Community Health Outreach just commemorated the 20th anniversary of former NASA Astronaut and Jacksonville resident Norm Thagard’s return from the Russian Mir 18 mission on July 7, 1995.

Twenty-eight experiments were conducted in the course of the 115-day flight. The mission culminated in a landing at the Kennedy Space Center in the Space Shuttle Atlantis. Thagard was the first astronaut to enter space aboard a non-American craft and the first American occupant of the MIR.

For 100 years, Big Brothers Big Sisters of Northeast Florida (BBBSNEFL) has provided mentors to deserving students, supported our communities through service projects and enriched students’ academic learning experience. BBBSNEFL’s mission is to provide children facing adversity with enduring, professionally supported one-on-one relationships that change their lives for the better.

As space flight in Florida enters the private sector, Thagard has a former astronaut’s perspective on the ending of NASA shuttle flights. Not unlike the midcentury astronauts from the Clint Eastwood film “Space Cowboys,” Thagard says he wouldn’t turn down the chance to rocket into space again - and this time, if he had a chance, he says he’d go to Mars.

“I’d go back up again if they asked me.”

“I’d go back up again if they would ask me. When I went into the astronaut program in 1978 I hoped I would have been one of the first humans on Mars. I’m disappointed we haven’t been there yet and I wish we would make a commitment to get to Mars,” he said. Thagard is a graduate of Jacksonville’s Paxon School for Advanced Studies (formerly Paxon Senior High School) and the road in front of the school bears his name. He’s also an associate dean at Florida State University. Many of us remember the hit TV show, Dr. Quinn, Medicine Woman that ran from 1993 to 1998 starring Jane Seymour. nnelies Dykgraaf, President of The Art Center, is a very busy artist. She is leading efforts to move TAC’s show and member galleries to a new spot at the Jacksonville Landing as well as developing additional studio and workshop spaces. TAC’s first event at The Landing gallery was Annelies’ “Evening with an Artist,” where she discussed the development of her artistic style stemming from growing up in Nigeria. She is also doing a solo show at the Jewish Community Alliance on August 4 from 6 to 8 p.m., which will include a presentation of her development as an artist.

ith an instinctive reaction to capture what he sees in the world, Luis Rivera is a talented photographer. The interest started about 10 years ago at a wedding when he started taking photos alongside the hired photographer.

When he moved to Jacksonville he met a local photographer, Miguel Emmanuelli, who was impressed by the caliber of the photos on Luis’ Instagram account. Luis borrowed a camera and learned the basics while shooting with Miguel. After shooting a few weddings, he was hooked. “I didn’t know I had it in me, but I love it.” Follow Luis on Instagram at @imawhistle.

We always have a large amount of fans that travel to the game, so the passion is definitely there on both sides whenever the two teams get together.

FAVORITE PRE-GAME SONG TO GET THE TEAM PUMPED? “You’re Going Down” by the Sick Puppies. The Axemen were special guests at the Sick Puppies concert in Jacksonville.

MOST MEMORABLE VICTORY? Winning the 2014 Southern League Championship after finishing the season on a ten game winning streak to get into the playoffs and sweep Chattanooga. The standing ovation our pitcher, Justin Nicolino, got from the hometown crowd while walking off the mound with the game and championship in hand is a memory I will never forget.

MOST MEMORABLE VICTORY? 2010 National Championship. Not only was this our first championship, but it was an undefeated season. Also, more than 50 fans from Jacksonville traveled on the plane with the team, making the flight home one of the best flights we ever took. Photo credit Allene Rachel

A group of five guys who called themselves ‘Giants Superfans’ would paint their bodies, throw on orange and blue wigs, and bring their own blow horns to cheer on our Giants! They are still our most memorable group of fans and going strong today. MOST MEMORABLE VICTORY? In 2012 against the Georgia Gwizzlies, the Giants broke the world record for most points scored in a basketball game. The team was featured in Sports Illustrated for this world record breaking event and broke their own record in 2014 – so there could be a repeat! 18

Girls on the Run® is a life-changing, non-profit program dedicated to inspiring elementary and middle school girls to be joyful, healthy and confident using a fun, experience-based curriculum which creatively integrates running.

Fans are heartbroken to hear of the retirement of Curtis Dvorak, the man behind the Jacksonville Jaguars mascot, Jaxson De Ville. But their feelings attest to 19 years of Jaxson’s passionate spirit for the team. This spirit was created by Curtis, the only person to ever wear the gigantic yellow-spotted furry costume and double-zero uniform. Since 1996, Curtis has been an allstar mascot on and off the field, and even has a following in London. Whether he was bungee jumping into Wembley Stadium, or streaking across it, Jaxson had the fans going. He led chants and danced in sync with the cheerleaders. He skydived into the stadium, did BMX bike jumps and beat up fake celebrities and opposing team fans. We can’t forget the charity event at TPC Sawgrass where he beat pro golfers and football players in the full Jaxson costume. He was always present in the community, supporting schools, hospitals, military and more. We will miss him, but we’re so thankful for all he’s done for the Jaguars and the community. Good luck with your future endeavors, Curtis! The Jaguars preseason starts on Aug. 14 against Pittsburgh. Sport your teal and gold gear to the game and go Jags!

Girls on the Run Over a period of 10 weeks, girls aged 8-11 and 12-14 participate in an after-school program designed to allow every girl to recognize her inner strength. The girls make new friends, build their confidence and celebrate all that makes them unique.

“Being a Girl on the Run means to have fun, be optimistic and work hard. I like that you can be yourself.” - recent participant

“I love the chance to be silly and to be an example to a younger generation of girls that it is okay to just be yourself,” said Coach Sherry Warner. “We don’t have to try to fit into a mold that society creates for the perfect girl. The perfect girl is already you, just the way you are.” The Girls on the Run® lessons encourage positive emotional, social, mental and physical development. Physical activity is woven into the program to inspire an appreciation of fitness and to build habits to start a lifetime of health. “I like Girls on the Run because I like to run and be with my friends,” a third grader said. “I have learned how to be strong and take care of myself.” At the end of each three month session, the girls participate in the Girls on the Run 5K event. Completing the celebratory, non-competitive 5K gives the girls a tangible understanding of the confidence that comes through accomplishment as well as a framework for setting and achieving life goals. “Being a Girl on the Run means to have fun, be optimistic and work hard,” a recent participant said. “I like that you can be yourself.” Girls on the Run of Northeast Florida (GOTRNEFL) began in 2004 and has impacted over 10,000 girls locally thanks to more than 600 passionate and committed volunteers. “We would not have Girls on the Run in this community without dedicated women, and a few men, who selflessly give of their time to instill character and values as well as motivate girls of all abilities to cross that finish line,” said Laura Lasko, Executive Director. GOTRNEFL currently runs programs in Baker, Clay, Duval, Flagler, Putnam, Nassau and St. Johns counties reaching over 1,600 girls annually. Due to fundraising activities such as the SoleMates® Program and The Cupcake Run, 40 percent of the girls served annually receive financial assistance. THEATRE IN THE KNOW Bill Engvall

BUZZ: How did you get started with comedy? BE: I started doing comedy when I was in college, doing shows for the students in the student union building. But my first “real” gig was at the Comedy Corner in Dallas, Texas. I was the house emcee and I would pick comics up from the airport, emcee the shows that week and take them back to the airport on the following Monday. I would do 10 minutes a night and that’s where I learned how to construct an act. BUZZ:How long have you been performing? BE: HAHAHA man now that I think about it, I have been doing this for 35 years now. Never saw this lasting that long! BUZZ: How has your act changed over the years? BE: I think that I have become a better storyteller over the years. I believe that early on I just wrote jokes and now I tend to write bits. I am sure that when I started I was probably a lot dirtier than I am now. Working clean has extended my career immensely. BUZZ: What was the best gig you ever performed? BE: That’s a hard one. Probably the best gig I ever did was when Bill Gates hired me to perform at his birthday party. He had a stage that was the replica of my last special called “15 Degrees off Cool.” His house was amazing and the audience that was there was literally a who’s who.

BUZZ: Why do you think comedy is important? BE: I think that in this day and age people have to laugh. I mean look around, people are losing their minds. I can’t even watch the news anymore because I get so depressed. People need a release and I am so glad I am able to provide that. BUZZ: Who has been your biggest inspiration? BE: I guess that would have been Bob Newhart and Steve Martin. I really like each of their styles and they both make me laugh really hard. BUZZ: What are you working on right now? BE: Right now I am working on my new special called “Just Sell Him for Parts” which we will shoot this month.

A play about race, real estate and relationships is the next collaboration between The 5 & Dime, a Theatre Company, and The Cummer Museum of Art and Gardens. Bruce Norris’ “Clybourne Park” opens July 31 and runs through August 9 at the museum. Named for the fictional white neighborhood introduced in Lorraine Hansberry’s “A Raisin in the Sun,” the Pulitzer Prize and Tony Award winning comedy is extremely funny and insightful. Rick De Spain is directing. “’Clybourne Park’ is the kind of show that will provoke some kind of reaction from the audience – positive or negative,” said De Spain. “Clybourne Park” opens in 1959 as nervous community leaders try to stop the sale of a home to a black family. Act Two is set in the same house 50 years later as the now predominantly African-American neighborhood battles to hold its ground in the face of gentrification. “With what’s happening locally and around the country, the play is incredibly topical,” said De Spain. “It is a wonderful vehicle for actors.”

BUZZ: Most unusual dish you have eaten: KR: Without question, bacon and garlic. BUZZ: If you could have your own cooking show, what would you name it?

KR: “Cawfee and Cakes.” Everyone makes fun of my northern accent and how I pronounce coffee, so I would most certainly do a play on what makes me, me.

BUZZ: Favorite celebrity chef: KR: Sean Brock, he is an inspiration to my generation of chefs on how to be creative with what comes out of a garden while still keeping his cooking realistic.

Tomato Jam

PESTO 12 oz basil 6 oz parsley ½ TBS garlic 1 ½ cups oil 3 ½ oz grated parmesan 5 tsp kosher salt ½ TBS pepper Place all ingredients in a food processor. Pour in oil until smooth. JAM 1 oz oil 2 lbs tomatoes, cored and diced 1 ½ cups sugar ½ oz basil 2 tsp kosher salt 1 tsp pepper Cook until tomatoes release their juice. Add sugar and cook 10 minutes. Strain tomatoes, saving the liquid. Place liquid back into pan, reduce until syrupy then allow to cool. Once cooled, combine both to create a jam, add basil.

Louisiana-born McGraw headed to Nashville to pursue his career in 1989 after dropping out of college. He did not reach commercial success until his second album, “Not a Moment Too Soon,” in 1994. in 1988, Sublime With Rome delivered an irresistible blend of ska, reggae, punk, surf rock, and hip-hop that captured the imagination of fans around the world. Over the course of its three albums – 1992’s double-platinum “40oz. to Freedom,” 1994’s gold “Robbin’ the Hood,” and 1996’s 6x-platinum self-titled major-label debut – the band has now sold more than 17 million albums worldwide. Their biggest North American tour to date will stop at the St. Augustine Amphitheatre with special guests Rebelution, Pepper and Mickey Avalon. Sublime With Rome features original Sublime bassist Eric Wilson, vocalist and guitarist Rome Ramirez, and drummer Josh Freese. Over 20 years after forming legendary ska-punk band Sublime, band co-founder/bass player Eric Wilson met another singer/guitarist that would deeply affect his life: 20 yearold Rome Ramirez. music you play?

KB: We have an East Kentucky Rock ‘n Roll/Appalachiadelic feel. BUZZ: What makes you and your music unique? KB: Our setup is pretty unique in itself, with the cajon being a key

instrument. We really don’t sound like anyone else out there. BUZZ: What is your favorite part of performing shows?

KB: Pretty much all of it! We have a lot of fun on the stage. The energy from the crowds, the fans singing our songs with us, all of that makes it very special. We love meeting our fans after the shows, it makes all of the travel worth it. BUZZ: When is your next performance? KB: Aug. 27 at Jack Rabbits.

BUZZ: Who are your musical influences? KB: My favorite music as a kid was always 60s and 70s pop and rock, but

I started going to punk and ska shows too. A few of my favorite artists are Jackson Browne, Jimi Hendrix, Billy Joel, Green Day, Jack’s Mannequin, Bayside, Nirvana and, of course, The Beatles.

BUZZ: How did you start playing music? KB: I started taking piano lessons at a very young age, but didn’t get really

into it until a few years later. My dad bought me my first guitar when I was 10. I started playing shows and writing my own songs when I was about 11 or 12. I was also fortunate to grow up in a place where a lot of bands from my area were doing really well like Taking Back Sunday, Bayside and Brand New.

BUZZ: What makes you and your music unique? KB: Though I consider my music pop, I take a lot of influence from 60s and

70s music and American jazz standards when it comes to the structure, harmonies and melodies in my songs. But when I bring them to life, my show is similar to a punk band. It keeps things interesting!

BUZZ: As an artist, is there anything special you hope to accomplish? KB: I’d like to have some longevity to my career and be able to make music

to share with people for my whole life.

“Fighting” is the one thing a coach cannot teach a fighter. As a coach, I can impart wisdom, technique and skill if the fighter is willing to do the work, but the will to fight is innate. So, a great fighter is one who has the capacity to learn the wide skill set of MMA and the drive to overcome other fighters.

With a diverse landscape, friendly residents, and knowledgeable film crews, Jacksonville has drawn a number of exciting local, national, and international productions, keeping the Film and Television Office very busy.

Commercials for AARP, Farah and Farah, Hyundai and Pedigree are just a few projects that were filmed this year. Nationally broadcasted television shows like HGTV’s “Flip or Flop” created a local economic impact of $75,000 and an episode of E! Network’s “Total Divas,” brought in $10,000 in economic impact. In addition to commercials and television shows, the MLB Network produced a documentary titled “Hank Aaron: Chasing the Dream” and CBS’s “NCAA Documentary: Georgia State” also taped scenes throughout Jacksonville. Jacksonville has proven to be an ideal location for shooting independent feature films, including Indian movie “Romance Complicated.” The director recently flew in actors, producers, and a few crew members from India to film several scenes for their Bollywood-esque film. It is estimated that their short time here produced 60 jobs, resulted in 225 hotel room nights, and garnered $200,000 in local economic impact for our city. The movie is due to be released in India this Sept. followed by a U.S. release. Though the year is not nearly complete, Jacksonville has already hosted a significant amount of economy-boosting film, commercial, and television projects. Already, the Film and Television Office has permitted and assisted 39 productions that have generated 285 local jobs and $956,700 in economic impact. This trend of success is poised to continue in Jacksonville for the remainder of 2015.

I wanted to create a local gathering place. Back in the day, wells were the center of town. They were where people gathered to drink and share news. This camaraderie is what we hope to generate here with food and fun!

Fall... I love fall. Pumpkin everything. Terrapin Pumpkinfest looks and smells like pumpkin; as it should, since it’s made with real pumpkin! You can smell the spices of fall: nutmeg, cinnamon, and ginger, as well as hints of caramel and graham crackers. It’s truly a beer that makes you visualize everything great about the fall. Once you taste TERRAPIN PUMPKINFEST SPICY CRAB BISQUE, you’ll feel the same. I’ve incorporated all those beautiful fall flavors in this off-the-charts bisque. Paired with the TERRAPIN PUMPKINFEST SALTED CARAMEL CRUSTED BEER BREAD, your tummy will be very happy. In fact, I’d say you’ll “fall” for it!

4 Tbs butter

¼ tsp ground cinnamon

2 (15oz) cans pumpkin puree

½ cup finely chopped shallots

¼ tsp fresh ground black pepper

1 cup heavy cream or half & half

½ cup finely chopped onion

¼ tsp cayenne pepper

½ lb lump crab meat

4 cloves garlic

1/8 tsp ground cloves

1 cup shredded smoked gouda

1 tsp fresh grated ginger

1 ½ cups chicken broth

½ tsp kosher or sea salt

1 ½ cups seafood stock

Sour cream or plain Greek yogurt for garnish

½ tsp ground nutmeg

12 oz TERRAPIN PUMPKINFEST

In a Dutch oven, melt butter over medium heat. Add shallots, onions, garlic, and ginger until tender, stirring occasionally. Lower heat to medium low, add next 7 ingredients, cook for 2 minutes. Add broth and TERRAPIN PUMPKINFEST. Bring to just to a boil; reduce heat. Add pumpkin and heavy cream. Simmer, uncovered, for 15 minutes, stirring occasionally. Allow to cool slightly; blend soup using an immersion blender (you can use a stand blender, but allow to cool longer). Return to heat; add cheese and crab. Garnish with sour cream or Greek yogurt, and parsley.

PUMPKINFEST SALTED CARAMEL CRUSTED BEER BREAD 12 oz TERRAPIN PUMPKINFEST

1 ½ cups whole wheat flour

Crust:

¼ cup water

2 Tbs sugar

2 Tbs melted butter

2 Tbs vegetable or olive oil

1 ¾ tsp salt

Salted caramel sauce

1 ½ cups all purpose flour

1 ½ tsp active dry yeast

In stand mixer with paddle attachment, add half the flour and rest of ingredients, and mix for 3 minutes on medium speed. Change attachment to dough hook, gradually adding remaining flour until dough is firm. Knead on floured surface for 5 minutes. Place dough in lightly oiled bowl, turning so all the dough is covered with oil, cover with towel and allow to rise until doubled. Turn onto flat surface, punching out bubbles. Flatten into large rectangle and tightly roll up from shorter side. Pinch to seal ends and seam. Place seam side down on and oiled cookie sheet that has been lightly dusted with cornmeal. Make cuts .

SALTED CARAMEL SAUCE ¾ cup packed light brown sugar

1 tsp vanilla

1/3 cup heavy cream

2 tsp salt

Combine sugar, cream, and butter in heavy saucepan over medium heat. Bring just to a boil, reduce heat to medium high, and add vanilla and salt. Heat and stir until salt is dissolved. Remove from heat.

Brew Time By Marc Wisdom Hops, the flower of the plant that bares the same name, provides the bitterness in beer that serves to offset the sweetness of the sugars present. To many beer drinkers, the bitterness of hops is what makes the beer, to others it is merely one of the many subtle flavors found. It is undisputed though, hops plays a major role in beer. Mid-August is the beginning of the hops harvest season. The plants grow around the world, but thrive in regions where temperatures range from 40 to 70 degrees Fahrenheit. Not surprisingly, Germany produces the most hops with over 34,000 metric tons grown in 2010. The United States ranks second in production with a little less than 28,000 metric tons, produced mostly in the Pacific Northeast. Known as cones, hops flowers contain chemical compounds known as Alpha Acids that deliver the bitter punch hop heads crave. In beers such as Bell’s Brewing Company Hop Slam, hops bitterness is a full frontal assault on your senses. In other beers, like German Kolsh, the hops are present, but are more subdued. The flavors of hops in beer range from soft orange and citrus flavors to more assertive grapefruit and pine, and even more forceful spice and herbal flavors and aromas. The bitterness of a beer is expressed in International Bittering Units or IBUs; the higher the number, the higher the bitterness of the beer. Hops are also known to have preservative properties that may have contributed to the development of highly-hopped beers designed to fare better on long sea journeys. Indeed, this is the origins of the beer style known as India Pale Ale or IPA. English soldiers and expatriates in India demanded beer, but the climate was not suited for producing beer. So, at the behest of the East India Trading Company, English brewers went to work developing a beer that could remain unspoiled upon arrival in India. The beer became an immediate hit and even gained popularity back in England. Today, IPAs are decidedly hop-forward and range from monstrous hop bombs to well-rounded and carefully crafted beers that employ skillful blends, and additions of complex hops at different stages of the brewing process that challenge the palate as well as the mind of the taster.
