While we will celebrate the dads in our lives on Father’s Day, June 17, I would like to give a tribute to my own dad. Even though he has been gone for six years, I am still influenced every day by his guiding example of living with faith, integrity, and honesty. He was humble and kind - he loved nature and animals. His family and his farm were his top priorities and he guided us with his moral compass. He was a respected member of his own community, and I know he would be proud that Jeni and I can help make a positive impact on the Parker community, too. Since the May issue was all about the ladies, we thought it was only fair the June issue of Parker Lifestyle be dedicated to the gents of our community. FRIED CHICKEN SANDWICH WITH JALAPEÑO SLAW INGREDIENTS (SANDWICH) 1 cup all-purpose flour 1/2 teaspoon ground paprika 1/2 teaspoon garlic powder Cayenne pepper, to taste Boneless, skinless chicken breasts Vegetable oil (as needed) Sesame seed bun Pickles

DIRECTIONS 1. Mix the flour, paprika, garlic powder and cayenne pepper together in a shallow bowl. 2. Fill your skillet with oil to about 1-inch deep and heat to 350 degrees. 3. Coat your chicken breasts in the flour and seasoning mixture, then carefully place them into the heated oil. 4. Cook until golden brown with an internal temperature of 165 degrees. 5. Lightly toast your sesame seed bun, then top with pickles, fried chicken breast and slaw to taste.

FOR THE SLAW Combine mayo, hot sauce, garlic and dill pickle juice with shredded red cabbage, pickled onions and candied jalapeños.

3 cloves garlic, peeled 2 tablespoons adobo sauce 2 tablespoons olive oil 2 teaspoons cumin 2 teaspoons dried oregano Salt and pepper, to taste Choice of steak Fresh flour or corn tortillas Lime, optional

DIRECTIONS 1. Blend the red onion, garlic, adobo sauce, olive oil and seasoning in a food processor or blender, adding water as needed until smooth. 2. Marinate the steak in the mixture for at least 30 minutes prior to grilling. 3. Heat 2 tablespoons of oil in a large grill pan and add the steak, cooking to desired doneness. HOW LONG HAVE YOU BEEN AN ARTIST? Back in sixth grade, my classmates were buying my drawings for 25 cents. In high school, my art teachers bought my drawings. I have literally been drawing every day since high school. I was a graphic designer for 10 years but was hired because I was also an illustrator. I painted in my off hours and sold a painting for $50. It was a gradual process, but I knew that was really what I wanted to do. I have pursued fine art full time since 1997, about the same time I moved to Parker. I realized that if I wanted to compete with the best, I had to do it all in.

Any running or other fitness program has to be based on consistent training, or your body just won’t respond, says Trent, a longtime runner himself who also co-manages the running store that offers weekly group runs and an in-house nutritionist. You’re more likely to stick to your program when a trainer or group of cohorts is encouraging and keeping you accountable to your fitness goals. And don’t underestimate the power proper nutrition has in building great results.
