Personal Design Information Georgia Crockford is a Sydney and Newcastle-based interior designer who strives to create spaces that evoke excitement and sensation through the application of design principles. CLIENT
Proprietors: Louis and Anna Syrah Estate, a high-end luxury escape including accommodation, events, and dining experiences. Attracting established couples with an appreciation for luxurious indulgent settings. Designed and curated for guests to indulge in the charming vineyards, peaceful landscapes, and gourmet thrills throughout The Hunter Valley. Louis and Anna are the proprietors of 198 Old North Road, Pokolbin. They’re transforming their family legacy into a remote retreat which can be appreciated by guests. The design will reflect their personal style and concept, reflected through the preservation of the aged structural character combined with modernized interiors that to reiterate the contemporary cottage aesthetic. Louis and Anna are influenced by muted colours, natural materials, and the restoration of aged pieces. The restoration will help introduce warm and unique design elements back into the space. This reflects their character as a couple, reiterating their passion and values. The key value explored within the design is family and acknowledging the importance and significant of presence, connection, and communication. Drawing focus towards aged charm, history, and modernization, exploring the characteristics of the surrounding atmosphere. An emotive, tactile focused design praises and establishes the disposition of individual spaces, producing enlivening social atmospheres. The heart of the high end, luxury 5-star restaurant is Sam Aisbett, a renowned overseas based Australian chef. The space will reflect his established branding as well as celebrated cooking methods. Notorious for his unique cuisine, combining transitional seafood with modern Japanese. Aisbett will bring warmth and luxury to the property through his exceptional dishes. Sam Aisbett said: “I want my food to not be confined by trends or geographical boundaries and influences take form of all cultures across the globe”.

198 Old North Road, Pokolbin 198 Old North Road is a rare gem located in the heart of the Hunter Valley Wine Country. Positioned on 25 acres of rolling countryside, featuring an established winery and panoramic views of the majestic Brokeback Range. Surrounded by prestigious private estates, vineyards, and world class restaurants. The is an opportunity for individuals to experiences the unmatched lifestyle that the Hunter Valley offers. The main house features four bedroom and two bathrooms. Revealing existing pitched timber ceiling and the warm aged fireplace. The property revels in the beauty of floor to ceiling glass windows that bathe the interiors in natural light while additionally offering unparalleled view over the estate. The residence is considered a pile dwelling, as the front half of the house was raised on stilts to create a level surface. The main residence will undergo demolition to any unnecessary wall or partitions, creating open blank canvas. Adding to the charisma of this property is two charming cottages, radiating a traditional country house atmosphere. Featuring the existing lining boards and polished timber floorboards. The cottage provides guests with an ideal setting to saver the glorious sunsets with a glass of the estates finest red wines. The cottage currently offers three bedrooms with two bathrooms. The cottages will be transformed in country styled bungalows. They will be reduced to two bedroom, two bathrooms with a small kitchen featuring necessities. Although they will be reduced in size, they will
increase in quantity, to cater for more guests. Relax and unwind in nature, indulge in all the activities the escape has to offer and enliven in the inground pool which is attached to the main residence. Embrace the serenity and be surrounded by natures finest. The rural location experience limited transportation options once you have reached the destination it’s easiest for visitor to hire a car or arrange bus transportation. For winery tour it’s also possible to hire bicycles and pedal to wineries. Pokolbin is a highly desirable suburb with prevalent restaurants and accommodation sites which creates an anticipated luxury escape destination. The sun position at 198 Old North Road, Pokolbin rises in the East, during the day the sun will rotated left passing through the north point and sets in the west. Insight Into The Design Transform the existing residence into a contemporary restaurant, inspired by an internationally recognised Australian chef. The design must uniquely reflect the established values and aesthetic of Sam Aisbett. Introduce accommodation, catering for individuals that are visiting the estate. Create a unified and connected atmosphere through materiality, colour, and form. The design proposal for the restaurant and accommodation is to explore the present heritage and surrounding environment. The design must reflect the bordering prestigious private estates, vineyards, and world class restaurants. The design must feature dining, socialization and restoring zones for guests to flourish and rejuvenate. The project will maintain sustainable practices and display locally sourced materials and furnishings, reflecting upon Australian culture and natural landscapes. Drawing focus to the functionality of the space as it will attract, embrace, and serve the developing range of guests. Explore texture, creating exclusivity through arrangement, line, and shape. Maintain Sam Aisbett 5-star rating and reputation. The scope of work includes main reception, lounge seating, bar, dining, commercial kitchen, bedrooms, bathrooms, amenities, and parking.

The Modernised Country Life Syrah Estate will transport you into the surrounding countryside through decadent food, exquisite wines, and irresistible atmospheres. Uncover the world of luxury revealed through this elegant escape, a destination winery and restaurant where individuals can recharge and disconnect from reality. Chef Sam Aisbett’s established practices and aesthetic are represented through the creation of an immersive fine dining experience located in the heart of the Hunter Valley surrounded by decedent vineyards. Relax and unwind in nature, enliven in the inground pool, and appreciate the hand-crafted food and wine. Entwining the opulent Australian outback with a modern, minimalist aesthetic, the Syrah interior design embraces the emotive and physical characteristics of the estate. The materiality generates an immersive experience that will enhance nature, texture, and warmth, intently connecting and honouring the heart of the property. The desaturated tonal hues will stimulate calmness, radiate elegance, and explore refinement with bursts of colour throughout the space in tints and shades of dusty pink, golden yellow and eucalypt green. Embrace the serenity and be surrounded by nature’s finest.

Restore Restoration is returning something to its former, original, normal, or unimpaired condition. Restitution of something taken away or lost, Something that is restored, refreshed, rejuvenated, renewed, and reconstructed. Transforming back into its original state or form after depletion or loss.
Criteria
Encapsulation Of The Design Details To satisfy the requirements presented in the Fifi Estate brief, this design must incorporate the existing structure with modernised elements. Integrating warm tones and texture complemented by minimalist characteristics. The existing residence will feature innovative spatial layouts, creating a functional space which accommodates for property requirement and restrictions. The main residence will remain and undergo minor construction to develop an open plan layout and irritate the improved design aesthetic. It will incorporate a commercial grade kitchen, bar, multiple dining areas, outdoor balcony, reception, and bathrooms. The two charming cottages will experience extensive renovation to transform them into modern country accommodation. They will be reduced into twobedroom, 2-bathroom villas, featuring a mini kitchen and outdoor balcony. The overall number of cottages will increase to 5, exploring the concept of a modern country bungalow hut. The property will utilize the stunning rural property lifestyle with panoramic view of the majestic Broken back Range.
Overall, the design program will explore open plan and luxury. Stimulating relaxation, coziness, and warmth through the materiality as well as the surrounding atmospheres. The design will draw focus to natural lighting, nature, and materiality. The main residence will explore the use of texture through the incorporation of highly tactile materials. The bungalow hut will feature old country character combined with modern minimalistic aesthetic. The concept of contrast is considered throughout the design as the property explore a variety of different atmospheres which complement and enhance the overall design inspiration. The design will explore and incorporate unique furniture, materiality, and high-end appliances. The exterior structural façade details will be unchanged, but the appearance of the property will be updated to complement the interiors and design concept. Restoring the gardens, paint and pool will ensure the facilities are suitable and safe for guests. The residence will include a reception, staff quarters, commercial kitchen,
bar, dining zones, outdoor dining space and a bathroom. The property will include accessible points and analysis flow of movement throughout the space. The outdoor balcony will be developed into a wraparound viewing platform, for guest to enjoy the panorama view of the majestic Broken back Range whilst dining. The properties will explore a consistent design, referencing Axel Vervoordt personal design philosophy. Throughout the design it will explore highly tactile materiality. The colour palette explored features neutral tones, complemented by nature. The general atmosphere of the design is a luxury escape, reflecting the luxurious unparalleled living experience.
Materiality Exploring The Materiality
Surrounded by rich, luxurious stone, such as travertine, sandstone, and marble. Referencing Australia’s natural landscapes. Australia’s landscape is dominated by the Outback, a region of deserts and semiarid land. The earthy tones have an immediate soothing effect on your soul. The stone features unique characteristics which reflect the journey of creation, exploring individuality and distinction. The connection between the interior and exterior creates a unified design style. The design will utilize the structural integrity and raw organic look of concrete to achieve a minimalistic style. Softened by drapery, hearty timber, and warm tonal furniture. Tactility and visual stimulation are the evoking senses throughout the design. Harnessing tactility with the space is integral in creating a comfortable, soothing, and tranquil environment. Engaging visually triggers specific feeling and emotions, meaning the atmosphere can be regulated by materials. The combination of textures and colours must evoke and stimulate the desired emotions to achieve the required atmosphere. Introducing luxury minimalism, combining historical element from The Hunter Valley and site which inspired the interior atmosphere. Warming timber beams references the properties history as an aged winery.

Australian products are manufactured to a high standard and are typically finished to a higher quality. In addition, the manufacturing workplace environment must comply with Australian health and safety, environmental and labour law, which ensure the production reaches standards requirements.

The furniture selected will explore colour, texture, and shape. It will commonly be featured in tonal shades of brown, with contrasting pops of white. Intergrated Interior Fixtures The fixtures explored throughout the restaurant as well as the cottages will be Australian made and sourced products. The products will be contemporary and radiate luxury. They will be throughout the project to add detail, sophistication, and practicality. The design will feature matte black hardware with pop of brass finishes throughout to contrast and evoke visually interest.

The hardware fixtures incorporated throughout the project will be sourced from LO & CO Interiors. They’re an Australian based hardware supplier, creating unique and abstract form from a range of different metals as well as textures. Creating timeless hardware with functional purpose, whilst ensuring continual reference to emerging design trends. The products are made using the highest quality materials and craftsmanship. The Light fixtures will explore a variety of colour, shapes and forms which complement the design. Incorporating a range of texture and materiality, ensuring the design remain consistent. The lighting fixture will be complete with a warm natural light bulb to reiterate the warmth reveal throughout the surrounding environment. The fixtures sourced will be strictly Australian designed and made to honour the heritage of the estate.

Zoning DiaGram Layout, Functionality and Movement
This Floorplan iteration explores semi open plan with additional walls and partitions to create zoning of spaces. The layout is effective, separation between greeting, seating, and dining. The functionality of this layout flows smoothly and creates cosy atmospheres which will be appreciated by guests. The flow of movement throughout the space is transitional, each door way transporting individuals into distinctive zones. This layout considers the entry and accessibility to the outdoor deck, incorporating multiple entrances which reiterates the consistent functionality of the design. Floorplan Iteration 2 embodies the environment and utilize the space to its fullest potential. The floorplan will be explored further throughout the design process to create the ultimate layout, with desired zones and effortless flow of movement throughout the interior as well as exterior. The exterior deck could benefit from the inclusion of a grand staircase which transports guest to the pool, nature, and the Estate winery.
