The secret behind is that owner and chef Hiro-san has done his best to replicate the true heart of Japan in his edomaestyle sushi. [We make our sushi rice using our preferred brewed red vinegar and mixed with Japanese sea salt. The ginger is made from Hawaiian ginger soaked in sweet vinegar and cut into thick slices. The important thing about sushi is the perfect between the fish, the rice, and presentation. That perfection is what we strive for and want our customers to take part in that experience when dining.] An American interior designer has recreated a stylish and authentic Japanese interior. Combined with such an atmosphere, the dining experience here is just wonderful.

Having a long history in the United States and Japan, SEI-san, a sushi chef, shares his story. [We want our customers to sit in the counter and just tell us what they want. We will do the best we can to make them happy because their happiness is ours.] Having worked in a sushi restaurant in Osaka he says [pressed mackerel sushi, thick rolls, and inari are my speciality. Actually pressed mackerel sushi is really funny for Americans] he says. From homemade chili oil topped on seared fatty salmon to scallops with a shiso sauce, this places challenges the norm by creating unique AND delicious sushi. You also can’t miss all the seasonal dishes!

He takes new and unknown ingredients and gives them a Japanese twist. For example the GRAVLAX [salmon, marinated in dill and vodka for 3 days is a Swedesh still dish]. And he says [In the case of OMAKASE courses, we start with a light sea bream, and very generous with yuzu and salt, making sure that in the end our customers can enjoy the dining experience without getting bored or tired of the food. That is our goal.] Out of curiosity, we wondered where the name of this restaurant came from. He says [I like jazz, and it comes from one of my favourite song titles]. It’s clear that this place has a little of SAITO-san’s personality!

pon hearing of its renewal opening, we immediately had to go and check this place out again. Even from its first opening, we fell in love with their original richly flavorful miso base ramen. Hearing that things got even better, we were very excited to go back!

“Prevent cavities by eating your favorite chocolate.” These dream-like words from a dentist became a reality when developing a certain type of chocolate. The secret to this is the use of 100% xylitol. When we think of the word “xylitol”, we always think of the gum. Dr. Oda would like to introduce some habits of gum-chewing and xylitol. Xylitol is a sweetener for food and is supposedly a sugar that promotes cavities, but according to research, it does the opposite. On top of this, it promotes saliva within the move, causing the neutralization of acids. Also, it helps in the remineralization of teeth. Thinking of xylitol reminds of the famous gum. In addition to increasing saliva in the mouth, chewing gum also helps to reduce plaque and oxidation of the teeth. You can such positive and synergistic effects of xylitol. However, chewing too much could adversely affect your teeth. Still, one must be careful!
