SUMMER DREAMIN’ It has been over a year since I began working with Well FED. I feel like this is a perfect time for an employee evaluation report … so here it goes!

THE WELL FED

Working with Well FED has been a dream come true for me. As someone who believes in the universal laws of attraction, I know that I created this position for myself. For years, I have used the mantra/affirmation as my positive statement of intent, ‘I attract cool people to co-create financial abundance using our skills and talents enjoyably!’. I said this affirmation all of the time so when I started to feel low while looking for work or working jobs that I didn’t like, I would remind myself that this is only temporary. If I stayed aligned with what makes me feel good and continue to take action on my intentions, I will see results. Right now, I am grateful to be living my affirmation, ‘I work with cool people to co-create financial abundance using our skills and talents enjoyably!” I get to do this every day with the magazine by creating articles with our writers and through coordinating monthly ads with our advertisers. A big Thank you to our advertisers!! The other aspect of my job that allows me to work with cool people is Well FED Events. I have helped with two Earth Day Festivals and 1 Food Day Festival which have been a blast to work on. The vendors and exhibitors at these events are people who also believe in the power of taking action to create the life they wish to have. The beautiful thing happening in Savannah right now is many of us share the similar vision and we are willing to work together to make it happen. And it is happening! If you want to see it happening, I invite you to check out the Savannah Bazaar this month. The Bazaars are monthly mini-version of our other events. We have about 30 vendors each month and food with a different theme. There is an amazing energy when you are around people who are living their dreams - even when they have to do other jobs while building their business. ou could say that Read Nichols is a bee man, plain and simple. That’s easy. But from my eyes, I think bee whisperer, magician, creator and spinner of sweet gold. Of course, that’s an awfully fancy way of saying that Nichols has a refined trade. He is a beekeeper, owner of Readees Bees, one of the most well-loved, innovative honey suppliers in Savannah. He is the keeper of the gold and now he is mobile! Nichols has the first mobile extraction trailer of it’s kind in the state of Georgia which is also certified by the Georgia Department of Agriculture. While he has been in business for about eight years, he’s really been a beekeeper all his life. He and his father used to run a bee farm in West Virginia and he’s considered himself a beekeeper since childhood. But it wasn’t until June 2008, after a swarm of bees gathered on a backflow preventer on Hunter Army Airfield, that Nichols took the swarm and placed them in a hive on his property. One hive led to another and before long, people were knocking on his door for a taste of the sweet stuff. Nichols will tell you that he never expected it to get this big. “I’ve met so many people...it’s not a dream, but an adventure come true. I never thought it would get this big.” Nichols’ hives are located deep in a secret spot in Hardeeville but I was lucky enough to be extended an invitation to his home out on Wilmington Island where he extracts and bottles the honey. Located on the picturesque back river, it is a quintessential southern dream locale.

Did you know? Honey does not spoil! If it is kept moisture free and the lid sealed tightly between uses, it can last a lifetime.

On the property also stands, an original cabin, fig trees, and views of the marsh which seem to go on forever. Nichols used to keep the hives on his property, but had to move them due to the spray that the county releases during the “muggy buggy season.” And while it may stave off irritable critters and mosquitos, it unfortunately also wipes out bees. “I’d put something on Facebook about how it was hurting my bees and the county would call me and be like, Read, what are you trying to do? “ he recounted, showing me videos of the helicopters spraying over his neighborhood. “I’d tell them, Well, I’m trying to let you know you’re killing my bees.” Nichols finally decided it would be easier to move his hives to a location that was protected, somewhere he knew they wouldn’t spray. “I wish I could still have them here, but it is what it is.”

The Buzz about Bees Bees pollinate 80% of the world’s plants including 90 different food crops. 99% of the bee colony is made up of female bees known as worker bees. An average worker bee produces about 1/12th tsp of honey in her lifetime.

What did come of the move was the mobile extraction trailer. Nichols is able to hitch it to the back of his truck and go on location, which makes the process of hauling full frames a bit less arduous. He takes me through the entire process: Uncapping the frames with a roller, rather than a knife--”you lose honey that way,” he tells me. He then loads each frame into the extractor, spinning the frames using centrifugal force to get all the good stuff out--and friends, there’s your physics lesson of the day. Next, he filters the honey, straining any wax-- to the detriment of few bees which are sacrificed to the cause. Finally--and what we have all been waiting for--the release. Nichols opens the tap and out pours the golden batch. Witnessing the entire honey extraction process was quite hypnotic to say the least. -Continued on Next Page WELLF EDSAVA NNA H. C OM | 11

SAVE THE BEES! 1. Plant bee-friendly flowers and flowering herbs in your garden and yard. Bees are losing their habitats all over the world due to many things--what helps is a yard full of plant varieties--cosmos, black-eyed susans, honeysuckle, bee balm, lavender--these are just a few of the flowers and herbs bees love. 2. Weeds are a good thing. Despite what your momma might have told you, letting your lawn grow out and fill up with clover is prime for bee appetites. What folks often classify as weeds are often where bees get their nutrients. 3. Get rid of the herbicides and pesticides. If you want to treat your lawn or garden, avoid the heavy duty chemicals. This goes for big box store plants, which often have a dusting of chemicals to treat aphids. 4. Get your honey local. It goes without saying. Not only is raw and local the way to go as far as taste, nutrition and the way to beat seasonal allergies, but you are supporting folks who are doing something pretty amazing. Keep it alive.

Four bottles later, I’m looking at some of the freshest honey you can get--and it’s beautiful. “I don’t sell anything I wouldn’t put on my own table,” Nichols says holding the bottle up in the sunlight. To think, that something so small, could make something so big, something so delicious, unbelievable. But believers know--and folks like Read will keep that magic going on dinner tables for as long as possible. Let me be clear--Savannah is chock full of fine honey purveyors--Avondale Apiary, B & G Honey Farm, and Edens FARMacy are also local suppliers with equal cult followings. But I am honest to god biased--not so long ago, when I was still convinced that eeking out an existence in New York was the way to go, I’d get a honey fix whenever I came home. I visited the Farmer’s Market with a religious fervency, bird dogging the Readees booth with a mission: Buy all the Jalapeno honey! Suitcase stuffed like a smuggler, I’d head back north and put the honey on everything, impressing friends and coworkers alike. Nothing eased my sweet Northern friend’s-- above the Mason-Dixon line-- assumptions about the South better than a dollop of that jalapeno honey. I’m not the only one with a love for Readees-the list of restaurants who use Nichols honey reads off like a Best Of Savannah--Green Truck Pub, Noble Fare, The Florence--it’s a recognizable and well loved product in Savannah. It is our great gold.

You don’t need a green thumb to be a part of the current food revolution. Community gardens are sprouting in vacant lots across the city and residents are learning the trade handson with a group of dedicated volunteers, (and, admittedly, a whole lot of You Tube videos). If this revolution is going to grow, however, help is needed – it’s all hands on deck. Groups like Savannah Urban Garden Alliance (SUGA) are on a mission to connect community gardens with community members, and all are welcome. They seek to cultivate a gardening movement in Savannah’s communities through outreach and education as well as provide access to local, healthy food one garden at a time.

Likewise, the city of Savannah recognizes community gardens as a valuable recreational resource that can contribute to health, community development, environmental awareness, and positive social interaction. As such, the city passed the Community Garden Initiative in 2012 to allow community groups to utilize vacant city-owned properties for community gardens and seeks to support community efforts to establish community gardens in all forms. A community garden is defined as a single piece of land gardened collectively by way of designated plots where each plot is cared for by an individual or shared by a group of people to grow vegetables, fruits, and flowers for personal use and/or donation. They differ from urban farms, which operate as a business for profit.

Produce grown from community gardens is shared freely amongst residents. But many times, residents gain so much more than sustenance - it allows people to forge communal bonds that may not otherwise happen. “Neighbors can share knowledge, experience, or simply shared interest over something like a garden,” said Gina Berchin, co-chair of SUGA’s Board of Directors. “It is a place where we can shed the rigor of our homes, jobs, lack of job, education, technology, and various stresses. We can gain perspective on where we live through learning about the lives of anyone who joins or passes by, from seeing the garden through the eyes of children, or sharing the joy of education.” The city offers up several options for members interested in establishing a community garden. Qualifying entities, defined as a neighborhood resident, public or private group or non-profits, can apply for free use of either city-owned vacant property or Federal Emergency Management Agency (FEMA) lots (lots that were purchased by the city of Savannah as part of a flood mitigation grant program administered by FEMA) that are deemed appropriate and safe for use. Private property can also be used for community gardens, but a lease agreement with the property owner must be obtained. Some of the requirements for new community gardens include documentation of neighborhood support and a letter of intent, drawing of proposed

provided by the City of Savannah.

Leases of property are renewed every two years, and an annual meeting of all “farmers of record” will make sure all garden members are up to date on the rules and regulations and garner community support to make a garden successful. Maintenance, collection of allotment fees and payment of water charges are all the responsibility of the garden owners. Also, raising funds for garden materials, plants, and water connections are all responsibilities of the community garden organizations. -Continued on Next Page

The city of Savannah is currently hosting 10 gardens on city-owned lots, in addition to the many private and non-profit gardens that SUGA supports. Many of the gardens can be found on Facebook, and most gardens hold weekly workdays. In addition to the city lots, community gardens are seeping into local schools with SUGA’s new School Garden Program. Garden-based learning has shown to contribute to increased nutrition awareness, environmental awareness, learning achievements, life skills, health and wellness. The proliferation of school gardens has also led to an abundance of existing and reviewed curricula, making it easy for teachers to incorporate this dynamic learning environment into their class schedules and lesson plans. Everyone is welcome at any of the listed gardens regardless of residency or ability; no amount of help is too small, and you’re guaranteed to learn a thing or two. The uptick of gardening is cultivating a movement here in Savannah – a movement for Savannah, by Savannah. And collectively, these gardens are sowing the seeds of community, with green thumbs both big and small. Literacy & Hunger Prevention: A New Path for Libraries

hat should be a fun, adventurous summer time for a child can very easily become a time of stress. For some children, without school meals they may find themselves without food for the majority of the year’s longest days. In an effort to combat this very pressing and local issue the Bull Street Branch of Live Oak Public Library partnered with America’s Second Harvest of Coastal Georgia last year to present the Summer Food Service Program. This essential program offers free lunches Monday through Friday to any child under eighteen. “We get the satisfaction of knowing that a hungry child is being fed during the day; that is our ultimate pleasure.” says Live Oak Public Library’s Downtown Branch Coordinator, Brenda Poku. Due to the program’s success last year, it will now be expanding to multiple libraries. Last summer more than 1600 meals were served to hungry children in June and July; an average of thirty-seven kids a day. The lunch program as well as the Summer Reading Program begins June 1st and ends July 31. In addition to the Bull Street Library, participating branches include Southwest Chatham, Islands,

Midway, Carnegie, Port City and Garden City. The Springfield Library will also be offering a similar lunch program. The program really has a large effect on the community in which it serves. “The library is not just about books,” says Jason Broughton Interim Director for Live Oak, “It is about community engagement. It is about nourishment for their bodies as well as their brains.” According to Children’s Department Librarian, Sha Dishong who has experienced fifteen summers at the library, one side effect of the Summer Food Service Program is that she definitely noticed a huge improvement in the behaviors and attitudes of the kids. They are also far more engaged in the Summer Reading Programs. As adults we know that when hungry turns into angry it is a very real problem. Just as hungry babies cry, a child cannot be expected to act any differently when facing hunger. It is nice to know that there are organizations working to find solutions right here in our community for the issue of child hunger. S u f m o e mer t s a T It’s about that time of year when gardens and farms are in full swing and tasty and versatile summer squash is abundant! If you are like me, I may love roasted or sauteed squash as much as the next person but I also like to experiment with different ways to prepare it. For years, I heard a lot about the kitchen tool, the “Spiralizer” that turns your vegetables into spaghetti like noodles. Whoever thought of that was pretty brilliant. There are many brands and types to choose from but my personal recommendation is the

Veggetti Spiral Vegetable Cutter because of the price ($14.95) and size. This one is a hand held tool which is actually very easy to use. Since purchasing a spiralizer for myself a few months ago, I have had lot of fun testing out different recipes! Eating raw fruits and veggies is very healthy for you and a completely raw meal can be made easily with the right tools. Below is one of the recipes that was a winnner for me and I have made many times since discovering it. If you want to try it - come to the Well FED Potluck on Wednesday, June 22 at Sulfur Studios. Summer Raw Spiralized Squash Prep time: 15 mins Total time: 15 mins Serves: 1 - 3 Ingredients 3 large yellow summer squash, cut into thin strands with a spiral slicer (spiralizer) or vegetable peeler 1-2 tablespoon finely chopped fresh cilantro* (depending on your love of cilantro) ½ cup of chopped tomatoes 2 teaspoons extra-virgin olive oil 1⁄4 teaspoon whatever SPICE you would like to add (be bold, be brazen) Sea salt and freshly ground black pepper, to taste. Instructions In a large bowl, combine all the ingredients, toss to coat. May be served right away or let set for 6-8 hours to marinate the squash ENJOY!
