Apr–May As we move into the back half of Autumn, the temperatures are settling into a more comfortable Autumn ambience. The leaves may be yellowing and falling from the vines, but there's no time to hibernate in Wine Country with a slew of unique events turning up the heat in the cooler months, like Beer & BBQ Festival, The Gum Ball and Sunset Sounds. The Hunter Valley is a beautiful place to visit at any time of the year, but Autumn has that special magical something – a charming collection of quaint, boutique accommodation, mountain and vineyard landscapes complete with numerous hues of brown and red, cooler days and nights, warm open fires, cosy restaurants and cafés serving up heart-warming dishes, welcoming cellar doors and of course the wine. It's new for Wine Country – but it's something we've all been longing for… it's the Tasty Food Market, of course! Tasty Food Market is all about delicious, scrumptious, tasty food. And the bulk of the stalls in this market will feature food products of all different kinds and types. In addition, a core group of food stallholders from sister-market Handmade in the Hunter will also be stallholders at the new market. With their handmade chilli sauces, salsas and chilli jam, the Hot Chilli Woman is a really popular stall. And, of course, local olive grower, River Flats Estate, will have their olives, olive oils, dukkah, balsamic vinegar and condiments. Casbar's Kitchen will have their jammy delights at various times throughout the year. And you can't go past Spotty Dog Estate for wine-based cheese pastes for all your cheese and cracker boards. For jerky lovers, Bloody Good Jerky will regularly feature multiple flavours of their handmade jerky. Jai's Drop will be selling whisky-bourbon marinade and pasta sauce. And for those people who want something healthy – grain/wheat free-vegan-paleo-low carb - Primal Alternative will have a range of baked goods and packet mixes for bread, pizza bases, cookies, wraps and pastries. You'll even have stalls selling pet treats. Spoil your four legged friend with doggie doughnuts from Happy Hound Treat Co or beetroot bones from Barkin' Good Treats. Plus, for the first time since markets started at Sobels Wines, they will have a stall for wine-tasting and the sale of their wine. BUY LOCAL for an uber-delicious Easter! Easter is one of those rare times in a year where you can eat as much chocolate as you can without the fear of friends giving you that judgy, sideways glance. With the Easter Weekend almost upon us, shops are stocking their shelves with Easter eggs, bunnies and bilbies and people across Australia are getting ready to tuck into chocolate treats. But have you ever wondered why we eat chocolate eggs at Easter or where to find the best egg? (Hint: it’s local!) While the chocolate Easter egg is a relatively new tradition, the Easter egg's origin and many more modern-day Easter symbols, such as the Easter bunny, go back a very long way and pre-date Christianity. Throughout the ages, decorated eggs were often given as presents around Easter time, symbolising rebirth and new life. Eggs were usually boiled and decorated with dyes until French and German chocolatiers started producing edible chocolate eggs. Early chocolate eggs were filled with sugared almonds until John Cadbury cracked the recipe for making moulded, hollow eggs in 1875.

The launch in 1905 of the famous Cadbury's Dairy Milk Chocolate made a tremendous contribution to the Easter egg market. This new kind of chocolate's popularity vastly increased sales of Easter eggs and today the Easter egg market is predominantly milk chocolate. Passion Over Pretension The Art Of Enjoying Wine

WORDS LIANE MORRIS Briar Ridge is located in the idyllic Mount View area of the Hunter Valley and has been growing grapes there for 45 years. Mount View offers a different micro-climate and soil to the rest of the Hunter Valley, and Briar Ridge takes full advantage of this, producing award-winning wines that are unique and fully reflective of their terroir. The winery is recognised as a James Halliday's 5-star winery and has enjoyed that rating for the past eight years running. The history of Briar Ridge goes back to the purchase of the property in 1987 by John Davis, a geologist and oil exploration consultant. His deep understanding of soils, climate and landscapes and his love of wine led him on a mission to track down the best grape-growing properties he could find. Briar Ridge was one of his first. He went on to purchase Tallavera Grove, also in Mount View, Carillion in Orange, Stonefields in Wrattonbully and Peppertree. Today, Briar Ridge is run by Jaclyn Davis, John's daughter who grew up on her father's vineyards. "I recall spending every school holiday at the vineyard," said Jacyln. "In the early days, that entailed what seemed to be a very long drive along windy roads, stuck in the middle seat in the back. The first stop was always Sylvester's bakery for pies and damper. Initially, we camped,

storing our bikes in a shed at the neighbouring egg farmer's property. The long drop toilet at the back of the tractor shed is an enduring memory." Jacyln feels a sense of nostalgia for simpler times gone by and remembers how different the Hunter Valley was in those days with fewer attractions for children. She remembers the slippery dip at Lindemans with fondness as the only child-friendly cellar door – her favourite by far for that very reason. As a teenager, she preferred the city with her friends, but at the end of Year 12, Jaclyn did a vintage in the winery and lab, which gave her the first real insight into the family business. "Up until then, it had been limited to child labour when the mobile bottling line was on-site, sticking on labels and packing boxes. Little did I know what this vintage experience would lead to in my future." After school, Jaclyn studied for a Science degree, married, had two children and divorced. By the age of 28, she was a single mother with two young children and decided to study family law. "I studied a Juris Doctor degree largely online, as well as a Masters in Ethics (yet to pay for itself, but philosophy and ethics remain a passion), graduating in 2010 when my children were seven and five years old. During this period, the kids and I would spend time at the vineyard (by


then, we had moved to the house at Tallavera Grove), which was a lovely escape and nice to introduce it to the next generation." Jaclyn went on to work in family law in Manly and then in 2018 became General Manager at Briar Ridge. She continues to practice law part-time, balancing her life between the winery, law and her family. "The juggle is not easy – I live by post-it notes. If it's not written down, it doesn't get done. Having school-aged children in Sydney, I can't always spend as much time on-site at Briar as I would like. Sometimes I feel like I'm neglecting one for the other, but the variety is good, and I've got a great team around me to help me keep it all together." The team at Briar Ridge is one of the things that Jaclyn believes makes it a really special place, and she is both proud and appreciative of her staff. "My favourite thing about Briar Ridge is the people, being part of a team, and being part of the creative process. It's nice to be part of a business that brings hospitality, pleasure and enjoyment to people. I particularly enjoy working with Alex Beckett, our winemaker. He is an excellent communicator, and his passion for his craft is infectious. It's a real privilege to work and watch such a talented (and young!) winemaker. I'm often impressed by how invested our staff are in the brand, and we're blessed with cellar door staff that are knowledgeable about our wines but also love a good laugh and chat. It's not pretentious or intimidating, which is what the experience of enjoying wine should be." This idea of passion over pretention is a core value of the vineyard. The enjoyment of the wine is the top priority, without over-analysis. It's important to the whole team for the experience of the wine to not be intimidating, to be a pleasant, exciting wine adventure to be savoured by everyone. The development of the winery's new dining venture, Osteria, fits this theme and came out of COVID lockdown. "The last couple of years have obviously been particularly challenging, as they have been for everyone. We used the opportunity to get onto things that we had been meaning to get to. (Continued) the cellar door into the old winery, which has enabled us to host many more people, particularly when density restrictions were in place. We also developed a new food offering in the form of the Osteria, which is located in the old cellar door. It allows us to offer an additional or alternative experience to the cellar door with a more substantial food offering. It features dining on our terrace, where you can sip on some of the best wine in the Hunter Valley and feast on artisan cheeses, carefully cured meats and other gourmet delights. Still, we've deliberately kept it casual and affordable." The Briar Ridge Vintage Wine Club was one of the Hunter Valley's first, with some members having been with the winery for over 20 years. Briar Ridge recently had some very encouraging results in well-regarded wine shows, including the NSW Governor's Trophy for Best in Show for the 2018 Dairy Hill Single Vineyard Semillon. Briar Ridge differs to Carillion and Peppertree wineries with its focus on the Hunter. They do take some fruit from the Orange and Wrattonbully vineyards, but they concentrate on the Hunter classics of Semillon, Chardonnay and Shiraz, and the more modern alternative varietals that do well in the Hunter such as Fiano and Albarino. Then, of course, is the range of signature wines under the Stockhausen label, named for Hunter Valley legend winemaker and Briar Ridge brand custodian Karl Stockhausen who recently passed away. He had been involved with Briar Ridge since 1990. "We were so lucky to benefit from his expertise, humour and integrity for over 30 years. I am very thankful that Karl had the opportunity to see and approve of the new labels featuring his distinctive face that are now on our signature range of Stockhausen wines. He will be sorely missed."

Winemaker Alex Beckett took over from long time winemaker Glyn Olsen in 2018 when she decided to focus on Peppertree. He began his career in wine when he worked on the cellar door, first at Tyrrell's and then at Peppertree. In 2013 he left the Hunter Valley to study winemaking at the University of Adelaide and returned in 2016 to work with Glyn as Assistant Winemaker. He worked with Karl Stockhausen for three years and remembers him as someone who didn't enforce his will and believed that wine was for everyone. "Karl made wines for consumers. He wasn't out to make Australia's greatest wine; he wanted to make Australia's most enjoyable wine," said Alex. "One of the biggest lessons I learnt from Karl was that the wine is just one part of the experience. At wine club events, he was focused on the enjoyment the members took of the whole event – not just the wine." Alex has a philosophy of continuous learning and looks to Europe and the early years of Australian winemaking for his inspiration. He sees his style as being a hybrid of modern techniques with historical references and minimal intervention. He enjoys experimenting with alternative varieties and is excited about the single-vineyard wines taking off. "I'm focusing on producing small quantities of special wines and selling them out within the year. We work on improving the vineyard so that the wines have the opportunity to become a pure reflection of where they are from." This year marks the Briar Ridge 50th anniversary, which will be celebrated with a gala lunch in the vineyard and other events. There are also plans to offer villa-style accommodation in the near future. Mostly though, Jaclyn and Alex simply want to keep doing what they do well, making good wine and providing engaging and genuine experiences for guests, members and wine lovers everywhere.

Easter is almost upon us again, and with the celebration falling in conjunction with school holidays this year, it’s a great time for getting out and exploring all the region has to offer. There will be plenty to do across Hunter Valley Wine Country throughout the Easter long weekend, with some egg-cellent activities for the kids and a few tasty treats for mums and dads as well. April is a beautiful time of year to visit the Hunter Valley Gardens, with clear sunny weather anticipated and plenty for the whole family to enjoy at Hunter Valley Gardens throughout the Easter long weekend (15 to 18 April). This Easter the Gardens will once again play host to the largest annual Giant Easter Egg Hunt in the Hunter Valley. Kids will also enjoy a visit from the Easter Bunny, while Alice takes some time out from Wonderland to delight the young and young at heart. The Giant Easter Egg Hunt will run at 11am, 12noon, 1pm and 2pm, Good Friday, Easter Saturday and Easter Sunday only – so don’t miss out. Put your detective skills to work and find the mysterious golden egg. There will be one each day to find hidden somewhere in the Gardens. Find it and win a Family Pass to Snow Time in the Garden. A few more unusual eggs will also be on show at the Gardens this Easter, thanks to the Mega Creatures & Night Safari, which is running throughout the school holiday period. Spot a Stegosaurus, tiptoe past the Triceratops and try not to tremble at the sight of the giant T-Rex on your way to the rides. Local couple Renata and Fernando Antao have delighted visitors (and a good many locals) for over ten years with their decadent desserts and tasty treats straight from the kitchens of Sabor Dessert Bar. This month we caught up with one half of the dynamic duo to find out how the business has grown and what visitors can expect when they visit. he new What is your connection with the Hunter Valley, and how long have you been here? er. Renata and I always loved coming up to the Hunter Valley for our getaways when we lived in Sydney. We'd visit at least four or five times a circle year and always felt sad when we had to return home. Then, during one e and visit, just over ten years ago, we had the crazy idea of "why don't we move up here?" ble For those who've never been to Sabor in the Hunter Dessert Bar, what can they expect to find? Well, when you first walk in, you are greeted by the smell of coffee being made and one of the best views in the Valley through our 5-metre

high glass wall facing the vines below and the mountain ranges in the background. Then as you turn around to face the counter, you see our dessert cabinets filled to the brim with over 40 different desserts from which to choose, with another 20 or so on a menu for you to choose from. All are made individually and can be paired with a Hunter Valley wine if you choose. Something for everyone. Sabor in the Hunter is known for its out of this world desserts – how have you kept your passion for creating for as long as you have? We have such a huge range of desserts, so that alone keeps us on our toes most of the time. We have desserts which we've had from day one as they've always been favourites of visitors and locals alike. We also have desserts that come and go with the seasons, and then we have desserts that move with the times and trends, and this is where our passion thrives. We often travel overseas for inspiration of flavours, colours and shapes. We believe that all the senses should be tickled when it comes to dessert.

How many desserts are on your menu? We have over 60 desserts to choose from at Sabor. From your traditional desserts like Lemon Meringue, Apple and Raspberry Crumble or Caramel Cheesecake to our more extravagant and original desserts like our Green Apple Royale, Lychee and Summer Berry Cheesecake or Biscoff Bonanza. We also have our wow desserts like our flaming Choc Caramel Brownie and the What the Fudge! giant ice cream sundae. What is the most popular dessert on your menu? We have a few popular desserts for different reasons. Our Green Apple Royale and Chocolate Mousse Crown desserts are very popular, firstly because of their appearance and then for the flavour. Our Lemon Curd Meringue and Passionfruit Meringues are also popular as they have a special marshmallow meringue on top. What are your favourite ingredients to create delicious desserts with? I suppose our favourite ingredient is the newest one we are experimenting with. Of late, we've loved working with Biscoff quite a bit - it's a caramel and cinnamon flavour and comes in a biscuit or a spread form. We love working with chocolate, too, white, milk and dark alike. We also love playing with different glazes to cover our desserts in. What would you consider your 'signature' dessert? We would have to say our Lychee and Summer Berry Cheesecake would have to be our signature dessert. It's the dessert we get asked most about. And because it was so popular, we had to make sure it was gluten-free. It also pairs beautifully with Savannah Estates Botrytis Semillon. Can we expect anything special for Easter? What about Mother's Day? We'll definitely have our signature Easter Egg dessert for Easter this year. It's a chocolate and honeycomb eggshell filled with a choc chip dark chocolate and raspberry mousse, topped with a nest of toasted coconut and speckled candied eggs sitting on a bed of green chocolate soil. We are still working on our Mother's Day dessert for this year, but rest assured it will be worth waiting for!

WORDS DI VON ESSEN To the average person, a large paddock in a rural area just on the fringe of Hunter Valley Wine Country would be – at best – nice to look at. Or perhaps a good camping spot. Not for experienced pub operator Jason Gavin though. To Jason, it was – in one word – opportunity. "A friend showed me the site, and I liked what I saw. When I heard that Coles was moving into the growing township, it didn't take a lot more to make me decide to buy the land," said Jason. Fast forward five years, and that paddock has been transformed into a destination pub at the gateway to Hunter Valley Wine Country, close to a number of growing regional towns and with the new 7,500home Huntlee township on its doorstep and more to follow. In fact, it's that centrality, in addition, to the bustling city of Newcastle, that has seen Huntlee Tavern become somewhat of a 'hub-pub' – the Hub of the Hunter to surrounding regional towns too. When it came to designing and building Huntlee Tavern, Jason drew upon his 25 years of experience in the hospitality industry to work with Bergstrom Architects to create a design that would be modern but filled with charm and atmosphere.

To say this has been achieved (and then some) might be an understatement, with the venue housing a bistro area that includes a large three-storey children's' playground, a kids entertainment room, seating for functions and an outdoor terrace that holds 100 people. In addition, the other side of the hotel includes a lounge bar that doubles up as a live entertainment area with a dance floor, a public sports bar with TAB, a gaming room with 18 machines, and a second entry. The bistro area has a dedicated bar and is open for breakfast, lunch and dinner seven days a week, serving all your gastropub favourites, while the Terrace offers a second dining space and is the place for year-round social activity and a place to view your favourite sporting or music events from an abundance of screens and state of the art audio. The Lounge Bar is the heart and soul of Huntlee Tavern and features a large selection of spirits and liqueurs, tasty cocktails and an unrivalled wine list; it's the perfect spot to celebrate with good food, wine and company. Still, Autumn has that special magical something – mountain and vineyard landscapes with hues of brown and red, cooler days and nights in front of warm, open fires, cosy restaurants and cafes serving up hearty dishes, welcoming cellar doors, and of course, the wine. What could be better? Change is everywhere at the start of Autumn and as the seasons change, so do many of our drinking habits. For many of us, the changing seasons come with changing preferences in wine. It might even be an excellent time to try something new. The cooler weather may be here, but that does not mean you need to stop sipping on a glass of your favourite Rosé. As a fantastic food wine, the versatility of Rosé is its standout feature as it can be paired with a wide variety of foods and flavours and handles spices and heat very well. HUNGERFORD HILL WINES 2013 Single Vineyard Hunter Valley Semillon, Blackberry Vineyard

Hungerford Hill's Blackberry Vineyard is home to 35-year-old dry-grown Semillon vines known for producing intensely flavoured fruit. This wine features classic regional lime-juice aromas along with lemon and jasmine, while the palate is spicy and flavoursome. You can expect rich complexity and exceptional body and weight, all of which will have you wanting a second glass before you've finished your first. Described as a 'glorious, semi-mature Hunter Semillon' by Huon Hooke, who also awarded it 95 points, the '13 Blackberry Semillon is drinking like a dream. PETERSONS WINES 2018 Shiraz – Mount View, Hunter Valley

Although 2018 was a tough vintage, we were able to pick a small amount of exceptional fruit off our most famous red wine vines “ Back Block “. These were planted back in 1971. TASTING Colour: Vibrant ruby red in colour with bright crimson and cerise hues. Nose: Wonderfully lifted, floral, ripe and soft. The upfront fruit aromas are of lifted and stewed red fruits of raspberry and cherry. This is supported by floral and herbal nuances of potpourri and mixed dried herbs. There are also gamey and savoury nuances and an underlying earthiness. The palate is mid weight, elegant, savoury, soft and dry. The upfront fruit flavours are of plum and juicy red apple. The mid palate is broad with spicy flavours and a slight smokiness. The back palate is elegant and clean with persistent natural acidity.
