RECIPE

STEAK WITH MUSHROOM PUFF TARTLETS

PREP: 20 Mins COOK: Easy READY IN: 35 mins SERVES: 2

Ingredients 100g puff pastry 1 tbsp olive oil plus a little extra 1 shallot finely chopped 100g chestnut mushroom, chopped 1 tsp chopped thyme plus sprigs to decorate 3 tbsp port or Madeira 1 tbsp double cream 2 fillet steak about 140g/5oz each

Method Heat oven to 200C/fan 180C/gas 6. Roll out the pastry to about the thickness of a £1 coin, then cut out 2 x 12cm circles using a cutter, or by scoring around a saucer.

Score a circle 2cm in from the edge, then prick the pastry inside the border. Lift onto a baking tray, then bake for 20-25 mins or until golden and puffed. Press the risen middles down a little, ready for the filling. Can be made a day ahead, then reheated in a hot oven. Heat the oil in a pan, add the shallots, then fry until softened. Add the mushrooms and thyme, then fry until mushrooms are softened and any liquid almost gone. Add the port or Madeira, then bubble for 2 mins. Add the cream, simmer for 1 min more until the sauce is slightly thickened, then set aside. Rub the steaks with a little oil and seasoning. Heat a griddle pan until hot, then cook the steaks for 2-3 mins on each side (depending on their thickness) for medium rare, a little more if you like your steaks well done. Cover the steaks with foil, then rest them for 10 mins. Reheat the tartlets.

Warm the mushroom mixture over a low heat. Set the tartlets on warm plates, then spoon over the mushroom mixture. Sit the fillet steaks on top with a sprig of thyme. Serve with Balsamic spinach and Oven sauté potatoes (see below). BUY FROM YOUR LOCAL BUTCHER

Hi everyone, How lucky am I, I love every day working from my lovely studio here in Wetherby. I take great pride in capturing the essence of people’s personalities in my photography. I have had many years photographing discerning celebrities such as actor Kenneth Branagh, business guru Anita Roddick (Body Shop CEO) and TV producer Verity Lambert. I enjoy photographing the lovely people in my local surrounding area and further afield. There is nothing better for me when they revisit me with their second and third siblings. This results in beautiful images that are candid and cotemporary that last a lifetime. My track record speaks for itself as Master Photographer of Year North West and the winner of awards from numerous professional bodies. I have a status in the industry to which others aspire to. My documentary photographic work featured by the Art program “The New” and others purchased by The National Portrait Gallery and regular London exhibitions. I am one of the sectors leading names.

Your children have the freedom to tumble and play while mum and dad can savour a little time in our quaint town Wetherby, where I am very fortunate to be. 3. Ditch the sales pitch. Remember, networking is all about relationship building. Keep your exchange fun, light and informal – you don't need to do the hard sell within minutes of meeting a person. The idea is to get the conversation started. People are more apt to do business with – or partner with – people whose company they enjoy. If a potential customer does ask you about your product or service, be ready with an easy description of your company. Before the event, create a mental list of recent accomplishments, such as a new client you've landed or project you've completed. That way, you can easily pull an item off that list and into the conversation.

Learn to love Networking Networking goes hand in hand with running a successful business. But many of us dread walking into a room and introducing ourselves to a bunch of strangers. Here is a few tips to get you started. 1. Resist the urge to arrive late. It's almost counter-intuitive, but showing up early at a networking event is a much better strategy than getting there on the later side. As a first attendee, you'll notice that it's calmer and quieter – and people won't have settled into groups yet. It's easier to find other people who don't have conversation partners yet. 2. Ask easy questions. Don't wait around the edges of the room, waiting for someone to approach you. To get the conversation started, simply walk up to a person or a group, and say, "May I join you" or "What brings you to this event?" Don't forget to listen intently to their replies. If you're not a natural extrovert, you're probably a very good listener – and listening can be an excellent way to get to know a person.

4. Share your passion. Win people over with your enthusiasm for your product or service. Leave a lasting impression by telling a story about why you were inspired to create your company. Talking about what you enjoy is often contagious, too. When you get other people to share their passion, it creates a memorable two-way conversation. 5. Smile. It's a simple – but often overlooked – rule of engagement. By smiling, you'll put your nervous self at ease, and you'll also come across as warm and inviting to others. Remember to smile before you enter the room, or before you start your next conversation. And if you're really dreading the event? Leave the negative attitude at the door. 6. Don't hijack the conversation. Some people who dislike networking may overcompensate by commandeering the discussion. Don't forget: The most successful networkers (think of those you've met) are good at making other people feel special. Look people in the eye, repeat their name, listen to what they have to say, and suggest topics that are easy to discuss. Be a conversationalist, not a talker. 7. Remember to follow up. It's often said that networking is where the conversation begins, not ends. If you've had a great exchange, ask your conversation partner the best way to stay in touch. Some people like email or phone; others prefer social networks like LinkedIn. Get in touch within 48 hours of the event to show you're interested and available, and reference something you discussed, so your contact remembers you.

Sri Lanka Summertime Beaches The tropical island of Sri Lanka is pretty much a year-round destination with much to offer, including some stunning beaches. There are two separate monsoon seasons here, one in the northwest and the other in the southwest, so the best places to go depend on the time of year. From May until September the East Coast is the place to head to as it remains untouched by the monsoon – which makes it ideal for long school holidays. From October the south and south western coasts are the better places to be and this part of the island is perfect too during the dreary winter months, offering glorious blue skies and sunshine. Since the end of the civil war in 2009, and after the destruction of the tsunami in 2004, there has been slow and steady reconstruction on the east coast. This area has huge tourism potential with its idyllic stretches of sand.

The capital of the east is Trincomalee, a vibrant town with plenty of charm, famous for its deepwater harbour. North of Trinco are Uppuveli and Nilaveli, low-key beachside villages that at present remain undeveloped. Here there is snorkelling, sport fishing and whale watching – the world’s largest mammal, the Blue Whale, can be seen in these waters. Head south along this eastern coast to Passikudah which has beautiful warm waters for swimming; the gentle, shallow waters are perfect for families with young children. The wonderfully relaxing Maalu Maalu Beach Resort is here. Further down the coast, Batticaloa (or Batti, as it is known) offers one of Sri Lanka’s best wreck-dives – the WWII-era HMS Hermes. Diving is only possible from March to October. Arugam Bay is a remote beach and village, and is famous for its surfing (ideal between May and October). There is a laid back atmosphere and charm here and, for a change from the surf, you can take a trip on the nearby Pottuvil Lagoon to see the rich aquatic life of the mangrove swamp.

In addition to glorious beaches, there’s some incredible wildlife in this Eastern region – as well as marine life there are elephants, leopards and beautiful birds in the Gal Oya and Yala National Parks. Sri Lanka’s most stunning festival, the Esala Perahera, takes place in the central town of Kandy – this year from 8-17 August, 2016. This is a stunning and colourful spectacle, honouring the sacred tooth relic of Kandy, with parades of elephants, dancers and drummers. With all this, together with friendly and welcoming people; temples to visit, hills to climb and rolling tea gardens to explore – and some truly delicious food – it’s no wonder that Sri Lanka is such an up and coming year-round destination!

The advantage of this is that they are external to the day to day operation of the business and therefore will often “see” things that someone employed at the business would miss because they may no longer notice it with being in the working environment on a daily basis or are unaware due to lack of understanding and/or training.

PROTECTING YOUR CHILD'S FEET THIS SUMMER With the smell of barbecued meat in the air and the last minute rush to the chemist for sun-cream, you just know it’s that time of year. Summer. The kids have broken up from school and you already can’t wait for your summer holiday. But don’t forget about keeping those little feet protected whilst you’re away. Here is the Hopscotch guide to help you keep the little one’s tiny toes safe when you are on a well-deserved holiday..

Whether you are going to Bali or Blackpool, don’t forget to stick some sun cream on their feet! The foot is one of the most common places people of all shapes and sizes get sun-burned. This is because many of us turn a blind eye to the feet when it comes to rubbing sun cream on. Make sure they are always covered by some form of sun protection. That goes for grown up feet too!

Often forgotten but very important to look after are little one’s toe nails. Long nails have the potential to catch on something or scratch someone. Just make sure they are trimmed before you go as you don’t want your toddler catching a long toenail on something and it lifting off (Ouch !!!).

2) CAUTION: SLIPPERY SURFACE

With all summer shoes or sandals, make sure you give them a little time to soften on your little one’s feet before they wear them all day without socks. The skin is very delicate and any shoes or sandals worn without socks at first can occasionally cause some rubbing, even when fitted properly. It’s ideal if shoes are worn with socks for the first few times or perhaps just wear

If you are lucky enough to be somewhere with a pool, you should think about getting some non-slip shoes for your little one. A fall by the pool will certainly cause some tears and has the potential to be very serious. Crocs are a great option to throw on quickly, as are Jelly Shoes and flip flops,

for an hour or so for a few times before going the whole day. This just gives the shoes time to soften slightly and for little feet to get used to the shape and position of the new shoe or sandal on the skin. 5) AND BREATHE... With the weather likely to be on the hot side, it’s important that feet are in footwear that allows them to breathe. If you’re wearing a closed shoe, leather is best as it is a natural material that allows the foot to breathe. Canvas is also good as it is light weight (but can get a bit smelly if worn without socks so you might need to air off regularly or pop in the washing machine on a cool wash to freshen up). Open toed sandals are great when it’s hot as the air can get to the foot, but do make sure that they are fitted correctly with room at the front so the toes aren’t right at the end.
