They have what they call “bayside sites” on the north side that are all about the birding, fishing, sunsets and stars, rather than the beach and sand. If you want the waterviews without the beach - this is the side for you.

Southern Grits and World Peace

Christy has a brand NEW BOOK coming out November 8th...

"Hi, my name is Christy Jordan and I like to feed people." We love our grits. Creamy, hot, soothing, and delicious with cheese, bacon, or a simple stirring in of butter and sugar, Grits have been and continue to be the south’s ultimate comfort food. Apparently many Southerners also see it as a dish which can actuallly bring out world peace! The Post and Courier, the oldest newspaper in the south, once declared “An inexpensive, simple, and thoroughly digestible food, grits should be made popular throughout the world. Given enough of it, the inhabitants of planet Earth would have nothing to fight about. A man full of grits is a man of peace.”

•1 cup Grits •2½ cups water •½ teaspoons salt •1 tablespoon butter or margarine

Ingredients:

Instructions: 1. If using stone ground grits, place them in a bowl and cover with water, stir. 2. Pour off water and light bran which has floated to the top. 3. Place grits in sauce pot. Add water, salt, and margarine. 4. Bring to a boil and reduce heat to low. 5. Cook, covered, for twenty to thirty minutes or until done.

Christy’s Crock Pot Chili

Instructions: 1. Brown ground beef until done. 2. In large pot (or crock pot), combine the beef plus all remaining ingredients. *If in pot, bring to a simmer over low heat and cook, stirring a few times an hour, for two to three hours. (You can avoid this by using the crock pot.)

Ingredients:

3. In a crock pot, stir to combine and cover. Cook on low 7-8 hours or high for 3-4 hours.

•2 lbs ground beef •29 oz can kidney beans (with liquid) •29 oz can pinto beans (with liquid) •29 oz can tomato sauce •1 cup diced onion •½ C diced green chilies •3 medium tomatoes or one large can of diced •1½ tsp black pepper •2 C water •2 tsp salt •3 T chili powder •¼ C diced celery •2 tsp cumin

Dishpan Cookies

***They keep really well and are great for breakfast. **This freezes well both as a dough and as a finished cookie.

1. In a very large bowl or dishpan, cream sugars, vanilla, oil, and eggs. Add flour, soda, and salt. Fold in oats and cornflakes.

Ingredients: •2 cups light brown sugar •1 cup white sugar •2 teaspoons vanilla •2 cups oil •4 eggs •4 cups flour •2 teaspoons baking soda •1 teaspoon salt •1 ½ cups quick oats •4 cups cornflakes

Instructions:

2. Drop by ¼ measuring cup onto ungreased cookie sheets. This batter might be a little dry and you may have to moosh it together with your hands to get it into a ball when you put it onto the pan. 3. Bake for ten to twelve minutes at 375, or until edges are lightly browned. If you want them to be chewy, bake a little less, crispy, a little more. I always double this recipe and do half chewy, half crunchy.

Greetings, fellow foodie’s! We’ve located a family owned chain… Mark and Joy Cooper have two locations and they are serving up some great food for lunch. Each place has several entrees each day and a whole list of vegetables. (See a menu here.) You have a choice of cornbread, a yeast roll or a biscuit and a yummy dessert. I don’t know what’s in that Chocolate Surprise, but don’t be fooled - it tastes way better than it looks! The same is true with the bread pudding. Some great food is just not that attractive to look at, but I can still taste that awesome pudding!

Just look at these poor beef tips. They don’t look like much, they were delicious. And we got there so early the broccoli rice casserole was not fully hot on the steam table yet and we ate it anyway because it was so good! The meats are tender, the vegetables are seasoned, the breads are fresh and the desserts are delicious. If you like home cooked food - this is the place to go if you’re on I-10. Wow! Reading this book really puts life in perspective…

GOOD READ It is a very enjoyable read despite the struggles each of the women endure, because life (fiction or nonfiction) has a way of taking lemons and making a cool refreshing drink to be shared. What a GREAT read!

It’s fiction, but it’s based on true stories and the author does an excellent job of transitioning between memories and life as we know it. A modern day foster teen does her community service hours working for a 91 year old lady who wants to clean out her attic before she dies. The two of them begin comparing their childhoods and find that they have both been orphans practically their whole lives.

Go to the fence and look over it. Can you see the green pastures? What do you see? Isn’t it pretty over there? Wouldn’t you like to live over there and walk those paths? I’ve laid out your life over there for you. All that remains is for you to walk through the gate and keep walking. Do you believe me or not?

That is the life I’ve given you. You can either live it or stay where you are. You can press forward and move on or stay stuck where you’re at. The choice is yours. What do you want? Do you want it bad enough to go through what you have to go through in order to get it? I’ll walk with you. I’ll help you. I’ve done all I can do, the rest is up to you. You don’t have to do it alone, but I can’t make the choice for you. Do you wonder why you are here? I didn’t put you here, you did. I put you over there in my plan. But you didn’t want to follow my plan. You wanted to make your own way and that’s how you got where you are. I’m still willing to let you live there, but you have to choose to go there. It starts in your mind and then your body follows. You keep getting it backwards. You have these notions of how you think it’s supposed to be. Your notions aren’t right. I know how it’s supposed to be. You either come over to my way of thinking or you stay stuck where you are. I gave you the world by the tail, take what I’ve offered or stay where you’re at.

1. Bake an apple pie, apple crisp or make some homemade applesauce. There are easy crockpot recipes. 2. Plant some spring bulbs to enjoy next year. 3. Go sit by a fire somewhere, stare at it and roast some marshmallows. There’s just something stress relieving about a fire. 4. Take a drive to look at the fall foliage. 5. Go to a fall festival. (Locally the Heritage Festival is November 12th at Runge park.) 6. Make some scarecrows and fall decorations with the kids, it’s BIG fun! 7. Throw a HARVEST party to count your blessings and invite all the people you don’t see during the Christmas holidays. 8. Take a long walk in nature with the kids, a camera or both.

9. Celebrate fall by going on a picnic in the park, now that it’s cool enough in the south!
