Dec–Jan When we wrote the editors notes for this same issue last year, we commented on what a truly awful year it was. Of course, there is debate about whether this past year was actually worse (the general consensus is a resounding yes). But one thing is for sure – there are more reasons this year to pop the cork and welcome in a New Year than ever before. There truly is only one word to describe this issue, and that's sparkling! From Christmas Lights to things that go 'pop' – if you're into celebrating in a shiny way – this is your issue! Sparkling wine and celebrations go together like turkey and stuffing or Christmas pudding and brandy, but not all sparkling wines are Champagne, and not all sparkling wines are made the same way. This month we look at the ins and outs of sparkling wines and present our annual "Sparkling Dozen" – just in time for the silly season! Read more on page 26. Matt Burton of Gundog Estate (and on this month's cover) was recently named a finalist in the 2021 Gourmet Traveller WINE Magazine Australian Winemaker of the Year Award. With cellar doors in the Hunter Valley and Gundaroo near Canberra, this young innovative wine producer specialises in premium Semillon, Riesling and Shiraz.

MEET THE MAKER

Anjelic Vintage One of the wonderful experiences about visiting Handmade in the Hunter Markets is that when you stop at a stall, you are likely to be talking to the maker of the products you're browsing. Anjelic Vintage stallholder and maker, Ang, is a nurse from Maitland and lives with her Kelpie Banjo by day, but when she's not working, Ang unleashes her creativity in the form of jewellery-making. For Ang, creating beautiful earrings and jewellery started as a way to relax after a busy day, but has since turned into a business selling polymer clay jewellery both online and at her very popular market stall. This month we spoke to Ang to learn more about Anjelic Vintage. HVMAG: We love the name of your product - please tell us what it means and how you came up with it? Ang: I wanted my name included in my brand but also with a bit of a twist. I set myself a standard of product I wanted to make for women and girls as something unique, feminine, empowering to girls of all ages and bespoke. The word Vintage seemed to encompass all of this. HVMAG: Can you please tell us about your designs, material used, process etc.? Ang: All my earrings are made from Polymer Clay. You knead the clay, roll clay to your desired finished depth, use shape cutters to cut clay and bake in your oven. You can texture your clay to create many different designs. HVMAG: Where does the inspiration for your designs come from? Ang: I guess the inspiration for my designs can come from my family, my friends, a colour palette I've seen. When I sit in my studio, I just create

with where my imagination goes. Being a nurse, I need a creative outlet, and when I sit down at my desk, I just go with where my mind takes me. HVMAG: How long have you been running Anjelic Vintage and how did you start? Ang: I started about four years ago. I wanted a pair of earrings that I couldn't find anywhere, and after researching, I discovered clay earrings. I made earrings for myself and my sister, then for friends as gifts. Friends then wanted to buy my earrings, and it grew from there. HVMAG: We notice you also run workshops for others to learn about using Polymer Clay – can you please tell us a bit about that? Ang: Yes, I love teaching and sharing my creative outlet with others as I know how I feel when I'm making. The workshops are for beginners and run for 3-4 hours. Myself and my team will teach you step by step, from choosing your clay to assembling your earrings and wearing them home. HVMAG: What do you like most about the Handmade in the Hunter Markets? Ang: Handmade in the Hunter was my very first market. It has a wonderful atmosphere, and I have made some lovely friendships from it. Locals and travellers alike know this market, and each time they return to the Hunter, they visit. I have returning customers each Christmas come and see me for Christmas presents.

Matt Burton of Gundog Estate was recently named as a finalist in the 2021 Gourmet Traveller WINE Magazine Australian Winemaker of the Year Award. With cellar doors in the Hunter Valley and Gundaroo near Canberra, this young innovative wine producer specialises in premium Semillon, Riesling and Shiraz, which are consistently rated amongst the top 5% in the country in the James Halliday Wine Companion. At the heart of his business, Matt Burton is passionate about social, environmental and economic sustainability, believing that the future is in our own hands and that it’s his privilege to affect positive change in the community.

Burton knew from around the middle of high school that he wanted to be a winemaker. His home life was always a creative space filled with creative people. His dad, Geoff Burton, is a highly successful cinematographer and director who has worked on over 50 Australian films, including Sunday Too Far Away, The Sum of Us, Dead Calm, Storm Boy and many others. His mother is an anthropologist, academic and documentary filmmaker who is highly regarded for her work on the position of women and gender equity. As Matt grew up, the family travelled extensively and together they developed a passion for innovative food and wine. His dad also considers himself a Francophile. In year 10, the young Matt Burton did work experience at his dad’s friend’s winery, Wandin Valley Estate and the die was cast. Matt studied at Charles Sturt University, travelled and worked in winemaking in France and the United States, worked at Coldstream Hills in the Yarra Valley on his return but was keen to come back to the Hunter Valley. He felt drawn to the area with its concentration of vineyards and its close proximity to Sydney, where family and friends were. As a young man, he appreciated that the Hunter Valley had so much to offer – concerts, restaurants and outdoor pursuits. He found himself in the right place at the right time and began working as Assistant Winemaker at Wandin Valley Estate in 2003. By 2005 he had taken over as Winemaker and General Manager, which he considered a tremendous opportunity to learn about the business of winemaking. He prefers smaller scale wineries because the Winemaker is involved in every aspect of the business. He began experimenting with his own label before he left Wandin Valley Estate, and it wasn’t until 2011, when Wandin Valley Estate was sold, that he made the leap to Gundog Estate.

Matt’s parents purchased a vineyard in Gundaroo just outside of Canberra in a new and rapidly growing wine region, which he initially advised against. He had taken the lease on the old schoolhouse at Pokolbin in the Hunter Valley to set up his cellar door. The contrasts between these two regions appealed to Matt. Canberra is a cold climate, relatively new and the key varietals are Riesling and Shiraz. Hunter Valley is a hot climate steeped in history and with varietals Semillon and Shiraz. Concentrating on the varietals that the area best produces is what French winemakers do, and following this simple approach has led to a strong brand and premium award-winning wines that have been critically acclaimed in Australia and abroad. Matt admits that the first years of Gundog Estate were simply about survival and the development of the brand experience. “With two cellar doors and a wine club, we wanted to take it further and develop an immersive brand experience. We felt that the key to success was to offer more than just the varietals,” said Matt. “We’ve developed our own gin, Gundog Dry Gin, as well as a gourmet pantry with cheeses, coffee, olive oil, curry pastes, spice rubs, hand-made chocolates filled with Gundog Estate Shiraz and Muscat, even beer – Hunting Ale. At the time we developed these offerings, it was unusual, but these days, it’s become quite commonplace. At Gundog Estate, though, we collaborate with only the highest quality providers.” Another sign of success and recognition of being a serious, qualityfocused brand is the fact that Gundog Estate wines are served on (Continued next page) F

(Continued) business class flights with Qantas. “Pre-covid, Qantas was our single biggest wholesale customer, but once the pandemic hit, all those orders dried up. It’s just starting to pick up again now. It’s providing great exposure to a significant target market for us,” said Matt. About five years ago, Matt came to the realisation that he was incredibly lucky. He felt a great sense of privilege that his business was thriving despite the challenges that the industry as a whole has had to face. Climate change has had a direct impact on grape growing, compounding the challenges for growers with no stability in the seasons. It’s also driving drought, floods and bush fires. Frustrated at the policy level, Matt wrote to every member of parliament he could to try to influence policymaking to create better conditions for growers. He also put his money where his mouth was, creating a business model based on social, environmental and economic sustainability. “Winemaking has not only allowed me to indulge my passion and creativity, it has also provided a platform to affect positive change in our community via our social and environmental sustainability efforts, which are equally important to me,” said Matt. Gundog Estate operates as carbon neutral, reducing greenhouse gas emissions by using renewable energy sources, using energy-efficient winery equipment and developing energy reduction strategies in the cellar doors. The winery offsets the emissions it can’t avoid by purchasing carbon credits in renewable energy projects in developing countries. In the vineyard, they are moving towards biological and organic farming practices and supporting their growers to do the same. Gundog Estate has also developed a partnership with an organisation called Fifteen Trees. For every new member that joins the wine club, they purchase a tree, and each Christmas, ten trees are planted for each staff member. Customers can also reduce their carbon footprint by purchasing trees with their wine orders and are actively encouraged to do so. Matt sees his responsibilities in the area of carbon neutrality as an exciting, necessary and satisfying commitment.

“People may see it as a financial sacrifice, but the reality is very different. The fact is that it makes the business stronger – it’s a balancing act, and it’s really worked for us. Plus, I have the added satisfaction of knowing that I’m doing my best for the world that my kids will inherit.” The sustainable practices of the business don’t just stop at the environment. Since 2018, Gundog Estate has supported Path 2 Change – a Newcastle based organisation that works to break the cycle of youth homelessness by assisting young people into employment. Initially the support began with fundraising but then a work experience program for the Path 2 Change clients was implemented, enabling them to develop skills and confidence. When Covid-19 disrupted these activities, Gundog Estate launched The Lived Experience, a Hunter Valley Shiraz featuring a hand-drawn label artwork sketched by a Path 2 Change staff member who has experienced homelessness. 100% of the profits from the sale of The Lived Experience are donated to Path 2 Change. Just over 1000 bottles were produced and are available for $35 per bottle or $210 per six-pack. “The past two years have been tough for us and most others in the region. However, through our work with Path 2 Change, we know that disadvantaged and homeless youth are doing it tougher. We share in Path 2 Change’s philosophy; the best way to break the cycle of youth homelessness is through education and employment, and we are proud to be involved in their wonderful work,” said Matt. The economic sustainability of Gundog Estate is based on favouring fair and enduring outcomes over short term profitability. The long-term vision is top of mind, and business growth is based purely on demand without compromising quality, brand experience or organisational culture. Matt is very proud of the team of people he has around him. He employs 16 people with an over-representation of women and people of all ages. He values diversity and appreciates that he is able to be himself every single day, that the team share common goals and has a willingness to contribute in a passionate way. He is quietly hopeful that one or both of his daughters, Scarlett 12, and Maddison 9, may one day develop an interest in the business so that he can leave them his legacy. Full of Surprises WORDS DI VON ESSEN For those of you who may have missed it, there's a beautiful new store now open at Hunter Valley Gardens Shopping Village. The brainchild of Ross and Yvonne Welsh, byvonne was created to signify that products made by Yvonne feature prominently in-store. While new to the Hunter Valley, byvonne is not new to being purveyors of all things beautiful. The store was originally situated at The Old Wyong Milk Factory on the Central Coast from 2017 to mid-2021 when the business was closed due to covid restrictions. Ross and Yvonne decided to move further afield during the lockdown, and the Hunter Valley seemed the perfect place to start afresh. Yvonne has always been fascinated by the arts and has expressed herself in various media during her life. She was an award-winning potter for many years, showing at the Royal Easter Show and local Central Coast galleries. She now paints watercolours, designs, and makes jewellery and resin art pieces. Yvonne also makes all the candles for byvonne from the couple's workshop. The products available in the new shop at Hunter Valley Gardens Shopping Village are deliberately slanted towards Australian providers, with a vast proportion handmade in-house. "Candles, jewellery, art pieces, laser engraved cutting boards and food platters, coasters, and home decor are amongst the pieces we make," said Yvonne. "We also stock products from Australian suppliers Fab Slabs (camphor laurel cutting boards), BoldB (handmade jewellery), Bocchetta (plush toys), Cosse (ladies grooming products), Vitaman (gents grooming products), and RIVSALT (salts, spices & kitchen/tableware from around the world). We aim to supply an eclectic range of products and giftware to suit most tastes and all budgets," added Ross. With a particular emphasis on buying 'close to the source', Yvonne says that all of their candles are made from 100% soy wax imported from the U.S.A. to ensure an unadulterated source product. "Each sale from our BoldB Aqua range ensures clean drinking water for one person for a year in Africa and the other ranges contribute to numerous environmental causes. Where it is necessary to import ingredients and products, byvonne tries to ensure that the purchases are made from as close to the source as possible, i.e. seashells from aquaculture plantations in the Philippines, soy wax from the U.S.A., artwork from Fijian village co-operatives, wooden stands from small manufacturers in India, artwork from Borneo villagers," she said. In 2016, attracted by the region's lifestyle, wine and food, head chef Brian Duncan, his wife Jen and their young children decided on a treechange to the Hunter Valley where they opened Hunter's Quarter at the Pooles Rock vineyard in Pokolbin. Fast-forward five years, and Hunter's Quarter has become a firm favourite for both locals and visitors to Wine Country. This month we caught up with Jen to learn more about their extraordinary journey.

HVMAG: Hunters Quarter is known for it’s amazing hospitality, can you tell us a little about your team? HQ: The team is made up of industry professionals who have an amazing ability to change and adapt to the ever-changing horizon of our guests and the current working conditions. We are consistently reminded of their loyalty and hard work on a daily basis by the outstanding customer feedback that they receive as a team. All of the staff have very similar abilities to be able to apply skills to different tasks and responsibilities. We often explain that we are a family run business and our team give a whole new meaning to commitment to each other and to Hunters Quarter. The combination of their natures' and knowledge is quite remarkable, especially when considering the pressures that Covid-19 has placed on their working environment. We are extremely proud of their forward-thinking approach and support. HVMAG: We know that Brian is a world-renowned Chef, can you please tell us about his stellar background? HQ: Brian brings a wealth of global and local experience in fine dining to HQ, having worked at the Dorchester Hotel (Three Michelin stars)

and Claridges Hotel (One Michelin Star) in the upmarket area of Mayfair in London. He was the executive chef at Level 41 and The Establishment - two of Sydney's premier restaurants. His breadth of experience and exposure to a variety of world cuisines brings a unique and refined quality to his product, and his belief in food is based on simple, fresh, local and seasonal produce. HVMAG: What would you say Hunters Quarter is best known for? HQ: Brian has a simple food philosophy - it's about high quality, fresh products, combined with carefully crafted techniques that allow the natural flavours and textures to shine. Our team work with the fundamental outlook of simplicity and elegance, and we believe that the manner in which we work reflects our principles. Our guiding principle, or mission if you like, is "we believe in the simple things in life; they just need to be amazing." HQ (as it is known to the locals) features floor-to-ceiling glass windows and doors, every seat in the restaurant provides panoramic views of the surrounding vineyard. The restaurant is furnished with lightcoloured wooden tables, dark plush chairs, and crisp white lounges; the restaurant features a handcrafted suspended timber ceiling with pendant lighting, all housed in a modern, architecturally designed building. We can seat up to 120 guests for a more formal event or 160 guests for canapes, with a veranda providing stunning views across the vineyard. HVMAG: What changes have you made in the restaurant to meet the challenges of the last two years? HQ: We have rolled out a new online booking system to ensure ease of booking for all of our guests and limited daily trades to help with labour shortages and volumes of demand that are being experienced Australia wide.


FOOD VAN ONSITE SAT–SUN HVMAG: As a team, what's kept you motivated (and sane) during this everchanging environment? HQ: We have changed our opening times to ensure the team works within a balanced work-life environment for mental and physical wellbeing. We have created online chat groups to stay in contact at all times. Training and personal development have certainly helped, with regular weekly communication. We are delighted to say that our customer base has been flexible and understanding during this challenging time for all. We have noticed the attitude and patience of humans have been outstanding by checking in with team members and words of encouragement and support. We have noticed during this time the human quality of being graceful. HVMAG: What changes have you adopted that you will stick with that positively impact the restaurant and its diners? HQ: We have noticed that the ease of booking a three-course option has helped with the decision of what experience to book in the Hunter Valley. We have opened the lunch and dinner service a half-hour earlier to enable guests to either enjoy a later wine tasting experience or an earlier dinner to return to loved ones. We still offer the a la carte option instead of a set menu, which allows guests to choose dishes instead of sticking to a set menu. HVMAG: How often do you re-invent the menu? When it comes to ideas for the menu, where does the inspiration come from? HQ: Every six weeks the menu options are changed according to fresh produce availability and seasonal changes. HVMAG: What local produce do you utilize at Hunters Quarter – what are your favourite local ingredients to work with? HQ: Our olive oil served upon arrival with our sourdough bread, and whipped butter is sourced from a local Estate, 3km from the restaurant, Olio Mio. Our Laguna honey used in our desserts is from a local farmer and personal friend of our sous-chef. The finger limes are also sourced from a local grower in Lovedale, and we also have a HQ vegetable garden on site. HVMAG: What's coming up in 2022 for Hunter's Quarter? HQ: We're very excited to be part of the 2022 Sydney Morning Herald Good Food Guide and a feature on the Foxtel lifestyle channel. We're also planning on working with local transport companies to arrange diner transport.

A Natural Fit For Tamburlaine Andrew Higgins has joined Tamburlaine Organic Wines as Head of Winemaking for the Orange Region. Andrew (formally McWilliams) joins at an exciting time for Tamburlaine, who has recently added a 12,000-tonne winery and 507 hectares of vineyard to its Central West operations. Andrew forms part of a growing crew of winemaking talent at Tamburlaine, including Shannon Burgess-Moore (ex-De Iuliis), Will Gardener (ex-Australian Vintage Limited), Zoe Rudlin (ex-First Creek) and Raffa Pacifici (ex-D ’Abruzzo, Italy), a team that Managing Director Mark Davidson considers to be the strongest team he’s worked with throughout his 37-year career. “The vast majority of our wine production is now based in Orange. This is very different to the single-site, relatively small production winery I have previously operated,” Mark said.

“To produce the best wine as well as the necessary production efficiency in a facility like Cudal requires particular skills, and Andrew is a natural fit. Our ground-breaking work over the years involving organics, vegan fining agents and winemaking without added sulphur may be in part new to Andrew, but he instinctively understands how much the industry and consumers continue to change.” Following the recent sale of McWilliams, so ended Andrew’s admirable 18-year career commitment. Over that time, he progressed through the ranks to Chief Winemaker and has been a quiet achiever who accumulated all the technical skills supplemented with international experience in France and the US. “I am super excited with the opportunity of coming on board in a lead role with the Tamburlaine winemaking team,” Andrew said. Tamburlaine has swiftly become one of the fastest-growing brands in Australia, with its 57-year-old operation in the Hunter Valley and 12,000-tonne winery at Cudal outside Orange NSW supported by 800 hectares of premium organically run vineyards in the Orange region and Hunter Valley. Since taking over the Cudal winery in 2019, Tamburlaine has invested in ‘premiumising’ the facility and Andrew will continue the focus on appropriate winery upgrades and honing winemaking specifications.

Kickstart 2022 In Magical Style WORDS LIANE MORRIS A favourite of families, lovers and everyone keen to get into the Christmas spirit, Hunter Valley Gardens, Christmas Lights Spectacular is a mesmerising display encompassing 5 hectares of the 14-hectare gardens and utilises over 3 million lights. This year's display will run through until Australia Day 26 January 2022, every evening from 5.30pm until 10.30pm, so there's no excuse not to get along and be amazed. Chief Elf at the HVG Christmas Lights Spectacular, Amanda Andrews (aka the Events Manager), is only new to the team of 41 locals who all work together to make HVG the attraction that it is. "There's the horticultural crew of 20, the maintenance crew of eight, the floating crew of six and the management team of seven. The Christmas Lights Spectacular takes three months to set up and two months to dismantle with one month break from all things Christmas before planning starts all over again. This effectively means that staff work on the display year-round – planning, sourcing and installing," says Amanda. "With covid restrictions, 2021 was more challenging than most. What would typically take a team of 12 three months to install was done in just four weeks. It is a remarkable feat and an indicator of how passionate and hardworking the team at HVG are when it comes to this cornerstone event." IT’S A WILD-LIFE IN THE HUNTER VALLEY!

Australian Wildlife Parks has officially launched Hunter Valley Wildlife Park, a new major drawcard for families to visit Hunter Valley Wine Country. Following their recent acquisition of the former Hunter Valley Zoo, the rebranded facility joins Featherdale Sydney Wildlife Park (near Blacktown in Western Sydney) and Mogo Wildlife Park on the beautiful NSW South Coast (near Batemans Bay) as part of the largest privately-owned wildlife park group in Australia. Hunter Valley Wildlife Park is home to a rich and diverse collection of wildlife, offering up-close encounters with meerkats, squirrel monkeys, lemurs for older children and adults, and children delight in hand-feeding wallabies and kangaroos, farmyard animals and ostriches and camels. Sparkling wine embraces a broad spectrum from ultra-luxury to every day, but its traditional role has remained one of social joy – celebrating togetherness and those notable moments in life. For many of us, sparkling wine or Champagne was often the first alcohol we ever tasted. Whatever the occasion, we have adopted the habit of celebrating with sparkling wine and are reaching for this ''bubbly wine'' like never before. So, brace yourself for the sound of enthusiastic cork popping as we get down to the business end of the bubbles this festive season.

Sparkles

Christmas and sparkling wine simply go together - like turkey and stuffing or Christmas pudding and brandy. One cannot be without the other; they go hand in hand. But not all sparkling wines are Champagne, and not all sparkling wines are made the same way. First of all, Champagne is a regionally protected name and can only be produced in the Champagne region of France. It can only be produced in one way, and that is in a bottle using natural fermentation known as the Traditional Method (or Méthode Traditionnelle) and using only three grape varieties - Chardonnay, Pinot Noir, and Pinot Meunier. Sparkling wine is simply wine with significant carbon dioxide levels in it, making it fizzy. The carbon dioxide may result from natural fermentation - either in a bottle, as with the Traditional Method, in a large tank designed to withstand the pressures involved (as in the Charmat process), or as a result of carbon dioxide injection. The sweetness of sparkling wine can range from very dry "brut" styles to sweeter "doux" varieties. Australia produces a diverse range of sparkling wines and has a history well steeped in great bubbly. Sparkling wine is usually white or rosé, but there are many examples of sparkling red wines as well. In Australia, most sparkling wine is produced from Chardonnay and Pinot Noir, but an Australian speciality is Sparkling Shiraz - a sparkling red wine made from Shiraz grapes. Young examples are usually refreshing, rich, fruity and juicy with a touch of sweetness. Older examples are typically rich and lush in style, and some high-quality bottles are suitable for cellaring and ageing. Most Australian sparkling wine producers will make a Non-Vintage wine each year that is blended across vintages to produce a consistent product. In favourable years a Vintage wine may be produced. These wines tend to be more expensive and refined, offering a good expression of the region, variety, year and style. In the Hunter Valley, you may often see a Blanc de Blanc style that is produced entirely from Chardonnay or a Blanc de Noir style made entirely from Pinot Noir. The use of Semillon in Sparkling Wine is also becoming popular in the Hunter. Although excellent on its own, when it comes to food, sparkling wines can be enjoyed with just about any meal. An ideal match for Sparkling White and also Sparkling Rosé wines are canapes and entrées like fresh oysters, scallops, sushi and mains featuring salmon, duck, mushrooms, and cheeses. Sparkling Reds are ideal with classic roasts, glazed ham, roast turkey, barbequed ribs, roast duck and chocolate desserts. Whether you prefer the classic Champagne-style qualities of an Australian Sparkling White, the vibrant deliciousness of Sparkling Rosé or the opulence of Australian Sparkling Reds, there's a sparkling style to suit your taste.

The Tintilla Rosalind Blush base wine is made from the juice of the Sangiovese grape, which is pressed and run straight into the fermentation tank with minimum skin contact- hence the “Blush”. The must is cold settled and fermented to dryness. The wine is then controlled carbonated to produce the fine bubbles for this sparkling wine style. TASTING The wine has a bright translucent blush appearance with fine bubbles that persist.
