openly admit that I’m more of a football or basketball fan versus baseball. However, with the Houston Astros’ strong start to their 2017 season, it’s possible I might become a convert. My friends tell me that attending a baseball game today is nothing like it was a decade ago—probably the last time I saw a game in person. I hear that ballpark food is abundant, eye-pleasing and downright delicious. However, even with their expanded—and somewhat upscale—cuisine, you can still find a good ole American hot dog. Our friends at B&B Butchers & Restaurant shared with us that opening week at the Houston Astros was inspiration for several of their specialty hot dogs. The Chef Tommy’s Dog with housemade truffle-infused honey and a few other hot dogs caught our attention for our annual “Topping the Texas Grill” (page 31)—all are sure to make your summer grilling “top dog” list. We packed this issue with ideas and inspiration for all you foodies and wine enthusiasts. From “The Perfect Pairing” (page 18) which details wine and outdoor activities to “Wine, Dine and Design” (page 20) to “Cheese, Please!” (page 22) for those on a mission to taste artisan cheeses across the U.S. If you’re into adult desserts then you don’t want to miss our summer top picks of boozy milkshakes in “Sugar, Spice & Everything Spiked” (page 46). GLENFIDDICH PROJECT XX The second release of the series, Glenfiddich Project XX—a covert operation codenamed XX—is the result of a collaboration between 20 whisky experts from 16 countries around the world who together developed one extraordinary single malt. Each visited the Glenfiddich distillery, selected their favorite cask (20 total), and then Glenfiddich Malt Master Brian Kinsman performed his magic with a bit of science and skillfully produced the final variant. The Glenfiddich Experimental Series focuses on using unique and innovative production processes to offer a new kind of malt whisky experience. Project XX follows the first malt released from the series, Glenfiddich India Pale Ale Cask Finish. Deep gold in color, Project XX has the warm summer fruity character of a classic Glenfiddich but then multiple personalities are revealed as the flavor of sweet cinnamon spice, almonds and rich port tannins kick in with the odd hint of liquorice. The recommended serve: Add a sprinkle of water to the outer lip of the glass, dab the glass lightly into a bowl of sea salt flakes, picking up a few flakes. The salt works well with the fruity notes in the blend for an unforeseen enhancement.

DIABETES BREAKTHROUGH A potential cure for Type 1 diabetes looms on the horizon in San Antonio, and the novel approach
would also allow Type 2 diabetics to stop insulin shots. The discovery, made at UT Health San Antonio, increases the types of pancreatic cells that secrete insulin. The strategy has cured diabetes in mice. “It worked perfectly,” Dr. Doiron, assistant professor of medicine at UT Health, said. “We cured mice for one year without any side effects. That’s never been seen. But it’s a mouse model, so caution is needed. We want to bring this to large animals that are closer to humans in physiology of the endocrine system.” UT Health San Antonio researchers have a goal to reach human clinical trials in three years, but to do so they must first test the strategy in large-animal studies. The therapy is accomplished by a technique called gene transfer. A virus is used as a vector, or carrier, to introduce selected genes into the pancreas. These genes become incorporated and cause digestive enzymes and other cell types to make insulin. “We don’t need to replicate all of the insulin-making function of beta cells,” Doiron said. “Only 20 percent restoration of this capacity is sufficient for a cure of Type 1.” uthscsa.edu
