Kushikatsu Tanaka A restaurant specializing in a traditional Osaka dish called kushikatsu, fried cutlet skewers, has just opened in Sawtelle. Winning the 2013 Dining Out Award, this restaurant has over fifty locations in Japan, making a big name for itself. The cutlet skewers, batter, and secret dipping sauce let you enjoy exquisite tastes. We highly recommend the katsu burger! The patty, fried like a cutler skewer, has a crispy and one of a kind texture. On top of that, it’s large and very filling. Though a fusion-style dish, traditional Japanese style cooking methods are integrated into the dish, making its subtle flavor extremely popular. Harikawa (fictitious name) West LA’s Torafuku is officially now dubbed Harikawa. From June to July, it will be undergoing renovation and introducing a new dining concept! They will introduce various types of fresh seafood, dry-aged Japanese and Australian beef, local chicken, black pork, and seasonal vegetables. Using these ingredients, they will also specialize in focusing on grilled style, such as charcoal grilled, stone grilled, teppanyaki, and roasted style cooking. Focusing on the optimum heating, the ingredients will be cooked to perfection drawing out the best flavors. They will also be using high grade quality rice koshihikari cooked in mini cauldrons. Jujuya By Mako Food and atmosphere exclusively found in the likes of Hollywood and Beverly Hills can now be found in the South Bay. Hailing with experience as the head chef of Spago and Chinois on Main (Santa Monica), and most notably known for opening his restaurant Mako in Beverly Hills, super chef Mako is now opened a new location, called Jujuya. This restaurant focuses on fresh seafood to make Euro-Asian food. Highly recommended are the oysters. With three types from the West Coast and three types from the East Coast, weekly specials are created and prepared. There are various types of tapas that are great for sharing. Another popular item is the fresh raw fish carpaccio with its original sauce. You can only expect delicate flavors in its original sauce created by a high-grade chef. There are also 9 types of draft beers and bottled beers, as well as popular wines. And on top of this, the prices are reasonable. Featuring tonkotsu (pork bone) ramen hailing from Kurume, the well-established ramen shop Manichi will be opening its first store in Little Tokyo this June. Currently, there are 21 locations in Japan and 2 in Hawaii. After conquering the mainland, Manichi plans to expand to other parts of Asia and Europe. The origin of Manichi’s flavor comes from its homemade taste, according to third generation head Tanaka Minoru. Established in 1928, the recipe of their broth has crossed three generations. This cooking method includes carefully boiling the pork bone for more than 20 hours, making the soup thick and flavorful. The more you eat it, the more you can enjoy the true flavor of the pork bone. Starting off from a hole-in-the-wall establishment, their gyoza dumplings have since then become featured on Japanese TV, and are touted as the best gyoza in Japan. History of Manichi Ramen

”MANICHI” was born in Kurume, the home of tonkotsu ramen, in 1953. It started when Heizaburo Tanaka, the grandfather of the current CEO, opened a gyoza stall. Eventually, Akira Tanaka, the 2nd generation CEO, opened a shop in Bunkagai, the entertainment district of Kurume. Ramen was added to the menu at this time. “Tonkotsu Shibori Ramen”, created by simmering the soup ceaselessly in the pot, quickly became popular and the shop bustler with regular customers coming every day.

とんこつラーメン発祥の地•久留米に『満州屋』が産声を上げたのが1953年。現社長の祖父•田中平三郎が、餃子の屋台を引いたのが始まりだ。やがて2代目•田中明が、久留米の歓楽街「文化街」に店舗を構えメニューにラーメンを加えた。ぐつぐつとスープを釜で絶やすことなく煮込む「とんこつしぼりラーメン」は、またたくまに評判となり、店は常連客で連日賑わった。

The former CEO passed away suddenly when the current CEO, Minoru Tanaka, was a freshman in high school. After graduating from high school, Minoru moved away from home for a while, but he found out that his mother was about to close down the shop when he was 19 years old and determined then to take over the family business. The regular customers who had visited the shop for his father’s ramen disappeared and it could easily have gone out of business. Minoru cut back his sleeping hours to learn how to make ramen. And, while in contact with customers in the kitchens day after day and supported by his staff and other people around him, he started dreaming that he “wanted to aim at making his ramen shop the best.” It was at this time too that he changes the ramen to the shop to “MANICHI”. 現社長•田中實が中学３年の時、先代が急死。高校卒業後、田中はいったん実家を離れるが、 19歳のとき、母親が店を畳もうとしていることを知り、実家を継ぐ決心をする。父親のラーメン目当てで通っていた常連客は姿を消し、当時の『満州屋』はいつ潰れてもおかしくない状況だった。田中は寝る間も惜しみラーメン作りを学んだ。連日厨房に入り、お客様に接しながら、またスタッフを始めまわりの人に支えられながら、「ラーメン店で一番を目指したい」という夢を抱き始める。このころ店名を『満州屋』から『満州屋が一番』に改名した。これからが田中の始まりだ！

Minoru’s thoughts turned towards doing business throughout Japan. The action that he took as a foothold to get started was sales to department stores. He wanted them to sell to-go ramen and gyoza at special sales events. In addition, in presentations of his products at food theme parks, he took along a portable gas stove and cooked gyoza directly for the park staff. In 2004, the shop became the national champion on the TV show “Determined Tonight! This is Japan’s Best Gyoza!” “MANICHI” attracted attention all of a sudden as a hero of the industry. Subsequently, the company opened the “Hakata Choten” and “Sapporo Menya Yoshiki.“ The challenge of “MANICHI”, aimed at becoming No.1, has only just begun. 全国区への思いを胸に持ち帰り用のラーメンや餃子を百貨店に置いてもらおうと営業を始めた。カセットコンロを持ち込んで担当者に直接餃子を振る舞ったこともあった。 2004年、 TV番組「今夜決定！餃子日本一はここだ！」で日本一に。『満州屋が一番』が一気に業界で注目を集めた。その後次々に新ブランドを立ち上げ、 2012年にはついにハワイにも出店。ついに６月にはロサンゼルスのリトル東京にメインランド1号店がオープンし、トーランスにも出店が決定している。アジア、ヨーロッパと世界を目指し『満一』の挑戦は始まったばかりだ！

ater, water, water! ADRA Japan, and everyone in Japan - thank you for the clean water! This water is life. It’s the water of life. Without water, we die. Everyone needs water. Adults, children, and all living things all need water. Thank you for the clean water! This water is life! It’s the water of life! This was a poem composed by local elementary school students to express their joy when we provided a well and hand-washing facilities to their school in Zimbabwe. When I heard it, my eyes became wet with emotion. Clean water was indispensable to extinguishing the rampages of cholera. In August of 2008, a cholera epidemic arose in Southern Zimbabwe and spread throughout the nation in a matter of months, infecting more than 90,000 people and leaving more than 4,000 dead in its wake. The spread of infection could not be easily stemmed, due to the use of shallow wells easily breached by contaminated water, as well as the continued use of unsanitary water taken from the river shoals. With the aim of infection prevention and control, ADRA Japan, which I was affiliated with at the time, provided deep wells with clean water, as well as handwashing facilities, to local elementary schools, and trained educators in infection control and basic hygiene education. Consequently, several months later the spread of cholera ebbed, and the lives of many children were saved, as a result. In 2009, 6 wells and 10 handwashing facilities were provided to elementary schools. The provision of wells and hygiene education continues. In fact, every year around Christmas, the Sanikutozai supplemental Japanese school in Los Angeles collects donations from its students to continue support for this project. This year, as well, I’ve received reports from the project’s local Japanese staff of how the donated money has been put to good use. I take great joy and pride, not only from the children of Zimbabwe living healthy lives, but also from the American children acting so charitably on their behalf.

、水、水！ A D R A J a p a n 、日本のみなさん、きれいに澄んだ水をありがとう！この水は生命だ。生命の水だ。水がなければ死んでしまう。みんな水が必要だ。大人も子どもも、他のすべての生き物も水が必要だ。きれいに澄んだ水をありがとう！この水は生命だ！生命の水だ！これはジンバブエのある地区の小学校に井戸と手洗い場を提供した際に、現地の小学生が喜びを表現してくれた詩です。聞いた瞬間、私は感激し目頭が熱く濡れました。きれいな水は、猛威を振るっていたコレラを撲滅するため必要不可欠なものでした。コレラは2008年8月にジンバブエ南部で発生し数ヶ月で全土に拡大、9万人以上の人が感染し4千人以上の人が亡くなりました。汚水が流れ込みやすい浅い井戸や、川の浅瀬から汲み取った不衛生な水を使用していたため、感染を食い止めることができなかったのです。そこで私が所属していたADRA Japanは感染症予防を目的に、澄んだ水を汲み取れる深い井戸や菌の増殖を防ぐための手洗い場などを小学校に提供、さらに感染症や衛生教育の指導員の養成を行いました。結果、数ヶ月後にはコレラの蔓延を防ぎ、多くの子どもたちの命を救うことができたのです。2009年、冒頭の小学校にも深い井戸を6基、手洗い場を10基、提供しました。その後も学校への井戸の提供、衛生教育の徹底を継続しています。実はLAの三育東西学園では、毎年クリスマスに全校生徒から募金を集め、このプロジェクトを支援しています。今年も現地で活動している日本人スタッフから、寄付金がどのように役立てられたか報告を受けました。ジンバブエの子どもたちが元気で過ごしていることに加えて、アメリカの子どもたちが彼らを助けるため行動していることに、二重の喜びを感じます。
