OPUS BISTRO:
A Casual and Elegant Waterfront Dining Experience By Rhonda Meredith Opus Bistro offers continental cuisine from the 100 year-old recipes of Escoffier, who was the father of modern French cuisine and is universally recognized as the finest master chef of the 20th century. The restaurant, located at 1002 Aspen Road in Clear Lake Shores, uses recipes that have stood the test of time over and over again and specializes in Black Angus steaks and fresh seafood at affordable prices. When Charlie Felts and Chef Christopher Simon met 36 years ago, they just clicked. Their friendship was maintained inside, as well as outside, the fickle service industry through a shared dream to one day co-own a restaurant. The date this dream became a reality was in January 2010, when Opus Bistro opened its doors for the first time in Clear Lake Shores. The restaurant’s name really captures its essence. “Opus” is a Greek derivative that translates to “one’s life’s finest work.” And “Bistro” has origins from the South of France which loosely means “a neighborhood restaurant that serves large portions at affordable prices.” Opus Bistro offers unique menu items made with only the freshest ingredients and made from scratch daily. On the appetizer menu, the Shrimp and Grits (Gulf shrimp sautéed with chardonnay, garlic, onions, and three colored peppers surrounding homemade grits topped with hollandaise sauce), the Asparagus Parmesan (jumbo asparagus encrusted with parmesan cheese, and garnished with crab meat and tomatoes), or the Coquille St. Jacques (sea scallops and shrimp baked in a mushroom crème, and surrounded by Duchese potatoes) are all flavorful. One of the many salad choices is the Crab Salad that features blue crab, avocado, mango, tomato, and basil seasoning. The main fare options will awake and inspire your taste buds with seafood entrées such as the Red Snapper Charlie Brown (Gulf red snapper lightly breaded and topped with sautéed mushrooms, artichokes and crab meat, finished with a brown butter sauce), and the Soft Shell Crab Oscar (two soft shell blue crabs dusted with white corn flour, fried in olive oil and topped with jumbo lump crab meat, hollandaise sauce and asparagus). A sampling of the beef offerings include the Filet Au Poivre (center-cut tenderloin topped with sautéed black peppercorns in crème) and the Tournedos Sauce Opus (twin tenderloin medallions topped with beef cabernet mushroom sauce, garnished with grilled shrimp). On the menu are also scrumptious chicken dinners, including Chicken on Fire (grilled chicken topped with melted provolone cheese, caramelized onions and Serrano peppers). - Continued on Page 16

Watch out for holiday challenges to your fitness goals Well, my fine fitness fellows, it's fast approaching the holiday season and you know what that means: parties and all sorts of things that aren't really on your goal meal plans! According to the Mayo Clinic, this time of year the average American can expect to gain five pounds. Now you've worked all year to hit these fitness goals, perhaps you've already achieved them, some of you may still be working towards those magic numbers, but ALL of you will want to keep from backsliding due to the holiday parties. While Walmart begins preparing for Thanksgiving and Christmas around the 4th of July, most of us normal people acknowledge the beginning of the holiday
season as Halloween. Between the end of October through the first of the new year, there can be a LOT of parties and events that might derail you from your fitness goals if you don't develop a plan to keep those jeans fitting just right! One of the biggest challenges is going to be all the amazing baked goods that are going to be available. Eating a responsible meal before heading out to any holiday event will keep you satiated so that you don't tackle the entire tray of cookies, hopefully. Set limits for yourself. There's nothing wrong with having a brownie, but don’t eat the entire plate! Another good tactic would be to mingle away from the spread, so that you have to cross the
room to get that next confection. Another huge challenge this time of year is going to be alcohol consumption. The thing to remember Fitness Columnist about alcohol is that Rick Hunter its a carbohydrate your body treats like a fat. So whether you drink a little or a lot its all calories you can't use for nutrition, only storage. HOLIDAY CHALLENGES (Continued) Sure a glass of egg nog sounds good, depending on how much nog is in there, but a hot toddy may work just as well and has a small portion of the calories. You've worked so hard all year to look and feel good, improve your health and make your ex’es jealous, don't miss the gym now! Even though all the extra social events can eat into an already hectic schedule, you owe it to yourself to find at least a little bit of time to keep all those great results. A 20minute workout is infinitely better than a zero-minute workout. When in doubt, at least get some cardio in, to keep your metabolism running hot. Another thought would be to use this time of year to change your goal to mass gain. The extra calories should make it much easier to put on a few pounds of muscle instead of love handles. But if you find that you just can't make it into the gym, another great option is to park further from the door and walk the extra space briskly, it’s at least some physical activity that should help. Try to enjoy this time of year, and please keep your goals in mind! But most importantly GET IN THE GYM!

By Kelley Dawson Samantha Flynn’s artistic endeavors began when her mother took a stained glass class. Upon request of her mother, Flynn said she started assisting with her mom’s first project and showed signs of real talent. According to Flynn, her mom said, “go ahead and take a class.” Flynn’s teacher told her she was a “natural.” Flynn explained the first class project was drawn for each student to teach the foundation of stained glass and to learn proper glass cutting techniques. The second project was free form. “I wanted to get through the first piece and then work on whatever I wanted,” said Flynn. “It started as a hobby,” Flynn stated and now she creates many commissioned projects between work and finishing college. Flynn shared the process begins with a picture or photograph of the subject and sheets of glass. She draws the pattern on the glass before cutting. “Glass can only be cut a certain way at the right angle to make the lines,” emphasized Flynn. She said copper foil is used with soldering to put the glass cut-outs together and finally patina, polish and framing.

Completion time for a project varies by size and detail, but most pieces take two weeks to make said Flynn. She added, “If I’m in to it, it’ll be done in a week.” Having grown up in La Porte and Seabrook, Flynn’s works reflect the Bay Area lifestyle including sailboats and other watercraft. Her favorite piece was created for her aunt and uncle’s wedding anniversary and depicts their boat. Flynn said she wanted to capture all the details of the boat by incorporating overlays and sandblasting to show depth, texture and even the detailed railing. Flynn’s comic book and movie pieces illustrate her passion to “do what no one else has done with stained glass.” The self-professed comic book nerd is especially proud of her Harley and Joker stained glass creation. Flynn said, “It took me two months to finish. It’s so detailed and perfect.” Flynn shared she also made a Star Wars piece of Boba Fett for a friend. “You never see that,” she exclaimed. Flynn said she enjoys working on something “out there.” Though she creates what she calls “typical” stained glass art, Flynn said she most likes making “unique and different pieces.” Hi Puddin Creations is located in League City. The workshop celebrates National Novel Writing Month and is designed for adults. Norman Fitts has written many feature length and short screenplays including some which have been produced by indie film groups. He has published five science fiction novels and is a member of the Houston Film Industry Group. He most recently appeared in Seabrook at the Gulf Coast Film Festival. He also teaches creative writing and screenwriting classes for Houston Leisure Learning and at the Alvin Community College. Nasa E-cigs carries different types of e-cig kits ranging from basic, standard, and deluxe. All are refillable and stylish; and most have different colors available such as white, blue, pink, red, and multi-color.
There is little doubt the e-cigarette revolution is among us. In just over a decade, these no-offensive odor, no smoke devices have gone from novelty conversation pieces to finding their way in the hands of former tobacco users worldwide. The revolution charged into the Bay Area this past September with the grand opening of Nasa E-Cigs. Nasa E-Cigs, located at 194 Gulf Freeway South in League City (in the Kroger Shopping Center), is a one-stop shop for electronic cigarettes, a wide variety of accessories and replacement parts, and easily more than 200 flavors of liquid at their “nobacco” bar.
Brenda Walker, owner and local resident, smoked her entire adult life until about two years ago when a friend introduced her to an e-cig. The rest of the story is common: Walker quit smoking traditional cigarettes. The testimonies at Nasa E-cigs are abound as to people quitting traditional cigarettes after using an e-cig.
Technically the term is “vaping” instead of “smoking” and “e-cig” is the correct way to refer to an electronic-cigarette. Nasa E-Cigs features products by Halo, V2, eGo, Vapor Couture, Vapor 4 Life, Volcano, and Liquids By Terry. The products are intended for use by persons 18 or older.
But officially, an e-cig is not considered a smoking cessation product and has not been tested as such. They are considered recreational alternatives to cigarettes for people who still crave the sensation but do not want to be exposed to harmful carcinogens.
A first-time visitor will experience cheerful banter in an open and bright area that has a tropical twist. The staff is very knowledgeable, and they don’t mind answering questions. One common query is “What are the differences between a traditional and an electronic cigarette?” For one thing, an e-cig is considered a healthier alternative. A traditional cigarette is made of tobacco leaves rolled in paper that burns to create smoke. The ecig is made of metal, and the battery is designed to simulate the effects of smoking both in design and function. It heats up a flavored liquid to create a thick water vapor that closely resembles that of tobacco cigarette smoke. But, in reality, there is no hazardous second-hand smoke, no ash, no risk of fire hazards, and no mess. The flavored liquid, also called an “e-liquid” can be purchased in varying strengths, in different sizes, and, of course, many flavors. Nasa E-cigs has a try-before-you-buy policy. Have a seat at their e-liquid lounge and pick a few favorite flavors. Taste the Belgian Cocoa, Captain Jack, Café Mocha, Bonzai Banana, BlueWater Punch, Vanilla Bean, Milk Chocolate, Bacon, Clove, Cotton Candy, cool mint flavors with or without menthol, and many, many others to choose from. Seasonal flavors include peppermint and eggnog.

Aspens Bar & Grill: A Great Neighborhood Bar “It was definitely a labor of love,” said Vinnie. “And blood, and sweat, and tears.”
By Rhonda Meredith Aspens Bar & Grill opened mid-summer at 817 Clear Lake Road in Clear Lake Shores. The immediate cross street is Aspen Road and also the inspiration for the bar’s name.
Aspens is an open-air bar when the weather is good. Two garage-type doors located at each end of the fully stocked bar are rolled up to let the breeze in. There is also outdoor patio seating on the Clear Lake waterfront. Indoors, Aspens has games like Golden Tee, TVs to show major sports games, numerous tables, and a sofa seating area in the back. Acoustic musical entertainment takes the stage on Saturdays from around 6 to 9:30 p.m.
“It’s a nice hole in the wall,” said Nikki Pandanell, the manager at Aspens. She means that as an endearing term. “Aspens is a great neighborhood bar that’s relaxed and casual. Our customers really enjoy that.”
The kitchen is open Mondays through Thursdays from 2 to 8 p.m. and noon to 11 p.m. on weekends. Enjoy pizza, sliders, a club sandwich, BLT, Reuben, French dip, chicken sandwiches, or the Aspen Burger.
Pandanell credits her father Vinnie for making Aspens a reality. “We live here in Clear Lake Shores and opening a bar in the community was my dad’s dream. He looked into several location options, but no venue felt quite right. This went on for a good bit of time until one day, he checked with the owner about leasing this property.” The building was actually an automotive garage with three separate shop spaces that were filled with content… and not for lease. The Pandanells prevailed and secured the perfect spot.
Happy hour is Mondays through Fridays from 2 to 7 p.m., offering $3 wells and wines, $2 domestics, $3 imports, and a couple of rotating drink specials. Buckets of beer are a part of happy hour, too. It’s $12 for a bucket of domestics and $16 for a bucket of imports. Aspens is open seven days a week from 2 p.m. to midnight during the weekdays and on weekends from noon to 2 a.m. It’s an intimate venue that could host a festive birthday party or after-work get-together.
“My dad and I rolled up our sleeves and actually cleaned out the space ourselves” said Pandanell. “And it took nine months to complete the renovations and create Aspens.”

Heads up as there are plans in the works for a new CD album from Jerry & his Hannah's Reef band in 2014. With the Texans having their bye week, and the chores out of the way, we scored ourselves a touchdown at Boatoberfest chili cook-off with some of the hottest fixings this side of the planet. With plenty to go around for everybody, this event scored a solid success.
TEXAS TROUBADOUR - The folks at T-Bone Tom's booked a special treat in October bringing in Shake Russell with Michael Hearne for a Sunday evening of perfect musical entertainment. A large turnout of Shake's faithful following were in attendance for an evening of genuine original music by the award winning Texas Troubadour and his band. We spent some time catching up with Shake during the intermission and scored a very well assembled DVD package of his live performance at the Centrum. Captured with three video cameras, tracked off the mixer board, mix & mastered by 3-time Grammy Winner Randy Miller, this DVD successfully presents to viewers the ambience and warmth of a Shake Russell show. Another CD project Shake's involved with is a collaborative effort for the All ATX Concert. FIND OF THE SUMMER - Andy Upchurch once told me to keep an eye out for the two-piece groups as they have to be good: having no margin for error to cover each other. And with that, we ventured to Scout Bar to check out Fox and Cats, a two piece group covered in the September issue of The SCENE. This unsigned pop/rock duet of Josh Willems (Guitar/Vocals) and Nicole Wigginton (Drums) pulled off the evening with incredible energy, freshness, spunk, pizazz, and best of all, an authority which marks this band as the find-of-the-year according to my vote. What is the greatest thing ever invented? The glorious coffee maker :-) I say "Black Friday", you say... Ew! Way too many people for my taste! Have you been shopping the day after Thanksgiving? Planning on it? I have never been and never intend on going! Haha! I usually send my friends who

Not currently, although, I’d love to go back one day when I'm more sure of what I want to be when I grow up. ;-) Grow up locally? I’m actually a Southern California native. My dad was in the Navy, which led to lots of moving around. We landed in Houston once he retired, and I’ve lived here ever since – about 11 years now. Hidden talent? Ain't autumn great? We've been enjoying this fantastic weather with many of you out and about enjoying the community festivals and taking in live music outside in the fresh air this past month as our beloved patio season returns. Holiday season is coming up around the corner, a time to be thankful and merry but before it does, let's run down some of the many good things happening out on The SCENE!

FESTIVALS GALORE - We lost out this year on the annual Ballunar Liftoff Festival and in it's place, the Clear Lake region responded with some dandies all around town. We took in Kemah's first Oktoberfest complete with yoddlers, humungous steins of beer, Om-Pah music, and colorful folk dance by the Deer Park High School German Club.
We checked out the Second Annual Seabrook Festival of the Arts and found an event with potential of becoming a quality gathering at the national level. Pretty cool, eh? Outstanding exhibits from across the nation were worth checking into and getting to spend time chatting with the artists as they shared was most enjoyable. Vibrant dance shows were provided by the ADC Studios out of Houston featuring colorful Ballet Folkdorico, wine from Haak Vineyards was served perfect, and Jazz music by The Pat Harris Group and Shake Russell, both from Austin, filled the air with sounds not typically enjoyed by the locals. MAMA TRIED will headline the 12+ musical acts on two stages at SCENEFEST II (5 to 9 p.m. Thursday, November 14 at Clear Lake Park’s Landolt Pavilion)

he Galveston County quintet MAMA TRIED will bring their distinctive fusion of Punk, Folk, Southern Country and Bluegrass music to the main stage of SCENE FEST II as the Headlining act. Mama Tried is made up of Ryan Beard (Vocals, Guitar), Blake Plsek (Banjo, Harmonica, Vocals), Jason White (Dobro, Guitar, Vocals), Hunter Baughman (Standup Space Bass, Vocals) and Steven Redman (Drums, Vocals). But don’t let the use of acoustic instruments fool you as the band is made up of members who previously played in their own punk, reggae and thrash metal bands and performs with a speed and intensity that catches those who have never experienced them off guard. One Houston music reviewer wrote earlier this year that “Mama Tried plays a sound from the past that’s filtered through the present. Attend one performance, and the next thing you know, you’re stalking the band.”

SCENE FEST attendees will delight on two separate stages with one featuring four different musical stylings, and the other offering continuous acoustic entertainment. On the main stage, Southbound will get the party started with their smooth and bluesy Gulf Coast island rock and roll sound. Then Fox & Cats (pictured below), a mixed (boy/girl) two-piece, bring their straight-up original rock to light up the stage. Performing on the Norman Frede Chevrolet Songwriter Showcase acoustic stage is a variety of talented singers and songwriters. The Gaby Veray Trio perform original songs ranging from bilingual folk and reggae, to ragamuffin, and reggaeton. A breath of fresh air in modern music is Radio Springs. They have a sound that is described as “slamgrass” which is a mixture of rock, bluegrass, singer/songwriter, and jam… with harmonies. Hold Fast Fables tells tales through their organic sound. The three-part vocal harmonies enhanced with a melodic cello, acoustic guitar, and light percussion

accompanies lyrics portraying love, loss, and island life. Cisco is an incredible musician who uses a bass guitar to entertain and encourage people. Hardy has earned his strings the hard way and taken many long roads to find his way back to where he started with an acoustic guitar in one hand and microphone in the other sharing humble songs from a life well traveled. “I'm a Texas boy. ctober was a huge month for Texas’ “most spirited” craft brewery. First, we launched our third beer, the Goblin Hunter. We started by rewarding our Facebook followers with a soft release at the first venue (Bakkhus Taverna) to put Galactic Coast on tap followed by a more publicized official release party during the first-ever Skallywag Suds N Grub Halloween Bash. The response to our “Year Round Halloween Seasonal” was inspiring, and while we didn’t expect to run out as quickly as we did, stay tuned as we have some conditioning and even more fermenting for a November release. October also saw the addition of two new members to the GCB team which not only increased our muscle and productivity at the brewery, but also our brain power as both additions bring an impressive background in aerospace engineering and manned space flight support which will only assist us as we pursue ambitious future goals. The impact of the extensive airtime we have enjoyed on the Discovery Channel, E!
