EDITOR’S LETTER letter to boro: Dear BORO, Just wanted to say thanks for the work you put in! I LOVE the mornings I get a copy. It’s the only handouts I’ll actually take! The July edition was inspiring! It seems like many of the Astorians I meet are transplants from around the world that came to NY to pursue life in some way. The stories you highlighted are examples of people pursuing their passions and that’s what makes this place great! In fact, to me BOROmag is a monthly reminder of what makes Astoria/LIC an amazing place to live. How I love you so. From the moment we met I knew we’d be a perfect pair. All your tasty food, sweet treats, fitness classes, sweeping views, artists, musicians...I could go on and on. I just knew we’d be BFF’s.

Thank you for all of the time, energy and passion your team puts into making the magazines! I’m always finding new restaurants, gyms, bars, etc. You’re a continual resource for what Astoria/LIC has to offer! LOVE IT!

While Queens has longtime been famous for its ethnic culinary diversity, a recent boom in restaurant openings has fervently affirmed that claim. In fact, on Urbanspoon, Astoria and Long Island City have more restaurant listings than Hell’s Kitchen and Williamsburg combined. Read on for a spotlight on four recently opened neighborhood heavy-hitters, as well as a preview of 11 more that have already or are scheduled to be open within the month.

“The pizza was invented in Naples, and then we developed it in the North,” grins Danielle Balbos, pizzaiolo and executive chef at Basil Brick Oven Pizza. Owned by Joe Giannola (who also owns neighbor Twirlz Yogurt Bar), the pizzeria features an astonishing pizza menu, along with a few antipasti, pastas and panini inspired by Chef Danielle’s home in Piemonte, Italy. “When you truly, really love doing something, how can you possibly go wrong?” asks the owner of his talented pie-master. Similar to a true Neapolitan pie, the wood-fired oven is kept piping between 850 and 900˚F, the ingredients are imported from Italy and the mozzarella is made fresh daily (60 pounds of it a day, to be exact). So what makes the pizza at Basil Brick Oven different from the Neapolitan “artisan” pies that have taken the city by storm? “Those pies cook in 90 seconds,” explains the chef, “and are not built for toppings – they can get really soggy.” Using a special recipe that yields a stronger, less doughy crust, and by baking each pie for 4 minutes, his Northern Italian pies are able to properly hold a variety of gourmet ingredients while still bragging a crisp, thin crust. Exotic combinations include smoked prosciutto with brie, yellow fin tuna with caramelized onions, mussels with roasted garlic and parsley and Williams pears with gorgonzola.

The Lunch Box When childhood little league buddies get together to launch a restaurant in their hometown, what concept could be more fitting than The Lunch Box? Featuring a throwback to classic all-American favorites – like fried chicken with mac-and-cheese and a loaded pastrami sandwich – Lou Romano Trujillo and Louie Diaz have struck a winning combination. The “All-In” Burger could rival, if not topple, the top contenders on any “Best of ” list, with a juicy, charred 9 oz. ground steak patty loaded with barbecued onions, smoked cheddar, crispy bacon, fried egg and a dollop of guacamole on a toasted brioche. The Lunch Box, whose front window is a mini museum of lunchbox memorabilia, also offers lighter fare, like a grilled fish wrap, watermelon-blue cheese salad and a full juice bar with smoothies and shakes. The joint feels like a real New York neighborhood hangout – high quality, no-nonsense food with a backyard patio featuring a small stage for local performers and a mounted movie screen for televised sporting events and special features. 25-17 Astoria Blvd., Astoria (718-932-4400)

Sugar Freak

It has been a long haul for husband and wife owners Al Lau and Michelle Addeo, but despite a few significant road bumps (including a neighborhood organization protesting their liquor license), Sugar Freak has officially opened its doors, revealing one of the most lovingly designed interiors along 30th Avenue. Antique milk bottles serve as sconces, patchwork pillows provide seat cushions, retro desks are mounted to walls for bar high tops and an old TV hutch houses Tabasco and polished stemware. The menu is Louisiana-style, and the reviews are rave. Boudian balls arrive at the table like Cajun arancini – golf ball-sized rice jeweled with crawfish, breaded and deep-fried. Hurricanes with mango rum get your toes tappin’. Tables gawk over catfish po’ boys and a steaming skillet of crab and head-on prawns. And while the culinary team has recreated several N’Awlins favorites, the real gems come from Addeo’s handiwork herself, like the Chess Pie. Don’t plan on sharing this little mason jar lined with a buttery crust and filled with velvety fudge pudding and peanut butter crumbles. It’s reason alone to return. Rumor has it a smaller bakery will soon be opening around the corner, featuring even more of Addeo’s baked confections.

Salt & Fat

Despite the attention-demanding name, this Sunnyside hotspot features inventive new American small plates, all created at the creative whim of Sunnyside native Daniel Yi. Dinner service starts with a bag of bacon fat-popped corn, but ends with mini jugs of cran-yogurt probiotics. Of the 17 menu items, only four creep above ten dollars, though each dish combines reasonable quantity with exceptional quality. Grab a group of adventurous friends and enjoy a hand-tailored sampling. Crack & Cheese is one of the most popular dishes, with deep-fried potato gnocchi, béchamel cheese sauce and salty bits of bacon. Plump mussels arrive with Chinese sausage in a Thai oyster sauce. Hampshire pulled pork sliders with a sweet and spicy sriracha BBQ kick arrive three to a plate for $9. The Sculptures of Jack Howard-Potter Story Daniel Crown

Like most art school students, when Jack HowardPotter went through his feeling out period in college, he experimented with a myriad of different mediums in a search to find the one vessel that would ultimately define his vision. And then the Long Island City resident discovered metalwork. He had already developed an affinity for durability, and the perpetuity of steel fascinated him. “I was really drawn to the permanence of it,” he says. “If the Louvre burns down and the sprinklers don’t work, then the paintings are just gone. Steel is much more durable.” Ten years later, the artist works exclusively in steel. And while the idea of using a rigid, semi-permanent material immediately brings to mind images of stillness and tranquility, Howard-Potter’s statues nevertheless seem to come to life. The sense of movement in his artwork is almost palpable. While the sculptures’ surreal nature suggests supernaturalism, the fluidity of the artist’s pieces ground them within a comparative reality. Despite the metal machinations that work at their core, his creations never feel robotic or in any way stilted. In this way, his statues strike the eye like a deconstructed Degas sculpture, as if one of

the famed Impressionist’s works has been stripped of its façade, its skeleton left exposed and unadulterated. “I come out of a very traditional and conservative mindset in terms of sculptures in that I really only focus on the figure,” Howard-Potter says. “[My sculptures] are definitely contemporary art, but they also come from a very classical tradition.” To create one of his pieces, Howard-Potter grinds at steel for six to eight hours a day. Each piece of metal is bent cold by hand; he foregoes flames or the use of bending machines, both of which he believes prohibit the sort of flexibility he’s going for. “I actually spend much more time bending and forming the pieces of steel than I do welding,” he says. “It’s a labor intensive and time consuming process.” It appears that all of this hard work has been worth his time. His artwork can be found all across the country, mostly in outdoor sculpture parks where the sturdiness of the steel can be perhaps most effective – stubborn and unmovable by definition, fluid and elegant all the same.

While New York City’s recycling statistics may leave much to be admired, the city’s growing green initiatives are at least showing a measured amount of progress. For the most part, the right systems are in place to make recycling fairly easy to do. And why wouldn’t we? If the Crying Indian has taught us anything, it’s that recycling is the very least we can do. According to the folks at the Western Queens Compost Initiative (WQCI), however, recycling alone might not be enough. As Leanne Spaulding, co-founder of the WQCI, points outs, food waste accounts for nearly 17 percent of the garbage that winds up in New York State landfills. To put this into perspective, the five boroughs combined to ship out enough refuse to despoil 140 acres of virgin land per year. This means food byproducts alone are responsible for nearly 24 of these acres. What’s worse, it turns out that even biodegradable products can become hazardous when exposed to certain conditions. When organic matter is trapped in a landfill, its decomposition rate slows to a crawl. The subsequent putrefaction process would require a PhD. in organic chemistry to accurately describe, but when it’s all said and done, even biodegradable castoffs like banana peels and orange rinds eventually brew into a potently noxious gas. “The methane created in a landfill is 27 times more potent than carbon-dioxide when it comes to punching holes through the ozone layer,” said Stephanos Koullias of the WQCI. “It’s pretty strong stuff.” 22 | BOROMAG.COM | AUGUST 2011

By contrast, when organic matter is separated from other material, it actually feeds the Earth, breaking itself down into a particularly effective fertilizer. This isn’t a modern revelation; the art of composting dates back to the Roman Empire, when farmers would leave giant piles of misspent produce to decompose in the sun, ultimately creating fertilizer for use during the next harvest. These heaps of dead crops would then feed the next year’s crops, and then the next, and so on. Fast-forward 2000 years and the WQCI hopes to keep this timeless cycle in motion. “Providing compost to WQCI means building clean, healthy, organic soils for community gardens and urban farms,” Spaulding said. “By participating in composting, you become a direct steward of the soil, and soil stewardship is of great importance to gardeners and farmers – seeing as soil currently erodes at a pace faster than nature can replenish.”

For an erudite bar patron, the sweltering summer heat calls for a different sort of cocktail. The fiery pangs of whiskey and the balmy punch of Jägermeister just won’t cut it during the Dog Days of August. For this reason, the best area bars offer up summerspecific menus, lists of refreshing drinks that are just as apt to cool you down as they are to take the edge off of a long day at work. For example, look no further than the Astor Room, located on 36th Street between 34th and 35th Avenues, which features a summer drink menu heavy on freshsqueezed juices, bitters, premium spirits and artisanal vermouths. To find out more about how a mixologist breathes life into a great summer drink, Boro checked in with Christopher Vlacich, who described the birth of one of his favorite concoctions from the Astor Room’s summer menu: The Gatsby started with the name, which immediately conjures up images of sprawling seaside lawn parties and sweet summer breezes. The next step was to come up with a flavor profile. There was no doubt that the cocktail needed to be gin based, the quintessential summer spirit. In addition, we agreed the cocktail should also be white in color with citrus notes. We then needed to develop a recipe that was visually appealing as well as balanced in sweetness and acidity.
