In 2011, I resolved to publish fewer titles and publish them better. Our backlist with RH moved last year to well over 50% of our business. Cooking with Italian Grandmothers went into its 4th reprint in 14 months. A third of our list is in reprint. This is all good. We have three spring titles on our list, each one more satisfying than the last. As the virtual bookstore is crawling into many of your laps, we don’t want our titles to vanish into a tablet. Ours want to be seen, to be held, to be in your house reminding you of who you are and telling the world that comes through your door something about yourself. They want to be wrapped up and given as gifts that convey the love, care, and respect you feel. They are not gift cards, we publish experiences. For Fall, I have five titles to offer you: two for your kitchen, your hunting lodge, your guy; one for your lover, your art lover, your museum goer; one for that person inside yourself who is looking for ways to give back or for that friend who is searching to bring some serious meaning to his or her life; and one for you or a family member who needs to say, “Thank you” to a nurse or “Congratulations” to a nursing graduate. Jesse Griffiths, author of Afield: A Chef’s Guide to Preparing and Cooking Wild Game and Fish, is a superstar guide who will take you hunting feral pigs in Creepy Canyon, snipe in the newly cut rice fields, creek fishing for sunfish, and crabbing on the coast of Texas (to name a few). This will go down as one of the great ones. Veronica Kavass’ romantic, ravishing, and astonishingly well-written Artists in Love: From Picasso & Gilot to Christo & Jeanne-Claude, A Century of Creative and Romantic Partnerships is addictive to read and so beautifully illustrated and designed that it takes my breath away. The couples met as early as 1902 and as late as 1989…they are mostly American but also German, French, British, Spanish, Swedish, Bulgarian, Irish, Serbian, Mexican, Russian, Swiss, Dutch, Italian, and Cuban… They loved, often married, worked alongside one another, often separated, sometimes remarried. Their work often influenced the other, as in the case of Krasner and Pollock, and sometimes to the point where they almost seemed to merge: Christo and Jeanne-Claude sometimes felt like two parts of one. They were sometimes equally acknowledged, sometimes not. Twenty-one of them are still alive. You will love this book. The American Nurse—photography and interviews by Carolyn Jones—arrived in our offices at the last minute but we had to make room for it on our list. Carolyn is brilliant and her passion and respect for the work of nurses is huge. This will be the book you will give to that very special nurse who took very special care of you or a loved one. This is also the book to give to the graduate who has chosen this compassionate, human career. What a list. Little but mighty.

Veronica Kavass comes from a diverse background in the arts, ranging from gallery and museum work in London and New York, to designing libraries for art advisors and collectors to running an artist residency in the Hudson River Valley. She has written extensively about artists and exhibitions for various publications. She most recently re-routed her way back to her hometown of Nashville, Tennessee through a visiting curator position at Cheekwood Museum (where she started looking at art as a child). She holds a Masters in curatorial practice and critical writing from Chelsea College of Art in London. In following her love for storytelling devices, she trained as an oral historian through her work with StoryCorps. Her first book, The Last Good War: The Faces and Voices of WWII, was a powerful chronicle of American veterans’ experiences during the war, and was a recipient of Foreword Magazine’s Book of the Year award. She currently lives in New York City and Nashville, Tennessee, where she teaches and writes about local art for the newspaper The Nashville Scene.

Roasted Wild Duck with Tangerines Roasting a duck whole seems like the respectful thing to do—after all, this bird flew all the way from Canada (maybe a few times) before you went and shot it. The red-wine brine makes for a more flavorful, moist bird, accented by tart wine and spices, and tempers the assertive flavor of the duck. You will have to do some chewing no matter what—this is a primal preparation and will require picking up the duck and eating from the bones. Do not overcook a whole roasted duck, or it will be intolerably dry and have some of the livery iron flavor that game can have when overcooked. Choose mild-flavored puddle ducks like teal, gadwall, wigeon and mallards for roasting, and leave the diving ducks like ringnecks, redheads and bluebills for other preparations, like gumbo.

1. Brine the ducks in the red-wine brine per instructions on page 30. Remove the duck from the brine and dry very well. Rub the breasts with the softened butter, and then season with pepper. 2. Preheat the oven to 450°F. 3. Cut the tangerines in half and sprinkle with the sugar. Place the duck and tangerine halves, cut side up, in one or two large cast-iron pans. 4. Roast the ducks to medium-rare or medium (internal temperature of 135–145 degrees), about 10 to 20 minutes, depending on the size of the duck. Small ducks, like teal, should only take a few minutes, but the larger mallards will take longer. Baste the duck with rendered fat every 10 minutes. 5. Remove from the oven and let rest for a few minutes. Cut each duck in half down the breastbone and squeeze a roasted tangerine over the top.

Filleting Flounder

You will need a sharp, thin-bladed fillet knife.

Make a cut from behind the flounder’s gills to the tail at a point about halfway up the side of the fish.

Using the tip of the knife, follow the bones along the bottom fillet all the way to the fin.

Repeat this process, removing the top fillet by following the contour of the bones. Cut above the flounder’s head at an angle and remove the fillet.

Top fillets are removed.

Make a similar cut along the bottom side of the flounder from the gills to the tail, following the backbone.

Remove these smaller bottom fillets.

Grip the flounder skin at the tail end and cut the fillet away, keeping the knife at a slight angle.

Repeat with remaining fillets. Save the bones and skin; flounder makes excellent fish stock.

By Carolyn Jones This extraordinary book of 75 portraits, interviews, and biographies is the result of the American Nurse Project, an endeavor launched by Fresenius Kabi, a worldwide leader in infusion therapy and clinical nutrition. Enlisting the talents of Carolyn Jones, an award-winning filmmaker and creator of numerous photography books, and her producer, Lisa Frank, the project set out to capture and share the images and stories of nurses from all across America and to celebrate the role of the nurse in this country’s healthcare system.

In The American Nurse, readers are invited to think about nurses in a way that they may never have before, unless they have been under a nurse’s care. This body of work will inspire audiences to focus their attention on the nurses who serve as healers in their community, and whose wealth of knowledge needs to be tapped in order to solve today’s pressing healthcare issues. The challenge of creating a rich portrait of nursing in America began with a map of the U.S. and a red pen. Carolyn Jones wanted to cover as much territory as possible, with the hope that along the way she would capture stories touching on the kinds of issues that nurses are dealing with in every corner of the country. Some of the issues might be specific to a particular area, like the nurses who were charged with evacuating patients in the aftermath of Hurricane Katrina. Others would be universal no matter where Jones visited, such as nurses providing emotional support to patients and families to help get them through the toughest times in their lives. The first nurse I met was Mohamed. He had himself been born into poverty in rural Guyana. Two things led to his decision to become a nurse once in the US: he had breathing problems as a child and spent an enormous amount of time in hospitals; and his father was a spiritual healer in their local community who treated people by gently blowing air.

The journey began in New York City, where Carolyn met nurses working in the district with the highest rate of hunger in the U.S., as well as nurses doing health outreach to at-risk teens. She moved southward, stopping in Baltimore to meet nurses on the cutting edge of healthcare and nurse educators training the next generation, and then travelled to San Diego, where she met nurses at a VA hospital that is home to the largest concentration of veterans from the Iraq and Afghanistan conflicts. In Louisiana, she went behind bars and met nurses dealing with prisoners; and in Riverton, Wyoming she learned about the health needs of the Native American population there. Having crisscrossed the country, from rural Eastern Kentucky to Florida to New Orleans to Nebraska to Wisconsin to San Francisco and Chicago, Jones presents a compelling portrait of a key figure on the front lines of healthcare today: the American nurse.
