INDIAN SUMMER IN SPRING

FINE FOOD, A GREAT ATMOSPHER & IMMACULATE SERVICE AT THE RESTAURANT THAT HEADED UP THE NEW WAVE OF INDIAN CUISINE IN THE CITY

W

hen you think of Indian food in Brighton, you think of a new wave of modern Indian cuisine, and at the forefront of this wave, is Indian Summer. Indian Summer has been pioneering authentic regional food from India for nearly two decades. This Brighton favourite food lover’s hotspot is named in The Top 100 restaurants in the UK by the Cobra Good Curry Guide, and has won a wealth of awards, including Best Service and Best Welcome by Brighton Restaurants! It is so important to be welcomed well in a restaurant, and to feel a combination of being made to feel at home, and also a sense of occasion. The warmth you feel at Indian Summer is matched by the expert attention given to the food which is spiced to perfection. The talented chefs come from different regions in India and each brings their own heritage and experience to the table. The team at the restaurant is headed by Rob Heasman, who happens to be a professional and expert musician and recognised in the music industry as a top trumpet player. Indian Summer is therefore an unusual blend of a great event space which can accommodate full bands and an intimate restaurant served by talented chefs delivering pan-Indian fine dining. Indeed, the perfect setting for a party, whether it is a birthday or anniversary. You can also

hire the whole restaurant for a wedding. The restaurant seats 90 guests and is spacious, spotless and comfortable and when lit up in the evenings, magically atmospheric. Indian Summer has a new menu which launches on the 17th of March which includes spatchcock chicken, biriyanis, and some enticing Indian street food served fine dining style! The restaurant has always been recognised as being big on catering for all dietary requirements. Any dish on the menu can be served as gluten free or for vegans. Rob tells us “We take care of everyone here at Indian Summer” and on entering this well run Brighton establishment, you feel that a great sense of care and attention is put into everything from your greeting to the menu and the service throughout. Rob also tells us that they are happy to do special deals for larger parties. You are treated like a special guest at Indian Summer, a VIP, and all this alongside the delicious food – surely the two most important aspects of a successful restaurant. All this is echoed in the excellent customer reviews, such as Trip Advisor, where the restaurant consistently garners top star ratings with plaudits like “heavenly taste explosion” and “curry on a different scale” But don’t just take our word for it, or the myriad excellent reviews online, try for yourself and experience a fine meal and a fine night out at Indian Summer.

My wife and I were blown away We had several courses and each “ “ by the delicious and impeccably one was so tasty! For starters we presented food. We enjoyed a few very reasonably priced cocktails, the atmosphere and staff were perfect! I work in central Brighton, so I decided to go on my lunch break. The service was fast and the restaurant was busy but quiet

e

enough for me to read a few emails. The lunch menu was quite different from the evening cuisine but equally as delicious! I highly recommend anything from the street food menu. The bill was no more money than I would spend on a sandwich and a drink! If you live in Brighton or are visiting for the day you must go to Indian Summer.

shared the tandoori paneer which was an Indian cheese and it was incredible, we loved the dips that came with it. We also shared the cauliflower and onion pakoras which were crispy and cooked to perfection! For mains we each had a vegetarian thali dish which is like several small taster dishes, each one delicious. Bearing in mind neither of us are actually vegetarians and there were plenty of nice looking meat dishes; the flavours were so good that we didn’t find we missed meat at all! The lentil tarka dal was a particular favourite of mine! It felt like Christmas when we ordered the sharing platter for dessert - we were so full up but the food quality was so good that we just had to keep on eating and trying new things! Each little taster was lovely but the mango brûlée was exquisite! I cannot recommend this restaurant enough! Don’t come expecting your generic tikka masalas or kormas, come expecting something on another level!

THE LANDLADY

NORMAL SERVICE WILL RESUME… am writing this column from a hospital bed at the Sussex. To cut a long story short, I was booked in to have an operation the day after tomorrow, but my condition changed last Saturday morning and I was rushed into A and E in an ambulance, accompanied by The very calm Small Daughter. A large operation followed in the evening and luckily my surgeon was on call. I felt very guilty calling him in on a Saturday night. At least he wasn’t enjoying a family break in Centreparks. Being me, as I went under the anaesthetic, I couldn’t help wondering who would go over to Hastings and fix the communal electricity supply, which is something I have to do from time to time. As well as being a nice day out, it is far less complicated if I do it, rather than explain what to do to a complete stranger who will then charge me £100 for the privilege. I had

I

“by Monday morning I was so bored that I was able to send a long winded text to the builder who’s working on the roof there and he fixed it in a jiffy ” been due to go over there and do it on Monday. Luckily, by Monday morning I was so bored that I was able to send a long winded text to the builder who’s working on the roof there and he fixed it in a jiffy without charge, although I’ll definitely buy him a beer or two. One less thing to worry about. I also, of course no longer have to worry about my operation as it was done with no notice at all, leaving me neither time to ponder or even

prepare my bag for my hospital stay. All I managed to do while doubled over in agony waiting for the ambulance, was empty the dishwasher. This, I’m afraid is also typical of me. The only things I put in my bag was my make up and my keys so although I look like a tramp shuffling slowly up the ward, at least I’m a tramp wearing sparkly eyeliner. Better still they say I’ll live to drink another bottle of champagne.....or two.

and a spring roll filled with the the confit leg meat. The addition of orange added a zing whilst the beetroot a subtle sweet earthiness. She made light work of it but in part in the knowledge that her favourite pud was yet to come. I stayed with fish and chose the turbot with prawns. KIng of the sea they say and on this occasion well worthy of the title. The prawns were immaculate, sweet, delicately flavoured and perfect in texture taut but not tough. And to add to the delight a generous finger of prawn toast, that Chinese favourite given an outing on a British menu. The delicate bisque that surrounded the whole was simple perfection. I ate slowly because I did not want it to end. So on to that anticipated pud. One always hopes that it will be on the menu and its stellar quality ensures that it is. Ms C had it on this occasion, the sticky toffee pudding is the eponymous Jeremy’s wife's recipe and it’s as light as a feather, sitting in a virtual tar-pit of shiny toffee sauce, so rich that the surface shimmers with rainbows of reflected light. Need I say more? I chose the pear parfait, a dessert that shows the skills of the pastry section of the kitchen to even further heights. A cleverly constructed pear, half parfait and half poached fruit sat beside a smooth fig compote and a brilliant ice-cream, it was visually delightful and equally tasty. Jeremy is still very much a part of the team here as is wife Elvira who runs the cafe next door where her cakes and savoury dishes delight in the daytime. Service is smart but friendly and the team know exactly what to do and when to do it. Neither of us on this occasion wanted to drink but I was led astray by a small glass of excellent Portugese white. It's a gem. It's easily reached and they always have a fantastic and affordable set menu that sits alongside the a la carte. Borde Hill Ln, Haywards Heath RH16 1XP jeremysrestaurant.co.uk 01444 441102

f longevity is the proof of success then few can be deemed as successful as Jeremy's. It's many years since I was introduced to this Sussex gem by best selling author Peter James but I have been a fan ever since. But although longevity may be an indicator the truth is that Jeremy's is still here because it is blooming' brilliant! Why? Well the answer is manyfold, but at the top of my list comes their commitment to seasonal produce and local provenance, this coupled with culinary talent and classic skills. And on my most recent visit I would add an open mindedness from the chefs to absorb global influences. Head Chef Jimmy Gray recently undertook a year of culinary travels and he now brings to the table some of those influences, but not at the expense of this being clearly a British restaurant. I was joined by Ms C, a fan of Jeremy's too and she started her dinner with a dish of fresh papardelle with

“A virtual tar-pit of shiny toffee sauce, so rich that the surface shimmers with rainbows of reflected light” mushrooms and egg yolk, a somewhat unusual choice for her but one that she absolutely relished and I could see why, beautiful pasta, a mix of mushrooms all held together by the soft egg yolk which she broke into the whole. I was delighted she chose this because she would normally go for scallops, which meant that choice was open to me. Well I was blown away by the perfectly cooked beasts and all that they were surrounded by. There was a gentle creaminess and the musky flavour of the pink corals with a gentle spiciness too. Seafood heaven. Ms C went for duck at the next course, perfectly cooked to a medium pink as requested and served with immaculate vegetables

Their reasons for calling it this is summed up by this quote: “The present outbreak of lower respiratory tract infections, including respiratory distress syndrome, is the third spillover, in only two decades, of an animal coronavirus to humans resulting in a major epidemic.” Many are not happy with this name due to the word SARS and connotations of a more deadly disease, harking back to the 2002/2003 outbreak of SARS. The WHO and many media will not use the correct virus name for this reason in public health messages, to avoid misunderstandings and more global panic.
