Sires that are in the tank at Olson Family Farms include Doc, Logistics, Mitchell, Renegade and Donzino. Some of the herd is also bred to high type sires such as Analyst, Moovin, Undenied, Derby and Cadillac. The Holstein bug started for Rich and Eric at the Door County Fair in 1976 with project calves Barbara and Brenda. The Olson’s herd hasn’t always been registered, but Rich says once the Holstein Herd book opened up, they made the decision to take part in the upgrade program to get the entire herd registered. On their last classification this September, their herd had five

new Excellent cows. Their current BAA is 107.0. DJ-Purepride G C Iyana-ET, sired by Mr Chassity Gold Chip-ET, was raised to EX-92 and is their highest scored cow. The top 25 percent of the herd is bred to sexed semen and the lower 25 percent is bred to beef ensuring that the Olsons improve genetics from their top animals. Continual improvement on genetics and in production herdwide is a goal that Rich, Eric and Julaine strive for on the dairy. “We work for continuous improvement of the herd, our crops and our community. We are truly a family farm that has placed high value on being good neighbors and good people,” Rich says. Their production goal is 100 pounds of energy corrected milk per cow per day. The herd is currently achieving this goal and Rich and Eric have been working toward maintaining it. Reproductive efficiency and sound health protocols are also something they focus on to stay profitable. When Rich, Eric and Julaine aren’t farming, they like to show at the Door County Fair, District Holstein Show, Wisconsin State Fair and Wisconsin Championship Show. Zachary, Luke and Anna like taking part in these activities too. Community involvement is also important to the Olson family. They are members of the Southern Door FFA Alumni, Peninsula Pride Farms and are active at church. Eric is on the Door County Cooperative board of directors and Rich is the Fire Chief of the Southern Door Fire Department. The Olsons are true stewards of the land and have worked hard to set themselves up for future farming success. With their love of cows, use of technology and breeding program, they look forward to a bright future ahead.

Bacon-Beer Cheddar Stuffing Recipe from WisconsinCheese.com Ingredients • 16 oz. pretzel bread, cut into 1-inch cubes (9-10 cups) • 2 celery ribs, chopped • 1 large onion, chopped • 6 Tbsp butter, cubed • 1 cup beer • 1 lb. bacon, cooked and crumbled • 1 Tbsp. plus 1 1/2 tsp. minced fresh thyme • Salt and pepper to taste • 1 cup chicken broth • 1 large egg • 12 oz. Springside Beer Cheddar cheese, shredded (3 cups)

Instructions

1. Heat oven to 350°F.

2. Place bread in a single layer on two rimmed baking sheets. Bake for 15-20 minutes or until toasted, turning once. Cool completely on a wire rack.

3. Sauté celery and onion in butter in a large skillet over medium-high heat for 6-8 minutes or until tender. Reduce heat to medium; pour in beer. Bring to a boil; cook and stir for 2-4 minutes or until liquid is reduced to 1/2 cup. Remove from the heat. Stir in bacon and thyme. Season with salt and pepper to taste.

4. Whisk chicken broth and egg in a large bowl. Add bread cubes and bacon mixture; toss until well coated. Fold in beer cheddar. Spoon into a greased 2-quart baking dish. Bake, covered, for 30 minutes. Uncover; bake for 15-20 minutes longer or until top is golden brown. November 2021 – Wisconsin Holstein News – 9
