Tips for keeping the

Festive Flower Stunning Christmas houseplants such as Cyclamen, Poinsettia, Christmas cactus, indoor azaleas and moth orchids have the potential to transform any room in your house, but neglect or give them the wrong care and you’ll end up with a pot of dying leaves before New Year. Here’s how to keep your festive flowers simply stunning: Cyclamen with their showy pink, white or red flowers and exotically patterned leaves make a great indoor plant, but they are very easy to kill. The secret of success is to keep the plants in as cool a room as possible. If you want them in a warm room, put them there at the last possible minute and return quickly. Always water from the base (by standing the pot in a saucer of tepid water for 20 minutes, then letting the excess drain away) and pull off deteriorating leaves promptly. Indoor azaleas also prefer a cooler room, and plenty of moisture is essential. Azaleas have an extensive fibrous root system and are often tightly packed into their pots so they dry out very easily and it’s worth soaking the pot in tepid water at least once a day. Watering with cooled black tea will help to supply the acidic conditions they prefer. Poinsettia with their screaming bright red (or occasionally pink or white) flower-like bracts are the classic Christmas houseplant and they’re not

difficult to look after. Keep the compost just moist and choose a draught-free spot in a warmish room. Christmas cacti, usually with rich red, orangey, pink, cream or white flowers are easy to look after but they need totally different care to desert cacti. The Christmas cactus originates from forested areas, so prefers to be kept just moist and hates being baked in hot, dry conditions. Try not to move them about too much once the buds have formed as they may well drop off. Orchids really are a law unto themselves and it’s essential that you follow the care instructions carefully. The most popular type is the moth orchid which will have arrived in a pot with little if any compost and soon the aerial roots will grow out of the top of it. There’s no need to re-pot when this happens initially, as this is how the plant is naturally. Water once a week, ideally with rain water or with cooled boiled water. Most of it will run straight out of the bottom of the pot but it’s meant to - whatever you do, don’t let your moth orchid sit in water.

The Hippeastrum, also sometimes sold as the amaryllis, is a stunning houseplant bulb with the potential to produce one of the biggest, brightest indoor flowers you’ll ever have. Red, pink or white are the classic colours. The pot may need to be stood in a larger, heavier one as they are often sold in ones that soon overbalance once the flower spike is out. This creamy risotto is great for a quick and easy midweek supper simply served with a leafy green salad and some warm ciabatta bread. Replace the mushrooms with small vine tomatoes fried until soft, if liked.

Mushroom & Leek Risotto 55g butter 1 tbsp olive oil 2 leeks, washed, trimmed and thinly sliced 1 garlic clove, peeled and crushed 225g risotto rice 900ml hot vegetable stock Salt and freshly ground black pepper 175g button mushrooms, wiped 2-3 tbsp freshly grated Parmesan cheese, plus extra to serve 1 tbsp chopped fresh parsley

Heat half the butter and the oil in a large deep frying pan. Add the sliced leeks and garlic and fry over a medium-high heat until softened but not brown. Stir in the rice and cook for one minute. Add a ladleful of the hot stock to the pan and simmer gently, stirring all the time. When all the liquid has been absorbed by the rice, add another ladleful of stock. Continue adding the stock in this way until the rice is tender and has a creamy texture – this will take about 20 minutes. Heat the rest of the butter in a separate frying pan and fry the mushrooms over a high heat for 2-3 minutes until golden brown. Stir the Parmesan cheese into the risotto and season to taste with salt and freshly ground black pepper. Serve the risotto in warmed bowls topped with the fried mushrooms, chopped parsley and extra Parmesan cheese.

On his Coronation day in 2008, the young king of Bhutan pledged to promote Gross National Happiness above gross national income, just like his father had done before him. The people approved, the king bowed, showing humility and his desire to serve rather than rule.

Bhutan - Gross National Happiness

First time visitors to this tiny Himalayan kingdom may be surprised to find mobile phones, internet and satellite TV but although Bhutan welcomes progress and technology, it is never at the expense of its traditional values. Everyone agrees that these are essential to the country’s happiness and indeed survival. Respect is still the cornerstone of Bhutanese culture, offered not only to king and monks but to all human beings, animals and plants. Children may cover their mouth as they speak to avoid polluting the air you breathe and people bow at the roadside if a dignitary goes past - no compulsion, just tradition. Bhutan was given democracy as a parting gift by the retiring king, but the royal family remains as close as ever to the people’s heart. Where else would a king walk across the fields to chat to farmers, join in an archery contest or dance with his people at festival time? Bhutanese festivals are joyful religious events, a chance to meet family and friends from distant villages, have fun and earn merits for the next life according to tradition. There are dancing monks and jesters, offerings, blessings, Buddhist teachings, and reminders about safe sex and the importance of work, valued as an act of

Bhutan worship. Should a new shrine be needed or a temple statue, there’s no shortage of free labour and from a young age, children are taught house chores and farm work and expected to clean their classrooms to prepare them for adult life. Here there are no beggars or homeless in the streets, nearly every farmer owns his plot of land and men and women have equal status. Healthcare and education are free and a total smoking ban was introduced to protect the children’s health. It may seem harsh to outsiders but it made sense to the people. Most Bhutanese claim unreservedly to be happy, have no wish to live anywhere else and those who study abroad are keen to return. Travelling through the kingdom’s virgin mountains and valleys, it’s easy to understand. Buddhism teaches respect for nature and all living things and in matters of conservation, Bhutan is well ahead of many ‘developed’

nations. Some 60% of the land is protected forest, solar power and hydro-electricity are favoured for minimum impact, hunting and fishing are almost non-existent and there are no plastic bags. Small farmers and herders respect the environment and national parks and reserves stretch from tropical lowlands in the south to snowy peaks and glaciers in the north. It’s no wonder this small kingdom should claim over 5000 species of plants, including blue poppies, rare orchids and a wealth of medicinal herbs. Black bears, snow leopards and tigers live undisturbed and there are over 675 species of birds, from hornbills to endangered black-necked cranes whose return to wintering grounds is celebrated with great joy. In the quest for Gross National Happiness, this pristine natural world is sure to play a major role, alongside sustainable development and unshakable traditional values. by Solange Hando

January Sales There’s a wonderful Charles Addams cartoon from the New Yorker of God knows how many years ago showing a sale at a big department store, where a huge poster advertises “Genuine reductions!!!” There’s a queue of normal-sized people waiting to go in...and a line of tiny little people coming out. Well, January sales can be pretty nightmarish, if not perhaps that nightmarish. But the crowds, the elbowing, the fighting over the priced-to-sell designer schmutter... not my cup of tea, but some people seem to thrive on it. It’s either the hunter-gatherer instinct resurfacing, or just a submerged taste for violence temporarily legitimised, but many shoppers love the scrum so much they even queue overnight with sleepingbag and thermos of hot soup. (Which begs a question: where do they err, go, in the night? A very real problem when you’re getting on a bit, and one reason why I don’t go camping anymore.) Wikipedia having for once failed me, I’ve been unable to track down the first-ever January sale in history. But there’s a linen draper in Philadelphia that has been holding one since 1878: maybe not the world’s first, but a date that fits nicely into the history of department stores where January sales surely originated. It’s all about Christmas. This wasn’t a big

commercial event until the second half of the 19th century – in Dickens’s A Christmas Carol of 1843, it’s almost a normal working day. But by that time major cities were already beginning to sprout department stores: Kendals of Manchester in 1836, Bainbridge’s of Newcastle in 1838, Harrod’s of Knightsbridge in 1849, Lewis’s of Liverpool in 1856, Whiteley’s of Bayswater in 1863 and so on. Whiteley’s always claimed to be the first true department store, but Bainbridge’s had first used the term in 1849: you pays your money, you takes your choice. If anybody can be nailed as being responsible for the commercialisation of Christmas, it was these big department stores. And the January sale was an obvious way of ridding themselves of the season’s surplus stock – not just Christmas consumables, but winter wear in general. Little by little the January sales became more than just a festive afterthought but major events in their own right, and an important injection of

cash for the stores before the latewinter doldrums set in. By the dawn of the TV advertising era, some stores gave their sale more publicity than Christmas itself. And nothing seems to have slowed the juggernaut since: at the height of the Harrod’s January sale last year, the tills were taking £20,000 a minute! (Strictly, since 2002, Harrod’s January sale has been its “Winter sale”, since its opening moved to Boxing Day or the day after – so, no nice long Christmas break for Harrod’s staff.) And I am now told by a friend with retail experience that the January sales are no longer even primarily concerned with clearing surplus winter stock, but that fresh stock is ordered especially for the event. Now, I’m no businessman, but this seems dodgy to me. Don’t sale goods have to be displayed for 28 consecutive days at the “established price” before they can be displayed as sale goods? I suppose the stores’ legal eagles have found a way round the Consumer Protection Act 1987, but I bet that trading standards officers have pretty itchy trigger fingers come January. And anyway, if they can make a decent profit selling goods at halfprice in January, why not do the same in the other 11 months? I think we should be told...

Shoulder of Welsh lamb on crushed new potatoes with a rich red currant jus Ingredients Shoulder of Welsh lamb (any butcher will sell this cut of meat) 1carrot 1stick of celery ¼ leek ¼ white onion ½ cup red wine 1 tablespoon of tomato paste 1 bay leaf 1 sprig of Rosemary 4 new potatoes 2 leaves fresh mint The Jus 2 table spoons redcurrant jelly 4oz granulated sugar 3 table spoons of Balsamic vinegar ½ pint lamb stock Nob of butter 4 teaspoons port Recipe Season the lamb with salt & pepper Chop carrot, celery, onion and leek set aside Heat a frying pan and add a teaspoon of vegetable oil Place the lamb in the hot frying pan and seal the meat on all sides, remove from the frying pan and place in a roasting tray Put the frying pan back on the heat add the chopped carrot, celery, onion, leek until they have a nice golden colour Add the Rosemary sprig, tomato paste and red wine to get all the flavours off the frying pan and pour over the lamb in the roasting tray Fill the roasting tray with water ( up to the top of the meat ) add the Bay leaf and place in the oven and cook on gas mark 4 or 120 degrees for 3 ½ hours For the potatoes Boil the potatoes until cooked and drain Add the butter and chopped mint leaves and just crush with a fork For the Jus Put the redcurrant jelly, sugar and Balsamic vinegar in a sauce pan on a high heat to dissolve the sugar Once it starts to boil turn down to a simmer until it becomes like a thick syrup Add lamb stock & butter finish with the port bring to the boil to get a nice sauce like consistency For the presentation Place the crushed potatoes in the middle of the plate ( use a ring mould if possible to get a good even base for the lamb) Place the lamb on top of the potatoes and drizzle the jus over the top of the lamb

Serve with fresh seasonal vegetables

Alleviating winter blues The darker days and nights caused by the shorter daylight hours of winter can have a huge effect on how we feel. If you find yourself wanting to eat and sleep more during winter or are less eager to get out and socialise, tips to alleviate the winter blues are at hand, writes Julie Penfold. If you feel a dip in mood and a lack of enthusiasm during winter; you are not alone. Our internal patterns of sleep, appetite, sex drive, temperature, mood and activity all rely on natural light cycles. Experts recommend getting more light into our lives to help alleviate symptoms. Getting outdoors each day is crucial to tackling winter blues as it increases our exposure to sunlight and can positively impact on our mood. Exercise and laughter both stimulate and boost endorphins, those wonderful feelgood chemicals in our bodies that help to lift our mood. Make a point of spending time with people who make you smile. It is also important to eat well during the winter. Over two million people in the UK are affected by Seasonal Affective Disorder (SAD). The low levels of light during the winter months can cause a range of symptoms from slowing down and lacking energy, right through to severe depression. Other symptoms include feeling gloomy, lethargic and experiencing feelings of being unable to carry out our normal routine. Not wanting to go outdoors, loss of libido and craving sweet carbohydrates are also indicators of SAD. Light therapy has been shown to be extremely helpful for many sufferers and is very easy to use in the form of a lightbox which mimics natural sunlight and can be used daily. “If you have any of these symptoms, even on a mild scale, these are all indicators of SAD,” says Carol Barksfield, managing director of SAD Lightbox Company (www.sad.uk.com). “Using a lightbox is a natural and successful treatment for SAD.”

Welsh Lamb Morrocan Style 11/2 lb shoulder of welsh lamb 250 ml chopped tomatoes, 2 bay leaves, 4 shallots, 1 tsp coriander, half teaspoon crushed chillies, 1/2 tsp cinnamon, 1 sprig rosemary, 2 garlic cloves crushed, 1/2 pint lamb stock, 2 sprigs of fresh mint, 1 bottle of old tom ale, 6 cherry tomatoes. Preheat oven to 200 degrees. Slash the fat side of the lamb all over with a sharp knife. Lay half the sprigs of rosemary, cinnamon, chillies and half the garlic cloves on the bottom of a high sided roasting tray, rub the lamb all over with olive oil and season with salt and pepper. Place it in the tray on top of the rosemary and garlic,and put the rest of the rosemary and garlic on top of the lamb. Tightly cover the tray with tinfoil and place in the oven. Turn the oven down immediately to 170o C/325oF/gas 3 and cook for 21/2 - 3 hrs. It’s done if you can pull the meat apart easily with 2 forks.

The Rhyl Army Cadets will be bag packing to help raise funds for Rhyl & Prestatyn Fundraising Group at Morrisons, Rhyl on 22 December 2011. Rhyl & Prestatyn Fundraising Group launched on 21 July 2011 at a Teaparty which was held at the Welsh Assembly Government Building, Llandudno Junction. Since their launch Rhyl & Prestatyn Fundraising Group have received generous donations from both Greenacres Caravan Park of £2.030.00 and Jakes Bar, Towyn of £1,350.00. This fantastic group includes long serving volunteers, office volunteers and new members who are all hoping to raise funds for the Conwy & Denbighshire Nursing Appeal. Last year Marie Curie Nurses provided 5.927 hours of nursing care in the Conwy & Denbighshire area which cost £186,335. This year Marie Curie needs to raise £312,000 to continue their care.

The Great Daffodil Appeal is the charity’s flagship fundraiser and aims to raise £5.5million. Everyone across the UK is encouraged to give a donation in return for a Marie Curie daffodil pin. All money raised enables Marie Curie Nurses to provide more free care to people with a terminal illness in their own homes and the charity’s hospices. Funding Around 70 per cent of the charity’s income comes from the generous support of thousands of individuals, membership organisations and businesses, with the balance of our funds coming from the NHS. Marie Curie Nurses The charity is best known for its network of Marie Curie Nurses working in the community to provide end of life care, totally free for patients in their own homes. Supporting the choice to die at home Research shows around 65 per cent of people would like to die at home if they had a terminal illness, with a sizeable minority opting for hospice care. However, more than 50 per cent of cancer deaths still occur in hospital, the place people say they would least like to be. Since 2004 Marie Curie Cancer Care has been campaigning for more patients to be able to make the choice to be cared for and die at home.

Chairperson Hollie said “We are really busy promoting our Group in our local area, which includes identifying local businesses who will support us during the Great Daffodil Appeal 2012. How I bought a

Porsche 911 from nothing

Buoyed by our success we contacted another manufacturer and scored three Mazda MX-5s, one of which had been reversed into a lamppost.

From nothing to a super car

With the help of a mechanic mate, we soon had the two good cars roadworthy. We let him keep the broken one as payment and sold the other two for £2,220 profit.

IT’S something every petrol head dreams of: Trading up from nothing to a super car by buying and selling a few motors in their spare time. But instead of dreaming, last year I decided to start doing it. The plan was simple – reinvest the cash from each sale into the next vehicle until I bought a 911. And to encourage people to help, we would sell the Porsche and hand all the money to charity. The first cars to kick my challenge off were both donated by dealers. I was handed the keys to a VW Golf MkIII by Motorpoint and M25 Audi gave us an S-reg A3. The A3 wasn’t in the best of health and we were forced to sell it on eBay for less than we’d originally planned at £790. The Golf went to a local man for £250 on eBay. The second step involved spending £985.25 on an 02-reg Ford Fiesta. This one hung around longer than we’d hoped. When we eventually reduced the price from £2,500 to £2,150, it was snapped up by a little old lady. Then came our masterstroke – the Hyundai i10 football car. Made by a renowned car artist to celebrate the car manufacturer’s support of the World Cup, the i10 had artificial grass covering every panel and plastic grass seats, not to mention a giant football and goal posts grafted on to the exterior. After a whirl of publicity, which saw it feature in The Daily Telegraph and the BBC news, we put it on eBay. It sold for £5,005 to a Hyundai dealer who planned to use it for publicity.

Next up was a 03-model Mercedes CLK, which was bought for £6,000 but needed a trip back to mechanic Matt - not only did he fix it; he also sold it to his receptionist’s mum! A further £2,250 profit was banked. Citroen then stepped into the fray with a C4 Grand Picasso. The 58-plater was on their fleet and we snapped it up for just £8,110. Unfortunately we couldn’t find a buyer. Eventually a dealer offered £8,000, but instead of cash, offered part exes off his site for the same value. Knowing cheaper cars were easier to sell we picked a Volvo 940, a Skoda Fabia and a Renault Scenic. Not our smartest move as we only shifted them for a paltry combined profit of £775. That left £900 in the dealer’s bank account which we spent on a gold Ford Ka, which was sold in a week for £1,700. Finally we’d reached the magic £10,000 mark and had enough to buy an early 996-shape 911. The right one popped up on Auto Trader and after negotiations I bought R97 RRK for £9,900. We now plan to get our new baby fettled by Porsche, polished up ready for sale and then eventually, after 13 trades and 15 months, we can hand over a fat cheque to BEN, the automotive industry charity we’ve been working so hard for.

The gadgets that help get 2012 off to a great start

December is Christmas for most of us, but for the fitness industry the season to be jolly is in January. That’s when people take out expensive gym memberships they’ll only use for a few weeks, buy treadmills that will soon be gathering dust in the garage and invest in all kinds of quick fitness fixes. So how do you get help with your new year’s resolutions without wasting money on things you won’t use?

New Year’s Revolution One of the best ways to motivate yourself is to keep track of your progress: seeing your performance improve is a great way to keep you on track. Garmin’s Forerunner fitness watches can be a big help: devices such as the FR60 (£119) log every mile and minute, monitoring your heart rate and how many calories you’ve burned as well as the distance you’ve travelled and the speed you achieved. The FR60 can also communicate wirelessly with your computer, enabling you to track performance over time and even share your results with others online. Garmin isn’t the only firm offering to track your progress. The Nike+ Sportband 2 (around £35) is a wristband that includes a removable Nike+ sensor. The sensor tracks your distance, pace, time and calories burned, and when you get home you can upload your data to Nike’s website. Be aware, however, that the battery isn’t replaceable: it’s good for 1,000 hours, Nike says, which means it’s best suited to light use

or training for a specific event such as a 10K or marathon. Nike also makes smartphone apps to track your fitness, as does rival firm Adidas, whose miCoach system is available in mobile phone form or as a stand-alone bit of kit. The miCoach Pacer (£110) doesn’t just track your progress, though: it hooks into your MP3 player and delivers what Adidas calls “realtime audible coaching”: spoken encouragement to get you through your workout. As with Nike’s fitness kit there’s a website that you can use to track your progress over time. If you’d rather do your fitness at home, sticking a Kinect sensor on your Xbox 360 turns the games console into a home fitness hub. Titles such as Your Shape: Fitness Evolved are surprisingly gruelling, while dance games such as Dance Central or Zumba can help you tone up without the tedium of traditional workouts. If your goal is weight loss rather than overall fitness, the Ki Fit might help. It’s not

cheap - prices start at £99 plus 11 monthly payments of £16.50, rising to £129 plus 11 payments of £18 if you go for the premium package - but the combination of an armband monitor and online analysis promises to help shift unwanted pounds by working out how many calories you’ve consumed and how much activity you need to do to compensate for that extra cupcake or pint of Carlsberg. No matter what kind of fitness routine you’re considering, don’t forget the power of music to motivate you. In-ear headphones such as Sennheiser’s excellent IE6 pair (around £64) can replace the gym’s piped music or the sounds of traffic with your own personal soundtrack, and if you’d rather go wirefree and avoid sticking anything into your ear canals then JayBird’s Sportsband 2 headphones (£99) connect to your music player via Bluetooth. If you prefer aquatic exercise to pounding pavements, there’s an option for you too: the Universe NU Dolphin Waterproof Touch music player (£101), as the name suggests, is designed to work underwater.

The Handy Household - The Labours of Lemons We all know they go nicely with a G&T, but did you know that lemons contain enough acid to ruin the lives of most bacteria found in our kitchens? So, whether you want to sanitise a chopping board, disinfect a counter top or mop the floor, lemons are a great way to keep our homes clean and healthy. Lemons also make it easy to clean a microwave, simply place a bowl of water and lemon juice in the appliance and warm for a few minutes. The steam acts on any stains or lingering smells and once you’ve removed the bowl, you can simply wipe the microwave clean. When it comes to laundry, lemon juice is also brilliant for brightening your faded whites. You can either add it to your washing cycle, or soak delicates in a solution of lemon juice and water to create a mild bleach effect. What’s more, tough food or blood stains stand little chance against this wonder product – simply squeeze the juice from half a lemon over the stain and let it soak in for around 20 minutes, before rinsing with water. And the benefits don’t stop there, as lemon juice is well known for helping to keep us clean and healthy too. Sore throat? Mix lemon juice with honey and warm water to make a soothing drink. Garlicky and onion-smelling fingers can also be thoroughly cleaned by rubbing over with half a lemon and rinsing your hair in lemon juice can even help to combat chlorinegreen hair after swimming.
