Welcome I was thrilled to be asked to write the foreword for the 2013 insideKENT Restaurant Guide. For years I have been an advocate of the great food we produce and cook in Kent. Since I opened my first restaurant, Thackeray’s in Tunbridge Wells over 10 years ago, I have known that Kent is a county of great food delights and possibilities.

Being born, raised and still living in Kent with a young family, the county holds a special place in my heart. It is always the first place I think of when opening a new eating venture. The variety of choice in great locally grown produce, and also the fantastic landscapes, offers so much in terms of being inspired to create great food to eat. This inspiration for me led to the opening of The Hengist in Aylesford, a restaurant housed in a 15th century building. There are not many places in the world that offer such history and opportunity for a restauranteur. Having seen the improvement to the quality in restaurants in Kent over the past 10 years, what has saddened me has been the equally rapid closure of the English pub. Once the hub of the community, the pub was the central force for life in a village or town. I guess this is one of the reasons why I am drawn to running them and making pubs once again vibrant places within the heart of a town. You can’t beat a combination of a good social atmosphere; great Kent food and great locally sourced beers. Location is important to the success of a restaurant or pub and Kent offers such diversity, from town settings to discreet rural retreats. When I was looking for a new pub venture a couple of years ago, I was adamant that I wanted a coastal pub looking out onto the sea. I found myself in Whitstable and The Pearson’s Arms.

‘What a fantastic opportunity’ was my first thought. I couldn’t believe the location. The pub is right on the beach overlooking some of the most glorious changing vistas; from bright clear sunny days to smoky red sunset evenings. Who couldn’t be inspired by that? With The Pearson’s Arms re-opened and running successfully, I was once again looking for a new challenge, but this time in a country location within a village. The Windmill in Hollingbourne seemed the perfect choice and in May this year we refurbished the pub, ensuring we added to the existing character and brought in our own touches, including a new menu and range of beers, wines and specialty cocktails. Working as I do in television, I travel quite a lot and it is always great to be leaving London or some other major conurbation and see the colour of life return as I come back to Kent, to my home. That’s the experience I want the customers of my pubs and restaurants to feel. Go out and explore all that Kent has to offer in terms of great food and great venues, and be proud of a county that has so much going for it.


Richard Phillips’ Restaurants

Thackeray’s Richard Phillips’ first restaurant, Thackeray’s in Tunbridge Wells, is well known as one of the best restaurants in Kent. In the ten years since it has been under Richard’s leadership Thackeray’s has won numerous accolades and currently holds a Michelin Star and three AA Rosettes for culinary excellence, and was awarded ‘Best Gourmet Restaurant’ in the Kent Restaurant Awards in 2009. Hengist In 2004, Richard took ownership of Hengist in Aylesford, near Maidstone. The building is packed with almost as much history as Aylesford itself, which is one of the oldest towns in Britain. Dating back to the 1560’s, Hengist takes its name from the Anglo-Saxon king of Kent, Hengist circa 449 AD. The restaurant offers modern European cooking coupled with Richard’s passion for style and sophistication. He has created in the Hengist, an elegant and intimate dining experience. The Windmill by Richard Phillips Where distinctive character, real ales, fine wines and good wholesome food combine to create the ideal pub environment for thirsty passers-by to avid foodies alike. The Windmill is very much a community pub whilst retaining a welcome to tourists and those in search of a great night out; a place where local and seasonal fare are as much of the experience as the proud heritage of the village. The Windmill is a totally different Richard Phillips experience, but retains the quality, passion, and attentive service for which his restaurants are known.

Pearson’s Arms by Richard Phillips With Richard’s knowledge and understanding of the growing sophistication of Kent diners, he opened his first pub/restaurant in December 2010 offering customers the finest beers to match a menu that reflected the coastal location. Sited on the beach at Whitstable, Pearson’s Arms by Richard Phillips offers simple, but great tasting British food, sourcing ingredients from the best of Kent’s countryside and sea. The pub is the perfect complement to his group of restaurants.

The Old Brewery Tavern

The Old Brewery Tavern may look back to historical antecedents, but it is wholly contemporary in design, outlook, approach and style. The Smokehouse

Rocksalt Sitting on the harbour-front overlooking the fishermen’s day-boats, Rocksalt’s glass walled dining room and terrace hang right over the water, giving diners unrivalled views out across the Kent coast, and even the chance to see the day’s catch being delivered direct to the kitchen. The menu pays homage to the abundance of quality local produce from Kent and the surrounding area, with local farms supplying meat, vegetables and cheese. Enjoy the simple but expertly prepared dishes on chef patron Mark Sargeant’s menu that allow the ingredients to shine through; with dishes including signature dish mackerel pasty, mussels cooked on the kitchen’s charcoal Josper Grill, and Monkshill Farm pulled pork. Housed in a spectacular curved oak building, Rocksalt echoes the timber of the nearby buildings on the cobbled streets of the harbour, reflecting the rich history of the fishing port. Upstairs is a bar and outdoor terrace from which you can enjoy local beers, wines and cocktails, while the main dining room includes a curved terrace for al-fresco dining, the sweeping vista offering the perfect setting to complement the food.

The Smokehouse is Mark Sargeant’s fish and chip shop, just a few minutes stroll from Rocksalt. The original smokehouse dates back over 150 years and was transformed to create the double height refectory style dining room with a 5m high glass wall, giving diners a view of the cobbled Stade, harbour and sea beyond. The black timber boards that once clad the building now create a large wooden wall inside complimenting the specially commissioned stainless steel sculpture of a shark and small shoal of fish that hangs from the ceiling over the flagstone floor. The food reflects the ethos at the sister restaurant, with local produce championed as far as possible, and the cooking staying simple to allow the produce to speak for itself. The local fishermen bring in their daily catch of Folkestone flounder, plaice, dabs and mackerel, as well as cod, haddock, coley, rock and lemon sole to the kitchen. Other dishes include salt and pepper squid, battered scallops, fried sprats and mussel popcorn as starters; ‘fish bits’ and homemade fish fingers for the kids, and The Smokehouse’s own curry sauce and gravy as well as home pickled free-range eggs and onions. Classic British food expertly cooked make both Rocksalt and The Smokehouse the perfect destination for anyone keen to enjoy the produce from the British Isles at its best.

The Brasserie on the Bay

Additionally our Salt Marsh lamb includes a shoulder tian which is

braised for 48 hours and accompanied with sea beet, complimenting the dish with natural flavours. The Forge Bistro

The Woolpack Inn

Located in the Garden of England just off the A28 between Ashford and Canterbury is the chocolate box village of Chilham, where you can find a real gem; the 600 year old Woolpack Inn is nestled at the bottom of the hill in the shadow of the Norman castle. With its vast oak beams and inglenook fireplaces it offers a glimpse into hospitality of yesteryear. The inn is said to be haunted by the Grey lady, a friendly ghost who wanders the main building. Visitors can choose to relax in the cosy bar, the restaurant with its glorious bay window and country lane views or the patio courtyard where they will find the ancient olive tree which has been in situ since the inn was built. Parking is not a problem with availability for 25 cars to the rear of the hotel and space enough to accommodate a coach. The Inn boasts a home-cooked menu with many of the ingredients being sourced locally. Fish comes off the boat in the morning and often is on the plate by lunch service. Local mushroom sautĂŠed in garlic butter, finished with stilton and cream and presented on a garlic ciabatta, real home-made steak & Masterbrew Ale pie, and homemade strawberry shortcake give a hint of the homely fayre on offer.

The Ambrette

With awards and national press accolades galore plus listings in every major restaurant guide, The Ambrette in Margate’s old town is something of a Thanet institution. Chef patron Dev Biswal’s unique culinary style draws gastro tourists from far afield and is widely cited as one of the key factors in helping revive the economic fortunes of the area. A second opening just across the county border in Rye in the White Vine House (holder of 5 AA stars in the ‘restaurant with rooms’ category), is proving equally popular. Deft spicing, exquisite marinades and first rate service mean that booking is essential for both lunch and dinner throughout the week. Yet prices are surprisingly modest with the three-course £20 lunch menu offering exceptional value. Although invariably described a fine dining Indian establishment, do not expect to find curry house staples on the menu. Ingredients with high sulphite content such as onion, garlic and ginger are avoided. The restaurants are named after the Indian flower known for its culinary and aphrodisiac properties. Indeed, given 24-hours notice, the kitchen will even prepare a special seven-course aphrodisiac tasting menu featuring an array of carefully crafted dishes known for their positive effect on the libido. The eclectic menu changes regularly and draws on locally sourced ingredients (English Channel sardine,

tender breasts of wood pigeon or Gressingham duck) combined with other more exotic fare such as water buffalo, fillet of claresse catfish or zebra. Dev is a popular figure around Thanet, regularly giving cooking demos at farm shops and food festivals, running master classes and judging competitions at local schools and colleges. Sunday nights at the restaurants are often given over to special gourmet nights, sometimes with matched wines or even whiskies, occasionally to musical accompaniment. From the molecular school of gastronomy, Dev still finds time to devote to R&D, experimenting with new food combinations. The cooking style is about creating flavour affinities with different textures and tastes to combat ‘flavour fatigue.’ Each dish is a piece of visual, as well as culinary, art.

The Waterfront

The Olive Tree Named after the olive tree at our entrance, the restaurant reflects the peace and tranquillity of the dining area which offers residents and non-residents in Dover a delicious choice from our à la carte menus with their origins in traditional English, Far Eastern or Continental cuisine.

Our restaurant really does have a certain ‘je ne sais quoi’, with fine dining from France and England that is just delicious. Open 7 days a week for breakfast, lunch and dinner, the menus feature a large choice of dishes specially chosen by our head chef, many of which contain local Kentish produce.

The Olive Tree is fast becoming one of the favourite places in Dover to enjoy that special dinner and family occasion. Every Thursday evening we have Italian night from £13.95 per person for 2 courses. The menu offers a variety of anti-pasti, cold meat platters, pastas, Italian desserts and an ice cream counter.

Bombay night every Thursday we have an extensive buffet featuring a range of Indian dishes, this is a night not to be missed. Prices from £8.99 for one course to £16.95 for 3 courses.

Or join us on Friday night for our regular Spice Night with a selection of Indian dishes to choose from our 3 course menu. Booking is advised (although not compulsory). A popular choice with non-residents of the hotel is the freshly prepared Sunday carvery lunches and our discounted pensioners lunches (Monday to Saturday). Enjoy 2 courses from £13.95 per person. Breakfast is served Monday to Friday 6.30am to 10.00am and Saturday to Sunday from 6.30am to 10.30am. Lunch menus are available between 12pm and 2.30pm every day, with dinner being served from 6pm to 10pm each day.

Jason has also started using the cheese-makers at Canterbury Goods Shed to supply the fine Kentish cheeses that grace The Minnis’ cheese board. Another of the things that makes The Minnis so special is that they cure, pickle, brine, salt and smoke their own produce on site. Jason is interested in the unique flavours that these ancient culinary crafts bring to the abundance of high quality meat, game, fish and seafood available locally, so on the menu you can find Kentish salamis, salt beef, pastrami, sweet-cured pork loin, corned beef and even homemade sausages such as chorizo, venison and their version of the classic

French Toulouse. Add to these a variety of homemade pickles and chutneys and you can see why The Minnis has become known as the place to go to find firstclass, full-flavoured dishes with a difference. We hope you’re feeling hungry... Look forward to robust, fresh flavours served with imagination and flair. Head Chef Charles Lakin, who recently featured on BBC2’s Great British Menu, presides over heavenly menus that change regularly and uses locally caught fish and locally sourced produce. He takes inspiration from classic, traditional dishes and gives them a modern twist, often using unusual wild and foraged ingredients to flavour and enhance dishes. Free range meats including pedigree beef and rare breed mutton come from nearby Sladden Farm. As well as growing his own herbs, edible flowers and vegetables, he sources fruit and vegetables from the Brogdale national fruit collection in Faversham and Walmestone growers. Fish and shellfish is landed exclusively from day boats in Ramsgate and Folkestone so he only uses seafood from local waters. He speaks regularly to suppliers to create his menus, and his signature 6-course tasting menu is always packed with the season’s best produce. “A tasting menu is a fantastic showcase for our locally sourced produce as I can feature what is the best on that day.” Cheeses from the Canterbury Cheesemakers and other artisan producers around England are always a feature on the trolley. Although a proud Yorkshireman, he is definitely an East Kent convert. “My suppliers are the cornerstone of my menus and I rely on the fantastic work of these guys to be able to produce the quality our customers have come to expect. We are so lucky in this corner of Kent to be able to source such a lot of our produce from less than 10 miles away throughout the seasons - what a privilege!”

The Woolpack Hotel

The Woolpack Hotel has recently reopened after a period of closure and neglect. Completely refurbished, and under new management, the hotel now has an excellent restaurant in the two rooms behind the main bar. Oak floors, period fireplaces and exposed timbers in an old inn popular with Spitfire pilots during WWII. The Three Daws

A historic riverside inn dating back to the 1400s steeped with tales of smugglers, press gangs, hauntings and much more, and yet today it remains a focus of activity. From wedding receptions, discos, parties, live bands through to barbeques, cocktail evenings, quiz nights and the simple meeting of people gathering for a quiet meal or drink.

Standing at the river edge at the foot of the old High Street, it has for centuries served as a home from home for the river men, been the haunt of smugglers and was regularly raided by the old naval press gangs. It is older than Shakespeare's house, older than many well known ancient buildings, and is a place to reflect on past and very hard times. One of the oldest taverns in the country - this ancient inn (now named) the Three Daws is almost four hundred and fifty years old and first gained its licence in 1565. The Three Daws began its life by being converted from five traditional styled wood fronted cottages. The general structure is therefore some years older than the length of its history as a Thames tavern, and probably goes further back to at least 1501. A rambling building typical of its period, the wooden structure of its construction is reputed to be the work of shipwrights who were seeking work at that time, owing to a depression in their waterside trade.

The Cock Inn

A warm welcome awaits when you visit The Cock Inn. An Elizabethan chocolate box rural style pub, just a short drive from the centre of Maidstone and four miles from the world famous Leeds Castle, the Cock Inn wins the hearts of all who visit. Exposed beams and inglenook fireplaces underline the charm of the pub which is thought to date from 1568, according to the date on the chimney breast found in the attic. The White Horse

The White Horse at Sandway is a traditional family public house located just outside of Lenham. Built in 1678, the inn still maintains a number of its original features. All are welcome to dine, drink and relax in our friendly family environment. We happily cater for vegetarians, parties and children. Enjoy dining in our newly refurbished pub or outdoors in our al-fresco garden area. We have a varied menu as well as a children’s menu suitable for our wonderful little ones. The pub, which had been closed for 16 months prior to August 2012, is now owned by Tony Jansen. He and his partner Sarah have wasted no time in giving The White Horse an internal makeover, with the wallpaper stripped back and fireplace opened up to give it a more rustic feel. Outside, they are planning to establish a large garden, play area and, uniquely, a viewing platform for people to gaze at the high-speed trains that go dashing past the rear of the pub to and from Ashford International. We are open every Tuesday to Sunday and closed Mondays except on bank holidays. Opening times are 12pm - 3pm and 5pm - 11pm Tuesday to Friday, and open all day Saturday and Sunday. GB Pizza Co

GB Pizza Co is a new wood-fired pizza restaurant on Margate’s seafront, opened by a pair of Thanet newcomers: Rachel Seed, an award-winning chef and social media consultant and journalist, Lisa Richards. Delicious Neopolitan-style pizzas are cooked in an authentic wood-fired oven and arrive with perfectly charred crusts, super-thin bases and imaginative toppings such as pear and Cambazola; pulled pork and barbecue sauce; and wild mushroom, Parmesan and truffle oil. There are always weekly specials available using the finest seasonal ingredients. Sauce is made on-site and cooked for hours to a secret recipe. Dough is made by a local baker using the finest Italian flour and to GB Pizza Co’s exact recipe which the girls perfected with the help of the Fabulous Baker Brothers in the Cotswolds. Buffalo mozzarella is sourced directly from Italy and the homemade chilli oil uses only the best extra virgin olive oil. Local suppliers are used wherever possible: meat is from Chandler & Dunn near Ash; cured meats are made by Dougal at the Windshack café in Minnis Bay; vegetables from Nash Farm in Margate; coffee is roasted in nearby Whitstable and served by baristas Shore Coffee UK; apple juice comes from local orchards at Little Stour; lager is brewed by Chapel Down. Wines are served directly from the barrel courtesy of Borough Wines in London, and ice cream is by one of the UK's most acclaimed gelato-makers, Gelupo Gelato.

The new restaurant is located in an enviable position on Margate's sea front, just steps from the water and with glorious sunset views that flood the space with Turner light. The look is pared-down 'warehouse chic': industrial conduits, rough floorboards, exposed brick and striking lighting. The Woolpack Inn in Warehorne is full of history having been a pub since the late 1500s. Now, the pub under the guidance of Julian Mellor, has turned its hand to excellent restaurant food at pub prices.
