALAD BASE: On each dinner plate, place greens down first to cover the entire plate. If using the bag lettuce, half the bag per plate. Add chopped scallions, chopped celery, shredded carrots – all to your taste. Drizzle Frank’s Hot Sauce across the salad, drizzle the blue cheese dressing across the salad. Place the cooked patty on top of the bed of lettuce and then sprinkle a serving of the crumbled blue cheese across the top. Now it’s time to enjoy! For those that prefer extra spicy, like someone in my household, while the patty is still on the grill you can add Frank’s Hot Sauce to the top and it cooks onto the meat. This same person, also LOVES blue cheese crumbles so before their patty is pulled off the grill, he adds an extra topping of blue cheese crumbles onto the patty to get all melty and happy before adding it to his salad plate. Now, of course this salad has a little more fat and calories than my original salad has, but either way it is delish! Hope this salad recipe has helped to spark an idea of your own. Salads are a fun and easy way to change and lighten up your dinner. So when it’s super hot and heavy outside make a super salad to keep you cooler and lighter on the inside.

T&T MAG: So the start of the event came from the idea of bringing a blues festival to Polk County? RP: Yeah. The first year we did this we didn’t do it this way with a charity, or have sponsors. T&T MAG: What was the first year of the event? How long was it from when you first spoke of it? DL: 2014 was the first one. RP: It was probably a year or more. The first one was in August of 2014 and that was held at Jessie’s Lounge in Winter Haven.

W

inter Haven’s Roy Powers and David Lehman want to share more than just a case of the blues with you - they’d like to share a whole day’s worth. In addition to their love of enduring and soulful tunes that boast expressive three-chord progressions, their plight comes with charitable intentions. The founders of the 3rd Annual Central Florida Dawg Dayz Blues Fest, set for August 13, 2016 at Tanner’s Lakeside in Winter Haven, have found a great fit with a cause that is near and dear to their hearts by partnering with the Citrus Center Boys and Girls Clubs, who are beneficiaries of the funds raised at the event. With 7 blues acts scheduled inside, and an open jam and more hosted by Jim and Judy’s Big Ass Jam on the outdoor, lakeside tiki deck, the day-long celebration hopes to bring Central Florida blues lovers together for a great cause and a fun time. The passion with which they spoke about the event and its evolution, the people involved, and ultimately

the music, was evident as Powers and Lehman sat down with Today and Tonight Magazine. T&T MAG: Would you share some of the history of the event? How did you meet each other? David Lehman: Roy and I met quite by accident, and it turned out to be for a good reason. I was on my way to see Tab Benoit in Tampa, and happened to stop into The Blue Room on my way. I ran into Roy and this is what it turned out to be. Roy Powers: Yeah, I have a blues band, The Last Exit Blues Band, and that’s who he saw playing when he stopped in. We got to talking few weeks later about, “Wouldn’t it be cool if we could bring a blues festival to town? DL: It was a pipe dream. RP: Yeah, it was a pipe dream. We thought, “No, we couldn’t do that”, and then thought, “Yeah, we can do that”, and that’s really how it got started.

T&T MAG: What was the response to that first event? DL: The response was overwhelming! RP: I knew there was a contingency here that loved the blues that weren’t getting anywhere. I was the only blues-type band that was playing in the area so I had to bring in other type acts. I brought in a good, more middle of the road rock ‘n roll band, they played a lot of blues music that day, just to fill that gap. DL: That was Brian Everhart. RP: Brian Everhart, who’s since passed, and the Joe Willy Band, we used his band because locally he had a big following, so he brought his people there which was good. I had the Jug Brothers who play all around... DL: It’s the third year in a row they’re opening. RP: They open up for us now, as far as I’m concerned. DL: They bring a nice little crowd in with them. RP: And then we had my band, the Last Exit Blues Band, and then we had Soul 2 Earth, which is another big draw here in Polk County. And I brought in Beautiful Bobby Blackmon from Lake County, he was the headliner, with his band, called the B3 band. T&T MAG: So after the success of the first year, you realized you should do it again? DL: We knew we were going to need a larger venue, and we knew we were going to involve a charity. I turned to Citrus Center Boys and Girls Club because I’ve been with the Smoke on the Water event for years. T&T MAG: And that’s held at the Boys and Girls Club and benefits them also, correct? DL: Yes. And my partner, Theresa Velasco, she’s been very supportive of me and of this Blues Fest

event, has been there through the ups and downs of it all, and her granddaughter attends the Boys and Girls Club. T&T MAG: So it becomes very personal then. RP: Yes. T&T MAG: And, they agreed to be the recipient and work with you. DL: Raising money for the Boys and Girls Club is our primary goal. Secondary is to promote the blues genre of music, and thirdly is promote local music. You can’t try to support hanging on to the blues without supporting and paying the local talent, and I think for the one hour set that we ask people to play we’re extremely generous. We’re able to be generous with the talent and also help the charity. RP: We were so successful the first year that we wanted to make it a charitable event, which is why we needed the bigger venue and ended up at Tanners. DL: We’d really like to thank Tanners Lakeside and all of the sponsors of the event, and to thank Curtis Reddick, the Executive Director of Citrus Center Boys and Girls Club and to all of the board members for allowing us do the event. Blue Rooster T&T MAG: What does the lineup look like for the fest? RP: We have some great acts coming on. We mentioned the Jug Brothers are opening the event. They’ll be followed by The Blue Roosters, The Volts, Soul 2 Earth, the Steve Arvey Band, The Lauren Mitchell Band and BB King’s All-Star Blues Band featuring Andrew Williams. Outside we have Jim and Judy’s Big Ass Jam, Eddie Riddle and The Funk Monkeys. All jammers are welcome to play. At the sponsor party, which is held the night before, also at Tanners, my band, The Last Exit Blues Band is playing. T&T MAG: That sounds great. And there’s an auction? RP: Yes, we have a guitar. Big Tips My wife used to have really nice tips. Several years ago, when she was furthering her education, she worked part-time as a waitress, and she used to get some pretty decent tips from the patrons. Some days, she would come home, and I was amazed at the size of her tips. And of course, like any guy, I loved it when my wife had big tips. I was thrilled about her tips. I’d tell my friends about her big tips, and they’d run right over to the house, and she would show them her tips. They must have seen bigger tips elsewhere, because they always seemed so disappointed when she’d whip her tips out. They’d be like, “That’s all you’re talking about”, then leave, apparently disappointed. Even though she has a better paying job now, I do miss seeing those tips. On a really good night, she’d come home and get her tips out, and I would just stare at them. During these tough economic times, it’s important to remember that a lot of people depend on tips. Money is tight everywhere, but it doesn’t mean you should tip less. Not to blow my own horn (I’m more of a harmonica man anyway), but I have always been one to tip generously. Servers at restaurants don’t always get paid great wages, so the tips help to supplement their income. When I encounter a server who is polite, helpful, and attentive, my wife and I are more than happy to part with a little more of our money.

My wife has noticed that I will give a bigger tip to a waitress if I notice that she has a tattoo. I never realized I did this, but she now calls it “Tip for Tat”. Scientific studies have shown that men give women bigger tips if the women have bigger…tops. It’s a type of “survival of the fittest”. The healthier looking a woman is, the better the tips will be. This is called being in “Tip Top Shape”. Sometimes, just for fun, I leave two dollar bills as the tip. It’s a little odd, but then so am I…so it’s not such a stretch for me. When my wife was a server, she had a customer who would leave her tips where the bills were folded into some kind of origami. I actually think that may be a good way to save money. We never spent those tips… they’re still folded in a drawer somewhere. Maybe if banks gave you cash folded in origami shapes, people would save more. Exhibition: A Sum of its Parts – Aug 1 to Sept 17. This year marks Polk Museum of Art’s 50th anniversary! When founded in 1966, the Polk Public Museum, as it was called, owned a broadly diverse permanent collection that included everything from petrified dinosaur teeth to homemade dolls. The vision for the permanent collection shifted in the early 1980s when the museum revised its mission to become exclusively an art museum. As it became the Polk Museum of Art, its collecting focus accordingly narrowed to only include works of fine art. Currently, the museum’s permanent collection includes approximately 2,300 art objects ranging from prehistoric artifacts to 21st century digital prints. Every week I get many emails with details about the current trends in country music. One of the emails that I get is from Billboard. The Billboard charts tabulate the relative weekly popularity of songs or albums in the United States and elsewhere. In the country music issue every week, there is a part of it that devotes itself to the “Texas Charts.” I always found this chart intriguing. Take for example, Pat Green. Pat dominated “Texas Charts” for years until we finally heard him on Country Radio and on the Billboard Country Music Charts. So what is this Texas Country and why are many of my friends turning to it for their listening needs? According to Wikipedia “Texas country music (more popularly known just as Texas country or Texas music) is a rapidly growing subgenre of American country music. Texas country is known for fusing traditionalist root sounds with the outspoken, care-free views of outlaw country. Texas country blends these subgenres by featuring straightforward, truthful lyrics, a “take it or leave it” approach, a “common working man” theme, comical, witty undertones, intense live performances, and loyal fanbases. These often combine with stripped down music, increasing the intimate connection between a singer and audience.” If someone were to ask me what I thought country music was, that quote would be my definition. My friend Brad and I just got out of the woods last hunting season to grab a bite to eat before our afternoon hunt. Brad picked up his phone and just started playing this guy named Cody Jinks. I was instantly intrigued. I heard a traditional sounding voice, with traditional sounding instruments, but using current songwriting techniques. It was very

similar to Chris Stapleton. I asked Brad if he knew who Chris was, he didn’t. He immediately downloaded his album once I suggested it. (Brad knows that I’m not going to pitch junk to him). In turn, I immediately downloaded one of Cody’s albums. It was a great trade. Cody is another example of an artist who has been on the Texas Charts for some time now. Historically, Texas radio is known for not only playing Nashville country… but also mixing in Texas country, artists who are from Texas. You will hear well known artists such as George Strait, Miranda Lambert and Kacey Musgraves more than you do anywhere else. However, names such as Aaron Watson, Kevin Fowler, Bruce Robison, and Randy Rogers Band are also common names IN Texas. The latest Texas breakout to make it into Nashville and onto country radio is Granger Smith. Granger has released seven studio albums and has been around Texas Country a long time…but he’s a new name to the common radio listener. His “first” national song was last year, “Backroads Song” scored his first Billboard Country Number One, and there’s no slowing him down. His current single is entitled “If The Boot Fits” and it’s steadily climbing up the Billboard Country Chart. Google Texas Country…see what names pop up. Give them a listen!
