Russell Sonnenberg Russell Sonnenberg is the artist behind The Yesteryear Collection, a series of 50 tractor prints. His works have been very popular with tractor enthusiasts. What fascinates these collectors about Russell Sonnenberg art is his brilliant ability to capture the essence of nostalgia and bring it back to the viewers’ memory in vivid detail. “Oh I remember,” is a common phrase that people often use when admiring one of his pictures. Russell grew up in Kossuth County in Iowa about 26 miles northeast of Algona. He had been quoted as saying, “I grew up in the horse and buggy days.” He began painting as a child mainly due his Mother’s encouragement. Of course, his life on the farm heavily influenced his work a lot. In his younger days, he worked as a tractor mechanic at an Allis Chalmer dealership. His fascination with Allis Chalmers is evident in the number of paintings he has done of that specific brand. Over the past 42 years, he had painted various nostalgic country and farm scenes. At the suggestion of his lifelong wife Audrey, “paint what you know” he returned to painting tractors. Russell enjoys feeling close to nature and purposely puts a bur oak in the left side of his paintings. He has always felt that tree had its own character and enjoys using it as a trademark that makes his work distinguishable from all other artists. Russell never entered art competitions or painted for fame, as so many other modern day artists. He just wanted to paint something that would touch the hearts of tractor collectors and people who have those nostalgic fond memories of the farm life. People love to reflect back on the simpler times of the forties and fifties. With this in mind, and a great deal of research, Russell goes to work on each painting treating it as his newest masterpiece.

A great deal of research goes into each painting to make sure that it is historically accurate. In order to pay very close attention to the mechanical detail of the various tractor models, he uses his camera to take photographs. Russell said, “I take a picture of this part and then that part, plus I make sure that I take the pictures at the angle I want so I can use them for reference. Also, I like to take photos at 2:00 in the afternoon because then the shadows aren’t weird and the sun isn’t as harsh as it is at noon. I also like to have owner’s manuals (as a reference).” Each painting requires about 150 hours of painting time, plus about 100 hours of research. He says each time he has timed himself, it comes up to be about the same for each painting. Russell has painted many different models trying to make sure that nobody gets left out. Many artists will focus on John Deere and International. Russell paints models of Allis Chalmers, Minneapolis Moline, Ford, Oliver, Massey-Harris, and Case to round out the strong blend of collectible tractors. Russell paints for the sheer enjoyment of the craft usually during the long winter months in the basement of his home in Forest City, Iowa. He does not paint in the summer as he is usually too busy with other activities. Each of his paintings has a unique story to tell. He will be releasing four new prints this summer. The stars of his paintings are, of course, the tractors. Lindsay Announces NFTrax Airless Wheel Assembly Lindsay Corporation, maker of Zimmatic irrigation systems, announces NFTrax, a new airless wheel assembly with greater traction and improved track maintenance. NFTrax is an airless design that will never go flat and keeps wheel ruts to a minimum, according to Tanner Hoffman, Zimmatic by Lindsay product manager.

Hoffman says. “NFTrax adapts to terrain and field conditions without getting stuck or putting undue stress on the machine. New AG PRO 12-20 Dozer Blades Increase Flexibility, Capacity The new AG PRO 12-20 adjustable-width dozer blade by Grouser Products is making it easier than ever for tractor operators to increase efficiency while maintaining compliance with the most stringent road regulations. The AG PRO 12-20’s design has a variable width blade that allows adjustments from 12 to 20 feet. With hydraulic cylinders on both sides of the blade, and a clear measurement indicator visible from the cab, operators can make adjustments quickly, easily and precisely. The levercontrolled hydraulic cylinders adjust the width to different capacity requirements or prepare the unit for road travel. An operator can extend or retract the blade on the fly to gain more or less pushing capacity depending on the needs of the project. On farms and ranches, the AG PRO 12-20 offers flexibility in hard-to-reach areas. The ends can be easily retracted to allow wheel access to the bunker wall and then extended to maximize the amount of material transferred. Retract the blade to 12 feet and it’s ready to fit through a narrow gate or head down the road, eliminating the need to transport the unit on a trailer. This saves time when moving from job to job and meets road regulations in most states. The 72-inch height makes it one of the tallest dozer blades in the industry. It increases capacity, productivity and efficiency over other blades by allowing operators to move more material with each pass. The addition of optional box end plates increase the AG PRO 12-20’s capacity even further and effectively contain the material load over greater distances. Further, the blade’s lift height of approximately 48 inches allows operators to move large amounts of material into steeper piles with less potential for back dragging material. Like all of Grouser’s AG PRO blades, the exclusive singlelever, quick-attach feature on the 12-20 reduces hook-up and removal time, allowing a smooth and fast transition for fieldwork. The quick attach is mounted at the front of the tractor allowing the operator to quickly and efficiently align the tractor to the blade, drive forward and lock into place. To detach the blade, the operator simply unhooks the hydraulic hoses, pulls the lever behind the blade and backs out the tractor. Grouser redesigned the hydraulic hose connections at the front of the unit in one, easy-access configuration, mounting the hoses where the operator can quickly connect or disconnect the unit. The fixed location of the hoses provides easy alignment and re-attachment of the blade.

The undercarriage and lift frame of the AG PRO 12-20 are designed to provide tremendous ground clearance. Placed high underneath the tractor, the 12-20 provides maximum material movement without getting bogged down in material. The undercarriage also makes the transition from yard to fieldwork faster and easier. It serves as the extra weight needed for fieldwork, so there is no need to disassemble and reassemble OEM weight packages. Operators simply detach the blade and head for the field. The AG PRO 12-20 features an exclusive parallel lift system with top and bottom connection points that keep the blade parallel to the front of the tractor, even when it is lifted to its maximum height. This reduces weight transfer, keeps the blade closer to the tractor when lifting and maintains the ideal angle for dozing. It also provides the operator more precise control. Compressed Air Quality for Air Plasma Cutting Systems:

How much air, do I need filtering, do I need moisture removal? Ensuring your air compressor is sized adequately for your plasma cutter and its intended usage. Sizing a compressor for a plasma cutter depends on a couple of things: 1. The minimum flow/pressure requirements of the plasma cutter you intend to use. The manufacturer can provide the specs and they can vary from model to model. A small Hypertherm Powermax30 will use about 4.5 cfm (cubic feet per minute) at 90 psi inlet pressure. A Hypertherm Powermax45 uses 6 cfm at 90 psi. If you have a small compressor with exactly the same cfm rating as the plasma, then the compressor will run continuously when you are plasma cutting; the size of the air compressor tank will allow the plasma to run for a few seconds (or minutes if the tank is huge) until the pressure drops a bit (usually to about 90 psi), then the compressor will run to try to maintain the pressure. 2. How much cutting are you planning to do? If you are a weekend hobbyist just cutting an occasional piece of steel for a project, then a compressor with a cfm rating slightly higher than the plasma will likely be adequate. If you are doing a lot of cutting, cutting thick plate (same air consumption but slower cut speeds = longer cut time) or are using the system to earn a living, and then size the compressor at 1.5 to 2 times the plasma system requirement. Another note on air for plasma systems and all air tools: Compressors take air at atmospheric pressure and increase the pressure and store it in a tank. Humidity in the air is often condensed in the tank and in the airlines, more so during humid weather. Drain your compressor tank often, and if moisture in your air lines is at all noticeable, it is a good idea to add additional filtration to the air system that absorbs or removes moisture.

How to be sure the air for the plasma system is free of moisture and particulates Most air plasma systems from reputable manufacturers have an onboard particulate filter and many also have a coalescing filter with an auto drain that will remove some moisture from air systems. For most low use situations (hobbyists and light industrial users) the onboard filter dryer is adequate. There are many situations however that will require additional steps are taken to ensure moisture does not affect performance of the plasma cutter, often these steps are needed when the system is used in extremely humid environments, or during those few weeks of the year when the hot summer weather brings humid conditions. Moisture that forms in air lines has a

tendency to condense into larger drops when the air pressure decreases as it is entering the plasma torch. When these drops enter into the high temperatures (as much as 20,000 degrees F.) in the plenum of the torch, they immediately break down into oxygen and hydrogen, which alters the normal chemical content of air in the torch. These elements will then dramatically change the plasma arc which causes the torch consumables parts to wear very quickly, altering the shape of the nozzle orifice and dramatically affecting cut quality in terms of edge squareness, dross formation, and edge smoothness. As a minimum with air systems that contain moisture be sure to drain the receiver (tank) on the air compressor at least daily. If water comes out of the bottom petcock valve of your tank, then there are moisture particles in your air lines. Draining the tank regularly will minimize the moisture and the above effects, but will not eliminate it. In order to ensure that the air receiver tank stays as moisture free as possible, install an automatic drain system that rids the tank of moisture with every pressure building cycle. The next minimal steps if moisture is found in the receiver would be to install a particulate filter that is designed to either trap water through absorption (the filter element literally absorbs water and must be changed after it is near saturation). This type of filter (a popular one is the MotorGuard M80 filter canister with its replaceable elements) should be mounted at least 20 feet downstream of the compressor, allowing the heat generated by the compressor to cool a bit as this will help to condense the water droplets and trap them in the absorption filter. Another type of moisture trap is of the coalescing (kind of a centrifugal filter that spins the heavier moisture and drains it through an automatic drain) type typically used in many automotive paint spraying applications. If the plasma system is used at medium to high duty cycles, for production use, or is in a climate with extreme humidity, then higher technology steps may need to be taken in order to remove moisture from the air system adequately. A refrigerated air dryer, as its name implies, uses a small refrigeration circuit that cools the compressed air to its dew point. This cool air then more easily displaces the moisture into a coalescing moisture trap with an auto drain. There also are a variety of desiccant filter systems that will adsorb (yes that is spelled correctly!) moisture through a chemical process, drying the air in the system very effectively. I always refer plasma chuting shops that are looking for air drying answers to the same companies that help condition air systems for automotive body and paint shops, as the air flow and dryness requirements for

paint spraying applications are very similar to plasma cutting needs. Here is a nice schematic of a complete shop plumbing system as found on the Sharpe Air Systems website. It may be a bit overkill for a small plasma cutting operation, however it correctly shows methods of plumbing that include drop, legs for draining the system, shows that the clean dry air is best sourced at the highest points in the plumbing system, as well as showing best locations for filters, regulators and drying equipment.

Determining if your plasma system is receiving adequate inlet pressure and flow from the air system. Every plasma system has input minimum and maximum air or gas flow pressure specifications. Most plasma systems also have a choice of consumable parts for cutting at different amperage levels for different thickness materials. To determine if the plumbing system leading up to the inlet of the plasma is adequate follow these steps:

system so that air is flowing at the torch, set the cutting gas flows or pressures according to the cut charts in the operators’ manual. (Note that the cut gas flow/pressure is not the same as the inlet has flow/pressure). Observe the newly installed gauge at the inlet to the plasma system. You will notice the pressure on this gauge is higher when there is no gas flowing at the torch; this is static pressure and it should be no higher than the maximum pressure specification from your operators manual (Powermax85 maximum is 135 psi). When the air is flowing the gauge reading will drop, this being dynamic pressure. If the gauge drops below the minimum requirement (Powermax85 is 85 psi), then there is a restriction in the plumbing system that will affect operation.

In your plasma system operators’ manual look up the inlet gas pressure range, this will be found in the gas specification section. As an example, the Powermax85 air plasma system specifies a range from 85 to 135 psi air pressure at the inlet.

Install a pressure gauge right at the inlet to the plasma system that will accurately measure the proper inlet pressure.

A system with a properly sized gas or air plumbing system will show a minimal pressure drop between static and dynamic pressure as measured right at the inlet to the plasma system. If the drop is excessive, then one of the following is suspect: Hose or pipe inside diameter is too small. Hose or pipe length is too long. Too many fittings. Each fitting on a plumbing system creates a small pressure drop.

Install the largest amperage set of consumables for the plasma system. Example: with a Powermax85 install the 85 amp shielded consumables. Activate the

What Does Agriculture Mean to You?

A

griculture has played a huge role in my life. Honestly, I would not be where I am today without it. When I was a little girl, agriculture meant what my dad and grandpa did everyday. As I grew older, it meant helping my dad feed livestock, planting, harvesting and any other fun jobs my dad could think of! Without really realizing it, agriculture became apart of my everyday life through FFA, 4-H and being on the farm. Now while being at Iowa State University I am able to increase my knowledge and continue to express my passion for the agriculture industry. I am able to learn from great agriculture professors and become active in organizations around campus. I am also able to work for the College of Agriculture and Life Sciences Communication office. These opportunities thus far have been great and I cannot wait to see what the future holds.

Since growing older agriculture continues and continues to grow in my life. Knowing that I play a role in feeding the world like so many others is truly an amazing feeling. Agriculture may seem like work to many, but it is a desire and a way of life for so many more. I see agriculture in many different ways. It could be visiting the Iowa State Fair and seeing the famous butter cow, meeting other students passionate about agriculture, going to livestock shows, watching livestock auctions, seeing machinery in the field, watching baby calves grow, feeding cattle, selling grain or seeing farming families work together. For everyone it is probably different, but seeing those little things brings joy to our hearts.

Stress Becomes More Troubling as Farmers Age Last week a young farm wife asked me how to help her husband who she said is unfairly overworked by his parents in their family farm operation. Earlier, two women requested assistance for their farming husbands who are struggling with stresses they could manage satisfactorily when they were younger. A 69 year old farm man called this week to say he doesn’t know how he will take care of his 120 head cow/calf operation and farm 400 acres next year. He could handle his farm with little additional assistance previously but now finds himself overwhelmed and increasingly unhappy. There is a common denominator among these situations: an aging farmer who can’t handle stressful work as well as when younger. It comes as no surprise that as we age we usually become less able to handle stress. National Institute of Occupational Safety and Health researchers, John Myers, Larry Layne and Suzanne Marsh, reported that both fatal injuries and the severity of nonfatal injuries increase among farmers as they age. Their report was presented at the 2007 Conference on the Aging Farm Community, held in Indianapolis, and is available in the March 2009 issue of the American Journal of Industrial Medicine. I also gave a report at that conference indicating that behavioral health problems increase among aging farmers. The National Census of Fatal Occupational Injuries in 2012, released on August 22 this year, indicates that although fatal work injuries are down among farmers since 2011, the rate of fatal injuries is higher among farmers than among any other occupational group. Stress has a lot to do with their fatalities and injuries. Many farmers have more difficulty handling highly technical farm jobs as they age. As my father approached his early 70s he asked his sons who farmed to take over planting and harvesting, jobs November 2013

which involve remaining attentive for hours on end. Dad said the monitors on the planter equipment and the combine made him nervous. Dad died at age 72 from a coronary blockage. I still needed his advice at that point. I didn’t fully grasp my father’s assessment of his mounting difficulties until I reached my mid 60s. I can’t as easily endure jobs that require sustained attention as long or as easily as I did formerly. The young wife mentioned above thanked me for my perspective. I had suggested that her husband was being urged to take over tasks his parents couldn’t handle anymore, for the same reasons my father couldn’t handle them.

Already, these two families are feeling better about getting their concerns into the open and they are committed to resolving their farm stress dilemmas though periodic business meetings. Both sets of parents are scaling back their workloads as their children and their respective families take on essential responsibilities which they feel they can handle. The parents know their children want to modify the farming operation; they are willing to give them opportunities to explore new methods of farming. The parents are willing to offer advice and financial investment, but the next generation must take over the planning and implementation of the operation.

She said problems will continue but she doesn’t want to cause a rift by bringing up concerns to her husband or his parents. Her husband is overworking and becoming stressed. Is this right?

The farmer with the cow/calf operation and 400 acres of cropland is turning over his operation to his son and granddaughter. Although they have some wrinkles to work out, their approach is reasonable and will give direction and opportunity to the parents and the children taking over.

Taking on more than one can comfortably handle is not necessarily the solution, even if the younger persons in the operation decide that addressing what they feel are unfair expectations by the older generation is not something they want to pursue.

Not all farmers handle stress the same and some aging farmers actually manage better with a lot of responsibilities than when younger. They rely on the wisdom they have gained through experience.

Bottling up mounting resentments will likely make the young wife and her husband unhappier, which she acknowledged. Their children will likely copy their parents’ example when they assume positions of responsibility, whether engaged in farming or other careers. They will probably overwork as adults. The issue needs to be addressed in open business-like discussion among those involved when one or more persons in a joint operation are overworking. The two farm women, mentioned at the outset whose husbands can’t handle as much stress as when younger, initiated family discussions with an external consultant. www.farmandlivestockdirectory.com |

Dr. Arthur Benton, a great contributor to the field of neuropsychology, said at age 94 in his keynote address at a meeting I attended years ago, “Getting old sucks. But there is one benefit about aging; we become more adept as we age at determining what is important.” Good observation!

In 2001, Dr. Rosmann, along with partners in seven states, founded the nonprofit network, AgriWellness Inc. AgriWellness conducted research and provided counseling services to farm people. It became clearer that a specialized field – agricultural behavioral health – was needed to respond to the unique problems experienced by farmers, ranchers and others involved in agriculture.

More Uses For Vinegar! As a Smell Remover: To take ‘animal smell’ from pigs, cattle, goats, sheep simply put 1 cup of white vinegar in the wash water and wash as usual. This takes out most of the smell and is much cheaper than any other method I’ve found. – Submitted by AC, SD

As We Gather Together... A chilly breeze ruffles the leaves on the oak trees and the cicadas are singing their last songs as I write this on a late September afternoon. It’s a little early to be ‘talking turkey’, but in the real world, there are magazine deadlines to be met. And today, the deadline for the November Edition of the Farm And Livestock Directory is staring me right in the face! I spent some time this morning harvesting the parsley, basil and oregano that managed to survive the many hailstorms of this past summer. The pantry shelves are filling with various ‘tomato stuff’: pasta sauce made with garlic, parsley, oregano and basil grown in my garden, salsa, picante sauce and chili fixings (diced tomatoes with garlic, onions and chopped green peppers). The apples are beginning to fall from the trees and will need picking in a few more days, after which they will be made into pie filling for crisps and pies. I’ll also chop apples and freeze them in bags for apple breads, muffins, cobblers and tarts. About half of each of the apples has to be discarded due to holes from the many damaging hail storms that wiped out a good twothirds of the crop. But oh, how my chickens LOVE the remains! The chickens are my little recyclers of all things kitchen scrap. My biddies would love to be outside roaming around free range, but the coyote chorus that plays over the hillsides for most of the day and all of the night keeps them locked up inside a very large barn with a deep straw mulch. Coyotes dearly love a fresh chicken to snack on, but I firmly object to the loss of my laying hens. And, judging from the smell lingering around the barn, there are also several skunktype critters hanging around thinking perhaps one of these days, the girls will be turned out and they too can snack on fresh chicken. That’s not going to happen. I have plans to renovate the chicken house and put in a high fence (with a wire lid on it) so hawks and others critters can’t pick them up from above. I will also be sure to use a wire mesh underfoot so the coyotes and skunks can’t dig under the fence. A14

–––––––––––––––––––––––––––––––––––––––––––––––––––––– As I harvest the last of the garden crops, I’m reminded of what an old timer told me years ago: ”Be thankful for what you have; there will be less before there is more!” My pumpkin crop was a total failure this year. Not a single pumpkin grew, thanks to the hail storms. But there is always next year to try again – hope springs eternal here in ranch country. I try to remember that when we have summers like the one that just passed by. Lots of ‘ice from the sky’ and scorching temperatures that cooked the life out of the pastures. I will be blessed with some pumpkins from a neighbor. I’ll cut a few cornstalks from a field to put in an old tub by my front door as a reminder of the ‘blessings of harvest’. A friend of mine who was raised in the country but is now a city dweller decorates her windowsills with jars of produce canned from her garden as a way of saying, “Thanks for the good things of life”. One of the highlights of this time of year is the gathering of family to celebrate the Thanksgiving holiday with the pleasures of home and hearth. Those who live some distance away come home for the holiday to share memories of the past, and to make new ones. Babies are cuddled, fussed over and passed from hand to hand. Older children are exclaimed over, “My, how much you have grown!” as they renew acquaintances with aunts, uncles and cousins they see only every few years. If it is a fine fall day, many hours are spent climbing haystacks, riding horseback, playing tag and hide and seek in the crisp air. Such is life in the country, and I wouldn’t trade it for anything! May your turkey be plump, your cranberries merry and your pumpkin pie, just the way you like it! (I’ll take mine with whipped cream.) Until next month...

Fruit Soak: To make a soak for fresh fruit, mix 1 gallon of water with 1 cup of vinegar, stir well and dump in your fresh fruit: grapes, peaches, plums, strawberries, whatever you have, and let them soak for at least 10 minutes and drain well. The solution will clean any crud off of the fruit and keep the mold spores from growing for several days. If you need a hot pack, invest in a bag of salt. I bought mine at the supermarket for under $2 for a 5 pound bag. Pour the salt into a cut-down pillowcase or other closely woven fabric and sew the end shut. The resulting pack can then be heated in the microwave for two minutes per side, for a total of 4 minutes. This will stay hot for a long time; consider wrapping it in a small towel to prevent accidental burning, especially with the younger children who may not realize they are being scorched right away. – Submitted by AB, MT

Poster Hangers For Cheap If you have teens or ‘tweens’ that love posters and have to plaster their walls with these things, ask places like movie theaters or even the fast food places if you can have their old posters. Most of the time, they will just give them to you because they are going to the trash anyway. To hang them, put a dab of toothpaste (yes, I said toothpaste!) on each corner and stick them on the wall. The toothpaste dries and holds the picture/posters in place. Mental Tools To Clear Your Clutter The heat and humidity have dropped so I no longer break out into a sweat when I do small tasks, yet, I still “sweat it out” when making clutter control decisions. It is hard to separate trash from treasure. Like anyone, I get attached to my stuff. Some are gifts. Some are inherited items. Many are purchases and were described as “on sale” or “a good deal.” Whatever “it” is, it is difficult to toss an item we are attached to. After all, we have acquired it, paid for it, cleaned it, and stored it. How can we let go of stuff we feel tied to? Here are some thoughts I use in my fall clutter control, and they can help you too. They are mental tools to separate myself from my “treasures.” My “treasures” have attached themselves just like the burrs and seeds that attach themselves to my dogs during our fall walks. Some stuff is like that---it manages to cling to us like a burr and hang around in our homes whether or not we really still need it or even like it. Unused items: If I haven’t used something in a year or two, I probably won’t suddenly “need it someday.” At any rate, I ought to trust in the Universe that I will be able to get a similar thing if I do need it later. Another mental exercise I use as I weed out my stuff: I pretend I am suddenly deceased. As a hovering ghost, I get to watch friends and family going through the same stuff I am looking at and remarking, “Why on earth did she save that? What did she think she was keeping this for? What are all these for?” and so on. If I see them shaking their heads at my ghostly explanation or if I hear muffled laughter, then I know I don’t want to keep the item any longer. Gifts: What about “special” gifts from special people? I feel disloyal if I don’t save a gift. Yet, it is the people who are special to me not the gift. When I sort out these gifts, I change roles. I pretend I am the giver not the receiver. If someone can’t use a gift that I gave him or her, I hope they would decide it was the thought that counted. I would want them to know they are free to send it on to someone who might use it, rather than bury it in the back of their closet. Stuff is us: Next, think about the stuff we let hang around because we feel it defines us. I kept school papers and dated textbooks—as though keeping them somehow proved I really went to school. Do I have stuff from former hobbies so I can remind myself that I really am an interesting

person or tell myself that it is still my hobby? Do I hang onto too much outgrown kid stuff so I can definitively say I am a great mom? Ouch. This stuff does not define me. It is time to let it go. Guilt by association: Sometimes I hang onto stuff that makes me feel bad. Maybe it is a hobby I haven’t made time for in years. Or, it is a gift given from someone where our relationship ended badly. Maybe it is clothing that is too small and doesn’t fit. Will keeping a hobby force me to make time for it again? Will an old love letter or a gift from a former friend remind me to be a better person? Can hanging onto small clothing make me lose weight? No. No. No. Why do we sometimes use stuff to punish ourselves? Don’t keep physical reminders around that have negative associations that make you feel bad or fill you with guilt. If you have items like that hanging around, please choose to pass them on and allow yourself to feel better. Used to like: Finally, there was stuff that fell into the “things I used to like” category. Some stuff stuck around because I hadn’t figured out it no longer worked for me. I used a rocking chair in a baby room. Then, I put it in the living room. For a while, I liked it there…but it didn’t really belong there. We were past the rocking babies stage of life. People change. I change. Sometimes I can work to be a little quicker to pass on stuff that doesn’t provide what I need anymore. If it is no longer beautiful, useful, and/or sentimental, send it on! Ultimately, I use two formulas to keep my head on straight when making clutter control choices: Stuff (does not equal) Person. Person (is greater than) Stuff. We are not the sum total of our possessions. We are bigger than that. I hope I don’t define myself by what I own, and I hope I don’t judge others based on what they own. Finally, my stuff can support me, not the other way around. Use these mental tools to toss the extra stuff, and the guilt, the next time you clear clutter.

It’s an Apple Year Last year there was a dearth of apples throughout the land due to a warm early spring, and one night of cold temperatures. Any apples on the trees were closely guarded for use in a few pans of applesauce. This year is the complete opposite! Apples are abundant. Any tree that has tried to hide amongst other trees in the grove can not conceal its identity any longer. For here, there and everywhere apples are turning red, green and yellow, or yellow with red streaks depending on the variety planted. Years back we had fun looking through the catalogs reading about this apple variety and that one. My farmer had his likes and I had mine. We both wanted to try unknown varieties that had mouth watering descriptions. So we started planting apple trees to begin with an early harvest in July continuing all the way through October. Apples are a very healthy food and so versatile, so we thought we should plant lots. As we waited for these trees to arrive at bearing age, our impatient appetites told us one can never have enough apple trees, so we planted another row. Then, during one year of drought when apples trees looked as though they were the only crop we’d have, we planted even more. This year when every apple tree in the county is producing, we still are grateful to have apples, remembering years of scarcity. The recipe file is searched for ways to use apples. If an apple day keeps the doctor away, then bring on the apple cakes, brownies, caramel apples, and all the salads that include apples and candy bars. Apples are even good just fresh off the tree! Trees that are ready for harvest don’t want to wait long when the heat is turned up. Box after box of apples find their way to the house, turning my kitchen into an applery. Where we commence to cooking up kettles of applesauce,

baking and freezing apple pies, canning and selling apples at the farmer’s market. The cider press gets a workout when the supply of boxes is full. Each batch has its own flavor. It helps to have boys who don’t mind building up those arm muscles! The Dolga crabapple seems to always ripen around Labor Day. So that Monday is reserved for canning. The girls picked only a bushel or two of apples that morning. It didn’t produce the eighty quarts like it did in 2007 – hooray, no complaints here! The Dolga, such a hard little red, almost black apple. It’s aromatic fragrance is a delight. A distinct perfume scent of its own, that commands that sense of smell to say what’s this! Those apples were small this year, but as always big on flavor. A flavor that is puckery tart, not sweet. Most of the apples were canned with stem intact, only the blossom flower removed. The sugar syrup turns a pinkish red during the canning process, leaving a jar of tempting fruit for dessert when the trees stand bare and empty. The remaining apples are placed in the steam juicer which extracts the red liquid. It gives the kitchen an intoxicating smell. The girls spent an afternoon making one of the best, prettiest jellies ever. The flavor and fragrance brings back the taste of summer anytime a jar is open. It’s tart flavor wakes up any taste buds on those cold, cloudy wintry days. The new “golden age” of barbecuing has been spurred on by a greater selection of new found cuts. Though always an integral part of the carcass, these cuts were never before separated and identified. They’ve not only added net value to the carcass (as much as a $100.00/head) but have provided more versatility and utility to an otherwise under-valued cut-out.

For most of these new found steaks, tenderness will be an issue, but remember they’re much less expensive than the middle cut steaks. They also pack as much , or more, flavor — just simply cut more thinly across the grain. These new steaks are actually the product of necessity in these lean times. They give you an alternative to the more popular, more expensive cuts — meaning you can still afford to throw a backyard party.

We’ve gone from the era of breaking carcasses into primals (marketed as wholesale cuts) to muscle boning (marketed as boxed beef) to the now popular muscle separation (marketed as value-added selections). A combination of improved butchering techniques and marketing magic have generated new, attractively named cuts of meat designed to appeal to flavor and time-conscious cooks. And now these cutting edge cuts — which include the flatiron, the western griller, ranch steak and petite tender, are becoming household names in most butcher shops. The new cuts come from the chuck and bottom round, beef mainstays whose popularity has suffered as consumers have become more health conscious as the nation’s demographics and cooking habits have shifted. Smaller families and less at home cooking have translated into a shrinking market for bigger, fattier cuts of meat. Instead, consumers want smaller, boneless options they can cook quickly with minimal prep time. Which is why the beef industry funded research in the 1990’s to find new ways to cut and serve large, multi-muscled roasts. By 1999 the investment paid off. Researchers at the University of Nebraska and University of Florida had developed a new butchering methodology based on a technique called muscle profiling. The technique involves isolating muscles, then cutting them lengthwise, which allows butchers to offer smaller, tenderer cuts of meat just the right size for consumer’s appetites and pocket books. By contrast, the traditional method of meat cutting was less precise, making it

Whole Hog Barbecue nearly impossible to separate more lucrative cuts from less choice ones. It’s almost like the European style of cutting where those old butchers know how to do this. In contrast, we in America have been stuck in this cross-cut large family thing, here we focused on larger pieces of meat. As we turn our focus to these newest value-added cuts, the Teres Major muscle probably gets the most attention. It’s the cream of the new crop of steaks, known as the petite tender or shoulder tender. It’s actually an extension of the tenderloin, but was lost in the muscle configuration of the chuck. It is extremely small (a pound or less), but is a part of the most tender muscle in the carcass. Likewise the flatiron is a pretty small cut, and also comes from the chuck, as does the ranch steak. Meat experts have known about these chuck benefits for as long as I can remember, and have selectively known how to capture these premium cuts at heavily discounted prices. The western griller comes from the bottom round, and is somewhat deceptively mislabeled. Though it is the most symmetrical, attractive muscle, it is

It was start-up time in a newly founded meat marketing venture, when out of the clear blue came this call from the high school superintendent. He asked if I would be willing to teach the VO-AG classes until a teacher could be hired. He was in a bit of a panic, as school was about to start in a couple of weeks, and he was without a teacher. First of all, I told him that I didn’t have a teacher’s degree, for which he assured me that there would be no problem. Second, there was no way I could walk away from my business without some kind of compensation plan. Again, he assured me that he would provide an office in the school, as well as a part-time high school girl to handle all secretarial duties. It was a reciprocal arrangement that proved to be a win/win for all involved. Not only were there long lasting relationships that evolved and prestigious honors reciprocated, there was the tangible gleaning of at least one keepsake – a hog cooker. This was long before hog cookers were

so popular. So when the kids asked for a project that they could do in the shop, I offered to buy all of the material if they would design and build a hog cooker. It remains to this day one of my treasured possessions. It has been modified and updated over time, but continues to be an actively used piece of equipment. From community functions to family affairs it stays fired-up for most of the summer. There’s a hog cooker on every street comer in today’s world, but none that can compare with the one my boys made in FFA. I’m so proud of those guys, as it has stood the test of time and will be handled down for generations to come. Hog cookers come and go – rusted out, burnt out or worn out – but this one is better than the day it was built. More proof that when quality and workmanship come first, the net result will be that of a product that you can be proud. Pride in your cooking begins with quality meat selection and ends with a quality cooking experience. If either comes up short – you’re stuck holding the bag!
