Hello, BuckHaven.

y son calls a mere grilled cheese, a “cheese panini.” My daughters know more about the importance of marbling in beef than most carnivores. When they requested surf and turf for Valentine’s Day dinner, there was a reminder to be sure this included the tail and a petite filet, thank you very much. We eat like kings. And that’s in our own kitchen. VenThe editor and the Dunwoody boys of Old turing out, we carefully consider not only Fourth Distillery the cuisine (from the land, sea or garden), but the type of service (from chatty foodie wait staff or from a familiar bartender) and convenience (5 or 15 minute drive)? Such dilemmas, right? We are thoroughly spoiled by all our neighborhoods offer and are continually blessed to be able to step out so often. We don’t take that for granted. In this delicious Food & Wine issue, you’ll meet men and women of BuckHaven who make good food a priority. Jackie Fukuya-Merkel built her sushi restaurant, Bishoku, inspired by her Buckhead restaurateur father, and now supplies sushi for the Ritz Carlton’s Sunday brunch, for the St. Regis, Lowes Hotel, Mandarin Oriental and Chateau Elan. We also introduce you to an invitation-only wine club for women in Buckhead where education and friendship mix monthly.

Pace Academy’s Parents Club recently launched the Citizens of the World Travel Grant Program to increase access to Isdell Center for Global Leadership (ICGL) study tours. The ICGL supports a global education for every Pace graduate and sponsors student study tours. Travel grants cover airfare once in Middle School and once in Upper School. The impact has been tremendous: a 55-percent increase in Upper School participation, and a 186-percent increase in Middle School.

TURNER IN CHARGE The Georgia Restaurant Association (GRA) has announced the 2015 Chairman of the Board for the association, Ryan Turner, current vice-chair for the GRA and co-founder and CEO of Unsukay Community of Businesses, the parent company for Muss & Turner’s, Eleanor’s, Local Three and Common Quarter in Metro-Atlanta. Since college, Turner has worked in every role in a restaurant from dishwasher to bartender. Turner served as the food and beverage manager at East Lake Golf Club prior to opening Muss & Turner’s in February of 2005. He and his partners opened Local Three in late 2010, Eleanor’s in 2012 and Common Quarter in 2013. In 2011, Turner and his partners received the GRA’s Restaurateur of the Year award; in 2013, they received the GRA’s Restaurant Neighbor Award for their involvement in founding and launching The Giving Kitchen. Turner currently serves as Board Chairman of The Giving Kitchen, a 501c3.

MONTESSORI FOR ALL Springmont is offering two newly enhanced programs for their community. The school developed Plus, a new educational support program for students challenged by dyslexia or ADD/ADHD, to benefit those who need supplemental instruction integrated with the Montessori classroom experience. The Plus Program provides students who have a diagnosed language or reading disability individually tailored instruction in individual and/or small groups by a learning specialist. Springmont also enhanced its Suzuki program for ages nine through 12. They added viola and cello to the violins, so there is more of a chamber music feel to the group. Springmont.com

WESTMINSTER LAUNCHES JANTERM PROGRAM In January, The Westminster Schools introduced JanTerm—an intensive, three-week course of study that allowed Upper School students to focus on a single topic in great depth and at an accelerated pace. Through this immersive learning experience, students participated in unique, hands-on activities in the classroom, and also had opportunities for off-campus field trips and overnight travel. A few course offerings included “Behind the Scenes: Theater, Film, and Television in Atlanta,” “Ecology and the Culture of the Georgia Coast,” “Electronic Fashion: e-textiles and Wearable Computers,” “If You Build It: Designing Stadiums for Communities,” and “Entrepreneurship: An Introduction.”

WALKER GIVES Some 280 students at The Walker School, in grades 1 through 5, recently participated in a “Day of Giving” in support of five local schools and nonprofit organizations (Powers Ferry Elementary School, Books for Africa, The Hope Center, Meals on Wheels, and the AFLAC Cancer Center at CHOA). This was the first time the school has done this Day of Giving event. It replaces end-of-term holiday parties with a very meaningful experience for the kids. As a part of its overall goal of building a well-rounded educational experience, the Cobb independent school encourages and provides opportunities for students to be active in community service projects.

A very proud Manuk invited me to tour his updated, state-of-the-art facility, which is just upstairs from the bright showroom, and took me through the process of having a piece of jewelry designed. One of the things that distinguishes Luxor from most other jewelers is that there is no middle man and all repairs and custom pieces are completed on site. Many jewelers, large and small, typically send custom work and repairs out town or out of the country. Luxor creates custom pieces for jewelers all over the country. As a jewelry lover myself, it was fascinating to see the process and learn just what goes into creating a custom piece of jewelry. I watched an artisan working with gorgeous diamonds being set into a fabulous engagement ring. A tedious task! tlantans and wine fans everywhere are invited to experience the High Museum Atlanta Wine Auction, March 25-28, with the theme “Uncork a Southern Tradition.” Celebrating its 23rd year, the auction is the largest charity wine auction in the U.S. benefiting the arts, the eighth largest overall, and the largest fundraising event for the High Museum of Art. Funds generated by the Auction, which amount to more than $22 million over the last 22 years, contribute significantly to the High’s exhibition and educational programming. The year 2015 marks the 10th anniversary of the Paddle Raise, which has contributed over $1 million to Art Access programs at the High. Since 2006, the Paddle Raise has supported nearly 72,000 students. This year’s Special Guests of Honor are husband and wife Charles and Ali Banks of Terroir Capital LLC, an investment firm specializing in hospitality and wine properties with connections to Mulderbosch Vineyards of South Africa, Fable Winery of South Africa, the Napa Valley Leviathan Project, the Burgundy Negociant Project Maison L’Orée, Sonoma’s Wind 16

Buckhaven Lifestyle sat down with the Banks to uncork their passion for the High Museum. BHL Tell us why the High Museum is special to you. AB/CB We believe in the intersection of art, community and business. Our company’s mission statement begins with ‘connecting people and inspiring dreams.’ Those two things are what light us up and change what we do from a job to a calling. The High Museum of Art does both of these beautiful things in our hometown – it’s a terrific fit for us! BHL You have a deep connection to Buckhead. AB/CB We both grew up here and went to Westminster. We moved to California in

BHL And, philanthropy is an important part of your life. AB/CB We have a winery called Cultivate and we donate to charities all over the world. We donate 10 percent of gross revenues, over $500,000 so far. Our favorite is Acres of Love, an orphanage in South Africa. The organization does incredible work and is the passion project of an amazing couple who, like us, love working together and have surrounded themselves with a fantastic team that believes the impossible is possible and makes it happen. BHL You have also made your passion your business. AB/CB We own and operate wineries all over the world through a company called Terroir Capital. The company includes an intricate web of vision-driven projects that are all complementary of each other. Wine is technically our business, but what drives us is discovering people who love what they do and want to share whatever that is with others. We find brilliant but undercapitalized visionaries and help develop and grow their businesses. I like to say we are similar to a venture capitalist in the wine and hospitality world. BHL Can you share a few of your favorite nicely priced wines? AB/CB I do a fair amount of shopping for wine online and at auctions. For my every day buying here in Atlanta, I like Sherlocks, Cellar 13 and Perrines. I haven’t been back long enough to discover all the other great places to shop. I enjoy wines from the Rhone and Burgundy for reds and I love California, New Zealand and South African whites. Mulderbosch Chenin Blanc (a biased favorite) as well as Wind Gap Trousseau gris. I look for bright, crispy whites and fresh, focused reds.

itting at the quiet bar at Kevin Rathbun Steak at the end of Krog Street, I sigh, feeling the weight of the day fade as Justin sizes me up and listens to my description of the perfect drink to quench my Thursday thirst. It’s not on their traditional and comprehensive cocktail menu, but the martini he brings is textbook. Is he a mind-reader? The glass is filled generously, served with a professional air that reassures me that everything will be all right. The rest of the meal, taken at the dark wood bar, was more than all right. It was, as it always is, exceptional. When I told Kevin Rathbun this, as he kindly came to say hello, he immediately credits his staff. I ask how he manages to land, then keep bartenders, servers and managers who look you in the eye, anticipate your next need and make you feel like you are their favorite guest.

“Well, we spend more time during an interview figuring out if the candidate is nice, a good person,” says Rathbun, who opened Rathbun’s, Krog Bar and Kevin Rathbun Steak in Old Fourth Ward and KR Steak more recently on Peachtree Hills. “Sure, we look at their experience, but worry more that they are just ... nice.” Rathbun meant he doesn’t hire jerks, but he, himself, is just too nice to say that. As one of my very favorite spots in all the world, the bar at Rathbun Steak never disappoints. I’ve enjoyed a more formal (but never stuffy) experience in the dining room and a less formal (but always polished) meal out by the wood-burning fireplace abutting the Beltline. We started with a half dozen Powder Point oysters, from Duxbury, Mass. They were meaty and crisp, served with a champagne mignonette that commanded respect. The dry-aged steak for two was served sliced, in its own juices, by Justin who continued to stay alert and sweet (and refoldedmy napkin after I

old familiars. Co-owner Andy Minchow is often behind the bar along with a small bevy of attentive and unpretentious but savvy bartenders ready to muddle, squeeze, measure, shake and tincture. The cocktail menu changes a few times each week, for goodness sake. We started with a lovely pantry board featuring local cheeses and a carefully f lavored f latbread (this one f loated up to my lips laden with arugula, pecan pesto, chevre and a touch of tomatoes). The menu this month will feature beautiful produce from Grant Wallace Farm and another cast iron pie (fans follow the pie news closely, waiting for February’s rabbit pot pie), says general manager Caitlin Crawford, who is also an accomplished baker and photographer (pop a forkful of her dark chocolate mousse pie and you’ll love her forever). Last time I cozied up to the bar, I had the half roast chicken, served crispy on a bed of butternut dumplings, confit Brussels and caulif lower puree with turnips. I couldn’t get enough of the Ration and Dram vegetables and can only dream of recreating that soiree at home. Good thing Ration and Dram is open every day for dinner and for brunch on weekends. At the top of my Honorable Mention list is The Paper Plane in Decatur. Come on, you can do it! Venture outside Buckhaven and you will be generously rewarded for your small effort. This place is a gift. The staff will welcome you with a sort of small-town graciousness that’s a treasure. Their refined attention will immediately put you at ease as you address the wine and cocktail list. The succinct menu (that is to say, short but inclusive of your desires) includes a fabulous Swiss cheese fondue that will make you swear you just spent the day skiing. “Members and non-members only,” is their motto. You’ll be a member immediately. (Tell them I sent you.) Another long-time in-town favorite of mine is the One Eared Stag in Inman Park. You can actually park on the street in front of the restaurant and get a table without a reservation most nights. That’s not to say you won’t be f loored by the imaginative menu and satiated by the tastes that come out of Chef Phalen’s kitchen. Now in its third year, locals know and love the Stag for the fried chicken dinner served up every Monday night, a chef ’s board the size of a small island offered up for Sunday brunch and the secret meat stick, a burger so monumental that grown men cower in its presence. Yes, yes, yes, I love BuckHaven’s many amazing restaurants as much as you do. But, why not drive or Uber into another of Atlanta’s charming neighborhoods to experience a meal that will leave a very good taste in your mouth.

T

here’s a special allure to any underground scene. History has proved that mixing secrecy with some tasty spirits yields an intoxicating appeal where camaraderie, connection and your beverage of choice are served barside. Think speak-easy. While Atlanta’s beverage scene has long been established, when I heard rumor of a new underground women’s wine organization, I had to snuff the scene out. Upon arriving, I’m ushered upstairs to a private room at Chastain Tavern where a gathering of women dressed impec-

cably are chatting, noshing and swirling wine goblets. It’s a vista out of nirvana, and I get to work right away (tough job!) tasting, talking and finding out more about the club. Created by Candie Nelson, manager of Atlanta Wine on Roswell Road, W.O.W. (Wine Organization for Women) is still in its infancy, but growing steadily. Nelson noticed a trend in her business available to only menthat of back room wine tastings by wine makers and distributorsand set her mind to making the same privilege available to Atlanta women. The first W.O.W.


gathering occurred a year ago with 40 attendees. Growth has been steady with entrance gained through word of mouth or email invite. Reservations are necessary along with a nominal entry fee (my event was $25, well worth the small price tag for a sampling of over 20 delightful wines and champagnes). The beauty of the event lies in the “female –only” makeup, creating an intimate affair where women can relax and taste wines, network and meet other women. Distributors are also female and there is no heavy sales push. If you enjoy a varietal, all bottles can be purchased through Atlantic Fine Wine at a later date. The idea is ingenious. I swirl a Perrier Jouet Grand Brut, a floral sophisticated bouquet for a refined palate. Like my champagne the women in attendance are also sophisticated. I chat with Dr. Jeri Breiner, who is sampling the Perrier Jouet. We’re in agreement that it’s a beautiful palate as she explains her attendance. “It’s important for women to connect,” says Breiner. “So many of us love wine and enjoy collecting and this is a fun way to meet and bond with other women while doing something we enjoy.” As I sample a 2011 Bookwalter Subplot No. 27 blend (a bold and complex red) her friend, Lorri Brown chimes in. “We’re grateful for these events because they bring an innovative way to try new wines and meet new people,” Brown says. Innovative indeed! Like my blend in hand, these women are different--spicy, complex, supple. Determined to cleanse my palate, I meander to the appetizer table. Barbara O’Neill, founder of The Cookie Studio, is table-side. So are her cookies (YUM). Her friend Collin is also with her, founder of Atlanta’s Aunt Lollie’s Pimiento Cheese line, a favorite of mine. I’m ecstatic to meet both women and we chat over a 2011 Adelsheim Elizabeth’s Reserve Pinot Noir, which pairs beautifully with Barbara’s decadent chocolate chocolate chip cookie. Both women enjoy the business networking aspect of W.O.W. because new ideas and business connections are born over a glass of hearty wine. It’s easy to see how--I have made several new friends in the hour and striking a conversation couldn’t be simpler, we all have comments on the wine we’re sipping. Nelson introduces me to Martha Church, W.O.W.’s first wine club member, and we share our thoughts on a respective glass of 2009 Paitlin Langhe Rosso. I’m interested in what drew her to W.O.W. as she’s been a major factor in the growth of attendees. “I got behind this because it’s an amazing concept,” says Church. “It’s a different vibe from other tastings I attended around Atlanta because it’s just women. It’s something that is ours only, and I can share this with my diverse and wonderful female friends. I’m so pleased that there is finally this opportunity for women in Atlanta.” Atlanta author Grace Hawthorne joins the conversation. “What a lovely idea to get women and wine together,” Hawthorne says. “We enjoy ourselves every time we attend these gatherings and walk away inspired.” Speaking of enjoying myself, I could make a bawdy reference to the fact that the wine is the reason I feel so at home, but in truth,

3 organizthe atmosphere is relaxed because of the attendees and ers. I’ve met eloquent women, enjoyed deliciously-layered wines and consumed intelligent conversation. I’ve found my muse: what is good for the writer is good for the pen. Women and Wine, what a combo!

A Buckhead Tradition is Reborn in Sandy Springs with Bishoku Sushi Article Helen Grebe

I

t’s a busy day on Roswell Road, cars jutting in and out of lanes as I turn my blinker on and slide into a tight parking spot in Parkside Shopping Center. It’s lunch hour and I’m anticipating the sweet crunch of a spicy tuna roll that will yield respite from my looming deadlines. Bishoku is my destination, a sushi restaurant that serves both lunch and dinner along with seasonal specials. Bishoku, owned by Jackie FukuyaMerkel, a gorgeous woman who is upbeat and dressed smartly, yields a warm energy upon entering. There’s an inviting mix of wood tables with lanterns overhead while Jackie Fukuya-Merkel supple jazz plays. If Jackie’s name sounds familiar, you’ve probably dined at her father’s restaurant, Sushi Huku, located in Buckhead on Northside and Powers Ferry for 20 years before he sold it to new management. Jackie grew up in the business with an attention to detail inherited from her father. Bishoku is the sole provider of sushi for the Ritz Carlton’s Sunday brunch, for the St. Regis, Lowes Hotel, Mandarin Oriental and Chateau Elan. Jackie has a strict ethic of quality, paying for the best fish available and shopping for her own produce while inspecting every item before it enters her kitchen. “Working hard is the only way to make this business work,” she emphasizes as I peer at the fresh sashimi being sliced at the 24seat sushi bar and inhale a steaming bowl of miso soup. I liken Bishoku to an elegant, Asian version of the infamous pub on television’s “Cheers:” a home away from home, or in this case, a second dining room away from your own, where everyone knows your name and your favorite order. While I peruse the menu, Jackie is moving constantly, greeting a regular couple by name while reminding another group of departing patrons that she’ll see them at Bishoku’s sushi and jazz night (Thursdays at 6:30 p.m.). “I know 80 percent of the people that walk in my door,” notes 24

Jackie, “and I believe that tradition, combined with delivering quality food, sets us apart from other sushi destinations.” For lunch, I settle on a combo, reasonably priced at $13, which includes my choice of two sushi rolls (spicy tuna and their bestselling crunchy crab roll) soup, salad and dessert. The salad is my favorite portion of lunch, crisp with a warm, spicy ginger dressing. The sushi rolls are delicious and just what you expect from a traditional sushi restaurant: no fancy fusion ingredients like mango or spicy remoulade sauce. My rolls are pure…to the point…classic sushi. The presentation of dessert delivers that extra something that sets Bishoku apart. I’m satiated and well fit to return to my hectic world. Before paying, I glance at the dinner menu, for future returns. I’m eyeing the lobster and avocado spring rolls at $10.95 (a bargain) and the short ribs marinated in miso (yum). My husband will flip for the king mushrooms and snapper in foil with a soy ginger sauce (at $14.95 for dinner this is a no-brainer). Complimenting Jackie on her perfect meal delivery she smiles and notes I am now a regular. In the competitive restaurant business, the devil is in the details. eginning the second semester of her master’s program in community counseling at the University of Georgia, Daisy has chosen and discarded six thesis topics and still doesn’t have one. This has become the top item on her to-do list and she plans to make a final decision after celebrating her “Cancerversary” with her husband, Jack, who is about to obtain

a dual doctorate in veterinary medicine. Breast cancer-free for three years, Daisy is ready for the “all clear” from her doctor, but is instead hit with a devastating blow. The day before her “Cancerversary” she learns that her cancer is back and it has spread with a vengenance. Twenty-seven-year-old Daisy now faces a stage four diagnosis and four months

to live. Struggling to deal with daily life in the face of the ticking clock, she tries to maintain a sense of normalcy. When the windows begin to leak in their house, Daisy adds “buy caulk” to her list. Annoyed by the floorboards, she adds “call flooring repair.” Each mundane task keeps her focusing on the day at hand but not the future. Realizing that her husband will be alone, and convinced he will drown in a sea of dirty socks and eat cereal for every meal, she sets out to find Jack another wife. She looks online, in her yoga classes, and searches a variety of UGA and Athens locations. While having coffee at Jittery Joe’s, sitting in the Tate Student Center, and catching the university bus to the psychology building, Daisy searches each woman and develops her list of criteria for Jack’s wife. One prospect turns out to be a little too perfect. Suddenly Daisy finds herself overwhelmed with sadness and asks herself if she should sacrifice her own personal happiness in order to follow through with her plan. Dealing with such a heavy topic, the novel is not as depressing as expected and is actually quite witty. Daisy’s dark humor and comments make her authentic and relatable: “that’s the problem with being a psych major. I can’t just have feelings like normal people. I have to try to under-stand them. It’s exhausting.” Author Colleen Oakley is spot on with Daisy and Jack’s relation-ship idiosyncrasies. She creates a bittersweet world with two characters sharing their final days together, facing the future knowing that one of them will not be around to experience it with the other. ane is the editor’s oldest daughter who lives in Ann Arbor and works at the wonderfood conglomerate, Zingerman’s. Born in England, raised in Hong Kong, Boston and Michigan, this girl has superior taste. Enjoy her take on clam chowder (the white one). 2 tablespoons unsalted butter Half a medium onion, finely diced 2 celery stalks sliced into 1/4-inch pieces 3 tablespoons all-purpose flour 2+ cups chicken or vegetable stock 2 (10-ounce) cans chopped clams in juice 3/4 cup heavy cream 2 bay leaves 1 pound Idaho potatoes, peeled and cut into 1/2- inch cubes Salt and freshly ground black pepper Fresh dill

Heat the butter in a large pot over medium-high heat. Add the onion and celery and saute until softened, mixing often. Add potatoes for a few minutes then sprinkle and stir in the flour to distribute evenly, cook 3 minutes. Add the stock, juice from 2 cans of chopped clams (reserve clams), bay leaves, and stir to combine. Bring to a simmer, stirring constantly (the mixture will thicken), then reduce the heat to medium-low and cook 20 minutes, stirring often, until the potatoes are nice and tender. Then add clams and season to taste with salt and pepper and dill and cook until clams are just firm, another 2 minutes. For the oven toasted croutons:

Toss the bread cubes in the melted butter, parsley and season with salt and pepper. Bake at 350 for 20 minutes, stirring until brown and crispy. Store left-overs in an air-tight container and use for salads or snacking.

2 to 3 tablespoons unsalted butter 1/2 loaf fresh Italian bread, cut into 1-inch cubes 3 tablespoons freshly chopped flat-leaf parsley Salt and freshly ground black pepper
