ale Soendker believes strongly in the tradition of Boy Scouts.
He has been helping them for 23 years. His father was instrumental in getting Dale and his brother involved in Scouts, even though he never had that opportunity as a child. Dale joined the Cub Scouts at age 6 while living in Oregon. When he moved to Marshall, he joined Boy Scout Troop 42 and his father became an assistant Scout leader. “We had always done a lot of camping and outdoor things when we were growing up as kids and it just kind of tied into it,” Dale said. “It worked out real well. He enjoyed it just as much we did, I’m sure.” Dale achieved the rank of Eagle in 1973. Eventually, his sons, Curtis and Chris Soendker, joined the Scouts. “I knew that when they became Boy Scouts, I was going to kind of take up the standard and move in and start helping out simply because it was all the things I enjoyed doing when I was a boy,” Dale said. “I knew that they would enjoy it just as much.” For the past 23 years, he has been an assistant Scout leader for Troop 61, sponsored by Christ and Trinity Lutheran Church. He has completed the wood badge training program and has attended the national camp school at least seven times. “The man is a walking encyclopedia when it comes to the Scout skills that he is able to pass on to our Scouts,” said Dale Hogan, another assistant Scout leader for Troop 61. “I am always in awe when Mr. Soendker holds court and shows both the Scouts and Scouters an easier way to accomplish a task.” Dale received the Silver Beaver Award from the Great Rivers Council, the highest recognition a Boy Scout council can bestow to an adult volunteer leader. He is also a vigil member of the Order of the Arrow. He serves as the climbing chairman of COPE (Challenging Outdoor Personal Experience) for the Great Rivers Council. COPE consists of a series of custom-built challenge courses that stress teamwork, communication, trust, leadership, decision-making, problemsolving and self-esteem for the participants that go through the program. When he became involved with COPE, his sons and his daughter got involved too.
“My daughter being involved — that was something a little bit special too because obviously dads aren’t that involved with girls and Girl Scouting. She always wanted to do a lot of the stuff that the Boy Scouts did that the Girl Scouts didn’t do. This gave her the chance to do that plus it gave us a little bit more of a connection father and daughter ... so I was blessed for that opportunity,” he said. Chris said before his boys were old enough to join Cub Scouts, his father had been doing COPE for at least five years. Once he saw his siblings helping his father, he wanted to do it too. “I finally got the opportunity and went ahead and got involved in it,” Chris said. Chris is keeping the Scouting tradition alive by serving as a Cub Scout leader for Pack 61. He has one son in Pack 61 and another one in Troop 61. He also has a nephew in Pack 61. “As they got older, I just stepped right into it (a leadership role),” Chris said. He feels he will be part of Scouting for a long time. Dale has kept involved with Scouting because he sees the need for positive male role models. His wife, Connie, teases him that if he didn’t do so much with Scouts and volunteering, he might have enough time to keep the yard mowed and get things done around the house. “If the neighbors think less of me because I don’t mow my yard as often as they do, I don’t care. But if that kid that I didn’t help, because I had to mow my yard to impress the neighbors, lost the motivation and ended up being influenced in the wrong direction and maybe did something that screwed his life up and maybe hurt somebody else, that would bother me,” he said. Dale typically works with the older Boy Scouts. When he counsels the boys for advancement, he asks them what their goals are. If they say Eagle, he does whatever he can to help them achieve that dream. Even if they don’t, he’s proud of the effort each Scout puts forth and knows what they learn from the Scouts will follow them for life. He’s seen former Scouts become doctors and leaders in the military, law enforcement, industry and business. “I’m probably one of those guys who isn’t going to be out of Scouts until they put me in a box. If there’s anything that I am capable of doing, I’m probably going to be doing something. With the grandsons that I’ve got now becoming involved in Scouting, it will be a while before I take a more passive role,” he said. “We do it because of the results of the positive influences that we can provide rather than for any kind of recognition for ourselves.”

• On Jan. 6, 1759, a 26-year-old George Washington marries Martha Dandridge Custis. Historical documents have revealed that Martha may not have been the great love of Washington's life. He wrote cryptic yet passionate love letters to Sally Fairfax, the wife of his friend George Fairfax.
• On Jan. 1, 1863, a farmer named Daniel Freeman submits the first claim under the new Homestead Act for a property near Beatrice, Neb. By the 1890s, many homesteaders found that farming 160 acres of such dry land was nearly impossible. At least half of the original homesteaders abandoned their claims. • On Jan. 3, 1924, British archaeologist Howard Carter and his workers discover the solid-gold coffin holding the mummy of the boy-king Pharaoh Tutankhamen, preserved for more than 3,000 years.
• On Jan. 5, 1945, Japanese pilots receive the first order to become kamikaze, meaning "divine wind" in Japanese. Most of Japan's top pilots were dead, but youngsters needed little training to take planes full of explosives and crash them into ships. At Okinawa, they sank 30 ships and killed almost 5,000 Americans.
• On Jan. 4, 1965, in his State of the Union address, President Lyndon Johnson lays out for Congress a list of legislation needed to achieve his plan for a Great Society. His list included the creation of Medicare/Medicaid, Head Start, the Voting Rights Act and the Civil Rights Act.
• On Dec. 31, 1972, Roberto Clemente, future Hall of Fame baseball player, is killed along with four others when the cargo plane in which he is traveling crashes off the coast of Puerto Rico. At the end of September, Clemente had gotten his 3,000th hit in the final game of the season for the Pittsburgh Pirates. • On Jan. 2, 1980, in response to the December 1979 Soviet invasion of Afghanistan, President Jimmy Carter asks the Senate to postpone action on the SALT II nuclear weapons treaty. Try these tasty tips for preparing wild game With the exception of one more youth hunt and a few managed hunts, today kicks off the last of the firearms deer seasons. In other words, it’s time to start filling those odd corners in the deep freezer with small game. But as much fun as putting small game into the freezer can be, getting it back out and preparing it for the table should be just as enjoyable. Alas, that’s not always the case, and when it isn’t, the culprit is almost always a cook who — perhaps unknowingly — is trying to make a sow’s ear out of a silk purse. Wild game is almost always best when it’s prepared so that it’s unique flavors are enhanced rather than overwhelmed. Of course, eating it should also be a pleasant experience, which, to me, means the meat in question is tender and juicy. Young specimens of every species of small game found in Missouri is naturally tender, moist and flavorful. Therefore, the number one secret to preparing it is to do no harm. Choose recipes that don’t overpower the flavor of the meat. In addition, as a general rule, it’s best to cook meat that’s already tender at relatively high temperatures for a short period of time, while avoiding overcooking. I realize that frying is no longer politically correct in some circles. Nevertheless, my palate remains convinced that young squirrel dipped in buttermilk, dredged in seasoned flour and fried to a light golden brown is the ultimate definition of fine dining. And as far as that goes, a young rabbit, pheasant or quail prepared the same way will give the squirrel a run for its money. My favorite way to fix young geese is to filet the meat from the breast and divide it into four equal pieces. Wrap a slice of bacon around each piece and grill it exactly as you would filet mignons. Like beef, goose filet will be tenderest if it’s cooked rare or medium rare. The same basic recipe also works well for duck, but roll half a breast and use the bacon to secure it. So how do you tell a young bird or animal from an old one? Size is a reasonably accurate indication of the age of most waterfowl species. Young rooster pheasants have short dull spurs, and old ones have long sharp ones. Female squirrels who’ve never nursed young and male squirrels with undeveloped testes are almost always tender. Missouri’s rabbit season opens too late in the year to take advantage of super-tasty half-grown bunnies, but very few cottontails live long enough to get tough. The same thing can be said for doves and quail. So far, so good. Cooking young small game is as easy as it sounds. In fact, any of your favorite recipes for domestic meat will work just fine. On the other hand, full grown small game

of unknowable age presents a different culinary challenge. For example, a fried squirrel that began its life matching wits with Indians might taste OK, but few people are willing to chew long enough to find out. As with young meat, one secret to success is to avoid recipes which disguise or distort the meat’s natural flavor. Conversely, the secret to cooking the meat from older animals is to use methods which employ plenty of moisture, relatively low temperatures and long cooking times. I enjoy cooking from scratch, but there’s no denying the convenience and consistency of using canned soups to provide moisture. Cream of mushroom, cream of celery, chicken gumbo and tomato are among the most popular choices, but they’re far from the only ones. Most recipes call for browning the meat in flour prior to beginning the slow cooking process. This isn’t necessary to get the meat cooked, but it does yield a dish with more eye appeal. In at least partially the same vein, many recipes call for onion. I think all slow cooking recipes benefit from a generous amount of onion. I soften onion by microwaving it for about a minute and then add it to the meat for the last couple of minutes of browning. Several of the recipes I use do quite well in a crock pot, and crock pots offer the advantage of requiring minimal attention. Other recipes do better when baked in the oven, and a few are at their best when simmered in a covered skillet. Experiment to find out what works best for you. I usually like to experiment when I’m cooking, when I want to follow a printed recipe, the first cookbook I reach for is “Duck Gumbo to Barbequed Coon” by Keith and Theresa Sutton. If you want to send your taste buds on a real adventure, this book includes recipes for coot, possum, skunk, bobcat and a few other even less imaginable critters. Actually, most non-outdoor cookbooks include recipes for preparing the more commonly eaten wildlife species. Be forewarned, however, that some of these recipes deliberately disguise the wild meat’s true flavor. Bon appetit.

They'll be joined by a slew of notable guest stars, including Chlo Sevigny, Roseanne Barr, Rose Byrne, Bill Hader, Juliette Lewis and more. *** Q: I can't wait to see what's next when "Revenge" returns from its winter break. Do you have any scoops? -- Bridget W., via e-mail A: Everyone involved with "Revenge" is either very good at keeping secrets, or they don't know what's going to happen from week to week. I spoke recently with series guest star Michael Nardelli (as Trey Chandler), and he wasn't divulging much. "So far, I've done the three episodes, and it seems like it's going to go on," Nardelli said. "I have no idea what they have in store. ... They're very secretive, but I am hopeful that Trey will return." According to the folks at PBS, "The Great War is over and the long-awaited engagement of Lady Mary and Matthew is on, but all is not tranquil at Downton Abbey as wrenching social changes, romantic intrigues and personal crises grip the majestic English countryside." And one of the reasons I love my job is that I recently received my press screener of the series, and I can tell you that this season is one not to miss. Not only is guest star Shirley MacLaine -- portraying Martha Levinson, Cora's mother -- a welcome addition, the rest of the cast is back and better than ever. This becomes much easier if you ‘Make A Plan.’ NDEP’s Make A Plan tool can help you think about what is important to your health and how to make a plan to help you reach your goal. The NDEP’s Diabetes HealthSense website, provides easy access to resources that can support people with diabetes and those at risk for the disease in making lifestyle changes and coping with the demands of diabetes.
