Oda tells you a story behind every smile あなたの大切な歯、 これだけは知っておこう 今回は歯医者さんのオフィスにある歯科器具についてです。 まずは音を聞けば歯 医者を想起させる歯を削るの甲高いドリル音、 トラウマという人も少なくないよう です。皆さん診察中はどの器具を使っているのか見えないと思いますが、仰向けに なっていても高い音と低い音を使い分けているのが解ると思います。 これらの甲高 いドリル音の鳴る器具はどちらも歯を削る器具で”タービン”と言われています。高 い音の方はハイスピード （写真1中央） と言って、名前の通り高回転で歯を削り、硬 い歯を削る場合や歯の形作るのに使用します。 また、低い音の方はスロースピード （写真1左側） と言い、回転数が低くトルクのあるので、 虫歯を取るのによく使用し ます。 そして、 タービンの先に”芯”（写真2） を装着して作業に当たります。 ご覧の通 り”芯”はたくさん種類があり、治療目的に応じて使い分けしています。 写真1右側の器具は水とエアーを出す歯科器具で、状況によってヘッドにある切 り替えボタンを使い、洗浄用には水やミスト、乾燥用にはエアーを出して使い分け ます。 これらの器具は高圧空気で作動しており、歯医者さんには必要な設備とたく さんの歯科器具が用意されています。 私たちはこれらの器具を適切に使用し皆さんの歯の治療にあたっています。 この ようなことを少しでも理解しておいて頂くことで、 甲高いドリル音にも少し慣れて頂 けるのではないでしょうか。

Hoisin Sauce Topped Daikon
(for 4 ser vings)
1/3 cup KIKKOMAN HOISIN SAUCE 4 teaspoons Japanese yuzu citrus juice concentrate 1 (8-inch) daikon radish 1 teaspoon uncooked rice grains 1 (2-inch) Kelp konbu square
<1> Remove the skin of the daikon radish. Cut the daikon into rounds which are 2-inches in width. Carefully cut 1-inch slits into the daikon rounds (to allow the greatest infusion of flavor.) Toss the ends of the daikon so only the uniform rounds are left. <2> Place the cut daikon and teaspoon of rice into a pot with plenty of water. Bring to a boil over medium heat. The daikon is cooked when easily pierced with a skewer. <3> Remove the daikon from the pot and rinse under a running stream of water. Place the daikon along with the kelp konbu back into the pot. Make sure enough water covers the daikon. Heat the contents of the pot over a low flame. Simmer for 20 minutes. Turn off the heat. Allow the daikon to come to room temperature. The daikon will then be infused with the umami of the savory kelp konbu. Drain the liquid from the pot. <4>Combine KIKKOMAN HOISIN SAUCE and yuzu citrus juice concentrate in a bowl. Slather hoisin yuzu mix on top of the cooled daikon slices. Garnish with the peel of a Japanese yuzu citrus fruit (if available) for a pretty plate display.

Japanese yuzu citrus concentrate can be purchased at Asian markets.
