Lion’s Head: Sandstone The sand, silt and mud deposits of the Table Mountain Group were lithified by pressure and then folded in the Cape Fold Belt, extending 800 km along the southern coast to Port Elizabeth and 300 km to the north as the Cederberg Mountains. The basal Graafwater Formation (80-100m in thickness) consists of interlayered pale brown sandstone, laminated pink siltstone and dark maroon coloured mudstone. It is best seen in road cuttings on the slopes of Table Mountain and along Chapmans Peak Drive. The overlying Peninsula Formation (800-1500 m thick) consists of hard, light grey quartz arenite sandstone and dominates the steep mountain cliffs.The Pakhuis Formation is a lithified glacial outwash deposit and occurs on the highest points of Table Mountain, such as Maclears Beacon. It contains clusters of angular boulders and pebbles. Lion’s Head features three different types of rock. The top of the head is sandstone of the lower Table Mountain Group. On the lower slopes of Lion’s Head are examples of the Cape Granite Suite. Underlying Lion’s Head peak is the Malmesbury Group siltstone. Faults cut across and displace the rock layers. These more easily eroded zones are marked by ravines, for instance, cross-cutting faults separate the peaks of the Twelve Apostles. Some fault zones of crushed rock (breccia) are re-cemented by dark brown coloured iron and manganese oxide minerals and the Hout Bay Museum displays samples of the rich manganese ore that was mined there last century.

METHOD Place the chicken pieces in the large bowl and add the rest of the ingredients. Mix everything well. Cover and refrigerate for 2 to 24 hours (the longer, the better). Preheat the grill to medium-high heat. Arrange the chicken and peppers onto the skewers. Oil the grilling rack. Cook for about 7 minutes on each side, until the chicken is cooked through. METHOD Prepare and season: If your prawns haven’t been deveined, use a sharp pair of kitchen scissors and make a long incision down the length of the back then remove the vein. Place in a large bowl then add oil and salt. To make the sauce, melt the butter in a large pot (the pot needs to be big enough to toss all the prawns in once they are cooked). Add the garlic, lemon juice and spices. Cook for a minute or two until fragrant. Bring to a simmer then remove from the heat. Taste and adjust the seasoning if necessary. You want the sauce to be a little too lemony and very well seasoned. Cook the prawns on a very hot grill or grill pan. Flip once you can see them turning coral/orange. They cook very quickly and should only need 5-6 minutes on the grill in total. They are cooked when the flesh is firm and opaque. When they are cooked, remove them from the grill and place in the pot with the sauce. Once all the prawns are in the pot, toss to coat in the sauce. Serve with side dishes of your choice with extra lemon for squeezing. Pairs well with Perdeberg Classic Collection Sauvignon Blanc 16

2.5ml sugar 2 garlic cloves 30ml fresh parsley 30ml fresh oregano 5 ml mustard powder 30ml spring onions - chopped 100ml vinegar white balsamic Salad ingredients

1 lettuce 1 papaya - sliced 125g feta cheese - cubed 250g biltong or smoked beef 2 avocado - peeled or sliced 100g mixed bean sprouts rockets METHOD Place the ingredients for the vinaigrette in a liquidiser and mix well. Adjust seasoning and cover the thinly sliced biltong with half of the vinaigrette. Refrigerate until required. Compose a decorative salad platter or individual plates layering the ingredients given above and sprinkle lightly with dressing. Pile the marinated mixture on top and serve the remaining dressing separately in a small jug. Pairs well with Perdeberg Classic Collection Pinotage

Pork Chops With Nectarine Salsa ¼ cup diced onion 2 tbsp fresh lime juice 2 nectarines, pitted and diced 1 ripe tomato, seeded and diced 2 tbsp chopped fresh coriander ¼ tsp crushed red pepper flakes

1 tsp ground cumin 1 tsp chilli powder 2 tbsp olive oil 8 boneless pork loin chops salt and ground black pepper

METHOD To make the salsa, place the onion, lime juice, nectarines, tomato, coriander and red pepper flakes in a bowl; toss to blend. Season to taste with salt. Cover and refrigerate 30 minutes to blend flavours. Stir the cumin, chili powder, salt and pepper together in a small bowl. Place the olive oil in a small bowl. Brush the pork chops with oil and season both sides evenly with the cumin mixture. Place pork loin chops on the preheated grill. Cook until lightly browned and juices run clear, about 4 minutes on each side. Place pork chops on serving plates and top with a generous spoonful of salsa. Lime and pepper crusted beef carpaccio 5 limes 400g prime beef fillet 1½ tsp black peppercorns, freshly crushed 1½ tsp pink peppercorns, freshly crushed 1 tbsp olive oil 5 tbsp capers, drained, rinsed and dried 1 tsp dijon mustard 4 tbsp extra-virgin olive oil a pinch of sugar 2 tsp sea salt METHOD Prepare the dressing, salt and beef a few hours ahead. Arrange the beef in a single layer between cling film; assemble just before serving. On a plate, mix the crushed peppercorns with the finely grated zest of 3 limes, and coat the beef. Heat a nonstick frying pan until very hot and sear the beef briefly on all sides. Transfer to a plate, cool for 10 minutes, then freeze for 30 minutes. Meanwhile, heat the oil in a frying pan and fry the capers, stirring constantly until crispy, then tip on to kitchen paper to cool. For the dressing, whisk the juice and zest of 1 lime and mustard in a small bowl, then whisk in the oil and a pinch of sugar to taste. For the lime salt, mix the zest of the last lime into the sea salt in a small bowl; set aside. When the beef is firm, slice as thinly as possible and lay on large sheets of clingfilm, leaving gaps between slices. Cover with cling film; use a rolling pin to bash the slices until a little larger and thinner. To serve, divide the meat between 4 plates, top with the capers and spoon over the dressing. Scatter with the lime salt. Pairs well with Perdeberg Vineyard Collection Malbec

Marshmallow Strawberry Mousse 250g fresh strawberries, halved if large 25g caster sugar 140g marshmallows 200ml double cream Method Put all but 2 strawberries into a pan along with 100ml water and the sugar. Over a medium heat, cook strawberries until soft enough to mash, about 3 mins. Take off the heat and squash the berries, using a fork, until pulpy. Add the marshmallows, then stir them into the hot strawberries until they dissolve. Leave to cool. Whip the cream until it holds its shape. Fold the cream into the cooled strawberry mix, then spoon into one bowl or separate pots and chill for about 2 hrs, or until set. Cut the reserved strawberries in half and use to decorate. The cannon at the South African Navy’s Lion Battery on Signal Hill startles the notoriously short-memoried pigeons of the City Bowl every day at 12 Noon sharp, except Sundays and Public Holidays. Even hardened Capetonians jump in surprise from time to time when the boom echoes through the city, depending on the wind direction. People flock here every day for the firing of the Noon Gun, one of Cape Town’s oldest traditions. Public access to the area has been allowed since 1998, when the guns were moved to their present position for safety reasons. The gun was fired for the first time in 1806. It was used as a signal (hence Signal Hill) to ships in Table Bay. These are the oldest guns in daily use in the world. The noon gun has been one constant in Cape Town’s colourful and ever-changing history, with the tradition surviving colonial occupations, wars and apartheid. The noon gun consists of two black powder Dutch cannons that are fired alternately with one serving as a backup. The guns are 18-pounder smooth-bore muzzle loaders. They bear the monogram of King George III of England who reigned from 1760 to 1820, as well as George Rex, the founder of Knysna. Two guns are loaded daily with 1.5kg of gunpowder each (in case of a misfire – although that is extremely rare). On Friday 7 January 2005, both the Main Gun and Backup Gun failed to fire owing to a technical difficulty. This was the first time in 200 years that the Noon Gun had not fired as scheduled. The cannoneer raises a flag and tells the story of the gun and its history. Then, at precisely noon, the gun is fired. Arrive around 11:30 daily (except Sundays and public holidays) to witness the event. You can also purchase some ear plugs: the sound is louder than you may imagine. The Guns were originally used to announce the arrival of a ship, perhaps requiring provisions for the next leg of its journey, to residents living in the interior. The use of the guns to indicate that a ship was in port was discontinued when more modern means of communication were developed somewhat more than a hundred years ago. 20 18

In addition to the aforementioned signalling duties, the guns have had the task of firing a time signal, since 1806. The cannon would allow ships to check the accuracy of their marine chronometers. Most of the ships marked their time by the puff of smoke, rather than by the sound, hence the location high above the harbour. Since 1864, the noon gun has been electrically fired from the master clock of the South African Astronomical Observatory. The Settlement at the Cape of Good Hope was founded by the Dutch in 1652 and the signal guns were originally part of the regular artillery at the Imhoff Battery at the Castle in Cape Town. In 1795, during the Napoleonic Wars, Britain took the Cape Colony from the Dutch East India Company (Vereenigde Oostindische Compagnie (VOC) in Dutch). The VOC transferred its Territories and claims to the Batavian Republic in 1798 and ceased to exist in 1799. The British handed the Cape Colony back to the Batavian Republic in 1803. However, in 1806, the Cape was occupied again by the British after the Battle of Blaauwberg. Thereafter, the British controlled the Cape continuously until it became a part of the Independent Union of South Africa in 1910. Shortly after the English took over, the two Dutch guns were removed from the Imhoff Battery and placed in Town as signal guns. The Castle received the latest English 18 pounders, because the very loud report of the cannons upset people nearby. The guns were eventually moved from the environs of the city itself to the somewhat more remote Lion Battery on Signal Hill. The first signal fired from there was on 4 August 1902.

One day in June 1895, the gun fired at 10.30am rather than 12 noon when a spider interfered with the relay used to remotely fire the gun. Also in the days of horse-drawn traffic, the rammer used to trap the charge into the muzzle was inadvertently left in the bore of the cannon and when the gun fired, the rammer flew down into the city and killed a horse. Two minutes of silence is a tradition observed world-wide when fallen soldiers are remembered. Sir Percy Fitzpatrick, the South African author of “Jock of the Bushveld”, is credited with coming up with this idea after his son, Nugent, a major in the Union Defence Force, was killed in France. Sir Harry Hands, the Mayor of Cape Town, initiated a daily noon pause to follow the firing of the gun on Signal Hill on 14th May 1918.The first minute is a time of thanksgiving for 22 20 18

family connect Netcare launches Family Connect Line to keep COVID-19 patients and their loved ones connected Dedicated personnel deployed to enhance communication between patients and families In mid-January 2021 Netcare launched a dedicated support line to keep next-of-kin informed on the status of their loved ones who have been hospitalised with COVID-19 and, where possible, to facilitate direct communication between patients and their families. This is in line with the healthcare group’s focus on placing each patient in hospital and their loved ones at the centre of the care provided to them. “The significant surge in people with COVID-19 infections requiring hospitalisation has forced us to focus our attention primarily on optimising our clinical resources to provide the best and safest care possible for all patients,” says Dr Richard Friedland, chief executive officer of Netcare. Unfortunately, as a result of the strain on our resources, communication with patients’ loved ones has at times been affected. “We understand that the hospitalisation of a loved one can be very stressful and anxiety provoking for the next-of-kin, especially during this time when, in order to mitigate the risk of the virus spreading in our hospitals, visitation has been suspended other than in exceptional cases. “As a result and in an effort to improve communication, we have set up the Netcare Family Connect Line. This makes it possible for families to engage with dedicated personnel, mainly social workers who we deployed for this purpose, for information on the status of their loved ones admitted with COVID-19 to any of our Netcare hospitals countrywide, whilst enabling us to maintain patient confidentiality,” Dr Friedland explained. “We understand how crucial it is for families to know how their loved ones in our care are doing, and this new service is dedicated to fulfilling this need,” Dr Friedland says. The number for the Netcare Family Connect Line is 0800 111 266. It will be operational weekdays from 08:00 to 18:00 and weekends from 08:00 to 17:00. The Netcare Family Connect Line service enables patients’ next-of-kin to connect with one of our team of trained call centre professionals, who will facilitate the feedback process. A dedicated Netcare representative at the hospital where the patient is cared for will obtain information on the patient’s status, and will personally phone the family member to provide feedback. Messages to and from the family and patient will also be relayed where direct communication between the family and patient is not possible. Feedback will be provided within hours of the first enquiry and thereafter on a daily basis. Netcare has, since the start of the month, already recruited and deployed 30 social workers to support patients and their families in non-clinical patient liaison roles, which enables healthcare workers to focus solely on their clinical and nursing duties. Netcare hospitals are in the process of expanding the number of social workers to ensure that their services will continue over weekends too. “Already, we are seeing the profound value that the social workers’ efforts have brought for families through facilitating better communication in these unprecedented times, and we believe that this telephonic support service will enhance connection between patients and their loved ones even further.” How the Netcare Family Connect Line works To ensure that loved ones stay connected to patients admitted to Netcare hospitals with COVID-19, Netcare has established a national Family Connect Line, with dedicated Netcare personnel deployed as liaison between patients and their next-of-kin.

Here’s how to use the line: • Phone 0800 111 266 during the Netcare Family Connect Line’s operating hours: Mondays to Fridays, 08:00 to 18:00 and Saturdays and Sundays, 08:00 to 17:00. • Provide the call centre professional with the patient’s case number, which will enable them to immediately identify the patient and the hospital where he or she is being cared for, as well as with your name and surname. This case number is sent via sms to patients admitted to hospital as from Monday, 18 January 2021 as well as to those listed as their next-of-kin.

• Should you not have the patient’s case number, we will require the following information: - Patient’s name and surname - Patient’s ID number - Hospital where the patient is being cared for - Date of the patient’s admission - Your name and surname • The call centre professional will relay your enquiry to a dedicated Netcare representative – either a social worker or patient liaison officer – at the hospital where the patient is cared for, who will confirm with the patient that we may disclose information on their status to you. • The dedicated Netcare representative will contact you telephonically within hours, with information on your loved one’s status. In cases where the representative cannot facilitate direct contact between the patient and family, they will also relay any messages to and from the patient and family, and will continue to update you on the patient’s status on a daily basis during their hospital stay.

Glass: White Wine Method: Build Garnish: Raspberries

STEPS 1. Chill a stemmed wine glass. 2. Rinse glass with Cointreau orange liqueur. Discard excess. 3. Pour SSR White into chilled glass. 4. Express the zest of an orange over the liquid and discard the peel. 5. Express the zest of a lemon over the liquid and then place the peel gently on top of the surface of the drink.

INGREDIENTS 180ml SSR Rosé 3 Blueberries 2 Sliced Strawberries Ice

Glass: Copa Method: Build Garnish: Strawberry

STEPS 1. Place fruit in the bottom of a large stemmed Copa glass. 2. Lightly press the fruit with a muddler. 3. Pour SSR Rosé over muddled fruit and swirl gently. 4. Add a scoop of cubed ice to the glass and stir. 5. Place a strawberry on the lip of the glass before serving.

INGREDIENTS Ice & Kiwi SSR White 50 ml Noble Late Harvest 200ml Lemonade 200ml Soda Water Ginger Cubes

Glass: White Wine Method: Build Garnish: Kiwi

STEPS 1. Slice the glazed ginger into small squares and place in the bottom of a large wine glass. 2. Pour about 50ml of Dryland Natural Sweet Chenin Blanc or noble late harvest over the glazed ginger in the glass. 3. Add about 3cm of ice to the mix so that the wine and kiwi slice is topped with the crushed ice. 4. Pour the Perdeberg SSR White into the glass until the glass is approximately half full. 5. Slowly layer the remaining space left in the glass with lemonade and soda water in equal quantities or according to taste so that it forms a transparent layer on top of the wine. 6. Slice a 2mm thick slice from the kiwi fruit and add it into the wine glass.


INGREDIENTS 50ml SSR Red 40ml Dry Cranberry Juice 20ml Crème De Cassis 15ml Black Cherry 10ml Cointreau 4 Fresh Strawberries Mint Leaves Crushed Ice

Glass: High Ball Method: Build Garnish: Mint

STEPS 1. Take a tall glass and fill it with the strawberries. 2. Muddle the fruit into a paste. 3. De-stem the mint leaves and tear mint across the veins and add them to the strawberries. 4. Add the liquid ingredients along with a scoop of crushed ice. 5. Churn the ingredients well until completely mixed. Add another scoop of crushed ice and repeat. 6. Garnish with a mint sprig, and a cap of fresh crushed ice.

INGREDIENTS SSR Rosé Fitch & Leeds Grapefruit Tonic 200ml Soda Water x Crushed Ice Pomegranate Seeds

STEPS 1. Place approximately a teaspoon of pomegranate seeds into a large wine glass. 2. Add about 3 cm of crushed ice to the mix so that the wine and pomegranate seeds are topped with the crushed ice. 3. Fill the glass to the halfway mark with the Perdeberg SSR Rosé. 4. Slowly layer the remaining space left in the glass with Fitch & Leedes Grapefruit Tonic and soda water in equal quantities or according to taste so that it forms a transparent layer on top of the wine.

Glass: Red Wine Method: Build Garnish: 1 Sprig of Basil

STEPS 1. Dust a stemmed glass with honey and clove dust, then refrigerate. 2. Pour SSR Red into chilled glass with a dusted rim. 3. Take a leaf of basil and tap the leaf on the rim of the glass to express flavour before gently placing it on the surface of the drink.
