Scopriamo assieme l’arte e i profumi di una volta Anni fa i bergamaschi che si incontravano in Piazza Vecchia per il tradizionale aperitivo al bar dopo la messa in Duomo o nella Basilica di Santa Maria Maggiore videro un inconsueto spettacolo. Una fila di persone che dalla scalinata del Palazzo della Ragione si allungava per tutta la piazza fino ad occuparne i quattro lati. Erano i visitatori che aspettavano di entrare alla grande mostra dedicata a Giovanni Battista Moroni. Tanta era la fama dell’artista bergamasco le cui opere per la prima volta venivano esposte nel cuore dell’antica Bergamo Alta. Fu un evento che richiamò appassionati anche dall’Europa e segnò una svolta nella valorizzazione del celebre pittore e del patrimonio artistico bergamasco. Se il nome del Moroni, le cui opere sono conservate nei maggiori musei, è molto noto, non altrettanto può ancora dirsi del patrimonio storico e artistico di Gandino, un tempo fiorente centro laniero che si affaccia sulla media Valle Seriana.

Di Gandino meritano di essere conosciuti la basilica e il museo, oltre a signorili palazzi. Ma il suo nome incomincia a diffondersi tra i buongustai per la produzione di farina di mais, l’ingrediente principale della polenta, che ben si accompagna a saporiti piatti della tradizione bergamasca.

Let’s discover together the art and atmosphere of times gone by Many years ago, the people of Bergamo who met in Piazza Vecchia for the traditional aperitif in the bar after Mass in the Cathedral or Basilica of Santa Maria Maggiore would experience a strange sight. A line of people would be queuing from the steps of the Palazzo della Ragione around the square until they occupied all four sides. They were visitors waiting to enter the great exhibition dedicated to Giovanni Battista Moroni, such was the fame of the Bergamask artist whose works were being shown for the first time in the heart of Upper Bergamo. It was an event that attracted art lovers even from Europe and marked a turning point in the appreciation of this celebrated painter and the artistic heritage of Bergamo. If the name of Moroni, whose works are kept in some of the most important museums, is very well known, this cannot yet be said of the historical and artistic heritage of Gandino, once a flourishing wool centre that sits in the middle of the Seriana Valley. The basilica and museum are well worth visiting in this town, as are the stately residences. But its name has also recently begun to circulate among gourmets for its production of maize flour, the main ingredient of polenta, which is an excellent accompaniment to the traditional tasty dishes of the Bergamo area.

ome molte località della Bergamasca il paese di Serina è ricco di storia.

Appassionati d’arte e turisti vi si recano richiamati dal nome di Jacopo Palma il Vecchio, il grande artista che vi nacque nel 1480. Nel corso del 2015 l’afflusso di visitatori a Serina andrà sicuramente aumentando in occasione della grande mostra su Palma il Vecchio che, promossa dalla Fondazione Credito Bergamasco e dall’Università degli Studi di Bergamo, si terrà a Bergamo nelle sale della Galleria d’Arte Moderna e Contemporanea (GAMeC) in coincidenza con l’Expo 2015 di Milano.

Come molti altri giovani bergamaschi, Jacopo Negretti, noto come Palma il Vecchio, aveva vent’anni quando si recò a Venezia richiamato dal prestigio della città lagunare. La sua fortuna d’artista è testimoniata dalle numerose opere presenti a Venezia nelle più importanti chiese, nei palazzi e nei musei. Celebri le Sacre Conversazioni, i ritratti, le tele a soggetto mitologico, ora nelle principali raccolte in Italia ed Europa.

Pur nella fama che accompagnò la sua esistenza (si spense a Venezia nel 1528) non vennero mai meno i suoi legami con Serina e con Bergamo.

ike many places in Bergamo Province, the town of Serina is rich in history.

Art lovers and tourists come here attracted by the name of Jacopo Palma il Vecchio, the great artist who was born here in 1480. A great exhibition on Palma il Vecchio will most certainly increase the flow of visitors to Serina in 2015.

This exhibition, promoted by the Fondazione Credito Bergamasco and the University of Bergamo, will be held in Bergamo in the halls of the Gallery of Modern and Contemporary Art (Gamec) to coincide with Milan Expo 2015.

Like many other young people from Bergamo, Jacopo Negretti, better known as Palma il Vecchio, was attracted to Venice and arrived in the lagoon city at the age of twenty. His fortune as an artist is testified by the numerous works found in Venice in the city’s most important churches, buildings and museums. Particularly celebrated are his Sacre Conversazioni (Sacred Conversations), and his portraits and canvasses with mythological subjects, now in major collections in Italy and Europe.

Although fame accompanied him throughout his life (he died in Venice in 1528), he never broke his ties with Serina and Bergamo. This exceptional event, which will

Questa rassegna offre la possibilità di approfondire la conoscenza del territorio bergamasco e del suo patrimonio artistico e storico proprio come era già avvenuto in occasione di un’altra memorabile mostra avvenuta qualche tempo fa a Bergamo su Lorenzo Lotto, di cui merita di essere sottolineata l’amicizia con il Negretti e il suo lungo e produttivo soggiorno a Bergamo. è l’occasione per un immaginario viaggio sulle tracce del Lotto che può essere suddiviso tra la città e la provincia iniziando con una comoda passeggiata che si snoda tra Bergamo Bassa e Città Alta. Si parte dalla Chiesa di San Bartolomeo che si affaccia sul Sentierone, tradizionale luogo d’incontro per i bergamaschi.

Nella Chiesa di San Bartolomeo si ammira la Pala Martinengo, il capolavoro con cui il Lotto diede inizio al soggiorno a Bergamo. Si prosegue quindi per la via Tasso fino alla Chiesa di Santo Spirito dove l’artista dipinse la pala d’altare raffigurante la Madonna con il Bambino. Ci si avvia quindi verso Città Alta e si risale la via Pignolo dove ci si imbatte in due chiese con opere del Lotto: la Chiesa di San Bernardino con la pala d’altare della Madonna in trono con il Bambino, un capolavoro di altissima qualità, e la parrocchiale di Sant’Alessandro

This event will offer visitors the opportunity to learn more about Bergamo province and its artistic and historic heritage in much the same way as the other memorable exhibition held some time ago on Lorenzo Lotto, who we should mention was a friend of Negretti and spent a long and productive time in Bergamo. We’ll now take an imaginary journey on the trail of Lotto, which can be divided between the city and the province, beginning with a stroll through lower Bergamo and Città Alta (Upper Bergamo). It starts from the Church of San Bartolomeo, which overlooks the Sentierone, the traditional meeting of the Bergamask people. Here we can admire the Pala Martinengo, a magnificent altarpiece that marked the beginning of Lotto’s stay in Bergamo. We then continue on to Via Tasso until we reach the Church of Santo Spirito where the artist painted the altarpiece depicting the Madonna with Child. From here we head off in the direction of Città Alta and walk up Via Pignolo, where we find two churches with works

della Croce nella cui sacrestia è conservata una piccola tela raffigurante la Trinità. Una volta dentro la cerchia delle Mura veneziane si incontra la Chiesa di San Michele al Pozzo Bianco con l’affresco della cappella della Vergine.

Infine si raggiunge la Basilica di Santa Maria Maggiore, dove spiccano le straordinarie tarsie lignee del coro, realizzate su suo disegno.

Una mostra alla Royal Accademy of Arts di Londra ci conduce a un altro grande artista bergamasco, Giovanni Battista Moroni, le cui opere sono nei maggiori musei di tutto il mondo e di cui possiamo seguire le tracce della sua importante presenza nella Bergamasca. Nato nel 1522 ad Albino in Valle Seriana, a pochi chilometri da Bergamo, è famoso soprattutto per i ritratti, dove i personaggi sono raffigurati nella loro realtà, senza concessioni ad abbellimenti o a piaggerie. Nei suoi dipinti sono raffigurati non solo esponenti di famiglie aristocratiche bergamasche, ma anche letterati, borghesi, mercanti, artigiani, nei quali spicca la ricerca di una verità umana profonda. Celebre soprattutto il ritratto del Sarto alla National Gallery di Londra. Dipinti dell’artista di Albino sono diffusi su tutto il territorio bergamasco. Non esiste, invece, nella Bergamasca un dipinto di uno dei più celebri pittori italiani, Michelangelo Merisi da Caravaggio, la cui fama è universale. Nato nel 1571, è molto controverso il suo luogo d’origine, a Caravaggio, nella pianura bergamasca, o Milano.

Dopo l’apprendistato in questa città, conobbe i primi successi a Roma divenendo ben presto artista di grande fama. Per il suo carattere turbolento, fu coinvolto in

Finally, in the Basilica di Santa Maria Maggiore, we can see the extraordinary inlaid wooden panels of the choir, which were made according to Lotto’s drawings.

An exhibition at the Royal Academy of Arts in London leads us to another great Bergamask artist, Giovanni Battista Moroni, whose works can be found in all major museums worldwide and whose presence was widespread in the Bergamo area. Born in 1522 in Albino in the Seriana Valley, a few kilometres from Bergamo, he is most famous for his portraits, in which the characters are depicted in a uniquely realist manner, without embellishment or flattery. His paintings feature not just members of aristocratic Bergamask families, but also scholars, middle class men and women, merchants and artisans, and reveal a profound humanity.

His most famous work is the portrait of the Sarto (Tailor) in the National Gallery of London, but the artist’s works are found throughout the Bergamask area.

There are no paintings in the area, instead, of one of the most celebrated painters in Italy, Michelangelo Merisi da Caravaggio, whose fame is universal. Born in 1571, his place of birth is much disputed, being either Caravaggio on the plains of Bergamo Province or Milan. After time as an apprentice in this city, he firstly achieved success in Rome and soon became an artist of great renown. Because of his unruly character, he was often involved in fights and arguments, which led to arrests and trials. After the umpteenth fight, he fled from Rome and began a

Dopo l’ennesima violenza, fuggì da Roma; incominciò così un’esistenza errabonda, soggiornando in varie città dove realizzò capolavori che segnano il suo cammino di straordinario artista. Tra le sue tappe più note Napoli, Malta e la Sicilia. Morì a Porto Ercole, ma merita senza dubbio conoscere i luoghi d’origine di Michelangelo Merisi a Caravaggio e il suo territorio circostante ricco di testimonianze d’arte, con la possibilità di piacevoli soste.

vagabond existence, staying in various cities where he created masterpieces that marked his career as an extraordinary artist. Some of his best known sojourns were in Naples, Malta and Sicily. He died in Porto Ercole, but the places where Michelangelo Merisi began his career, in Caravaggio and the surrounding area, are also well worth getting to know, being rich in art and with many interesting places to stay.

This journey among the best known artists of Bergamo takes us again to the Seriana Valley, to the home of the Fantoni family in the small village of Rovetta. Here we find the museum-house of this extraordinary family of artisans and artists. Of particular renown is Andrea Fantoni, born in 1659, a great sculpture whose masterpiece in the Basilica of Alzano Lombardo is an extraordinary example of the Baroque style in this area. But it is also worth visiting the Basilica of Santa Maria Maggiore in Bergamo, where you can admire the wooden confessional box in which the art of Andrea Fantoni reaches its maximum

Ed eccoci alla fine del nostro viaggio con un altro grande scultore, Giacomo Manzoni, più noto come Manzù, nato a Bergamo nel 1908, le cui sculture sono esposte nei maggiori musei. I suoi inizi sono nell’intaglio del legno frequentando botteghe di artigiani-artisti bergamaschi. La sua fama sale a livello internazionale soprattutto grazie al rapporto che ebbe con Papa Giovanni XXIII, altro grande bergamasco; i due conversavano in dialetto mentre Manzù eseguiva il ritratto del Pontefice. We end our journey with another great sculptor, Giacomo Manzoni, better known as Manzù, who was born in Bergamo in 1908, and whose sculptures are exhibited in all the greatest museums. He began his career carving wood in the workshops of Bergamask artisans and artists. His fame reached an international standing above all due to his relationship with Pope John XXIII, another great man from Bergamo. The two men spoke in the local dialect while Manzù painted a portrait of the Pope.

The Monument to the Partisan, donated by Manzù to the city of his birth, is a prominent feature of the centre of Bergamo.

ELIA AJOLFI

Ajolfi partecipò alla vita artistica della città attraverso la Diocesi di Bergamo e l’Accademia Carrara. Eseguì monumenti funebri e sculture per edifici, piazze e giardini. Molte le sue opere nelle chiese bergamasche. Suoi, ad esempio: gli altari del tempio votivo di Santa Lucia e delle parrocchiali di Sant’Andrea e Sant’Anna in Bergamo Alta e il pavone di bronzo in Piazza Dante.

Ajolfi participated in the life of the city through the diocese of Bergamo and the Accademia Carrara.

He made funeral monuments and sculptures for buildings, squares and gardens. Many of his works are in Bergamask churches. Examples of these are: the altars of the votive temple of Santa Lucia and the parish churches of Sant’Andrea and Sant’Anna in Upper Bergamo and the bronze peacock in Piazza Dante.

TRENTO LONGARETTI è nato a Treviglio nel 1916. Si dedica, oltre che alla pittura e alla grafica, anche all’arte della vetrata e del mosaico. Ha esposto non solamente in Italia, ma anche all’estero (Londra, New York, Parigi, Buenos Aires, Toronto, Ottawa, Amsterdam, Monaco e Stoccolma). Le sue opere oggi sono conservate in Vaticano, nel Duomo e nella Basilica di Sant’Ambrogio a Milano, nel Duomo di Novara, nel Museo d’Arte Moderna di Basilea, nella Galleria D’Arte Moderna e nel Museo della Permanente di Milano e, naturalmente, all’Accademia Carrara di Bergamo. A Bergamo altre sue opere all’interno del Palazzo Creberg, del Tempio Votivo e della parrocchia Santa Grata.

He was born in Treviglio in 1916. He was not only involved in painting and graphics, but also in mosaic and stained glass work. He exhibited both in Italy and abroad (London, New York, Paris, Buenos Aires, Toronto, Ottawa, Amsterdam, Munich and Stockholm). His works are kept in the Vatican, the Cathedral and in the Basilica of Sant’Ambrogio in Milan, the Cathedral of Novara, the Museum of Modern Art of Basle, the Gallery of Modern Art and Permanent Collection of Milan and, of course, the Accademia Carrara of Bergamo. Other works by Longaretti can be found inside Palazzo Creberg, and the Votive Temple and parish church of Santa Grata.

on è difficile arrivare nel centro di Gandino. Lasciata l’auto in uno dei parcheggi alla periferia, ci avviamo a piedi. è il modo migliore per incominciare a conoscere le caratteristiche del paese, una via dopo l’altra dando la preferenza all’itinerario che si snoda nella parte più antica dell’abitato. Dopo un po’ il punto di riferimento diventa il campanile che svetta sui tetti. E non è un campanile qualsiasi. è quello della Basilica dedicata a Santa Maria Assunta, autentico scrigno collocato nel cuore del centro storico. Alto ben 74 metri, sormontato da una cupola a cipolla e che termina con una cuspide in rame di ben 13 metri, lo si distingue nella prospettiva tra le case che a tratti lasciano il posto a monumentali palazzi. Sono il segno di un passato di grandi ricchezze accumulate tra il XVI secolo e quello successivo con la lavorazione della lana e i commerci che si estesero in Italia e anche in Europa, in particolare in Tirolo, Austria e Ungheria. Il modo migliore per incominciare la giornata a Gandino è la visita della monumentale basilica che è un condensato di storia e di opere d’arte in cui la comunità si è riconosciuta secolo dopo secolo. Collocata al culmine della piazza con felice soluzione prospettica, la basilica si distingue per le dimensioni e per le tonalità dei colori delle pietre della facciata, dove spiccano i portali realizzati dai veneziani Domenico Rossi e Antonio Cavalleri. Anche per la cuspide che sormonta il campanile si fece ricorso a manodopera non locale: il bolzanino Francesco Shgraffer e il trentino Paolo Terzi. Numerose le opere d’arte che ne decorano l’interno, cui vanno aggiunte quelle conservate nel vicino Museo della Basilica, inaugurato nel 1929. A questa prima sezione artistica del museo si aggiunge una seconda dedicata ai presepi: sono circa 280 distribuiti in tre saloni con esemplari di notevole pregio. Di grande valore per comprendere la storia e l’economia, e le basi su cui si fondò la prosperità del paese, è la sezione dedicata all’archeologia tessile, che espone telai, meccanismi, tessuti e documenti. Una preziosa testimonianza di come Gandino fondò le proprie fortune sulla produzione dei pannilana e del panno grosso bergamasco, rustico e robusto, resistente all’acqua e quasi impermeabile alla pioggia, l’ideale per giubboni e mantelli. t’s not difficult to get to the centre of Gandino. Once you have left the car in one of the car parks on the outskirts, you should head there on foot. This is the best way to get to know the town’s features, one street after another, giving preference to a route that winds through its oldest part. After a while, your point of reference becomes the belfry that towers above the rooftops. And it’s not just any belfry. It belongs to the Basilica of St. Mary of the Assumption, a treasure trove located in the heart of the old town.

It stands at some 74 metres, topped by an onion-shaped dome with a copper spire of 13 metres, and stands out among the houses that alternate with monumental buildings.

These are the signs of a past filled with great riches, which were accumulated between the XVI century and the next from wool processing and trading that extended throughout Italy to Europe, in particular Tyrol, Austria and Hungary. The best way to begin a day in Gandino is to visit the monumental basilica, which condenses history and works of art and in which the community has identified century after century. Located at the end of the square in a wellchosen position, the basilica is distinguished by its size, for the colours of the stones on its façade, and by the large doors created by the Venetians Domenico Rossi and Antonio Cavalleri. Even the spire on top of the belfry was constructed using non-local labour: Francesco Shgraffer from Bolzano and Paolo Terzi from Trento. Numerous works of art embellish its interior, while others are kept in the nearby Museum of the Basilica, which opened in 1929. Besides the art section, this museum has a second section dedicated to nativity scenes.

It displays approximately 280 of these distributed in three large halls and has some valuable examples. Another section dedicated to textile archaeology, which displays looms, mechanisms, fabrics and documents, is of great value in understanding the area’s history and economy and the bases on which the prosperity of the town was founded. It provides valuable documentation of how Gandino made its fortune producing woollen cloth and thick Bergamask cloth, which was rustic and robust, waterproof and almost impermeable to rain, making it ideal for coats and cloaks. thanks to the initiative of its inhabitants who displayed skills as able craftsmen and businessmen as well as merchants. Dotted around the town are the aristocratic residences of the families who accumulated great riches; some of the most interesting are Palazzo Spampatti, Palazzo Loverini and Palazzo Giovanelli. The fortune of the latter family was such that its members held important roles in Venice and also acquired titles of nobility in the kingdom of Hungary as a result of close ties with Emperor Ferdinand III of Habsburg. Other significant examples of Gandino’s past are the fifteenth century Palace of the Vicar, now the town hall, which is flanked by the sixteenth-century building of the Salone della Falle, situated in Piazza Vittorio Veneto. In addition to the numerous churches, the Monastery of the Ursuline Sisters is particularly interesting. This monastery was once occupied by Benedictine Sisters who settled there in the seventeenth century. But one of the most interesting features of the town is the presence of alleyways, narrow passages, porticoes, farm buildings and the ruins of medieval fortifications which give us an idea of the ancient layout of the town.

A pleasant stroll among these old buildings, at lunch time, will lead you in discovery of Gandino’s restaurants, which offer wholesome menus that combine tasty food with a dash of history. Over the past few years, there has been an extraordinary revival in the cultivation of barbed maize, an ancient variety that, according to recent research, was grown for the first time in Gandino in the 1620s - the first time it was planted in the Lombardy countryside.

The interest aroused by the discovery of this variety has given rise to a series of initiatives based on research and promotion, which have excited the curiosity of numerous people, including restaurateurs, bakers, confectioners and ice-cream makers. In addition, naturally, to

La fortuna di quest’ultimo casato fu tale che ricoprì importanti cariche a Venezia acquisendo anche importanti titoli di nobiltà nel Regno d’Ungheria, frutto degli intensi rapporti con Ferdinando III d’Asburgo. Altre significative testimonianze del passato di Gandino sono il quattrocentesco Palazzo del Vicario, ora sede municipale, affiancato dal cinquecentesco Palazzo del Salone della Falle, situati in Piazza Vittorio Veneto. Oltre alle numerose chiese, spicca il Monastero delle Suore Orsoline in origine occupato da suore benedettine che vi si insediarono nel Seicento. Ma una delle caratteristiche del paese è anche la presenza di vicoli, stretti passaggi, porticati, rustici, resti di fortificazioni medievali che rivelano l’antica trama edilizia dell’abitato. è sicuramente piacevole passeggiare tra tutte queste testimonianze che all’ora di pranzo possono condurre alla scoperta di come Gandino stia proponendo menu dove compare la tradizione più genuina, con la storia che va sottobraccio a piatti molto gustosi.

Tra l’altro, negli ultimi anni si è assistito allo straordinario recupero della coltivazione del mais spinato, una varietà che, secondo recenti ricerche, venne seminato per la prima volta a Gandino negli anni Venti del ‘600. Addirittura il paese ne vanterebbe la primogenitura nella campagna lombarda. L’attenzione suscitata dalla riscoperta di questa varietà ha dato vita a una serie di iniziative che, a partire dalla ricerca e dalla promozione, ha suscitato l’interesse di numerosi operatori coinvolgendo nel paese ristoratori, fornai, pasticceri e gelatai. Tra i prodotti più apprezzati, oltre naturalmente alla polenta, spiccano il tipico Biscotto Melgotto, gallette, torte e gelati dove la farina di mais, sapientemente lavorata, è una presenza che li rende

particolarmente gustosi. Vengono anche proposti menu di degustazione dove il mais è presente dalla prima portata all’ultima. Nel corso dell’anno vi sono numerose occasioni in cui queste tipicità si legano alle tradizioni più genuine richiamando un gran numero di buongustai e di turisti, come la Fiera di San Giuseppe e “I giorni del Melgotto”. Ma le numerose opportunità offerte da Gandino non si concludono qui. Se dopo aver apprezzato le caratteristiche del paese, il suo patrimonio d’arte e di storia oltre alle sue specialità gastronomiche, il turista dispone ancora di un po’ di tempo, vale la pena rivolgere l’attenzione alle alture attorno all’abitato, con vaste distese verdi, dove si snodano percorsi molto vari, da quelli adatti alla passeggiata per genitori con i bambini agli itinerari per appassionati di trekking e di mountain bike.

ra profumi di cucina e i sapori della buona tavola, l’autunno e l’inverno sono le stagioni ideali per apprezzare due tipici prodotti della Bergamasca: la polenta e i salumi.

La prima viene proposta nei menu durante tutto l’anno, ma niente di meglio che della fumante polenta quando l’aria incomincia a rinfrescare. è l’ideale per comparire accanto ai funghi, al brasato, agli arrosti, comunque ovunque ci siano sughi ed intingoli che ben si accompagnano alla polenta.

Che cosa sia quest’ultima è nota anche a quanti non l’hanno nelle proprie abitudini alimentari. Fino alla metà del secolo scorso la polenta era spesso il piatto principale delle popolazioni montane e di parte della pianura nell’area che va dal Piemonte al Veneto. Molto diffusa nelle vallate bergamasche, la sua presenza sulla tavola era andata gradualmente scomparendo con i profondi cambiamenti delle abitudini alimentari.

Negli ultimi tempi questo cibo antico e apprezzato ha fatto la sua ricomparsa con la graduale riscoperta dei piatti tipici. Ciò si deve anche alla passione di molti cuochi e anche dei buongustai che hanno portato alla valorizzazione non solo della qualità del mais e delle sue coltivazioni ma anche della produzione della farina. Non più quindi mais prodotti e macinati ricorrendo a cicli industriali, ma con la valorizzazione di tutto quello che è genuino, compreso l’uso di antichi mulini. L’esempio viene da paesi come Gandino, in Valle Seriana.

mong aromas of the kitchen and flavours of good food, autumn and winter are the ideal seasons for enjoying two local products: polenta and cured meats. The first appears on menus all year round, but nothing is better than piping hot polenta when the air begins to get cold. It is ideal as an accompaniment for mushrooms, braised and roast meats or, however, any dish that has plenty of sauce or gravy. Polenta is even well known among those who do not eat it regularly as part of their diet. Until the middle of the last century, polenta was often the staple ingredient of the diet of people living in the mountains and the area of the Po plain that extends from Piedmont to Veneto. Eaten regularly in the Bergamask valleys, it gradually began to disappear from the table due to changes in dietary habits.

Lately this ancient and much enjoyed food had returned with the rediscovery of local dishes.

This is also due to the passion of many chefs and gourmets, who have encouraged the appreciation not only of the quality of the maize and its cultivation, but also of maize flour production.

Preference is no longer given to maize produced and ground in industrial cycles, but to the appreciation of all that is genuine, including the use of old mills.

The example comes from towns like Gandino, in the Seriana Valley. Other towns in Bergamo province are following the same route with the aim of promoting the product more widely.

nell’ambito di una sempre più ampia valida valorizzazione. E proprio in occasione del grande appuntamento dell’Expo 2015 a Milano la Bergamasca presenterà un cibo della più genuina tradizione delle montagne bergamasche, da secoli diffuso in modo particolare negli alpeggi. Si tratta della polenta taragna, molto gustosa e saporita per la quale di solito si ricorre oggi a una miscela di farina di grano saraceno e di farina di mais prodotte ancora come un tempo e per la cui cottura si ricorre al paiolo in rame.

Si tratta di un piatto robusto, con l’impiego di burro e di formaggi d’alpeggio in gran quantità. Una volta l’ideale per far fronte al grande consumo di calorie in condizioni ambientali disagiate, alta quota e temperature molto fredde. Oggi la polenta taragna è sempre più apprezzata per i sapori forti e genuini. E i risultati di questa sua riscoperta e valorizzazione si vedranno tra i frequentatori dell’Expo.

Dove c’è la polenta non possono mancare i sapori e i profumi dei salumi della terra bergamasca. Un posto privilegiato lo occupa il salame. La tradizione di un tempo e non ancora scomparsa vuole che la stagione ideale per preparare il salame sia l’autunno nel periodo legato alla festa di San Martino, ossia l’11 novembre. Tuttavia oggi più che allora si punta sulla qualità dei maiali. La terra bergamasca vanta ottimi salami prodotti sia con gli allevamenti di pianura e di montagna. Attenzione: sulla tavola il salame deve comparire affettato manualmente con il coltello, solo in questo modo il suo profumo inconfondibile ben si combina con la polenta che esce fumante dal paiolo dopo un’accurata cottura. Si assiste a una rinnovata attenzione tra i buongustai per il lardo, candido e tenero, dall’aroma delicato che fa la sua comparsa negli antipasti e che i più preferiscono assaporarlo con la polenta calda. Altro salume d’antica origine è la pancetta, un insaccato dalla preparazione molto semplice e che trovava posto, accanto al salame e al lardo, nelle dispense delle famiglie contadine della Bergamasca. Una lieta sorpresa per i buongustai è la comparsa di un prosciutto di alta qualità che viene prodotto ricorrendo a maiali lasciati in libertà tra gli alpeggi dell’alta montagna bergamasca.

On the occasion of the great event of Expo 2015 in Milan, Bergamo province will present one of the most genuine foods of the Bergamask mountains, which has been widespread for centuries particularly among people living near mountain pastures.

This is the very delicious and flavoursome polenta taragna, containing a blend of maize flour and buckwheat flour, which is produced as it always has been and still cooked in copper pots. It is a “robust� dish that uses butter and mountain cheese in large quantities, and was once the ideal way for providing the large number of calories needed to face harsh temperatures and high altitudes. Today polenta taragna is increasingly enjoyed for its strong, wholesome flavours. And the result of its rediscovery and promotion will be seen among those attending the Expo.

Wherever polenta is found, the flavours and aromas of local cured meats are an essential accompaniment. Salami occupies a privileged position. Old traditions state that the ideal season for preparing salami is autumn, during the period around the feast of San Martino, on 11th November. Today, more than ever, the quality of the pork is important. Bergamo province can boast excellent cured meats produced with pork from pigs reared on the Po plain and in the mountains.

A word of warning: salami should always be cut at the table with a knife; only in this way will its unmistakeable flavour combine with the polenta poured piping hot from the pot after careful cooking. Soft white lardo (cured pork fat) is also making a revival among gourmets for its delicate aroma, which is served with appetisers and often flavoured with hot polenta. Another cured meat with ancient origins is pancetta, which is very simple to prepare and was ever present, together with salami and lardo, in the larders of peasant families in the Bergamo area. A pleasant new surprise for gourmets is the appearance of a high quality prosciutto, which is produced from pigs that run free among the pastures of the upper Bergamask valleys.
