Letter From the Publisher My favorite time of year is here again! I truly enjoy my morning jogs in the early mornings during the fall. It is much more windy and even the air smells different. During this time, I like to wander off and go window shopping, daze thinking about the change or color on the leaves and start preparing for the upcoming festivities. This is also when we start decorating for Halloween and getting ready for our Thanksgiving gathering. On Halloween night, we like to take off on our golf cart and gather with a few friends and watch the kiddos hunt down those cavity picking candies, haha. We then get together and have some treats and vote for our favorite costumes. It really is a lot of fun! Once this night of fright is over, the holidays are knocking on our doors! For a few years now we have been celebrating Thanksgiving a week in advance. Because the holidays are hard to bring everyone together with all the extended families and countless of friends, we do it a bit different. We gather a week early and celebrate together. By doing this, everyone will make it to our home because it is not on a day where everyone has different plans and I do not like to hop from one home to another on these festive days. On the actual night of Thanksgiving, we are usually never home. We like to travel and spent it at our mountain home. There we make plans and go to a different restaurant every year. The day after Thanksgiving we go to the nearest Christmas tree farm and chop down our tree. Sometimes, we get two and bring one back to our Florida home. It really is a lot of fun and the kids love it! I want to wish you a safe Halloween and a Happy Thanksgiving!

CHICK-FIL-A ADDS A CHEESY CLASSIC TO MENU NATIONWIDE Mac & Cheese launches as first new side since 2016 along with new Frosted Caramel Coffee seasonal treat We admit it, we’re a little cheesy. Starting today we’re going to be a lot cheesier as Mac & Cheese is now available nationwide as a side option with any lunch, dinner, Kid’s Meal or catering order at Chick-fil-A. Participating restaurants across the country will also begin offering Frosted Caramel Coffee, a new seasonal, sweet treat. The new Mac & Cheese - the first permanent side addition to the menu since 2016 - is a classic macaroni and cheese recipe, featuring a special blend of cheeses including cheddar, parmesan and Romano. It is baked in restaurant each day. “Mac & Cheese is the quintessential comfort food, and something we are so excited to offer our guests at Chick-fil-A. We think it’s the perfect pairing with our Original Chicken Sandwich, nuggets and our grilled chicken offerings, but it’s also great on its own as a snack,” said Amanda Norris, executive director of menu and packaging. “Mac & Cheese is also available on our catering menu as a quick pick-up for a larger gathering. 3 lbs of chicken thighs 2 limes 3 tablespoons of garlic salt (I use Lawry’s brand) 1 can of tomato sauce 1 cup of water 1 cup of wine 1 Goya sazon con azafran 1 teaspoon of oregano a dash of cumin 2 bay leafs 1 teaspoon of paprika black pepper 1/4 cup olive oil 1 onion minced

1 green pepper minced 1 red pepper minced 1 can of pimienton minced with juices 1 tablespoon of Manzanilla Spanish green olives stuffed with minced pimienton plus 1 handful whole 1 tablespoon of olive juice 6 potatoes peeled and cut in half 5 garlic cloves 1 tablespoon of parsley 1 chicken boullion

Directions: Season chicken with lime, garlic and garlic salt. Heat olive oil and add chicken. Sauce chicken for 5 minutes or until browned. Add onion, peppers, garlic, parsley and sauce for 3 minutes. Add olives, olive juice, pimienton and the juices, tomato sauce, water, wine and stir. Add oregano, cumin, bay leaves, paprika, Sazon con Azafran, pepper and additional garlic salt. Cook for 20 minutes. Add the potatoes and cook on medium/low heat for about 30 minutes or until potatoes and tender.

14 oz bag of Great Northern Beans 8 cups of water medium onion diced half of a red pepper diced half of a green pepper diced 3 garlic cloves 1/4 cup of olive oil plus a tablespoon 2 chorizo caseros sliced in 1/4 in slices 1 cup of a ham steak or hickory smoked pork chops (I use Smithfield Boneless Pork Chops) • 1/4 teaspoon of oregano • a dash of cumin

1 tablespoon of garlic salt (I use Lawry’s brand) 1 teaspoon of paprika 2 bay leaves black pepper 1 Goya sazon con azafran 1 Goya salon con culantro y achiote 2 potatoes 1 malanga 1 cup of calabaza cut in big cubes 2 whole carrots sliced in about 1/4 inch

Directions: Wash beans and soak them in 8 cups of water for at least 2 hours. In medium/high heat boil beans for about 30 minutes. In a large pan heat olive oil. Add onion, peppers, garlic and sauce for 3 minutes. Add chorizo, ham, oregano, cumin, paprika, garlic salt, black pepper, bay leaves, sazon con azafran and sauce for 2 more minutes. Add the chorizo and ham saute to the beans and stir. Add the potatoes, malanga, calabaza and carrots. Cook on low for about 30 minutes and stir. Smash some of the pieces of malanga, potatoes and calabaza to give it a thicker consistency and cook on low for about 10 more minutes. Repeat this process until it has the consistency you want. Turn off the heat and add the tablespoon of olive oil and stir.

IS HIRING AN ATTRACTIVE NANNY A BIG MISTAKE? by Florence Romano A lot of people out there will tell you that hiring an attractive nanny is a big mistake. Here’s why they’re wrong. If you Google “hot nanny,” you’ll find yourself with articles titled “Listen to science, don’t hire a hot nanny!” and “Hot Nanny— OK or No Way?” From the pages of results, it’s clear that many people believe that hot nannies are to be avoided like the plague. But are they really? Read on to learn why it’s OK to hire a nanny, and the single most important thing to consider before doing so.

The Push Back While Hot Nanny Phobia still exists, some new voices are joining the conversation as proponents of hiring attractive nannies. One Scary Mommy blogger shared her opinion on the matter, saying that she would “totally hire a hot nanny.” Author Ashley Austrew went on to cite “regressive and sexist” beliefs that suggest attractive women “can’t be trusted to keep their head down and do their job” as her reasoning. This is an excellent point. Women have been fighting for workplace equality for far too long, and fair treatment should extend beyond the corporate office!

DEALING WITH TRIGGERS:

PETS

A variety of things in the environment can make asthma or allergy symptoms worse. These are called “triggers.” Your doctor can help you figure out what your child’s triggers are. Being around animals can be a trigger for many kids. WHY ARE PETS A TRIGGER? Pets have a protein in their saliva (spit), urine (pee), or dander (tiny flakes of dead skin) that can set off a person’s asthma or allergy symptoms. HOW CAN I HELP MY CHILD DEAL WITH IT? If you think being around a pet is making your child’s symptoms worse, have your child tested for allergies. If your child has an animal allergy, you’ll have to decide whether to keep your pet or find it a new home. The best course is to remove the pet from your home, though this isn’t usually

the easiest or happiest solution. Your child, other kids in the family, and even adults may have a tough time with this decision. In some cases, your doctor may say it’s OK to keep a pet if your child takes medicine or gets allergy shots. If so, you’ll still need to limit your child’s exposure to the animal. HERE ARE SOME TIPS: • Keep pets out of your child’s bedroom and playroom. • Encourage your child not to hug or kiss the animal. • Vacuum and dust regularly and avoid rugs and wall-to-wall carpeting, especially in your child’s bedroom. • Have someone other than your child wash or brush your pet every week. Bathing your animal weekly may help reduce the amount of dander it spreads in the home. • If you have a cat, keep your child away from the litter box, and place the box away from air vents. • Encourage everyone in the

family wash their hands after playing with your pet. • If you have a pet that lives in a cage, keep it in a room that your child doesn’t spend time in regularly. Also, have someone other than your child clean the cage daily. Let teachers know about your child’s allergies if there’s a caged animal in the classroom. • Consider buying an air cleaner with a HEPA (high efficiency particulate air) filter for your child’s bedroom or playroom. Central air filtration systems are also an option, but are much more expensive. • Sometimes, such measures may not be enough. Because animal allergens are airborne, heating and ventilation systems will spread allergens throughout the house, even if the pet is kept out of bedrooms. WHAT IF WE CAN’T KEEP OUR PET? If your child still has symptoms after taking medicines, including allergy shots, or needs a bunch of medicines to be around your pet,

your only choice might be to find a new home for your pet. If so, be sure to discuss this with your child. Reassure your child that this isn’t his or her “fault” — and make sure siblings don’t blame the child. Losing a pet, even to a friend’s home, can be hard for everyone in the family. After a pet is removed from the home, it can take several months before dander is totally gone. When going to a house with a pet, your child should first take any prescribed allergy medicine and (as always) bring along quick-relief medicine (also called rescue or fast-acting medicine). www.kidshealth.org

HOW DO YOU FEEL THE DENTAL INDUSTRY HAS EVOLVED IN THE PAST TEN YEARS? To start, I believe technology has evolved very much in the dental industry over the last 10 years. The digitalization of x-rays, the introduction of 3D x-rays (Cone Bean CT), and the development of digital impressions are among the latest technologies that the field of dentistry utilize today. For practitioners like me, all these tools make dentistry more enjoyable than what it used to be half a century ago when many people would fear us because of the intimidation of the armamentarium along. Furthermore, dental materials have come a long way: stronger porcelains are being developed with the esthetics of almost natural teeth, making smiles more authentic and making patients happier. Personally, being exposed to all these new technologies over the last ten years have given me much more experience, enriching my knowledge in the field. Stopping the Bottle Many toddlers become attached to their bottles. Besides providing nourishment, bottles also mean comfort and security. It’s important for parents to start weaning babies from bottles around the end of the first year and start getting them comfortable drinking from cups. The longer parents wait to start the transition, the more attached kids become to their bottles and the harder it can be to break the bottle habit. Longer bottle use may lead to cavities or cause your child to drink more milk than he or she needs. Switching from bottle to cup can be challenging, but these tips can make the change easier for parents and kids. HOW SHOULD I START THE SWITCH? Most doctors recommend introducing a cup around the time a baby is 6 months old. In the beginning, much of what you serve in a cup will end up on the floor or on your baby. But by 12 months of age, most babies have the coordination and hand skills needed to hold a cup and drink from it. Age 1 is also when doctors recommend switching from formula to cow’s milk. It can be a natural transition to offer milk in a cup rather than a bottle. If you’re still breastfeeding, you can continue feeding your baby breast milk, but you may want to do so by offering it in a cup. TIPS TO TRY Instead of cutting out bottles all at once, try dropping them from the feeding schedule over time. For example, if your baby usually drinks three bottles each day, start by eliminating the morning bottle. Instead of giving a bottle right away, bring your baby to the table and after the feeding has started, offer milk from a cup. You might encourage your baby by saying something like “you’re a big boy now and can use a cup like mommy.” As you try to stop the morning bottle, keep offering the afternoon and evening bottles for about a week. That way, if your child asks for the bottle you can say that one is coming later. The next week, stop another bottle feeding and provide milk in a cup instead. Try to do this when your baby is sitting at the table in a high chair. Generally, the last bottle to stop should be the nighttime bottle. That bottle tends to be a part of the bedtime routine and is the one that most provides comfort to babies. Instead of the bottle, try offering a cup of milk with your child’s dinner and continue with the rest of your nighttime tasks, like a bath, bedtime story, or teeth brushing. OTHER TIPS TO KEEP IN MIND: Spill-proof cups that have spouts designed just for babies (“sippy cups”) can help ease the move from the bottle. Dentists recommend sippy cups with a hard spout or a straw, rather than ones with soft spouts. When your child does use the cup, offer plenty of praise. If grandma is around, for example, you might say, “See, Emma is such a big girl she drinks milk in a cup!” If you keep getting asked for a bottle, find out what your child really needs or wants and offer that instead. If your baby is thirsty or hungry, provide nourishment in a cup or on a plate. If it’s comfort, offer hugs, and if your little one is bored, sit down and play! As you wean your baby from the bottle, try diluting the milk in the bottle with water. For the first few days, fill half of it with water and half of it with milk. Then slowly add more water until the entire bottle is water. By that time, it’s likely that your child will lose interest and be asking for the yummy milk that comes in a cup! Get rid of the bottles or put them out of sight. If you have problems or concerns about stopping the bottle, talk with your child’s doctor. www.kidshealth.org

THANKSGIVING

Green Bean and Cauliflower Casserole Ingredients 1 pound fresh cauliflowerets, cut into 1-inch pieces 1 pound fresh green beans, trimmed and cut into 2-inch pieces 4 teaspoons olive oil, divided 1 cup panko (Japanese) bread crumbs 1 cup french-fried onions, crumbled 2 tablespoons butter 8 ounces thinly sliced fresh mushrooms 1 shallot, finely chopped 2 garlic cloves, minced 1/4 cup all-purpose flour 1/2 cup dry vermouth or reduced-sodium chicken broth 1-1/2 cups reduced-sodium chicken broth 1 teaspoon salt 1 teaspoon dried thyme 1/2 teaspoon pepper 1/4 teaspoon ground nutmeg 1/2 cup cubed fully cooked ham 1/2 cup sour cream 1 cup plain Greek yogurt

Cranberry Sauce Ingredients 1 cup (200 g) sugar 1 cup (250 mL) water 4 cups (1 12-oz package) fresh or frozen cranberries Optional Pecans, orange zest, raisins, currants, blueberries, cinnamon, nutmeg, allspice.

Instructions Preheat oven to 375°. In a Dutch oven, bring 12 cups water to a boil. Add cauliflower and beans; cook, uncovered, just until beans turn bright green, 1-2 minutes. Drain and immediately drop into ice water. Drain and pat dry.

You can also add raisins or currants, or even blueberries for added sweetness. You can also add holiday spices such as cinnamon, nutmeg, or allspice. If adding spices, start with a pinch of each and add more to your taste.

Instructions Rinse cranberries: Place the cranberries in a colander and rinse them. Pick out and discard any damaged or bruised cranberries. Boil water with sugar: Put the water and sugar in a medium saucepan on high heat and bring to a boil. Stir to dissolve the sugar. Add cranberries, cook until they burst: Add the cranberries to the pot and return to a boil. Lower the heat and simmer for 10 minutes or until most of the cranberries have burst. Stir in mix-ins if using: Once the cranberries have burst you can leave the cranberry sauce as is, or dress it up with other ingredients. We like to mix in a half a cup of chopped pecans a pinch or two of orange zest.

In a large skillet, heat 1 teaspoon oil over medium-high heat. Add bread crumbs; cook and stir until lightly browned, 2-3 minutes. Stir in french-fried onions; set aside. In the same skillet, heat butter and remaining oil over medium heat. Add mushrooms and shallot; cook and stir until tender, 8-10 minutes. Add garlic; cook 1 minute longer. Stir in flour until blended; gradually whisk in vermouth; cook, stirring until most of the liquid is gone. Whisk in broth and seasonings. Stirring constantly, bring to a boil; cook and stir until thickened, 6-8 minutes. Remove from heat; stir in yogurt, sour cream, ham and reserved vegetables. Transfer to a greased 13x9-in. baking dish. Bake, uncovered, until bubbly, 30-40 minutes. Sprinkle with bread crumb mixture before serving. FALL 19

Let cool: Remove the pot from heat. Let cool completely at room temperature, then transfer to a bowl to chill in the refrigerator. Note that the cranberry sauce will continue to thicken as it cools. NOTE: The recipe calls for a cup of water. You can easily substitute that with 1/2 cup of orange juice 1/2 cup of water if you want to increase the orange note in the sauce (cranberries and oranges play well together!) You can also reduce the sugar if you want. Start out with half as much and add more if you think it needs it. If you use less sugar, reduce the amount of water you add as well.

Animals can be great fun, but it’s important to know how to be safe when you’re with them. Both indoor animals and outdoor animals need to be treated kindly all the time. This means different things depending on the animal and the situation. Animals Outdoors

Stepping outside can mean a world full of great animals to see — from squirrels in trees to birds in flight. In some parts of the world, kids may see slithery snakes, black bats, or even cool coyotes. And don’t forget raccoons, skunks, and other critters that come out in some places at night.

The rule in the great outdoors is simple: Don’t touch or go near an animal. Although some of these animals may look cool or even cute, leave them alone. These animals aren’t like regular pets. They’re not used to being around people and may bite or attack if you come near them. They also might have rabies. Don’t ever try to feed a wild animal. Bird feeders are OK, but other animals, even if they look hungry, shouldn’t ever be fed. When it comes to these animals, it’s better for everyone if you stay away and check them out at the zoo, on the Internet, on TV nature shows, or in books.

Playing Safely With Pets

Pets can’t tell you if they’re upset or scared, so they show you. They might do this by biting or scratching.

To avoid bites and scratches:

Never bother a pet when it’s eating or pull its food or water away. Don’t tease a dog or cat or pull its tail or ears.

Never bother a pet when it’s sleeping.

To keep your cool around dogs:

Don’t take a toy or bone away from a cat or dog or hold it out of reach of the animal.

Never pet or touch a strange dog, even if it runs up to you and seems like it might be friendly.

Never try to get near a pet with its babies (like a cat with kittens or a dog with puppies). Animal mothers are very protective and will bite to keep you away.

If a dog starts running toward you, don’t run. Running away can make the dog want to chase after you — even if it doesn’t want to hurt you, its instincts will tell it to chase.

When lifting a rabbit, hamster, guinea pig, or gerbil from its cage, do it slowly. Be sure to hold the animal underneath its belly. Never pick up or hold a rabbit by its ears.

If a strange dog approaches you, try to stand very still. This may be scary for a minute or two, but often the dog will become bored and walk away. If the dog tries to sniff you, let it sniff — this is its way of checking you out.

When pulling an iguana, lizard, snake, or other reptile from its tank, do it slowly and carefully. Then wash your hands right away because reptiles can carry bacteria like Salmonella on their skin.

Walk away from a strange dog very slowly. Don’t wave your arms around or make a lot of noise because these actions will only excite the dog. Look straight ahead and not into the dog’s eyes.

Never stick your bare hand into a fish tank — most fish can’t hurt you. But a few types of fish can and do sting if they get upset. The water also contains germs that could cause a skin infection.

If you are very afraid of a strange dog or a strange dog tries to bite or attack you, tell an adult as soon as possible. He or she can find the dog’s owner.

If a pet looks sick or is injured, stay far away. An animal that normally loves to be petted and played with may get very upset and even bite when it is feeling ill. Tell an adult so he or she can get help for the animal.

A final word on felines (say: FEE-lines), also known as cats: Although most kids aren’t as scared of strange cats as they are of strange dogs, it’s still a good idea to stay away from cats you don’t know. Never pet or touch a strange cat, even if it seems friendly.

When you’re at a friend’s home, the same rules apply — plus one more. Always ask your friend if it’s OK to pet or hold his or her pet. If your friend says OK, move slowly and be sure to let the animal sniff your hands first.
