editor’s letter Red, Red Wine

If you love vino as much as I do, then you’re probably going to enjoy poring over this issue of The List. Not only will it direct you to all of the best wine shops around town, but it’s also brimming with helpful tips. If you’re interested in some of the best bottles on a budget or trying overlooked blends, flip to the feature story on p.12, where Andrea Lo quizzes three of Hong Kong’s top wine experts. From there, we get to the bottom of things: where to shop for wine on p.18 and, more importantly, how to get wine delivered straight to your door (p.32). But, wait! Don’t start stockpiling bottles before you’ve set up your own home bar with a cabinet, fridge or a simple rack. On p.24 you’ll find a list of home furnishing stores where you can buy big-ticket storage items. For smaller gadgets and accessories, such as quirky corkscrews and artsy decanters, turn to p.36 and you’ll find a few of our favorite lifestyle stores. Still craving more? What a lush. Lucky for you, Hong Kong is brimming with wine classes for both casual consumers and aspiring professionals. Learn more about tastings, wine regions and pairings with a wine appreciation class or two (p.28).

Cheers!

Aug 5-11 WINE ‘N’ DINE Restaurant Week returns to Hong Kong again, this time taking place in August. The concept first began in New York City in 1998 and has since become the world’s biggest dining event. Participating restaurants include Scala, Madame Sixty Ate, The Pawn, The News Room and many more. All week. Various outlets. Visit www.restaurantweek.hk for more information.

Aug 23-25; 30-31 a night at the ballet

A two-week run of beloved classic “Swan Lake” will open the 2013-14 ballet season—which is no surprise, considering that performances sold out so quickly in 2011 that the ballet resorted to selling standing tickets for the first time in its history. The tragic love story pits Odette, the innocent White Swan, against Odile, the malevolent Black Swan who looks so similar to her lighter counterpart that Odette’s beau is fooled into falling for the wrong girl. Various showtimes. Grand Theatre, Cultural Centre, 10 Salisbury Rd., Tsim Sha Tsui. $140-1,500 from www.urbtix.hk.

Aug 9-18 DIY SANDALS Brazilian flip-flop brand and stalwart summer favorite Havaianas has set up several DIY pop-up sessions in August, where participants can customize their very own pair of sandals. Shop F11, LCX Xplus, Harbour City, 3-27 Canton Rd., Tsim Sha Tsui. Price depending on style of flip-flop and accessories.

Trendwatch Up for Auction? After hearing that friends had a hard time selling their home furnishings in Hong Kong, Steve Freeman saw the opportunity to set up Gresham’s, a middle-market auction house. Located in Ap Lei Chau, the auction house sells homeware valued between $1,000 and $100,000—things that are a little too fancy to pitch into a garage sale but not quite up to Sotheby’s standards. A typical Gresham’s bidding takes about 90 minutes and covers everything from furniture and fine art to ceramics and watches. 408 Harbour Industrial Centre, 10 Lee Hing St., Ap Lei Chau, 2552-1887, www.greshams.com.hk

Lookbook my favorite things

Shuron Ronsir 6 Glasses I’ve been wearing glasses since I was six years old, so I have a big collection. But I like these, which are from Visual Culture in Causeway Bay, because they are very 60s.

Astier de Villatte Mug This is from a shop I love in Paris. I’ve had it for 10 years. I dropped it twice—you can see the cracks. Sometimes there are products that we just keep using and don’t want to switch to something else. It’s kind of my lucky mug.

Arnault Castel The owner of hip boutique Kapok tells Andrea Lo the stories behind his all-time favorite finds. Photos by Andrea Lo. Kapok, G/F, 5 St. Francis Yard, Wan Chai, 2549-9254, www.ka-pok.com

I didn’t care much for expensive watches before, but I found this brand in the UK and now I wear this watch every day. The design is very simple, with clean lines and no logo.

Orangina Light Some people don’t know this, but Orangina is based in the South of France. This is really what I drank as a kid. It was very difficult to find this in Hong Kong, so I was really sad until I finally we found it in CitySuper. Now that they have a light version, I drink this one instead.

Heeley Menthe Fraiche Fragrance This fragrance is a mix of green tea and mint. All of Heeley’s fragrances are unisex; they are kind of complicated but very fresh. When it’s a hot day, this perfume kind of wakes me up.

Soulland SweatShirt Many people here don’t know the character Babar. It’s from a French children’s book and my favorite character. I wear this when I’m on holiday and my mom is like, “How old are you? You’re too old to be wearing this kind of thing!”

Joey Roth Speakers I listen to music all day long, from the moment I arrive until I leave the office. The speakers are made from ceramic and wood, which is good for acoustics. They look and sound good and don’t take up too much room.

Hip Cellar

Uncorked

Hong Kong wine experts tell Andrea Lo about wine appreciation, the best budget bottles and overlooked blends.

Erastus Yu, Owner of Hip Cellar Recently opened Hip Cellar is an ideal spot to enjoy a bottle or two while overlooking the harbor. Owner Erastus Yu talks about his top tips and favorite wines. Hip Cellar, 2979-0108, www.hipcellar.com

Lysanne Tusar, Founder of The 8th Estate Sourcing wines from all over the world, The 8th Estate is one of the best homegrown wineries in Hong Kong. Founder Lysanne Tusar tells The List about the wine scene in Hong Kong. The 8th Estate Winery, 2518-0922, www.the8estatewinery.com

Mathieu Pouchan, Etc Wine Shops Sommelier As the chief sommelier at Etc Wine Shops Mathieu Pouchan definitely knows a thing or two about fine wines. He discusses the best wine regions, as well as his favorite local bars. Etc Wine Shops, 2577-2009, www.etcwineshops.com

12

The List: How has the wine business changed over time in Hong Kong? Erastus Yu: With support from the government and related associations, wine culture has become very popular—and not only for high-income earners. Mathieu Pouchan: I’ve only been in Hong Kong for a year and a half, and even in that time I can see that Hong Kong is becoming an extremely dynamic market. The List: Do you think Hong Kong people know how to appreciate wine? Lysanne Tusar: Absolutely. There is such a focus and curiosity about wine in Hong Kong. The appreciation level has evolved dramatically. EY: I think Hong Kong people are becoming more and more appreciative of wine. They now pay more attention to proper glassware, serving temperatures and storage conditions. The List: What can people do to learn more about wine? LT: There are so many internationally certified schools in the city. There are also fantastic web resources, such as Wine Times (www. winetimeshk.com), that focus on wines available in Hong Kong. And, of course, try something new as often as you can! MP: You can stay in Hong Kong, read books and taste wine, but the best way to learn is to spend time at a vineyard. One of the best regions is Burgundy. Bordeaux also offers a lot, as there are great estates and it is a bigger city.

The List: What is with the Bordeaux obsession?

The List: What bottle is on your kitchen counter right now?

EY: We have to admit Bordeaux wines dominate certain occasions, especially for business purposes. It’s quality assurance and has a brand status.

EY: In terms of everyday wine, it would be Dr. Burklin-Wolf Riesling Trocken Pfalz Germany 2009. It is refreshing with lots of citrus fruits, and has a very nice acidity—great to have in the summer.

LT: It stems from a level of comfort and reliability. As one of the first international wines to get to Hong Kong, Bordeaux has a long history here.

LT: I have a bottle of 1997 Salon Champagne that was recently gifted to me, and I’m just looking for a special time to open it!

The List: What are your top tips for wine tasting and pairing?

EY: Greywacke Pinot Gris. It’s refreshing and good to pair with Chinese cuisine.

LT: Be adventurous. You won’t like everything you try—and that’s ok. The best part is the discovery.

The List: What is the best wine to buy on a budget?

MP: In the summer, a light red or white wine is preferable to a bold red. Also, people usually drink red with cheese, but white wine can be much friendlier.

MP: Generally speaking, for a budget wine of under $200, don’t go for a famous producing region. You are paying for the name. You’ll find better value from lesser-known regions—for example, Sauvigny in Burgundy.

The List: Where is your favorite place to drink wine?

The List: What is a surprising blend that people might overlook?

LT: Personally, I enjoy grabbing a bottle and heading to the beach for a picnic. If I’m in town, I like to head to Classified as they have excellent cheeses to match.

EY: Les Pensées de Pallus Chinon Loire France—it combines classic Cabernet Franc aromas and Chinon flavors.

MP: Red Bar at IFC—bringing my own wine and drinking outside. A place with a great wine list is The Pawn in Wan Chai, where you can sit on the outdoor terrace or rooftop.

14

MP: White and red grapes, for example Shiraz en Viognier. It makes the Shiraz much softer and brings out the aroma.

Glass Act Trying to choose the perfect wine glass? Mathieu Pouchan, the chief sommelier at Etc Wine Shops (see full interview, p.12) says you don’t necessarily need to spend a fortune.

The Basics: Three of the most common

simple question: How strong is the aroma? On the Nose: Basically, the more complex a wine’s nose, the more delicate your choice of glass should be. A bottle with a lighter aroma can work perfectly well in a less expensive, machine-made glass, but a powerful wine needs a thinner, mouth-blown glass to bring out its subtle flavors.

types of wine glasses are champagne, Bordeaux and Burgundy. The distinct

shapes make them easily recognizable. Sniff Test: Once you’ve chosen the right shape, Pouchan suggests you ask one

The champagne flutes’ tall and narrow shape keeps your bubbly fizzing for as long as possible. The straight frame also complements champagne’s dry and acidic nature.

Looking Good?

Your ad will too. We’ll even help you design it. For more information on advertising in The List, call us at (852) 2850 5678 38

Perfect Pair: For a basic champagne glass such as Riedel Ouverture ($135), Pouchan recommends Veuve Clicquot’s Yellow Label Brut NV ($585), a medium-bodied blend of chardonnay, pinot noir and pinot meunier with a sweet, fruity finish. Perfect Pair: A Riedel Grape champagne glass ($375) should hold a rich vintage such as Pol Roger Winston Churchill 1990 ($3,590); the wider shape captures the complex nose of orange and honey.

Know & Tel

Bordeaux glasses have broader frames, which allow generous breathing space and enhance the wine’s earthy and powerful aroma. Perfect Pair: You can grab a Riedel Vinum Bordeaux glass ($295) to enjoy Senejac 2005 ($225), a medium-bodied wine with an expressive nose of red berries and subtle hints of bell pepper. Perfect Pair: Pouchan advises not to waste the exquisite Riedel Sommeliers Bordeaux Grand Cru glass ($1,025) on any $200 wine. He recommends

Château Haut-Brion 1995 ($19,890), which has a powerful earthy nose, blackcurrant and licorice aromas, plus a hint of blond tobacco.

Brocard Chablis 2010 ($199), which has a fruity aroma of white fruits.

Burgundy glasses are wider than Bordeaux glasses. Generally, you won’t decant Burgundy because it is very fragile. Instead, you need a wider glass to let it develop its aroma at its own pace. Perfect Pair: A Riedel Vinum Chablis glass ($1,560 for eight pieces) would go with a younger wine such as Jean-Marc

Perfect Pair: A Riedel Sommeliers Burgundy Grand Cru glass ($1,025) deserves to hold an older and richer vintage, such as Robert Arnoux Romanee St. Vivant Grand Cru 1991 ($4,250). On the nose, this complex wine displays black cherry, licorice, roasted meat, and earthy flavors with a black fruits finish. Photos by Etc Wine Shops, www.etcwineshops.com

Dear Mr. Know-It-All, I am visiting Hong Kong at the moment and have some free time to explore ideas for upcoming home projects—that is, remodeling my kitchen. Is there a general area in Hong Kong where one might find many kitchen remodeling stores? – Lurking Around You’re in luck. Our city happens to have various streets lined with shops that sell particular products— usually, the streets are nicknamed after what they sell. Visit Wan Chai’s Lockhart Road, which is lined with tons of kitchen appliance shops sporting model kitchens, equipment and appliances. Since you can’t really bring a whole kitchen home with you, you may want to shop for utensils along Shanghai Street in Ya Ma Tei. You will find high-quality kitchen equipment and crockery for both Western and Chinese cooking. Asia Stainless Steel Engineering Ltd. (302 Shanghai St., Yau Ma Tei) is a popular choice, as staff are knowledgeable and

happy to speak in English about the products. For a real Chinese-style chopping board, head to Man Kee (341 Shanghai St., Yau Ma Tei, 23322784, www.mankee.hk), which has been open for more than 50 years and is the last of its kind in the city.

Dog daze Dear Mr. Know-It-All, My girlfriend and I are relocating to Switzerland early next year, and we really don’t want to leave our neurotic dachshund behind. Are there any reputable pet moving companies in Hong Kong that will be able to help us with this? – Repatriating Rover Moving can be extremely stressful and disorientating—especially for man’s best friend. Try Ferndale Kennels (SX-2031, Pak Tam Chung, Sai Kung Country Park, 2791-1776, www.ferndalekennels.com), run by Sally Tucker, who is qualified in animal husbandry. Helping you minimize your pooch’s traveling trauma, their dog relocation service has a worldwide reach and, in most cases, can provide door-to-door services between countries.

Amah Rock

WHY WE LIKE IT Located on a peaceful hilltop within Lion Rock Country Park, the legendary Amah Rock, also known as “Mong Fu Shek,” is shrouded by mystery. Surrounded by vibrant foliage and mischievous monkeys hanging from branches, the uphill trek offers spectacular views of Hong Kong. As you reach the lower peak, the unique stone—resembling a woman carrying a baby on her back—comes into view. Stretching 15 meters high, the rock is not man-made, as one might think, but instead was naturally formed over the years. As legend has it, Amah Rock was once a woman—the wife of a fisherman who had set sail to seek a better livelihood for his family. The woman longed for her husband’s return, worrying that he may have drowned at sea. Day after day, she sat atop the mountainside, searching the waves for a flicker of hope. Eventually Tin Hau, 50

the Goddess of the Sea, took pity on the woman and turned her to stone so her spirit could reunite with that of her husband. The inspiration behind many classical Chinese poems, Amah Rock is a symbol of patience, loyalty and enduring faith.

GETTING THERE Take the MTR to Wong Tai Sin Station. From there, you can either take a taxi or the No. 37A bus to Tsz Wan Shan North Bus Terminus. Disembark at the staircase behind the bus terminus, and then climb the concrete steps up to the Shatin Pass. Next, take the Wilson Trail entrance and follow the trail, which descends to a catchwater drain. Follow the catchwater until you see sign posts that lead to Amah Rock.
