BEEF, MUSHROOM & GREENS STIR-FRY
PREP: 10 Mins COOK: Easy READY IN: 10 mins SERVES: 4

Ingredients 4 tbsp oyster sauce 2 tbsp dark soy sauce 1-2 tbsp vegetable oil 400g beef rump steak, thinly sliced across the grain into ½cm thick pieces finger-tip length chunk fresh root ginger, chopped 300g spring greens , sliced 150g pack chestnut mushroom, sliced
Method Mix the sauces together and set aside. Heat a wok until smoking hot, add 1 tsp oil, then stir-fry the meat until browned all over. You may need to do this in 2 batches, adding a little more oil. Remove the meat, then wipe the wok clean. Add a little more oil. Stir-fry the ginger until golden, then add the spring greens and mushrooms. Cook for 3 mins, stirring often, then add the steak and soy sauce mixture. Cook for 3-4 more mins until the sauce has thickened a little and everything is warmed through. Serve over rice or noodles.

FITNESS INSTRUCTER, CHARLIE HOBSON What inspired you to work in this area? I grew up in Harrogate and used to visit my Grandparents in Wetherby. I think because of this connection I have always felt happy in the area. Maybe I associate it with the treats we used to get from our grandparents! When we were looking at places to move to from Sheffield, Wetherby was the first place on the list! After a visit to convince the wife, we were sold! Once I knew we were living in Wetherby setting up my business was the next logical step! What do you like most about what you do? I have always loved fitness. Sounds like your run of the mill response but it’s genuinely true! I found my old year book the other day and under the section where it says ‘where do you see yourself in 10 years’ time’ I actually wrote ‘working as a personal trainer, maybe running my own gym’. I’m proud to say I have achieved this!
I do genuinely love my work. I think for me the thing that I enjoy the most is helping clients change their lives through exercise and healthy nutrition. Now I know ‘changing their lives’ is a strong claim but I have seen how much of a difference it can make from lowering blood pressure, reducing blood glucose levels, reducing stress to simply improving body shape and confidence. It can make an amazing difference to peoples lives and helping people to do this gives an incredible amount of job satisfaction. What do you specifically like about Wetherby?There is a big long list of things that I like about Wetherby so it is hard to pick just one! Personally I love the countryside and I am not a big fan of big towns and cities. Wetherby has a great balance of providing everything you need but still has that strong community atmosphere. Beware of tradesmen calling themselves plasterers that have not worked consistently in the industry - that means full time plastering on a daily basis. If someone completed a plastering short course years ago and has only carried out odd jobs since, they are not going to have the skill or experience to provide a professional service. Ask for confirmation that the plasterer holds public liability insurance. Beware of tradesmen offering other DIY type services in addition to plastering. They are unlikely to be professional plasterers if they have time to do other types of work.
How to find a good plasterer When it comes to your home, if you think it's expensive to hire a qualified professional, wait until you hire an amateur... Ideally go on word of mouth from friends and family. If this is not possible, make sure that you check references and feedback from past clients. Members of websites such as Checkatrade are vetted and monitored to ensure a consistent service, in addition to client feedback being transparent. We recommend you obtain three quotes. This gives you the opportunity not only to compare price, but to meet your plasterer and get a feel as to whether you feel comfortable having them in your home.

Seven words you should not use if you want to sound more confident at work You could be at a disadvantage at work simply because of some of the words you use, according to an expert who coaches high-achieving business people. Melody Wilding, in a blog for Forbes, says that people should specifically avoid using seven words and terms if they want to get ahead. Melody highlights the words to avoid: Just This word minimises the power of your statements and can make you seem defensive or even apologetic. Saying, “I just wanted to check in,” can be code for, “Sorry for taking up your time”. I’m no expert, but… This speech habit typically crops up because we want to avoid sounding pushy or arrogant, or we fear being wrong. The problem is, using qualifiers can negate the credibility of your statements. I can’t When you say “I can’t,” you’re sacrificing ownership and control over you actions. “Can’t” is passive, whereas saying you “won’t” do something is active. It shows that you create your own boundaries.
What if we tried…? You’re more likely to be trusted and taken seriously when you straightforwardly state your ideas, rather than couch them as a question. Masking your opinions as questions invites rebuttal and can lead to you feel criticised. That is like, so great! This can indicate uncertainty, make you appear hesitant, and create a lack of trust among your audience. Thanks! :) You don’t need to use exclamation marks or emojis to express your enthusiasm about every. little. thing. The infusion of extra emotional cues into language touches on a core belief (or core insecurity) that we may be concerned about being perceived as kind, worthy, or likeable enough. Am I making sense? Until you asked that question, yes, you were. By periodically asking, “does that make sense?” or “am I explaining this alright?” you open up the possibility for your audience to wonder whether, in fact, you are.
