How do you set up a great bridal shot? It starts with the photographer's understanding of the client's style. Does the bride want bright and airy, moody and dramatic, fashion-inspired style, natural candids, or a combination of all of them? The venue, styling of the details, weather, lighting, and details that accompany the event all play into the vision. We typically discuss this prior to the wedding; it's called a Mood Board Meeting. We create a style profile for the client, then discuss what the final product should look like. We also discuss what they don’t like by going through samples of our work to really understand their style. How do you help a bride or couple relax in front of the camera? An engagement or pre-wedding shoot is the best way to try and get to know our couples. That way when we show up the day of the event, they know what to expect from our team. It’s a friend showing up, not a stranger. We also give a lot of direction in creating the shot. We first decide on the location, then the lighting, then the posing. Clients feel confident in our shooting because we are very hands-on and talk constantly during the shoot.

We also start the engagement shoot with a 10 minute tutorial on dos and don’ts. Teaching them when we say “-blank-” this is what we mean. We start the shoot taking traditional portraits of them together. Then, we show them the photos, and ask them to tell us what they see. If they bring out something they dislike, we address it in camera, then reshoot. Their confidence skyrockets because they see we have fixed the issue right

on the spot. We do this for around 10-15 minutes, or until they continually say: ”OMG, I love it!" Then, we just do the shoot, play, and have fun. That way they are training us on what they like and dislike about themselves, and their anxiety goes way down because they have seen what we’ve got so far. The first 15 minutes are just throwaways. We use that time as training for all of us, then we play. On the wedding day, sometimes we will also play music they like while we shoot. We bring a small bluetooth Bose speaker. We will also clear out the room during specific shoots so the client doesn’t feel self-conscience in front of friends and family. This is really important. How do you suggest that couples prepare to be in front of the camera? The biggest part is managing their expectations about how the shoot is going to unfold. This is a product that most clients have never purchased. We spends hours educating our clients on the booking process, the planning process, the shooting process, the post-wedding process, and the fulfillment process. Our couples are not surprised by the engagement shoot or wedding day because we discuss in detail the process so they are prepared. We will discuss chemistry dynamics with each other, preferences they have in their portraits, stylistic preferences, ideas they bring to the table, etc. Typically, we learn more from what they don’t want during the planning stage.

It’s about what’s most important to you. Traditional couples view walking down the aisle as one of the most special moments of their wedding. Other couples view their wedding as a big party and don’t want to miss a moment of their reception.
Pantone, the company that decides trending colors for textiles and prints, announced that the 2019 color of the year is living coral, a beautiful peachy orange color. Even with this decision, pastels will continue to dominate as well. They aren't going anywhere in 2019, especially the all-popular millennial pink! Pastels will just be paired with other fun colors depending on the season. For spring and summer weddings, you'll see hues of peach, pinks and soft blues. For fall and winter weddings, pastels will be paired with nudes, creams, and sage.

Congratulations on the opening of the fabulous new 24 Carrots Catering HQ! What is your favorite part about the new space? Our favorite part about our new 24 Carrots home (affectionately nicknamed The Patch) is how much it reflects who we are – both aesthetically and logistically. Aesthetically, it tells our story of food and family, from the 60foot mural that includes all our venues, to the break room where we gather for family meal, it’s truly a place to call home. Logistically, it’s built for efficiency. A lot of thought and planning went into the way the building was laid out, from receiving deliveries to packing up trucks to go out onto events to the kitchen set up. It truly works for the way we operate, it allows for a more efficient team, and therefore, an even better client experience. What should couples expect when they visit 24 Carrots Catering for a tasting? Tastings are important to us because we believe in not only telling, but showing our services. Most of our weddings are booked by referral or word of mouth, so we value the experience of tasting and trying, which is why all of our tastings are personalized private tastings, never a group tasting! Some of our clients choose to have a tasting prior to booking our services. The benefits of this includes making sure we’re a right fit for your wedding or special occasion. During this time, we’ll get to know your tastes (quite literally!), and we’ll have the opportunity to share the 24 Carrots process and figure out how it best integrates with your plans. Another approach to tastings is one we highly recommend: having a tasting a bit closer to your wedding date. This format works best if, for example, you’ve booked a venue by 24 Carrots so you already have the date confirmed. This allows you to taste your menu within the season of your date, which makes sure that the seasonal items taste the freshest.
Any tips on picking the menu? We have an extensive menu that we are proud to specialize in! Having so many great options may seem overwhelming at first, but we are happy to take the time to guide you through it. It’s really a wonderful opportunity to personalize your final menu into one that reflects the best of you. How does service play into a wedding day? Service excellence is one of our 24 Carrots core values. We define it as “combining experience with a friendly, team-driven attitude allows us to proactively identify and meet the needs of our colleagues, clients, and communities”. We serve purposefully (with experience). We serve with the bigger picture in mind (team-drive attitude). How far in advance should a couple book you for their wedding?
Getting creative during cocktail hour is our favorite; it’s when guests are the most hungry! We like having a mix of tray passed and stationery items, that all fit well together. For example, tray passed Black Bean and Sweet Potato Empanadas with Avocado Crema, paired with our Nacho Station including Homemade Tortilla Chips, assorted Fresh Salsas, and our famous Queso Fundido with Chorizo!
We are lucky enough to have the capability to service as many as ten weddings on one given day. Because of this, we often find ourselves booking couples as close as a month to their wedding date! Of course, we recommend booking at least six months out to give our brides and grooms time to attend the Taste of Jay’s, make menu selections, meet with our inhouse designer, and simply enjoy the process!
How far in advance does a couple usually have their tasting?
What kind of menu is most exciting to you?
We offer a unique tasting experience for our clients called the Taste of Jay’s. As opposed to a sit down tasting at our headquarters, we invite brides and grooms to join us at our exclusive venues for a tasting experience unlike any other. Lighting, music, lounge furniture, florals, and of course, stunning food stations, come together to create a perfect environment for tasting. Since we host these events multiple times a year, we find that our couples taste right at the beginning of their planning process, and often come back a couple months before the wedding to make their final selections! For custom menus, we do offer private tastings that typically take place about six months to a year before the wedding.
For us, the most exciting menus are the ones that challenge us to create something new. We just put the finishing touches on a vegan family style menu that we are very excited about!
If you recommend signature drinks, what are your favorite ideas?
We love seeing them through the process. Planning a wedding is a lot of work, and being able to help our couples not only plan a successful wedding, but enjoy the process as well, makes it all worth it!
We do recommend signature drinks and offer a long list of options to choose from! However, our favorite alternative is our Craft Cocktail Bar. With this special add-on, guests muddle their own drink, using fresh fruit, syrups, and aromatics. Then our bartenders top it off with the liquor of their choice!
Do you have a favorite dish to serve? It’s hard to choose a favorite when we have so many! Right now, we love our melt bar. the brie, blackberry, bacon and jalapeño melt is our favorite. What is your favorite part about being part of a couple’s wedding day?

What is your favorite part about being part of a couple’s wedding day? The best part of the wedding planning process is getting to personally know each client. The NYFC team never tires of being a vital part of our clients' special days, whether it's watching couples exchange vows, hearing the toasts, or watching the couples’ first dance. We love that we are able to help create beautiful memories for one of life's important events.
How far in advance should a couple book you for their wedding? The most popular day to tie-the-knot remains Saturday, so if a couple wants that day, they should reserve up to a year in advance. Our venues are available seven days a week, so Fridays and Sundays may be viable options.
If you were to serve the last meal on earth, what would it be? A tapas tasting featuring a little bit of everything. That means surf and turf and delicious vegetarian and gluten free too – one of our favorites is the vegetarian portobello stuffed mushroom. It’s delicious and satisfies those guests with a restricted diet. - Mini ahi tacos with cucumber mango salsa and wasabi crème. - Tater tots tossed in garlic parsley butter, dusted with freshly grated parmesan cheese, served in individual paper cones. - Bacon-wrapped dates on Belgian endive with blue cheese aioli. - Braised short rib sliders - Soup sips with mini grilled cheese bites
What kind of menu is most exciting to you? Every menu and every event is customized to fit the style and taste of each couple. We really like the global fusion cuisine trend that continues to evolve. Couples today are interested in trying new flavors and especially adding a new twist to comfort classics. What signature drinks do you recommend for a wedding? Signature cocktails are a great way to start the party. They can be prepared and ready to tray pass to guests as they arrive. This avoids long lines at the bar. Couple seems to gravitate towards fresh takes on margaritas and mojitos, like adding a zesty ingredient like ancho chile and garnishing with fresh herbs. Consider serving one signature cocktail per guest. There will be guests who won’t imbibe and others who may want a second sip! What is the most unique and fabulous combination of cake flavors you have ever created? Most couples go with traditional favorites. A trend that’s popular is featuring three or more individual cakes instead of just one large wedding cake. This gives them more options on types of cakes, sizes, shapes, filling and frostings, and décor.
What type of details, besides the wonderful meal, can your team provide for the couple? Each couple has a dedicated coordinator who helps with planning their event from start to finish. Our venues are turn-key, providing round tables, classic chiavari chairs, linens, stemmed glassware, porcelain plates, fine quality utensils, and serving pieces. We have built-in dance floors, wireless sound systems, ambient lighting, and customizable signs. We also have a tried and true list of preferred vendors that we can refer if needed, including DJs, bands, photographers, videographers, floral designers and more. Presentation is everything. Our tabletop designers create exceptional seasonal displays using fresh produce and natural elements while complimenting the couples color palette.

Tell us about yourself! Canyon Catering is a family-owned, full-service catering and events company in Orange County that’s proudly been in business since 2010. We’re a family-owned business not because we have to be, but because we want to be. Canyon’s success can be attributed to Steve’s central motto: Treat your employees like family. We rely on our “family” for a few things: - We rely on them to help us grow our business, to keep us honest, and to make sure we’re having fun while doing it. - We don’t accept mediocrity from anyone on the team, including senior management, and we expect our family members to hold us all accountable - When we run into a problem or an idea isn’t executed quite as well as we had hoped, we don’t point fingers. - We problem-solve carefully and identify how or what happened, why it went wrong, and what we can do to fix the situation and create a procedure that allows for success. Where do you source your ingredients? We source local products as well as working with a lot of specialty suppliers for certain cuisines on our menu, such as the Asian cuisine. We have great relationships with our food vendors and have a strong purchasing power. What is your favorite part about being part of a couple’s wedding day? Sounds corny, but I love getting to be a part of their process from the time we have our first phone call, to our tasting where we meet, to eventually seeing them on the day taking their vows in front of friends & family. That gets me every time. It’s really what it’s all about. Obviously, I love working with couples who appreciate and love food, since food is what we specialize in, but overall, it’s the whole process. Forming that relationship, finding common ground to connect on, identifying the vibe/vision/flow of the overall event with out clients, and then delivering and executing it on the wedding day.

What was your biggest food fail (but was worth trying!)? A small plate with too many steps for a large event at a busy station. It was a crispy pork belly with a foam finish. Although it was a good appetizer in theory, we quickly realized we could not keep up with the crowds at our booth while building an eight-step appetizer. It was especially tricky constantly whipping the foam and finishing the app with the fresh foam. It was a true team effort .

What’s the best thing a couple can do to help your team on the wedding day? Communication is key overall. It will help us be successful when making changes or adjustments leading up to the day. We can’t fix or plan out a situation we don’t know about, so I always ask my couples to keep me informed and always ask questions. There are no dumb questions when planning events! Besides a wonderful meal, what does your team provide for the couple? That is a great question as many clients assume caterers only handle the food. The reality is, we are likely the first ones on site & the last ones to leave once the clean-up is over. We can help with the timeline, lighting, ordering and selecting rentals and linens, as well as connect our clients with incredible vendors that we love to work with (DJs, florists, event coordinators, photographers, etc.). We also have a décor department in house at Canyon, so we can always add items to buffets or stations to match the setting of the venue or esthetic of the event overall. What kind of menu is most exciting to you? Simply put, one that my client is passionate about. I spend most of my time post-tastings working with clients to try and fit as many cuisines and food experiences for their guests, without compromising the budget or the clients desire to bring ‘themselves,’ into the menu. When your friends and family sit down to enjoy your wedding meal, they should see you reflected in the plate. I generally start the menu process by asking questions such as: "How did you meet? Did you grab a specialty dessert or snack before or after the first date? Is there a food or dessert tradition you have together?" We’ve had couples ask us to re-create dishes from their first date. How far in advance should a couple book you for their wedding? About six months to a year allows us to properly plan & execute any event. The more time we have is always appreciated, but we have also planned a wedding in less than 12 hours, so anything is doable with the team of creative, genuine people we have here at Canyon.

SAN FRANCISCO, CA A mutual friend introduced Jen and Nick to each other at a party in San Francisco. Little did their friend know, but Nick and Jen had actually met briefly six years earlier when they were studying in Beijing. A few days later, they had their first date at the San Francisco Exploratorium and they searched for the parrots of Telegraph Hill at the Filbert Steps. During one of the days, they biked down to a little cove overlooking the ocean and had lunch. After they finished eating, Justin took out 23 handwritten letters and gave them to Linda. GUATEMALA Luisana and Jeremy consider Guatemala to be “their spot,” so it’s wonderfully fitting that they were both engaged and married in this beautiful country. On Luisana’s way to the church in a traditional tuc-tuc, the train of her dress fell out and was dragged through the mud. The entire village showed up with small buckets of water and soap to help her mom clean her dress before walking down the aisle. Her dress may have been wet, but it was also spotless!
