He doesn’t sport the wild hair of Albert Einstein, though he does have a short mohawk and a mountains-and-sun landscape shaved into the side of his head. But when he talks about the process of creating kombucha, that’s when you really get the sense he’s not just your classic Missoula foodie. He is, in fact, an obsessive master of experimentation. Heath started Nourishing Cultures in 2013, a fermenting business specializing in lacto-fermented veggies and kombucha—a slightly effervescent beverage made from fermenting tea. “I did experiments with the kombucha, with sugar and honey and different amounts and different flavors,” he said. “And at one point every space I had available was filled with jars. The kombucha became more vinegar-y and after five months it would start to mold. But it gave me this insight: Here’s where the fermentation process starts, here’s where it ends, and this is the goal post we want to aim for.” The storefront on Stockyard Road below the North Hills of Missoula has the quaint feel of bygone shops before supermarkets. There is a small refrigerated case of glass jars, each brimming with kimchi, pickles, sauerkraut, and other fermented delights made from locally sourced vegetables. To the left, are the kombucha taps featuring all manner of flavors, which often shift depending on the season. On the particular day I visit, in late November, flavors include apricot, peach, lime, and pineapple. I admit to Heath that I haven’t been a huge fan of kombucha in the past but the smooth balance of sour and 12

sweet in the lime has me rethinking my resistance. By the time Heath has made me a cocktail of apricot, peach and de la creme, I’m a convert. Heath runs Nourishing Cultures with his partner Alaina Dunne, whom he met at the Clark Fork Market. She was working at the

She’s taken Heath’s wild experiments and honed them, organizing the data and developing a system that provides product consistency. Kombucha, which uses a symbiotic culture of bacteria and yeast (commonly called a “mother”) has its origins in China, Russia, and Eastern Europe, but it’s become a popular trend in the U.S. because of the healthy bacteria it provides. Heath got into fermentation early. He was fascinated with growing and preserving food when he was a kid in Gettysburg, Pennsylvania. When his grandmother died the family put her cookbooks in a box and gave them to Heath. It was about 15 years ago that he opened one of the books and found a recipe for pickles. He fermented the pickles in a five-gallon bucket until they tasted delicious, and then he canned them, as the recipe required. But canning them didn’t make them taste good, he said. CONTINUED >

“I had this eureka moment where I was like, ‘Holy cow, I just killed the best part of those pickles through the canning process.” His experiments afterward with fermentation helped inform his approach to making food and drink for Nourishing Cultures. Most of the kombuchas are perfect for mixed drinks. For instance, the lime can make a good Moscow mule and adding the peach or apricot to orange-cherry mash and bourbon serves as a kind of Old Fashioned. On the horizon are other experimental flavors such as root beer and cola. The spring brings Heath’s favorite flavor of all time: lilac. He still has a keg from last year that he said has built up a perfect light fizz and that will remain in his private reserve. One of the biggest sources of pride for Heath and Alaina is that they source locally. Almost all of their teas come from local shops including Lake Missoula Tea Company and Montana Tea and Spice. The vegetables come from local farmers. “It makes you happy when you know you’re doing something that is supporting everyone,” Alaina said. “It brings you joy.” Heath agreed. “It’s not about money at the end of the day. At the end of the day, it’s about building a local economy.”

Giving a session felt like a familiar practice, similar to the landing of love when we pat a friend’s back or hug someone we’ve missed. For those fleeting moments, we are present in healing. Before I end my first session in practice of what I’ve learned through Inner Peace Reiki, I pick up the wrist of my recipient and hold it the gentle way the cardiologist once did for me, several years ago. I don’t feel for a pulse but I linger to let them know that they’re alive, despite everything.

IF YOU’RE IDLING AT THE CROSSROADS OF THIS NEW YEAR, DON’T FRET. Jessica Butts is riding shotgun. She knows how to navigate the map to our greatest aspirations. However, she may turn off your car, put it in park and take away your keys. As CEO and creator of Front Seat Life, Jessica helps people achieve their goals by combining her psychotherapist background with her foresight as author, speaker, and coach. She asserts that, whether in life, love or career, the only way to move forward is to begin from within. “I say be unapologetically who you are. There’s an epidemic in our country. People don’t know who they are, what they believe, or what’s important,” said Jessica. Clients crave that clarity. Unfortunately, moving from therapy to coaching doesn’t always work. “After therapy, people ask, ‘Now what?’ That’s where therapists usually leave off and coaches usually pick up. There’s a lot of excellent coaches out there doing good work, but they don’t have the skills to do the digging in, and therapists do a great job of that but they don’t have a lot of helpful tools when it comes to reaching goals.” By marrying her counseling and coaching skills, Jessica can provide seamless guidance. Still, even with all the tools she employs, it’s not a straight path from A to B. “It’s a circle, not a line. You might move forward, go back, get stuck, then go forward again. We’re always moving along that circle, no matter where we’re at in life.” When we do become stuck, Jessica has advice for that, too. “We have an internal mechanism called the Ego. With thoughts like ‘You’re lazy,’ ‘It’s not worth it,’ or ‘This will never work,’ the Ego keeps us stuck. When we see it, we need to greet it at the door and say, ‘I’ll push past you anyway.’” As she points out, that will happen again and again. “Our job is to know that it’s going to come. Getting stuck is not a failure. It’s just awareness.” 28

So, after we get unstuck, how can we make our goals stick? Again, Jessica starts with awareness. “When setting goals, set them with emotions attached. This makes goal-setting 100% more effective. Don’t stop at words on a piece of paper. Visualize how you feel when you have that desire. What do you look like with that goal met? Are you thankful or empowered?” Not only can heart-level work apply in life and love, it can guide career choices, too. Jessica helps her clients translate their experiences into successful businesses that reflect who they are and what they want out of life. Robin Miller, a participant in Jessica’s Front Seat Life business training, experienced that first hand. “What I have learned from her and her team of experts in 3.5 months has not just changed my business, it’s changed me from the inside out!” said Robin. In addition to her business training groups, Jessica shares practical tools and resources on a variety of platforms. From her home in Seattle, she offers oneon-one sessions. She’s also a coach to corporate businesses and travels as a regional trainer and speaker. Online, she hosts master classes via membership to @frontseatlife on Facebook. PLEASE STAND, PLACE YOUR HAND ON YOUR HEART, AND JOIN ME IN RECITING THE OATH OF THE HOLIDAY HANGOVER: “I overindulged. I know I should lose weight. I will try to lose weight. For a few weeks, anyway. If I must.” I’ve recited many versions of that oath since I was ten, when my pudgy body and I stopped being best friends. That was 35 years ago, and my decades-long struggle with weight has left behind quite a collection of lost-and-found feelings. Rummaging around, I’ve found some wrinkled confidence, a few smelly and slightly stained expectations and a barely-used sense of accomplishment. Before I could reclaim any of that, I thought I had to first lose weight. Then, I changed my mind. However, it wasn’t so simple. I had to move through several layers, the first being my desire to lose weight. So, I started a blog and called it “100 Pounds in 1 Year.” Writing about weight loss reconnected my head with my body. For years, I had walked around like a floating head, ignoring everything from my neck, down. That reunion got me moving again. I got back on my bike. I experimented with yoga. I started hiking Missoula’s trails. I felt so good that I started dressing up again. I bought a new bra (and actually wore it). I put on makeup each morning. Both required me to face the mirror again. I saw myself all gussied up and sassy and said, “Girl, you’re a large person. You ain’t foolin’ nobody. You’re already taking up space, so START TAKING UP SPACE!” At first, I took up physical space. For example, I stopped squishing my frame into small chairs and chose wider seats instead. Next, I inhabited more emotional space. I stayed with my heart as it broke, healed and expanded over and over again. After that, it became easier to take up public space and I could step into a room with confidence. Ironically, the more I moved the less I cared about the scale. All of this change felt more honest than trying to squeeze into my mind’s unrealistic perception. So honest, in fact, that I deleted my blog. I started a new project called “1 Less Chick on the Couch.” I celebrate being active at any size by sharing stories of big bodies doing big things. That enthusiasm boomerangs back and encourages me to stay active. We need more public examples of active, bigger bodies. Otherwise, it’s just too easy to fill the void with whatever we think we should become. With 1LessChickOnTheCouch on Facebook and Instagram, I promote a simple idea: just move, no matter how that looks or how we look doing it. Shifting my focus from weight loss to movement has helped me reshape my self-image. I have girth. I have grit. Now, no number on a scale could fit as well as my own skin. 34
