たかこさんと行くレストラン、一軒目はロシア料理店。前菜は 2 種類の蒸し餃子。肉入りで普通の餃子に近いロシア風 ” P e l m e n i ” にくらべ、ウクライナ風 ” V a r e n i k i ” は具がポテトで、揚げた玉ねぎと食べる斬新な味。ポテトサラダ ” O l i v i e r S a l a d ” には「ハーブ ( ディル ) の使い方が絶妙 ! 」とたかこさんも感心。メインの ” C h i c k e n A - L a K i e v ” はやはりウクライナ料理で、鶏の胸肉でバターとディルを巻き、揚げたもの。バターの風味がほんのり効いた味がイイ。脂身を取り、マリネして柔らかく仕上げた ” L a m b C h o p s ” も最高でした ! 濃厚な味を想像していたたかこさんですが「シンプルな味つけでとてもおいしかったです。付け合わせのベイクドポテトなどを含め、ヘルシーに調理しているのも意外な発見でした」

For our nex t stop, we headed off to a Lebanese restaurant that has w h a t M s . Ta k a k o c l a i m s i s t h e “ T h e N o . 1 H u m m u s i n a l l o f L A ”. T h e i r famous “Hommos B-tehiney” has an amazing tanginess that makes it a p e r f e c t s a u c e f o r m a n y t y p e s o f d i s h e s . W e s a m p l e d t h e “ L e b n e h ”, a c h e e s e m a d e f ro m yo g u r t, w h i c h h a s a s o f t l i g ht tex t u re. L a s t l y, t h e re w a s w h a t M s . Ta k a k o d e e m s a t r u e r e p r e s e n t a t i o n o f M i d d l e E a s t e r n s a l a d , “ Ta b b o u c h ”. T h e s t r o n g f l a v o r s o f p a r s l e y , b a l a n c e d p e r f e c t l y w i t h lemon, create a refined and elegant flavor that is perhaps the best you will find in Los Angeles. The main course was, as expected, a meat dish. C a l l e d t h e “ K a b a b C o m b i n a t i o n ”, i t c o n s i s t e d o f w e l l - s e a s o n e d l a m b , beef, and chicken. For desser t, we finished with “Bak lawa” and Lebanese coffee, leaving us completely satisfied with our meal. All in all, there were plenty of vegetable dishes, making us happy that we can try bringing this style of cooking to our own homes, as well!

Don' t h e d t m i ss e ss e rt 次は、たかこさんが「 L AでN O . 1のハムスがある」と聞いたレバノン料理のお店へ。噂のの” H o m m o s B - t e h i n e y ”は程よく酸味が効いていて、いろいろな料理のソースとして用いてもグッド！ ” L e b n e h ” はヨーグルトから作ったチーズで、より軽い食感。たかこさんが最もハマったのが中東料理を代表するサラダ ” Ta b b o u c h ” 。「パセリの刺激、レモンの酸味が強すぎず、バランスがいい上品な味。これぞL Aで一番かも! 」と大絶賛。メインはやっぱり肉。” K a b a b C o m b i n a t i o n ”は、塩加減がちょうどよく、ラム、牛、鶏それぞれの肉のおいしさが引き立つ味。デザートの” B a k l a w a ”＆レバノンコーヒーまでたっぷり堪能しました。「野菜料理が豊富なので、自宅でも応用できそうなのがうれしいですね ! 」

B u t d e f i n i t e l y , i t ’s w o r t h i t T h e m o m e n t w h e n t h e “ P l a a T h a w t Mamuang” (whole fried sea bass) came out, it was as if the entire restaurant lit up with its glor y. Ever ything you get here is delicious, including the Khao Ya m , a r i c e d i s h m i x e d w i t h v a r i o u s t y p e s o f v e g e t a bles and herbs. This place is simply amazing!”

Here you will find yourself “lost” and having a great time in a world of spices and ingre d i e n t s t h a t y o u m a y h a v e n e v e r s e e n o r u s e d b e f o r e ! I t ’s almost as if you were in actually in Indonesia! “

“A m o n g t h e v a r i o u s N e p a l e s e a n d T i b e t a n f o o d s o u t t h e r e , w e h i g h l y r e c o m m e n d t h e i r s p e c i a l t y , “ m o m o ”. It looks strikingly similar to Chinese dumplings. When e a t e n t o g e t h e r w i t h t o m a t o c h i l i s a u c e , i t ’s e x t r e m e ly refreshing. When we wanted to know how to make it, we were deeply moved of the friendliness of staff. They were more than willing to share their secret. Even though we found that that they used the simplest of ingredients to make the dish, we learned so much!”

「ネパール＆チベット料理のなかで、特にオススメなのが名物料理の ” m o m o ” 。見た目は小籠包に近いのですが、トマトとチリを混ぜたソースにつけて食べるのがとても新鮮！レシピを尋ねたところ、作り方を見せてくれたほど親切なスタッフの対応にも感激しました。シンプルなスパイス使いでさっぱり仕上げる料理が、とても勉強になりますね」

What makes this place so special is their ability to make excellent Peruvian/Japanese fusion cuisine, f r o m f r e s h s e a f o o d c e v i c h e , t o “ C a u s a ”, a p o t a t o s a l a d topped with various types of seafood, making it Pe r u v i a n - s t y l e s u s h i , t o “ A n t i c u c h o ”, w h i c h i s s i m i l a r t o Japanese yakitori (grilled chicken skewers) and more! Even the presentation looks very close to Japanese c u i s i n e . O u r s t a f f r e c o m m e n d s t h e “ A r r o z C o n E r i z o ,” which is a paella made with uni (sea urchin roe) and o t h e r t y p e s o f s e a f o o d . Yo u a l s o c a n ’ t l e a v e t h i s p l a c e without trying one of their original cocktails.

O f the many Persian restaurants out there in West LA, our Iranian friend has recommended this place. There is of course the juicy and deeply flavorful “ L a m b S h i s h K a b o b ”. B u t y o u a l s o h a v e t o t r y t h e “ K a s h k - E - B a d e m j a n ”, a p a s t e m a d e o f e g g p l a n t , other vegetables, and dry yogurt. All that, togethe r w i t h t h e h e r b - i n f u s e d h e r b r i c e c a l l e d “ P o l o ,” m a k e f o r a p e r f e c t m e a l . Yo u w i l l d i s c o v e r n e w f l a vors that you’ve never tasted before!

Children from the small islands of Indonesia have such a pure heart that it’s an eye-opening experience for us. インドネシアの小さな島に住む子どもたちは、大人がハッとさせられるほどの純粋な心を持ち続けていました。

INDONESIAN PURITY

hen evening comes, the bright voices of children at play fill the village plaza. No matter where I go in Indonesia, a nation whose ties with Japan run deep, children and adults alike greet me with spectacular smiles. I once took along a volunteer group from Tokyo to visit an elementary school in the Indonesian farming region. It was a small school, with the entire student population numbering around 100. The woman principal welcomed us immediately, allowing time for us to interact with the students. There were many surprises in store for us there - the students knew a great deal about Japanese culture, they could converse in English, they had excellent manners, their speech and conduct were highly refined, and everyone was clean and well-groomed. In classroom exchanges we introduced them to several traditional Japanese diversions, and they were extremely interested in “origami,” “otedama (beanbags),” and others. The beanbags had been lovingly made by elderly woman volunteers at a retirement home. After the volunteer group members presented these as gifts and demonstrated how to play, the children picked things up and started to enjoy themselves at once, though they were a bit shy at first. Among the 4th and 5th grade boys there were even some that could skillfully juggle three otedama at once. The girls, on the other hand, were delighted to receive their paper dolls and other gifts. In turn, they rewarded us with comments like, “Japanese culture is amazing!” “I love Japan!” and “Thank you for the amazing gifts. We’ll always treasure them.” Life in the village may indeed have been impoverished. However, the manners, expressions, and politeness of the children, exuding honesty, class, and refinement, made a huge impression on the hearts of us Japanese. They had such pure hearts, the likes of which we had not seen or experienced before. The smiles we received from those children have become treasures in my heart, that I will never forget.

方になると子どもたちの明るい遊び声が村の広場などいたるところで聞こえています。日本との交友関係の深いインドネシアではどこに行っても、子どもも大人も日本人の私たちを見て、ニコニコと素晴らしい微笑みを浮かべてくれます。

私は東京のボランティアグループを連れて農村地帯の小学校を訪問しました。全校生徒100人前後の小さな小学校でした。女性の校長先生はさっそく私たちを歓迎してくれて、生徒たちとの交流の時間を作ってくれました。そこで驚いたことがいくつかありました。日本文化をよく知っていること、英語で会話ができること、とても行儀がよいこと、言動が素直で上品、さらに清潔感が漂っていることなどです。教室での交流会では日本の伝統的な遊びをいくつか紹介しましたが、「折り紙」や「お手玉」などに非常に興味を持ったようでした。お手玉は、老人ホームのおばあちゃんのボランティアたちが愛を込めて作ったもの。それをプレゼントした後、ボランティアグループの方々が実演して見せると、初めのうちは恥ずかしがっていた子どもたちもアッと言う間に遊び方を覚えて楽しんでいました。4、5年生の男子のなかには3個のお手玉を上手に操る子もいました。女の子たちは紙人形などをもらって、大変喜んでいました。「日本文化は素晴らしい！日本が好きです」「こんなに素晴らしいお土産ありがとうございます。ずっと大切にします」と言ってくれました。確かに村での暮らしは貧しいかもしれない、しかし、お手玉や紙人形をもらったときのしぐさ、表情、お礼の言い方、すべてににじみ出る清潔感、素直さ、上品さが私たち日本人の心に大きなインパクトを与えました。それは見たことも感じたことのない、とても純粋な心だったのです。この子どもたちからもらった笑顔は、私の生涯を通して忘れることのできない心の宝物となりました。

Breathe in from your nose, and twist your body to the right as you exhale. After breathing in and out 2-3 times, revert back to a neutral position as you inhale. Repeat the same steps for the left side.

Stand in a position so the arches of the left foot and right foot form a straight line. Keep the pelvis facing forwards.

Put your hands on your waist and bend your right knee as you exhale. Take care not to move your knee too far outwards.
