from the editor For some time now I’ve come to realise that as a family-run magazine, we don’t sing our praises enough. We devote our time into promoting Swansea’s latest ventures, so we forget about ourselves. Which is why this year I’ve decided I’m personally aiming for the accolade of Best Young Tourism Ambassador in the Swansea Bay Tourism Awards. But I need your help! ark Jermin and his theatre school for young people have become quite the household name in the entertainment industry. From humble beginnings, the stage school now has a 27-year reputation of producing the next generation of actors, performers and industry professionals in south Wales. “With the ever-growing cuts to drama and music in the current curriculum, it is more important than ever for parents to support their children in the arts,” says Mark Jermin. Classes are catered to various age groups and are fun sessions covering music, drama and dance - all led by a team of inspirational teachers. “We are proud to celebrate diversity and offer scholarships to families who would benefit from our classes. Plus, every new student can attend one class completely free to ensure that they enjoy it before signing up for a term of musicals and mayhem,” adds Mark. As well as weekly classes, the schools have a host of incredible performance opportunities, equipping students with the tools and knowledge for a long-lasting professional career in the industry. “Whilst not every student wants to be the next Catherine Zeta Jones, we are proud that many of our students have gone on to brilliant careers in politics, law, Head of Wardrobe casting for West End shows Wicked and Phantom of the Opera.” Examples of recent student successes include: Liwsi Killcourse - voiced a BBC Radio comedy; Seren Medi Davies - secured a huge project with HBO; Danny Haywood is now starring as Billy in the hit West End musical, School of Rock, and Evan Wells and Ethan Wilkie starred in the newest EE commercial alongside Kevin Bacon. With eight branches from Llanelli to Penarth, their Elite Academy, and a close partnership with Mark Jermin Management, students have unlimited opportunities to work with major production companies. This September, Oystermouth Castle will be taking part so you can explore the medieval grounds without spending a penny. and all that jazz Swansea’s talented musician Laurence Cottle has had an illustrious career across the globe; here he tells Holly Hughes about his upcoming performance at the International Jazz Festival.

I hear music runs at the core of your family… I was one of three brothers who helped our father (a pianist) in his variety act. We were all encouraged to play the piano, and also to take up a second musical instrument; I chose the trombone. My Dad realised that his growing family had the necessary instrumentation to set up a traditional jazz band, and so throughout my early teens we toured Wales and the west Midlands. When did you first fall in love with the bass guitar? When I was 15, my father decided that he wanted to switch the band to a dance band rather than a ‘trad’ band, and that’s when I first picked up the bass. The Laurence Cottle Big Band is an impressive 16-piece all-star arrangement. How would you describe your sound? My sound has many influences: during my time living in the USA, I would hear big bands like Thad Jones/Mel Lewis Orchestra and Bob Brookmeyer in New York, and Bill Holman, Clare Fischer and Shorty Rogers on the West coast. I loved the funk sound from the Bay area; be-bop was my staple diet for many years, as well as the fusion movement.

You’ll be bringing your Soul Vaccination tour to the festival. How do you keep the tracks fresh and relevant? Tower of Power's message is still the same after 50 years, dynamic and distinctive soul music, performed by exceptional musicians, grooving as one and spreading the funk message.

What different jazz genres can we expect to hear at the festival? Well, Swiss guitarist Nicholas Meier adds diversity with his original Turkish compositions, best described as world music. Swansea guitar legend Ray Taff Williams provides the R&B, and French violinist Daniel Martin will be adding some Stephane Grapelli-style swing! Who are you looking forward to watching perform at the festival? UK jazz saxophonist Alan Barnes is one of my favourite musicians! He’ll be opening the festival with his All-Star Octet. I’m also hoping to hear the Dutch band Tristan with their soul and funk set. What advice would you give to aspiring musicians who are trying to turn their passion into a full-time career? If someone has the passion for this, there's nothing that will stop them from developing into an incredible musician. I would suggest having a diverse set of skills within the industry as there are so many brilliant soloists and not enough gigs for everyone. 

The stage was poised for the legend that is DJ Pete Tong himself and the impressive 65-piece Heritage Orchestra conducted by Jules Buckley. Sun setting, strobes and synths ready: Tong jettisoned his set with Fatboy Slim's iconic Right Here, Right Now - the audience was ecstatic. The set took us through a journey of iconic beats from Sébastien Tellier’s 2004 La Ritournelle, the hyped beat that is Swedish House Mafia’s 2010 hit, One (Your Name), to Candi Staton’s heart-warming You Got the Love.

My personal highlight was the moment that fiesty Becky Hill made a guest appearance as she bounced on stage in a lilac sequin ensemble. Her raspy vocals coupled with the dynamism of the Heritage Orchestra threw a new spin on 1993’s Show Me Love by Robin S. Half way through it did all go ‘Pete Tong’ as a bizarre power cut stopped the party for ten minutes; but it didn’t dampen our spirits. Tong chuckled as he bundled back on stage admitting: “S*** happens!” The gig brought a diverse 12,000 crowd together to share a joint love of electronic dance music. The evening ended in raptures of frantic energy as The Prodigy’s Out of Space left the crowds high on life. HOLLY HUGHES

jess glynne | 28/07/2019 You could say that my ears are biased, but Jess Glynne’s summer concert at Singleton Park was the best night of the season for me. The weather co-operated for the delightful open-air performance. Once Jess appeared on stage, the thousands of people in the crowd stood up and participated from the first chord, right until the very last beat of a drum. Along with the audience, the musicians seemed to also be enjoying themselves and her vocalists’ harmonies were otherworldly. Jess Glynne performed a number of her classic charttoppers like Hold My Hand and Rather Be, along with some of the amazing tracks from her sophomore album Always In Between. When the time came for Glynne’s soulful performance

of her power-ballad Take Me Home, the audience interposed in complete harmony, bringing the performer to tears; Glynne was touched by the recognition of the audience who acknowledged her work as a musician and performer by endlessly singing along with her. My personal highlights? That’s a tough question having being a fan of Jess Glynne from the moment she debuted. Glynne’s performance of Take Me Home moved me to the point where I could no longer sing along and surrendered to my emotions. On a more upbeat note, I thoroughly enjoyed the groovy Rollin, one of my favourites from her second album. All in all, it was a night to remember and I can’t wait to see what earworm sensations Jess Glynne releases in the future. STAVROS APOSTOLOPOULOS 

Mike Jones was raised in a thriving, Welsh speaking, coalmining and farming community in Godrergraig, Swansea Valley. Influenced by his upbringing and the hard working people of Swansea Valley, Mike has gained a reputation for his evocative portrayals of the post-industrial south Wales landscape and its people. After a successful career as an architect, Aled Prichard-Jones then returned to his home in Bangor Gwyned in 2000 where he took up painting full-time. Since childhood he has walked, climbed and loved the mountains of Snowdonia. The majority of his paintings are inspired by the sense of place and atmosphere of the Eryri landscapes. Swansea-born Alan Williams is a co-founder of the Swansea Print Workshop, a major source for the south Wales arts community. After gaining a BA in Graphic Art, he then discovered printmaking in the 1990s. swansea stories Sun 29 September - Sun 15 March Opening party | Thu 26 September | 6pm - 8pm In this, the year that Swansea celebrates its 50th anniversary as a city, Glynn Vivian Art Gallery presents Swansea Stories, the largest selection of the Gallery’s permanent collection ever displayed! The Gallery’s collection includes works from the 18th century to contemporary acquisitions, and presents an eclectic and unique portrait of the city: the changing landscape that has inspired artists for centuries, from the steep hills of the city centre to the surrounding landscapes of Townhill, Mayhill, Mumbles and Dunvant, to our beautiful coastline. The exhibition, which has been supported by a grant from the Arts Council of Wales, is loosely themed into two main sections, Swansea People and Places and Swansea Favourites. Swansea People and Places includes portraits of the rich and famous such as opera singer Adelina Patti, poet Vernon Watkins and past Lord Mayors, to its workers such as miners, cockle-pickers and dockworkers - and even our very own beloved dog, Swansea Jack. Swansea’s streets, its beautiful coastline and its industry will also feature, from agricultural landscapes to the bombing of the city centre during WWII. Swansea Favourites displays a collection of popular works which visitors to the Gallery have asked to see most often. In this section, the Gallery celebrates some of the most famous works by internationally renowned artists such as Gwen John, French impressionists Claude Monet and Lucien Pissarro, and a papier-mâché portrait of Diego Maradona made by over 100 children from Penlan School in the 1980s. Swansea’s multidisciplinary artist Liam Dunne’s latest exhibition explores human relationship with power. His focus is on the wide-scale complexity of subjects in a multi-layered way, forming, as he puts it, a ‘Visual s***storm’; in this way he uses a visual vocabulary to address many diverse social and political issues.

Football Will Steve Cooper's Swans finally find some stability? Swansea City has returned to action with former FIFA World Cup u17 World Cup-winning coach Steve Cooper. Cooper will look to instil a bit of calm around the Liberty Stadium after a hectic summer, which included the departure of Alfie Potter to Premier League outfit Brighton & Hove Albion. The Swans will be going for promotion, but as the American owners continue to suggest, the primary aim is to balance the books without further relegation. Basically, the team need their fans more than ever. On Sat 26 October (subject to change), we finally see the return of the iconic south Wales derby: Swansea City vs Cardiff City at the Liberty. Last time the two faced in Swansea, the Jacks came out 3-0 winners. That was back in February 2014, when now-Manchester United coach Ole Gunnar Solsjkaer was in charge of the Bluebirds. How times have changed! Expect a fierce atmosphere for the return of the derby. The Ospreys are back in action in September, but you’ll definitely not be seeing Alun Wyn Jones, new signing Gareth Anscombe, George North, Dan Lydiate, Justin Tipuric or Adam Beard in action until a bit later on in the season. That’s because Wales will be fighting it out to win their first

World Cup crown and round off an excellent year after Grand Slam glory in the Six Nations earlier this year. The World Cup in Japan, starting on Fri 20 September, presents a genuine opportunity for Ospreys’ stars to return to the Liberty Stadium as heroes. For now, the Ospreys can get their Guinness PRO14 campaign off to a solid start. Fixtures include: Treviso (Sat 12 October) | Connacht (Sat 2 November) | Southern Kings (Sat 9 November)

Fitness and Endurance Go and watch someone do something spectacular! Fitness lovers can look forward to some brilliant local events over the 10K and half marathon season. On Sun 22 September, we see the return of the Admiral Swansea Bay 10K, a beautiful journey down Swansea’s unbeatable bay seafront. If you’re not running, it’s a fantastic opportunity to volunteer or create an unforgettable atmosphere for the runners. Then we have the Mumbles Triathlon on Sat 28 September. Expect plenty of the Mumbles’ locals to turn up in their droves and support the athletes on their momentous journies. On Sun 6 October, the UK’s second biggest half marathon returns; the Cardiff Half welcomes elite runners expected from all over the globe. If 13.1 miles isn’t enough, then how about around 46? The Brecon Beacons Ultra Marathon on Sat 16 November doesn’t do half measures. The event is back for its eleventh year, this year including a trail marathon which includes an extraordinarily difficult climb of Pen Y Fan. The 46-mile Ultra isn’t for the fainthearted, so get down there and support the runners. 

 Craft PVA Glue 300ml  Elmer's Magical Liquid Slime Activator 259ml  Polystyrene white beanbag filling  Assorted googly eyes  Any kids’ green paint  Halloween brain mould or bowl of your choice

method 1 Begin by filling your bowl with approx. 130 ml of PVA glue. 2 Add your colours and embellishments; squeeze in some paint, and mix with a lollipop stick

until you reach your desired colour. At this point, you can also mix in any embellishments you want to add such as polystyrene filling, googly eyes, or skull beads. 3 Pour approx. 65ml of Elmer’s Magical Liquid Slime Activator and combine until the mixture becomes harder to stir and slime begins to form. The 259ml bottle of Elmer’s Magical Liquid Slime Activator should make four batches of slime. After a while, it will start to thicken and begin coming away from the sides of the jar. When it starts to come away cleanly from the sides of the top half of the bowl, it’s time to get your hands in there! 4 Pour the slime out into your hands or on a wipe-clean work surface. Use your hands to manipulate and massage the slime - the more you work it, the less sticky it becomes and the more it sticks to itself. It is ready when it no longer sticks all over your fingers. 

2 Next, create your bandage lines with the same black brush pen. Draw lines across the forehead, cheeks, chin and nose and leave to dry.

3 Finally, you just need to take a white brush pen, twist it up and get to work filling in the bandages. It’s super easy and very effective.

The house provides ample space if you want some ‘me time’ with a separate family room with Sky TV and additional conservatory/playroom. If you’re feeling peckish, Langland’s Brasserie is just a few minutes walk from the property and is open daily for breakfasts, lunch, dinner and coffee and cake. You may want to pre-book in time for next summer as the property also features a heated swimming pool with a secret garden and lawned area leading to the pool house, with a changing room and wet room with shower cubicle and WC. There’s also a small courtyard with a full-sized

Clusters working together for a healthier you There is nothing splendid about working in isolation when it comes to your health and well-being.

F

ortunately, there’s been a shift in direction within the Swansea Bay area in how people access healthcare and advice, with a growing number of services now available in community settings. Teamwork is at the heart of this transformation, with your GP practice working closely with neighbouring surgeries, community nurses, dentists, opticians, pharmacists, volunteers, local authorities and others. These are known as clusters and they aim to provide care that is better coordinated, and which promotes the well-being of individuals and communities. Clusters bring together all local services involved in health and care across a geographical area, typically serving a population between 25,000 and 100,000. In Swansea Bay (Swansea and Neath Port Talbot) there are eight clusters. Clusters work together to:  Prevent ill health, enabling people to keep themselves well and independent for as long as possible  Develop the range and quality of services that are provided in the community  Ensure services provided by a wide range of health and social care professionals in the community are better coordinated to local needs  Improve communication and information sharing between different health, social care and voluntary sector professionals  Help closer working between community-based and hospital services, ensuring that patients receive a smooth and safe transition from hospital services to community-based services and vice versa.

Working in clusters allows economies of scale and a more cost-effective method of hiring additional health care professionals. This means your GP practice can now offer extra services as part of a group, which they couldn’t have as individual surgeries. Work has already begun recruiting healthcare professionals including: pharmacists; physiotherapists; social workers; paramedics; physicians’ associates; occupational therapists; mental health counsellors; dieticians; third sector workers, and other local authority staff. These extra staff can often provide you with appropriate alternatives to GPs, which can result in you having shorter waits to be seen. It also frees up GPs to see sicker patients. An excellent example of this is the Penderi Cluster where a new Primary Care Child and Family Well-being service resulted in more than 700 GP appointments being saved. And patients love it - 100% of families

To help make these changes, the Welsh Government has set aside a £100m Transformation Fund to support key actions from its long-term plan for health and social care, A Healthier Wales. Dr Iestyn Davies, the Cwmtawe Cluster lead, welcomed receiving a share of this funding saying: “The investment will really help us restructure and modernise the way we offer care to patients. “We are delighted that the Welsh Government recognises our vision for patient-focused primary care, which has a strong emphasis on supporting our communities and working with them to help keep people well. “This investment will allow us to expand our multidisciplinary teams, giving patients better access to a wide range of healthcare professionals in their community, and bring some services traditionally accessed in hospitals closer to home.” 

When did your passion for cooking begin? My passion developed from a young age; even as a young boy I’d help my grandmother in the kitchen. Then, when I was 16 I trained in culinary college in the British Army - invaluable experience!

First job in this industry? My first job was working in the French Foreign Legion where I qualified as a professional chef.

Where might we know you from previously? I’ve worked with Adam Bannister [Slice, Swansea] who represented Wales in BBC’S Great British Menu. People may also know me from Eleo’s which used to be on the Kingsway - it’s where I developed my knowledge of Mediterranean flavours. What attracted you to Castellamare? Location, location, location! I’ve been here six years now; after a busy shift, I relax looking out over Bracelet Bay with a glass of wine. It’s when I come up with a lot of my new dishes. The variety of fresh local produce from Gower provides inspiration in itself and I take pleasure in making our own fresh pasta.

Talk me through a typical day as head chef… After I’ve dropped the children at school, it’s straight to work organising the kitchen and staff; it’s then paperwork, preparation and service - it’s a long day, but I enjoy every moment.

It had been quite a while since I’d dined at La Parrilla Parrilla, so I took a jaunt to Mumbles for an evening of Mediterranean fine dining.

a Parrilla is king of the Oyster Wharf complex, accessible roadside next to Co-op. As you step inside the downstairs reception and bar, there’s an immediate feel of grandeur; a lift takes you up and away to the restaurant in the clouds with an otherworldly 270° view of Swansea Bay. The night got off to a great start as I was greeted, to my surprise, by my favourite host Santiago (aka Sante). He’s worked in many of Swansea’s finest restaurants and always puts a smile on my face. For a Tuesday evening at 7pm, it was surprisingly busy. As Sante walked us to our table, he commented: “I’ve never worked somewhere with so much natural light.” The family trio of restaurants which include La Brasserie and La Parrilla, SA1 have a Spanish influence. As such, La Parrilla has a superbly collated wine list with an average large glass costing £5.95. As you order at the counter, you’re able to chose from the variety of fresh seafood on display. Delicious starters include Andalusian-style calamari, homemade hummus and olives, pan-fried scallops and home-made meatballs. But I stuck to my La Parrilla tradition of a salad starter (£3.95) where you can create your own concoction at the salad bar. My personal favourite is the potato salad with kidney beans in a mild vinaigrette - a recipe which hasn’t changed since I first sampled it as a little girl. I also ordered a side of garlic bread (£3.95). But this isn’t any ordinary garlic bread - this is lovingly oven-baked and basted with a rich garlic butter creating a heavenly mouthful. Swiftly on to mains: you can select from the à la carte menu or the cheeky two-course set menu for £17.95 (available Mon-Thu). The lunchtime equivalent at £13.95 (available daily) provides excellent value. Popular mains include salt-baked cod, dover sole, rib-eye and fillet steaks, but the grilled Spanish-style chicken skewers caught my eye; what arrived were four plump, delicately spiced chicken skewers (£14.50) served with a smooth homemade aioli sauce. I simply couldn’t finish it all. Despite the large portion, the quality was by no means compromised - all produce is sourced locally from top suppliers. My dining partner chose the baked fillet of hake (priced on weight) which was flaky, moist and flavourful. On my next visit, I’d try the vegan slow-cooked sweet potato and chickpea tagine. Despite being full as a hog, I couldn’t resist the dark chocolate fudge cake (£5.95) which was velvety and oozing with ganache. Enjoyed with an Americano, I slowly sank into my seat watching the sunset. These are exciting times for La Parrilla with investment in a new top team and plans to enhance the rooftop dining experience. HOLLY HUGHES 

his decadent dessert will get all the family drooooling. With rich chocolate brownies and chocolate custard, it’s every chocoholics dream. This moreish concoction is perfect whether you’re organising a sophisticated Halloween party with friends or a fun treat for the kids after trick-or-treating. But you might want to leave the kirsch out of the kids’ version or they’ll really have a fright!

graveyard trifle ingredients For the brownies

 200g butter  300g golden caster sugar  2 tbsps golden syrup  200g plain chocolate  50g milk chocolate  4 eggs  2 tsps vanilla extract  200g self-raising flour  4 tbsps cocoa powder

For the chocolate custard  600ml milk  100g caster sugar  4 egg yolks  1 tsp vanilla extract  8 tsps cornflour  4 tsps cocoa powder  100g 70% dark chocolate

For the meringues  4 egg whites  230g caster sugar

method For the brownies 1 Heat the oven to 180C/160C fan. Grease and line a roasting tin. 2 Place the butter, sugar, syrup and chocolate in a saucepan and heat gently until melted and lump free, then remove from the heat. 3 Break the eggs into a jug and add the vanilla - mix lightly. 4 Add the flour and cocoa powder to a bowl with a pinch of salt; add the chocolate mix and stir, then fold through the egg mix. 5 Once combined, pour into the prepared tin, then cook for 30 mins. 6 Once cooked allow to cool completely in the tin.

For the chocolate custard 1 Heat the milk in a pan until almost boiling; in the meantime, add the yolks, vanilla, sugar, cornflour and cocoa powder to a bowl and mix to a thick paste. 2 When the milk is hot, add to the bowl slowly whisking the entire time, then transfer the mix back into the pan and heat over a low heat whisking continuously until thickened. 3 Remove from the heat and stir through the chocolate until it is melted and leave to cool completely.

For the meringues 1 Whip the egg whites until frothy, then add the sugar 1 tsp at a time until stiff peaks are formed. 2 Pipe the meringue into bone, hand and ghost shapes; if you don’t have a piping bag, you can use a zip-lock bag with the corner cut. 3 Cook on your oven’s lowest temperate for 60 mins, then switch the oven off and open the door slightly and allow the meringues to cool completely in the oven - these can be made the day before.

to assemble 1 The night before, open the tin of cherries and drain, reserving the syrup. Cut the cherries in half and remove the stones. Put the cherries into a bowl and add the kirsch and some of the syrup; cover and leave overnight (leave out the kirsch if not using). 2 Blitz the bourbon biscuits in a food processor, or bash with a rolling pin inside a zip-lock bag. 3 Cut the brownies into squares, put a layer in the bottom of the trifle dish. 4 Spoon over some of the cherry/kirsch liquid (if not using the kirsch just spoon over some of the cherry liquid). 5 Then add a layer of cherries, then a layer of the chocolate custard. 6 Place the meringue bones around the outside of the trifle dish, then add a thick layer of the biscuit crumbs. 7 Repeat the layers one more time, ending up with a layer of the biscuit crumbs. 8 Decorate with more bones, ghosts and hands sticking up through the soil.  Check out Katie’s YouTube channel, Katie, a home cook for more step-by-step recipes. www.katiehomecook.com

Swansea-based vegan food enthusiast and writer Sarah Philpott shares a divine recipe from her latest cookbook, The Occasional Vegan.

N

ow that eating plants is pretty cool, some clever cooks have discovered that pulled jackfruit has a pretty similar texture to meat, making these tacos a superb vegan alternative. They’re also deliciously moreish and easy to make. You should be able to find jackfruit in international food shops, but if you come away empty-handed, you can use refried beans, or even chickpeas - just mash them up a bit first.

tacos with pulled jackfruit (20-25 minutes)

Serves 4 (will make enough for three tacos per person) ingredients  2 x 400g cans jackfruit in brine  1 medium onion, sliced into thin slices  2 cloves garlic  1 tsp cinnamon  2½ tbsp maple syrup  juice of 1 lime  1 tsp smoked paprika  ½ tsp chilli powder

 150ml water  1 tbsp olive oil  1 packet of tacos

method 1 Rinse the jackfruit thoroughly, then drain and rub it between your fingers until it breaks apart and becomes stringy. Don’t throw away the edible stems and seeds chop them up and add to the rest of the fruit. 2 Over a medium heat, fry the onions and garlic in olive oil for about 5 minutes, or until they are browned. 3 Add the jackfruit, water, maple syrup, lime juice and spices and stir. 4 Add the water, stir, cover with a lid, then simmer for 15 minutes, stirring occasionally. 5 Heat the oven to 180C and place the taco shells on a large baking tray. Bake for 3-4 minutes, or according to packet instructions. 6 Then simply fill each taco shell with some pulled jackfruit. Serve with guacamole, vegan yogurt or soured cream, coriander and lime wedges. 
