The Gift of Honesty By Elaine Grohman

L

ife presents us with unexpected opportunities to expand our awareness, to open our hearts, and to quiet our minds. Life presented me with such an opportunity this past month as I traveled to the Sacred Valley in Peru, where the spirit cradled me through healings, inspiration, and insights. There, I spent time with Quechan and Peruvian elders, who shared deep insights and ancient knowledge. As human beings, we have lost sight of the purpose of our existence, and in so doing, we have become lost in the illusions that we have created. Our purpose is simple, but not easy. To live our purpose, we must be willing to change our perspectives, to forgive what we do not understand, and to walk with confidence as we begin to see with new eyes. We are not separate from anyone or anything. Nothing has been hidden from us; we have merely been blinded by the simplicity of our purpose. We are here to love, and we are here to be happy. We can learn to have all of our thoughts, words, and actions illuminated by these truths. The challenge is that we have been taught that we are not worthy of happiness. Yet, in the deepest part of our heart, we know that this is untrue. We can learn to walk through each day with the understanding that, within us all, we have the Light of Illumination, which allows us to see things with different eyes and to hear things with different ears. We know that we are here to create our world through our thinking, and in this truth we can re-create what is not working. The challenge is to relinquish the need to make others wrong—as is our habit. Our new opportunity is to think, emote, and act with love. We must begin, first and foremost, with love for ourselves. If we truly love ourselves, we would never consider harming anyone or anything. We would begin to grasp the knowledge that we are not merely inhabitants of Mother Earth, we are a part of her.

Currently there are few, if any, systems that could stand up to the scrutiny of honesty. We have been taught to “save face,” and in doing so, we deceive ourselves by turning our gaze away from problems that call for our attention. We are reminded almost daily of the many systems that have failed to uphold that which they profess. As we mature and grow through our lives, we will find that if we are not honest in selfappraisals, then we can be trapped by our secrecy that will see the light of day, sooner or later. There is a beautiful story about the deep understanding that the indigenous people of the world held as a Sacred Truth. If an individual did something less than honorable, whether in thought, word, or deed, they would immediately “selfconfess” to either the Medicine Chief or the Tribal Chief. They would walk directly to the elder and admit the error of their actions. They knew full well that there is nothing that can be hidden from the spirit. With this understanding, they fully comprehended that if there was no honesty within the individual, there was no honesty within the tribe. Sooner or later, we are all accountable for our own actions. This does not mean that there is condemnation or perpetual punishment, but rather a deep appreciation for all life has offered us. At the end of the day, and at the end of a lifetime, we will know that life provided all that we needed. We could not arrange the circumstances of how important relationships occurred in our lives, or the seeming “chance” encounters that have brought many opportunities. At the end of the day, all that we can offer creation is our honesty.

Q

After enjoying my summer, I now have patches of brown pigment on my face. They don’t look like typical sun spots. What are they and what can I do?

What you have is called MELASMA. It is a result of sun exposure, can be unsightly, and affect ones self-esteem. This can be in the epidermis (top layers) of the skin or deeper in the dermis (lower layers), which can make this condition very difficult to treat. But don’t despair; there are methods out there that can help you keep the melasma managed and under control, and can give you a beautiful, even skin tone again!

WHY MELASMA OCCURS

Melasma occurs when there is an imbalance in the body and simultaneous sun exposure on the skin. It is a fact that the sun stimulates melanocytes (pigment producing cells) and, even after one day, your skin pigment can return and darken. That is why melasma is worse in the summer, as well as has a high reoccurrence rate during these months. Over 90% of melasma cases are women. Within that 90%, there are higher incidences within pregnant women as well as those of ethnicities with darker skin.

WHAT YOU CAN DO AT HOME •

Avoid sun, extensive heat, and over irritating your skin. Any amount of damage to the skin can also create pigmentation disorders.

Wear hats (preferably the large rimmed ones), as well as sunglasses when outdoors.

Apply SPF 50 and reapply every one-and-a-half to two hours. The physical sun blocks are best (those containing Zinc, and Titanium Dioxide) rather than using chemical. Try to find a sun block with micronized zinc so it doesn’t leave a white residue.

Use a lightener. However, hydroquinone, an active ingredient in skin bleachers, used in very high concentrations for prolonged periods of time put their users at risk of developing ochronosis, which is permanent discoloration. Seek professional advice whether this ingredient is for you, or whether an alternative is more appropriate.

Use an antioxidant (Vitamin C) and a good exfoliant (acids/ retinoids) to help protect the skin and turn the cells over.

GETTING TO THE ROOT

Melasma can be caused by many internal conditions, including hormones (progesterone, and possibly melanocyte stimulating hormones), pregnancy (chloasma), hormone replacement therapy, menopause, birth control, immune system disorders, genetics, and some medications. I recommend seeing a trained Naturopathic Physician who can address underlying health concerns that can be related to common skin complaints.

TREATMENTS THAT HELP

Fractional lasers are one of the best inventions for melasma. It can break up the melanocytes and can quickly restore a more even tone to the face. There are many different types of fractional treatments out there (laser vs non-laser, ablative vs non-ablative) and when dealing with melasma, it is essential that you find someone who specializes in this condition. Deeper chemical peels and intense pulsed light (only in epidermal melasma cases on lighter skins) can also help, but it is important to be thoroughly evaluated as the melasma could go either way in its result, better or worse. Proceed with caution and follow the advice of a specialist.

I Think Those Tree Huggers Are On To Something!

I

just returned from a 10 day trip to Utah. That trip included mountains, five hour hikes, back country bike rides, and small, old-town streets. There was no need for make-up, I didn’t wear heels, and my daily outfits consisted of workout shorts and a tank top. The cell phone reception was almost nonexistent, which created a total and complete disconnect from my daily life. It appeared that I had to be forced out of my daily routine in order to truly appreciate my surroundings. I felt a rebirth, as if all my senses were suddenly turned on! I could see the colors on Mother Nature’s canvas. I could hear the sounds of life from the bird’s chirping and the wind whistling between the trees. I could smell the earth’s perfume from the eternal rows of pine trees. I could feel the land beneath my feet, whether the stones covering the Narrow’s floor, or the dirt lining the curving trail up Angels Landing. I could taste the fruits grown from our farms, organic, clean, and unprocessed. I was aware that my outer self was slowly melting away to leave me with my true self, my spiritual being. The habit of constantly checking my emails, sending text messages that weren’t urgent, worrying about the perpetual to do list, and stressing about how things would get done back at home without my constant involvement, that thick sticky all-consuming layer that wraps around us like an invisible cocoon and forces us into our own isolation, creates the misconceived notion that everything revolves around us. Once that cocoon was removed, I had no choice but to become one with my surroundings. I was no longer the ballsy attorney, thinking about strategy and how to tell the story to the Court; I was no longer the parent worrying about college applications and which school would be best for my son. Nope. I was simply one of life’s living creatures, raw and naked of manmade “issues”, part of a larger system created by an entity than no one could control. In that space, I was able to capture what I had temporarily lost—perspective. We all have worries, anxieties, and decisions on a daily basis to experience, process, and then work through. “Life” doesn’t stop to allow us to catch our breath. It’s so easy to lose our footing and fall back into the stream of endless to do’s, and have emotions of more colors than a rainbow. It’s our personal responsibility, and the greatest gift we can give to ourselves, to keep perspective and to remember that the world is much larger than our own daily stresses. We should remember that our existence is part of something bigger—something beautiful, peaceful, and of nature’s own recipe. Realizing that our individual experiences, while significant and very real, are truly just a small piece of who we are it is so freeing, comforting, and assuring that simple and obvious awareness creates confidence, security, and happiness. When life’s stream feels like a rapid, remember to keep at least one foot rooted. You’ll be surprised with the inner strength, clarity, and self control you feel and need. Lightening HyperPigmented Skin Safely By Margot Kohler Hyperpigmentation is a complex process, but advances in science offer those affected with unwanted “dark spots” a real solution to lightening their skin safely. Hyperpigmentation is an over production of melanin in a localized area(s) and can occur for several reasons. The simplest cause is over exposure to UV light. However, for many, it is due to a combination of hormonal imbalance and exposure to UV light. Often, in women, it occurs during pregnancy when hormonal levels are elevated. What’s interesting to know is Hyperpigmentation can also occur when an individual is exposed to high temperatures for long periods of time, like the heat levels in the dessert climates. Those who have no choice but to be outside in those temperatures have a very high probability of developing hyper-pigmented areas on their skin. This is because the proteins that are responsible for initiating the melanin in the first place stem from the blood, and high temperatures cause us to have higher blood pressure. Just think how red our face gets when we are over heated. For darker skin types, it can occur for the same reason but even more easily as their skin already has a greater amount of melanin production. There are other causes such as medication or injuries. In some cases, the hyper-pigment will subside during winter months when the skin is in less heat and is exposed to less UV light. For many others it does not fade. For these individuals, a short term and long term prevention treatment should be developed according to their exact causes and skin type. The concern is an overuse of treatments, such as lasers, with little operator knowledge, or prescriptions that have been overly used, causing further damage to the skin. It is best to start with a conservative approach that is guaranteed safe. If desired, a person can always try more invasive treatments with some risks. Fortunately, much research has been dedicated to understanding the biological phases of how this occurs and how active ingredients can inhibit and lighten the unnatural darkened pigment. Even more exciting is the breakthroughs in DNA cellular repair. This helps the skin react properly and offers more “anti-aging” benefits beyond just helping Hyperpigmentation. The key is finding a facility that really understands the condition on all skin types and has the expertise to develop a customized program. Our first defense is using a UVA & UVB broad-spectrum protection. This means both physical and chemical blocks are blended for maximum protection against damaging UV rays. Constant re-applying is important but only practical if one is outside during a recreational activity. For a typical day that might involve driving kids to and from school, a visit to the health club, a trip to the food market, or a drive to the office, the key is layering, just like keeping warm in the winter. There are so many choices. Unfortunately, the vast majority of over the counter cosmetic creams cannot deliver the same results as higher quality ingredients. O

ne of the wonderful things about being a Life Coach is that I get invited to witness and explore the thoughts and feelings of my clients. It is similar to the trust and confidence you feel when you talk to a good friend. It is always an honor to participate in finding a solution to a life problem. Sometimes, I need only to listen, as the person unravels the details of something traumatic they need to process. The sources of the trauma or drama can be different. However, the steps to healing are almost always the same. Once you have processed the emotions and are able to clearly define the problem, it is time to move on to the next step. We must become something I call “Solution Minded.” Consider these words from Albert Einstein.

However, it is here where I often find resistance. It seems that many times a client doesn’t want to leave the highly charged world of their problem and step into the mindset of solutions. Why? Solutions are often not very sexy or exciting. On the other hand, our problems are often filled with emotion, passion, and drama. This is pretty potent stuff.

I want to focus on a great life filled with love, success, and prosperity.

Don’t be an enabler. Once the problem has been clearly articulated and defined, move on to the solutions. relatively good shape but, despite diet and despite exercise, has that ‘roll around the middle’ of their abdomen… and no matter what they try to do, these three to four inches of fat won’t go away. Vanquish addresses those patients very effectively.” It also addresses love handles. During a Vanquish session, multiple panels are positioned over the target area using radio frequency waves to dissolve the fat. The system automatically adjusts the heat of the fat cells, creating “apoptosis” or fat cell death. The system of creating energy via radio waves works because fat cells have a lower water content than skin or muscle, which gives fat a high impedance quality. The electromagnetic waves pass through the skin and muscle tissue, targeting the fat cells. It is recommend that patients undergoing the procedure drink at least one liter of water before and after the treatment, since this may help to increase conductivity and keep the patient hydrated after the heat induced procedure. Dr. Berenholz specializes in cosmetic gynecology and decided to use Vanquish a year and a half ago when his patients asked if he did any body sculpting procedures. Dr. Berenholz spent about a year researching various techniques, finding that the BTL Corporation’s Vanquish treatment was the most effective, safe, and affordable. “Vanquish was really what I felt to be the most effective, noninvasive procedure for body sculpting…I looked at many others but they all had drawbacks, such as being painful and the results were uneven.” Dr. Berenholz, who currently heads the gynecology division of BTL Corporation, said he spent numerous hours of training with the corporation’s representative to make sure safety dynamics were implemented. He also educates other physicians and gynecologists on the Vanquish treatment. Although Vanquish is virtually painless, and patients can resume daily activities after a session, there may be some

The Vanquish treatment is prohibited on patients, who are pregnant, may be pregnant, or who have metal implants, staples, or screws. Vanquish was approved by the FDA earlier this year for deep tissue heating, but not for fat reduction. Yet, animal studies and clinical studies have shown Vanquish does reduce fat in patients after a few sessions. Since the fat cells die, it may be concluded that the fat removal is permanent. The results of Vanquish may be evident as soon as one treatment, but Dr. Berenholz recommends a series of sessions to receive the best results. Vanquish can also be repeated in cases such as lifestyle change or postpartum fat reduction. “Right now we encourage our patents to have a set of therapies ranging from four to five treatments. I think this can be done safely every year if necessary.” Dr. Berenholz adds that the best results are with patients who have maintained healthy lifestyle habits, including diet and exercise.

“It was always my dream to work for Merrill Lynch on Woodward in Bloomfield Hills,” shares Lisa London. “I remember driving by that building as a young person and thinking, wow, it would be so great if I could work there!” Now here she is -- Lisa London of “The London Group” – at this very Merrill Lynch office a few decades later as a Senior Vice President – Wealth Management Advisor, and Retirement Benefits Consultant for the firm. It wasn’t an easy climb from a very humble childhood when there wasn’t much money to cover bills, let alone fund a higher education. Lisa’s personal history is intricately tied with her success in Merrill Lynch. Her story and her message are about holding onto a dream through grit, determination and patience with the time it takes to have it all. Divorced when Lisa was a baby, her mother struggled as a single parent until Lisa was 14 years old. Growing up in a household with a single mother in the 1960s delivered a powerfully unforgettable memory of how her mom struggled to make a life for her family. In those days, women had few career options and a much lower pay scale in the male-dominated professional world. Lisa’s mom had to work hard to raise her children alone. It didn’t go unnoticed by Lisa that everything fell on her mom. Each difficulty that the family faced, her mother had to overcome alone with little support and meager financial means. Lisa shared a bedroom with her brother growing up in a small home in Southfield. This time in Lisa’s life solidified her resolve to secure her own future with an education and a career that would support her without having to worry about finances or rely on anyone else.

education, she continued to work, and enrolled in Walsh College of Accountancy and Business. In 1984, while continuing to attend college full time, Lisa began working as a part-time administrative file clerk for her uncle, who owned a financial planning firm in Southfield. She answered phones and filled in where she could in her uncle’s office, helping out and learning the business.

When Lisa was 14, her mother married a wonderful man who took great care of the entire family. They moved from Southfield to larger home in Farmington Hills where Lisa finally got her own bedroom. Things were much better once her mother married again, and her stepfather was very loving and generous.

As she was getting ready to graduate with her finance degree in 1986, her uncle suggested that she get her securities license and invited her to come to work for him full time. So she earned all her licenses and became a registered stock broker.

With the seed of personal success taking root, Lisa was resolute to carve out a great life for herself. After graduating from high school, Lisa waited tables at night and attended school during the day. Determined to build on her

translated into a realization of her dream at the age of 25. She had saved enough money to purchase her first home by herself near Cass Lake in Waterford. In 1989 Lisa went to work for Smith Barney in Southfield Town Center, and shortly after, in 1990, she became a Certified Financial Planner™. She honed her professional skills for 20 years at Smith Barney, and left in 2009, when she went to work with Merrill Lynch. Now married 25 years to Jordan London and the mother of two teenagers, Lisa is sincerely grateful for a full and comfortable life. She manages work, family, regular exercise, hobbies and travel. With a strong belief in giving back, Lisa London is also a board member for Temple Bethel, volunteers for Gleaners Food Bank, and works actively in Federation. London beams as she speaks of her 14-year-old daughter, Jessica, who is about to enter high school, and her 18-year-old son, Ben, who is headed to college with a baseball scholarship. Lisa admires and commends her husband, Jordan, for a lot of her success. He has been her unfailing partner in building a life together with their children and both of their careers. “I couldn’t have my success without Jordan,” she declares. “He fully shares in the responsibilities, pitching in with the daily tasks of home life and helping the children with their schedules and homework. He is an extremely dedicated father.” She also credits Jordan for her great appreciation of nature, art, culture and music. Jordan London’s love of nature and hiking in the mountains was contagious for Lisa. Together they planned and saved, and three years ago the dream of owning a second home in the mountains became a reality. They purchased a small mountain home in Durango, Colorado where they retreat with their family as often as possible. From a childhood of scarcity and financial distress, Lisa London has built abundance in her life. She looks back on her childhood as a big factor in the development of her perseverance and her success. From the perspective of contrast of an early life with struggles, and with the distinct advantage of a better overall social and professional situation for women now, she consciously chose to make her life different from her mother’s. And when it comes to her mother, Lisa speaks with profound respect and gratitude for all that her mother was able to accomplish for her. She is proud of her strength and tenacity through hard times, a legacy that Lisa has grown into. With

Lisa’s own dedication and constancy, she continues to stretch her professional understanding of her career, while at the same time encourages others not to get discouraged; to do the hard work to make a future for themselves. Lisa’s career drive is borne from her personal history and memories that touch her heart. It comes from what she witnessed her mother endure, and also from what she herself intentionally navigated to avoid. And now Lisa helps others with this same navigation. It is not what she does – because other professionals have the same successful career in financial planning and wealth management. It is why she does it that is so striking about Lisa London. Women have to work now. “A new law school graduate that I know was in the top 5% of her graduating class and she could not get a job,” Lisa conveys. “She finally took a job for $35,000 a year, which is the same salary a new attorney made 15 years ago. She openly admits that technology is her addiction. “When I sold software, I was able to translate the business usage and benefits to my customers, many of whom were Fortune 500 accounts,” shares Julie. “They appreciated me because I was accessible, responsive, and knowledgeable about the products that I sold them.” Julie does not present herself as a typical sales person. She is not driven by the “thrill of the close” like many great sales people. Her thrill is figuring out how to optimize business operations by implementing software technology to make businesses more productive and profitable. Her professional rapport with her customers flowered into long term relationships, and she remains friends with many of her customers from Silicon Valley.

Living a Six-Sensory Life By Judy Lipson

I

’ve known about my sixth-sense for some time. I first heard the term six-sensory from author and spiritual teacher, Sonia Choquette. Being a six-sensory means that you process your world with more than the conventional five senses (visual, auditory, touch, taste, smell). Your sixth sense is your gut instinct. It’s natural, normal, and everyone has it. The parental version of sixth sense awareness happens when children first venture away from parents: When you get there, if something doesn’t feel right, I want you to call me or leave right away. Others talk about business relationships and opportunities: I just knew from the start that this was not a good person/idea, but I didn’t listen to my gut and I got burned. Think about the varied ways that your sixth sense has been involved in your life. Now that we have established that you have a sixth sense, the question is, do you listen to yours or have you ignored your inner voice? Choquette believes that “your sixth sense should be your first sense”. Author Sophy Burnham (The Art of Intuition) says it’s the subtle knowing without ever having any idea why you know it. If you are ready to embrace your sixsensory self, there are ways to develop, and learn to hear, your inner voice/gut instinct/intuition: SOLITUDE AND CREATIVITY allow you the opportunity to reconnect with yourself, so strive to regularly build them into your schedule. MINDFULNESS Silent meditation is the most common, but you can be mindful during chores, exercise, or any other activity. Focus your mind on each aspect or movement of the activity to quiet the chatter.

BREATHWORK In your mind’s eye, watch the movement of your chest and abdomen as it moves away from your spine on the inhale and then back inward on the exhale. This also helps to focus the mind and still your thoughts. RECEPTION You may “hear” the message, see symbols or visual pictures, feel sensations or emotions in your body, or have a vague yet clear “knowing.” It may seem like a subtle whisper or a powerful download. TRUST your intuition and allow it to become a more significant part of your daily life! DREAMS Dreams and intuition both come from the unconscious. If you remember your dreams, they can become a source of information. Begin each night with a request for information about a specific question. When you awaken, write in your journal everything that you can recall about that dream as well as your questions and recent life events. Review your journal regularly looking for symbols and patterns. Living life as a six-sensory is beneficial because all of your senses are more attuned to give you the fullest information. This allows you to see the many options that are available, to know when to proceed and when to withdraw, in relationships and professionally, and to ultimately recognize and live your life’s purpose. When you are connected to your inner wisdom, you can experience a deep and strong connection to your true self. This provides a calm and confident power, fewer emotional triggers, and less anxiety or depression. Living a six-sensory life is a profoundly empowering experience.

EMPATHY Your empathic abilities are a gift. You don’t require the fullest amount of input to have the knowledge. Instead, modulate the amount of information that comes in to you. Use intention as well as the techniques described in Energy Cleansing (May/June edition).

FROM HEARTACHE TO HELPING OTHERS Flu Vaccine and Awareness By Barbara Krajenke

Photography by Robert Olinski Yaksich truly believes his daughter would be alive today if she had had the flu vaccine. However, at the time of Alana’s death, the Center for Disease Control (CDC) recommended that infants from six months to 23 months be vaccinated for the flu virus. It was recommended that individuals two years and older should be vaccinated if they had existing health complications. Yet, Alana was a healthy child. The flu exhibited its deadly potential overnight. “We didn’t have the opportunity for someone to say to us, children are not of age recommendation, but here are the risks,’ said Yaksich.

n the middle of the night on Feb. 1, 2003, Alana Yaksich’s parents called the pediatrician, hung up the phone and called the ambulance.

It was a seemingly ordinary day. Alana had pizza and ice cream for dinner and was chasing her brothers around. Earlier in the day, she had a low-grade fever of 99 degrees and not much of an appetite. As the day went however, on she seemed to get better and was acting as her usual self. “(Alana) was a spitfire. Her smile would light up the room, whether at school or at home. She had a magnetism about her. She was a very caring individual; always conscious about others’ feelings. She was our pride and joy,” describes Alana’s father, Zack Yaksich. A half an hour after Alana went to bed, she woke up vomiting and had a fever of 106. Alana, 5 ½ years old, died the next day of influenza related complications, which caused swelling and injury to her brain.

Some of the fondest memoires Alana’s father has are of taking her to school, going to her class when they had their “special person visit-day,” treating her to ice cream, putting her to bed, and reading to her. Yaksich and his family are inspired to help others by the memory of Alana. They formed Alana’s Foundation in 2009—a nonprofit organization meant to inform parents and the public of the severity of the flu virus and the protection available through flu vaccinations. The flu is a contagious respiratory illness, with symptoms including cough, sore throat, runny or stuffy nose, muscle or body aches, headaches, and fatigue, accompanied with or without a fever. More common symptoms in children are vomiting and diarrhea. The flu is contagious one day before symptoms appear and five to seven days after contracting the virus. It is estimated that 200,000 people are hospitalized each year due to flu related illness, accounting for thousands of deaths

per year. The CDC reports that 171 children died in the 20122013 flu season due to the flu or complications of the flu, rising from 35 the previous season. A large number of those deaths, 40 percent, were from children who did not have previously diagnosed health issues. It is also estimated that 20,000 children younger than five years old are hospitalized each year from flu complications such as pneumonia. Since 2008, the CDC recommends that children six months to 18 years receive the flu vaccination, yet vaccination for children remains seemingly low. Dr. Matthew Sims, director of infectious diseases at Beaumont Hospital, recommends everyone six months and on get the flu vaccine every year, especially since H1N1 appeared in 2009. “The flu virus lasts six to eight months and mutates into other viruses. There are two basic ways it mutates — that’s why we have a new vaccine every year. In can mutate in small ways, antigenic drift and can also combine with other flu viruses, antigenic shift. That is why there has to be a new vaccine every year.” Dr. Matthew Sims is currently researching to develop a drug to combat the flu. Previous research has discovered that younger generations are having a harder time with influenza, specifically 20-40 year olds, because they are less likely to get vaccinated. It is also being discovered that older generations, who have been exposed to multiple flu viruses, may have acquired the antibody to help them recover or prevent them from getting the flu. Dr. Sims explains how preexisting medical conditions, such as pulmonary disease, can make you vulnerable to the flu. The flu also makes you vulnerable to other infections such as bacterial phenomena and staff phenomena. The CDC states that the flu can also cause ear and sinus infections, dehydration, and the worsening of chronic medical conditions such as congestive heart failure, asthma, and diabetes. Alana’s Foundation focuses on flu virus and vaccination awareness by holding annual vaccine clinics and educating people through PTA groups, schools, and health organizations. “(Alana’s Foundation) is putting a name and a face with the tragedy. Before, I was guilty of using flu as a general term. The flu is a very, very serious illness, but it’s preventable by simply getting a shot,” said Yaksich. Yaksich tells parents, anytime you are in doubt about the health of your child, speak to a doctor and err on the side of caution. It is important for both parents and children to get vaccinated in order to prevent the virus from coming into the home. Yaksich and Dr. Sims agree that part of influenza awareness is protecting others. The best way to do that is through vaccination and by staying home if you have the flu. “The fact of the matter is the flu virus is airborne. It is a public

health issue. Get the flu shot. When you’re sick—stay home. Protect yourself and protect others,” said Dr. Sims. Alana’s Foundation not only educates on influenza awareness and vaccination, it is proactive in supporting public health by providing free medical clinics offering the vaccine for the homeless, underinsured and uninsured. The foundation is also collaborating on a pilot project with Health Heroes, a nonprofit organization dedicated to providing vaccines and immunizations in school districts on a large scale. Health Heroes has expanded to several states, going into schools and using the flu mist, which is squirted up the nose, vaccinating hundreds of kids within a couple of hours. This pilot project is completely free to schools and parents, covering the cost for those who don’t have insurance while covering faculty and parents. The school-located pilot clinics in Michigan currently include Bloomfield Hills Schools and 26 schools in the L’Anse Cruse school district. Alana’s Foundation and Health Heroes partnership hopes to have a total of 100 schools for this year’s program. “We have at least 26 schools we can go to. Hoping in three to four years to be across the state to make vaccines convenient and affordable — (Clinics) in grade schools and high schools. We’re working on getting into colleges —who have the lowest vaccination rate,” said Yaksich. Starting in September, Beaumont will be offering the flu vaccine. Beaumont also will provide a webpage and hotline during the flu season. “I can’t emphasize enough that using (the flu vaccine) can protect themselves and children from something so tragic. Can be protected with something so simple. My husband Kurt and I have been hosting ‘Summer Swim Parties’ every summer for the families of Kids Kicking Cancer for the past 8 years. We also host each fall the ‘Terror on Tillson Halloween Party, here in Romeo. It’s part of the promise we made to each other years ago about giving back to those in need. The promise was not only to give monetarily, but also the kind of giving back that is emotionally present and connected. Over the years the community has shown it’s support by participate in these parties for Kids Kicking Cancer. It amazes me how everyone just ‘jumps in’ and connects with these wonderful kids and their families. A few years ago, I had a friend who wanted to volunteer, I found myself asking if she thought she could make it … physically. She was struggling herself with a second bout of cancer and the chemo treatments were challenging to her physically. She said that she’d like to come and at least sit and watch the kids for the day. She did come, and that day transformed the way she looked at her own life. She stated, “Ruth, I have had 50+ years of life and these kids are facing the same fears at 5 and 6 years of age, I need to stop feeling sorry for myself and start being grateful for the life that I have”. That day completely changed the way she perceived her life, and filled it with gratitude and love. I think that is one of the reasons why the volunteers in our community, ‘just keep on coming’, as we continue to get more and more each year. Our volunteers come to help the kids swim, dance, get their faces painted help them fish and tie dye teeshirts, to name a

few. They come to lift the spirits of these kids for the day and know that they are in some small but significant way helping. It’s also a day of joy for the parents as they get a chance to relax in the sun (or shade) for the day and watch their kids,just being kids without hospitals, doctors, injections or medical procedures. It’s life changing for everyone involved to watch the joy that comes from these children’s faces. They give a little and everyone gets a lot! If you ask me why we do this, I would tell you to look at these pictures on the next pages, look at the faces, look at the smiles and see the joy that comes from just one day of not having to focus on pain. That is my answer. I once read a quote that struck me so much that I had to write it down, and although I don’t know who it is by, I have remembered ever since. “Your job is not to judge, your job is not to figure out if someone deserves something, your job is to lift the fallen, to restore the broken and to heal the hurting”. That has been my personal mantra for years. It is the answer to my question; ‘what is my purpose, and what are we doing here?’ I believe there is a reason why we are here. It can be as simple as to put a smile on another’s face...even if it’s for just a day. That’s why I am involved with Kids Kicking Cancer, I am proud to be a board member and a volunteer. I would encourage you to do the same. Kids Kicking Cancer (KKC) is a national non-profit 501(c)(3) organization that provides pain management, empowerment and end-of-life care to children and families facing chronic and acute life-threatening illness. Through an innovative approach that merges modern integrative medicine with traditional martial arts, KKC addresses the overwhelming needs of children and families in crisis, empowering them physically, spiritually and emotionally. Founded in Michigan in 1999, KKC currently services children with a variety of challenges, including cancer & sickle cell disease in Michigan, New York, California and Florida. At home brothers and sisters become aware that they are getting the lion share of attention - whether it be positive or negative things change in their family’s lives because of their illness.

Children with cancer and other childhood illnesses typically feel a tremendous loss of control and personal identity. They are required to endure treatments that cause them to feel sick in order to heal. They are confronted with multiple fears, including their own mortality, hair loss, falling behind academically and socially, as well as many other issues that affect how they view their bodies, their lives and their destinies.

So as you can imagine - while children deal with this ‘life or death’ illness they also face more challenges in their everyday life.

What many don’t understand who don’t have a child with a life threatening disease, is that typically children can also lose their

Through classes in martial arts and breathing, a strong peer group is created for them and their siblings. them with a sense of power, peace and purpose. Martial arts classes, support during hospital & clinic procedures, uniforms, and transportation to and from classes are provided to families at no cost. The children’s parents and medical personnel are also taught these same methods. Rather than allowing these children to view themselves as victims of disease, Kids Kicking Cancer trains them to see themselves as capable and important participants in their own healing. This helps these children achieve the Kids Kicking Cancer mantra: Power Peace & Purpose. They learn that “Pain is a message one does not have to accept.” The impact of this change in perception psychologically and emotionally is dramatic and allows these children to have a purpose in their lives.

Many wonderful organizations focus on research and development of cures for diseases-something to be thankful for. Kids Kicking Cancer is different, Kids Kicking Cancer deals with the NOW. Kids Kicking Cancer teaches children to “breathe in the light and blow out the darkness” of pain and stress. The children in turn go out and teach this same practice to the rest of the world - as their purpose. Mother Theresa once said: ‘I can do things you cannot, you can do things I cannot - but Together we can do GREAT THINGS.” How can you help?

from the inside, and it was not hard learning it from the other side of the camera.” Charlene established her Media Consultants firm in 1987 while working two jobs. She was a television news reporter, and a teacher at Southfield High School where she ran the student radio station. She worked seven days a week and spent her nights expanding her business working mostly with fashion retailers and physicians helping them to increase their business. Hired as the first African-American woman television news reporter in her hometown of Toledo, Ohio, Charlene’s career included on-air jobs in Baltimore, Washington, D.C. and Boston. She has worked locally at WJBK and WXYZ TV. She feels her experience as a broadcast reporter has bolstered her ability to better serve her clients, “My broadcast journalism field experience has made me so very qualified to do what I do now. When you have worked in large TV News markets, like I have, you have covered major stories from the White House to urban streets; it has given me a wide perspective on people and how to get things done.” Charlene decided to make the transition from TV news reporter to public relations after her divorce. She was a single mother raising a young son, Jonathan, and knew that she needed more flexibility with her schedule. Charlene did not want to change fields completely. She found her niche in public relations and marketing to be a perfect endeavor, working with a variety of clients including multi-Grammy award winning recording artist Aretha Franklin, Comedian & civil rights activist Dick Gregory with Muhammad Ali for the Bicentennial Run for Hunger. Locally she works with Bricker Tunis Furs, Roberts Riverwalk Hotel in Detroit, and political campaigns for Oakland Country Circuit Court Judge Denise Langford Morris. Charlene’s tenacity has allowed her to endure the successes and challenges of owning her own business; “Staying ahead in a competitive field is very difficult. I compete with the big and small agencies. I prefer to work for myself, so I have to present myself well first, and then sell the client. I have a fairly strong connection with key media professionals both in management at local TV and radio stations as well as with on-air talent and producers.” Family is a top priority and inspiration for Charlene; “The people who have influenced me the most in my

broadcasting career, and the transition for forming Media Consultants, were my parents, my brothers Todd and Charles, and my sister Roxanne who always says, ‘you can do it.’ My son is always giving me new ideas and he tells me if something I am working on has the potential to reach young people. My family has been my backbone.” Even with the challenges and risks of owning a business, Charlene is grateful; “I feel blessed to have a fabulous career that has afforded me a good living and comfortable way of life. It was difficult at times dealing with male counterparts and working with people who previously had worked with me when I was in a supporting role.” The finance industry is known to have a high burn out rate; however, Sinclair demonstrated she had the characteristics to be successful as a financial advisor. “A certain personality type does well in the industry; a go-getter or type A; being able to ask hard questions and provide the best possible solutions; making sure all the i’s are dotted and all the t’s are crossed; being able to keep up with ever-increasing regulation, and continuing to educate themselves and their clients while setting and exceeding their expectations. “ When Sinclair moved back to Michigan in 1989 she met her mentor, Ted Kilar. He offered her a position, then later a partnership, in his group shortly thereafter. “(Kilar) was a great person to learn from. He was progressive, a forwardthinker, ethical, and honest.” Sinclair’s approach to complete financial planning for her clients is to get to know them personally. “I met a woman once where I was her fifth advisor to interview. The first four told her what she needed to do. I said, “I don’t know what you need because I don’t know you yet…I can’t make a sound recommendation until I know what your goals are.” The only way I know how to advise is to put my clients’ interests first and help them to do what they can so that their objectives are met.” Sinclair Wealth Management Group is expanding its business principles of growing business selectively in stages and focusing on intergenerational relationships. “You can really help someone add steadily to their wealth by advising them for a long period of time. When you are engaged in the future growth of the entire family, you keep clients longer.”

She has plans to expand the group internally by promoting her registered assistant, Drew Grabinski, who adheres to the group’s ideals of conscientiousness to its clients. She feels it’s her responsibility to have the best possible succession plan in place for her clients and there is no better choice than Drew. “I tell my clients, if I step in front of the proverbial bus, Drew is your man.” Sinclair’s recommendation towards finding a financial advisor with a good fit is to find someone you can trust. Financial planning is an option for everyone and shopping around to find someone you trust and have rapport with is the best course. “You need to get educated. Financial information is accessible to everyone, but it can be very confusing and sometimes paralyzing. It doesn’t matter who you are - start today. You don’t necessarily need a lot of money to find someone to work with you. Although many firms have minimum account sizes, don’t get discouraged.”

have baked a honey cake delicacy for many years to eat with their coffee and tea. The cakes were made with milk, flour, nuts, and honey. Because of its outstanding taste and longevity, it was dubbed “The Honey Miracle”. It was 1995 when Gevorg Avetisyan came from Armenia to the Czech Republic with his family. He and his sister began to make the honey treats for his family and friends, and it didn’t take long for word to spread about the family’s delicious honey cakes. In need of a way to support his family, Gevorg began to sell the cakes to local bakeries and shops. It quickly became a favorite in the Czech Republic. In just a few short years, Marlenka’s popularity spread from the local small towns and villages as demand for the product increased. The first Marlenka factory was established in the Czech Republic in 2002 with one employee. By 2008, there were 186 employees, and the sales territory had spread to cover Europe. Today, they produce over 100,000 cakes a month. The incredible story of this baked honey treat started in a humble immigrant family kitchen in the late 1990s, and quickly grew to a factory operation in 2002. Word of these treats spread, and the honey cakes’ popularity grew so quickly that a bigger facility was quickly being planned. In order to satisfy the growing demand for Marlenka and, at the same time, update hygienic standards while maintaining the same family bakery flavor that rocketed the Marlenka honey cakes to success, the family decided to modernize their operations. Another new, fully automated, 10,000 square foot, certified hygienic factory needed to be constructed to increase capacity. After just six years in the first facility, they broke ground on a new, state-of-theart manufacturing facility in 2008. Not even a year passed between laying the cornerstone for the new facility and completing construction. The sweet aroma of the production line fills the entire hall, and four continuous lines of dough produce four honey cakes at a time. The finishing line comes next, where cream is applied to the dough layers, and then the layers are stacked on top of one another. Finally the entire cake is garnished with crumbs, nuts, and icing. Marlenka is constantly seeking to improve the quality of its ingredients by holding suppliers to high standards and regularly fine tuning the production process to ensure the Marlenka cakes and other products best represent the traditional recipes and flavors they are based on, and, at the same

time, conform to modern quality conditions. Regular quality testing is completed and certified, and Marlenka has received national awards for longevity. Due to the fact that honey is nature’s natural preservative, Marlenka cakes can stay fresh for 90 days at room temperature with no change to its quality or taste. Modern technology has increased the ability to provide Marlenka cakes and treats to customers around the globe, but it has not completely displaced the handmade operations for some of the other Marlenka products. The production line for the honey cakes has enabled Marlenka to focus on creating other traditional Armenian treats that are also gaining wide acclaim from consumers. Cheese

uthor Clifton Fadiman said it best when he described cheese as “milk’s leap toward immortality.” Almost everyone loves one type of cheese or another, whether it’s delectably mild, creamy and soft or pungent, hard and crumbly. To begin with, cheese can be broken down into two very broad categories—fresh and ripened. Within these basic categories, however, are a multitude of subdivisions, usually classified according to the texture of the cheese and how it was made. Naturally, many of these categories overlap because a cheese can have an entirely different character when young than it does when aged.

Most cheese begins as milk (usually cow, buffalo, goat or sheep) that is allowed to thicken with the addition of enzymes called rennin, acidity such as vinegar or special bacteria. The milk separates into a liquid (whey) and semisolids (curd). The whey is drained off, and the curds are either allowed to drain or pressed into different shapes depending on the variety. This is the end of the process for fresh cheeses. Among the most popular fresh cheeses on the market today are cottage cheese, cream cheese, pot cheese and ricotta. In order to become a ripened (or aged) cheese, the drained curds are cured by a variety of processes including being subjected to heat, bacteria, soaking and so on. The curds are also sometimes flavored with salt, spices or herbs and some, like many cheddars, are colored with a natural dye. After curing, natural cheese begins a ripening process during which it’s stored, usually uncovered, at a controlled temperature and humidity until the desired texture and character is obtained. It can be covered with wax or other protective coating before or after this ripening process. Ripened cheeses are further classified according to texture: •

Hard cheeses are cooked, pressed and aged for long periods (usually at least two years) until hard and dry, and are generally used for grating. Among the more well known of this genre are parmesan and pecorino. Semifirm cheeses such as cheddar, edam and jarlsberg are firm but not usually crumbly. They have been cooked and pressed but not aged as long as those in the firm-cheese category.

Semisoft cheeses are pressed but can be either cooked or uncooked. Their texture is sliceable but soft. Among the more popular semisoft cheeses are gouda, jack and tilsit.

Soft-ripened (or surface-ripened) cheeses are neither cooked nor pressed. They are, however, subjected to various bacteria (either by spraying or dipping), which ripens the cheese from the outside in. Such cheeses develop a rind that is either powdery white (as in brie) or golden orange (like pont l’évêque). The consistency of soft-ripened cheese can range from semisoft to creamy and spreadable.

In addition to classification by texture, some fresh and ripened cheeses are further categorized by curd processing: •

Blue-veined cheeses are inoculated or sprayed with spores of the molds penicillium roqueforti or penicillium glaucum. Some of these cheeses are punctured with holes to ensure that the mold will penetrate during the aging period. The result of these painstaking efforts are cheeses with veins or pockets of flavorful blue or green mold.

Pasta filata (Italian for “spun paste”) is the process for making Italy’s famous stretched-curd cheeses. These cheeses are made using a special technique whereby the curd is given a hot whey bath then kneaded and stretched to the desired pliable consistency. Among the pasta filata cheeses are mozzarella, provolone and caciocavallo.

Washing gives some cheeses like edam, gouda, and colby a milder taste. The curd is washed in warm water to lower the acidity.

Whey cheeses are a special category. Instead of beginning with milk, they are made from the whey drained from the making of other cheeses. The whey is reheated (usually with rennin) until it coagulates. Probably the best known of this cheese type are gjetost and Italian ricotta.

rmed with a tote full of information and supplies to make my shopping experience as productive as possible, I hop into the car and head to the store, full of excitement, ideas keep popping in my head about colors, patterns, furniture styles, and accessories. “I am going to be like the people on TV who redesign a home in 48 hours,” I said to myself, “I even remembered to bring my camera so I could take photos of all the wonderful items I am about to see.” You know how it is sometimes: you get back home and can’t remember what that piece of furniture looked like. With my photos, I will be able to print them out and see exactly what it will look like in the space. I will make this happen! It’s destination design or bust! Filled with anticipation, I was psyched up and determined to make my design challenge a positive one. After all, I

had a design deadline looming over me. In a couple of short weeks, we were having a big party at our house and, as we all know, that was one sure way to get motivated. Like so many, shopping and redecorating isn’t easy with work schedules and other obligations. I have found that I need to be very organized and diligent in order to get anything done. Thank goodness stores are open late and on weekends; many hours were spent before and after work looking for décor to make over my home. So, the search began. I brought my notebook full of sketches that included room sizes and locations of door/window openings for furniture placement. I was on the hunt, from store to store,

looking for the right style and the best deal. I love shopping for bargains, so I included going to discount stores, flea markets, and second hand shops. My first stop was a discount store, where I saw a lot of displays that were inspiring me to alter my current design style. The latest, hot color schemes are variations of greys, from cool steel tones to warm taupe shades. I was struck by the sight of two gorgeous slipper chairs that were embellished with beautiful patterned pillows. They would have looked fantastic in the living room next to my taupe sofa. Moving on, I looked for something to hang on the walls and found a stunning starburst mirror that would add glamour and elegance to the corner of the room. An adorable round top table, is the perfect place for a lamp and lovely orchid. To add a little pizzazz to my plain sofa, I decided to search for decorative pillows. Away to the pillow isle I went, where I found two isles with mounds of pillows. I was able to narrow my selection down by color and chose three small, square pillows that had a satin back and fully beaded front. They added the sparkle I was looking for to perfectly complement the sofa and chairs in a lovely shade of cream. Then, it was time to focus on my next project: the family room. We needed additional seating there. However, I didn’t have money in the budget to purchase more chairs. I had to be creative in order to make this room functional. After

taking some time to think, it came to me! I could take a chair from the den and work it into the design plan for my family room redo. It was perfect! I needed a coffee table to sit in front of the sofa; a trip to a flea market was on the horizon. Going to secondhand stores and flea markets are two great ways to find used furniture, and other items, that provide huge savings. Off I went to the market to hunt for decorating opportunities. On the top of mind was to find a coffee table for the family room. After an hour of searching through isles of stuff, I was getting a little concerned. Oh where, oh where is my coffee table? Just when I was about to give up, I saw

a beautiful sight. There in front of me stood the most perfect, mid-century coffee table ever! It was the right size and color and the lines were simple and sleek. I quickly made my purchase, and was sure to have the vendor mark it SOLD as I finished shopping the remaining isles at the flea market. As I rounded the corner of isle 6, I saw a huge display of used hardcover books and another idea stuck me. I could use the books to fill the shelves of my built in wall bookcase. I could simply paint the binders in neutral tones and arrange them artistically on each shelf - Awesome! It was cheap, easy, and would make a big statement. Even if I decided not to paint the binders, the variety of colors will be interesting as well. Go ahead, use your imagination! So, I continued to look for items that I could work into my plan. The next stop was Michaels Arts & Crafts for bold, black frames to create a grouping on my stairway off of the family room. I planned on printing black and white photos that I have taken of people and scenery, from different trips, to put in the frames. These photos are very meaningful to me. Think about what photos you may have that you could use in an arrangement. If you don’t have any photos, go on the internet and find free printable photos of anything that appeals to you. I chose all black frames to create a cohesive and clean look. Some were thin, some wider, large, and small. Before hanging them, I laid the pattern out on the floor to determine the best arrangement. Then I simply transferred the design to the wall. It’s just that easy! 62 | MY Magazine

It had been a long day of shopping to find the right items and deals, but it was worth the effort. Going to a lot of different stores and venues gave me a chance to select an eclectic group of furnishings. Although I had some ups and downs, I was able to hang in there and achieve my goal. My home is finished, with the polish and detail that I was going for. I can’t wait for the big day to come. Approach your design destination as an adventure. Whether you know about design or not, you can learn as you go. Pack your bag with the tools and information you need and go for it. New England Clam Chowder Makes 4 Servings Clam chowder is like liquid Prozac. First, it’s full of omega-3 fatty acids and vitamin B12, a nutrient that, recent research reports, helps people respond better when they’re treated for depression. In fact, just 3 ounces of cooked clams take care of your B12 needs for an entire week. The 2% milk used to make the chowder provides additional B12 and is a very good source of tryptophan, an amino acid that may raise your spirits.

For an instant boost of energy, Buck-Murray recommends tapping your thymus with your fingertips for 20 seconds, while slowly and deeply breathing in and out through your nose. Please give it a try it, it works! For this issue I’ve gathered some recipes that I think might bring some glimmer to your gloom and boost your energy as well. Fish and foods rich in B vitamins are nutritional pickme-ups. Seafood supplies the richest source of omega-3 fatty acids in the diet; several studies have found that the more fish you eat, the less likely you are to be depressed, which is a leading cause of fatigue.

4 cloves of garlic, minced 16 can of chopped clams with juice 2 cups water 25 Little Neck clams 1 ½ cups Yukon Gold potatoes, cut into bite sized pieces 2 tablespoons cornstarch 1 ½ teaspoon chopped fresh thyme 2 bay leaves 2 ½ cups 2% milk ¼ cup chopped flat leaf parsley Oyster crackers In a large pot, steam the littleneck clams in the water until the shells have opened. Transfer the clams to a large bowl with a slotted spoon and discard any unopened shells. Strain the clam juice into a bowl through a fine mesh strainer lined with a paper towel and set aside to use later. Discard the paper towel. In a large dutch oven, cook the bacon over medium heat until crisp and transfer to a small bowl using a slotted spoon. Drain off all but two tablespoons of fat and return to the heat. Add the onions and celery to the pot and cook until the vegetables have softened, approximately 5 minutes. Add the garlic and cook for 1 minute. Stir in the cornstarch and cook for an additional two minutes. Stir in the potatoes, clam juice and milk. Bring the mixture to a boil and stir in the thyme and bay leaves. Turn the heat down to low and simmer for 15-20 minutes until the mixture has thickened a little bit and the potatoes are fork tender. While the chowder is simmering, remove the clams from their shells and roughly chop. Add the clams and the fresh chopped clams to the chowder, stirring to combine. Continue cooking for an additional 10 minutes. To serve, ladle into bowls and top with crumbled bacon, parsley. Then add a few oyster crackers for a New England seaside feel. To store, transfer to an airtight container and refrigerate for up to two days.

Greek-Style Baked Quinoa with Two Cheeses Serves 4 This is a pretty little dish, isn’t it? I just love how all those Mediterranean goodies look mixed together. We’ve got some tomato, spinach, and artichoke action going on here, and this combination with the quinoa creates a seriously hearty side dish that can easily double as a main course, and it’s gluten free.

Carrot-Walnut-Arugula Salad

2 ½ cups cooked quinoa

Serves 4

1 ¼ cup fat-free feta cheese

The colorful and yummy salad supplies mood relief, too. Walnuts are one of the few foods besides fish that contain omega-3s. Carrots and Arugula are rich in Vitamin A, Vitamin K and the B and C vitamins too. The best type of arugula for this salad is the feathery type called wild or baby arugula. I love the contract of flavors here, peppery arugula alongside sweet carrots and a nutty dressing.

½ cup reduced-fat shredded mozzarella or cheddar 1 cup marinated artichoke hearts (in oil) 1 cup chopped spinach 1 cup diced cherry tomatoes ½ cup skim milk 1 tsp crushed or minced garlic 1 tsp lemon juice 1 tsp parsley

4 cups wild or baby arugula or baby kale

1 tsp onion powder

2 cups grated carrots

Sea salt and course black pepper to taste

2 tablespoons broken walnuts (½ ounce) ¼ cup grated Parmesan or crumbled blue cheese (1 ounce) For the dressing: 1 tablespoon fresh lemon juice 1 tablespoon sherry vinegar 1 teaspoon balsamic vinegar Salt to taste 1 teaspoon Dijon mustard 1 small garlic clove, pureed or finely minced (optional) ¼ cup extra virgin olive oil Combine the arugula, carrots, walnuts, cheese in a salad bowl.

Prepare the quinoa as directed. While quinoa cooks, dice cherry tomatoes and chop spinach leaves, then set aside. Next, in food processor combine feta, skim milk, garlic, lemon juice, and parsley — blending until smooth. When ready, stir artichoke hearts, cherry tomatoes, and spinach into quinoa, plus one tablespoon oil from artichokes, stirring well. Pour over with feta sauce, then season with onion powder and salt & pepper, combining thoroughly. Transfer mixture to oven-safe casserole dish, spreading evenly. Top with remaining feta and mozzarella (or cheddar), then bake in a preheated oven at 400F degrees for 15 minutes until top has melted. Immediately plate and serve.

In a small bowl or measuring cup, combine the lemon juice, vinegars, salt and mustard. Whisk together, and add the garlic. Whisk in the oil. Shortly before serving, toss the salad with the dressing. Advance preparation: You can combine the salad ingredients (minus the dressing) several hours before serving and refrigerate in a covered bowl. The dressing will also hold for several hours, in or out of the refrigerator. 66 | MY Magazine
