WWelcome to Appalachian Country Living Magazine, where you can explore the beauty of the majestic Appalachian Mountains. Last month, I visited the Stanley Rapids on Aska Road in Blue Ridge, Ga. I am so excited to share my experience of this beautiful landmark in the Appalachian Mountains with you.

We’ve heard the stories about the underground cities, the ancient carvings found in stones, and all the chilling ghost stories all over the Appalachian Mountains. So, there is no wonder why this region boasts millions who are extremely interested in everything it offers.

Take the Toccoa River as an example. This seemingly small river was actually home to a once thriving civilization. At 93 miles long (150 km), it becomes the Ocoee River in Tennessee after flowing under the old Steel Bridge in McCaysville.

Interestingly, it is one of very few rivers in the United States that flows North, much like the River Nile. As it travels up, it runs into the Hiawassee River. These connected rivers operated like highways of their time, connecting the people in the area before and after state lines were drawn.

The river is one of the most peaceful places you can be on earth. Sitting at its side and hearing the sounds of the waves playfully crashing into one another is more tranquil than any app could ever provide. The next time you’re in the Blue Ridge, stop by Aska Road and see for yourself what you see in these photos!

I hope all the readers who have been along for the ride since its beginning enjoy all the new exciting additions to the brand.

There is always something new to learn about these stunning landscapes. The mountains tell a story with their carvings and shape, and each mountain has a unique history behind it. Whether it is a hidden waterfall or an ancient cave, every single rock and stone has a personality that help shape the vibe of our beloved Appalachian culture.

Beautiful Places & Unique Features of Architecture in Appalachian Mountain Culture

The Appalachian Mountains are known for their stunning natural beauty and unique architecture. From wooden homes to elaborate water systems, the region is home to some of the most beautiful and interesting structures in the world.

Scots-Irish settlers, who arrived in the Appalachian Mountains during the 18th century, brought with them a variety of architectural styles from Europe, including stone houses and log cabins unique to European culture. A log cabin is an unheated dwelling, built of logs assembled in a specific manner. Generally, logs are laid horizontally and then vertically at the corners with the spaces filled in with smaller logs or rocks.

The use of logs for construction has been a tradition in the Appalachian Mountains for centuries. These logs were used to build homes, as well as other structures such as barns, churches, mills, and even water systems. The old home water systems were often made from hand-dug wells or spring-fed reservoirs. These homes also featured unique water filtering systems that allowed them to survive in isolated areas. Stone or brick walls were also common features of the architecture in this region.

The vernacular architecture of the Appalachian Mountains is a testament to its rich history and culture. It showcases the ingenuity of those who settled in this southern region, as they were able to build homes that were both functional and

aesthetically pleasing.

Cabin designs varied regionally based on construction techniques and local materials available. The combination of European and American influences helped create a distinctive style of architecture in the Appalachian Mountains that is still visible today.

In addition, there are also tumuli found throughout the Appalachian Mountains that date back hundreds of years and serve as reminders of its unique history.

Indigenous American huts and civilizations atop mounds were an integral part of American cultures. From the Cahokia Mounds in Illinois to the Etowah Mounds in Georgia, these ancient settlements were built and maintained by indigenous people for centuries.

These advanced huts and civilizations of indigenous towns had a great impact on the development of old world towns. They provided shelter, food, and protection from the

elements, while allowing the natives to practice their customs and beliefs. These ancient settlements have been preserved for generations,

providing us with a unique insight into the way Americans lived before European contact.

The study of American mounds is an important part of understanding eastern architecture and can help us gain more appreciation for the people who once occupied them.

By looking at how the tumuli were built and what purpose they served, we gain insight into the culture and history of this region. The Hillside Cottages are the first on-property accommodations to become available at Old Toccoa Farm. The intimate Hillside Cottages, known as The Persimmon and The Dogwood (two distinct floor plans and exteriors) have been well received by visiting guests and residents of the community. The cozy, 500-square-foot Appalachian-style cottages have exteriors of stacked stone, board and batten, and cedar shake roofing. Cottage interiors, designed by OTF member Vicki Decker, owner of New Blue Home, a Blue Ridge design firm, offer a cozy living room with plenty of space to relax and unwind, a full kitchen complete with ample counter space and bar seating, Nespresso Coffeemaker and a washer/ dryer to freshen up clothes after a hike or a day on the links. The new OTF accommodations are a true game-changer for OTF in that visitors can now stay on property and enjoy all that OTF has to offer. both operations and culinary programming, to develop and launch The Tavern at Old Toccoa Farm. The Tavern was designed by the architectural firm, Kuo Diedrich Chi out of Atlanta and the interior was designed by OTF member and owner of Baribault Design Group, Beverly Baribault. “When you bring this level of talent together, you are hopeful that the end product will justify the means and the expense. We weren’t trying to build a clubhouse because we really don’t like the word clubhouse here. We envisioned something a little more laid back and authentic to the mountain lifestyle, so we landed on the word Tavern. Addison Moran, Old Toccoa Farm Director of Food and Beverage, who made a name for himself working at some of the best restaurants in Blue Ridge, is now heading up The Tavern at Old Toccoa Farm. “We are working to extend the quality of the OTF brand into the world of food and beverages. We have miles and miles to go to achieve the overall culinary and hospitality vision that Peter and Kevin have for Old Toccoa Farm, but as we approach our one-year anniversary, we are beginning to see some of the fruits of our labor,” says Addison. “Our first year has been all about building on the OTF culture and we are excited about the direction we are headed. As a semi-private operation, we are serving delicious food and drinks not only to our wonderful members, but to our public guests as well. We are just trying to do our part in adding value to the overall OTF experience.” says Addison. “And now with the parking lot paved and new landscaping coming to tie it all together, The Tavern has become the latest step in evolving into the boutique resort community Peter and Kevin envisioned.”

The membership is growing and so too is the community. With over 420 members, 42 full and part-time homes completed, the community here is alive and well. New home construction remains steady, with 19 homes currently under construction, and an ever-increasing pipeline through 2023.

be launched Mountainside at Old Toccoa Farm. This new neighborhood within Old Toccoa Farm offers larger lots with wider frontage, all within a heavy wooded hardwood forest. The Appalachian Mountains are home to a unique blend of cultures, and the recipes passed down through the generations reflect this diversity.

The staple foods, spices, and vegetables used in these traditional recipes make them unique to this region. From succotash to wild game to cornbreads, topped with butter or honey, there is something for everyone’s taste buds when it comes to Appalachian cuisine!

For example, the Family Moonshine and Coconut Cake recipe images shown at the top and the bottom right are from Special Collections Research Center, found in an article posted on Appalachian State University’s website. The top image is a Family Moonshine recipe from Appalachian State University Staff Council Cookbook, published in 2001. The Coconut Cake recipe in the image to the bottom right is from Papa Loved Hot Biscuits and Cornbread, published in 1923.

In her article on the website, Liv Winnicki discusses Appalachian State University’s W.L. Eury’s Appalachian Collection of over 2,000 Appalachian cookbooks dated between the late 19th century to today. The variety of readers among these cookbooks, such as “church groups, towns, home demonstration clubs, civic clubs, schools, PTAs, and expert chefs,” as mentioned in the article, show how widespread and influential the food staples were to new settlers all over the east. As the original soul food, it has influenced every sub-culture in the Appalachian Mountains.

Ancient recipes—from the time when maize was first cultivated and spread across

the world—have helped influence other cultures for centuries.

Survival is a major factor in how these recipes spread. Upon European arrival, new settlers learned how to survive the seasons from the indigenous people in the area. They learned how to forage what was around them, such as the animals in the area, to make stews, as well as how to grow nutritious fruits and vegetables.

In later years, these recipes were no longer about survival, but rather about leisure, tradition, and family. The handwritten recipe in the image to the right is a great example of the three. The image was taken from the website of Appalachian Women’s Museum, located in Dillsboro, N.C. It is a version of the popular Mexican Cornbread recipe, written out by Charlene Monteith in 1988. Writing to a friend, she included the popular brands of that time, such as Three River self-rising cornmeal and White Lily self-rising flour.

As noted, these flavors were popular from Mexico and all the way up the mountain range. Our appreciation for American cuisine is insurmountable—from old times meals to today’s chili dogs and strawberry hand pies, we cannot get enough!

Syllabub

Syllabub is an alcoholic beverage traditionally associated with Christmas and New Year’s, but is suitable for festive occasions any time of the year. Its appearance definitely enhances the drink’s appeal.

Ingredients:

- 1 quart cream

- ½ pint sweet wine steeped in lemon peel for at least an hour (homemade elderberry wine has long been a favorite among old-time mountain folks)

- ½ pint of apple brandy (Madeira can be substituted)

- Juice of two lemons (use peel to steep in wine)

- Pinch of powdered allspice

- Sugar to taste

Charlene’s Mexican Cornbread

Ingredients:

- 6 cups “Three Rivers” self-rising cornmeal

- 2 cups “White Lily” self-rising flour

- 3 teaspoons (level) baking soda

- 1 ¾ cups Mazola corn oil

- 1 ¾ cups Buttermilk

- 12 eggs (slightly beaten)

- 2 cups yellow cream-style corn

- 2 medium onions (chopped)

- 6 slices American Cheese (crumbled)

- hot or med. hot pepper pods (to taste)

- ¼ cup sugar

Directions: Sift cornmeal, flour and soda. Add oil, eggs, buttermilk, corn, onions, peppers, and sugar. Add cheese – mix thoroughly. Bake at 375° for 30-40 min.

Appalachian Style Chili Dogs

Ingredients:

For the chili sauce

- 1 cup flat beer or water

- 1 pound lean ground beef (preferably 90/10)

- 1 garlic clove minced

- 1 teaspoon salt

- 6 saltine crackers finely crushed (about 1/8 cup)

- 1 tablespoon tomato paste

- 2 teaspoons New Mexico ground red chile or cayenne pepper or more to taste

- 1 teaspoon ground cumin

- 1/4 teaspoon ground cinnamon

If you want to make chili buns

- 1 package hot dog buns

- yellow mustard

- 1 small white onion finely chopped

- Hot sauce (Crystal, Tabasco, Texas Pete, or your fave brand) as much as you can handle (optional)

If you want to make slaw dogs

- 1 package hot dogs

- 1 recipe chili buns fixings (see above)

- Your favorite coleslaw

Directions:

Make the chili sauce:

1. Put the beer and ground beef in an unheated medium saucepan. Use your fingers to gently rub the beef until it makes a slurry with the liquid. You want this to be a very fine-grained chili which means you don’t want any chunks or

lumps. (Some folks use a potato masher rather than their fingers.)

2. Stir in the garlic, salt, and cracker crumbs and place the pan over medium-high heat. Bring the mixture to a boil, stirring to keep it from sticking to the bottom of the pot.

3. Turn the heat to medium-low and continue to cook, stirring frequently to prevent sticking, until the liquid has largely evaporated but the mixture is still very moist and holds its shape on the spoon, 4 to 10 minutes.

4. Stir in the tomato paste. Remove from the heat and stir in the ground chile, cumin, and cinnamon. Cover and let sit for 5 minutes before serving. (You should have about 2 to 3 cups chili sauce.)

How to make chili buns

5. Lightly paint the inside of a hot dog bun with yellow mustard. Pack 3 or 4 heaping teaspoons chili into the bun, starting with a spoonful in the center and smoothing it over the mustard with the back of the spoon. Add more chili sauce, pressing it out to either end and smoothing it lightly as you go, until the bun is lightly filled, using about 1/3 cup chili sauce total. (Keep in mind you’re not making a sloppy joe. You want the chili should be packed firmly in the bun.) Top with chopped white onion to taste. Serve your chili buns immediately and pass hot sauce on the side.

How to make slaw dogs

6. Heat the hot dogs by submerging them in boiling water for 5 minutes. Meanwhile, paint the inside of the chili buns’ hot dog buns with yellow mustard, and sprinkle in chopped white

Strawberry Hand Pies

Ingredients:

For Filling:

- 1 lb Strawberries

- 3 Tbsp water

- 1/3 c sugar

- 1 Tsp cornstarch

For Crust:

- 12 Tbsp cold unsalted butter

- 3 c All Purpose Flour

- 1 Tsp Salt

- 1 Tbsp Sugar

- 1 1/3 c Cold Shortening

- 6-8 Tbsp Ice Water

Extra:

- 1 Egg White

- 1 Tbsp Water

- Raw Sugar

Filling Instructions:

Dice strawberries and put in saucepan over medium with water and sugar when boiling add cornstarch and reduce to simmer until thickened.

Crust Instructions:

Dice butter and place in fridge. Put flour salt

and sugar in food processor pulse a few times, add butter and shortening, pulse a few times until size of peas, with machine running pour ice water in and pulse until dough forms a ball. Dump onto floured board and form ball, wrap and refrigerate for 30 minutes.

Pie Assembly: Preheat oven to 375 degrees.

Roll dough out to about 1/8 inch thickness and cut into circles. We used a large mouth drinking glass, reroll excess and cut more circles until you have used all of your dough.

Fill each circle with a large spoonful of strawberry filling, about 1 tbsp depending on how big your dough circles are, be sure not to overfill or the filling will leak out during baking.

Mix egg white and 1tbsp of water together to make an egg wash. Lightly brush half of each circle with egg wash to seal each pie then fold each circle in half and press together, crimp with fingers or a fork.

Dock the top of pies with the tines of a fork for venting and brush the top of each pie lightly with egg wash and sprinkle with raw sugar for extra browning and decoration.

Bobby Flay’s Grilled Chicken with Pantry Barbecue Sauce

Barbeque Ingredients:

- 1 cup ketchup

- 3 tablespoons honey

- 2 tablespoons brown sugar

- 1 tablespoon Worcestershire

- 1 tablespoon soy sauce

- 1 tablespoon hot sauce

- 1 tablespoon vinegar

- 2 tablespoons mustard

- 1 teaspoon cayenne

Chicken:

- 1 whole chicken, cut into parts (thighs, legs, wings, each breast cut into 2)

- 1 tablespoon paprika

- Salt and freshly ground black pepper, to taste

Directions: For the Sauce:

1. Add all the ingredients to a sauce pan. Bring to a boil. Turn down to a simmer and cook for 20 minutes, covered.

2. Taste for balance and if the sauce needs sweetness, add more honey. If it needs more heat, add some more hot sauce. If it gets too thick, add a splash of water. For the Chicken:

1.Preheat grill to medium heat and lightly oil the grill grates.

2.Pat chicken pieces dry with paper towels. Season chicken parts with salt, pepper and paprika.

3.Grill on grates nearest to you, skin-side down, and cook until crispy and golden, about 8 minutes. Turn chicken pieces and cook through on the other side. Chicken should be on the grill for about 15-17 minutes total. Ingredients:

- 1 cup small sassafras roots, thoroughly washed and pounded with a meat hammer or similar tool until well broken up and yielding their spicy scent.

- ½ cinnamon stick

- 3 tablespoons honey

- 6 cups cold water

Directions:

Put the crushed roots and cinnamon in a saucepan with the water and bring to a rolling boil. Decrease the heat and simmer for 15 minutes. Pour through a fine strainer (cheese cloth topped by a coffee filter works just dandy) and then add the honey and stir it in. The beverage can be served hot or poured over crushed ice.

The Lifestyle and Influence of the Eastern Countryside

We love our country lifestyle - porch swings, homemade tea, and oakwood homes, overlooking vast farmland. That’s a peaceful life defined and well lived, but where did it all start, and how did it develop?

The Appalachian Mountains have been home to many indigenous, or aboriginal, American and immigrant communities for centuries. These communities have had a profound influence on the culture and lifestyle of the people living in the area. From spiritual beliefs and practices to traditional crafts, the mix of American and Scots-Irish immigrant cultures has shaped the way of life in Appalachia for generations.

Indigenous American cultural influence in the east can be seen in many facets of country living, including our dances, such as the maypole dance and circle around the fire dance. These dances heavily influenced popular Appalachian traditional dances, like square dancing and line dancing. Today, dancing is still

a big part of socializing and commemorating special occasions.

Moral code is also greatly influenced by Indigenous American culture; spiritual practices vary from tribe to tribe, but still share common themes such as respect for nature, reverence for elders, hospitality towards strangers, and caring for community members. These traditional values have a significant influence on the way of life in the Appalachian Mountains.

From the origins of the unique Appalachian language to bluegrass and folk music to regional recipes, Indigenous American communities have left an indelible mark on country living in the Appalachian Mountains.

Hunting, fishing, farming, and gathering have also long been integral parts of rural mountain life. Knowledge of the land has helped shape sustainable agricultural practices still used today.

Outside influences have also played their role. Colonialism brought with it many changes

to the way people lived, from the introduction of new technologies and practices to changes in land ownership.

From subsistence farming to the “hillbilly” way of living, the region has seen its share of hardships, but has also developed a strong sense of community and resilience. New developments and attempts to preserve the culture has led to beautiful log cabin neighborhoods of old reimagined.

Appalachia is a region full of hidden secrets, buried treasures, and ancient folklore. It has a long and rich history stretching back to the earliest days of American settlement and beyond.

From the stories of the mysterious Mothman to the legends of hidden gold, there are countless tales to explore and uncover, and we will continue to follow up and bring you more in our new series, Origins of Country Living. Stay tuned! ACLM

Needless to say, Georgia was not happy with the arrangement. The Federal Government in Washington D.C. proceeded to build roads across the country to various states and hire Isaac Briggs and Thomas Robertson as surveyors and engineers to find a way to travel from D.C. to New Orleans, La. via a southern route in 1804. It took them four months. Their main obstacles were the Creek Indians in middle and south Georgia. They were required to procure passports to cross the Creek Nation.

The Old Horse Path route was later known as the westward Federal Road. Creek leaders signed an agreement to build and operate ferries, causeways, and “houses of entertainment.” The benefits to the nation were they reaped profits from the tolls, lodging rents, and tavern tabs.

Catoosa County and the Federal Road

PPrior to the Revolutionary War, the British caused the Indians to cede their lands near coastal Georgia territory. This ceding forced the Cherokee to move further inland and across the Blue Ridge Mountains to lands in what is Tennessee today. According to some historical records, there were many battles between the Cherokee and the Coosa (Creek) Indians for hunting grounds and land to farm.

After the British lost the Revolutionary War to the Americans, General George Washington of the Continental Army and Henry Knox, the secretary of war, found themselves in a quandary as to what to do with the Indians that sided with the British.

The Shawnee fought to maintain independence from all fractions of Spanish, French, British, and American colonists. They settled historically across Georgia, North Carolina, Alabama, Pennsylvania, Illinois, and Kentucky, following their trading partners. Their historical lands were maintained in the Ohio Valley, where many of them, who fought in the Revolution, opted to return.

Georgia territory was taken over by the British by the end of the war in the 1780s. The Louisiana Purchase of 1803-1806 divided the lands of Georgia territory into what became the states of Louisiana, Mississippi, Alabama, and Georgia. The ten million acres given to the Cherokee overlapped Tennessee, Alabama, North Georgia, and part of North Carolina. It was set up as a sovereign nation. Twenty million acres took a good measure of the land in middle and south Georgia for the Creeks, leaving roughly a third of the state of Georgia for the Georgia government.

The Georgia Government realized taking advantage of trade routes that went through North West Georgia would be beneficial for getting their herds to markets in Tennessee and places north. Leading representatives for Georgia, Tennessee, and Kentucky wrote to President Thomas Jefferson, asking for help to create “a good wagon road” from Augusta, Ga. to Danville, Ky. Indian Agent Return Meigs was encouraged to offer presents and discuss the advantages of letting the Cherokees take route through Cherokee lands.

There were pros and cons in 1801, as some Cherokee leaders objected to turning their existing trails and footpaths into wagon roads. Others saw an advantage to owning the ferries, hotels, saloons, and trading posts along the routes—plus charging tolls to American travelers. Return Meigs made recommendations to James Vann that he and others would benefit from building a tavern and ferry. He was asked to also have a stable for fresh horses at the readyfor-mail carriers. Little did the Cherokees know this road would one day become one of the trails used for their removal to the western Indian territory.

Surveying began in 1804, and construction took place in earnest in 1810. The route went from Athens, Ga. through present-day Hall County, heading westward toward what is now Ramhurst in Chatsworth, Murray County, passing by the Chief Vann Homeplace (per his request). The road forked in Murray County, with one branch leading north to Knoxville and the other west through what is now Catoosa County, passes by the 1853 Old Stone Church heading through to Nashville, Tn. Portions of modern roads traverse the route of the Federal Road, and in numerous places, these routes have road signs indicating “Old Federal Road.” ACLM
