The first two words I learned to say were "more food," so it comes as no surprise that I have spent most of my life focused on food issues. I love eating good food because I believe that I am what I eat, and I live on the preventative rather than curative side of life. The current statistics for human health emerging from only two generations of us eating nutritionally compromised foods are startling. As a person who grows as much food as possible, saves seeds (https://seedsofvictoria. com) and loves to cook, I have set about empowering others with a "Zero-Mile Living" series of books which educate on sustainable homegrown food production, seasonally appropriate eating and making a living from the land. I enjoy sharing my recipes and ideas for "ZeroMile Living" with Seaside readers through my column, Garden to Table. linda m. langwith
As the feature writer for Seaside Homes, I'm always excited about each assignment, for every owner has a special story to tell that resonates within the unique space called home. December's residence showcases the perfect live/work arrangement, with a studio that sizzles with artistic output. Double-dipping this month, it's been great to write about Brentwood Bay, one of my favourite places. I love clambering over a building site, and the crew at Story Construction were wonderful – even providing me with a brand-new hard hat to wear. It all ties into my work as a writer and social media manager at Seaside Magazine: I love to raise the profiles of people and businesses to show how valuable and important they are to this community. One of the first things I did when we moved from Cincinnati to Dean Park was join the Peninsula Singers. I've been able to keep up my PR, marketing and writing skills at the same time, doing all of that for the Singers while sharpening up my ability to hit the right notes. I especially love writing the concert scripts and have a lot of talent to work with, starting at the top with our conductor, Glenda Korella, whom I profile in this issue. My background? Editor at Oxford University Press in New York City followed by a move into journalism in Cincinnati, where I wrote for the city magazine, was a producer at the NBC affiliate, wrote for T.V., taught journalism at the University of Cincinnati, was the Canadian Consulate Trade Office political/cultural officer and co-authored My Mother Was Right: How Today's Women Reconcile With Their Mothers.

replaced with more hearty, comforting food that continues to warm the belly long after the last spoonful. In this issue, our writer Linda M. Langwith traces the history of Brentwood Bay and shows us that the deep sense of community fostered by the early settlers is still very much alive there today. 'Tis the season for rich food recipe traditions, and writer Carolyn Herriot picks some of her favourites to share in Garden to Table: sugar plums, mulled spice wine and the Yule log, which traces back to before the medieval era (at least 1615), when people would feast to celebrate the days finally becoming longer, signaling the end of winter. To cleanse the air of the previous year's events and to usher in the spring, families would burn logs decorated with holly, pinecones or ivy. As time went on, smaller fireplaces became the norm so huge logs were impractical, but the small hearths were perfect for baking cakes. And finally, no holiday is complete without a trace of the high-spirited, white-bearded fellow in the red suit. In our Can We Talk column, we meet Airport Santa as he reflects on his journey and his fundraising efforts for the Victoria Hospice. Here's to this issue leaving its own lasting traces for you. into the holidays, I find my thoughts drifting back to family memories, or what we can call "traces." It has so many meanings. They are memories. They are evidence of the former presence or existence of something: a vestige. They are a visible mark, such as a footprint, made or left by the passage of a person, animal, or thing. They are an indication of an extremely small amount. They are a constituent, such as a chemical compound or element, present in quantities less than a standard limit. They are about discovery and examining one's history, and around the holidays when we start gathering with our families in celebration, they are more apparent than ever. Particularly on the table, where an abundance of dishes reflect traditions that are meticulously replicated year after year to respect those whose hands first created them. "airport santa" You began your life as Santa in 1996 while in the Navy. After losing your wife of 28 years to cancer in 2009, explain how Victoria Hospice became the fundraising partner for "Airport Santa?" The Hospice Staff are, without question, some of the finest people I have ever had the opportunity to be associated with. Their care and understanding helped both Sharon and myself face some very difficult times. As a result of this association I decided to try to raise funds to help the Hospice and help others going through what I did. You've just returned from Santa School in Calgary. This is a school founded by Victor Nevada, stage name "Santa Victor," who has been portraying Santa Claus since 1985 when he first started making appearances for the children of his real estate clients. Santa School is dedicated to providing top-notch "Santa Regional Representatives" for Christmas events and national media refers to Santa Victor as "Canada's Top Santa." What was the experience of attending the school like? The experience was tremendous in that it re-enforced all the things that I have tried to practise while being "Santa." The course itself was primarily based on how to present oneself. We went through practice presentations and were taught, by marvelous instructors, how to get, and hold, people's attention. We were shown by a makeup artist how to apply those rosy cheeks, how to stay cool when you are working in a rather hot suit … a myriad of things. Fundraising efforts are in full force at the airport and this year they involve raffle ticket sales for some unique prize giveaways. Can you let our readers know what they can expect and where to find you and your donation box? This year I have been blessed. I have been given three exceptional donations to be used as prizes for my raffle. Goldstream Avenue Bicycles owner Steven Hurdle has graciously donated a 700c Kona Dew (standard) Hybrid, with a lifetime tune-up and flat repair, and a Giro Indicator Helmet. chain saw carver, has donated a four- to five-foot "Eagle with Salmon in its talons" carving in White Cedar. The first ticket drawn will have the choice of which prize they would like. Second ticket drawn will receive the other. South Island Excavating, owned by Chris Hall, has donated a $100 grocery gift certificate as third prize. All this will take place at the Arrivals Rotunda at the Victoria International Airport on January 9th at 12 p.m. during my annual "Santa Shave-off." I have Airport Firefighter, AnnaMarie Trelford, shave my beard, hair and eyebrows off – completely off. This is, for me, an annual culture shock. I enjoy doing it and have even had my grandchildren assist Anna in the event. I set up a display in the rotunda at the Airport and have a donation box available. I am always looking for people who would be interested in assisting me to sell raffle tickets, perhaps an organization or someone with some spare time. Tickets are available at Goldstream Bicycles in Langford and Beltone Hearing Care Centre on James White Boulevard in Sidney as well as at the Airport. Not only do you fundraise at the airport, but you also take part in a number of other functions around the city. Where else might we find "Airport Santa" for the month of December? I do other events; some are private and some are for organizations in the Sidney and Victoria area. In the past I have attended the Capital City Yacht Club children's party, WestJet sponsored events, Yellow Cab sponsored events, numerous Retirement Residences. I have enjoyed them all. I request a donation to the Hospice for my time. My expenses are my donation to help Hospice (having said that if someone or a company would like to sponsor me in the future I would be hard pressed to turn them down). The airport staff and management team have supported your efforts every year. What does this mean to you? What would you, as an employer, do or say if some old guy came up to you and said "I would like to grow my hair and not shave for
the next year?" That is the question I posed to Geoff Dickson, President and CEO of the Airport. I was, to say the least, a bit apprehensive. What if he says "No?" Will I quit the Commissionaires? Will I have to find a new job? Will my cat starve? All these little things that flash through your mind. Fortunately he said "Go for it." Thank Heavens … Geoff has been in full support of my events. All the airport people have been wonderful including airport staff, tenants, maintenance and, of course, Commissionaires … nothing but total support. This is but one example of why the Victoria International Airport was voted one of the Top 10 Most Loved Airports in the World.
Christmas lists. Christmas Eve I will return to the North Pole, pick up all the presents for the children and begin my annual deliveries. Christmas morning I will return to the NP – all the elves will have left on their holidays therefore Mrs. Claus and Santa can safely "Frolic in the Snow."
I'm sure there are many interesting situations you have come across as "Airport Santa." Can you share with us some of the more amusing ones? One of the things I love to do is put on my suit and take a stroll down the departures area to see and hear the comments. I get people to join me in a Christmas Carol, normally Jingle Bells or Rudolph the Red-Nosed Reindeer. It has a calming effect on the five-foot grandmother deciding to straighten out a six-footer who has butted into line, and has been known to bring a smile to the faces of folks who have just found out their aircraft has malfunctioned and they will have to wait for the next one. People are a never-ending source of enjoyment. Christmas is but one part of the year. Christmas can be magical – All you have to do is "Believe."

What does being Santa mean to you? Initially being Santa was quite simply helping out the people I worked with. I had the figure and a beard so some of my staff asked if I would consider being Santa. The experience was phenomenal. I believe that it changed my life in that it was, without question, one of the greatest experiences I have ever had. The questions the kids asked were magical and I really had to be on my toes to answer some of them. As a Santa one must never tell an untruth. One must be careful not to make any promises that may hurt a child. That is one of the primary rules of "Santahood." When do you expect to be heading back to the North Pole? As you are well aware I will be very busy on the Island until Christmas Eve as I have to ensure all the children have given me their

friends & neighbours "everyone benefits from moral leadership, no matter where in the world they live."
Friends & Neighbours is a column about the people who quietly enrich our lives personally and collectively every day. They distinguish themselves by the incredible things they do, whether or not we even notice. It is my pleasure to introduce you to a few of these remarkable people and to share something of their stories. Anastasia Shkilnyk Kingham lives locally but thinks and acts globally. Over the past several years, the North Saanich resident, with the support of her husband, Jim, and friends, has raised thousands of dollars to relieve pain and suffering around the world. "I believe," Anastasia says, "that we live in a global community and that one way or another, we can each make a difference at the grass-roots level." Last spring, for example, as she read about the crisis in Syria, she knew she had to act. "The situation is dire," Anastasia tells me, "especially for the children, most of whom live under horrendous conditions – either in war-torn Syria or in one of the refugee camps in Jordon, Turkey, Iraq or Lebanon." According to the United Nations, she says, more than two million people have fled Syria. Of those, an astounding 51% are children. "They and their families lack food, water, shelter – basic humanitarian aid," Anastasia laments. "It's truly appalling. Perhaps because I was a child refugee, I know something of the perpetual anguish and daily suffering." In June 2013, shortly after she was diagnosed with a serious illness, Anastasia turned her concern about the children of Syria into action. With the support of Jim, Ellen Stensholt, Penny Thomsen and many others, she organized a Timeless Treasures fundraiser for the children of Syria and raised $13,220 for Save the Children Canada. "The community did it," she tells me. "People were so generous." She insists she played only a small role in the effort, though her friends beg to differ! "Anastasia has a unique ability to inspire and engage others," Ellen tells me. "In spite of her soft, composed and gracious manner, she's a tiger when it comes to getting things done! Anastasia makes everything seem possible." In 2011, Anastasia, Jim and Ellen organized two successful fundraising events simultaneously. Working with the Holy Trinity Anglican Church Grannies, they sold fair-trade Kazuri jewelry, made in Kenya, and beautiful clothing, new and used. They raised $3,500 for the Stephen Lewis Foundation Grandmothers' Campaign and $5,000 for the Light of Justice Scholarship, awarded annually to a student in the Ukraine who shows promise as a future moral leader. "Why Africa, why the Ukraine?" I ask. "It all comes down to making a difference where it matters most," Anastasia tells me. The Grandmothers

Campaign, for example, provides grandmothers and the children in their care with food, education, medical care, HIV counseling, and adequate housing. "Think about losing a child to AIDS and then raising your grandchildren without the necessities of life. Impossible to imagine, isn't it?" The Light of Justice Initiative includes an Award for Moral Leadership and a scholarship. "In the Ukraine, as in other emerging economies, corruption is endemic," Anastasia says. "People must bribe officials to access essential services. I was lucky to grow up in Canada. Now I can give something back – not only to my parents' country of origin, but well beyond, I hope. Everyone benefits from moral leadership, no matter where in the world they live.'' I ask Anastasia where her continued passion comes from. "I don't know," she answers, "but for me, I cannot close my eyes to the world around me. I feel strongly that it's within each of us to do more than we think we can. Indeed, I think we must."

ust as the afternoon light begins to dim ever earlier with each passing December day, the holiday season has swiftly moved its way onto the streets of beautiful Sidney by the Sea. Our warmly-lit Beacon Avenue has been decorated with care. Carols delight those shopping for special treasures for those near and dear to them. This truly is the most wonderful time of the year. This is part of a rotating series of articles on members of Sidney Meet Up Women's Networking Group, featuring women in business on the Saanich Peninsula. Buying a house used to be simple: walk in, love it, arrange financing, leave happy. But nowadays, financing a house is a complicated exercise with a gazillion lending options. Enter Fran Daviss, Mortgage Consultant for Invis. With many years of knowledge and experience under her belt, Fran helps her clients attain that house at the end of the rainbow. She sets her clients up for success! A North Saanich resident, Fran has 36 years' experience in the financial industry and 16 years of mortgage and lending experience. Panorama Recreation Centre's aquatic facility boasts a six-lane lap pool, leisure pool, lazy river, hot tub, sauna, steam room and waterslide. Patrons are participating in a variety of aquatic activities including: water fitness, water rehabilitation, aqua spin, aqua joints, length swimming and leisure use. The 1.1-metre depth and warmer water in the leisure pool is great for rehabilitation after an injury or surgery and for participants suffering from arthritic conditions or fibromyalgia. The facilities are wheelchair accessible with overhead lifts that can gently transport you into each of the pools including the hot tub and leisure pool, ideal for anyone with mobility issues. With all of these amenities and services participants will leave feeling refreshed, rejuvenated and in less or no pain from arthritis and other illnesses. Instantly Bobbie had found an activity that was suitable for her and she loved being in the water. After a few weeks in the pool Bobbie needed a change and joined a water rehab class. The class brought relief of her arthritis: "the only place I felt good was in the pool." While participating in the rehab class she gained more strength and endurance and needed another challenge, so Bobbie mustered up the courage and tried the deep water aquafit class. She loved it, made new friends and lost weight. In 2012 Bobbie had lost enough weight to undergo surgery for a hip replacement. She had a fast recovery and in a short time was again attending the deep water aquafit classes. Currently Bobbie is attending three classes a week and has lost 90lbs! I met a man that just moved here from Grande Prairie who had a Cheshire cat grin like he'd hit some sort of jackpot that only he knew about. I asked what he thought of this part of the world and he said that he loved it. His expression by Michael Forbes changed to sincerity for a second when he breathed six words that I could not get my head around: "I will miss the snow though." He must be exhausted by all those hours in front of U-Haul which has caused a touch of delirium, I thought to myself. Ya see, I grew up here and snow and me have only been introduced a handful of times. We are not friends. Whenever the snow flies in this part of the world our first thoughts are whether a snowplow will be coming down our street sometime in the next couple of weeks because we may have to go to work eventually. I love it when people who've arrived here from actual snowy parts of the country smugly declare that they are expert drivers in the snow. Believe me: it's not you, it's the guy from here. You know: the Einstein in the Hyundai perched on the slight incline sliding back toward you with the bald summer tires kicking up a whirling dervish of sand and slush. Before the impact it's like the scene is in super slo-mo, plenty enough time for you to curse his name and Dial-A-Claim. He's the kind of guy whose simple drive to the corner store after a snow quickly unravels into something closely resembling the Donner Party. This is the same ill-prepared genius that, in the Blizzard of '96, turned a perfectly good futon into kindling to stay warm. Ok, you probably deduced by now that the guy I'm referring to is me. They say that we have about a 15% chance of a White Christmas this year and this is where a tiny part of me reluctantly wishes for it. On Christmas Eve when I was about 11 years old, I was peering out the big picture window of our house straining to see even a wisp of Santa Claus. Every year since I can remember, a volunteer firefighter, posing as St Nick, snaked a motorized sleigh and reindeer through the neighbourhood throwing candy canes and caution to the wind. As I sat there waiting, I noticed what looked like a frosty flake flutter down from the heavens. Then another and then hundreds more, until the street was covered in a blanket of white. When things couldn't get any more postcard perfect, I slid down to the curb. As the flakes happily stung my face, the jolly old man tossed me my candy cane. At that moment all was right with the world and I embraced snow as my friend with visions of snow angels, snowball fights and forts in every yard … short-lived as it was, for walking up the path back to the house I was drilled in the temple with an ice ball by that new kid from down the block. I think he was from Grand Prairie.

Annual Toys for Tots Campaign The annual Saanich Peninsula Secret Santas' Toys for Tots Campaign is in full swing. Last year, over 600 toys were handed out to needy families on the Saanich Peninsula to help make Christmas a bit more joyful for the children. New toys and cash donations are graciously accepted at the RE/MAX Camosun office in Sidney (#14, 2510 Bevan Avenue) during business hours (250-655-0608). It is anticipated there will be more toys required this year than last year as the Toys for Tots program is in its second year and more awareness has been built during for the program. The goal for 2013 is to raise enough money and toys to meet the expected needs of over 500 families on the Saanich Peninsula. In 2013, in addition to providing toys at Christmas, Saanich Peninsula Secret Santas also supported a floor hockey program at Greenglade Community Centre for local youth, a Parking Lot Party for students from Parkland Secondary School, provided a scholarship to a local youth to pursue his dream of becoming a professional mountain bike racer, and most recently, launched a free, fun-filled family oriented afternoon event at Beacon Park in Sidney – Pumpkins on the Pier – which featured an Open Stage at the Sidney Band Shell for local youth to showcase their musical talents. On Friday, December 13th the Annual Teddy Bear Toss at the Peninsula Panthers game will benefit the Toys for Tots campaign and a number of other events are planned for the season.

Caffeine & Running: Part 2
Well, going
into December always makes me think of going to the shopping mall where my sprint speed and power are critical … and of course, caffeine by Steve Sheppard enhances reaction time and improves neuromuscular coordination (how fast your brain can send a signal to your muscles to contract, relax, or take advantage of great sales). While this is great for 200-metre sprinters, or making it through the shopping mall, it can also be beneficial to long distance runners. Improved neuromuscular coordination allows your leg muscles to fire faster and more forcefully, which means you'll be more efficient, i.e. you can run faster with an armload of gifts with less effort. Caffeine to recover - while research has clearly shown that caffeine can boost performance, what about using caffeine after a

run (whether it's an ingredient in your favourite post-run beverage, or the result of your cup of coffee on the way to work)? Caffeine has been shown to enhance recovery when used in conjunction with carbohydrates. Researchers have found that having a drink with caffeine rebuilds glycogen stores 66 percent more than a drink with just carbohydrates. Most health organizations recommend no more than 400 milligrams of caffeine per dose. So, err on the conservative side if you're heavier or you're concerned about any healthrelated issues. When should runners use caffeine? Specific caffeine supplementation for performance should only be used during races. If you're a routine coffee drinker and waking up is impossible without your Cup O' Joe, stay on your normal routine. However, it's not advised to supplement before every workout. Why? Workouts are not races. Unlike a race, when you want to run as hard and fast as you can, workouts are usually sub-maximal efforts designed to hit a specific physiological energy system. Don't try something in a race you haven't done before - the age-old maxim applies to caffeine supplementation. If you've never experimented with using caffeine before a hard workout, don't let the first time you try it be during a race. You may find it gets you too jittery or gives you an upset stomach. Do you need to curtail caffeine intake before a big race? Surprisingly, the answer to this question is no. Research has shown that runners receive the same performance boost from caffeine whether they are habitual coffee drinkers or they drink only the occasional cup of tea. After reading this information about caffeine for runners, I hope I have answered some of the questions you've had about the potential benefits and dangers of using caffeine to improve your race results. "It was all of us here that helped. It was the community that did it!" As well as excellent food and service, the Prairie Inn brings local people together to help one another. Ol' Blue Eyes is looking over his shoulder at us when we
arrive, suitcases in tow. For one disoriented moment, I'm back in my childhood home, not in a hotel that celebrates its mid-20th century roots with furnishings, music and art from that bygone era. There in the lobby of Palm Springs' Del Marcos Hotel is an orange and green sofa that I swear was in my parents' home when I was growing up in the '50s and '60s. A pair of chairs in that same nubby fabric, with the same slim legs, is here too, furniture that was functional and – now that I see it with fresh eyes – beautiful at the same time. I had come to Palm Springs to hike and revel in the desert landscape; I wasn't expecting a nostalgic trip to the past. But unexpected discoveries are part of the pleasure of travel and they were certainly part of my first visit to the Springs. "I love it when people walk in the lobby and they smile when they see the furniture," Laura Ramstead, manager of the Del Marcos Hotel, tells me later. It's not just the lobby. Each of the hotel's 16 light-filled rooms is vintage mid-century, uniquely furnished and named. We're staying in the poolside Esquivel Deluxe Room, with a hip mid-century dinette suite including brilliant orange chairs under a poster of Esquivel, the "King of Space Age Pop." This hotel was the first independent commission for architect William F. Cody, winning him a creative design award and launching his career in the style that became known as Desert Modernism. Outdoors are more reminders of an earlier era: a planter that was originally the nose cone on a B-52 bomber and a collection of cruiser bicycles. The bikes are a great way to tour the nearby Vistas Las Palmas neighbhourhood with its mid-century residential architecture,
including homes once owned by Dinah Shore, Dean Martin and other Hollywood stars. History aside, this place still oozes Hollywood glamour, but in a low-key, comfortable way. "I attribute the vibe to the clientele," says Ramstead, and I see what she means when we meet David and Johanna, a 30-ish couple from New York City with style to spare. On this cool March morning Johanna is wearing a fur jacket over a bikini top and skinny jeans while David sports a purple check shirt and pink shorts. But Palm Springs doesn't rely only on its mid-century charm and fashionable visitors. Shields Date Garden has been growing and
selling dates since 1924 and is still popular. Sip a date shake while watching the free flick on the sex life of dates – fascinating! At the other end of the time spectrum, there's San Gorgonio Wind Park, with its 2,700 wind turbines marching up hillsides and across valleys, creating a futuristic landscape of whirling white blades. For something timeless, go for a hike. The Coachella Valley boasts 1,250 miles of hiking trails according to Philip Ferranti, author of 140 Great Hikes in and near Palm Springs. Every day we picked a different area, from palm-filled canyons to fragrant sage-covered mountaintops. And at night we sat poolside, listening to Frank Sinatra and his pals singing about a different time, one you can still glimpse at the Del Marcos.

conversations from the past An Imaginary Interview With an unknown first nations woman who experienced a Christmas miracle

Have
you ever wondered what it would be like to sit down and talk with some by Valerie Green interesting characters from Greater Victoria's past? If so, wonder no more. Although these conversations are merely creative figments of my imagination, they are all based on fact. At least once in everyone's lifetime a miracle happens. This one, which forms part of a First Nations legend that occurred nearly 170 years ago on a cold, crisp Christmas Eve near Fort Victoria, has been told many times before. In today's world of unrest, it still bears repeating. This is my "imaginary interview" with the unknown First Nations woman who experienced her miracle. In your own words, can you describe what happened on Christmas Eve? My baby was sleeping in his papoose in our village outside the Fort where the white man lives. Suddenly a large bird appeared out of the western night sky. It circled around and then swooped down towards my infant son. The bird then picked up the papoose and my child in its mouth and soared off into the sky. How terrifying! Oh yes, I was grief stricken. I never thought to see my child again. I called wildly to members of my tribe and the white men from the Fort. What did they do? They all promised to help find my baby. Company men from the Fort, fur traders and my own people all began the search. They were joined by Chinese people and other settlers. Most were of different religions and beliefs but no one hesitated. They banded together
carrying flaming torches to light the way through the dark, dense forest surrounding the Fort. Did they know where the bird might have taken your baby? No, they had no idea, so they spread out in all directions throughout the night. For those who held the Christian belief, it was Christmas Eve and soon they would be celebrating the birth of the Holy Child. I am told that those Christians were a mixture of Catholics, Protestants, Baptists and Presbyterians. Others were Jews who had already lit their candles for Hanukkah. All joined my people who believe that the Great Spirit guides all things on earth and in the seas and rivers. I assume that no one was thinking of his or her own particular religion or belief, though? No, it was simply a joining together of mankind for a common cause – the safety of my baby. And then a miracle happened? Yes, early the next morning as the sun rose in the east, my child was found on the summit of a small hill three miles from the Fort. He had been covered with leaves to keep him warm and he smiled up at me as though to reassure me he was unharmed. So why do you think the bird took your child in the first place? My people believe it was a way of teaching mankind to join together in times of trouble, regardless of colour, race or religion. According to history, the hill was thereafter known as Christmas Hill on early surveyors' maps. Over time, however, the legend became lost and even the hill took on another name – Lake Hill. Then, in 1937, the Montague Bridgeman family built a house on the summit of the hill and resurrected the legend by calling their home "Christmas Hill." A Deep sense of community fostered by settlers very much alive today in Brentwood Bay The early pioneers of Brentwood Bay were a hardy lot, carving farms out of the forest, caring for their families, raising livestock, growing grain, and selling such staples as eggs, butter, milk and other foodstuffs to a growing population in Victoria. Even in those challenging times of long hours and hard work, thought was given to creating and building a sustainable community. George Thomas and his family always made a point of inviting their neighbours to share in traditional Christmas celebrations. The names of guests are by Linda M. Langwith
familiar street names and landmarks to those who live in Brentwood Bay, featuring the Butlers, Hagans, Greigs, Durrances and Sluggetts, among others. With growing numbers of children to educate, George Stelly and John Sluggett donated land for a school that, just like schools today, also functioned as a gathering place for concerts, recitals and other events, bringing people together for fun and fellowship. Churches too played an important role in the social fabric through pastoral care. This deep sense of community fostered by the early settlers is very much alive today in the village of Brentwood Bay. Tanga Blackburn, publicity director for the lively Centre for Active Living 50+, remembers riding her horse down West Saanich Road in the '60s. "Brentwood Bay has the same country feel only friendlier," she enthuses. Tanga recalls a power outage one Monday last winter that prevented JJ's, the local coffee shop, from catering to its regular java junkies. "Breadstuffs Bakery, usually closed on a Monday, came to the rescue of the local coffee lovers and opened its doors – that's real community and that's what Brentwood Bay is all about." With three levels of schools in the neighbourhood, the village is committed to its young people. Plans are in the works to create a new Central Saanich facility for a Boys and Girls Club in the Brentwood Bay Cultural Centre complex. Scouts and Guides meet in the old school house in Pioneer Park, while the Brentwood Community Hall offers a variety of activities, including badminton and karate. Stewart Story, of Story Construction, is really excited about his family's latest project in the village core, a commercial building with flexible floor plans, the exterior finished in a pleasing West Coast style similar to the Royal Bank building, which is also part of the Brentwood Centre Development, a partnership between the Story and Charman families. In addition, a 15-unit condo complex will feature spacious floor plans from 976 to 1,115 square feet, with two bedrooms and two bathrooms, along with a fourth floor comprising three units of 1,639 square feet each, with vaulted ceilings and water views. Water and garden features will ensure a tranquil setting for the condo owners, while a gated path from the adjacent Brentwood Bay United church property will allow convenient pedestrian access to the current mall. Stewart's roots go deep in the community: both his grandmother and his great grandmother operated strawberry farms on Veyaness Road, so it is fitting that his family are part of an ongoing process to ensure a sustainable and vibrant future for Brentwood Bay. According to resident John McLellan, husband of Rev. Jonelle McLellan of Shady Creek and Brentwood Bay United Churches: "People are quite happy with the changes in the village." Trafalgar Square is due for a facelift, and more mixed
use developments are in the planning stage, all within the urban core, allowing Brentwood Bay to keep its special rural and seaside ambience, wrapped in a small town friendly feel.

As a designer, artist, musician and writer, the owner appreciates the opportunity to work from home. His live-work studio, "studioDB3" on Madrona Drive, is bright and airy, with 14-foot ceilings and an expansive loft, giving Dan what he describes as "a great functional space" for his creative endeavours. Architectural models of many design projects, works of art in their own right, from the West Bay marina to the Cantonese Opera House done for the Hong Kong Museum of History, share space with large abstract canvases where mood is conveyed through intense washes of colour, often within an intriguing framework of lines and abstract metaphors that offer a harmonious balance. Dan draws his inspiration from the "de Stijl" movement and minimalist art of the '60s. The two "Red and Blue" chairs in the studio are based on originals designed by Gerrit Rietveld, a member of the movement. Playful with their clean

lines and primary colours, the chairs have a surprisingly energizing effect, making one feel more alive in the space. Dan's custombuilt easel has an intriguing provenance, for it was once owned by "… a portrait artist who painted portraits of our Queen, Winston Churchill, Salvador Dali and many other notable figures." The evolution from purely representational work to more abstract forms has been a liberating one for Dan, who seeks inspiration by playing the cello and writing poetry. Like the paintings, Dan's poetry is layered with meaning, capturing a fleeting mood or feeling in a way that expresses the universality of human experience. Dan's studio is also the hub for two of his dearest projects: Small Modern Living ("improving the quality of life of everyday British Columbians by building healthy, green and affordable housing") and Habiterra, which encompasses sustainable building techniques and materials for communities where basic housing needs are lacking on a global scale. west coast G ardener lifting the spirit: amaryllis and paperwhites In the dark days of winter, when spring seems far away, nothing lifts the spirits like the gorgeous blooms of the easygoing amaryllis (hippeastrum) and the green shoots and fragrant flowers of paperwhite narcissus. The hardest part about growing amaryllis is choosing which variety to grow. The deep red blooms of varieties such as "Red Lion" have been popular since the 1800s. Since then, hybridizers have developed new varieties in a range of colours including creamy white, fresh green, striking orange and darkest, velvety red. Blossoms can be the classic single flower, frilled doubles or even striped. There are new hybrids with spiky petals and fun names like "Bogota." Perennial favourites are "Picotee," with white petals delicately outlined in pink, and the lovely double-flowered "Blossom Peacock." Whichever bulb you choose, growing them is simple. Plant them in good indoor potting mix with the top third of the bulb exposed above the soil's surface. You can also grow them in glass on stones in water, but soil is preferred because the bulbs will re-bloom next year if grown this way. Choose a pot with enough "weight" to match the tall flower spikes. This will look more attractive and a heavier pot will prevent the plants from falling over due to their large blooms. Water only enough to keep the soil moist and place the pot in a bright, warm spot. Depending on your cultivar, they'll be blooming in four to 12 weeks. Paperwhites are even easier to grow. All you need is a waterproof container and stones, marbles or something similar to hold the bulbs out of the water. Place a couple of inches of stones in the bottom of your container and place the bulbs, root end down, on top. Add water just to the base of the bulbs, place in bright light in a cool room and soon you'll see roots growing down into the stones. Within four to six weeks you'll have fragrant flowers that resemble miniature daffodils. If the stems get floppy as they grow, tie them up with raffia or ribbon, or grow them in a tall vase so the sides hold the stems up. Another trick to try with paperwhites is to add a teaspoon of gin to the water which will stunt their growth and cause the stems to stand up straight. Trust us, this actually works! on design The top 5 extra things to consider when designing your next home There are obviously many things to consider when designing your own home, from size to architectural style to what side of the home the living areas should be on. As long as you carefully consider your lifestyle, most people tick off the major boxes. Below are our top five considerations. 1. The walk-in pantry is becoming a second kitchen. We are all familiar with the benefits of the walk-in pantry, but Lisa and I find more people are expanding their kitchens to turn the old food storage closet into a functioning second kitchen, either for ethnic cooking or an improved butler's pantry complete with custom millwork, matching countertops and perhaps second fridge. 2. The media room. There has been a growing trend of getting the T.V. out of the living room and moving it into a dedicated entertainment home theater. As the electronics have become more sophisticated, so has the desire to create a purpose-built room to contain the noise and provide an intimate customized space perfect for the sports fan and movie buff. Think mini bar too? 3. Covered outdoor living. We all like to barbecue and living in Victoria can mean quite often you're out cooking in the rain. Having, at a minimum, a small covered space to provide some shelter is a must. Full outdoor kitchens are also something to think about, and a growing trend which very well may be the next craze. 4. Laundry up or down? A common plan is bedrooms up and living down. So the debate rages: what floor should the laundry be on? Should it be up with the bedrooms or where you spend most of your time, downstairs? Most prefer to settle with the same floor as the bedrooms, but take the time to consider where your needs fit into the equation. 5. An ensuite for each bedroom. It's an emerging trend to provide an ensuite for each bedroom. Yes, the kids get their very own bathroom. This was most likely not the case when you grew up, but some find it works to minimize sibling rivalry and fully customize the family home. These are just a few of the new and not-so-new ideas homeowners are considering these days. Each have merit, to at least explore. Festive Entertaining "Tis the Season!" which means you are about to be inundated with invitations to potluck gatherings. What to take? Here are three easy-to-prepare treats that will be more than welcome at any festive gathering.
YULE LOG
4 oz cream cheese, softened 4 oz soft goat cheese, plain 1 tbsp dried fines herbs or fresh if you can find them (choose from tarragon, dill, chives, parsley, sweet marjoram) ½ cup hazelnuts, almonds or walnuts, lightly toasted* and finely chopped In a small bowl blend the herbs of your choice and cheeses together. Cover and refrigerate to allow the flavours to meld and to make it easier to handle. *To toast the nuts: Preheat the oven to 300°F. Spread the nuts on a baking sheet and place in the oven for 10 to 15 minutes or until lightly browned. Shake the pan every 5 minutes to turn the nuts for even roasting. TIP: Use a timer, it's easy to forget them! Shape the chilled cheese into a log shape. Spread the finely chopped nuts out on a board, and roll the log over them until evenly coated on all sides. Place the Yule Log on a handsome platter, decorate with a festive sprig of holly and serve surrounded with locally made crackers.

sugarplums Makes 36 wholesome little plums These are wonderful sweet and spicy treats for the Christmas season. For some family fun get the kids involved in making them. Plan a day ahead to soak the nuts. 1 cup walnuts, almonds or hazelnuts ½ tsp sea salt 1 orange, peel and zest 1 tsp ground cinnamon ½ tsp fresh-grated nutmeg ¼ tsp ground allspice ¼ tsp ground ginger ¼ tsp ground coriander 1 cup dried cherries, cranberries or blueberries 1 cup dried apricots, figs or prunes, chopped 1 cup unsweetened desiccated coconut Toss the nuts in a bowl with the salt and just cover with warm water. Allow to soak in the lightly-salted water for 8 hours or overnight. Drain and rinse well. Toss the presoaked nuts into a food processor bowl with the orange peel and zest, spices and all the dried fruit except for the coconut. Pulse the mixture a few times to combine, and then process as needed to form a paste. Shape the sugarplums by forming 2 tbsp of paste into a ball, and rolling it in the coconut. Nightmare of a White Christmas by Trysh Ashby-Rolls
What became known as the Great Victoria Blizzard began late on the evening of December 26th, 1996. One woman remembers getting up from the dinner table, where she and friends had exchanged late Christmas gifts, to make coffee. She glanced out her kitchen window and remarked that the sky appeared to have turned bright orange. Suddenly blasts of snowflakes appearing like airborne fluorescent paint chips shot to the ground, covering it in minutes. She dispatched her guests home before the storm worsened. By daylight it was still snowing. The next morning and the next and the day after that it snowed from sea to shining sea across Victoria, the Saanich Peninsula and elsewhere in southwestern B.C. For four days it snowed without let-up. Combatting the piles and piles of snow with the usual broom and dustpan was useless. Almost five feet (150 centimetres approximately) accumulated not only along garden paths and sidewalks, but over roads and even parked cars. Few people ventured out. Those who did bent their heads against the white onslaught. Those who dared drive their cars got stuck. Buildings were mostly closed; grocery stores and supermarkets were shut. Even the Empress Hotel appeared locked up – although it wasn't really. Boats lay silent in the harbour, the water at its edges frozen into shapes resembling slabs of broken marble. Snow ploughs did their best to clear the roads but gave up when they too got stuck. People up to their thighs in the white stuff struggled free and got home as fast as they reasonably could under such conditions to hot toddies, hot tea, hot anything. One man, Weather Doctor Keith C. Heidorn, described walking as being "like a spoon stuck in thick mashed potatoes." The ferries couldn't run. Victoria airport closed for one day. There were power outages and roofs collapsed under the weight of accumulated snowfall, including at North Saanich's Panorama Recreation Centre, and several boathouses, which crushed stored boats at a Sidney yacht club. Retired anthropology professor Saul Arbess loved the unexpected weather. He understood a real Canadian winter. After all, he'd spent most of his life, certainly his formative years, in Montreal. He got out his skis and, whooping with delight, skied over the tops of cars outside his Fairfield home off Dallas Road. At minus -1°C, what 52 SEASIDE | december 2013
seemed perishing cold to most Victorians felt positively balmy to him. There is absolutely no indication that the Great Blizzard of '96 will repeat itself this winter. Yet have you thought what you'd do if it came on, say, Christmas Eve? Would you have adequate food supplies? Toilet paper and other necessities? Library books? Cards and Scrabble? How would you amuse yourself if you lived alone and couldn't get out? Now is the time to plan for such an eventuality. Always keep cans of food in your pantry – not just for extreme weather conditions but other emergencies. Earthquake. Illness. Even with a bad head cold you have to eat, and doctors say lots of fluids mitigate mucous buildup. Suppose this is the year you are alone for the holiday? Every year so are lots of people. No formal invitation required, but have you thought of slipping a piece of paper or card under your neighbour's door or your neighbours' doors: "Please join me for a potluck meal on Christmas Day / Boxing Day / New Year's Eve / Hannukah," signed by you with your phone number? Could be a whole lot of fun … Or a pain in the you-know-what never to be repeated. You never know till you try. After all nothing ventured, nothing gained.

Life Without Fossil Fuel by Al Duncan
The stars and planets aligned for a brief two-month period and I was lucky enough to experience life without gasoline. Yes, no gas station visits for 60 days. Was I housebound or was I out of the country? Neither: I was driving a purely electric car. A 2012 Nissan Leaf SL to be exact. Of all the offerings on the market these days, this is the most "car-like" of them all. It's incredibly comfortable, refined and best of all totally silent. I was a little leery at first you see, as I have to drive a lot for work. I worried about recharging times, the dreaded "range anxiety" and of course, as a performance enthusiast, the thought of floating along at pedestrian speeds was a little disconcerting. I needn't have worried: the Leaf has 100% torque immediately so it's very peppy, it will cruise along at highway speeds and top out at a shade over 160kph, and on a full charge I learned to use the 150-kilometre range it offered up. One of the things one notices after spending time in an electric is the total absence of noise and vibration, so much so in fact that when making the transition back to the internal combustion powered beasts that dominate our roads, one immediately realizes that we haven't really come that far in the past 100 years in the refinement and development of "The Car." During my time Leafing around, I learned to charge the car up overnight right from my outside 120-volt plug – a full charge by morning and off you go. When out and about, there are many free public charging stations (check out the phone app "plugshare," a

In Sidney alone there are five quick charge stations, all free, and all providing a full charge in a mere four hours. In Victoria, charging stations are everywhere and most of them come with a preferred parking spot close to the front door. On the west coast of the U.S., the number of charging stations triples and they are all conveniently located. By day 59, I was sold: the car performed flawlessly and I actually felt guilty for not visiting my local gas station. When I finally did, after handing the Leaf back, I couldn't believe the price of gas. One litre of gas was priced at 20% more than the total cost to charge the Leaf for 150km of driving range. This phenomenon is catching on: last year over 58,000 Leafs were sold in North America. Over the two months that I drove the Nissan, I saved close to $700 on gas, and my hydro bill was $41.50 more than normal … you can do the math. The Leaf isn't for everyone, but it's perfect for the Island. It's great as a second car for a two-car family and with all the safety and comfort features of a regular car it's definitely worth a look. I can see one permanently planted in my future.

Saanichton Physiotherapy and Sports Clinic: Partners in Health by Barry Mathias This is the second in a six-part series of profiles on some great local businesses that are working to keep us all in good health. Everyone injures themselves at some time in their life; sometimes we recover naturally, but often we need specialist help. The Saanichton Physiotherapy and Sports Clinic has been providing expert treatment for more than 30 years. Shevaun Sedlock (D.PT) has been a co-owner since 1989, originally sharing the business with Joe Kubinec, who founded the clinic. For the last five years she has shared the ownership with Scott Simpson (PT, BSc. Kin). "We treat people of all age groups, from young sports enthusiasts to the very elderly,"

After completing her physiotherapy schooling at the prestigious Trinity College in Dublin, Ireland, she worked in Sweden, Hong Kong and London, England, before settling on the Peninsula 24 years ago. "Clients do not need a doctor's referral to get treatment here, unless they are covered by Workers Compensation," she explains. "Clients can obtain help simply by making an appointment, and home exercises are a large part of any treatment." Shevaun's business partner, Scott Simpson, combines physiotherapy and kinesiology with a background of athletic and sporting achievement. Scott, who completed his degrees at Dalhousie University, has achieved provincial success in soccer, golf, hockey and baseball. In 2006 he was the Canadian National Champion at the 10km distance, and has been the B.C. road racing champion in 2009 and 2010, and top Canadian in the TC10k. "I have been less involved since the birth of my daughter," he admits, although he still works with the National Team, advising and helping many of the Peninsula's athletes. Scott's knowledge of kinesiology enables him to work with his clients to "get in tune with the injury," and "to empower people to heal themselves." Knowledge, combined with on-going exercise is the key to good health. "It is very satisfying to enable people to return to the sport they enjoy. Therapy teaches people
how to remain active." Another member of the team is Kris Swanson (BSc.Kin) whose specialties include cardiovascular and sport specific training, and who enjoys working at the Clinic where he can apply "my experience, education and

common cents Year-end tips to reduce your income tax bill With the year drawing to a close, it's time to make sure you head into 2014 in as strong a financial position as possible. That means taking steps before the year ends to reduce your 2013 income tax bill. Here are five tips you may want to consider: by Barbara A. Armstrong 1. Complete tax-saving Edward Jones Investments transactions. Many items that are deductible or qualify for tax credits must be paid before the end of the year. These include medical and child care expenses, professional dues, alimony, and donations to political parties or charities. Keep in mind that it may be advantageous to make donations of publicly-traded securities to a registered charity. In addition to the donation tax credit, there is also no capital gains tax. 2. Trigger accrued losses before year-end. If your investment objectives have changed or the underlying fundamentals of an investment have changed, consider selling the investment and triggering a capital loss. Losses must first be used to offset gains in the current tax year, and unused losses can be applied to the past three years or to future years. Sell securities at least three business days before year-end so the transaction will settle by December 31st. 3. Consider adjusting your instalment payments. If you make quarterly payments, the final instalment is due December 15th. Instalment payments are based on the previous year's income. If your 2013 income is lower than in previous years, you might want to reduce your December 15th instalment. 4. Contribute to a RESP. Put money into a Registered Education Savings Plan (RESP) before year-end to qualify for the 2013 Canada Education Savings Grant. There is no deduction for the contributions but the earnings will accumulate tax-free. 5. Are you turning 71? If you are turning age 71 in 2013, you have until December 31st to convert your Registered Retirement Savings Plan (RRSP) to a Registered Retirement Income Fund (RRIF). If you were planning to make a final contribution to your RRSP before converting it to a RRIF, the contribution must be made by December 31st. If you have unused contribution room or will continue to have earned income you can make contributions to your spouse's RRSP after you turn 71. There may be more you can do, so speak with your tax advisor to determine actions you might want to take that are appropriate for your particular circumstances. * Edward Jones does not provide tax or legal advice. "The most important aspect is to enable customers to understand how to qualify for a mortgage, and what it will mean to them both now and in the future." Sharon has an enthusiasm that is infectious: "I deal with all ages from early '20s to retirees. Everyone is an individual with their own particular concerns." She describes one of her memorable successes: "I dealt with a couple that had a dream of owning an acreage. They had a nice house in Hope Bay, but were unable to get a mortgage for the five-acre property they wished to buy. They wanted to move their house from its urban setting to their rural idyll, and moving a house is both complicated and expensive."Banks are reluctant to lend in this sort of situation." Sharon managed to arrange funding for the cost of moving their house, and once it was in place, the banks were happy to offer a mortgage!
Sharon and her husband, Raymond, have a daughter and two sons between them. "They're all grown up now, and I have been my mom's caregiver for the past seven years." It is her wealth of experience with both young and old that enables her to relate to the needs of her many clients. "I love my job. It's often like a puzzle that I can solve to benefit those who need advice." New clients rarely know anything about mortgages, and once they have bought their house, there is always the next phase to consider. To be a successful mortgage consultant, Sharon has to have an understanding of market forces, fluctuating interest rates, and be able to recognize the best mortgage for her clients. "I advise those who are coming up for a renewal of their mortgage to discuss their plans at least six months before the due date," she says. Sharon is much involved with her community, and is a member of the popular Sidney Meet Up, a network of businesswomen doing business in and around Sidney. Peninsula Singers: Glenda Korella It's been 13 years

since Glenda took over conducting duties for the Peninsula Singers and in that time, she's taken her 65-member troop on a magical ride. Inspired by her leadership, her ensemble has grown from a community choir to a show chorus with a record 19 consective sellouts at the Mary Winspear theatre. She's added a large dose of humour to the shows, choreography, singalongs and a salute to local young musicians in each concert's "Spotlight on a Young Artist." "I wanted to develop a really top-notch show so people would want to keep coming back because they loved what we did – and it made them feel good to hear and see us," says Glenda. The Singers' ranks are a Noah's Ark of people who've come together to sing under her inspired directing. "At first, people were uncertain about whether they could possibly memorize all the songs and then, on top of that, master the choreography," Glenda says. "I think I've allowed people to do things they never imagined they could do. And it's heartwarming to see someone who never thought they could sing a solo to take on that very thing with gusto." This includes soloists such as bass John Cribdon, who'd never sung solo in his life until Glenda gave him his chance in 2002 with Some Enchanted Evening. Soprano Adrienne Dyer, a frequent soloist agrees that Glenda encourages individual members to reach for the stars. "Her inspiration goes beyond the concerts and impacts our lives even outside the choir," says Adrienne. "So many individual members have blossomed over the past few years working with Glenda! She is a true leader: she brings out our very best." As for the over 30 young artists she's featured throughout the years, many of them have gone on to greater success. Violinist Philip Manning, featured in the spring 2012 concerts, can be seen playing with the Victoria Symphony Orchestra. Pianist Soo Ji Lee is now a student at the prestigious Cleveland Institute of Music. And Aline Dumalski, violinist in the Christmas 2011 series, was Vancouver Island's only national finalist in last summer's Canadian Music Competition. Singing for Glenda brings joy to her troupe and, equally, to her audience. "There is so much bad news out there, so it warms my heart to hear people say after the show, 'bless you and thank you.'" last word This morning when I woke up there was frost covering the ground and at 1 p.m., it's still cold enough out to see my breath. Christmas is on the way (just five short weeks as I write this) and I can't wait; it's my favourite time of year. The strong sense of community that fills the air is, to me, the best part of the holiday season. The dictionary defines community as "a social group of any size whose members reside in a specific locality, share government, and often have a common cultural and historical heritage," but it's really so much more. As I gave this issue a final check before going to press, I noticed a very present theme: that of community, and the people who strive to make things better. On page 13, in Friends & Neighbours – Giving in a Global Community, writer Susan Simosko shares the story of Anastasia Shkilnyk Kingham, a local resident. "I believe," Anastasia says, "that we live in a global community and that one way or another, we can each make a difference at the grass-roots level." Even after being diagnosed with a serious illness, Anastasia put the needs of others before her own, raising money for causes such as the children of Syria and the Stephen Lewis Foundation Grandmothers' Campaign.
