Where’s your happy place? For me, it’s in my small courtyard – nothing gives me greater pleasure, than pottering around, watering plants and watching the growth of all my treasured pot plants. I’ve got quite the collection now – and well I could possibly be called a plant hoarder, but I just love how fresh it makes my outdoor space look. If you also have a petite outdoor space to work with, be sure to check out our vertical gardens feature from page 34 for lots of ideas and products that will help you get your plants off of the ground and free up your space. With only 19 square metres to work with in my own courtyard, the only way to go was up with my plants – let’s face it bulky pots can quickly chew up valuable floor space. If you’re looking at achieving a wall of greenery, vertical gardens are the way to go. The hanging vertical garden on my back wall provides a lush leafy outlook – making it the main focal point of my one-bedroom apartment. When I enter the front door I’m instantly met with that green vista, and it makes my heart sing. Shelving on the adjacent wall (seen here), lets me display all of my favourite potted plants. I love to rearrange it on a daily basis. It really is the perfect little shelfie. Happy reading, plant lovers!

Green thumbs you never even knew you had will likely start twitching when you step into botanical and clay emporium Nikau. Coowner Nicole Steele shows us around.

Nikau’s Byron Bay store is adorned with layers of beautifully styled greenery, ceramics, textiles and original artwork. Light-filled and airy, the space is simultaneously calming and inspiring. Rugs and cushions entice you to lounge, while abundant plants and handmade clay vessels remind you of the tactile rewards of tending to nature and getting your hands dirty. “We wanted to educate people on indoor green with amazing, complementary ceramics and pots,” says co-owner, designer and ceramicist Nicole Steele. Nicole partnered with florist and botanical stylist Nikki Pocock to create Nikau (pronounced nee-

koh, after New Zealand’s iconic native palm). “As with all good ideas, Nikau was born over wine, a common interest, and deciding we liked each other enough to work together!” The pair met through the nearby creative collective, Newrybar Merchants, and launched Nikau there after realising they shared a similar ethos. Adopting a ‘slow buy’ philosophy, their range focuses on functional, thoughtful and sustainable design. They design and create many of their own wares, and stock 90 percent handmade pieces – most of which are produced by local artists. An expanded version of their Newrybar Merchants 16

space, their flagship Byron Bay store opened its doors late last year. “From here, we handle all of our green installs for clients’ homes and holiday lets, and Nik does all her wedding and event floristry and botanical styling. Both stores carry a huge range of ceramics, textiles and art, however, Newrybar showcases bigger furniture pieces.” Nikau is also the only Australian stockist for signature textiles and wallpaper by celebrated designer, plant-lover, and founder of The Jungalow blog, Justina Blakeney. “She is our muse!” Nicole enthuses. “You can either go full ‘Jungalow Justina’ or add hints, depending on your taste... Bohemian style is not new, but the option

to decorate in such a multi-layered, affordable way means you’re not dictated to by trends, and are still supporting a handmade, quality product.” Nicole and Nikki’s vision is underpinned by a genuine desire to enrich the lives of their customers – from sharing the stories of their artists to teaching clay and floral classes and running plant education workshops, on their deck. They stock hard-to-find plant varieties for enthusiasts, but they’ll also help you choose if you’re a novice: Great news for those of us who’ve bought plants with good intentions, only to watch them wither at home.

“Come, talk to your crazy plant ladies!” says Nicole. “Seriously, get advice first from people who know plants.” Nicole suggests photographing your space and discussing what plants will thrive there, along with considering how much maintenance and scheduled watering you’re prepared to do. “Some great first plants are monstera, devil's ivy, rubber leaf and Zanzibar gem. All require minimal upkeep and are hardy, but give you results – which, in turn, brings plant confidence!” Did we mention the store has a flower bar, too? Melbourne-based horticulturist Thomas Denning dishes on six plant varieties from his widely popular Instagram feed – including the do’s and don’ts for better upkeep of each.

3. 1.PITCHER PLANT (sarracenia species) The pitcher plant does well in a bright spot indoors, preferably with some direct sunlight. It is really important that the potting media stays moist at all times of the year, as pitcher plants are generally found in boggy, nutrientpoor, marsh-like areas. Pitcher plants are carnivorous, taking a lot of the nutrients they need from insects they attract, and digesting at the base of their funnels. I love them because they are quite handy indoors for controlling some common houseplant pests, like fungus gnats.

2.RUBBER PLANT ( ficus elastica species) Rubber plants are one of my favourite indoor plants, for a few reasons: They have beautiful

foliage across quite a few species, and are incredibly easy to look after. Rubber plants are best suited for a bright spot indoors, with some filtered sunlight. It is important to ensure you water them sparingly, as they do not like constant moisture in the soil.

3.MISTLETOE CACTI (rhipsalis species) Rhipsalis are an epiphytic form of cacti and make excellent houseplants, as they love a bright position indoors with filtered light. I love them because the range of species available here in Australia is fantastic, and they are a great option for adding interesting foliage to a living space. It is important to water them thoroughly during the warmer months, and water sparingly during the cooler months. 28

4. CACTI Cacti can be such a striking indoor plant. I love them because there are so many different species, shapes, and sizes you can go with. They can become a real talking point of a houseplant collection, with minimal effort to keep them happy.

As they are normally found in harsh arid environments, it is really important to try and emulate these conditions indoors. I keep my cacti in a bright sunny position, and let the soil dry out in-between waterings. Generally, you do not need to water them at all in winter.

5. AIR PLANTS (tillandsia species) Tillandsia survive on nutrients and water absorbed primarily through the trichomes on their leaves. They are given the name ‘air plants’, as they require little or no potting media to survive – which is fantastic indoors, because you can pretty much place them anywhere. Most tillandsia will survive happily in a bright spot indoors, with filtered light. It is important to water them regularly, as temperatures indoors can dry them out quickly. I usually soak mine in water for 10-15 minutes weekly in summer, and fortnightly in winter – with the occasional misting if the weather is quite warm.

6. EMERALD FOREST (Sinningia bullata) The emerald forest is one of my favourite plants in my collection, due to its interesting growth habit and bright red/orange flowers. The foliage grows from a tuber that sits just above the soil line, and looks fantastic if left to grow and trail down from a shelf or bookcase. Emerald forests prefer a position with bright filtered light indoors, and generally a weekly water in the warmer months, then reduced to fortnightly in cooler conditions.

From tiny glass nurseries to leafy stilllife arrangements and verdant miniature landscapes, these ingenious Design House Stockholm products bring the outside in, and invite us to appreciate nature as a work of art.

A testament to how much we’ve come to treasure indoor plants as part of our homes, Sweden’s influential Design House Stockholm has a suite of products it refers to simply as, ‘The Greenery’. For two decades, Design House Stockholm has acted as a ‘publisher’ for independent designers, inviting them to present personal ideas that may then be selected for production. Headed up by Anders Färdig, the company has also become a touchstone of contemporary Scandinavian design – and that’s ‘Scandinavian’ in a philosophical and aesthetical, rather than geographical sense – characterised by timelessness and elegant utility. The collection includes Caroline Wetterling’s delicate Grow, “a greenhouse for nature’s smallest flowers, and a nursery for the plant’s first stages of life”, according to DesignStockholm.com. Made of two handmade glass pieces, the bottom holds the soil and the plant, and the top is a lid with a spout that cleverly doubles as a watering can. The spout also functions as a valve that lets in air to

regulate moisture and temperature levels inside the greenhouse. Then there’s Sara Szyber’s Flower Pot Stand, whose pared-back design of three steps allows you to create a terraced tableaux of pots, objects and greenery, as well as elevate indoor plants to reach natural light. Completing Design House Stockholm’s trio of plant-led products is Greenhouse – and its more compact tabletop version, Greenhouse Mini, launched earlier this year at the Stockholm Furniture Fair – by design studio Atelier 2+. While the designs by Wetterling, Szyber and Atelier 2+ all offer new ways of bringing greenery into the home, Greenhouse by Atelier 2+ is perhaps the most adventurous: A terrarium that’s small enough to be indoors but large enough to house a tiny landscape, it invites the user to envision and create an organic artwork. Playing on the practical aspects of a real greenhouse with its minimal 31

frame and glass panels, Greenhouse also literally elevates nature onto a pedestal and frames it, like a sculptural work of art. Interestingly, while Greenhouse looks quintessentially Scandinavian with its pitched roof and ash timber construction, its designers hail from Thailand. Atelier 2+ is Worapong Manupipatpong and Ada Chirakranont, a Thai designer duo, who created Greenhouse after studying in Stockholm. Inspired by the Swedes’ relationship with nature, their design for Greenhouse arose from a desire to display and tend to greenery inside any dwelling. Atelier 2+ initially designed Greenhouse for the Wallpaper* Handmade exhibition in 2014. The following year, Anders Färdig fell in love with it at the Thailand International Furniture Fair, and their collaboration with Design House Stockholm was born. The pair, who prefer working as a team (“It’s a good way to expand your ideas,” Worapong says), usually collaborate on larger-scale projects. With its deliberate play on scale, Greenhouse offers its owners a creative challenge: “The size of Greenhouse encourages people to create miniature worlds, because it is not large enough for people to merely plant just anything in it,” Worapong points out. “It makes demands on the user – perhaps requiring green fingers, or the sensitive touch of a sculptor.”

Shelves are not only ideal for freeing up floor space – their vertical impact can also make a beautiful statement with plants. “Adding plants to shelving can turn an otherwise boring wall into an artful green scene, thriving with life,” says Alana Langan, co-owner of Ivy Muse botanical wares. Alana believes the key is to have at least one trailing plant, such as devil’s ivy, chain of hearts or heartleaf philodendron: “These plants help soften horizontal lines and add movement, keeping the look relaxed and not structured.” Bec Dentry, who runs plant/outdoor furnishings retailer, Unearthed Garden, is also keenly aware of shapes in relation to shelves. “The combination of the round shape of our Internal Stacker (pictured) lends itself beautifully to the rounded form of our Planter Dishes,” she says, adding, “Plants make a room more relaxed and inviting.”

Fancy a fuller look for your outdoor space? A vertical garden will lush it up, in no time. There’s a system to suit every terrace size: Simply fill it with bushy, full-figured plants that are suited to your location’s climate and sun position, and you’re set. Striving for a seamless transition from an open-plan kitchen to a patio (shown, above) Melissa Bonney of Sydney-based The Designory used the pod Skale system, which connects to wire mesh and irrigates using drip trays along the bottom. Thanks to a textured mix of begonia rex, Calathea orbifolia, alocasia bambino and others, “it became the main feature for the whole space, not just the outdoor area,” Melissa says.

Fiona Chalmers of Melbourne, meanwhile, was seeking a space-saving solution for her terrace (shown, right) – without compromising texture and colour. She enlisted help from locals Technē Architecture and Interior Design, and Herrod Landscaping, who installed Atlantis’s Gro-Wall – a modular system with drip irrigation – which attaches to any wall. Besides freeing up space, this particular system “allows plants to grow bigger due to the bigger planting space, therefore, creating a better aesthetic,” Fiona says. Furthermore, her choice of succulents, natives and grasses delivers looks and low maintenance. 36

Loveliness is in the air, when it comes to hanging plants: Pairing your favourite foliage with a decorative hanging planter or plant hanger is one of the most affordable ways to showcase greenery in a small space. Just as Pretty Nice blogger Lisa Reck, who strung up her plant in style, as shown in her bedroom, above. “I bought these recycled cotton holders for planters on a trip to Norway, and couldn’t find the right place for them,” the Berlin-based photographer and interior stylist recalls. But after spotting a DIY idea using a shelf-holder to support a lamp, the rest was pure ‘genius’: “I thought this idea could also work with plants. I’m so happy with the result.”

Based in Burleigh Heads, Queensland, Annabel Trends has been a leading name in the home décor market since the 1960s, when founder Ann Dawe started with bold, patterned kitchen napery. Today this much loved brand continues with strengths in design, colour, practicality and presentation. As Ann’s daughter, Sally Dunn, grew up in a home that abounded in creativity – with a sewing machine on the kitchen table, and rolls of fabric down the hallway of the house. It is little wonder the high school teacher (specialising in Home Economics) relocated from Melbourne to the Gold Coast in 2006 to join the Annabel Trends team. “I loved to make things, so it was only natural that when the time was right, I’d move over to the family business. I had a good knowledge of textiles, and I was able to apply this to manufacturing,” says Sally, who is now the managing director of the company.

Wellbeing is hugely important to Cindy-Lee, who loves to surround herself with plants. “Le Jardin is about enriching the lives of those who come into contact with the brand – colour, comfort and easy-living products to create your own personal sanctuary,” says Cindy-Lee. I think our planters really reflect Lightly’s focus on timeless, simple design and utilitarian beauty.” Attention to detail ensures the quality of each product; Cindy-Lee designs and makes samples from her studio and then, depending on the material of choice, seeks the right artisan to produce the item in limited edition. “We value small-batch and sustainable production. With this in mind, I design pieces to last a lifetime and develop meaning and a place in peoples’ lives,” says Cindy-Lee.

Celebrating a love of interiors and outdoor living, Perth-based Still Life create objects for the home from powder-coated steel that are eminently versatile. Founded through the enviable talent of Catherine Foote, who has a background in fashion and design, and engineer Cailean Soutar-Dawson, Still Life has become a dynamic contender on the interiors scene. It was while creating a coffee table for their home, one long weekend in 2015, that the idea of Still Life was launched. “We really enjoyed the process – taking a concept sketch idea, and turning it into something tangible. When we finished, we knew we were onto something we wanted to pursue further,” explains Catherine. “We’ve both always been creative in our industries, in different ways,” she continues, believing it is these differences that enable the pair to see different perspectives – an invaluable tool in product development. “I lead the concept and design side of things, while Cailean is hands45

Established in South Fremantle in 2000, Bauwerk Colour was created with a vision – to produce modern lime paint in harmony with nature. Cofounder and Creative Director Bronwyn Riedel, together with her husband, Andreas, now supply their paint all over Australia, the Middle East and Europe.

Their belief is simple – that buildings and homes should not be disconnected from the materials they are built from. Lime paint is a truly beautiful process: It starts out as limestone that is heated, then slaked in water for months, to become liquid. It is then made into paint by a simple process, and when painted onto the wall, it takes carbon dioxide from the air and turns it back into limestone. “Our paints are made with natural materials like limestone, clay and earthen pigments – not petrochemicals and toxic chemicals,” explains Bronwyn. “It gives a slightly textured-looking, soft, chalky, finish that refracts the light in a completely different way.” Bauwerk recently collaborated with Mon Palmer, the creative director/designer of Slightly Garden Obsessed, to create ‘Cali Dreaming’ – a range of California-inspired colours. “Colour brings a space to life by inspiring mood, presence and emotion,” says Mon. “Travel is, and always has been, my greatest source of inspiration. I particularly fell in love with California; the gritty, imperfect spaces with coloured patina walls. Forever dreaming of the lust-worthy spaces I have come across, I longed to bring that chase-the-sun feeling to projects and spaces back home.” Which is exactly what the collaboration produced, with hero colours of peachy pink, dusty rose, apricot, cool grey and denim blue. Mon embraced the opportunity to experiment with colour: “I wanted to do something that wasn’t necessarily predictable, while still staying true to my style and aesthetic.” And the results are just peachy.

Starting with a small range of ceramic jewellery produced in a tiny inner-city laundry, Angus & Celeste has far exceeded its humble beginnings. Founders Asha Cato and Keir MacDonald have grown the business into a brand that is synonymous with quality and individuality, with their ceramic designs melding traditional craft techniques and modern design technologies. The end result is a timeless but recognisably modern product range that encompasses plant pots, hanging planters, vases, tableware and jewellery – all with a distinct Australian feel. “At the moment, we are very focused on designing extraordinary garden objects with masculine and feminine dualities. We have always been driven by a love of bright, nature-inspired imagery, but in contrast, also utilise more earthy tones on simplistic forms,” says Asha. Yearning to escape their confined Melbourne terrace, the design duo and their son moved to a secluded home studio in the picturesque Dandenong Ranges, where all their original master forms, prototypes and decorations are developed. 48

Producing ceramics unavoidably has a carbon footprint from the kiln firing stage, and the pair believe it is important to offset this by donating a portion of every website sale to Fifteen Trees. “Fifteen Trees is a Victorian tree-planting group,” Asha says. “It’s a physical, tangible way to bring about change, not to mention the pleasure of seeing trees going into the ground and growing for the future.” “We believe that good, ethical design requires an intimate, hands-on relationship along every stage of the manufacturing process,” she continues. “As a result, we work closely with our local and international potteries. For us, sustainability is not just about the environment – it also relates to the people who physically create our work. We focus on expertly crafted, small production runs.”

When renowned homewares brand Have You Met Miss Jones began selling garden pots in 2012, they started with just four colours in one size. From there, customer demand saw the launch of an offshoot business – Mr Green Grass. “We were at the very start of the global movement to bring plants back indoors, which has since turned into huge trends such as ‘Jungalow’ and ‘urban jungle’ styles,” says Mr Green Grass and Jones & Co founder Jennifer Jones. Born out of a gap in the market for pots and planters that were rich in detail, design and colour, Mr Green Grass brings joy, colour and texture to interiors. And as the market continually crowds with new brands, Jennifer consciously pushes the Mr Green Grass aesthetic every season, with products driven by “beauty and function, of course; tactility and texture; colour and trend; detail and visual interest; and ultimately, price,” says Jennifer. “We position our products as ‘affordable beauty’, so if it isn’t attainable, it’s not going to launch.”

With two collections released annually, Jennifer is excited about the current ‘Summer’ range, boasting saturated pastels mixed with crisp whites and plenty of organic textures – heavily influenced by southern California. Jennifer’s own garden features oodles of succulents that thrive on neglect: “We have a small toddler at home, so our plants have learnt to become self-sufficient over the last 18 months!” she laughs.

“WITH A CUP OF COFFEE IN THE MORNING, WATERING MY GREENHOUSE IS LIKE DOING YOGA BEFORE WORK.” – Kobus Truter With the brief of creating an inviting, entertaining space for relaxing with friends, Kobus Truter and Marc Knickelbein set about transforming their concrete backyard into a verdant kitchen garden – along with outdoor entertaining and barbecue area – perfect for hosting an afternoon party. “As an ex-chef, I wanted a greenhouse garden attached to my kitchen, with fresh herbs and vegetables readily available,” says Kobus. “With a cup of coffee in the morning, watering my

greenhouse is like doing yoga before work.” The kitchen garden has gravel on top of a concrete floor (which assists with drainage), and roofing of clear sheets, to maximise sun exposure. The pair opted for custom-made, brickwork vegetable boxes in lieu of pots, as the boxes retain water more effectively. Furthermore, raising pots would have created more maintenance – and weeds to pull. The concreted barbeque area was painted with a good-quality, durable paint, and covered by a wood latte roof that provides beautiful dappled shade. Kobus and Marc put much thought into their selection of plants, preferring specimens they can use: “We have lemon trees around the pool, bay trees lining the perimeter fence, and lime trees either side of the braai - so gin and tonics are sorted,” says Marc. 54

Making your outdoors an extension of indoor living is certainly possible, no matter how big your backyard or courtyard is. But how do you seamlessly incorporate the not-so-pretty stuff that ‘lives’ outside, like that all-important shed for storing your landscaping tools and workbench – without compromising on style?

beauty, without taking up ground space. “We wanted the area to look like an extension of our kitchen,” Paola explains. “So, we used the same mirror as inside (behind the barbeque), and then Steve built the shelves to line up with the cupboards inside.”

Melbournian Paola Gredler has the answer. She recently transformed her 85-square-metre courtyard into an idyllic extension of her openplan kitchen, that blends entertaining, storage and even a work shed, for tinkering. All of this, accented by natural allure.

The darkened shelving and silvertop ash shed also nod to the kitchen’s black backdrop and light timber flooring. Adds Paola, “We were trying to balance the light and dark outside, taking into consideration that it was a small space. We thought the green plants against the black shelves really stood out.”

Leading out from Paola’s kitchen is now a built-in barbeque with accessories cupboards underneath; a seating area with built-in storage for her two boys’ toys; and a concealed shed for husband Steve’s tools and workbench – all along one wall of the backyard fence. Meanwhile, black marine ply shelving, adorned with cascading pot plants, ingeniously welcomes us with bountiful eco

Speaking of standout, the concealed shed – coined Steve’s “small Bunnings” – just might take top honours. Not only does it defy the notion that an outdoor shed can’t be eye-candy, it also features lift-up doors (Steve’s idea) that save space and “provide easy access to everything, including the workbench,” says Paola. “They also provide cover, depending on what the weather is doing.” 61

Pink paradise OUTDOOR LOUNGE “It was Mon Palmer’s idea to remove some of the back lawn and build a timber deck with built-in day bed, as this was an area of our garden that was unused,” explains Jenni. "Now we use it all through the year as it gets sun all day. On the weekends we have breakfast out there and as I work from home, on beautiful spring days I take my lunch out there.”

After buying an existing house and demolishing it to the ground, Jenni was in the enviable situation of creating a stunning, signature home and garden, from scratch. Once the house was fully complete, Jenni’s attention was drawn outside. From Day One, she knew she wanted a good-sized pool that incorporated a cabana for adults to sit comfortably, while observing the younger family members. Added to this, she was keen to retain a large expanse of lawn, on which the three pets and six grandchildren could run and play. While Jenni is delighted with her new, outdoor living area – that she says her family enjoys daily – the process was not entirely straightforward. After finishing the house build, Jenni employed a landscape designer whose team was responsible for developing the pool, cabana, outdoor kitchen, paving and planting. Then, after six months of living with and using their outdoor space, Jenni said she was not completely happy, and went in search of better solutions. It was then that Jenni discovered local Mon Palmer from Slightly Garden Obsessed on Instagram, who adeptly addressed every shortfall with “an amazing” new design that called for the removal of every single plant.

“With the unusual request to blend garden styles, we came up with the ‘Spamtons’ design (Spanishmeets-Hamptons), which somehow came together perfectly in the end,” says Ascher. Homeowners Freddy and Jenn Hollow were looking for a relaxed garden with plenty of lush greenery that would be an extension of the living area. Key factors to be included were grass and a sandpit for their children. “The kids love playing outside, and our dream was to be able to provide them with a space that would allow them to grow and learn independence, but also be safe,” explains Freddy. With the original front door hidden behind a security

fence, Ascher tackled the challenge of relocating the front door and creating a distinctive entry path, using feature artisan-glazed, BonTon tiles. “The mosaic tiles were 100 percent Ascher's suggestion, but that's the beauty of having a designer that you can trust,” says Freddy. In addition, the carport and parking were also relocated to the back of the house, increasing the space of the front yard that now boasts a large grassed play area with cubby house and gardens. “The front garden is exposed to full summer sun, so we recreated the tropical style using a carefully selected mix of exotic and native species that are suited to our Perth climate,” says Ascher. 75

An existing yucca was cleaned up and turned into a feature, while a lush screen of clumping gracilis

bamboo was planted along the western fence to screen out the neighbouring home. A lush, green, tropical garden bed was also created within the courtyard using assorted palms, alocasia, philodendrons and ginger plants. As a finishing touch, Ascher scoured nurseries and antique stores to find older, clay-looking pots, which she gave a Mediterranean makeover by painting them in Bauwerk lime wash Bright White – creating the perfect ‘Spamtons’ garden!

FEED ME NOW F R I T TATA I love this recipe and tend to cook it at least a couple of times a week. It’s a complete meal in itself, and you can pretty much pack it with whatever you want! Choose to keep it simple or fill it with whatever leftovers you have in the fridge or freezer – it’s all good... SERVES 4 2 tablespoons coconut oil 2 garlic cloves, finely chopped 1 large onion, sliced 1 long red chilli, deseeded and finely chopped 2 zucchini, grated and squeezed to remove excess moisture 2 tablespoons chopped flat-leaf parsley leaves sea salt and freshly ground black pepper 10 eggs 125 ml (½ cup) coconut cream

FILLING 400 g leftover roast chicken or roast vegetables, cut into small chunks

Get started by preheating the oven to 180°C. Melt the coconut oil in an ovenproof frying pan over medium heat and sauté the garlic, onion and chilli until softened and slightly caramelised, about 3–5 minutes. Add the grated zucchini, parsley and your choice of lovely filling and sauté for another 4 minutes or so until softened. Season with salt and pepper. In a bowl, whisk together the eggs and coconut cream until smooth and creamy. Pour this over the filling mixture in the pan, then bake in the oven for 20–30 minutes, or until the frittata is golden on top and the egg is cooked through. Leave to cool in the pan for at least 10 minutes, then cut into portions and serve.

Afternoon snack BLUEBERRY KISSES These super-simple cookies are the perfect afternoon snack – they’re quick, easy and taste great. MAKES 24

190 g (2 cups) blanched almond flour pinch of sea salt ½ teaspoon baking powder 3 tablespoons coconut oil 2 tablespoons maple syrup 3 tablespoons Blueberry Jam (see below) In a food processor, combine the almond flour, salt and baking powder. Pulse in the coconut oil and maple syrup until a sticky dough forms. Remove from the food processor and, using your hands, bring the dough together to for a smooth ball. Set aside in the fridge for 20 minutes to firm up slightly.

M AC A DA M I A A N D VA N I L L A G R A N O L A W I T H C R E A M Y COCO N U T A N D K I W I I love to enjoy this ultimate cafe-style breakfast in the comfort of my own home. It looks the goods and is packed full of incredible nutrient value, with the macadamia nuts in particular providing a lovely dose of the omega-3 fatty acids we need for a healthy diet. SERVES 2 1 quantity (1 cup) Whipped Vanilla Coconut Cream (see page 85)

Get started by preheating the oven to 200°C and lining a large baking tray with baking paper.

2 kiwifruit (or whatever fruit is in season), peeled and diced

To make the granola, in a large bowl, combine the coconut oil and maple syrup, then add the pecans or walnuts, macadamias, shredded coconut, pumpkin seeds, sunflower seeds and vanilla seeds. Mix everything together until all the dry ingredients are well coated in the syrup mixture.

MACADAMIA AND VANILLA GRANOLA 3 tablespoons coconut oil, melted

100 g (1 cup) pecans or walnuts, crushed

Spread the granola evenly over the baking paper and bake for 20 minutes, or until everything turns golden brown.

100 g (⅔ cup) macadamia nuts, roughly chopped

Remove the tray from the oven and leave to cool, then add the cinnamon and mix well.

2 tablespoons shredded coconut

When ready to serve, cover the base of two tall glass tumblers with a layer of the macadamia and vanilla granola, dollop over a layer of whipped coconut cream, then top with a layer of diced kiwifruit. Repeat the layers until you make it to the top of the glasses. Now dig in!

125 g (1 cup) pumpkin seeds 60 g (½ cup) sunflower seeds 1 vanilla pod, split and seeds scraped 1 teaspoon ground cinnamon

Preheat the oven to 180°C and line two baking trays with baking paper. Using about a tablespoon of dough at a time, form the dough into little round cookies and place them on the prepared trays. Press your thumb into the centre of each cookie to make an indentation and place ½ teaspoon of the blueberry jam in each well. Bake in the oven for 8–10 minutes, until golden brown. Allow to cool on the baking trays before tucking in. Store in an airtight container in the fridge for up to 7 days or in the freezer for up to 3 months.

BLUEBERRY JAM MAKES ABOUT 250 G (1 CUP) 300 g blueberries, fresh or frozen and thawed ¼ cup shredded coconut 1 tablespoon maple syrup pinch of salt Place all the ingredients and 1½ tablespoons of water in a blender and pulse unitl smooth. Pass the jam through a fine sieve and store in an airtight container in the fridge for up to 1 week or in the freezer for up to 3 months.

Easy dinner

Short on time and got some leftover veggies in the crisper? Well then, look no further than this fantastic 4-minute noodle dish. It’s versatile enough to have a protein stirred through it, but flavoursome enough to be a stand-alone meal in its own right. SERVES 4 2 zucchini 2 tablespoons coconut oil ½ onion, finely chopped 2 garlic cloves, finely chopped 1 long red chilli, deseeded and finely chopped 12 cherry tomatoes, halved (or 2 regular tomatoes, diced) 12 kalamata olives, pitted and halved sea salt and freshly ground black pepper 2 tablespoons pine nuts, toasted zest and juice of 1 lemon Using a mandoline or sharp knife, cut the zucchini into thin strips, then cut each strip lengthways into noodlesized pieces. Heat the coconut oil in a large frying pan over medium heat.

TIP Don’t have a zucchini to hand? That’s cool! You can make the noodles out of all sorts of other veg, such as carrots, pattypan squash and parsnip – they’ll all taste just as awesome.

S T R AW B E R R I E S A N D C R E A M C U P S I love this recipe as it’s a really easy way of whipping up a delicious dessert using my sweet staples. The combination of flavours and textures here is just perfect and reminds me of the classic strawberries and cream lollies I used to enjoy as a kid! SERVES 2 200 g strawberries, hulled ½ tablespoon maple syrup (optional) ½ vanilla pod, split and seeds scraped 125 ml (½ cup) Whipped Vanilla Coconut Cream (see opposite page) 3 tablespoons Kick-ass Cookie Crumb (refer to recipe this page)

Add the onion, garlic and chilli and sauté for 2 minutes, or until the onion is translucent and everything is nicely aromatic. Add the cherry tomatoes and olives and cook, stirring gently, for a further 2 minutes, or until the tomato has softened. Add the zucchini noodles to the pan and stir gently to coat them in all the lovely flavours, then season with salt and pepper to taste. Divide among four bowls and serve topped with the toasted pine nuts, a little lemon zest and a squeeze of lemon juice.

KICK-ASS COOKIE CRUMB MAKES ABOUT 13O G (1 CUP) 80 g (½ cup) macadamia nuts, roughly chopped 30 g (½ cup) shredded coconut 2 tablespoons coconut oil or butter, melted 1 taplespoon maple syrup

Place the strawberries, maple syrup (if using) and vanilla seeds in a bowl and stir gently to coat well. Arrange the strawberries on the prepared baking tray in an even layer and roast for 15-20 minutes, or until soft and caramelised. Allow to cool. Layer the whipped vanilla coconut cream, roasted strawberries and cookie crumb in jars or glass tumblers. Enjoy straight away or, better still, transfer to the fridge and leave to chill for 20 minutes before serving. 84

Spread the mixture across the prepared baking tray and bake for 5-10 minutes, until golden and aromatic. Store in an airtight container in the fridge for up to 2 weeks.

1 teaspoon vanilla extract 4 peaches, halved and stones removed 80 ml (⅓cup) Whipped Vanilla Coconut Cream (see recipe opposite) 65 g (½ cup) Kick-ass Cookie Crumb (see opposite page)

Preheat the oven to 180°C and line a baking tray with baking paper. Arrange the peach halves on the prepared baking tray in an even layer and roast in the oven for 20 minutes, or until soft and caramelised. Leave to cool slightly, then divide the peach halves among bowls, dollop over the vanilla coconut cream and sprinkle over the cookie crumb to fi nish. Enjoy!

Scoop the solids of the coconut cream into a bowl, being careful not to add any of the clear liquid (keep this for using in smoothies, sauces and curries). Add the maple syrup and vanilla extract, then use a hand mixer on high speed to whisk until thick and well combined. Store in an airtight container in the fridge for up to 5 days.
