AJ’s Dockside Restaurant on Tybee is, by design, a fun place to eat, drink and meet up with friends. Alan and Jackie Burn want their guests and their staff to have fun, because eating, drinking, meeting up with and entertaining friends is their idea of fun…! That’s not to say that running a successful restaurant with a staff of fifty-one on a seasonal island is all fun and games, but they both work hard at keeping it from being all work and no play. Every December, in appreciation for a job well done during the season, they load up the AJ’s team on the boat and head over to Daufuskie Island for two-days of fun and games. As described to me, by Alan and Jackie, the AJ’s family disembarks from the boat, races around the island in golf carts to see which team can collect the most firewood, then they dive into a scavenger hunt, play volley ball and dodge ball games, have an ultimate survivor challenge and who knows what else…? I tried to get them to spill some juicy secrets about the AJ’s get-a-way, but they would only say, “what happens on Daufuskie….stays on Daufuskie…!” Alan’s family has owned property on Daufuskie since the 1940’s, so it’s a special place to him. He was born in Savannah, but with an Air Force father he moved around with his family a lot, until returning to Savannah his senior year in high school. Jackie is a local Tybee girl, her brother Wayne Yeo was my best friend through school, so I’ve known her family most of my life. She and Alan have a true “Tybee story book romance;” they first met as teenagers working at Chu’s…! Some years passed and eventually they married and now have two children and five grandchildren. Before opening AJ’s, Alan spent almost thirty-years working for Gulfstream. He learned the art and science of customer service while coordinating the upgrades and repairs of corporate business jets. Jackie continued to work for Chu’s for another eight years, moved on to the newspaper for fifteen or so and then returned to school to study accounting. Along the way they both got their Coast Guard Captain’s licenses and in 2001

they bought a boat and started a dolphin tour business at the fishing camp/marina of what is now the AJ’s docks. They sold the dolphin tour business and in 2003 decided to open AJ’s Dockside Restaurant in the old marina building. Alan was still working full-time at Gulfstream and helping out at the restaurant. It wasn’t very long before the restaurant required both of them full-time and Alan retired from Gulfstream. Due to their respective training and education, Alan focuses on the “back of the house”, fixing things, and nurturing the art of customer service, while Jackie focuses on the “front of the house”, greeting the guests and overseeing the staff and accounting. Alan claims that his title is actually “chief of maintenance”, although he is also the “journeyman sign painter.” In addition to running the restaurant they also rent, kayaks and paddle boards, sell Tybee Bomb Squad and AJ’s hats, teeshirts, koozies and those festive “Infinity” puzzle lights seen in the restaurant and on the dock, so they are busy people…! When not at the helm of AJ’s, they enjoy taking their jet skis to Daufuskie for lunch at the Freeport Marina, grabbing cruises to the Bahamas, Cozumel or flying off to the Abacos. They love to scuba dive and snorkel and once found cannon on a reef north of the Abacos. AJ’s also gives back to Tybee, every December they host the kick-off for the “Tour De Lights Bike Parade”, a festive event with bikes, adorned with Christmas lights, that parade around the island to raise funds for the “Rising Tyde Community Food Pantry.” So next time you’re hungry for some authentic Tybee cuisine, walk, drive, cab, bike, boat or even take your seaplane over to AJ’s to try the scored Flounder, grilled Mahi, boiled Shrimp or other sumptuous delights. Jackie likes the Flounder, but also orders the delicious AJ’s hamburger on occasion and one of Alan’s favorite dishes is the Gumbo over mashed potatoes…! Alan and Jackie are both very proud of their staff, some of whom have been there eight, nine or ten years and credit them and their loyal customers for their restaurant’s success….! Tybee Breeze

Dear Fran, Me and my bride-to-be was kicked out of a local motel a few days ago. She was so upset that now she don’t even want to marry me anymore. She says we’ve been alienated and that I shouldn’t have made her go skinny dipping in the pool. Can I sue that motel for ruining a good relationship? Bummed out and alone, Mister Wonderful Dear Mr. Wonderful, I don’t think you can sue the hotel for alienation of affection or anything else for that matter. Keep your clothes on and your mouth shut and send your brideto-be some flowers and a note apologizing for your bad behavior. She’ll take you back. I can all but guarantee it. Dear Fran, My Mensa friends and I have a question for you. If a person driving a car leaves Tybee heading to the Bubba Gump Restaurant on Market Street in Charleston at the same time that a hummingbird leaves Tybee for the same destination, who will get there first? Inquiring Minds Need to Know, B.N. Bright Dear B.N., Really? A hummingbird travels at 60 MPH and unless it gets hit by a car or eaten by a predator, it will reach the destination in 1 hour and 47 minutes, as the hummingbird (or crow) flies. It takes a person traveling at 60 mph in a car approximately 3 hours to get to Charleston. Why are you asking me this stupid question? Sincerely, Fran

Dear Fran, Does the Tybee Airport have a control tower or not? Somebody told me that that was what the Lighthouse was used for. Is that true? Wondering, Dazed and Confused Dear D&C, WHAT THE…? How many times have you been to the Tybee Airport? I know you’re probably flying a lot but you might want to come in for a landing pretty soon or you’re going to end up in big trouble. Dear Fran, We visited your island a while back and weren’t at all impressed. From now on, we’ll go to Hilton Head or Amelia Island where there are fancier restaurants and golf courses. There is a lot going on with summer here and our municipal budget cycle coming to a close. I have a lot to cover. To start, the Island recently lost the patriarch of one of the Island’s largest and most influential families--Ernest Hosti. Ernest died after a long stay at Tybee’s nursing home. He was a true family man, a dad, grandparent and great-grandparent to dozens of offspring. He was a kind, gentle, caring, giving human being who clearly passed along those traits to his children. Ernest served on Tybee’s city council back the ‘70s and was involved in many civic activities on the Island. My experiences with Ernest were nothing but happy and positive. As newcomers to Tybee, he befriended Jody and I in a way that made us feel welcome. We didn’t have any family here but he made us feel that we were, in his own unique way, part of his family. That meant the world to the two of us at the time and still does today. We will miss you Mr. Hosti more than you know. The Maritime Academy is set to start up in the fall. It will be great to have a school back on our little Island. As of mid-May, one hundred and forty-two students have signed up for the first year. It will start as kindergarten through fourth and ramp up to k through five for year two. The City Council and staff are developing the budget for the 2013.2014 fiscal year. It will be adopted no later than June 30. Our goals are to maintain our existing millage rate, not tamper with the $200, 000 Tybee homestead exemption, maintain and improve our existing level of services, add to our fund balance and carry through on plans for several important capital investments. These capital investments include the construction of a new police building on the north end, the development of a bike path running alongside highway 80, the repaving of Jones Avenue, the replacement of water lines along Jones Avenue and several other smaller scale projects. As these projects are planned and constructed, one of our goals is to continue to reduce maintenance and energy

costs in our public buildings and infrastructure. One other item of interest which goes hand in hand with this is the prospect of purchasing more fuel efficient police cars. While Council has not made a formal decision on this, we are learning a lot about what other cities across the country have done to deal with the reality of gas prices being above $3.00 for the foreseeable future. The Community Resource Committee has worked hard on gathering data on this issue. I also anticipate that we will take a hard look at increasing the amount we set aside annually for beach re-nourishment as we plan for a 2015 re-nourishment project. You may have noticed the beach experienced severe erosion thanks to about four days of sustained high northeast winds and associated wave action that occurred a few weeks ago. We lost a lot of beach which, due to the man-made adjacent shipping channel, will not be replenished naturally. The erosion was more pronounced than any recent storm event I can recall and was especially severe on the north end. If you have not heard about the Biggert-Waters Flood Insurance Reform Act of 2012, I would suggest that you take some time to look into it. To summarize, it was passed by Congress and signed into law by the President as a means of limiting the federal government’s exposure to insurance claims resulting from flood damage. Specifically, the law is phasing out subsidies that are provided for federal flood insurance premiums for second homes that have living space below base flood elevation. Premiums for such properties are set to rise, according to this law, by 25 % annually until such time as the premium paid by the homeowner reflects actual market value. Currently, these premiums are subsidized with federal dollars. The law also will eliminate subsidies once a property is sold such that the new owner will pay a full unsubsidized premium for flood insurance upon taking ownership whether they plan on living in the property or not. Additionally, it should be noted that Tybee has not had an update to our Flood Insurance Rating Map (FIRM) since 1998. We expect an update in 2016 if not beforehand. The results of this update could change our base flood elevation and add areas of the island to what are called ‘velocity zones’ which are theoretically areas where property could be affected by the velocity and force of not only rising water but wave action. I will keep you all updated on these issues and plan on contacting our representatives at the federal level so they can help us to coordinate an information session on flood insurance issues at City Hall in the near future. Attorney Michael Moody D.U.I. and Associated Offenses Did you know that some first DUI convictions can suspend your driver’s license for one year without any hardship permit? That’s right. If you refuse the officer’s request for either a breath or blood test, you license is gone for one year. However, there are ways to prevent the year suspension from happening. That’s what an attorney can help you with. Administrative License Suspension Hearing Did you know that if you do not send a letter asking for an appeal to the Department of Driver Services within ten days of most DUI arrest, your license is suspended automatically? A lawyer can make sure the correct language is used in the Administrative License Suspension letter. Also, for the last three years the Department of Driver Services now requires a filing fee of $150 or you don’t get your hearing. You get a suspension. It used to cost nothing to file an appeal. Evaluating a DUI Case How does an expert DUI lawyer evaluate each case? One, did the officer have a legal reason to stop you, or did the officer just pull you over because you were driving at 3:00 a.m. on a Saturday or Sunday morning? If the officer did not have a legitimate reason to stop you, there’s a good chance

that all the evidence will be thrown out after a motion to suppress, and there will be nothing left to prosecute. That’s right, the state will have to dismiss. What are legitimate reasons for an officer to legally stop you? If the officer witnesses you commit a traffic violation like speeding, running a traffic control device, defective equipment like a tag light being out, failure to dim headlights, etc. Did you know that failure to use your turn signal may not be a legitimate basis to stop if there was no other traffic to signal to? What if the officer does have a legitimate reason to pull you over? Or, the officer may have a reason to be near you because you were in a wreck and the officer responded to the scene. Two, “did the officer have probable cause to believe that you were driving under the influence of alcohol, drugs or alcohol and drugs to the extent you were a less safe driver?” It is not against the law to drink alcohol and drive, so long as you are deemed safe to drive. The odor of alcohol alone is insufficient probable cause to arrest someone for DUI. The odor of alcohol and nervousness is insufficient probable cause to arrest. If that’s all the officer has, then the attorney files a motion to suppress the evidence because there was insufficient evidence. Without evidence, there is no case. What if the officer does establish probable cause by noting some of the following observations in his/her report: Odor of alcohol, unsteady on his/her feet, red eyes, blood shot eyes, slurred speech, lack of balance, belligerent, etc. A combination of some of these observations will establish probable cause for the arrest. How about those field sobriety tests that the officer asked you to take? Never take them even if you are stone cold sober. They are failure designed for everyone whether drunk or sober. These tests are voluntary, meaning you refuse them, nothing negative will happen. Of course the officer will never tell you they are voluntary. Typically the field sobriety test area four standardized test, which are as follows: One, follow the officer’s finger or pen with your eyes. Two, walk nine steps in a straight line heel-to-toes, then pivot and walk back the same way. Three, stand on one foot with your other foot lifted 6 inches off the ground without moving or swaying and counting one thousand one, one thousand two, etc. Why are field sobriety test unreliable and unfair. They are unreliable because many officers don’t know the proper way to instruct them, or to evaluate the results. They are unfair because a 70 year old obese person is evaluated exactly the same way as a 22 year old gymnast. I cannot emphasize it enough. NEVER take the field sobriety test. Three, did the officer expand the scope of the original basis for the stop thereby resulting in a violation of the 4th Amendment against unreasonable searches and/ seizure? If an officer stops you for a seatbelt violation and then starts interrogating you about things that have nothing to do with the reason he/she stopped you, the officer has impermissibly expanded the basis for the stop. The officer has detained you for a period of time longer than is necessary and has unlawfully seized you. If the court

agrees, the evidence of the DUI can be thrown out, and there is nothing left to prosecute with. However, if that officer develops fresh or new probable cause that another crime is being committed other than failure to wear your seat belt, the officer may detain you and continue investigating a possible different offense. That’s why if the officer smells an odor of an alcoholic beverage from the driver, plus sees other signs of intoxication, he/she may shift the investigation to a DUI investigation. Odor of alcohol, glassy eyes and slurred speech would allow the officer to start investigating a possible impaired driver. Four, if the first three questions are not answered in your favor, and the officer arrested you, did the officer read from an orange card the Georgia Implied Consent Warning AT THE TIME OF ARREST? Because driving has been deemed to be a privilege and not a right, any state can condition your ability to retain a license. Georgia law says if you blow .08 or higher, a plea of guilty or a conviction will result in a license suspension. Georgia law says if you refuse the state’s test, your license is suspended for one year with no hardship permit. Unless something horrible or strange happens, like you are unconscious after a car wreck, or you start fighting with the officer, the officer must read the implied consent warning AT THE TIME OF ARREST. If he/she forgets, and doesn’t read it to you until 30 minutes later when you’re at the police station, the test results or the refusal can be suppressed and not allowed into evidence. Should I take the State’s test? If it’s your first arrest and you really believe you’re below the limit, yes. Otherwise you are in danger of losing your license. Part of the implied consent warning allows you to take a test by a person of your own choosing once you’ve taken the state’s test. If the result of the state’s test is .07, .08, .09, .10, then ask the officer to take you somewhere that you can have blood drawn. The breath testing machine is calibrated to reflect a slightly higher result than a blood test, which everyone believes is the most accurate of all test. But be prepared to pay for the test. If you’ve been taking illegal drugs or legal drugs that can impair driving ability, then don’t ask for a blood test. If you just don’t know whether you’re over the limit or not, please do the following: When the officer asks if you’ve been drinking, reply,” Officer, I respect that you’re trying to do your job, but I am not going to say or do anything until I’ve spoken with a lawyer.” Don’t answer his/ her questions about whether you’ve been drinking. Don’t take the field sobriety tests under any circumstances, and refuse the state’s test if you believe you are over the limit.

Associated Offenses Open Container. Don’t drive around with an open container of an alcoholic beverage. While the penalties are mild for this offense, it gives the officer a reason to change the focus of his/her investigation from Open Container to DUI. Marijuana Possession. It is nearly impossible to mask the smell of marijuana. Cops always smell it. It allows them to expand their traffic stop investigation into a drug investigation and a DUI of drugs investigation. You can be arrested and convicted of DUI just because you had enough marijuana in your system to make it less safe for you to drive. Tips Don’t drink and drive if you believe you are impaired. If you believe you are impaired, make other arrangements to get home. A cab ride may seem expensive at the time, but believe me, in the long run, it is a mere pittance compared to the costs associated with DUI. Make sure all your vehicle’s equipment is working, including the tag light, brake lights, head lights, etc. Don’t violate the traffic laws, e.g. don’t speed, use your turn signal, pay attention to your driving and don’t swerve. Most officers who see someone swerve their vehicle at 9:30 on a Tuesday morning will simply suspect the person is on their cell phone, changing the radio dial or maybe lost. If the same officer sees a driver swerve his/her vehicle at 3:00 Saturday of Sunday morning, that officer will assume it is due to drunk driving. IF YOU DON’T TAKE ANY OF THIS ADVICE, THEN CALL ME. WE WILL DO EVERYTHING IN OUR POWER TO GET THROUGH THIS WITH AS LITTLE PAIN AS POSSIBLE.

Seriously By Judy O’Neill

It’s time to four lane the Tybee Road. Seriously. More visitors than ever before are traveling to our island. It seems to me that the island has become busier and busier earlier and earlier with each passing year. Tybee Time/Locals Time has all but disappeared. At one time I was against the widening of the highway because I hated to see the palm trees and oleanders that have always marked the approach to our island disappear. Well, they’re pretty much gone now anyway so let’s just go ahead and make the road wider and, perhaps, safer. And put signs out that say “Please drive 55 AT LEAST.” And add a traffic light at the Crab Shack turn. Seriously. Okay. That’s my serious thought for the month. Rehab is over rated. Seriously. I’ve never been to rehab, not yet anyway. I will tell you though that after all the great celebrations and festivals we’ve had so far this year, I may just be a candidate before long. I’ve known people who’ve gone to rehab. It pretty much failed. Think of Lindsay Lohan. That’s like repeat failure. I’m sure there are some success stories but I don’t know of any. Well, Elizabeth Taylor did meet her umpteenth husband in rehab and Betty Ford made a fortune with rehab. Some people should NOT wear bathing suits. Seriously. Whoa, baby. I went to the Pier a few days ago and did some people watching. I don’t know who held me spellbound the longest. The beer gut guys with that awful overhang or the obviously “with child” women in skimpy bikinis. Put on some clothes, for goodness sakes. You’re creeping us out. Seriously, really. I want the Putt-Putt golf course and waterslide back. Seriously. I need something to do besides sit on the porch and watch the world go by when I’m not working. Sitting on the porch can lead to drinking, which can lead to the aforementioned over rated rehab. I’ve been considering buying a Harley Davidson for a while now. My concern with that is that I don’t really like noise. And motorcycles are noisy. Wonder if they could customize one for me and make it run a little more quietly. What do you think? Seriously. Maybe I’ll just buy all the leather vests and boots instead and look the part without all the noise. That would lead to a tattoo and probably rehab. Seriously. Conclusion of Mayor Lovell’s 1912 Report Looking back at last month’s article with the first part of Mayor Lovell’s annual report, downtown Tybee must have been quite the place in 1912 with convicts camped out at 12th Street, disturbers of the peace locked up at the new facility on 16th Street (built in 1911 to replace the one destroyed by fire in 1910 set by the detainee being held at the time), kerosene lanterns, no cars but plank walks everywhere, and merchants selling “Non Intoxicants made from Cereals” on just about every street corner. Continuing with Mayor Lovell’s FY 1912 report: “The Scavenger Dept [garbage collection] was operated without any complaint, but the increasing number of cottages, Etc., will necessitate the operation of two wagons the coming season. Heretofore the hotels have handled their own garbage, but the past season demonstrated that we would have to handle it, by burning and charging the expense of same to them. To this end a McCall Incinerator has been purchased and will be installed on 15th Street west of Main Street. [Add garbage incineration to the list of activities going on in downtown Tybee.] “On Aug. 27th and 28th 1911, this island was visited by a severe hurricane. Fortunately the wind blew from the lands, and that while considerable damage was done, it amounted to very little compared to what would have happened had the wind come from the ocean. The Grand Walk on Chatham Ave West, was badly damaged – this has since been repaired. “The Police Department did good work in handling the largest number of people in any one season, the force consisted of the Chief of Police and three uniformed patrolmen – no extra men being employed. During the year there were 79 arrests: Disorderly Conduct-42 White, 30 Colored; Larceny-4 Colored; Gambling-1 Colored; Exposing of Person-1 White; Violating Building Ordinance-1 White. They were disposed of as follows: Fined-44, Dismissed-24; Committed to Jail-2; Fines Suspended doing good behavior-7; Ordered to leave Town-1 White, 1 Colored. “The Railway Company gave good schedules and very good train service and handled more passengers than ever before by more than 82,000. This number would have been quite largely increased had it not been for the storm in August last. [At least parking was not an issue in 1912.] “There being only a few children of a school age on the island who lived off the Government Reservation, the Commanding Officer and the Chaplain of Fort Screven offered to furnish a well equipped school room for the purpose of a Public School, so the Board of Education of Chatham County decided to establish the Public School on the Government Reservation, instead of in the Town Hall as has been the custom for many years. As all white children in the Town have access to this school, I readily agreed to the

change. [Hard to believe the extent of racial discrimination existing a century ago.] “On Nov. 2nd 1911 a fire occurred at a house on rear lot of Ward 1 – the property of John Nicholson [vicinity of Miller and 2nd Street], burning same to the ground. It was occupied by colored people. “For the Robberies of several cottages during the fall of 1910 Capt Walter Bibb in charge of the County Convicts on the Island, was arrested by Savannah Detective Vanbach [?] , and upon trial in the Superior Court was convicted on two counts and sentenced to 12 months on the Chain Gang on each count. Upon his conviction Detective Vanbach [?] was paid the $100 reward offered by the Town authorities. [Very strange story. First, the boss of the chain gang robs some cottages and gets put on the chain gang himself for two years. Then Tybee gives the reward for finding the crook to the arresting officer. Can the arresting officer claim such a reward?] “A Tenant at Will Lease was made with C of G Ry for a use of a part of Main Street opposite Hotel Tybee for the erection of a train maintaining shed to replace the old shed. “Sewers are badly needed at several points, particularly at Post Office [Train] Station, but we have never yet been in funds to install it, but trust that at no distant day it can be had. “This has been an unusually rainy year, and ever since the storm in August last, there has been considerable standing fresh water on the Island, notwithstanding, we have tried to keep all drains open, there has been mosquitoes all during the winter and spring months. “On Mar. 28th 1912, I had a conference with Chairman of the County Commissioners, regarding a gang of County Convicts for the coming season. He advised me to address any request to the County Commissioners stating our wants. This I did and it resulted in the sending to us a gang of 24 men on April 25th 1912. Let summer season begin! It’s finally here, that time of year when we welcome thousands of visitors to the island to enjoy all Tybee Island has to offer. Although summer is our peak season on the island, we’ve been fortunate to have many visitors on the island for spring break and the many events we’ve hosted over the past couple of months. The weather was beautiful and the crowds turned out for the SCAD Sand Arts Festival and EVP Pro Beach Volleyball Tourn. May 10th & 11th. It was a nice surprise to have Gold Medal Olympian, Riley Salmon here on the island for the volleyball tournament! There’s always something happening on Tybee Island and the summer season is no exception. There will be numerous Tybee Floatilla events in June, each focused on supporting a different charitable cause. The Tybee Island Tour of Homes will take place on June 8th and the Trybee Island Sprint on June 9th. In April and May, we held two customer service training sessions called Tybee Talk: “It is not what you say; it is how you say it.” We had 195 Chamber members from Tybee registered for the sessions. Diana Morrison, founder and president of Advertising Specialty Services was the featured speaker along with a Tybee Island Information Session by Tybee’s Visitor Center Supervisor, Liz Hood. The Tybee Island Tourism Council partnered with the Tourism Leadership Council to host the event. We would like to thank our Tybee partners who helped make this event successful. We have had many requests to make this an annual event with different speakers each year because we can all use a refresher on customer service. In April we executed our Tybee Island Beach Bum Sweepstakes to help promote Beach Bum weekend to overnight visitors. We had over 5,500 people enter the sweepstakes which ran April 15th-29th. In an effort to keep Tybee Island on the top of their minds when making travel plans we asked sweepstakes entrants to sign up for our monthly events e-newsletter. We gained 3,907 new e-mail addresses to our e-newsletter distribution list which was great! Thank you to our sponsors who participated in the sweepstakes including Oceanfront Cottage Rentals, CoCo’s, Tim’s Beach Gear, Tybee Island Marine Science Center, and East Coast Paddleboarding. TIMA has hired five classroom teachers. We are continuing to interview others. The teachers hired so far are: Tammy Smith who will be teaching a group of 3rd & 4th graders; John Klaras will be teaching 2nd grade; Nivea Butler Lee will be teaching 2nd & 3rd graders; Courtney Smith will be teaching kindergarten; and Claire Owens will be teaching first grade. We still have two classroom teachers to hire (kindergarten & 1st & 2nd grade). We are also in the process of getting in applications for a half-time music, art & physical education teacher as well as a secretary/accountant. We have been overwhelmed with the credentials and experiences of the teachers we have hired. As soon as all staff is hired, we will have another Open House. KIMCHI

(The secret ingredient in your grilled cheese!) Kimchi might epitomize what Americans love and fear the most about Korean cuisine. And its acid, crunch and funk, while a turnoff for some, is why it is ideal for the most classically rich, creamy comfort foods. Kimchi beginners should use this recipe as training wheels. We are going to blend two types of cheese with Kimchi and spread GARDENING BY THE MOON the mixture between two slices of bread. There are periods in between these sign changes where the moon has no sign at all. These times are called void of course. Void of course times are only good for taking care of old business or rest. Nothing new should be started when the moon is void of course. Your efforts will be wasted. ● June 1st the moon is in Pisces; prune, water, compost & fertilize. ● June 2nd & 3rd the moon is in Aries; harvest, cultivate, weed & control pests. ● June 9th & 10th the moon is in Cancer; plant above ground annuals. ● June 14th & 15th the moon is in Virgo; plant flowering vines. ● June 17th & 18th the moon is in Libra; plant annual flowers & herbs. ● June 23rd & 24th the moon is in Capricorn; plant for root growth.

This is just a sample, but you get the idea. If you follow the moon every month, everything will be done in it’s own time and will be easier for you. 1 cup cabbage-based Kimchi with some liquid (Publix, produce section) 1/2 cup American cheese (preferably white) grated 1/2 cup extra sharp white cheddar cheese, grated 4 slices white sandwich bread 1/3 cup mayonnaise Directions: To the bowl of a food processor, add the Kimchi, American and cheddar cheese. Process until the mixture is thick paste, about 30 seconds. Place the bread slices on a cutting board. Evenly spread the Kimchi-cheese on 2 of the slices, then set the other 2 slices on top. Spread some mayonnaise over the top of each sandwich. Turn the sandwiches over and spread the remaining mayonnaise over the other side of the sandwiches. Wrap each sandwich in aluminum foil. Heat a medium castiron skillet over high heat until hot, about 2 mins. Reduce the heat to medium and place the foilwrapped sandwiches in the pan. Set a weight on top of the sandwiches (a heavy-bottomed pot weighted down with a couple of cans of veggies or beans works well) and cook for 4 mins. Remove the weight and use a metal spatula to turn the sandwiches over. Set the weight back on top and cook for another 4 mins. Remove the weight from the sandwiches, unwrap slice on the bias and serve. The flavors are so intense for such a simple recipe. I hope this will be a great introduction to Kimchi or just a fun new way to take a simple grilled cheese sandwich to another level! If you like the Kimchi as much as me, you’ll want to play with it and add it to lots of other recipes for a super flavor boost. Try Kimchee blended ketchup with fried chicken or add to shrimp gumbo.

Matters of Taste By Kelsey Bankert “Taste this! C’mon taste this,” my friend waves a fat, purple grape in front of my face while wearing a disgusted look on hers. “Whyyyy?” I ask warily, knowing all too well the curious phenomenon whereby a human faced with a disgusting food will inevitably insist that others try it too. “It doesn’t taste like anything!” she announces, clearly affronted by both the grape & the grape industry. “It’s totally tasteless.” I pop the offending item in my mouth and prove her right. It is tasteless. It’s huge, shiny, plump, moist & colorful, but this is not a grape, this is the illusion of a grape, this grape is a lie. I wish this was the first time I was lied to by produce, but things between apples and I haven’t been right for a long time. I’ve always loved apples, but I noticed that in the past half decade they had been growing alarmingly plump. It’s partly understandable – you get into a long-term relationship, you start to let yourself go a little, but you still love each other. The problem was that apples weren’t just getting larger; they were simultaneously losing their flavor. Food scientists had figured out ways to put extra pockets of air &

moisture inside these massive Fuji’s & Brae burns, but couldn’t expand their finite flavors. Pretty soon eating an apple didn’t feel very apple-ey anymore. The crunch & moisture were enhanced, but the cost was taste. I was willing to look past the American apple’s expanding waistline, but the secondary casualty was too much. Where was the apple I used to know? Where was the taste I still loved? And so I wasn’t surprised by my friend’s grape, so free of grape-ness. I was only surprised at how late she’d arrived at the table. Hadn’t she noticed the steady shift in taste buds all around us? Hadn’t she seen our countries’ decades’ long gravitation toward the center grocery store aisles and away from the outer produce aisles? Once, long ago, in that America where apples & grapes still tasted like something, the produce aisle stood a chance. Very little can beat truly tasty, appletasting apples. But as fruit lost its flavor, it genetically engineered its own demise. Now the only things with flavor left in the market were the center aisle apple pies and grape sodas. Ultimately Americans too started to resemble the modern apple. We’re larger than ever, but nutritionally empty. That you should avoid pie and soda is obvious. But just because something is healthier than apple pie (say, an apple) doesn’t mean it’s the best it can be. There are ways to find the apples of our youth; if you explore alternatives, you will find the taste and nutrition you need. The most obvious option is the local farmer. We all know our local purveyors – Davis Produce, the Forsyth Farmer’s Market, and the year-round Savannah State Farmer’s Market. And there is no shortage of Community Supported Agriculture programs in the Savannah area – local farmers will send carefully curated selections of seasonal produce to your house in exchange for financial support of their farm. It’s there, in local farms and markets, which you’ll find the flavor missing from the big box fruits. These are apples just like mama used to make – small, a bit nobbled, and holy crap delicious. If you want to really get down and dirty, why not pull out the old coveralls, get a pitchfork, take a hilarious spoof photo of yourself as the American Gothic farmer, and then start a garden. You don’t even need your own plot of land. The Tybee Island Community Garden offers 4x8 plots for a small fee. Too daunting? On my porch, everything from snap peas to beets grows in a jumble of variously sized pots. Thanks to the enviably long & mild growing season in South Georgia, you can grow a lot more, a lot longer, in a lot of different mediums. And here is the thing about local produce, either your own or from a small farm. It’s better. It’s way better. It’s smaller, yes. It’s not going to win any beauty awards, true. But it’s full of flavor. It tastes just like the real thing, because; guess what, it is the real thing. I’m no food scientist; I don’t know how to make apples the size of grapefruits (let alone why you’d want to.) I’m not an agricultural lobbyist; I don’t have the power, or the audacity, to meddle with mass-market food production. I do, however, have a little container garden & I go to the farmer’s market on Saturdays. Health & politics aside, I just want my apples to taste like something. Preferably apples. Tybee Breeze

Psychology of Risk Are you psychologically prepared to do the things you need to do to secure your financial future? Holding a job and earning good money will allow you to live high on the hog, but most people will never gain their financial independence if they don’t regularly set aside a substantial portion of their earnings. You need to get to where your money is working as hard for you as you are. To do this entails the assumption of risk. You also have to protect what you’ve got - your house, your car, your life - and this involves protecting against risk. If there are any complications to your income tax returns, there is a certain level of risk involved in that too because the IRS may not interpret things the same way you or your tax preparer does. Investments of every kind certainly require you to take on risk. Your job, especially some of the higher-paying jobs out there, sometimes puts you personally at risk, both bodily and financially. And one of the somewhat

unaccounted for risks, especially with people living longer, is outliving your assets after you retire even when you’ve done everything right and start your retirement years with a big nest egg. The psychology of risk is a very interesting subject. Almost everything you do has an element of risk associated with it. When it comes to personal financial planning, you need to know your tolerance for risk because some people are risk-takers and others are risk averse. Just ask yourself this question: How large a loss on paper am I willing to incur with my investments until all I want to do is throw in the towel and put my money in something risk-free? First of all there is nothing that is risk-free, but secondly, if the loss is only on paper, can you patiently wait out the loss until things turn around? The perfect illustration of this, of course, is investing in the stock market. I’ve been investing in stocks since 1981 and have made good money at it, and I’ve lived through several severe downturns in the stock market - e.g., in 1987, 2000, 2008 - but the stock market has come back each time and gone on to new highs, and our portfolio has continued to grow. This is calculated risk. So live below your means, know your tolerance for risk, and have some fun along the way. SCAD came to the beach with their annual Sand Art Festival. The sand sculptures were innovative and beautifully done. There were also many people out to enjoy the sea and sand. The world is a small place and Tybee is even smaller. Ohio Bob & Margaret live in a 100 year old beachfront raised cottage. They met a fellow Arkron transplant on Tybee. I didn’t know they wore cowboy hats in Ohio. Look who was out and about, Louise Anderson, she was taking her visiting brother & sister-in-law around town. Louise looks good as she continues to heal from the death of her husband Judge Jim Anderson. Let us remember all the widows & widowers on the island and encourage socialization or just call and say hello. Marie & Katie are close Irish lasses. Marie hosts friends at her home on the marsh. We often hear of them having a good time after St. Michael’s Mass. Katie Love celebrated her 75th Birthday among family and friends at Marlin Monroe’s. Tybee’s City Council awarded her a proclamation and the Keys to the City. Katie Love is much loved and respected on Tybee. She is a hard working sincere and real person. Katie makes everyone feel special; many people privately seek her council and she advises with love. She is a loving wife and mother and a treasure to the whole island.

For Tybee Gay Days Marlin Monroe’s hosted a “White party” in the gym due to the weather; it was raining and windy, but inside the gym was a wonderful gathering of friends, family and couples. Sexuality not withstanding, we had a fine time. Before the party I asked my sister friend, “You going to the White Party at Marlin Monroe’s this weekend?” She said, “Julia, that’s a gay party, I’m not gay and neither are you.” I told her, “I ain’t a Pirate, I ain’t a Bum and I ain’t Irish except when Tybee says so! A person would have to be comatose NOT to Love Tybee! The Village People performed for Tybee Island Gay Days. They sang the iconic song “YMCA” in Tybee’s YMCA; now how cool is that? And if you find different lifestyles offensive you live on the wrong island, and possibly on the wrong planet. Renee DeRossett, Kim Trammell & Joan Garcia, Renee and Kim camped it up all evening. June 6, 1944, 160,000 Allied troops landed along a 50-mile stretch of heavily-fortified French coastline to fight Nazi Germany on the beaches of Normandy, France. General Dwight D. Eisenhower called the operation a crusade in which “we will accept nothing less than full victory.” More than 5,000 Ships and 13,000 aircraft supported the D-Day invasion, and by day’s end on June 6, the Allies gained a foot- hold in Normandy. The D-Day cost was high -more than 9,000 Allied Soldiers were killed or wounded - but more than 100,000 Soldiers began the march across Europe to defeat Hitler. General Eisenhower’s message sent just prior to the invasion: “Soldiers, Sailors and Airmen of the Allied Expeditionary Force! You are about to embark upon a great crusade, toward which we have striven these many months. The eyes of the world are upon you. The hopes and prayers of liberty loving people everywhere march with you. In company with our brave Allies and brothers in arms on other fronts, you will bring about the destruction of the German war machine, the elimination of Nazi tyranny over the oppressed peoples of Europe, and security for us in a free world. Your task will not be an easy one. Your enemy is well trained, well equipped and battle hardened, he will fight savagely. But this is the year 1944! Much has happened since the Nazi triumphs of 1940-41. The United Nations have inflicted upon the Germans great defeats, in open battle, man to man. Our air offensive has seriously reduced their strength in the air and their capacity to wage war on the ground. Our home fronts have given us an overwhelming superiority in weapons and munitions of war, and placed at our disposal great reserves of trained fighting men. The tide has turned! The free men of the world are marching together to victory! I have full confidence in your courage, devotion to duty and skill in battle. We will accept nothing less than full victory! Good Luck! Well, it’s been a fun two years for me. I have had a really good time as President. But, it is time for me to move on. Do you have any idea what kind of bird this is? It has come to the oak trees in our yard often lately and makes the oddest sound, a guttural, croak/growl sound. It’s a big bird, about 12-14 inches and when we first saw it there were a pair but lately we’ve only seen this one. I can’t find it in my Handbook of Georgia Birds so I thought I’d ask someone. Roaches American Cockroach - The American cockroach is the most common in our area of all the outside and inside house pests. (Slang name – Palmetto bug.) They can harbor in damp warm areas outdoors and are know to fly. These insects are mainly night feeders and are attracted to moist areas and fermenting food. The small ray of light that you see in the day coming through is also the light these insects see from outside at night and is a perfect drawing card for them to have access into the home. Cracks and crevices are passages to the home, such as windows, doorways, plumbing chases and electrical openings. Reducing cluttered boxes, stored paper products, and proper caulking around structural areas, also repairing water leakage places, as well as, plumbing, electrical fixtures and wall voids should be properly sealed with grout, caulking, or common sealant foam. Another prevention is to replace older weather stripping around doorways which can be a number one point of access. German Cockroach - German roaches can be ½ to 5/8 inches in diameter. They are the most common in the United States. Their nesting habits are mainly in the kitchen and bathroom areas, as these are convenient water source places. They also are attracted to warmer areas such as, water heaters, phones, electrical outlets, stoves, and dishwashers. They can also frequent refrigerator pan holds, furniture, trash areas, and anywhere of the like where food or moisture is available. These insects are known to be travelers as in bags, boxes and used appliances. They can travel in any complex through wall voids and plumbing openings. In many situations we use glue boards sparsely in kitchens and commercial businesses as a monitoring tool to keep in check the activity in-between visits for evaluation. Gel, paste or dry baits have been very effective in the control of these insects. Moist, hot conditions can break down the application of any pesticide residual in a short time. Thus a chosen formulation should be used. I read sometime ago about Asian cockroaches that are very similar to German roaches but known to harbor outside. I encountered a situation of this type recently nesting in an area laden with pine straw and

had started to travel into a nearby storage unit. They are treated accordingly as bait was not formidable for this kind. Oriental Cockroach - Oriental roaches are another outside pest and are very abundant in secluded areas such as basements, meter boxes and drains. They are also occasional invaders in our area of the home. They as the American cockroach can occur inside when precipitation has been an issue. The male breed is similar in appearance of the American cockroach. The females are light brownish red and appear to have a banded shield on their back. Smokey Banded Cockroach - They are typically an outdoor pest mainly found in our southern states and as far west as Texas. They can be found in wood piles, flower plants, oak and palm trees and any vacant structure. They are attracted to light and are know to be strong filers. Brown Banded Cockroach - Brown banded cockroaches are better suited in a drier environment unlike the German cockroach. They prefer dark crack and crevice areas and can harbor throughout many places of any structural abode, unlike so many other types of cockroaches that frequent a more confined space. Note: As pine straw, woodchips, straw, mulch & rock enhance the exterior of our homes, these can be retention for moisture in which most of these insects need to survive & breed. This can be an important outside issue that should be addressed when administering a general pesticide inside as well as outside the home for prevention to control & alleviate their preserve.

The 2013 sea turtle season is underway! Tybee began the season with the 9th annual Turtle Trot. The 5K beach run was a huge success. It was another beautiful day on the beach as the runners ran north, turned around a mock sea turtle nest, and headed south to finish at the pier. The runners had to battle the incoming tide. Running in the softer sand is a bit more challenging, but the 650 race participants trudged through. At the finish, race participants were entertained by the band, locally known, as Keith and Ross. What a delight they were! Thank you both for getting up early to entertain us. The overall male winner was Skyler Glahn and the overall female winner was Elizabeth Grammar. Each year for the Trot, we hold a t-shirt design contest for students in grades K-8. The winning design is placed on our race t-shirts. This year the winner was Camryn Williamson, a 4th grader at Godley Station School. I would like to thank our many sponsors that sponsored the 2013Turtle Trot. Thank you for assisting with the Trot and everything you do for the turtles throughout the season. Shortly after the race concluded, Dr. Terry Norton and the staff from the Georgia Sea Turtle Center were able to release two rehabilitated sea turtles. “Silas” was a rehabilitated loggerhead sea turtle that had been cold stunned off the coast of New Jersey, and was treated at the GASTC. Silas, the loggerhead was named in honor of a four year old little boy, named Silas. Little Silas is suffering from a terminal form of cancer. We were very delighted that he was able to join us that day and see his special named turtle off. “Silas”, the loggerhead, was fitted with a satellite transmitter so you can track his movements by going to www.seaturtle. org. Dr. Norton and the Georgia Sea Turtle Center staff also released “Chatham”, also a loggerhead who was caught in unexpected cold temperatures. Chatham was tagged with a pit tag, but does not have the satellite transmitter for tracking. Both turtles were very eager to return to the sea! The events of the 2013 Turtle Trot and Turtle Release were a huge success. Thank you to the many folks who make this happen each year. Proceeds from the race support the Tybee Sea Turtle Project, the Lights Out Campaign, materials needed for nest management, the housing and maintenance of a juvenile loggerhead, and various educational materials. The swim portion will be a 750 meter ocean swim. Participants will swim out 50 meters, turn parallel to the shore and swim with the current for 650 meters prior to swimming back. The bike is an out and back ride. There is one hill/ bridge off of Tybee. 1 mile after the bridge, you will turn into Ft. Pulaski and do a loop around the park. Drink Of The Month Hurricane Ingredients: 2 oz light rum 2 oz dark rum 2 oz passion fruit juice 1 oz orange juice Juice of a half a lime 1 Tbsp simple syrup 1 Tbsp grenadine Orange slice and cherry for garnish Instructions: Squeeze juice from half a lime into cocktail shaker over ice. Pour the remaining ingredients into the cocktail shaker. Shake well. Strain into a hurricane glass. Garnish with a cherry and an orange slice.

Ernest Charles Hosti Sunrise - Nov. 11, 1921 Sunset - May 13, 2013

Tybee Island and the Hosti Family had a funeral mass at St. Michael’s Catholic Church for Ernest C.”Pop Pop” Hosti. By many accounts it was the largest funeral seen here in many years. The church was full and many people stood outside. 12 of Mr. Hosti ‘s 21 grandchildren carried his casket. The family drove their “Pop Pop” around Tybee one last time before heading to Bonadventure Cemetery. Friends carried covered dishes to American Legion to feed the family after the burial. There was lots of food for family and friends. It felt like all of Tybee was in attendance. Let us remember Tybee’s royal family in our thoughts and prayers they mourn the lost of their patriarch. Sandra,Diane, Snooky, Karin, Michael , Betty Jayne, AnnCarol and Angel would like to thank Family and Friends for their love and support during this difficult time. A special Thank you also to the American Legion.
