WHAT ARE THE FOODS AND BEVERAGES THAT BRING YOU LIFE? I’ll go first: My grandmother’s homemade tortillas and a perfectly pulled espresso.

Growing up, every occasion was ripe for Mexican food: Birthdays, Thanksgiving, Christmas, Tuesday nights, breakfast, Easter, when I was sick, when I was happy, when I was sad, and every other meal in between. This was likely the result of two main factors: my father’s family and their Mexican ancestry, and growing up in San Antonio.

Espresso, on the other hand, did not enter my life until college. Like countless others, I became enamored with the effects of caffeine around the same time that I put off studying for an exam a little too long and ran out of daylight. For some time, I wanted to be a coffee roaster. I became a barista, drank more espresso than I would care to admit, and in the subsequent years, have worked hard to become a functional adult even without multiple cups of coffee. [This is still occasionally a work in progress.]

AN EDITOR WALKS INTO A KITCHEN... IMPRESS WITH CHEF DANE HIETT'S MISO BUTTERNUT SQUASH SOUP ARTICLE BEN WIESE + DANE HIETT | PHOTOGRAPHY DANIELLE WEBSTER

THE ART OF HOLIDAY MEAL PLANNING OFTEN LIES IN HOW MANY RISKS THE COOK IS WILLING TO TAKE. Between the food selection, ingredients, cooking space, time of execution, and hungry guests peeking in for a sample or two, there is a level of chaos one must be willing to live with if they are going to run the show. But the holidays call for many things from the other participants as well: Warm hospitality from hosts; conversation that is both meaningful and entertaining from the guests; food that is weighty and lasting, but not threatening to put the room to sleep. [But perhaps that’s not always a bad thing.] It is impossible to traverse every little detail of holiday season without imperfections cropping up. But it is possible to create a meal that is elegant, delicious, interesting, and light enough for seconds. At the end of the day, holiday meals are more than the food itself – it’s an art form, a bridge between parties, an experience that can be undeniably special.

For a year-and-a-half, Schlegel learned all things pertaining to vineyard management—how to import wine into the United States, what to do when a surprise hail storm destroys around 40% of his harvest, and whether his dreams would even be worth all the trouble. Though the year-and-a-half of time living abroad tested his resolve, it served as an essential springboard for the next phase of his life. “This has been a path for me as long as Snooze has been my path, and I’m hoping to use this as my last professional runway in life, while still getting to play in the Snooze world.”
