豆腐サラダ
糸こんにゃく 150ｇ 砂糖 大さじ3 創味のつゆ 大さじ3 水 400cc
作り方 ①鍋で牛肉を炒め、 玉ねぎ、 じゃがいも、 人参、 糸こんにゃく、 水を入れ、 沸騰したらアクを取ります。 ②中火にし、 砂糖、 創味のつゆを加えて煮こみます。
材料（2人前） (ドレッシング） 絹ごし豆腐 1丁 しらす干し 20 g 創味のつゆ・酢 各大さじ2 わさび 適量 ごま 10g 長ねぎ・大葉 適宜 ごま油 大さじ2
作り方 ①フライパンにごま油を熱し、 しらす干し、 ごまを 弱火でじっくり炒め、ペーパータオルに広げて 冷まします。 ②豆腐は軽く水切りし、一口大に切り、長ねぎ、 大葉は千切りにします。 ③器に②を盛り付け （ドレッシング） をかけ、 ①をちらします。

皆様こんにちは！武藤頼胡です。 6月11日、 Torranceにて終活カウンセラー初級検定を開催しました。 5名の方 にご参加いただき、 約5時間しっかり日本の 「終活」 について学んでいただきました。 初級検定の内容は、 「終 活」 「介護」 「保険」 「相続」 「年金」 「お葬式・供養」 の科目になっております。 受講された方は 「日本にいる両親と どのように向き合い話しをしていくかについてのきっかけがほしかったから受けた」 「お葬式や供養のことは わかりにくい、 困っていたので参加した」 このようなニーズがありました。 講座は少人数ということもあってそ の場で質問もたくさんあり、 受講者の方のペースで進めました。 受講後の感想は 「介護のこと、 お葬式のこと などどこから情報を得て良いかわからなかったが、 日本にいる年老いた両親のことを思うと今のうちにしっか り話し合っておきたいと思います。 そのための知識を得られてよかったです」 「自分はもともとこのような分野 は勉強していたが、 それでも知らないことが多々あった。 今日は参加してお墓などのこともわかりよかったで す。 今後も勉強していきたいと思います」 など日本にいる親のために知りたいことや今から何をすべきかを 勉強できたようです。 終活はブームではなく今をよりよく生きるために必要なことです。 次回、 Torranceでの開 催は2017年1月を予定しています。 ぜひ皆さん一緒に学びましょう！どうぞ宜しくお願い致します。

Imagine entering an ice cream store in LA that feels less like a fashion show and more like a place where friends go to hang out. A spot where scrumptious ice cream flavors evoke childhood. Isn’t it comforting to know that such an ice cream store exists? It’s called Salt & Straw. And there are three locations in Southern California. Kim Malek, the owner of Salt & Straw believed so strongly about creating community via ice cream that she cashed in her 401k, recruited her culinary wizard cousin, Tyler Malek and established Salt & Straw. All ingredients are locally sourced, organic and non-GMO. The ice cream menu changes with the seasons. (Similar to the Japanese aesthetic.) Owner, Kim Malek loves all the Salt & Straw flavors but is particularly fond of the Roasted Strawberry and Toasted White Chocolate. A bestseller year-round is Sea Salt and Caramel Ribbons. Naturally Colored Pickles (for 4 ser vings) 160 cc / generous ½ cup KIKKOMAN Seasoned Rice Vinegar 320 cc / generous 1¼ cup water 1 tsp. Thai fish sauce 2 tsp. sugar 2” x 2” dried kelp ½ cup purple cauliflowers ½ cup radishes ½ cup purple cabbage leaves 4 kumquats
<1> Into a pan, combine the KIKKOMAN Seasoned Rice Vinegar, water, Thai fish sauce, sugar and kelp. Heat over a low flame. When the sugar has dissolved, the pickle juice is ready. <2> Cut the purple cauliflower into bite-size pieces. Remove the stems from the kumquats. Pierce the cauliflower and kumquats with a skewer in several places. Soak in the hot pickle juice from Step 1. <3> Pluck the leaves off the radishes. Cut the radishes in half. Quarter the larger ones. Julienne the plump cabbage leaves into strips, soak in the pickle juice from Step 1. <4> Enjoy the pickles after a half-day to overnight soak in the juice from Step 1.
TIP
Black pepper and preferred herbs can be added and enjoyed for variation when preparing the Step 1 pickle juice.

Kuroushi Omachi Junmai Ginjo This Sake is from the same sake brewer y and is junmai ginjo from the Kuroushi series. You will find sweetness that reminds you of citrus flavor and bitter chocolate -like taste along with sweetness of plum or persimmon in Kuroushi Omachi Jumnai Ginjo. I t of course goes great with sashimi and yak itori but also matches well with creamy dishes. Pleasant sourness and smooth taste that leaves gentle af ter taste that mildly disappears.
