The “Golden” Rule of Masa Sushi:
Fresh Seafood Daily from the Coast of Honolulu rice but our brand is the best,” he says, “It took me three years to learn how to cook sushi rice in the traditional way, including how to wash it, steam it, how long to cook it, what sort of container to use and what kind of vinegar sauce to add.” Most chefs have their own vinegar sauce recipe and use varying preparation techniques. “The vinegar sauce is very important,” says Zhou, whose recipe is a secret. A healthier eight-grain rice (from France) is also offered at Masa Sushi, which is a little chewier and red in color.
By Sue Mayfield Geiger When Michael ShiXin Zhou came to the U.S. from China in 1994, he knew how to do one thing particularly well: make sushi. Learning from a Japanese master while living in China, Zhou quickly learned the “art of sushi.” Sushi is considered an art form because its appearance is just as important as how it tastes. Zhou concurs, but adds that freshness is his prime concern when it comes to the sushi he offers at Masa Sushi. “I am a bit different than other Japanese restaurants,” says Zhou, “in that I get my fish flown in from Honolulu every morning, seven days a week, so it is extremely fresh.” No frozen fish for this Master Sushi Chef who says the seafood must be “right out of the ocean,” because that determines how well your taste buds will react to raw fish. (Zhou used to get some of his seafood from California, but that has recently changed and it now all comes from Honolulu.) Equal amounts of cooked sushi items are also on the menu. Offering both traditional and American style sushi, Zhou’s fusion influence at both of his restaurants include a bit of “a la Francaise” since his French chef wife, Chi, lends a hand to the cuisine. Both the NASA and Highway 646 locations are light and airy with soft earth tones, oak furniture, curved lines, and an inviting sushi bar. Zhou’s sushi chefs have been with him since opening both locations and were trained under his watchful eye. Jason (NASA manager) and Daniel (Highway 646 manager) are on premise to make sure you get the best service possible. As a purist, Zhou sticks to the Japanese way of doing things and does not serve Chinese food or provide hibachi cooking tableside. “We do hibachi cooking, but in the kitchen,” says Zhou who cut his sushi teeth in Palm Beach, Florida, and eventually landed in Houston where he owned a successful restaurant in the Memorial area before coming to Clear Lake in 2004. With no time to take language classes, Zhou picked up English on his own by listening to his customers and by watching a lot of American movies.
IT’S ALL ABOUT THE RICE The word “sushi” actually refers to the sticky, vinegary rice. Zhou uses an organic wholesale brand grown in Japan that cannot be purchased retail. “There are many varieties of sushi

SUSHI 101 Maki sushi is formed much like a log, using a seaweed wrap; temaki sushi is cone-shaped and hand rolled; sashimi is thinly-sliced seafood; and nigiri sushi is seafood atop rice. All sushi is hand prepared after you order. Zhou is the only “sushi master” at his restaurants; the others are “sushi men.” Why no sushi women? “Women’s hands have a little bit higher temperature” says Zhou, “and that does not work well when you are handling raw fish.” If you are squeamish about raw seafood, the cooked sushi items are sumptuously divine, like the Spider roll (soft shell crab); Crunch roll (shrimp tempura with crab meat); Fufu roll (fried oyster); and the popular California roll (crab meat, avocado and cucumber). Vegetable sushi items are available for vegans and a combination of just Salmon & Abalone about anything can be prepared for you. But for raw lovers and those who want to cross over into sashimi-land, the yellow-fin tuna is like butter melting your mouth. “Most tuna is yellow fin, but it is divided into classes,” says Zhou, who uses “number one plus” in all his dishes. If you’re lucky, blue fin tuna may be on the menu, but it does not come in often due to its rarity and expense.

‘Bahn is not just for summer anymore? Galveston’s Waterpark, Schlitterbahn has a “Winter Season,” and it is indoors and heated. The indoor area of the park is called Wasserfest and is the world’s first convertible Heated pool area at the Schlitterbahn waterpark with closeable sections for indoor/outdoor, year round fun. Wasserfest is enclosed with over a dozen heated attractions in a climate controlled area. The kids will have a great time still clinging on to a bit of summer and if you don’t bring the kids, well… there is the swim up bar that is always loads of fun after jumping the warm blue waves. Christmas Boat Lane Parade The 50th Annual Christmas Boat Lane Parade will light up Clear Lake and Galveston Bay with decorated boats, power and sail, making their way down the channel along Kemah Boardwalk on December 10. The Nutcracker Preludes at Kemah Boardwalk There are several productions this month of the endearing longtime tradition of The Nutcracker, but sometimes, the timing just doesn’t work out… No worries! From Inspiration to Runway Reality Clear Lake High School graduate and New York fashion designer, Caycee Black featured her 2012 Spring Collection during a recent Fashion Extravaganza hosted at The Art Alliance Center at Clear Lake. Prior to launching her own clothing line, Caycee attended Parsons School of Design New York and worked along side fashion gurus Anna Sui, Club Monaco, TIBI, and Reed Krakoff. Caycee’s last name could not be more fitting to describe her fashion flair. The correct combination of the three primary colors creates black. In similar method, Caycee blends her three primary talents; painting, ballet and design to create fashion masterpieces. She starts each season off by painting from photographs she takes around New York City and in the Betsey Ennis photos parks. Caycee said she captures shots of everything that moves her from a shadow, a ray of light, graffiti, or nature. Then, she paints and the story begins. The paintings eventually end up all over the walls of her studio. Caycee studies them and decides which pieces to turn into fabric and transform onto a three dimensional garment. Caycee further explained, “I play with scale and see what paintings sit best with each other and then choose the base for each one – whether it is a sweater or silk fabric. The silhouettes are then designed off of the inspiration and story I choose to tell each season.” Her paintings literally leap from canvas to clothing with screen and digital printing. Caycee prefers the digital method as it retains the true colors of her paintings. Much like a living art museum, Caycee fills the runway with flowing color, depth of mood and inspiring couture. While at her Clear Lake fashion show, she said her inspiration for the 2012 Spring Collection actually came from watching a 1974 film, Celine and Julie Go Boating by Jaques Rivette. Caycee stated, “The prints and color palette reference the juxtaposition of playful and dark in the film, which are always present in my collections.” Her fashion finesse has not gone unnoticed. In 2009, Caycee’s premiere namesake collection received Best New Designer titles in WWD, Daily Candy and Lucky Magazine. Caycee currently resides in Brooklyn, New York. Recently, she has incorporated her many talents into the world of music. Caycee collaborates with bands such as The Pains of Being Pure at Heart, Regina Spektor, Asobi Seksu, Young Galaxy and ZAZA to style performances, still (photo) shoots and even music videos. What a treat – quite literally – to have been invited to our first Sugar Plum Fairy Breakfast.(Thank you, Lynette Mason Gregg!) We walked into a peppermint wonderland of red and white. Grace Elizabeth and I were delighted with the center-stage view of the vignettes from our seats. The entire Nutcracker Ballet is being presented in its entirety this month at Univeristy of Houston Clear Lake’s Bayou Theater. The Christmas Spirit has hit Kemah The annual Christmas in Kemah event began November 18 at the Kemah Visitor Center with the traditional tree lighting and the arrival of Santa with real reindeer in a Cinderella Carriage. Christmas in Kemah continues until December 18 with every weekend full of activities and entertainment in the Kemah Lighthouse District. Christmas cheer will fill the air as Santa will be walking in the district with candy for all and posing for photos, and, of course, listening to all the girls’ and boys’ wish lists. Each weekend the holiday spirit will be plentiful with musicians, strolling minstrels, choirs, dancers, bands, story telling, costume characters, refreshments, face painters and much more. 50th Annual CHRISTMAS BOAT LANE PARADE Saturday, December 10 • 6 to 9 p.m The 50th Anniversary Christmas Boat Lane Parade will be Saturday, December 10 from 6 to 9 p.m on Clear Lake and through the Kemah Channel. Ring in the holidays with this Clear Lake tradition. More than 100,000 people traditionally enjoy this event from land and from hundreds of boats anchored throughout the Lake The parade features more than 100 brightly decorated power and sailboats that will
traverse the Clear Lake channel from the South Shore Harbour Marina and the Nassau Bay Lagoon to Galveston Bay. To participate in the parade: Early entry is only $60 per boat and includes a Skipper's Bag sponsored by Hollis, Huff, Lewis and Co. P.C. Each bag is filled with fun donations from area merchants and two tickets to the Awards Brunch on Sunday, December 11. A great way to get involved is by participating as a sponsor. On the Water LUTZ CLAIMS SILVER IN PAN AMERICAN GAMES Lakewood Yacht Club racer Jay Lutz, representing the U. S. Sailing Team in the 2011 Pan American Games, recently won the Silver Medal. The Pan American Games are held every four years the year before the Olympics. Countries from Canada to the far tip of South America, including the island chain from Cuba down to Trinidad, participated in this sporting event. While Guadalajara, Mexico, held the majority of the sporting events for the Games, the sailing, beach volleyball, triathalon and long distance swim were held in Puerto Vallarta with the sailing held on Vallarta Bay in the Pacific Ocean. Lutz and his crew represented the U.S. Sailing Team in the opening ceremony, walking with the U.S. Contingency into Omnilife Stadium in Guadalajara. “Walking into sixty thousand screaming sports fans in the audience was quite a sight to behold,” reported Lutz.

Boats racing in the Pan American Games were J/24 (four man crew), Lightning (three man crew), Snipe (two man crew), singlehanded men and women on Lasers, singlehanded men and women on sailboards, and single person Sunfish. Scores were tallied for the six days of sailing and the top five countries qualified for the Medal Race held on Sun., Oct. 23. In the Medal Race, points counted double in a short 25 minute race. In the audience that day around Vallarta Bay were about 2,000 spectators and over 100 boats. Team USA jumped out to a lead. But Tito Gonzales from Chile, Lutz’s fiercest competitor, edged them to win the Gold Medal while Brazil finished third and was awarded the Bronze Medal.

“ASYLUM” CAPTURES YACHT OF THE YEAR At Lakewood Yacht Club’s Fall Ball Awards Ceremony held on Sat., Nov. 12, member and longtime racer Jack Seitzinger’s “Asylum”, a 1999 Hallberg Rasse, 42’, won “Yacht of the Year”. This annual award goes to the Lakewood Yacht Club boat that has the best score in club-hosted races on Galveston Bay, which are Bay Cup I, Bay Cup II, and the Shoe Race. “Asylum” placed first in these three races plus best overall for Bay Cup I and II. “My formula for winning on ‘Asylum’ is simply three things,” explained Seitzinger. “A decent boat, good crew and good wind!”

MAMA TRIED... And Succeeded By Rhonda Meredith The Texas Hippie Connection crowd went to “standing room only” status in an instant when they heard Mama Tried strike their first chord. The show was about to start and no one was going to be where they couldn’t see the band perform. Mama Tried was “born” two years ago. “I got tired of lugging around amps and equipment, so the idea of Mama Tried started as being able to play without having to plug any instruments in and still have a full sound,” says Ryan Beard, one of Mama Tried’s guitarist and its lead vocalist. “We have had a few changes in the line-up and additions to make up what it is today.”

Mama Tried is a unique band that sounds like “fast, catchy, good ole beer drinking music with some gospel sounds.” Yes, you can re-read that if you have to. The sentence had “beer drinking music” and “gospel sounds” in the same word breath, and it is okay. Mama Tried will bring you to a “thrash grass” revival that may just leave you needing to confess a few things after the show. They are that good. The band says they are influenced

The different instruments like the dobro, banjo, mandolin, and space bass enhance and contribute to the low vocals, guitar and drums to create the signature Mama Tried sound. “There are six of us in the band,” states Beard. “If one of us is missing, then it isn’t Mama Tried.” The band name is an ode to one who passed before them. “Mama Tried is a

name that one of our buddies who died suddenly came up with… So, it’s kind of in his honor.” Their first studio produced album “The Long Road to God’s Country” debuted in early 2011. Mama Tried performs original tunes mostly, but will throw in a cover now and then. Beard says the plan for 2012 is to “record again in February and then make moves around Texas and beyond…” In the month of December, you can check out Mama Tried at Scout Bar on the 15th and at Texas Hippie Connection on the 17th. I.D.R.'s debut CD to drop at Texas Buzz Awards I Don't Recall (I.D.R) has been an area favorite since late 2009. Last year, the rock band opened for Fuel, The Hunger, Drowning Pool (to name a few,) performed at several notable festivals, and was played on internet radio as well as local radio including 94.5 The Buzz. Also in 2010, I.D.R. was nominated the Best New Band at the Texas Buzz Awards and they began recording their debut CD. The yet to be titled CD has been a labor of love to say the least. The five musicians who make up I.D.R. are vocalist Roy Hockenberry, guitarists Mark Davis and Jeremy Peoples, bassist Brett Cardiff, and the infamous drummer Alex Slay have worked late into the night and early into the morning with Mike BBQ at Big Door Studios to get the CD exactly how they want it. The CD will have seven tracks: No Progress, Purge, Graceland, Hellbound, I’ve Lost My Mind, Dogma (an older song redone,) and (my personal favorite) 2012. The rumor is the first single for download will either be No Progress or Purge. Want to know how I.D.R. picked these lucky seven songs? “Ever since we played with Drowning Pool and performed our heavier set, well, the people seemed to dig it,” says Hockenberry. There may be
fans that might freak out that the I.D.R. tune Jenny isn’t on the CD… Well, relax because it more than likely will make the next CD. The plan for 2012 will be to expand their touring area with more regional gigs. And for those fans that may have freaked out when the tune “Jenny” wasn’t on the CD track list, you can relax. It will more than likely make it on to the next CD. Yes! I.D.R. hopes to work on another CD next year. “We learned a lot about record making in the past year, so it will be an easier process this time around,” says Hockenberry’s voice of wisdom.

DEMPSEY’s SPORTS PUB Dempsey's Sports Pub in League City is a great place to relax, eat good food, and listen to live music. There is a small town feel to the venue that is hard to come by in many places and it’s that vibe customers seem to embrace whole-heartedly. “With over 15 years in the bar and restaurant industry, our commitment to excellence has earned us the reputation as the friendliest sports grill in the area,” says owner John Delesandri. It’s the little things that give the intimate feel. Customers are known by name when they walk in and the friendly rivalry around the pool table will make you smile. As will the Happy Hour specials that are offered each weekday until 7 pm! The sports minded venue shows most UFC games and most boxing matches on their many flat screen TVs. They also have darts, billiards and a Golden Tee arcade for your entertainment. Weekly night fun includes a comedian and Texas Hold ‘em poker on Tuesdays.

If the “TKO” burger seems a bit daunting, then may I suggest you order 25cent hot wings on Monday nights. (But, try Dempsey’s devil sauce - buffalo hot sauce with chipotle and habanera sprinkles. I dare you.) Hankering for something a little different? Come on in for Dempsey’s Texas Philly cheese steak - a slow-cooked, marinated flank steak, with smothered onions, bell peppers and a secret cheese mix on sweet dough bread. I am getting a little hungry now… Wash it down by ordering Texas brewed beers including Bombshell Blonde and Chop Top beers. Weather permitting; the outdoor patio is a perfect place to dine. Another thing about Dempsey’s besides the food, the music, and the fun atmosphere is that the venue gives back through local charities. “Being a productive part of the community also means giving back,” states Delesandri. “It means a lot to us that charity organizers choose to partner with Dempsey’s to assist in their causes.” Last month, a benefit was held for the homeless and on December 17th,

This year brought us the return of I.D.R. on the SCENE first appearing at the Cockeyed Seagull and everywhere since. Alternative/Industrial rock thrived in the area with the September to Remember at Big Ben's Tavern. BIG AIR Melissa Wolfe of Madigan takes a temporary leave of absence causing a Six Car Pileup. Ski jumping Shawn Pritchard (Clear Lake's version of the Flying Tomato) takes the mic and takes to the air. GUITAR TONE MONSTER OF THE YEAR - Hands down to David Madigan for consistently dialing in an EVH sound that sounds like EVH should sound. MEGAHOST This past year, the folks at Jackie's Brickhouse firmly established a wholesome presence on the SCENE. The jury is still out--Is this a dining place with great entertainment for all ages or is this an all ages entertainment complex with good food? Either way, it's working! Previous MegaHost Mention winners include TBone Tom's for hosting the annual Kemah Mardis Gras Post Parade Party and the Kemah Toys for Tot's Pub Krawl. We also joined up with many partaking of the League City Village Festival's Safari Run as well as the Houston Mud Run benefitting the fight against MS. Going to the doctor is a pain -- Staying fit is "cool". Live on!!!

These guys have been playing around the San Leon and Bacliff area and turned us onto an evening of David Gilmour, Brooks & Dunn, CCR & The Who – Perfectly dialed in with crystal clear vocals, tasty acoustic padding and a full arsenal of hot lead licks from the sweetest Hot Rod Deluxe I've ever heard.. These guys are on my "good to go" list. Also that evening... ON TOUR: Goes the Sheila Marshall group to Kuwait this year for a five-show tour over the holidays. This is not her first trip visiting the soldiers. Sheila’s last visit was back in January 2010. “It’s a real life Sheila Marshall @ T-Bone Tom's changer,” she explained. “These young men and women are truly heroes and I have a new-found respect for their sacrifices.” When the opportunity to go back to Kuwait came up, she jumped at the chance. “Getting to perform for the troops is such an honor. We hope to show our great appreciation by bringing a bit of home to them during the holidays with our music.” Sheila is currently promoting her CD “What If I Was.” The CD and title track were produced with the help of Kyle Cook from Matchbox 20. With his guidance, she created a collection of songs that portrays who she is: Sincere, passionate and fearless. We've heard her new material and stand by the claim. Speaking of new CDs.... SNEAK PEEK: We scored copies of mix tracks for Myrna Sanders upcoming CD. Myrna has always had a great voice presence on stage and has been busy assembling some pretty awesome talent on this project. Happy holidays to all you fun live music lovers out there! We hope this edition finds everybody in good spirits, health and joy. The new year is around the corner and with all the build-up has the possible makings for being a doozy. We met up with our Director of Growth and Development for some last minute instructions on this month’s column and the instructions were simple: More of the same, more good stuff and a short recap of the year in review. Easy enough -- Let’s roll…. ON THE MAGIC BUS: Ever ride in one of these? They're a hoot! Each autumn on the most beautiful weekend of the year, we take a ride on a Magic Bus full of Merry Mongers from the Land Where the Creek is Clear and escape into yesteryear at the Texas Renaissance Festival. Aside from the usual color and air, we had our first exposure to Pirate Rap, a humorously bawdy assortment of entertaining tales of the day delivered as an Irish ballad on Red Bull. Music has such an interesting way of transcending time... AROUND THE SCENE: A handy check is seeing how well things play out during "off hours." In that spirit, we ventured out and sampled live music offerings during the weeknights and our samples came up “incredibly” good and many of you out there. No surprise... We enjoyed an easy-on-the-ears evening at The Tree House with Mike Flores and Patty Valencia, tossing darts and the talented Sam Hudley at Sherlock’s, top quality original Texas Country music at Cullen’s Live with the Bryan Shayne Band, and an impressive unplugged evening with Seth Candan and Clinton Ashley at Dempsey’s. An over-the-top find was catching James & Laurie Reese at the Barbed Rose Burger Bar in Alvin. Seth Candan PARALLEL UNIVERSES: Last month, we witnessed a bravo-worthy event when James & company pulled off their Pink Floyd Revisited at Katie's. This & Clinton Ashley @ Dempsey’s month, James Sheila Marshall @ T-Bone Tom's was accompanied with the Westside Johnny (bass) and Matt Johnson (drums) from the Mighty Orq and his lovely talented wife, Laurie on lead vocals. The last time we heard these two together was at Wood & Wind's infamous Kemah Jam at T-Bone Tom's nearly four years ago. If last month's show didn't earn a Jim Shortt "Bravo," adding Laurie's powerful vocals to the mix certainly would have. This was my first time at the Barbed Rose/Burger Bar, and we found the place "cool." The place is a combination of T-Bone Tom's & Signature Bistro (over on the Kemah/Seabrook side of the universe) and located in Alvin which qualifies this venue as the left side of the known universe. FATTY’S in SEABROOK: Come As You Are and Feel Welcomed! By Rhonda Meredith What do a Harley-Davidson motorcycle and a legal holiday in New Orleans have to do with a new Seabrook venue? Well, the terms “Fat Boy” and “Fat Tuesday” are both the basis for the name of a bar located at the intersection of Highway 146 and NASA Road 1. This friendly neighborhood gathering place is affectionately called “Fatty’s.” “Well, Curtis Plagens (co-owner) drives a Fat Boy and originally, we were supposed to open Fatty’s in Galveston on The Strand… just in time for the Lone Star Rally and Mardi Gras,” says co-owner Angie Regis. She notes that the Galveston plan was “slow to come to fruition” and the Seabrook location became available during this time. “The rest as they say is history!” Regis comments with a smile. Regis and Plagens put their heads together and got busy formulating a plan to create Seabrook’s next hot spot just behind the fabled Curley’s Corner. The upstairs location was formerly a bicycle shop so many renovations were necessary to complete the venue for a bar. They had to turn a house into a home so to speak… “We worked on tweaking our business plan, secured our funding, and started renovations from the ground up. In the summer we hung our sign,” Regis notes and proudly says. “That was on June 27th!” After months of hard work, Fatty’s came alive on October 15th. The venue’s reputation is being built one patron at a time declaring it a local, friendly neighborhood bar. And “local” is just not a relative term. Both Regis and Plagens are local residents living in Shore Acres and in Kemah. Before jumping in and following a dream, Plagens was a delivery driver and Regis worked at NASA for 25 years. In fact, on the venue’s “NASA wall” is Regis’ personal NASA flag. It’s huge. “The flag used to hang in front of Building 1,” she states. “We will be collecting Seabrook memorabilia to put on display, too.”

Live music is on Saturday nights from 9pm to 1am. The acoustics are just too awesome to limit live music to one night, so Fatty’s will be expanding this to Friday nights as well in the future. The jukebox is also an option for music lovers when the live performances are unavailable.
And now, implementing the venue’s grand opening is the next step. On Saturday, December 17, Fatty’s is celebrating the milestone with the

Their sound has been described as “pushing the edges to create a new look in music and performance,” and “a new page in the state-of-pop-music book by merging mix-tape culture, freestyle rap, garage rock and pop-songwriting sensibility.” Currently, Coleman & Chris have an EP on iTunes titled “How It Has To Be.” The first single is “Hurricanes.” The nine-track EP “not only reflects the duo’s journey, but their commitment to making original, electric music for the millennial crowd and beyond. The duo represent the generation who is rewriting the rules in music and live performance through their communities, themselves and their views of the world.” Now the pair, who have been coined “musical tour guides,” will give the Bay Area another opportunity to witness “a musical style relevant to multiple generations who learn through their music.”
