The first solar-powered cidery, Flag Hill Farm blends the very best Vermont ingredients into fun and delicious ciders. You’ll see what we mean. Andrew Volansky, a local Stowe architect, shares just some of the Mountain Modern home bars he’s designed for clients. The outdoor-focused designs take into account exactly who will use the space and for what kind of entertaining. Speaking of architecture, Austin Design reached out to us to see if we wanted to share their work on both the Alchemist and Lawson’s Finest Liquids facilities built in Stowe and Waitsfield, respectively. They fill critical roles. Official greeter, floor inspector for anything edible, critter catcher. So to give them their just accolades, here are a few of the unsung heroes of the craft industry.

He is currently occupying the perpetual position of Employee of the Month, which he has never actually earned. On most days, you can find him barking at the forklift or chewing on cardboard trays that he stole from pack-out.

Her duties include finding the warmest places to bask in the sun and creating calming white noise with her snoring.

oyden Valley Winery & Spirits is located on a fifth-generation family farm in the Lamoille River Valley of Vermont’s Green Mountains. Rooted in family heritage and 100 acres of maple trees, the winery focuses on creating the highest quality product using the finest local ingredients. They continue the time-honored practices of hand-crafted, small-batch spirits.

Boyden Valley specializes in cream liqueurs, maple bourbon, and spiced wine. It was the first craft distillery in the US to specialize in cream liqueurs. Their cream liqueurs were first launched in 2010 and feature wood-fired maple syrup made on the farm from their own sugarhouse and wood-fired arch. They also feature Boyden’s apple brandy made completely from in-state apples.

The vines, which are among the oldest in Vermont, have been leased by master sommelier David Keck. He moved back to Vermont from Houston to take over eight acres and produce wine under his StellaXVI label.

1997. The old 1875 carriage barn building was renovated, and a tasting room and tank and barrel room were opened. NICHING DOWN In December 2020, after many successful years in the wine business, the company announced it would close its

retail tasting room and cease production of wine and cider. David said the company decided to pivot not because they weren’t creating great wine and ciders but because they felt they were producing too many products. The move was so the company could make a few products but to make them the best on the market.

MAPLE IS NOT JUST FOR PANCAKES The Maple Cream Liqueur was the first to be created. It features Vermont maple syrup and apple brandy, making it smooth with a distinct maple flavor. Maple bourbon is smooth and not too sweet with notes of maple. This fantastic taste is accomplished by 100 percent pure, wood-fired maple syrup made in small batches, aged in bourbon barrels for eight months, and blended with a five-year-old bourbon whiskey. The Apple Cinnamon Cream Liqueur is made with Vermont apple brandy, ice cider, cinnamon, and cream, leaving you with a sweet apple flavor. Last but not least, their Glogg is a spiced winter wine served hot. Fashioned after the traditional Swedish recipe, this soother takes vintage red wine and spices it with cinnamon, cardamom, and cloves. There are no plans to add any other cream liqueurs at this time. David said that they are happy to just be focusing on their current line and making it the best on the market. Once the tasting room closed, the company also moved from selling directly to the public to selling wholesale to liquor stores. and the architecture of breweries

G

reat brewers make great beer. But what makes for a great brewery? Austin Design, Inc. (ADi) may just have the answer. They’re architects with a sweet spot for breweries, and their motto—architecture for enjoying life—guides them in designing places for people to connect, make memories, and participate in the craft culture. The team starts every brewery project by narrowing in on the client’s vision. ADi’s Peter Webster, designer and beer lover in equal measure, sums it up: “We ask, how do we create a physical and sensory experience that embodies the brand of the brewery? The goal is that this embodiment will be a place where

staff and fans participate in and drive the business forward.” Beyond wooing customers with eye-catching aesthetics, ADi also considers the brewing team’s working environment to be a key component. After all, efficient spaces that accommodate equipment, workflow, and future growth keep the beer flowing. With a catalog of projects throughout the Northeast, ADi has established themselves as go-to brewery architects. In Vermont, they are particularly proud to boast The Alchemist and Lawson’s Finest Liquids as two of their clients. We invite you to grab a pint and settle in for a closer look at the design of these destination breweries. THE ALCHEMIST Splashing onto the scene with their world-ranking Heady Topper Double IPA, The Alchemist in Stowe put Vermont beers on the map and required a facility to reflect the eminence and character of the brand. On a more down-to-earth note, when owners John and Jen Kimmich spoke with ADi about the

design, their criteria were that the steelframed brewery would be, simply, a good place to work, as well as highly energyefficient, durable, and sustainable. They sought a unique space with plenty of daylight that would facilitate their hands-on approach to brewing. Peter recalls, “They presented us with a photo of them walking through a sun-drenched Caribbean airport as inspiration.” The challenge: marry that sensation of an open, modern structure with something that also respected the vernacular architecture of rural Vermont. ADi delivered with a simple yet elegant structure featuring curvilinear roof forms and a high center area, characteristic of the monitor barn style often seen in Vermont’s quintessential sugar shacks. A glass curtain wall at the end of the building, along with clerestory

windows, maximizes natural sunlight in the workspace. The accompanying silo, which houses the elevator, rounds out the twenty-first-century brewery’s homage to Vermont’s working landscape. A true collaboration between brewers and architects, The Alchemist is filled with both the magic and science worthy of its name. LAWSON’S FINEST LIQUIDS Another of ADi’s beloved projects, the Brewery and Taproom at Lawson’s Finest Liquids in Waitsfield, embodies the brewers' commitment to quality and community as they welcome visitors into the heart of Vermont. Sean and Karen Lawson developed a legendary reputation in the craft brewing realm with their Sip of Sunshine IPA, and they wanted to leverage that success to build something that would celebrate not only their hard work but the labors and creations of their neighbors as well. They worked with ADi to design a memorable taproom that would complement its surroundings, incorporate the state’s love of the outdoors, and utilize www.BrewViewVT.com

local craftspeople as much as possible. “We strove to capture the energy of a bustling mountain lodge that acts as an epicenter for meeting friends and exploring the area,” Peter explains. Mad River Post and Beam erected the timber-frame structure, while area craftsmen and artists provided the bar top, tables, signage, and even light fixtures. The result is a showcase of what Vermont’s finest has to offer to Taproom visitors beyond great beer. The region’s natural beauty is on full display as large windows permit plenty of sunshine and scenic views—bringing the outdoors in. The warm tones of the wood beams and impressive fireplace keep imbibers cozy in the winter months. The particular design of the timber frame’s scissor trusses allows for a bright, airy, minimally interrupted space for folks to congregate. With special attention to the landscape and community, the Taproom at Lawson’s Finest Liquids fits right in with the Mad River Valley it calls home—aesthetically and ethically.

Discovering natural and off-the-beaten-path sippers at

Burlington’s Wilder Wines

W

hat is natural wine? Well, it’s wine that is, y’know, natural. But to be a little more specific, “natural” means that the wine has undergone the least human interruption—no pesticides, chemicals, unnatural yeasts, or additives. It is wine that comes from grapes that have been left to grow their natural way before being crushed, barreled, and bottled. To

be blunt, natural wine is as wine as wine gets, yielding expressions whose flavors can be described from funky, esther-y, and sour to subtle and remarkably food-compatible. Think of wine before modern, commercial farming, or the way you’d describe what wine is to a child. That’s natural wine. Just phenomenal folks who are turning out fantastic wines with great intentions.

Retailers by Wine Enthusiast, so, as you can imagine, it’s more of a wine culture, a wine boutique, a little wine world. Proprietor Sipha Lam, a veteran of the service industry, fell in love with natural wine during a tasting at the Boston restaurant at which she served. Poivre et Sel by Olivier Lemasson was the wine that did it for her–earthy, spicy, natural (a new, to her, descriptor). “I don’t quite understand why anyone would be opposed to trying natural wine or not open to the idea of it. It’s wine before pesticides, additives, and chemicals became a thing,” Lam says. But Wilder Wines is not out to alienate any drinker from trying something they’re unfamiliar with, but rather open doors to new possibilities. “I totally understand people who go to Trader Joe’s and spend five bucks on a bottle, and that’s just right for them. But then there are folks who go to the local co-op or grocery store and spend 15 bucks on a mass-produced bottle, likely unaware of where it comes from or how it’s made.” Clearly, Wilder Wines is not only in the business of selling wine but also providing learning opportunities. “We’re small and very carefully curated. I strive to make this space very approachable, and when communicating with my shoppers, I don’t throw around fancy wine terms. I essentially tell them my tasting www.BrewViewVT.com

notes and what I think will help them enjoy their choice.” To this end, Wilder Wines offers several monthly wine subscriptions, which offer discounted deals on multiple bottles, as well as an in-store membership discount.

FIRST AND ONLY And although you may be seeing some “natural wine” sections opening in other shops in and around Vermont, Wilder Wines is the first and only completely natural wine shop in Burlington. “A few

other Vermont retailers started curating small sections for different things, and that’s great! If a restaurant or shop curates a natural wine program, more people will become familiar and seek it out. But hopefully, shoppers prefer Wilder Wines so that they can support a small (tiny) local business and more easily communicate with someone, versus going to a grocery store.” What’s next for Wilder Wines? “Hopefully, a small wine bar whose food and wine can bring people together, potentially in a slightly larger space that can fit a few tables,” Lam says, and considering her energy, positivity, intelligence, and success, I think we can all agree that that would be wonderful. Check out the occasion-specific bottles she recommends, and who knows, maybe we’ll get to enjoy them with some food in a future iteration of Lam’s business. U

T

he rise in the variety and quality of Vermont’s craft beers and spirits over the last few years has been well documented. But along with that rise came an important question—where’s the best place to enjoy your beverage? For many, the answer to that question is a home bar. Andrew Volansky and Kathleen Thatcher of

Volansky Studio Architecture & Planning, a Stowe-based architecture and interior design firm, have worked on a variety of home bars. They say that when it comes to their design, they always want to emphasize a connection to the outdoors. “Our clients are coming to Vermont to experience an outdoor lifestyle, and being able to find ways for our design work to support that even in the middle of February is important,” explains Andrew. VERMONT MOUNTAIN MODERN That outdoor-focused design is a central piece of Volansky Studio’s style, which they have dubbed “Vermont Mountain

Modern.” The principal feature of this style involves working with clean lines and authentic materials and accentuating the natural beauty of those materials. Andrew, the firm’s founder and principal architect, emphasizes that the design features of a home bar are about blending materials and details that seamlessly fit with the other design elements. He adds that even the home bars located indoors can still have that connection to the outdoors. “We are being asked to design home bars in family recreation rooms that are adjacent to the outdoor patio, firepit, and hot tub areas,” he explains. “We are also seeing many home bars becoming part of the large great room concepts we design, where the doors can be thrown open onto a screened porch or patio overlooking the valley and mountain views.” TAILOR-MADE DESIGNS Both Andrew and Kathleen agree that when designing home bars and entertainment areas, it’s important to understand who is going to be using it and for what kind of entertaining, and how to tailor the design specifically to each client’s needs. “Each bar area is special to the way they live, play, and enjoy the company around them,” says Kathleen, project manager and production team coordinator at the studio. “It could be as simple as enjoying the grandkids when they visit or an intimate dinner with friends.” She www.BrewViewVT.com

explains that how the bar will be used by the client and what they want showcased will directly influence the design element. Such details as whether they will want beer on tap or if they want a wine refrigerator can influence the overall design. Andrew adds that they also have to account for the fact that clients might be entertaining multiple generations. “Our clients are planning to be able to invite friends and families of all ages, and often the kids need to have a place to curl up and watch a movie at the same time others are socializing around the bar or gathering around a firepit,” he says. SPACES FIT FOR A STAYCATION The two say it makes sense that if people are entertaining more at home and taking staycations instead of traveling these

days, they’ll want a proper space to do it in. “With many people vacationing in their homes, we have found that people want to have a space to invite a few friends and not always be in a space outside of the home,” says Kathleen. And they both plan to continue working directly with their clients so that they can fully enjoy their Vermont brews and spirits after a day on the slopes or in the woods. “In the end,” adds Kathleen, “it is about the people and making them feel welcome.” U

I highly recommend stopping in now if you have the opportunity before you find these guys with a line out the door. The space allows for a glimpse into the production facility. BALANCE AMONG THE BOLD You want a slew of East Coast IPAs? Well, you are in for a treat. They have several series of IPAs. You can find straightforward delectable single-hop pale ales in the Sole Shine Series. The cherished flagship single IPAs, Rotary Chaos and Green Fountains, are often found in the owners’ hands. Those looking for a bit more will seek out their double IPA Northern Heights. The intrepid will enjoy their mouth-watering Fruited Double IPAs. Flag Hill Farm’s sustainable methods lead to something delicious

brandy is an excellent example of how co-owner Sebastian Lousada’s European upbringing influences his techniques. The brandy is inspired by calvados, a French apple brandy, and is slow-fermented and barrel-aged over an open flame. An English native, Sebastian began crafting traditional wines at age twelve, allowing him to now be able to prepare such imbibables as their Sparkling Vermont Cyder and its still counterpart, Vermont Cyder. The sparkling elixir is made according to the méthode Champenoise, where the still, dry apple wine undergoes a second fermentation in the bottle, creating carbonation. The result is a fresh and crisp wine that will satisfy even the pickiest sommelier’s palette when paired with a dessert or light entrée. ENVIRONMENTAL SUSTAINABILITY Sustainability is a core value at Flag Hill Farms. The farm is a member of the Vermont Land Trust and follows guidelines from the National Audobon Society on bird- and bee-friendly farming. Sebastian

and co-owner Sabra Ewing have succeeded in maximizing their orchards’ role as a significant pollinator habitat. They achieved this milestone in environmental sustainability with a strategy that increasingly more agricultural professionals are exploring—simply not spraying anything. Introducing sheep into the orchard has allowed grass maintenance, weed control, and natural fertilization. In addition, co-owner Sebastian’s interest in ornithology (the study of birds) led him to build a nesting box for kestrels, a type of small falcon. How to Be an Eco-Friendly Consumer Vermont Plastic Can Carrier Reuse & Recycle Initiative raises awareness and takes action

Plastic can carriers aren't easily recyclable in curbside bins. But they can be reused or recycled at some breweries.

W

ith the state of the environment being what it is today, it seems as important as ever that we as consumers do what we can to help by embracing brands that are dedicated to decreasing their impact on the environment. Burlington-area craft beer drinkers can do this thanks to a new collaborative effort between Reusable Solutions, Eco-Friendly Beer,

and Casella Waste Systems. They have come together to create the Vermont Plastic Can Carrier Reuse & Recycle Initiative (VPCCRRI). 100% RECYCLABLE…SORT OF Millions of plastic can carriers end up in the hands of Vermont’s craft beer drinkers each year. Single-use plastic can wreak havoc on wildlife, taking up

to 1,000 years to degrade naturally. But carriers that make it into recycling bins—put there by people thinking they are making a difference—are often not able to be recycled. IT BEGINS WITH AWARENESS The goal of this pilot program is to raise awareness of the issue and reduce single-use plastic packaging.

The program allows consumers to return carriers to participating retail stores and taprooms. Small brewers can clean and reuse the carriers and big brewers who can’t use the carriers donate to the small brewers. Casella Waste Systems, the fiscal sponsor of the program, is providing custom collection bins. Casella will also help participating brewers and retailers recycle unusable carriers with a unique separate-stream collection, directing the carriers to a plastics processor for recycling. The VPCCRI take-back program is not only environmentally conscious but also economically feasible for participating breweries. Reusing the plastic carriers is less expensive than continually purchasing new ones. WHO’S IN? The three organizations behind the Vermont Plastic Can Carrier Reuse & Recycle Initiative have been working to bring about awareness and change. Casella Waste Systems is dedicated to improving sustainability and helping to bring about fundamental change.
